letter fromTHE PUBLISHER The holiday season is quickly approaching and even though
it doesn’t seem quite like fall here in the Heartland, I love seeing all the bright fall decorations around the communities. This time of year is filled with fall festivals and family gatherings; eventually cooler weather will be joining us. Sharing special moments with my family and friends for these occasions is so special to me but also makes me think of the people that are less fortunate. Let us all take time this holiday season to reach out to someone in need with a kind smile, clothes, or maybe a hot meal. Let us be mindful of others in this season of giving. We are honored to have Sebring High Students Branden Beckman and Brooke Queen grace our cover and share their amazing story with you. At only 17 years old these students chose to join the Army National Guard and spend their summer at the National Guard Split Training Program. Beckman and Queen are the faces of our Country and I know you will enjoy reading about their decision to serve our Country. Thank you Caroline Maxcy Fox for capturing the beautiful photos of our students and Rafael Pacheco for creating our unique cover design. We stepped out of the Heartland a little to share with you a unique group of women, “Sisters on the Fly”. Photographer Emily Plank joined the sisters for an Old-Florida weekend adventure of kayaking on the Chassahowitza River. This sisterhood comes from all walks and seasons of life and travels the U.S. year round giving them a variety of adventures from camping, hiking, fishing, etc. This might be something our lady readers might want to look into. I know I would enjoy it! We are celebrating two Anniversaries in this issue that we think you will enjoy reading about the history. We are also celebrating Sebring Historical Society’s 50 Year Anniversary with you. We are thankful to the individuals keeping Sebring’s rich history alive. This past August The Florida Magazine Association (FMA) held the 2018 Charlie Awards dinner and Gala honoring winners and special award recipients. We continue to strive to bring you the best quality publication showcasing your Heartland community and I couldn’t have accomplished any of this without my amazing team. BRIDGETTE WALDAU has been a graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (20152018). She is Arts & Culture Alliance Director (13 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah. RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.
LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

JESSICA PLEGER is a wife, mother, editor, writer, and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance. Before working full-time at Heartland LIVING, Jessica was a paralegal for over 15 years. She is also the owner and operator of Pink Pineapple Catering. Jessica enjoys being outdoors, traveling, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace.
KATY FASSLER has been telling stories since she was able to scribble her name in crayon on the wall. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector lives by Dr. Seuss’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.
INGRID UTECH likes to research and write. “It helps me organize my thoughts, gives me an en-tree to interesting people, and broadens my knowledge of different subjects,” she said. Ingrid moved to Sebring in 1996 from Washington, DC. She has worked as Director of Development and Alumni Relations at the Vanguard School in Lake Wales, grants specialist with the Highlands County Health Department, and archivist for the Sebring Historical Society. She co-owned Orange Blossom Tours, a family business that operated tours throughout Central Florida for three years. She now works as a freelance writer.

and raised in Central FL. She decided to be an artist at the age of five. After achieving her BSA from Florida State University, she practiced in the field of design for six years and then received a Masters in Graphic Design from NC State University. She honed her artistic craft and developed a "way of seeing" that fuels her work. Caroline is a full time photographer and lives with her husband in the heart of Sebring, FL. Together they run the day-to-day life at The Great Commission Bible Institute as the Site Coordinators and Dorm Parents. Naturally, adventure abounds.

CYNTHIA PAXTON is a stay at home mom to two boys. She have spent the last 10 years capturing the precious moments of childhood for families across central Florida. A newborn and child photographer, Paxton loves being able to capture that small moment of time. She has also been a nurse for 15 years and love caring for others. She has lived in Wauchula for over 25 years and is honored to help share our small town community with others.

