We’ve included both traditional hymns and all-time favorite seasonal classics in this year’s songbook to offer something for everyone. You’ll also find seasonal recipes and tips for holiday celebrations. It’s easy for the Christmas season

to feel overwhelming. We can all become easily stressed out trying to balance the regular schedule of daily life — work, school, extracurricular activities, church — with all the additional demands of the season. Will all the shopping, baking and wrapping get done on time? Can we manage to get a few days off from work to spend with family and friends? Whose house do we celebrate at on Christmas Day? Will

the in-laws and grandparents get mad if we’re not there on time? Kids are the only ones who greet each Christmas season with the joy and hope we all want to have. They have been waiting with concealed anticipation since Dec. 26 of last year, able to contain their excitement at seeing this festive time of the year come around again. Amid all the travel planning, gift buying and other holiday preparations, take time to stop and relax.

Gather some friends together for a caroling party around the neighborhood. Spend an evening with the kids or the grandkids, sharing a cup of hot apple cider or a mug of hot chocolate. Snuggle by a cozy fire with some eggnog and sing a few of the songs you’ll find in these pages. Hopefully they will rekindle that holiday spirit you used to have and remind you of the real reason for the season — the birth of Jesus Christ.

Plan a Christmas caroling party Bring cheer to all those around you by serenading them with Christmas carols. Gather a group of friends, dress warmly, and have some fun. Celebrate the season with a Christmas caroling party. This type of get-together is easy to pull off at the last minute, and it’s sure to bring joy to all involved. Follow the guidelines below for your own perfect caroling party. • You can get together a group of friends on the spur of the moment just by calling them or emailing them. Conversely, you can plan ahead and send out more formal invitations. • Make sure that your guests dress for the weather, and that they wear appropriate walking shoes. • As your guests arrive, give them a bite to eat and something to drink to keep them satiated during the caroling. • Hand out song sheets or booklets, that you’ve prepared in advance. • Set out at the designated time to spread your Christmas cheer. In some instances, it’s a good idea to let your neighbors know that

you’ll be caroling. That way, you’re guaranteed that people will be home to enjoy your singing, and they may even have a treat or two to share with your group. • If desired, you can use your Christmas caroling party as a means to collect money or food donations for the charity of your choice. • The caroling portion of the party should last between one and two hours — use your own judgment and the stamina of your group to determine the length of your caroling party. • Afterwards, thank your caroling friends with hot chocolate and Christmas cookies. The beauty of this type of party is that you can repeat it multiple times throughout the month of December. Each time you host it, target a different neighborhood, so that many people can enjoy your holiday cheer!

Rolled Sugar Cookies (Makes 5 dozen) 1 1/2 cups butter, softened 3 cups white sugar 4 eggs 2 teaspoons vanilla extract 5 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt Cream together the butter and sugar in a large bowl until smooth. Beat in the eggs and vanilla. Mix the dry ingredients together and add to the wet ingredients until incorporated. Cover and refrigerate the dough for at least one hour. Preheat the oven to 400. On a surface coated with some confectioners' sugar, roll out the dough to between 1/4 and 1/2 inch thickness

(a thinner cookie will be crispier). Cut out shapes with a cookie cutter. Line a cookie sheet with parchment paper. Place cookies 1 inch apart on the parchment. Bake around 5 to 7 minutes, or just until the edges of the cookies start to brown. Remove promptly from the cookie sheet and cool on a rack. Decorate the cookies using icing when the cookies cool or sprinkle with colored sugar while cookies are warm.

