Supporting a sustainable community-based FOOD SYSTEM
It’s all about local food -- growing it, processing it, shipping it, marketing it, selling it, and ultimately buying and consuming it in an effort to support our community-based food system.
But what is a community-based food system?
For the High Desert Food and Farm Alliance (HDFFA), it is our network of farmers, ranchers, producers, processors and consumers that are dedicated to making our region a more locally based, self-reliant food economy.
But what makes food “local”?
We consider “local” to be food grown and raised here in Central Oregon, of course -- vegetables, fruit, eggs, meat, etc. -- but also food which is produced by local artisans. By supporting and providing more direct access to both ends of the spectrum, we all work to ensure the strength of the food system we’ve developed thus far, provides a strong, healthy and sustainable future for generations to come.

In the end, our goal is to encourage local food consumers to thoughtfully consider the sources of their food, as well as the steps it takes to get it to the market and onto their plates. From farm to plate, truck to store, jam to bread, beer to glass, and finally into the compost, a food system is made up of all of us who buy, consume and advocate for local and sustainable nourishment.
HDFFA PROGRAMS - FARMER SUPPORT
We recognize our regional farmers and ranchers work hard to grow, raise and craft foods that nourish our High Desert community. We also recognize that they are vital to a thriving and sustainable food system. But farming isn’t easy. It takes dedicated farmers and a village. We at HDFFA are here to support their work, whether this includes making it easier to enter local markets, providing promotional support, or helping to build better connections between farmers and our communities through networking opportunities.
In doing so, we offer the following opportunities: • Community Supported Agriculture (CSA) for the workplace • Support for agritourism and serving as fiscal sponsor for CROP and High Desert EATs: farmer and community-led agritourism groups in Crook and Jefferson counties. • Season extender and greenhouse mini-grants • Farmer Chef Mixers and workshops

GROW & GIVE Fresh food donations Healthy bodies and healthy minds require nutritious meals at every age. Studies show that food-insecure households experience a higher-than-average incidence of high blood pressure and diabetes. This only reinforces why it’s more important than ever to ensure those in need are able to access fresh fruits and vegetables.
“Every other week throughout the summer, we were able to donate fresh lettuce, tomatoes, kale, potatoes and more to help folks have fresh food on their families’ plates,” said Carly Sanders, Food Bank Director at NeighborImpact. And, it’s why we created our Grow & Give program.
What is Grow & Give?
Developed in 2015, Grow & Give ensures that fresh, locally grown food is available to all Central Oregon families through the NeighborImpact Food Bank and their food pantry network.
How it works:
During the spring and summer, HDFFA hosts booths at regional farmers’ markets where consumers can buy and donate food, gardeners can bring in home-grown foods, and farmers can donate excess fruits, vegetables and other products. We at HDFFA also coordinate on-farm gleaning, where volunteers harvest excess produce from farmers’ fields for donation to Grow & Give. We pass all fresh food donations along to NeighborImpact who distributes it to their network of 45 partner hunger relief agencies. Since 2015, HDFFA has donated around 34,000 pounds benefitting hundreds of individuals and families.

“I glean for humility,” said Caleb Stoddart, owner of Bend Accounting and an active gleaning volunteer, “to meet the folks that are growing and delivering the food I eat at local restaurants, to be in touch with the earth and support the farmers that are always working for our health.”
COOKING MATTERS Free Cooking Classes It’s one thing to know where to access fresh food. It’s another thing to know what to do with it once you get home. This knowledge is critical to making sure we all have nutritious meals to feed ourselves, family and friends.
Looking to bridge this gap, we started offering Cooking Matters in 2014. The goal of Cooking Matters is to empower individuals and families to feel comfortable in the kitchen and expand or learn cooking skills. We offer 7-week free cooking courses in the spring and fall using a curriculum developed by the national organization, Share Our Strength. Participants learn how to make healthy meals using whole ingredients while maintaining a budget.
“I receive around $95 a month for food, and Cooking Matters with HDFFA is helping me learn to cook on a budget,” stated a program participant. We at HDFFA team up with volunteer home cooks, professional chefs and local nutritionists to teach the classes on cooking and how to shop on a budget, including store tours. The program is funded entirely through grants, donations and our amazing volunteers. “I need help figuring out how to eat well with SNAP benefits, which forces me to go to food banks to have enough food,” said another participant. “Unfortunately, I get a ton of bread and processed [food] that I would not buy if I wasn’t in this economic place. I am grateful for the food assistance, but we all have a right to eat good food. I want to gain culinary skills so that I can use the food I already have access to so I can eat healthier.” Cooking Matters provides hands-on experience cooking meals that are nutritious, delicious and affordable. NUTRITION & HEALTH Veggie RX Last year, we at HDFFA partnered with the Central Oregon Intergovernmental Council to understand how nutrition programs, such as cooking classes, can benefit a person and also how doctors and nurses provide this information to their patients. We met with health care providers, individuals and organizations that provide nutrition classes. What we uncovered was astounding:
• 75% of Central Oregonians would benefit from better nutrition and education, • Fresh food is too expensive for most people. • In general, people don’t make a connection between their diets and the state of their own health.
At HDFFA, we are developing and implementing a oneyear Veggie Rx pilot program. We are excited to partner with participating local healthcare providers who screen individuals for food insecurity and diet-related disease, such as diabetes or heart disease. If the patient is a good fit for the program, they can enroll in an 8-week prescription for free fresh vegetables and fruits at the Bend Farmers’ Markets. They also receive nutrition counseling and support navigating the farmer’s market, all while creating relationships and trust with farmers and the community.