The August/September issue has to be my favorites yet. I have been a voracious reader since childhood and that increased even more when I worked in a library later on for five years. I devoured this issue and as an artist, I am excited to attempt to sketch and paint some of the pictures in this issue. Lots of eye candy! As an amateur photographer, I was impressed with the quality photography. (As a side note, your issues are always top notch in this area.) On top of that, there was an article on Israel, one of my favorite places to visit. In fact, I am scheduled to return to Israel after a 20 year lapse. In Okeechobee, the Hamrick Butterfly Garden Butterfly Sculpture project began in September 2017, when Okeechobee Main Street (OKMS) Arts & Cultural Alliance Director Bridgette Waldau applied for a grant from the Florida Division of Cultural Affairs. She wanted to bring additional public art to Okeechobee, and do it in a way that would be welcomed by the community. She modeled her grant application after the Kaleidoscope Butterflies in Flight Project in Lakeland, FL.

The 2018 Charlie Awards The Florida Press Association, Florida Society of News Editors, Florida Magazine Association, and the Florida Newspaper Advertising and Marketing Executives came together for the 2018 Florida Media Conference held August 9-10 at Hilton Orlando Bonnet Creek. cross America, hundreds of young men and women are making the decision to serve their country by enlisting in the military. From a place of honor, a desire to defend our nation, and out of respect of those who have gone before us, many are giving up themselves to serve others. In Sebring, two high school students bravely chose to serve in the Army National Guard while only 17. With the permission of their parents, these two entered basic combat training over the summer before their senior year of high school through the National Guard Split Training Program. They will continue their training throughout the year giving them the opportunity to finish high school and pay for college. „

“The reason I am joining the ARMY National Guard is simple, I wanted to be a part of something bigger than me. I wanted to put my country and the needs of others before mine, defending their freedom, my family’s freedom,” says Beckman. “My parents and sisters couldn’t have been more thrilled when they received the news from me that I had enlisted and was going to be in the National Guard as an infantryman. They were happy for me because they knew that this has been a dream for me since I was just a small kid pretending to play Army in the backyard with my friends.”

randen was unexpectedly nominated for Homecoming court and saw it as a chance to bring awareness to the military. He was in uniform for the Homecoming parade and was proud to hear young people point out the “army man.” “I want to make it a career. I want to go into active duty really badly.” Beckman desires to finish a degree in law before going into active duty and work in law enforcement, although is open to where life takes him. He currently works with his grandmother as a tax assistant and chooses to work hard to achieve his goals. “My family is super supportive of it. It is a great step for me. I want to do even more.” Branden’s mother, Angela, could not be prouder of her son. “He has talked about going into the military since he was a little boy. My step-dad is a retired National Guard, so Branden grew up playing army man in the backyard. I am so proud of him.”

“I would really encourage others to join the military,” says Beckman. “It gives you a feeling I can’t describe. When people walk up to you and thank you, it really means something,” says Beckman. “It hits home. You are serving your country, the best country in the world, and it’s that feeling when you give a great gift to someone but times it by ten.”

Brooke queen
“I have always wanted to join the military. My dad is a recruiter for the National Guard, so I grew up knowing this is what I wanted to do,” says Queen. “I actually went to a weekend drill as a punishment in the 7th grade. I loved it! I came back wanting to do that forever.” Brooke hated waiting to be 17 to join. She asked for the paper work to join the Army National Guard for her birthday. Her older brother, Preston, is also enrolled in the National Guard and while he is older, Brooke is proud to announce she enlisted first. “Of course, I joined first because I am the smarter one.”

ueen graduated basic training August 17th of this year and had to make many adjustments coming back to normal life. “It’s not bad. I really enjoyed going away and coming back. It made me realize how much I missed and loved my family.” “One weekend a month I will go to training, or we call it drill, in Sarasota” says Queen. “It is like basic training. You eat MRE’s, you do pushups, take PT tests, and last time we played dodgeball. Next summer I will go to AIT, Advance Individual Training, which will be in Fort Littlewood, Missouri. Brooke is a volunteer with Beauty Fit for a Queen, works for Publix, and is even an Uber driver. She graduated basic training as an Honor Graduate, ranking in the top 10% of her class. Brooke was also nominated to homecoming court. “I highly recommend others to join the National Guard. It is a great program to better yourself as a person. I love this.” Queen plans on attending college to study business while staying with the National Guard. “I want to travel and experience the world around me, but I also want to stay local. The National Guard allows me to do that.” Brooke’s mother, Brittany, owns Cut N’ Up Salon in downtown Sebring and her father, CJ, is the National Guard recruiter for our area. “This doesn’t come as a surprise,” says Brittany about her daughter joining the National Guard. “With her dad being a recruiter, this has been our life. I’ve lived it. I would never stand in the way of Brooke’s happiness. I couldn’t be more proud of her and am excited to see where it takes her. It has been wonderful for our family. Brooke wants to go to school and the National Guard provides that. I am not afraid of it. I am proud of it.”