Tuscan Roast Turkey 1 16-pound young turkey Kosher salt, to taste 1 cup Tuscan Herb Paste 1 teaspoon fennel seeds, crushed 2 teaspoons celery salt 3 fennel stalks with fronds, rough chopped 3 onions, large dice 1 stalk celery, small dice 2 1/4 quarts chicken stock, divided 3 ounces all-purpose flour Remove giblets from turkey’s cavity, rinse cavity and pat dry, set aside. Season turkey inside and out with kosher salt. Mix Tuscan Herb Paste with crushed fennel seeds and celery salt. Starting at the neck of the bird, slip your hand between the meat and the skin to loosen. Rub half the paste mix under skin, and rub remaining paste inside the cavity and over the rest of the turkey. Place two-thirds of the chopped onion and fennel stalks inside cavity. Truss bird. Place turkey in a roasting pan. Roast at 400 for 30 minutes. Reduce temperature to 325 and continue cooking the turkey to an internal temperature of 160, approximately 2 1/2 to 3 hours. Baste turkey often during cooking with juices from pan. If turkey begins to overbrown, cover it loosely with aluminum foil. As turkey roasts, simmer giblets (neck, heart and gizzard), the other one-third of the fennel stalk, onion mix and diced celery in 1 quart chicken stock until tender, approximately 1 1/2 hours. When turkey is done, remove from roasting pan and set aside to rest. Degrease roasting pan, reserving 3 ounces of fat to make a roux. Deglaze pan with a small amount of chicken stock. Transfer stock to a saucepot, and add remaining stock and broth from giblets. Bring to a simmer and degrease. Make a blond roux with reserved fat and flour. Add roux to the liquid, whisking well to prevent lumps.

Simmer 15 minutes. Strain gravy through a fine-meshed strainer. Adjust seasoning. Serves 16.

Tuscan Herb Paste 1 tablespoon fresh basil 2 tablespoons fresh rosemary 1/2 packed cup fresh Italian parsley 1 tablespoon fresh thyme 2 tablespoons fresh sage 1/2 teaspoon crushed red pepper 3/4 cup Olive Oil 1 cup Extra Virgin Olive Oil Blend herbs and crushed red pepper with light olive oil using a blender or food processor, then stir in extra virgin olive oil. Serving ideas: Rub under the skin of turkey for Tuscan Roast Turkey. Use to flavor vegetables for grilling and mushrooms for roasting.

Butterfly Kissed Make-Ahead Breakfast Casserole (Serves: 10 to 12) 2 1/2 cups seasoned croutons 1 pound sausage roll 4 large eggs • 2 1/4 cups milk 1 can (10.5 ounces) condensed cream of mushroom soup 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry 1 can (4 ounces) mushrooms, drained and chopped 1 cup sharp cheddar cheese, shredded 1 cup Monterey Jack cheese, shredded 1/4 teaspoon dry mustard Fresh herb sprigs, optional Carrot strips, optional Picante sauce or salsa, optional

Spread croutons on bottom of greased 13 x 9-inch baking dish. Crumble and cook sausage in medium skillet over medium heat until browned. Drain sausage; spread over croutons. Whisk eggs and milk in bowl until blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight. Preheat oven to 325. Bake egg mixture 50-55 minutes or until set and lightly browned on top. Garnish with herb sprigs and carrot, if desired. Serve hot with picante sauce, if desired. Refrigerate leftovers.

Chocolate Chip Cannoli Pie Yield: 8 servings 1 9-inch unbaked pie shell, thawed according to package directions Water Cinnamon sugar 1 15-ounce container ricotta cheese 1 14-ounce can sweetened condensed milk 1/3 cup powdered sugar 1/4 teaspoon vanilla extract 1 1/2 cups milk chocolate chips or miniature semi-sweet chocolate chips Whipped topping

Heat oven to 350. Brush pie shell lightly with water; generously sprinkle with cinnamon sugar. Stir ricotta cheese, sweetened condensed milk, powdered sugar and vanilla in medium bowl until blended. Stir in chocolate chips. Pour into pie crust. Bake 45 to 50 minutes or until crust is golden brown. Filling will appear slightly soft. Cool completely on wire rack. Chill at least 2 hours before serving. Garnish with whipped topping, if desired.

Turkey Casserole Serves: 6 4 cups leftover prepared stuffing, divided 4 cups coarsely chopped leftover cooked turkey (about 1 pound) 3/4 cup mayonnaise, divided 1/4 cup whole berry cranberry sauce 2 cups leftover mashed potatoes 1 1/2 cups shredded mozzarella cheese (about 6 ounces) Preheat oven to 375. Spray 8-inch baking dish with no-

stick cooking spray. Spoon in 2 cups stuffing, then top with turkey. Combine 1/4 cup mayonnaise with cranberry sauce; evenly spread over turkey. Combine remaining 1/2 cup mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 2 cups stuffing. Bake 40 minutes or until heated through. Let stand 10 minutes before serving. If desired, garnish with dried cranberries.

