etter fromTHE PUBLISHER It’s summertime and the Florida sun is brighter and as I write this, the Heartland is already in the 90’s. I had my assistant, Finley Grace, helping me finish the magazine and she picked the Summer cover that Bridgette designed for you. Doesn’t this make you want to get outside; it sure did for us right here in our own back yard pool. Finley and I hope you find your own happiness and adventure this summer. I’m seeing all the cute pictures on Facebook with your kids celebrating their last day of school and ready for summer fun. With our days being a little longer it can be a time for growth with your kids, recharging and just plain enjoying life this summer. We all need enjoy God’s Beauty! I’m so thankful for my team that has stepped up and done what was needed to bring you the exciting and heartfelt stories we have in this issue. We feel we have a combination of stories for everyone. I couldn’t do this without my team, advertisers that support us and of course you, our readers. Please keep sharing your thoughts with me so we can add it to our reader’s page. I love hearing from you.

For some ideas outside this summer, Rebecca shares with you how to explore nature in your back yard, neighborhood or planning an adventure. I remember, with my brothers and sisters when school was out we were so excited to get to play outside all day. Most days we didn’t come inside until we heard the dinner bell. I hope you take some of these ideas for outdoor adventures this summer. We wanted to honor our Veterans and Military Families in this issue and what better way than what we found right here in the Heartland. A huge thank you to Danny & Carla Santangelo for the countless hours they spend supporting these families with their foundation Hunt For Vets. A must read and I know you will enjoy. I can go on and on with all we have for you in this issue but instead I will let you start flipping the pages for all the stories my team has brought you for our Summer Issue. We create Heartland LIVING for You! I wish you a summer filled with joy, taking advantage of time outdoors (hopefully mostly bug-free) whether that’s soaking up the sun, a lake, pool or beach trip, strolling around a farmers’ market, tending to your garden, or kicking back with family and friends to enjoy our BBQ recipes with a cool breeze and beverage. graphic and fine artist for over 30 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her art studio. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning eleven Florida Magazine Charlie Awards (2015- 2018). She is Arts & Culture Alliance Director (16 years) for Okeechobee Main Street. Bridgette is married to James Waldau, a retired firefighter from the City of Hialeah.

There are numerous publications in that area that are similar to yours however none of them are as well designed. It was impressive seeing such a well designed and "fancy" magazine such as yours.

hat happens when the “lights go out” for a group of young talented artists? In Okeechobee, a mother-daughter team and owners of a dance studio, found a way to make sure that the show would go on. Located in Okeechobee, Grace Place Dance Studio’s emphasis is placed on providing its students the tools needed to develop proper technique and appreciation of the art of dance, while building self-esteem, confidence and a personal love of dance. Grace Place is owned and operated by Colleen Queen and Abagail Queen. A resident of Okeechobee since childhood, Colleen left Okeechobee for college but returned and worked as a teacher. Her daughter Abagail, born and raised in Okeechobee, attended college and studied dance. Abagail was blessed with the opportunity to become a member of Studio One, a professional Hip Hop group. She also trained with other professionals and performed at an international level. During her high school years, Abagail had the desire to bring her love of dance to Okeechobee. She wanted to give the kids of her community the opportunity to learn the art of dance without having to leave Okeechobee. From that dream, Grace Place was developed. Buck Rapp is a P.E. teacher at Sebring High, but when he’s not teaching kids how to do burpees and push-ups, you might find him wrangling 50 kids in the Highlands County Anglers Club, a local Florida B.A.S.S. Nation fishing organization for kids ages seven to 18. “I’ve got them from Avon Park to Lake Placid, even a kid from DeSoto. We’ve fished college teams. Even some of my junior kids have outfished some of these college kids. Some of my high school kids are starting to out-fish some of these adults,” Rapp praised.

Rapp’s youngest club member is eight years old, and his kids come from a variety of economic backgrounds, but all share a love and passion for fishing. The youth compete against other Florida B.A.S.S. Nation youth anglers from across the state and Georgia. September through June, the organization holds a monthly tournament anywhere from Lake Okeechobee to Lake Kissimmee, Winter Haven, the St. John’s River, Lake Istokpoga and up in north Florida. Any club members are welcome to compete. “It’s one weekend a month. We average about 150 teams a tournament. The kids like it, the parents like it. It gets them outside the house and back to the old-school roots,” said state youth director Glenn Cale. Kids fish in teams of two with a boat captain that might be a parent or might be a volunteer, even a former club member. Teams enter their five biggest fish and win based on total weight. Points are assigned each time teams compete in a tournament, and there’s a state championship at the end of each season.

