Rekindling your holiday spirit Best wishes for the Christmas season from everyone at The Daily Dispatch! We hope our annual Christmas songbook inspires you and your loved ones to bring in the season with song. We’ve included both traditional hymns and all-time favorite seasonal classics in this year’s songbook to offer something for everyone. You’ll also find seasonal recipes and tips for holiday celebrations. It’s easy for the Christmas season to feel overwhelming. We can all become easily stressed out trying to balance the regular schedule of daily life — work, school, extracurricular activities, church — with all the additional demands of the season. Will all the shopping, baking and wrapping get done on time? Can we manage to get a few days off from work to spend with family and friends? Whose house do we celebrate at on Christmas Day? Will the in-laws and
grandparents get mad if we’re not there on time? Kids are the only ones who greet each Christmas season with the joy and hope we all want to have. They have been waiting with concealed anticipation since Dec. 26 of last year, able to contain their excitement at seeing this festive time of the year come around again. Amid all the travel planning, gift buying and other holiday preparations, take time to stop and relax. Gather some friends together for a caroling party around the neighborhood. Spend an evening with the kids or the grandkids, sharing a cup of hot apple cider or a mug of hot chocolate. Snuggle by a cozy fire with some eggnog and sing a few of the songs you’ll find in these pages. Hopefully they will rekindle that holiday spirit you used to have and remind you of the real reason for the season — the birth of Jesus Christ.

You Deserve So Much! Rolled Sugar Cookies (Makes 5 dozen) 1 1/2 cups butter, softened 3 cups white sugar • 4 eggs 2 teaspoons vanilla extract 5 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt Cream together the butter and sugar in a large bowl until smooth. Beat in the eggs and vanilla. Mix the dry ingredients together and add to the wet ingredients until incorporated. Cover and refrigerate the dough for at least one hour. Preheat the oven to 400. On a
surface coated with some confectioners' sugar, roll out the dough to between 1/4 and 1/2 inch thickness (a thinner cookie will be crispier). Cut out shapes with a cookie cutter. Line a cookie sheet with parchment paper. Place cookies 1 inch apart on the parchment. Bake around 5 to 7 minutes, or just until the edges of the cookies start to brown. Remove promptly from the cookie sheet and cool on a rack. Decorate the cookies using icing when the cookies cool or sprinkle with colored sugar while cookies are warm.

With Gratitude At The Holidays
Christmas... It’s Uplifting! Here’s hoping everything runs smoothly for you this holiday season.
White Chocolate and Ricotta Cheesecake Makes: 8-10 servings 12 ounces low fat cream cheese 1 1/2 cups fresh ricotta 2 tablespoons sugar 5 ounces chopped white chocolate, melted 1 large egg • 2 egg whites 1 tablespoon pure vanilla extract Preheat oven to 325 and lightly spray a 10-inch spring form cake pan with vegetable oil. Using a mixer, beat together cream cheese, ricotta and sugar until soft. With the mixer set to low speed,
beat remaining ingredients into mixture and mix until completely smooth. Pour cheesecake mixture into prepared cake pan and place in oven to bake until set, 30 minutes. Once done, remove from oven and allow cheesecake to cool completely before removing sides. Place in refrigrator for at least 4 hours to continue to set before serving. Tip: When serving, use a round mold to create individual portions, or cut slices and top each with mixed berries and a mint spring.

Bring Christmas cheer to the neighborhood with a caroling party Bring cheer to all those around you by serenading them with Christmas carols. Gather a group of friends, dress warmly, and have some fun. Celebrate the season with a Christmas caroling party. This type of gettogether is easy to pull off at the last minute, and it’s sure to bring joy to all involved. Follow the guidelines below for your own perfect caroling party. • You can get together a group of friends on the spur of the moment
just by calling them or emailing them. Conversely, you can plan ahead and send out more formal invitations. • Make sure that your guests dress for the weather, and that they wear appropriate walking shoes. • As your guests arrive, give them a bite to eat and something to drink to keep them satiated during the caroling. • Hand out song sheets or booklets, that you’ve prepared in advance. • Set out at the designated time
to spread your Christmas cheer. In some instances, it’s a good idea to let your neighbors know that you’ll be caroling. That way, you’re guaranteed that people will be home to enjoy your singing, and they may even have a treat or two to share with your group. • If desired, you can use your Christmas caroling party as a means to collect money or food donations for the charity of your choice. • The caroling portion of the party should last between one and two
hours — use your own judgment and the stamina of your group to determine the length of your caroling party. • Afterwards, thank your caroling friends with hot chocolate and Christmas cookies. The beauty of this type of party is that you can repeat it multiple times throughout the month of December. Each time you host it, target a different neighborhood, so that many people can enjoy your holiday cheer!

Holiday Eggnog 1 dozen eggs 1 pound powdered sugar 1/2 teaspoon salt 1/4 cup vanilla 8 cups evaporated milk 3 cups water 1 quart spiced rum (optional) Nutmeg, to garnish Beat eggs until
light in color, gradually add sugar, salt and vanilla. Then add milk and water. Stir in rum (brandy, bourbon or rye may also be used). Cover the nog and ripen for 24 hours in the refrigerator. Stir again and serve sprinkled with nutmeg.

‘Twas the night before Christmas, when all through the house Not a creature was stirring, not even a mouse: The stockings were hung by the chimney with care, In hopes St. Nicholas soon would be there. The children were nestled snug in their beds, While visions of sugar-plums danced in their heads; And Mamma in her kerchief, and I in my cap, Had just settled down for a long winter’s nap. When out on the lawn there arose such a clatter I sprang from my bed to see what was the matter, Away to the window I flew like a flash, Tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow Gave a luster of midday to objects below, When, what to my wondering eyes should appear, But a miniature sleigh and eight tiny reindeer. With a little old driver, so lively and quick, I knew in a moment it must be St. Nick. More rapid than eagles his coursers they came, And he whistled, and shouted, and called them by name. Now Dasher! Now, Dancer! Now Prancer and Vixen! On, Comet! On, Cupid! On, Donner and Blizten! To the top of the porch! To the top of he wall! Now dash away! Dash away! Dash away all! As dry leaves that before the wild hurricane fly When they meet with an obstacle, mount to the sky. So up to the house-top the coursers they flew,
With the sleigh full of toys, and St. Nicholas, too. And then, in a twinkling, I heard on the roof The prancing and pawing of each little hoof. As I drew in my head, and was turning around, Down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, And his clothes were all tarnished with ashes and soot; A bundle of toys he had flung on his back. And he looked like a peddler, just opening his pack. His eyes - how they twinkled! His dimples how merry! His cheeks were like roses, his nose like a cherry! His droll little mouth was drawn like a bow, And the beard of his chin white as the snow. The stump of a pipe he held tight in his teeth, And the smoke it encircled his head like a wreath; He had a broad face and a little round belly, That shook when he laughed , like a bowlful of jelly. He was chubby and plump, a right jolly old elf, And I laughed when I saw him, in spite of myself; A wink of his eye and a twist of his head, Soon gave me to know I had nothing to dread. He spoke not a word, but went straight to his work, And filled all the stockings; then turned with a jerk, And laying his finger aside of his nose, And giving a nod, up the chimney his rose. He sprang to his sleigh, to his team gave a whistle, And away they flew like the down of a thistle, But I heard him exclaim, as he drove out of sight. Happy Christmas to All and to All A Good Night.
