Spiced Cranberry-Apple Iced Tea: A Frosty, Fun Treat
STEEL SENSATIONS
(NAPS)—When it comes to beverages, cold is hot this holiday season. Iced tea appears to be America’s favorite, representing 85 percent of all U.S. tea consumption. With so many wintry and seasonal tea flavors available—including gingerbread, cranberry, peppermint, spiced apple cider, citrus almond, pumpkin spice, candied apple and more—iced tea is becoming one of the most popular beverages at the holiday table. Frosty iced tea is also one of the easiest holiday beverages to prepare, so the hosts can enjoy the party along with the guests. Brew it ahead of time and store it in the fridge, and then just pour over ice to serve. Or, use an automatic iced tea maker such as the Capresso Iced Tea Maker, for custom brewed iced tea, from either loose tea or bags, at the touch of a button. If the holidays inspire your creativity in the kitchen, try this favorite:

Enjoy The Holidays With A Twist On Classic Celebrations
(NAPS)—Another spirited holiday has arrived, heralding months of twinkling lights, festive celebrations and delicious food. As festivities begin and hosts contemplate their holiday menus, it’s important to remember that a bountiful holiday table deserves to be paired with a bright and crowdpleasing wine. Wine and food lovers can kick off their celebrations this year on the third Thursday of November, the official release of Beaujolais Nouveau, the first wine of the harvest. The bright berry flavors of Georges Duboeuf Beaujolais Nouveau ($11) evoke joy and pair perfectly with almost any holiday dish, from rib roast to a brimming bowl of mashed potatoes. To add a twist to classic holiday celebrations, incorporate the revelry of the French harvest into the merriment using the following tips: • Wondering how much wine to buy? A good rule of thumb is one serving per hour per person. • For background music, choose elegant French jazz or classic artists such as Edith Piaf or Josephine Baker. • Accent the wine’s freshness by serving it slightly chilled. • Decorate with vintage travel posters of lush vineyards and quaint cobblestoned market squares, like those found in Beaujolais. • To give your table that wow factor, use a beautiful bowl overflowing with grapes as the centerpiece. • Holiday foods pair beautifully with Beaujolais Nouveau. Serve a range of cheeses and charcuterie. To please a large crowd, complete your holiday table with this Maple Rib Roast recipe:

(NAPS)—Get ready to up your holiday baking game with four showstopping but easy-toprepare desserts from CanolaInfo and The Culinary Institute of America (CIA). “These recipes are elegant, perfect for the holidays, and use professional culinary techniques that any home cook can apply,” says Scott Samuel, chef-instructor at the CIA, one of the country’s top culinary schools. For example, to make Lemon-Grand Marnier Madeleines, a classic French cookie with the texture of cake, the batter sits refrigerated overnight, which both “hydrates” the flour and permits the aromatic flavors to intensify. In addition, chilled batter forms a crust in the oven before the interior is fully baked, helping to produce a tender crumb. Each dessert is also made with heart-smart canola oil, which contains the least saturated fat and the most plant-based omega-3 fat of all common culinary oils. “Using canola oil in place of butter for baked goods and other sweets helps lighten up desserts, plus its neutral flavor and high heat tolerance means it’s extremely versatile in the kitchen,” adds Samuel, who demonstrates how to prepare each recipe in step-by-step online videos. In his Star Anise- and Orange-Infused Canola Ice Cream, for instance, Samuel shows how to make an infusion by warming canola oil with whole spices and orange peel strips, then blending it into a custard base. The recipes and videos were produced as an industry service by The Culinary Institute of America to CanolaInfo. All four recipes are available at www.canolainfo.org: • Lemon-Grand Marnier Madeleines • Pistachio Baklava • Molten Chocolate Cake • Star Anise- and Orange-Infused Canola Ice Cream. “Canola oil works well in a variety of desserts,” Samuel adds. “Whether it’s for brushing phyllo dough in baklava, infusing mixtures with flavor or baking up a Molten Chocolate Cake, canola oil really does it all.”
Molten Chocolate Cake
With all the elegance of a plated dessert and all the gooey goodness of a brownie, these individual chocolate cakes are a perfect finish to any special meal. Canola oil in place of butter produces a tender crumb while reducing the saturated fat content.

New York Chef Continues To Spread Passion For Cooking To Kids by Marcus Samuelsson (NAPS)—As a child, I learned to cook by following my Grandma around in the kitchen. Without her, I don’t think I would be a chef today. The bond we shared in the kitchen changed my life and is a bond I hope all kids can share with a loved one. My desire to create family bonds and spread the love created through cooking is a key reason why I’ve returned to partner with the Uncle Ben’s® Brand and the 2014 Ben’s Beginners™ Cooking Contest. Last year, the contest gave me the chance to inspire children across the country by sharing a passion that was instilled in me as a child. This year, the opportunity is even bigger. The Uncle Ben’s® Brand is giving away five prize packages that include $15,000 cash, a $30,000 cafeteria makeover and a hometown celebration. To enter, parents simply submit a video with their child, in grades K–8, preparing a rice-based dish and discussing their experience cooking together. They then need to upload the video by Oct. 10, 2014 at www.unclebens.com. I’m a firm believer that cooking in the kitchen is about more than creating delicious dishes. It’s about strengthening relationships, finding a love for food and most of all, having fun. The Ben’s Beginners™ Cooking Contest gives kids a chance to experience all these things. Help me in spreading the word and inspiring the next generation to cook healthy and be happy!

