maraschino cherries with stems ounces semisweet chocolate chips* ounces dark chocolate, chopped (or bittersweet chocolate chips)* large eggs cup brown sugar teaspoon pure vanilla extract tablespoons flour* teaspoon baking powder teaspoon kosher or fine sea salt teaspoon maraschino cherry juice cup walnuts, chopped

Pat the cherries dry with paper towels and set aside. Generously spray an 8-inch by 8-inch baking pan with cooking spray* or brush with oil. In a small saucepan, combine the chocolates and cook over low heat until most of the chocolate is melted. Stir until all the chocolate is melted and the mixture is smooth and glossy. In a mixing bowl, whisk together the eggs, brown sugar, vanilla, flour, baking powder, salt, and maraschino cherry juice. Add the melted chocolate and stir vigorously until the mixture is smooth and starts to thicken. Stir in the walnuts. Spread the mixture evenly into the prepared pan and press the cherries into the top, leaving the tops of the cherries and the stems showing. Refrigerate for 2 hours or until hard. 5-lb rib roast, bone in Salt and pepper to taste 1⁄2 cup pure Canadian maple syrup 1⁄3 cup Dijon mustard 2 T fresh rosemary, finely chopped 2 T fresh thyme, finely chopped 2 T fresh black pepper, roughly ground Store-bought bordelaise sauce Preheat oven to 400° F. For example, to make Lemon-Grand Marnier Madeleines, a classic French cookie with the texture of cake, the batter sits refrigerated overnight, which both “hydrates” the flour and permits the aromatic flavors to intensify. In addition, chilled batter forms a crust in the oven before the interior is fully baked, helping to produce a tender crumb. Each dessert is also made with heart-smart canola oil, which contains the least saturated fat and the most plant-based omega-3 fat of all common culinary oils. “Using canola oil in place of butter for baked goods and other sweets helps lighten up desserts, plus its neutral flavor and high heat tolerance means it’s extremely versatile in the kitchen,” adds Samuel, who demonstrates how to prepare each recipe in step-by-step online videos. In his Star Anise- and Orange-Infused Canola Ice Cream, for instance, Samuel shows how to make an infusion by warming canola oil with whole spices and orange peel strips, then blending it into a custard base. New York Chef Continues To Spread Passion For Cooking To Kids by Marcus Samuelsson (NAPS)—As a child, I learned to cook by following my Grandma around in the kitchen. Without her, I don’t think I would be a chef today. The bond we shared in the kitchen changed my life and is a bond I hope all kids can share with a loved one. My desire to create family bonds and spread the love created through cooking is a key reason why I’ve returned to partner with the Uncle Ben’s® Brand and the 2014 Ben’s Beginners™ Cooking Contest. Last year, the contest gave me the chance to inspire children across the country by sharing a passion that was instilled in me as a child. This year, the opportunity is even bigger. The Uncle Ben’s® Brand is giving away five prize packages that include $15,000 cash, a $30,000 cafeteria makeover and a hometown celebration. To enter, parents simply submit a video with their child, in grades K–8, preparing a rice-based dish and discussing their experience cooking together. Grilled Steak & Vegetable Tacos with Cilantro Lime Rice Ingredients: 1 bag Uncle Ben’s® Boil-In-Bag Rice 1 2-lb. sirloin steak 1 tsp. chili powder 2 tsp. salt 1 tsp. black pepper ¼ cup vegetable oil 4 medium red peppers, cored, seeded and cut into 4 grillable pieces 2 small zucchini cut into grillable flat strips 2 small yellow squash cut into grillable flat strips 2 small onions cut into slices but not separated into rings 16 flour or corn tortillas ½ cup fresh cilantro, chopped 1 lime, juiced 1 Tbsp. butter 2 cups Jack cheese, shredded Hot sauce as needed

Instructions: 1. Season steak with salt, pepper and chili powder and rub with oil. 2. Grill steak, peppers, onion, zucchini and yellow squash on preheated outdoor grill until meat is cooked to medium, and onion and vegetables have softened and lightly charred. 3. Set meat and vegetables aside and keep warm. 4. Cook bag of rice according to package instructions. 5. While rice is cooking, grill tortillas until warm, pliable and lightly toasted. Keep warm. 6. Slice meat and vegetables into thin strips. 7. When rice is finished cooking, add in 1 Tbsp butter, chopped cilantro and lime juice. Mix well. 8. Assemble tacos with steak, vegetables and rice. 9. Top each taco with shredded Jack cheese and hot sauce as desired.

20 ounces fresh or frozen spinach 4 eggs, lightly beaten 2 cups cottage cheese 1 cup feta cheese, crumbled (or same amount of another cheese) 1 cup Gruyere cheese, grated (or same amount of another cheese) 7 tablespoons all-purpose flour 2 cloves garlic, finely minced 1 teaspoon kosher salt 1/2 cup green onions, thinly sliced (I’ve also used fresh dill and parsley) 1 teaspoon crushed red chili peppers or Aleppo pepper (optional) 10 ounces butternut squash, cut into 1/2 inch dice (optional) If using fresh spinach, steam until wilted, drain well and chop coarsely. If using frozen spinach, defrost and squeeze well. Set aside. Preheat oven to 350 degrees. Butter a 9x13 inch baking dish. In a large bowl, stir together the eggs, cheeses, flour, garlic, salt, green onions and chili peppers. Gently mix in the spinach and butternut squash. Pour the mixture into the prepared baking dish and bake for 40-45 minutes, until the casserole is set, golden brown on top and the edges are crispy. Serve warm. You can prep this the night before (but don’t bake) and refrigerate it overnight. In the morning, bake and serve as directed.

Poaching pears is the perfect way to get creative with this cold weather staple. It turns firmer pears into a tender treat and infuses them with subtle, sweet flavors and spices, which are absorbed during this easy and gentle simmering process. In this recipe, coconut milk as the cooking liquid and star anise as the spice come together to create a simple but indescribably delicious sauce for classic poached pears. Dish up as a dessert or a filling breakfast with granola and proteinrich Greek yogurt.

Creamy Coconut and Star Anise Poached Pears with Greek Yogurt and Granola

Preparation time: 25 minutes Serves six

Ingredients 3 firm USA Pears, such as Bosc, Anjou, Red Anjou or Concorde 2 cans (14 ounces each) coconut milk 1⁄2 cup packed dark brown sugar 3 whole star anise pods 2 cups Greek yogurt, divided 1 cup granola, divided Preparation Peel and halve the pears, and scoop out their cores using a spoon. In a medium saucepan over low heat, warm coconut milk, sugar and anise until sugar is dissolved. Submerge the pears in the coconut milk. Cover and cook for 20–25 minutes, keeping the heat at low to prevent burning the coconut milk, until the pears are just tender when pierced with a fork. Gently stir the mixture every 8–10 minutes to prevent scorching. Once tender, remove the pears and let cool slightly. Remove the sweetened, spiced coconut milk from heat and set aside. Spoon 1⁄3 cup Greek yogurt into 6 serving bowls, and sprinkle 2 tablespoons of granola atop each bowl. Place one poached pear half in each bowl. Spoon 1 tablespoon of the poaching sauce over the top and serve. Refrigerate any leftover pears in the reserved coconut milk.
