Roasted Butternut Squash Soup with Charred Vegetables
Prep time: 20 minutes Cook time: 45 minutes Serves: 6 1/2 cup chopped piloncillo 1 teaspoon ground cumin 3 cups large butternut squash, cubed and peeled 4 whole large carrots, unpeeled 3 tablespoons olive oil 2 garlic cloves, thinly sliced 1 chipotle pepper, chopped 2 quarts low-sodium vegetable stock 1/2 cup white corn kernels, washed 1/4 cup small diced Mexican squash 1 large jalapeno, stemmed, thinly sliced 3 fresh epazote leaves (or fresh coriander leaves if epazote is not available) 1 tablespoon kosher salt 1/4 cup toasted pepitas (pumpkin seeds)
Heat oven to 350 F. In large mixing bowl combine piloncillo, cumin, butternut squash and whole carrots. Toss to evenly coat and place on large baking dish. Roast in oven for 30 minutes, or until golden brown. Allow to cool slightly, reserving about 1/4 of roasted vegetables. Cube carrots into bite-size pieces. Set aside. In Princess Heritage Stainless Steel Classic 8-Qt. stockpot, heat olive oil. Saute about half the garlic, chipotle pepper, remaining carrots and butternut squash, and vegetable stock. Simmer for 10 minutes. Working in batches, transfer cooked stock and vegetables to blender and puree. When complete, return to stockpot to keep warm for serving. Meanwhile, heat medium-sized skillet. Add corn, Mexican squash, jalapeno, epazote, remaining garlic and reserved butternut squash and carrots. Quickly saute to lightly char (not burn) veggies. Keep watch and stir when needed for 3-5 minutes. Season to taste with salt. To serve, divide soup among six bowls. Top off soup with charred vegetables. Garnish with toasted pepitas and a drizzle of olive oil.

Sorghum Pecan Praline Cheesecake Recipe developed by Brenda Watts, Gaffney, South Carolina Cheesecake: 6 Tbsp unsalted butter, melted 1 1/8 C sorghum syrup, divided 1 3/4 C graham cracker crumbs 4 packages (8 ounces each) cream cheese, softened 1/2 C sour cream 1/3 C packed light brown sugar 2 Tbsp all-purpose flour 1 C sorghum syrup 1 1/2 tsp vanilla extract 4 large eggs Topping: 1 package (6 ounces) pecan halves 2 Tbsp packed light brown sugar 4 Tbsp sorghum syrup, divided 6 Tbsp unsalted butter 1/2 C packed light brown sugar 3 Tbsp heavy cream 1 tsp vanilla extract 1/8 tsp kosher salt Heat oven to 325 F. Lightly spray bottom and sides of 9-inch non-stick springform pan with removable rim. Place pan over center of 3 18-inch sheets heavy-duty foil and securely wrap foil around outside bottom and sides of pan. For cheesecake, in small bowl, combine butter and 2 tablespoons sorghum syrup. In medium bowl, toss graham

While crust is baking, in another bowl, beat together pumpkin through salt. Pour over crust and bake for 40 minutes or until set. Sprinkle pecans over filling and bake another 10-15 minutes or until center is set. Cool slightly in pan. Mix together sugar and cinnamon. Mix in yogurt. Top each square with 1 tablespoon yogurt topping.

It is difficult to think of Christmas without envisioning everything awash in these popular colors, broken up only by the inclusion of gold, white or silver accents. The colors of Christmas are often taken for granted, and many celebrants are unaware of how these colors became symbols of the holiday season and why they remain so to this day. Several theories exist as to why red and green became the hallmarks of Christmas. One such theory is that the colors evolved from pagan celebrations similar to the evolution of Christmas traditions. Prior to the arrival of Christianity, many cultures viewed the color green as the symbol of life . It is believed that, during harsh winters, evergreen trees were cut down and brought indoors to symbolize that life still exists and thrives despite the cold and darkness of winter. Regifting in a tactful way Few things can be as embarrassing as opening a gift only to find that what is nestled beneath the tissue paper and wrapping is an item you know isn’t new. Even more embarrassing are those times when the gift you just opened is something you actually gave the gift giver in months or years past. Regifting can be a touchy subject. Some people are completely against the practice, while others feel that passing on items they have little use for is a creative way to recycle and reduce waste. No matter its reputation, regifting is pretty common. A 2012 Holiday Regifting Survey from online classifieds site Bookoo found a whopping 92 percent of respondents believe it’s completely acceptable to regift items, and more than 87 percent believe they have been on the receiving end of a regifted item. Other research also sheds light on the popularity of regifting. According to a 2014 American Express Spending & Saving Tracker survey, 76 percent of participants feel regifting is acceptable. No matter which side you support in the great regifting debate, recognize there is a right and a wrong way to regift. • Consider whether the gift has use for someone else. It is one thing to regift an item just to get it out of

To avoid a regifting faux pas, keep track of gifts given to you by friends and family members. your home, and another to do so because you think it would be a better fit for someone else.