James Swaford of Lake Placid High School and Chase Grigsby of Highlands Virtual School, both juniors, recently won the April tournament, pulling in 20.89 pounds of fish even though their day was cut short by a lightning storm. They each took home $500 in scholarship money. Swaford also applied for and won the $1,000 Bobby Lane Cup youth angler scholarship this year. On the junior side, the kids fish for merchandise and Bass Pro gift cards. Cale said he partners with Top Tier Fishing to tap into scholarship opportunities through their database. Two-hundred and thirty colleges nationwide dip in that database and contact the families directly. Last year 23 scholarships were awarded and this year it was 14. “I have college coaches that have called me and said, ‘Do you have some kids that would be looking to come to Alabama or Georgia to fish?’,” Cale explained. “It’s network-based, just like football coaches. They have connections.” Kids of all ethnicities and backgrounds participate, Cale said. Genders, too. “We have some great girl fishermen on the high school and junior side.” Rapp added that while he had no girls on the team this year, he has in the past. “Girls have a bigger chance of getting a scholarship than my boys do. There was a girl who ended up getting a scholarship to the Savannah College of Art and Design. SCAD offered her $40,000 a year.”

Most of the kids who join, however, do it simply because they love fishing. Swaford was already an avid fisherman when he joined in the seventh grade. “I already was interested in watching (professional anglers) Scott Martin and Kevin VanDam. I was going out fishing different bodies of water, not always pond hopping. You have to find other ways to fish a lake if something’s not working.” His favorite lake to fish is Lake Childs in his hometown of Lake Placid. “It’s real close and so many big fish are stocking the lake on brush piles. Not many people can catch them, but if you can get on them, it’s a good time.” Grigsby joined in the eighth grade, also for love of the sport. “Somebody told me about the club. I fished a tournament and loved it.” He said he learned “a ton” including how to fish in different weather conditions, in different kinds of lakes, using different types of bait appropriate to the situation. “We have to find our fish. Every lake is different.” While both boys golf and Swaford also plays baseball, Cale said the club is a great opportunity for kids who may not be interested in traditional sports like football or soccer. “It’s a fast-growing sport,” he said.

While Rapp has run his club for five years and Cale has been with the organization for seven (it’s his third year as state youth director), both were quick to mention the importance of the volunteers, without whom they wouldn’t be able to do what they do. First and foremost, the kids require an adult to drive the boat, and not all kids have a family boat and a parent who can captain it. “We have up to ten volunteer boat captains that help us out at every tournament,” Cale said. “And we have volunteer rescue boats in case a boat breaks down. Volunteer parents set up the weigh-in stage and help us set up and break down the tents.” On the junior side, the boat captain can offer some instruction and help, but at the high school level, the kids must do everything on their own, including fixing broken rods and reels and other problem-solving.

In the middle of the Seminole Indian Reservation lies one of the most famous guided hunting locations. One specific hunt is where this need became real. “We had a group of Purple Heart recipients here and Danny was in the woods with one of the soldiers from Wounded Warrior and he seemed really down,” explains Carla Santangelo. “Danny was just trying to cheer him up by talking with him and asked, ‘Everyone calls you a hero but who is your hero?’ The man got teary eyed and said, ‘My wife. I couldn’t have made it through everything I have done without her home taking care of our kids and our home.’” “When Danny came home and told me that story, he was saying ‘We’re doing it all wrong! We’re separating the families! They should be together!’” We sat down with one our friends who is an attorney and he said we should start our own foundation. We’re doing it.” “The heart behind this is knowing that a lot of these guys have been through such hard things,” add Carla Santangelo. “It is so close to my heart to serve them, to appreciate them, to show them that we haven’t forgotten all that they gave up doing for our country, for us all to be free. One of my main goals is to share Jesus with them. We don’t push it on them but ask if there are specific things we can be praying for them.”