Well, Sisters on the Fly (SOTF) are doing just that and have a simple set of rules; no men, no kids, be nice and have fun! Originating in the late 90s, a group of 8 friends traveled to the backcountry of Idaho to go fly fishing. Part of the group and organizers of the trip were real sisters Maurrie Sussman and Rebecca (Becky) Clarke, Founders of Sisters on the Fly. „

hey wanted to share this experience with friends and strangers to expand the group to all women who want to take a break from the hustle and bustle to go on an adventure. After the trip, they decided to expand Sister’s on the Fly to what is now the largest women’s outdoors group in the country with over 10,000 members. Each sister is designated their unique Sister Number upon registration starting with Sussman being Sister number 1 and Clarke being number 2.

his sisterhood comes from all walks and seasons of life and travel the U.S. year round giving them a variety of adventures from camping, hiking, fishing, dancing and antiquing. Although having your own camper is not required for weekends away, most arrive to the event with campers in tow. These aren’t just your ordinary campers though; these vintage gems have been completely renovated to show the personality of each sister and are appropriately named to fit the décor. Sisters that don’t have campers can either bunk with another, stay in a nearby hotel or have even been known to make a camp in their car. Remember, there are very few rules.

ach state has a Wrangler who assists new member, helps answer any questions and assists in the coordination of events. Florida Wrangler and Texas native Maureen Carnevale moved to Florida 3 years ago from Washington DC. Carnevale is sister number 5893. At that time Carnevale became the Wrangler, Florida had only about 60 sisters but with the national attention drawn by The Junk Gypsy episode about Sisters on the Fly on the Travel Channel, Florida now has approximately 245 members. With the events being member generated, the number of events vary each month. In September, there were 5 events in Florida with two sold out events being on the same weekend. To ensure the location can accommodate the sisters, most events have a capacity is set for some events. Recently Carnevale and about 30 other Sisters embarked on an Old-Florida weekend adventure of camping and kayaking on the „

Chassahowitzka River in Citrus County. Most arrive on Thursday evening to get their campsites set and ready to welcome the ladies from near and far. Unfortunately, on this weekend, the grounds were saturated from the abundance of rain so outdoor set up was limited but that didn’t stop the fun! That evening they gathered for a welcome reception, so the sisters can share where they are from and a fun fact about themselves. As with each event, some ladies know each other, and some are new to the group. On Friday, they had a free day to divide and conquer the surrounding town. This allows for groups whom enjoy similar interests and pair off for a day of fun and freedom to do as they choose. Some went to the State Park, some shopping and some to try out local eateries. In the evening they gathered back at the campground for a pot-luck dinner, campfire and comradery.
Sanitation workers are also protected alongside police, firefighters, and paramedics by the “Move Over” law.

n Saturday morning the SOTF set off on a kayaking trip down the Chaz where they enjoyed nature, traveled trailed off the beaten path and found the perfect spot for a little swimming. The foundation that this sisterhood was built upon was getting women together to get outside and enjoy adventure; that’s exactly what they do. With the rain present in the area, it dampened the plans for a campfire, but the ladies found a delicious restaurant in town that happily accommodated the group. I’m sure the fellowship was just as good as the food. On Sunday, the women who must return to work and families tend to go home but those that are able extend their weekend to Monday morning.

arnevale shared one of her favorite SOTF trips this far, Waltz Across Texas. After leaving from her hometown of Sarasota, Florida with her camper in tow, she picked up 2 more sisters in Alabama, 2 more in Louisiana and by the time they reached Texas they had a caravan of 13 sisters ready to take on a 2-week trip down Route 66. When they reached their destination in Texarkana, there were 125 campers ready for the adventure of a lifetime. „

