etter fromTHE PUBLISHER Hello FALL… well, as fall as it gets here in Florida! I wasn’t going to mention the craziness going on in our lives in 2020, but I didn’t think we would be continuing to live like this. I have been praying that life would have returned to normal by now, whatever normal is. Life isn’t quite back to normal, but we’ve taken a turn learning how to work from home, parents juggling digital learning or homeschooling and sadly others some have lost jobs. Whatever your challenge is or has been, we got this together. Seriously though, in the wake of a worldwide monumental change, a good thing happened. Families are spending more time together, our focus shifted from the insignificant to what is truly important. I have seen our communities come together to support local businesses, but most importantly we are taking care of each other’s needs.
As we have spent more time at home, we’ve been able to see our homes in a new light. Many have chosen to dedicate time and resources to upgrading our indoor and outdoor living spaces. I have seen some of you have added a home garden and tried to master new dishes in the kitchen. We would love to hear from you some of your new projects or maybe a new dish you mastered in the kitchen. Please share on our Facebook page. If a home garden isn’t for you we have included in this issue where you can find fresh produce at your local Farmer’s Market as well as tips for shopping smarter in your local grocery stores. For the first time in my 10 years publishing we bring you a story on how important it is to vote. Yes, every vote counts and it is important for us to voice our opinion, whoever your choice is. Something we are looking forward to is Thanksgiving this year. This is always a chance for families and friends to get together and enjoy a nice feast. But mostly the day is a meaningful time to reflect on our blessings and remember how God has been so faithful in our lives. As life returns to normal, even though a slightly new normal, it makes us proud to live in a community that supports one another through these trying times. LAYNE PRESCOTT Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with six sweet, beautiful and perfect grandchildren. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

RAFAEL PACHECO I am a Pisces and was born on the island of Puerto Rico. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

CAROLINE MAXCY FOX was born and raised in Central FL. She decided to be an artist at the age of five. After achieving her BSA from Florida State University, she practiced in the field of design for six years and then received a Masters in Graphic Design from NC State University. She honed her artistic craft and developed a "way of seeing" that fuels her work. Caroline is a full time photographer and lives with her husband in the heart of Sebring, FL. Together they run the day-to-day life at The Great Commission Bible Institute as the Site Coordinators and Dorm Parents. Naturally, adventure abounds.

ith year-round Peanuts specials airing on TV, the Peanuts gang is still teaching us life lessons after 70 years. This made me reminisce about my childhood love affair with Charlie Brown, dubbed America’s lovable loser. Despite his hairless, pumpkin-size head and a penchant for wearing zigzag shirts, Charlie Brown had me at “Good, grief! Since 1950, that endearing blockhead taught me how to keep getting up when life knocks me down. Brilliant cartoonist Charles M. Schulz channeled his inner Charlie Brown in every comic strip, breathing life into an Everyman character that captured common struggles and imparted kick-ass insights. From the classic holiday TV specials to the weekly Sunday comics, here are six life lessons I learned from that resilient, round-headed kid.