We have 4 to 6 families a month which might have 2 family members with them; they might have ten. There really is no answer in this world to the problems we have. You know, we have acupuncturists, we can go to massage therapists, or we can take another pill, but these are all band-aids. On May 1, 2021, The Sportsman’s Foundation for Military Families hosted the 2nd annual fundraising concert. Four hundred supporters came onto the Okeechobee Outfitters property for a dinner and concert with Craig Morgan and special guest speaker, Mark “Oz” Geist. It was an evening of laughter, tears, and great raffle prizes and an auction all to benefit veteran families. All monies raised is used to give a veteran and his family a vacation of hunting and healing. Country Music star Craig Morgan, an Army veteran, known for his hits “Almost Home”, “That’s What I Love About Sunday”, and “Redneck Yacht Club” performed on the porch of one of the cabins. Liya was 16 and Marjani was 10 when they were found living on the streets outside of Addis, Ethiopia with their eight-year-old brother Yonas and two-year-old sister Nyala. The two younger children were immediately taken to a state-run orphanage while the older girls were taken in by Retrak, an organization that seeks to reunify orphaned children with their biological families. It was the first time the siblings, already traumatized by abandonment, were separated from one another. Even Yonas and Nyala did not see each other regularly at the orphanage due to their age differences. “Retrak determined that biological reunification wasn’t possible,” Marisa Stam, Executive Director of Selamta Family Project’s U.S. team, said from her office in Lake Placid, Florida. “They hadn’t been together in about six months. When they were reunited at Selamta’s community center, it was a moment our team will never forget.”

The children could be together again due to a unique orphan care program developed by Selamta Family Project. Called the “Forever Family Program,” this in-country, community-integrated, holistic program groups eight to ten children together with a displaced woman, who becomes Mom, to create a forever family. Liya and her siblings joined the Bale House, one of two new homes just opened in the neighborhood in northwest Addis where all the Selamta Family Project homes are located. There is a total of 10 active homes, although, if you were to wander through the coffee-scented streets for yourself, you wouldn’t be able to identify them. The houses fit right in, just like the kids inside them.

There is no foster care system in Ethiopia. Famine in the 1980s, an HIV/AIDS crisis in the nineties, and constant political upheaval as well as extreme poverty all created a perfect storm that has wiped parents out of the picture, leaving children to fend for themselves or become victims of crime, abuse, rape, or servitude. Even today, orphanages are still the norm, and it didn’t help that international adoption was shut down in 2017. Domestic adoption is not the cultural norm, especially for children over the age of eight, and while organizations seek to either reunify children with their biological parents or settle them with blood relatives as often as possible, that leaves an estimated five million children without a place to call home. Also, lacking in a developing nation like Ethiopia are child welfare resources like case management, social services, health services, and even identification records. “Some of our kids don’t even know their names,” Stam stated. “Two little boys came to us as Abraham and Kofi Unknown.” Children born outside of a hospital typically don’t have birth certificates. Immunization records and HIV status are also hard to come by.

Enter Selamta. What makes them different from other organizations, Stam explained, are their three core competities. They provide wrap-around care, which includes education (Selamta kids go to their neighborhood school, but since there are no special education programs in Ethiopia, they are provided with individual tutoring according to their needs); health and wellness (kids get a full health care workup by a nurse); psychosocial support (traumatized, displaced and often abused, these kids need help healing emotionally) and spiritual development in the form of opportunities to attend church in their community. “Knowing that they were created with purpose and having their identity in Christ is huge for healing,” Stam said, although church attendance is not a requirement of the program.

COMMUNITY INTEGRATION AND PERMANENCY The second core competency that makes Selamta different is community integration. A community center located in the same neighborhood as the homes provides support to Selamta families as well as the larger community. In 2015, for example, they opened their English summer camp to the neighborhood families, expanding the benefits to even more children. All the Selamta staff in Ethiopia are Ethiopian nationals—members of the community helping one another. The third core competency is permanency. “Our kids don’t age out,” Stam said. This is important because many kids in Ethiopia are age-grade mismatched, and the most recent World Bank numbers indicated that only about 30% of kids in Ethiopia will complete a grade school education. At Selamta, all children complete primary, secondary and tertiary education in the form of vocational programs or university, no matter how long it takes them. And even after they’ve started working, their family and the organization are still there for them, something that older Selamta “kids” were grateful for this past year as Covid threatened their newfound independence.

The Moms take on the responsibility of a gaggle of highneeds children, only a few of which may be theirs by blood. “Many of our moms share similar stories to our kids,” Stam explained. “They are widowed or abandoned. At the minimum, they are a single mom.” When Stam traveled to Ethiopia for the first time in 2008, she was deeply moved by their dedication. “I have never witnessed women willing to love so unconditionally. They’re broken just like the rest of us. They’re flawed. They didn’t do it all right for the last 15 years. They brought all their baggage to the table, too. But what blows me away is their desire and willingness to acquire new tools. They want their kids to be healed, and they want healing. It changed who I wanted to be. It changed the kind of mom I wanted to be.”