For 35 years, South Florida State College (SFSC) has provided inspiring entertainment
for the Heartland area bringing wonderful experiences and educational enrichment to its community. The citizens of Highlands County, in partnership with local and state government, raised funds to build a 1500 seat performing arts center. Beginning in 1984, President Dr. Catherine Cornelius set out to bring the arts to the Heartland. “We had a beautiful building being used for graduations and other small events and had a community we thought would appreciate the arts” says Dr. Cornelius. With a $40,000 budget, Dr. Cornelius sent Doug Andrews, Director of Cultural Programs from 1984-2014, to Atlanta and New York to select shows for the first year. “In the fall of 1984, during a routine visit with newly appointed president, Dr. Catherine Cornelius, I was asked if I had considered applying for the position of Chairman of Cultural Affairs. Being a musician and a music instructor and having interest in the performing arts, I told her that while I hadn’t thought about it, I might have some interest. That apparently sounded a lot like a “yes” to her because she replied “good” as she set a large stack of brochures, flyers and other promotional materials from booking agents around the country on her desk,” recalls Andrews. “Her next statement was equally surprising when she informed me that the College would have a Cultural Series that year and that I would need to go to a conference in Atlanta two weeks from then to book such a series.”

“The Nutcracker was our first show. It was our litmus test. If we can sell tickets to a ballet, we can sell tickets to anything,” adds Dr. Cornelius. Tickets for the December 1984 showcase of The Nutcracker went on sale and sold out in two days. “It was packed,” says Dr. Cornelius. “There were families, grandmothers with their grandkids, people traveled from all over to see The Nutcracker.” It was a great success and set the stage for the years to come.

committee established from co mmu n i ty memb ers , D o u g Andrews chose a wide selection of performances. “What we tried to do, our first goal, was to present a variety of shows to meet the different constituents of our area,” explains Andrews. “We continued to upgrade the quality of the performances with the help and support of the college and sponsors. As support for the series continued to grow, we were able to afford higher priced performers. As a matter of fact, 12 years after that first performance we paid $30,000 for one performance – that of Victor Borge.” Over the years, great performances have graced the stage at South Florida State College. Broadway tours such as “My Fair Lady”, The Florida Orchestra, Jay Leno, the Chinese National Orchestra, Bill Cosby, Chris Tomlin, Johnny Mathis, Kenny Rogers, and many others have made a stop in Avon Park to entertain, excite, and cultivate an appreciate for the arts.

By Ingrid Utech Photos courtesy of Sebring Historical Society This year, the Sebring Historical Society celebrates its 50th anniversary. “It’s an appropriate time to recount the Society’s history and accomplishments and to reflect on the challenges that the Society faces today and, in the future,” SHS president Mike Jarvis said in a recent interview. The City of Sebring was founded in 1912. But it wasn’t until 1967, when Floyd Schumacher invited some of his fellow Sebring High School alumni to his house to reminisce, that the idea of an organization to preserve the City’s history was suggested and enthusiastically received.

With the blessing of his friends, Mr. Schumacher met with another high school alumnus, Ford Heacock, and together, they created a committee of interested individuals who drafted a charter and bylaws, suggested a slate of officers, and promoted the organization with the community. On July 25, 1967, an enthusiastic group of individuals elected the organization’s first Board of Directors. Ray Graddy, who later was appointed as Sebring’s Postmaster, became the first president. The group also adopted the charter, which more than 200 individuals signed, and the bylaws. The State of Florida filed the documents on August 7, 1968. Early on, members recognized the need to have a facility where records could be stored and which the public could visit. In 1973, the Sebring Police Department gave the Society several rooms in the basement of the police station. But the building lacked climate control, and the basement was cramped and subject to flooding. In 1987, backup of water and sewage damaged some material and gave impetus to the quest to move elsewhere.