I just had to tell you that normally I get my tear sheet from a publication and then file it in the drawer where we keep them. However, as I was thumbing through your August/ September issue I noticed the Six Life Lessons from Charlie Brown article and had to bring it home to my daughter. Michael Noel, owner of Wet Dogs Brewing in Lake Placid, tells us “We’ve always loved our Irish heritage, beer and wet dogs, so we decided to combine them into what would become Wet Dogs Brewing. Our ‘happy place’ is on a dock with a beer, a dog and a tennis ball. We wanted to bring this feel to a local gathering place.” In the beginning of 2020, they were ready to open ahead of schedule and were looking forward to their St. Patrick’s Day Grand Opening but due to COVID-19 plans were changed. Michael tells us “we have been starting and stopping since then as the State restrictions allowed. We operated at times with take out only and again as a restaurant when we partnered with a food truck license.” If you get a chance to visit, Michael tells us they use a unique 4 in 1 brewing system which allows them to operate with a very small carbon footprint. They have five 5-barrel systems (10 kegs), a ½ barrel system (1 keg) and a 5-gallon pilot system. Because of this, they are able to take any recipe they come up with and scale it to any production size. Michael also tells us they currently produce ales and stouts, which use top fermenting yeasts that are active around 74 degrees, and generally ferment for 2 weeks. They also have the ability to produce lagers, which utilize bottom fermenting yeasts at lower temperatures, but are waiting to make sure the virus environment is stable as lagers take longer to ferment (4-8 weeks). If you’re looking for a specialty brew, they have created seasonal and specialty beers for holidays and special events. Michael tells us that they recently produced a guava orange double IPA for a wedding, complete with a customized label for the occasion. The craft brewing industry was exploding and Brew Hub’s primary goal was to help craft brewers grow their brands. Unlike traditional contract brewers, Brew Hub was designed to offer more than just production. They also offer Partner Brewing, where they offer their partners multiple services beyond just production to include marketing, lab services, distribution expansion, and so much more. Because of this, their partners could achieve their maximum growth potential without the risks involved with capital expenditures or geographical constraints. They opened their doors in 2014, and Jeni Overton, Digital Content Manager, tells us that during the past 6 years, “Well-known award-winning Partners have graduated from our services include Cigar City Brewing, Toppling Goliath, and Green Man Brewery. We have also expanded our capabilities beyond craft beer to include hard seltzers, kombucha, and canned cocktails.” They also have their own line of beers under the Brew Hub name that are distributed throughout Florida. Each year they have a few specialty releases that are exclusive to the Tasting Room. Overton shares, “Our Tasting Room is amazing because it gives our visitors the chance to experience not just our own beers, but beers from all over the country that are produced in our Brewery on behalf of our Partners. Our beers and our Partner's beers are all made with high-quality ingredients, at a scale much larger than your typical brewery, with consistent quality control. We help your favorite local breweries make it from their small taproom to your nearby Publix!” They also produce some limited releases that you can find out in the market. Overton tells us, “Recently we had a special release of Barrel Aged Diver Down exclusively for the Tasting Room. Christian Lugo, Co-Founder and Vice President of Lugo’s Craft Spirits in Lakeland tells us, “We are a family-owned and operated business that began this year. We started distilling in July so we’re fairly new to the scene in Lakeland. Our Craft Rum Distillery specializes in bringing true craftsmanship to Rum that hasn’t been seen. We lived in Kentucky and grew inspiration from the Bourbon industry and wanted to bring that to the Rum industry. As a Puerto Rican family, we wanted to also bring our native Rum moonshine from Puerto Rico called Pitorro. It is traditionally aged with real fruits and enjoyed during celebrations. I have taken a family recipe and with quality ingredients and a pure distillation technique have made a purer Pitorro and it can now be enjoyed in cocktails and also be aged with fruits.”

They have 3 specific products that will be out in October. Their Original Pitorro, which is a sweeter, higher proof rum, is out now at a few liquor stores and restaurants. Their spiced rum, Libertalia, is aged with real fruits and spices which makes our rum unique because typically a spiced rum is flavored using natural or artificial flavors. They also have Rhiskey, which is a 4 times distilled rum aged in New Charred American White Oak barrels, the same used for Bourbon, which gives it a unique whiskey taste. Hence the name, Rhiskey! Lugo also tells us that All of their products are distilled 4 times in a hybrid copper still that takes any impurities out of the rum and produces a pure product. The flavor and color all come from the aging process, so nothing is added to enhance the color nor flavor which makes these Rums unique. According to Lugo, their Coconut Pitorro will be out this fall and they will have new and unique products coming out in the following months! So be sure to visit them and give it a try. The Florida Brewery (TFB) in Auburndale has been in operation since 1983 and is the 2nd oldest brewery still in operation in Florida. In the 80s there were many brands of beer produced at TFB. The brewery changed ownership multiple times and added nonalcoholic beverages along the way. Today TFB is owned by Empresas-Polar but is run locally by Julie Williams and Stacey Oakley alongside their amazing team of 46 others!

Grove Roots in Winter Haven, started in 2016 as a small microbrewery with a focus of being a community centric gathering place. They wanted to be all things Winter Haven with a place focused on crafting a delicious beer. Even their branding shows the Winter Haven spirit with a focus on the rich history of the citrus industry. Their open concept and outside space help customers feel as if they are sitting in a park when they visit. They are known for being dog friendly and family friendly. Owner, Joseph Dunham, shares that during the course of the year they hold multiple community events including Oktoberfest, Halloween, night markets, Christmas parties, biking events, etc. Dunham says, “We are always focused on bringing people together.” Dunham, tells us, “Our product line brings diversity in beers to Winter Haven. At any given time, we will have roughly 16 different beers on tap. We have a variety of flavors from hoppy, dark, citrus, sour, and light. We want people to have a flavor experience every time they step foot in the brewery. Those styles also will have local ingredients from Florida such as honey, citrus, and coffee.” Their brewing starts with 4 ingredients: Water, Hops, Malted Barley, and Yeast. First, they mix malted barley with hot water. The hot water activates certain enzymes