Eye-Opening Tips On Pleasing Coffee And Tea Lovers
(NAPS)—Any time is the right time to treat the coffee or tea lovers in your life to an unexpected gift, but the holidays provide an excellent excuse to show them how much you care. Follow these tips and soon you’ll be known as having the gift of gift-giving. • Keep your eyes open all year-round: Whenever you see the perfect teapot, sugar bowl or set of spoons on sale that reminds you of that special someone, be sure to buy it and save it for a special occasion. Just don’t forget where you put it. • You don’t have to spend a fortune for your gift to look like a million. Instead of that luxury espresso maker, look for clever tea infusers or vintage tea tins. Don’t forget a personal touch. A hand-knitted coffee cozy could be just the thing. • Think about your loved one’s unique tastes. Treat your favorite hostess, environmentalist, trendsetter or coffee/tea lover to this holiday season’s newest stocking stuffer, Joco cup. These glass reusable coffee cups are created to enhance their daily cup of tea or coffee and keep Mother Nature happy. Unlike paper or plastic, glass won’t affect the flavor, and enjoying the drink in a reusable cup will cut down on waste. Each dishwasher- and microwave-safe cup features an ergonomic, splash-safe, silicone lid designed to ensure you’re drinking your morning brew, not wearing it, and a thermal sleeve that keeps coffee hot and hands cool. The 12-oz or 16-oz cups come in black, blue, lemon, lime, mint, orange, pink, purple, red or white. Use or serve a Joco cup this holiday season with a cheerful new take on the classic Chai Tea:

20 ounces fresh or frozen spinach 4 eggs, lightly beaten 2 cups cottage cheese 1 cup feta cheese, crumbled (or same amount of another cheese) 1 cup Gruyere cheese, grated (or same amount of another cheese) 7 tablespoons all-purpose flour 2 cloves garlic, finely minced 1 teaspoon kosher salt 1/2 cup green onions, thinly sliced (I’ve also used fresh dill and parsley) 1 teaspoon crushed red chili peppers or Aleppo pepper (optional) 10 ounces butternut squash, cut into 1/2 inch dice (optional) If using fresh spinach, steam until wilted, drain well and chop coarsely. If using frozen spinach, defrost and squeeze well. Set aside. Preheat oven to 350 degrees. Butter a 9x13 inch baking dish. In a large bowl, stir together the eggs, cheeses, flour, garlic, salt, green onions and chili peppers. Gently mix in the spinach and butternut squash. Pour the mixture into the prepared baking dish and bake for 40-45 minutes, until the casserole is set, golden brown on top and the edges are crispy. Serve warm. You can prep this the night before (but don’t bake) and refrigerate it overnight. In the morning, bake and serve as directed.

Infuse Pears With Wintertime Flavors
Holiday Savings
(NAPS)—It’s peak pear season, and with it comes an endless variety of ways to enjoy this versatile fruit, like sliced into salads, layered in sandwiches or simply enjoyed, fresh and ripe, with a napkin in hand. Multiple varieties of USAgrown pears are available in markets from coast to coast nearly year-round. Reach for everyday favorites like Bartlett, Bosc and Anjou, and experiment with the delicate flavors of Starkrimson, Forelle and Comice. Poaching pears is the perfect way to get creative with this cold weather staple. It turns firmer pears into a tender treat and infuses them with subtle, sweet flavors and spices, which are absorbed during this easy and gentle simmering process. In this recipe, coconut milk as the cooking liquid and star anise as the spice come together to create a simple but indescribably delicious sauce for classic poached pears. Dish up as a dessert or a filling breakfast with granola and proteinrich Greek yogurt.

Preparation time: 25 minutes Serves six
Ingredients 3 firm USA Pears, such as Bosc, Anjou, Red Anjou or Concorde 2 cans (14 ounces each) coconut milk 1⁄2 cup packed dark brown sugar 3 whole star anise pods 2 cups Greek yogurt, divided 1 cup granola, divided Preparation Peel and halve the pears, and scoop out their cores using a spoon. In a medium saucepan over low heat, warm coconut milk, sugar and anise until sugar is dissolved. Submerge the pears in the coconut milk. Cover and cook for 20–25 minutes, keeping the heat at low to prevent burning the coconut milk, until the pears are just tender when pierced with a fork. Gently stir the mixture every 8–10 minutes to prevent scorching. Once tender, remove the pears and let cool slightly. Remove the sweetened, spiced coconut milk from heat and set aside. Spoon 1⁄3 cup Greek yogurt into 6 serving bowls, and sprinkle 2 tablespoons of granola atop each bowl. Place one poached pear half in each bowl. Spoon 1 tablespoon of the poaching sauce over the top and serve. Refrigerate any leftover pears in the reserved coconut milk.