As luck would have it, two very fortunate developments took place in 1988 and 1989. First, SHS member Woodrow Harshman gave a very generous gift of $85,000 to the Society. Second, the Sebring Public Library, which was undergoing an expansion, agreed to use the money to build a 1,700 square foot Archives. It would be located on the lower level of the Library with a separate entrance. In 1991, the building was completed, a dedication ceremony was held, and the Archives opened at its new location. The SHS’s goals have always been twofold: (1) to collect, preserve, and make accessible archival material and historical records pertaining to Sebring and Highlands County and (2) to promote local history through programs and presentations, exhibits, publications, and [in more recent years] social media. No history of the Sebring Historical Society would be complete without paying tribute to the extraordinary accomplishments of Allen Altvater, Sr., the City’s chief historian and all-around citizen par excellence. Mr. Altvater was involved in just about every major institution in Sebring during his long, productive life. At various points in his career, he served as Fire Chief, City Manager, Project Superintendent of the Civilian Conservation Corps based at Highlands Hammock State Park, and first director of the Sebring Air Terminal. He was active in civic clubs

and his opinion was crucial to most decisions affecting City government and early life in Sebring. Mr. Altvater wrote histories of Highlands Hammock State Park, the Sebring Firemen’s Association, and the Sebring Chamber of Commerce. He also edited the Sebring Historical Society newsletter from 1969 to 1986 and filled it with entertaining stories about Sebring’s history.

Equally important, he organized and compiled the accomplishments of others into readable material. Amateur historians’ Park and Albert DeVane’s voluminous and comprehensive research on the Heartland, the State of Florida, and the Seminole Indians became a 2-volume publication called DeVane’s Early Florida History, which can be found in the Library of Congress. John Newcomb’s diary of early Sebring and Milton Baker’s photographs of early Sebring, which date from 1911 to 1916, became the Newcomb-Baker Collection. In total, Mr. Altvater either wrote or compiled 19 books. He laboriously hand set the type for many of them and hand fed the copy on his multigraph printing machine. He received many honors throughout his lifetime, including Most Valuable Member of the Sebring Historical Society. He died in 1994 at the age of 96.

Besides the Altvater Collection, the Archives includes all the Society’s newsletters, indexed by topic, year and month, newspapers dating back to 1914, and notebooks on more than 100 topics. Also included are oral histories based on interviews with Sebring’s pioneer families, Sebring High School yearbooks dating from 1941 through 2017, photographs on all sorts of subjects, maps, City Directories dating back to 1956, and more. Carole Goad, who was the Director of Archives for close to 14 years until mid2016, along with dedicated volunteers organized much of this material. The Society is in the beginning stages of digitizing it now.

Fall Vegetables in the South By Jessica Pleger
It’s the time of the year to enjoy a few of our favorite seasonal vegetables such as squash, apples and pumpkins. Here are wonderful recipes that include everything from creamy soup to casseroles featuring fall vegetables in the South. This is a wonderful way to incorporate the fall harvest into your family meals. Most squash and pumpkins can serve a dual purpose in recipes by using the meat as well as saving the seeds for roasting.

Acorn squash is named for its resemblance to a large acorn. This winter squash having a greenish-orange color and has a mellow, sweet flavor that pairs well in dishes containing bacon, garlic, sugars or spices such as sage or nutmeg. Like its close relatives the butternut squash and spaghetti squash, acorn squash is more nutrient-dense than all types of summer squash. The butternut squash is a staple in many fall recipes. It is typically cut in half and roasted after removing the seeds. This is a great vegetable to incorporate into your kids’ meals because it can be used either sweet or savory dished and even as a thickening agent for soups and even macaroni and cheese. Pumpkins are a key ingredient for traditional Thanksgiving dishes such as pies, soups, and breads. They are also widely used to carve jack-o’lanterns for Halloween and decorate homes for fall. Pumpkins are members of the gourd family, which includes cucumbers, melons, cantaloupe, watermelons, and zucchini. Gourds were originally prized for their seeds as a source of protein, just as or even more so than the flesh so take the time to clean and roast the seeds to make a great treat.
Brown Sugar Roasted Acorn Ingredients 1 medium acorn squash (about 2 pounds), halved and seeded 1/4 cup unsalted butter, melted 1 tablespoon brown sugar Kosher or sea salt, to taste Fresh cracked black pepper, to taste Directions Preheat oven to 400°. Line a baking pan with parchment paper. Combine the melted butter and brown sugar. Coat the acorn squash halves with the brown sugar mixture and season with salt and pepper. Place the acorn squash halves cut side down on the prepared pan. Roast for 30 minutes, flip the squash over and brush with juices from the pan. Continue roasting for about 20 minutes or until tender.