Holiday Brisket 1 8-pound brisket, washed and drained 1/2 cup oil • 1/2 cup cola soft drink 1/2 cup dry red wine • 1/2 cup honey 6 to 8 tablespoons ketchup 2 onions • 1 teaspoon paprika 4 tablespoons margarine 3 tablespoons flour • salt and pepper Place the brisket in a roasting pan. Blend all of the seasonings by hand or in a blender and pour over the brisket. Marinate in the refrigerator overnight. Preheat oven to 325. Put the bris-

ket in the oven and cook for approximately 4 hours, or until a thermometer reads 190. Cool the brisket and slice it against the grain. If you do not slice it correctly the meat will be tough. Reserve some of the brisket drippings. Melt 4 tablespoons of parve margarine in a saucepan and then slowly stir in a few tablespoons of flour. Cook and stir a few minutes. Then add the pan drippings and cook until thickened. Season with salt and pepper. Serve over the brisket.

Slow Cooker Marmalade Pork Tenderloin

Prep Time: 30 minutes Cook Time: 4 hours Makes: 6-8 servings

3 pounds boneless pork tenderloin 1 teaspoon salt 1/2 teaspoon fresh ground black pepper 2 tablespoons Olive Oil 1 large onion, sliced 1/2 cup teriyaki sauce 1 (12 oz.) jar Orange Marmalade 2 teaspoons fresh ginger, grated 1/3 cup brown sugar 3 cloves garlic, minced Season the roast with salt and

pepper. Heat oil in a large skillet over medium-high heat, brown the roast on all sides. Transfer meat to slow cooker, add sliced onion, cover and cook on high about three to four hours. Heat teriyaki sauce, marmalade, ginger, brown sugar and garlic in a small sauce pan on medium until sauce simmers. Cook until smooth and bubbly, stirring constantly. Remove meat from slow cooker, let rest for 10 minutes; slice and arrange on serving platter. Drizzle roast slices with 3/4 cup of sauce, garnish with cooked onion slices and serve with remaining sauce.

Pear, Roast Onion, Hazelnut and Blue Cheese Salad 1 red onion, peeled • Salt and pepper Olive oil • 3 pears (not too ripe) 2 tablespoons unsalted butter 2 ounces hazelnuts, lightly toasted, halved 5 ounces baby greens (watercress, baby spinach and frisée) 10 ounces Blue cheese, crumbled Dressing: 2 1/2 teaspoons white wine vinegar 1/4 teaspoon Dijon mustard Salt and pepper 4 tablespoons hazelnut oil 2 tablespoons light olive oil 1 1/2 teaspoons superfine sugar (or to taste)

per. Roast about 20 minutes, or until soft with slightly caramelized tips. Keep warm. Whisk dressing ingredients together. Halve and core pears, then cut lengthwise into slices slightly thicker than 1/4 inches. Melt butter in a frying pan and quickly sauté on each side until golden. Don’t overcook — they should still hold their shape. Toss salad greens with nuts, using most of the dressing; divide among 6 plates. Add pear and onion slices to each plate and scatter with cheese. Drizzle each plate with the rest of the dressing. Serves 6.

light in color, gradually add sugar, salt and vanilla. Then add milk and water. Stir in rum (brandy, bourbon or rye may also be used). Cover the nog and ripen for 24 hours in the refrigerator. Stir again and serve sprinkled with nutmeg.

The children were nestled snug in their beds, While visions of sugar-plums danced in their heads; And Mamma in her kerchief, and I in my cap, Had just settled down for a long winter’s nap. When out on the lawn there arose such a clatter I sprang from my bed to see what was the matter, Away to the window I flew like a flash, Tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow Gave a luster of midday to objects below, When, what to my wondering eyes should appear, But a miniature sleigh and eight tiny reindeer. With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, And he whistled, and shouted, and called them by name. Now Dasher! Now, Dancer! Now Prancer and Vixen! On, Comet! On, Cupid! On, Donner and Blizten! To the top of the porch! To the top of he wall! Now dash away! Dash away! Dash away all! As dry leaves that before the wild hurricane fly When they meet with an obstacle, mount to the sky. So up to the house-top the coursers they flew,
