A GOOD OLDE TIME FOR ALL BY MARY JANE MCCALL
Highlands’ Olde Mountain Christmas Parade is infused with joy, laughter, music, and more than a few surprises.
H
ello, December and Merry Christmas everyone! Start your holiday celebrations on a joyful note by attending the Highlands Olde Mountain Christmas Parade on December 2. The parade starts at 11:00 A.M. but it’s part of the fun to get there early, grab a cup of coffee, hot chocolate, or cider at a nearby business and claim a prime viewing spot. It’s a great chance to celebrate with your community and neighbors. This parade embodies the heart and soul of the community and is staged entirely by local civic groups, non-profits, churches, businesses, fire departments, and many more. You’ll definitely spot some of your friends and neighbors marching the parade route, and if you smile and wave they might reward you with a bountiful handout of candy. Creativity abounds and hard work is evident in the parade of homemade floats that took long hours of volunteer labor and good times to assemble. Joining the fun will be at least one marching band, motorcycles, allterrain vehicles, horses, camels, dogs (some dressed for the season, all happily enjoying the fun and exercise), fire trucks, rescue vehicles, classic cars, the Highlands School Homecoming Court and athletic teams, local politicians, Smokey The Bear, and the
ever-popular and always well-rehearsed crowd favorites, the dancing ladies of the Highlands Garden Club. Ending it with a bang and to the delight of our youngest spectators are Santa and Mrs. Claus, who always mark their calendars so they can attend our parade. Santa loves parades and the Highlands Olde Mountain Christmas Parade is a favorite of his. He loves it so much he even hangs around after the parade at the Kelsey-Hutchinson Founders Park for photos. How’s that for seasonal star power? For more information please contact the Highlands Chamber of Commerce at (828) 526 -2112.

SILVER & GOLD BELLS PARADE BY JENNY KING | PHOTOS BY NICK BREEDLOVE
The good people of Cashiers will stage the 43rd Annual Cashiers Christmas Parade at noon Saturday, December 9. It’s only the flashiest, most unabashedly cheerful holiday event this side of Whoville.
T
hink of all the things you’d expect to see in a hometown Christmas parade. Let’s see, dogs? Check. Floats? Check. Marching Band? Check. Santa Claus? Of course! The 43rd Annual Cashiers Christmas Parade has them all and some entries that might surprise you. Saturday, December 9, is the date and the theme is “Silver and Gold Bells: It’s Christmas Time in the Village,” in celebration of The Village Green’s 25th anniversary and the Cashiers Glenville Volunteer Fire Department’s 50th anniversary, who will be serving as Grand Marshals. Sponsors include the Cullasaja Club, Hattler Properties, Landmark Realty Group, Old Cashiers Realty, and Zoller Hardware. This year’s theme is especially important. Can you imagine Cashiers without The Village Green? It’s the center of the community and plays a most important role in the life of Cashiers Valley. The Cashiers Glenville Fire Department was founded in 1967 and its service covers approximately 130 square miles, including the communities of Cashiers, Sapphire Valley, Glenville, Big Ridge, Yellow Mountain, Pine Creek, Norton, Breedlove, and Heady Mountain. Both of these organizations deserve to be celebrated in grand style and you can expect to see lots of silver and gold on the parade route.
The parade will start at noon at Cashiers School Road, near Cornucopia Restaurant. It then travels north on Highway 107 to the Crossroads where Parade Emcees will announce participants via the amplification system. The parade then turns left and continues on Highway 64 West ending at the Community Center on Frank Allen Road, for the traditional Cashiers Cares free lunch and photos with Santa. Bring your cameras and start a family tradition the hometown way. For those who can’t be there in person, they can watch the live streaming broadcast at live.HighSouthAdventures.com. For more information on this year’s Cashiers Area Christmas Parade, Saturday, December 9, contact Eli Ramirez at (828) 743-5191 or at info@CashiersAreaChamber.com. Rain date is set for Sunday, December 10.