Pumpkin Seed Snacks To dry pumpkin seeds for eating, rinse them under cold water to remove the pulp and strings; drain well. Pat seeds dry with paper towels. Spread seeds out on a baking pan. Let stand 1 to 3 days or until dry, stirring occasionally. You can also dry seeds in a food dehydrator if you have one.
Sweet Seeds Ingredients ½ cup butter, melted ¼ cup packed brown sugar 1 tsp. ground cinnamon ½ tsp. ground nutmeg Dash salt 3 cups dried pumpkin seeds
Directions Preheat oven to 350º. In a large bowl stir together melted butter, brown sugar, cinnamon, nutmeg and salt. Add pumpkin seeds; toss to coat. Spread in a single layer in a baking pan. Bake about 30 minutes or until toasted, stirring occasionally. Cool in pan on a wire rack. Store in an airtight container up to 3 days. Great as a snack or on a salad.
Pumpkin Seed Turtles Ingredients 2 cups dried pumpkin seeds Nonstick cooking spray Salt (for toasting; optional) ½ cup butter ½ cup packed light brown sugar ½ cup packed dark brown sugar ½ cup light-color corn syrup ½ tsp. salt ½ cup + 2 Tsp. sweetened condensed milk 1 tsp. vanilla ¼ cup dark chocolate chips 1 tsp. vegetable oil Sea salt flakes for finishing
Directions Preheat oven to 350º. Spread pumpkin seeds in a single layer in a baking pan. Lightly coat seeds with cooking spray and , if desired sprinkle with salt. Bake about 20 minutes or until lightly browned. Let cool. Arrange in clusters of 8 to 10 seeds on parchment paper-lined baking sheet. Caramel, in a 2-qt. saucepan combine butter, brown sugars, corn syrup and the ½ tsp. salt. Bring to boil over medium heat. Stir in sweetened condensed milk and vanilla. Clip a candy thermometer to side of pan. Continue cooking about 8 minutes or until mixture reaches 240º, stirring constantly. Quickly spoon caramel over seed clusters making sure caramel touches all seeds. Let caramel seeds set. In a small bowl melt chocolate chips and oil in microwave on high for 1 minute, stirring once. Stir until smooth. Spoon chocolate over the top of each cluster. Sprinkle with sea salt flakes. Let stand about 1 hour or refrigerate about 15 minutes, until set.

Butternut Squash and Sage Soup Ingredients 4 cups cubed peeled butternut squash 1 tablespoon olive oil 2 tablespoons minced fresh sage 1/4 teaspoon salt 1/4 teaspoon pepper
Soup:
1 tablespoon olive oil 2 tablespoons butter, divided 1 medium onion, chopped 1 garlic clove, minced 3/4 teaspoon salt 1/4 to 1/2 teaspoon crushed red pepper flakes 1/8 teaspoon pepper 4 cups water 1 medium sweet potato, chopped 1 medium carrot, chopped
Directions Preheat oven to 400°. Place squash in a foil-lined 15x10x1-in. baking pan. Drizzle with oil; sprinkle with sage, salt and pepper. Toss to coat. Roast 30-35 minutes or until tender, stirring occasionally. Meanwhile, in a large saucepan, heat oil and 1 tablespoon butter over medium heat. Add onion and garlic; cook and stir 3-4 minutes or until softened. Reduce heat to medium-low; cook 30-40 minutes or until deep golden brown, stirring occasionally. Stir in salt, pepper flakes and pepper. Add water, sweet potato and carrot to saucepan. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until vegetables are tender. Add squash mixture and remaining butter to soup. Puree soup using an immersion blender. Or cool soup slightly and puree in batches in a blender; return to pan and heat through. „

