Rice oil
Allergens
Marinate the steak with hoisin sauce. Vacuum seal the steak without marinade in a bag and cook it to 50°C in a water bath. Grill the steak. Slice thinly.
Crab salad
Mix the French cut (julienned) surimi with mayonnaise, garlic, yuzu, salt and pepper.
Prawns
Clean the prawns and stir-fry them in rice oil.
Red onion
Bring the seasoning for sushi to a boil, pour it over the julienned red onion and let it marinate in cold storage for 30 minutes.
Green pea cream
Fry the garlic in rice oil, add the peas and stir-fry. Add coconut milk and mash it to a smooth cream.
Prepare the thin strips of pak choi with salad dressing and dress them together with the cooked noodles on the plate. Cover with thin slices of steak. Yellow curry
Fry white beans, corn, ginger and garlic in rice oil. First add the yellow curry sauce, then add the chicken broth. Simmer for at least 10 minutes. Finally mash everything into a smooth substance.

Lobster roll
Boil the lobster, cool and clean it, and only use its tail. Make a roll of the lobster with the green part of the pak choi in it. Roll it up tightly in cling film and let it set for at least 3 hours in cold storage. Remove the lobster from the film and cut it into slices.
Coconut/bean sprouts soup
Fry the bean sprouts with the white onion and garlic, add chicken broth and the brunoised potato. Cook until done and mash into soup, add coconut milk and pass through a fine sieve.
Turmeric oil
Cook the turmeric in 50 ml of rice oil on low heat. Add 450 ml rice oil and allow it to infuse for 30 minutes, then pass it through a coffee filter.
Tarragon oil
Blanch the tarragon and let it cool to a lower temperature. Put the tarragon with 500 ml of rice oil in a thermo blender at 40°C. It takes at least 10 minutes to get a smooth mash. Pass it through a coffee filter.
Garnishing
Serve the soup with the lobster roll, turmeric and tarragon oil and add various types of cress.

Cut the pork fillet into pieces of 1 cm thick and season with salt and pepper. Bread the pork fillet with flour, egg and panko.
Add a good dash of rice oil in a wide pan and fry the breaded pork fillet until crispy and golden brown.
Dressing
Add the beef stock, mirin, soy sauce and sugar together in a saucepan and bring to boil. Thicken the sauce with a mixture of cornflour and 3 tablespoons of cold water.
Let the sauce cool down before adding the wasabi mayo.

Cut the pork fillet into 0,5 cm pieces. Let the pork marinate in the refrigerator for at least 4 hours.
Grill the marinared pork on high heat.

Fry the nems for about 2 to 3 minutes at 180°C until crispy and golden brown.
Garnish
Bring water to the boil and pour over the rice noodles, let the noodles soften for about 5 to 10 minutes (depending on the thickness of the noodle).
Devide the glass noodles into 4 portions and add the lettuce, carrot, mint and coriander. Garnish the dish with nems, grilled pork and cashew.