While the “Forever Family” program is the bedrock of the organization’s work and will continue to be, Selamta continues to expand its ability to help orphaned children in Ethiopia. Recently, board member Dr. Karen Brown, a psychologist, introduced the organization to trust-based relational intervention (TBRI), an attachmentbased, trauma-informed intervention designed to meet the complex needs of vulnerable children. Stam herself is now a practitioner and teaches the Ethiopia-side team how to use it to help their families. Selamta is also working with the Ethiopian government to be able to provide TBRI-guided services to kids who have been reunited with their biological parents, are in kinship placements with family members, or who have found a home through domestic adoption.

A generation or two ago, summer meant children playing outdoors for long periods of time. Building forts, climbing trees, and jumping off rocks were the highlight of a hot day. A skinned knee was one of the emblems of summer. Many neighborhoods, playgrounds and wilderness spaces are largely quiet today. Whether your family exploration is contained to your neighborhood or takes you to one of Florida’s wilderness lands, keep in mind

As parents, we wish we could spare our children from every possible discomfort or danger, but this is an unrealistic goal. Growth and learning doesn’t come without some risk. Be objective about what the real versus perceived risks might be in natural outdoor space and prepare accordingly. A little preparation can help an outdoor adventure be a smashing success. It’s also a great place to involve your children and practice important life skills. Be sure to do a little legwork beforehand if you are going to a new natural space, like a preserve or wildlife management area. Print out a map and consider downloading a gps app on your phone that will record your route, like AllTrails. It’s also a good idea to check the rules and regulations for an area, just in case. Have everyone pack their own backpacks, but do it together with a master list of the essentials- bug spray, band aids, after bite cream, lots of water, and plenty of healthy snacks. Consider throwing in a notebook and some colored pencils or watercolor paints, in case anyone gets inspired. Finally, encourage each person to pack something they think will be fun to have along the way. This might include a shovel, magnifying glass, binoculars, or an action figurine. A little preparation goes a long way for a great experience!

Slow time is essential to children’s emotional and cognitive well-being. When planning your outdoor adventure, set aside lots of time, hours even. It takes an average of 45 minutes of free play before children dive deep into more complex and evolved play schemes. It takes time for children to figure out who they're going to play with, what they're going to play, what everyone's role will be, and finally to execute their plan. In the natural world, children often collaborate to make up games and rules because there are no prescribed sets of instructions. When exploring outside, school-age children may not be near adults, which gives them time to make up their own rules and solve their own problems without inhibition. Step back, keep them in view, but let the play unfold and resist the urge to intervene too much. While children benefit greatly by having you engage in play with them, occasionally let them figure out the direction of the play with their peers without adult intervention. It’s helpful for parents to keep an ear to the ground, but appear occupied with other things. This is a great time to model slow time activities like nature journaling, deep investigation of a plant or creature, or just lying on a blanket with a book.

Every outdoor adventure is bound to have a few challenges and the experience of working through these moments together can build a life skill that will shape your family. You can start by modeling positive attitudes about simple discomforts and demonstrating appropriate ways to work through the issue. Being outside in the summer in Florida is bound to be a little uncomfortable at times- bugs, heat, sand, etc. Working through these, rather than avoiding them, creates an opportunity to learn how to work through other discomforts that a child will inevitably face in a lifetime. Speak lovingly of your child’s home and avoid comments that indicate you wish you were somewhere else. This is the place of their childhood, where the memories are bound to be made, and your voice is the feature soundtrack.

To raise adults who are passionate about protecting the environment and preserving our planet, they must first develop a deep love for it. The only way to enable children to grow comfortable in nature is to open the door and let them out. The only way to enable children to fall in love with nature is to give them the time to explore the wonder and awe of the natural world.

Consider loose parts for a variety of openended play possibilities. It’s also a great way to bring some nature play home from an outdoor excursion! Examples of loose parts include natural items like sticks and stones of varying sizes, sand, water, small logs, flowers, and leaves. Mix these things with man-made items like hula hoops, balls, jump ropes, stepping stones, muffin pans, colanders, metal stirring spoons, wheelbarrows, buckets, tubes, large blocks, or sifters. The possibilities are endless with these kinds of materials and the search for new treasures is a perfect icebreaker for a hike or outdoor adventure.

When you feel tempted to bail, check your watch and see if you have given the effort enough time. It can be difficult as a parent to ignore the urge to abort when everyone is out of sorts. Make a rule to always give the experience a minimum of 45 minutes before you even consider calling it quits.

