In Santa Fe, the local flavor is international Odds are, if you’ve visited any one of Santa Fe’s more than 200 restaurants — from the most elegant to the most casual — you’ve found more than one chile-centric dish on the menu. Part of chile’s widespread appeal may be rooted in its history. Cultivated and traded in the Americas for more than 6,000 years, chile, along with corn and beans, was a mainstay of traditional Pueblo cookery long before Europeans arrived in the New World. When the Spanish colonized the region, they brought along a 6


large number of plants and animals, expanding the local diet with continental staples. Mexican governors followed the Spanish, and, when what is now New Mexico came under the American flag, cowboys, miners, merchants, and homesteaders from all parts of the United States flooded the state, adding their own favorite foods to the mix. Over the centuries, this blending of Native American, Spanish, Mexican and AngloAmerican culinary traditions helped create a Northern New Mexico cuisine as unique as our history.

But the fusion of old and new foods that began in Santa Fe in the 16th century isn’t just about our past history — it’s a living legacy that continues to this day. Go out to eat in the City Different these days and you’ll find tapas as well as tamales, tortillas and tacos. Enchiladas sidling up to escabeche.