in the barley to start converting complex starches. After roughly an hour they drain this liquid into the boil kettle, while sparging hot water on top of the grains to rinse them and halt the enzymatic activity. Once all the liquid is collected, they bring it to a boil and add hops for bittering and profile. After an hour they cool the liquid and transfer it to the fermenter vessel. In this vessel, they pitch the yeast which will start feeding on the sugary liquid and produces alcohol. Dunham tells us, “This process takes anywhere between 10-21 days. After this process you move the beer into another vessel called the Brite Tank to carbonate.” Grove Roots offers many specialty products with new releases every season. LaBelle Brewing Company is the first and only brewery in Hendry County and was founded by a local Southwest Florida citrus-growing family with a passion for the simple things in life, like great beer and great food. By 9:30 am on a Saturday morning, the streets of Downtown Lakeland are filling up with people. Groups of sweaty runners gather around tables at the local coffee shops comparing training plans and sipping coffee. Young couples push strollers along Kentucky Avenue. Friends catch up over a hot breakfast watching the passersby, and children giggle as they chase each other along the sidewalk. This scene has played out in ebbs and flows over the decades since Abraham Godwin Munn donated the space to the city in 1889. This plot of land would become the centerpiece of the business district of Lakeland, a social gathering spot for generations of friends and families, and a site for commerce throughout the evolution of markets over more than 100 years. „

Jim Luna waves from the far side of Mitchell’s Coffee Shop. “Let’s walk and talk,” he says. “I need to deliver papers to several of the vendors.” Jim is contracted by the Lakeland Downtown Development Authority (LDDA) as the market manager for the Lakeland Downtown Farmers Curb Market. He actually pitched the idea for this market and has been its manager since day one. By trade, he is a landscaper. “I was doing the downtown landscaping. You have to do that stuff after hours, ya know?” He shrugs his shoulders. “When you are down here watering plants and everything is quiet, your mind wanders. I could just see it; I could picture a market and all the families and vendors. It just seemed so perfect!” Nothing is ever perfect. While the concept of an open-air market seems simple, many farmers markets fail. Markets are complex, blanketed in policies and procedures. And that’s to say nothing about marketing, vendor relations and garnering community support. The Lakeland Downtown Farmers Curb Market wasn’t a quick and easy success either. The LDDA supported the market for a full decade before it finally turned a profit. Today, LDDA's full time staff of 3 each have duties related to the Market. LDDA staff manages all marketing and administration. Jim is contracted annually as the Market Manager.

Jim and I stop at a tent where 3 vendors have congregated for a quick chat. He distributes papers and one vendor asks about his back. It’s quickly clear that these vendors have all formed strong relationships. Jim does the introductions in the style of a proud parent, tossing in little tidbits about their successes. “Benjamin runs Honeycomb Bread. He sells amazing breads and people line up to buy out his gluten free options! I bet he’s already sold out for the morning…” Benjamin smiles and nods. His morning started hours ago. It takes a lot of work and an early morning to bring high quality, fresh bread to his customers.

Handmade, Homegrown, Homemade, Heartfelt… Every vendor here has a story. These people really care about the things they grow, craft, and sell, and it’s obvious. But starting a business is hard. The initial investment can be financially restrictive. The market has “categories” and only allows a few vendors to sell in each one. Vendors must apply online providing forms, photos, and proper permitting. Some vendors need insurance, some require permitting by the US Department of Agriculture. Others fall under Cottage Food Laws and the labeling regulations are the biggest requirement. Vendors who only sell at the market can function under the umbrella of the Market’s Business Tax License. The Farmer’s Market has been a blessing for many of these vendors, an easy entry point as they define and refine their concept and grow their customer base.

As Jim and I hand over the last of his papers, I see a young family sitting on the curb sipping ginger beer slushies. The youngest child gleefully offers a sip to his father. A dog on a leash strains his neck to the child for attention. The father and the man share a smile. A vendor shakes hands with a customer. A woman waves across the street to another woman. People slip out of the sun into the permanent businesses that line the streets. Right here, on this one street, a community has come together to support each other. If downtown is the heart of Lakeland, the pulse here is strong. The ghosts of decades of commerce walk along these same streets and a community of care has flourished along the edges of Munn Park. “You get to know your customers,” Jim points out. “The exchange is personal and meaningful. We have many businesses that started on these streets and have been able to grow because of relationships made right here!" He begins rattling off businesses. "Patriot Coffee, Born and Bread, The Nectary, Swan Brewing, The Salty Cow.… Even businesses who don't have their own location have expanded offerings inside of other established Lakeland businesses. Ethos Coffee is inside several coffee shops and restaurants. Honeycomb Bread is featured on some menus, too. There are plenty more."