SUPPLEMENTAL NUTRITIONAL ASSISTANCE PROGRAM (SNAP) What is SNAP?
Supplemental Nutrition Assistance Program (SNAP) is the national Food Stamp Program. SNAP offers nutrition assistance to low-income individuals and families and provides economic benefits to communities.
What is SNAP-Ed?
The goal of SNAP-Education is to improve the likelihood that persons eligible for SNAP will make healthy choices within a limited budget and choose active lifestyles.
SNAP at Farmer’s Markets
SNAP benefits can be exchanged for tokens at the Bend, Redmond and Madras farmers markets. These tokens can be used at vendor booths to buy vegetables, fruit, bread, meat and dairy products.

GETTING TO KNOW YOUR ROOTS Whether you’re new to Central Oregon or a veteran of high desert living, gardening in the region can be intimidating. Unlike the more fertile areas of the Oregon valley, California or the Midwest, gardening in the high desert is a true exercise -- one that relies on exploration, education, preparation, and cultivation. Our sandy soil, unpredictable climate, lack of rain, and battles with aphids makes gardening, and farming, in Central Oregon challenging, but also strangely satisfying. The more risky the journey, after all, the more rewarding the finish. Whether your goal is to grow and harvest, or to simply buy and consume from a local farmers’ market, the following is a list of the best Central Oregon has to offer:
HERBS
POTATOES Did you know Central Oregon was once one of the most prominent potato growing regions in the nation? In fact, the Deschutes County Fair started decades ago as a festival honoring potato growing in the area. So, celebrate our heritage with fresh, hearty, locally grown potatoes! Try the typical white potatoes, Russet and Kennebeck, or Purple Vikings.
BEETS
Equally hardy both in an outdoor garden and a simpler container garden on your kitchen window sill, fresh herbs love to grow in Central Oregon. And, they play an incredibly important role in adding deep flavors and culinary pizazz to your recipes. Pro tip: always keep some fresh, locally grown mint handy for summer mojitos!
Are you seeing a trend? Like potatoes and carrots, the beet is another root vegetable that’s simple to grow in the high desert. Yet, they’re slightly under-appreciated for such a naturally sweet and adaptable veggie. Bake them, grill them, can then, freeze them, pickle them … just don’t ignore them at the farmers’ market this year!

Ranches in Central Oregon are incredibly diverse when it comes to stock, which translates to variety when it comes to locally sourced meats. From grass-fed beef, bison and swine to sheep, goats, poultry, and even ostrich, few culinary experiences surpass that first time you try locally sourced meats.
Nothing beats the healthy snap of a fresh carrot for a snack. And in the kitchen, it’s rewarding to use this staple root veggie as a base for hearty soups, stews or risottos. Carrots freeze well, too. It doesn’t get much more versatile than a carrot … or much simpler from a growing standpoint.

HIGH DESERT SEASONAL HARVEST CHART Every season, fearless farmers take on the High Desert’s seasonality challenges.
Thankfully, High Desert farmers are able to buffer these temperature swings with a variety of season extenders, from plastic row covers to greenhouses. These season extenders allow arugula to be available in April, or sweet carrots to show up on Thanksgiving tables. Explore the seasonality chart below to find out when to expect your favorite locally grown, farm fresh foods.