Have an activity ready in case your children need a little help engaging- Nature Bingo, I spy, a few books about nature, a field guide matching game, or a challenge to collect as many different flowers as possible. Keep it simple and allow the activity to morph as the children create new rules and renditions. 74

There are also many theories about the best time to book your flight, with the most common being on a Tuesday afternoon, six weeks before your trip. While this exact date is subject to debate, it does seem that airline fare sales tend to start on Tuesdays. Your best bet is to start checking fares early and pay attention to any patterns. Some airlines also have better deals if you book at least two weeks before your trip.

Topdeck and Contiki are popular group tour hosts that cater mainly to young adults and offer specific budget travel options. Elderhostel and Collette Vacations are popular choices for senior citizens. For all ages, Flash Pack and Austin Adventures are excellent choices. Companies such as Costco or AAA also offer travel packages at discounted prices. By signing up for a free membership on certain websites, such as Hotels.com, you can earn free hotel-stay nights and get exclusive discounts on hotels. Juicy burgers, tasty side dishes, refreshing drinks, family and friends are the key ingredients for a fun filled Backyard BBQ.

Blue Cheese Burgers It’s hard to beat the standard All American Burger but we offer it to you with a twist, the Blue Cheese Burger.

THE RECIPE

Makes 12 burgers

Ingredients 3 pounds lean ground beef 4 ounces blue cheese, crumbled 1/4 cup chopped scallion 1 teaspoon Worcestershire sauce 2 1/2 teaspoon Everglades Seasoning

Instructions In a large bowl, mix the ground beef, blue cheese, scallion, Worcestershire sauce and Everglades Seasoning. Preheat grill for high heat. Form the burger mixture into about 12 patties. Grill patties 5 minutes per side for a medium rare burger or until your desired heat preference. Serve on a toasted bun with your favorite condiments. 92

Grilled Corn with Herb Butter THE RECIPE

Makes 8 servings

Ingredients 1 cup butter 1/4 cup chopped fresh cilantro 1 1/2 tablespoon fresh lime juice 1 pinch cayenne pepper 8 ears corn on the cob, unhusked 3 quarts cold water, or as needed to cover

Instructions Cream butter in a bowl until smooth; mix in cilantro, lime juice, and cayenne pepper until thoroughly combined. Cover and refrigerate to blend flavors. Peel husks back from ears of corn, leaving the husks attached at the bottom of the ears. Remove all the corn silk and close husks over the ears again. Cover corn ears with cold water until husks are thoroughly soaked, about 20 minutes. Preheat grill for medium heat and lightly oil the grate. Place the corn onto the hot grate and grill covered until husks are charred and the corn kernels are tender, 20 to 25 minutes, turning often. Strip off husks and serve corn with cilantro lime butter. 93


Creamy Red Potato Salad With Bacon

THE RECIPE Serves: 10-12

Ingredients 2 ½ pounds medium size red potatoes 6 eggs 1 pound bacon, chopped 1 ½ cup of mayo ¼ cup sour cream 1 tablespoon Dijon mustard Salt and pepper to taste

Instructions Cook chopped bacon in a large frying pan. While the bacon is cooking, scrub and cut your red potatoes into medium bite size pieces. Put in a large pot and fill with cold water. Boil potatoes until tender, about 12 minutes but not too soft. Drain. Let potatoes completely dry. Boil the eggs for 8-10 minutes (at the same time as you start the potatoes and bacon). Peel the shells off the eggs. Cut the eggs in bite size pieces and set aside. In a large mixing bowl combine the mayo, sour cream, mustard, salt and pepper until creamy. When the potatoes are cooled, add them to the mayonnaise mixture. Add the egg and bacon. Stir and fold softly until all combined. Refrigerate until ready to serve.


Watermelon Margarita

Recipe

6 glasses

Ingredients 2 teaspoons sugar or salt 1 lime wedge 3 cups cubed seeded watermelon 3/4 cups tequila 2 tablespoons sugar ½ teaspoon salt 2 tablespoons fresh lime juice 2 tablespoon Triple Sec 3 cups ice Lime wedges

Instructions Place sugar or salt in a saucer. Rub the rims of 6 glasses with 1 lime wedge; spin rim of each glass in sugar/salt to coat. Set glasses aside. Combine watermelon and next 6 ingredients in a blender; process until smooth. Pour margarita into glasses and garnish with lime wedges.