863-991-5903 The Lakeland Downtown Farmers Curb Market became a SNAP authorized market in 2015. The Supplemental Nutrition Assistance Program is administered by the USDA and serves as the nation’s largest domestic hunger safety net. A SNAP Farmer’s Market has the capability to accept EBT cards and also provide fund matching to be used for local grown fresh produce. A customer can visit the SNAP tent and swipe their EBT card to receive red tokens that work like money with participating vendors. The customer is then given an equal number of green tokens. They literally double their benefit when they shop at the Farmer’s Market. While red tokens can be used for any eligible food item (bread, honey, coffee, etc), the green tokens are only used for the purchase of locally grown fresh produce. Customers and farmers both benefit from the program. Healthy fruits and vegetables feed families that might not otherwise prioritize these items and farmers increase sales with new customers. Currently, the SNAP program matching is unlimited through December 31, 2020. But these numbers are renegotiated annually and pre-COVID19, the weekly matching had stabilized at $40 for several years.

Make your voice heard … Every Vote Counts! By Bridgette Waldau THE IMPORTANCE OF VOTING Voting is one of the most important rights and responsibilities that U.S. citizens have. About 150 million American citizens are qualified to vote. Unfortunately, many don’t. They give up on a chance to choose leaders and representatives who will do things that are important to them. WHY SHOULD YOU VOTE? Nobody can force a citizen to vote. But many citizens do vote, because voting lets them tell the government what they want it to do. If citizens think they’re paying too many taxes, they can vote for a person who promises to lower taxes. If citizens want more services, they can vote for someone who will promise to spend funds to gain more services. EVERY VOTE COUNTS It’s also important for citizens to know how to work the voting machines or to mark the ballots they’ll be using when they vote, so that their votes will be counted. Why is that so important? Because every vote counts! An election might be decided by a single vote and history would be changed because a person got…or lost…that one vote ELECTIONS HAVE CONSEQUENCES. You have the power to decide on the quality of life you want for yourself and future generations. Voting is your chance to stand up for the issues you care about like public transportation, raising minimum wage, or funding local schools. This is your life: take the time to help decide what’s best. NOT VOTING IS GIVING UP YOUR VOICE Elections are decided by the people who go out and vote. Take some time and learn about the measures and the candidates. If you don’t vote, someone else will make the decision for you. Your power is in your vote. IT'S YOUR MONEY You pay taxes, but do you know how that money is being used? Most people don’t. It is now fall and these recipes are hearty, easy and prepares your taste buds for the Holiday Season! Our Southern Chef shares these recipes that are exactly what you've been looking for.
PUFF PASTRY LAYERED BAKED BRIE 3 wheels Brie 1 tbsp. Apricot Preserves 1/4 cup shredded provolone 1 tbsp. honey 1/4 cup toasted chopped pecans 1/4 cup shredded pepper jack 1 tbsp. Dijon mustard 1/4 cup shredded Monterey jack cheese 3 oz. prosciutto slices Egg & water mixture for top 1 sheet Puff Pastry thawed and flour for dusting, if necessary Toasted baguette slices Preheat oven 400 degrees. Line baking sheet with parchment paper and unfold and lay flat pastry sheet in center of parchment sheet. From center of pastry, lay prosciutto slices in circular (flower like) design. Begin layers of brie: 1st – place one wheel of Brie in center of pastry/prosciutto. Spread 1 tbsp. of apricot preserves on brie and sprinkle provolone over preserves. 2nd – place next wheel of Brie on top of provolone. Spread honey, pecans and pepper jack on brie. 3rd – place last wheel of Brie on top of pepper jack. Spread Dijon mustard on top of Brie and top with Monterey Jack cheese. Carefully fold prosciutto slices over all three layers of brie; overlapping on top. Use egg wash mixture to seal. Fold pastry over tower. Lightly pinch together and use egg wash mixture to coat entirely. Cut several slits in top of puff pastry to allow steam. Place in preheated oven; bake 30-35 minutes until golden brown. Allow to rest for 5-10 minutes. Serve with toasted baguette slices or crackers. 81
VINTAGE CHICKEN A LA KING IN PUFF PASTRY SHELLS 1 pkg. Puff Pastry shells 4 tbsp. butter 1 cup sliced fresh button mushrooms 1 small Red pepper, finely diced 1 rib celery, finely chopped 1 small sweet onion, finely diced 4 tbsp. AP flour 2 cups whole milk 1/2 cup heavy cream Salt & Pepper to taste 1/4 tsp. Paprika 2 cups cooked chicken, cubed 1 cup frozen peas 82