Cranberry Apple Crisp Ingredients 3 cups chopped peeled tart apples 2 cups fresh or frozen cranberries 1 cup sugar 3 tablespoons all-purpose flour Topping: 1-1/2 cups quick-cooking oats 1/2 cup all-purpose flour 1/2 cup packed brown sugar 1/2 cup butter, melted 1/4 cup chopped pecans Directions Combine apples, cranberries, sugar and flour. Pour into a greased 11x7-in. baking dish. In a bowl, mix topping ingredients until crumbly; sprinkle over apple mixture. Bake at 350° for 50-55 minutes or until fruit is tender.

ROASTED CHICKEN AND VEGETABLES Ingredients
1 5-6 lb. whole roasting hen 6 strips bacon 1 pkg. Chicken Smoked Sausage
1 Onion (quartered) 2 stalks celery (halved) 2 carrots (3� slices) 1 bell pepper (quartered)
Seasonings: Salt, pepper, poultry seasoning, garlic powder, ground thyme, whole thyme. Prepare roasting pan (line w/heavy duty aluminum foil). Preheat oven 350 degrees.
Remove giblets and clean roasting hen; pat dry. Place sausage in roasting pan. Season cavity with seasonings. Insert 1 ½ strip bacon, sliced carrots, onion, celery and bell pepper (smaller portions for neck cavity). Season bottom of hen. Place on chicken sausage. Season top of hen liberally. Truss for even roasting. Place strips of bacon over chicken. Roast in oven 1-2 hours depending on weight of hen. Internal temperature must reach 165 degrees.

Butternut Squash, carrots, parsnips, Brussels sprouts, onion. Prepare favorite vegetables, one inch cubes. Place in bowl and liberally sprinkle olive oil. Season well (above). Toss to coat. Place on prepared aluminum foil lined baking sheet. Raise oven temperature to 375-400 degrees for last 20 minutes. Roast vegetables (until tender) 15-25 minutes.

Preheat oven to 350 degrees. Drain corn. Combine all ingredients. Place in 9 x 9 or small 8 x 11 baking dish. Bake for 30-45 minutes. (Until slightly browned around edges and set in the middle). Note: About half way through baking, stir center of casserole to ensure appropriate baking.
BLUEBERRY DUMPLINGS 1 pint fresh blueberries* 1 tsp. lemon juice ¼ cup sugar 2 tbsp. flour Wash blueberries. In bowl, toss with lemon juice, sugar and flour. Set aside. (or 1 can blueberry pie filling)
1 can Crescent rolls (original) 1 cup sugar 1 stick butter melted 1 cup Mountain Dew (or lemon/lime carbonated beverage)
Preheat oven 350 degrees. Place crescent rolls on counter. Place heaping helping of blueberries on wide side of crescent roll triangle. Gather corners to cover blueberries and wrap tail of triangle around dumpling. Place in sprayed 9 x 13 glass baking dish. Prepare remaining dumplings and arrange in dish. Melt 1 stick butter and mix in 1 cup sugar. Spoon butter/sugar mixture over each dumpling. Pour Mountain Dew into pan and bake. Bake 25-30 minutes or until browned and bubbly. *Note: Apples, pears, peaches, guava paste, cream cheese are all great alternatives.

During the months of August and September, HLT welcomed everyone’s favorite nanny to the stage in the feature, Mary Poppins. The show was an exciting mixture of storytelling, dancing, stagecraft and unforgettable songs such as childhood favorite supercalifragilisticexpialidocious. The theatre also featured Practically Perfect Tea with Mary Poppins where fans from all ages could spend the afternoon taking pictures and doing activities with the cast before enjoying tea and snacks before the show. OF OKEECHOBEE GALA The 2018 Marine Corps Toys for Tots of Okeechobee Gala was held on Sept. 22 at Silver Palms RV Resort. This year's theme was Glitz & Glamour. The event was a great time for an even better cause. The mission of the Marine Corps Toys for Tots Program is to collect new, unwrapped toys during Oct. - Dec. each year, and distribute those toys as Christmas gifts to less fortunate children in the community.
