Chef’s Corner PIMENTO CHEESE INGREDIENTS • 3 large pimento peppers (about 12 oz.) • 4 oz. cream cheese, at room temperature • 1/2 cup mayonnaise, preferably Duke's • 1/2 tsp. vinegar-based hot sauce, such as Tabasco • 1/2 tsp. kosher salt • 1/4 tsp. sugar • 1/8 tsp. cayenne pepper • 1/8 tsp. freshly ground white pepper • 1/8 tsp. smoked paprika • 1/4 cup pickled ramps, chopped, plus 1/2 cup of the brine. (If you can't find ramps, you can substitute finely-chopped bread-and-butter pickles and brine.) • 1 lb. sharp cheddar cheese, grated on the large holes of a box grater

Please send photos of employees working hard to Katie: kmoise@heritagegolfgroup.com

PREPARATION 1. Roast the peppers over an open flame on a gas stovetop, one pepper at a time, on the prongs of a carving fork. Or place on a baking sheet and roast under a hot broiler. In either case, turn the peppers to blister all sides. Then transfer the peppers to a bowl and cover the bowl with plastic wrap. Set aside to let the peppers steam until cool enough to handle. 2. Carefully peel the blackened skin off each pepper. Cut the peppers lengthwise in half, open out flat on a cutting board, and carefully scrape away all the seeds and membrane. Dice the peppers. 3. Put the cream cheese in a medium bowl and beat it with a wooden spoon until softened. Add the mayonnaise and mix well. Add the hot sauce, salt, sugar, cayenne pepper, white pepper, and smoked paprika and stir to blend. Add the pickles, brine, and cheddar cheese and stir again. Fold in the diced pimentos. 4. Cover and refrigerate until ready to serve. Tightly covered, the pimento cheese will keep for up to 3 days in the refrigerator.

E M P L OY E E N EWSLETTER Shipyard Golf Maintenance Spring is here, and we are excited for the upcoming growing season at Shipyard golf club. Fairways have greened up, and the oak trees are shedding their leaves. We are anxiously awaiting some warmer weather to get the bermudagrass growing. We had a great winter and accomplished many projects including: • Irrigation repair on Brigantine, Clipper • Cut back all crepe myrtles • Cut back cordgrass • Root pruner around the perimeter of each hole and cartpath on Galleon, Clipper • Sod in key areas Turf quality will be our focus this year as we look to improve the consistency and density of the playable surfaces. We have completed our spring pre-emergent and a wall-to-wall slow-release fertilizer app. We are in a good position moving forward and we are excited for successful season.

Congratulations, Rich! Join us in congratulating Rich Rollins who has served as an Equipment Technician at Oyster Reef for 10 years for receiving the Mike Davis Award for his continued service to the First Tee. He has been a wonderful employee for us and has been a huge blessing to the First Tee. He is always there to lend a helping hand.

Port Royal Golf Maintenance As the spring temperatures warm up, we in golf maintenance are preparing for the months ahead as the Bermuda grass greens up and begins growing. Fertilizer is going out on 175 acres to jumpstart the process. Equipment is being serviced, and new ambassadors being trained to operate. Aeration is coming up in May and the planning and ordering of materials has begun. We have completed the tree work around the 4th and 15th greens on Barony and what an improvement in the amount of sun and air those greens are now receiving. Looking forward to a great spring and summer!