Bake pastry shells as directed. Prepare Roux: In a large skillet, melt butter. Add vegetables and sautĂŠ until tender. Sprinkle in flour and stir until incorporated. Gradually add milk, stirring constantly until mixture is smooth and returns to boil. Cook for two minutes. Turn down burner and add heavy cream, seasonings, cooked chicken and frozen peas. Stir until bubbly then turn off heat. Serve over Puff Pastry shells.
ROASTED ONION SALAD 3 large Vidalia Onions (sweet onions) ¼ cup plus ½ t. olive oil, divided 4 garlic cloves 8 cups torn mixed salad greens 1 cup (4 ounces) crumbled blue cheese ½ cup chopped walnuts, toasted 1 ripe pear, peeled, cored and diced. Dressing: 2 T. white wine vinegar 2 shallots, quartered ¼ cup minced fresh parsley ½ t. crushed red pepper flakes ½ t. sugar 2 T. Lemon Juice 2/3 cup olive oil S & P to taste Place onions in a baking pan. Line with aluminum foil and spray with olive oil spray. Drizzle with ¼ cup olive oil; toss to coat. Place garlic on a double thickness of foil. Drizzle with remaining olive oil. Wrap foil around garlic; place on baking pan with onions. Bake at 400 degrees for 40-45 minutes or until onions are lightly browned and garlic is tender. Can turn onions occasionally. Cool slightly before assembling salad. In a large salad bowl, combine the greens, cheese and walnuts and pears; top with roasted onions. Dressing: Place vinegar and shallots in a blender; squeeze softened garlic into blender. Cover and pulse until blended. Add parsley and pepper flakes and S & P. Cover and process, gradually adding oil in a steady stream. Serve with salad.

As a savvy grocery shopper, you already follow basic food-buying rules. Don’t shop hungry. Always bring (and stick to) a grocery list. Buy what’s in season. Support local farmers. Take advantage of weekly sales. Use coupons. You’re trying to both save money and eat healthfully, which sometimes feels like competing goals. Navigating the food aisles has become a complicated, almost daunting process that sometimes leaves even the most health-conscious consumers second-guessing themselves. For example, should you still wash that prepackaged bag of spinach even though it says, “triple washed”? Should you really ditch all packaged foods or are some of them healthy options? And when is imported produce a better option than buying local?

OKEECHOBEE TO CELEBRATE THE 500 YEAR ANNIVERSARY OF THE FIRST CATTLE ARRIVAL TO THE STATE OF FLORIDA
Cattle Drive Sculpture Project Presented by Okeechobee Main Street’s Arts & Culture Alliance
Okeechobee Main Street’s Art and Culture Alliance is raising funds to bring a bronze cattle drive sculpture to Okeechobee. The project will consist of ten bronze sculptures and will include a horse with rider, calf, dog, six head of cattle and cowboy on a fence. The sculptures will celebrate the ranching lifestyle in Okeechobee County as well as celebrate the 500-year anniversary of the first cattle brought to Florida. In 1521 the earliest Spanish explorers and seven Andalusia cattle arrived on Florida shores. The project will be installed in the City of Okeechobee at Flagler Park in the Fall of 2021. The cattle sculptures will graze on the grass along side of the sidewalk with native plants added for authenticity. Visitors will be able to walk along the sidewalk and feel like they are in the middle of a cattle drive and will also be able to read about the history of Okeechobee ranchers. The OKMS Arts and Culture Alliance’s mission is to connect people to the arts and to each other. We want our art projects to celebrate the uniqueness of our community. This exhibit will not only be a celebration of Okeechobee ranchers but will also be an interactive installation containing historical content within the exhibit. This sculpture project will preserve the legacy of Florida heritage for many generations to come, allowing the essence of the Florida Cowboy to come alive here in the Heartland.