CELEBRATE CHRISTMAS IN SONG BY WILEY SLOAN
Highlands First Presbyterian Church will host celebrations of the joy and beauty of the Christmas season throughout December.
K
ick off the Christmas season by joining your friends at Highlands First Presbyterian Church for the annual Christmas Carol Sing led by baritone Stell Huie, with Angie Jenkins at the piano. It will take place Saturday, December 2, at 1:00 P.M. It will be reminiscent of your childhood as you sing all the old favorite carols. Later, at 4:00 P.M., the Asheville Symphony Chamber Chorus directed by Dr. Michael Lancaster will perform at the Presbyterian Church. The Chorus’ five-part program will include familiar Christmas classics. The first portion of the program will include four renditions of “Ave Maria,” including the Gregorian Chant, a composition by Jacob Handl from 1581, the 19th century setting by Anton Bruckner, and finally, a composition from 1980 by Javier Busto. Stephen Paulus’s composition “Three Nativity Carols,” written in 1998 and accompanied by oboe and harp, comprises Part II of the program. Part III will include Christmas Spirituals including “Mary had a Baby,” “Rise up, Shepherd,” and “Glory, Glory, Glory to the Newborn King.” Part IV of the program will include arrangements of classic Christmas carols by contemporary composers for chorus, oboe, and harp. “He is Born, the Divine Christ Child” is a French Carol by Donna Hartmann Schultz. Stephen Paulus’s “How Far is it to Bethlehem” and “O Little Town of Bethlehem” complete this section. Completing the program in Part V will be a Canadian Carol entitled “Huron Carol” by Dale Warland and John Rutter’s rendition of “The Holly and the Ivy.” During the 11:00 A.M. Sunday worship service on December 10 Dr. Lancaster will lead the Chancel Choir in the presentation of the ever-popular “Lessons and Carols.” With accompaniment from oboe, harp, flute, and organ the program will include readings from Genesis, the Prophetic Books, and the Gospels with Christmas carols and choir music intertwined. Spend Christmas Eve at Highlands First Presbyterian Church from 4:30 to 5:00 P.M. as well-known harpist and Highlands resident Valerie Von Pechy Whitcup plays some of your favorite holiday favorites, followed by a traditional Christmas Eve Candlelight Communion worship service. The church is located at 471 Main Street. For more information, call the church at (828) 526-3175.

THE TRUE MEANING A Food Pantries Christmas, set for the Episcopal Church of the Incarnation Saturday, December 2, after the Olde Mountain Christmas Parade, is a unique, delicious way to support both the Emergency Council of Highlands and The Highlands Food Pantry.
L
et’s face it, we started seeing Christmas decorations months ago. Unfortunately, it seems almost impossible to remember that shopping isn’t what the holiday is all about. If you need to take a break from all the commercialism and want to focus on the true meaning of Christmas, visit A Food Pantries Christmas after the Highlands Christmas Parade, Saturday, December 2. A Food Pantries Christmas is held at the Episcopal Church of The Incarnation and is a major fundraiser for both the Emergency Council of Highlands and The Highlands Food Pantry. Community volunteers prepare and serve a yummy barbecue lunch while you’re entertained by live holiday music. The Emergency Council and the Food Pantry serve the Highlands community all year round. They depend on donations to provide assistance for those who struggle, especially during the winter months when resources are limited. Your $10 for lunch will go directly to these organizations and then you have the opportunity to support other area non-profits by attending the Alternative Gift Market. If you’re struggling to come up with a present for your great aunt or your brother-in-law’s second cousin, consider this: do they really need to get those copper socks or that Ronco Salad-O-Matic as seen on TV? Wouldn’t they rather know your money went to good use? At The Alternative Gift Market, local non-profits will accept donations in your recipients’ name. Gift amounts will be keyed to the purchasing power of the donation so you will leave knowing you fed a hungry child for dinner, or a needy family for a weekend or a week. This is the perfect answer to the question of what to get for the person who has everything. Event Chair Ron Leslie said that last year they raised over $14,000 and this year they’re hoping to raise even more. “We’re able to donate 10 0 percent of the proceeds thanks to the generosity of Dennis Wilson who provides the amazing barbecue and Mountain Fresh Grocery’s delicious beans and slaw,” Leslie said. “Our donor base covers the overhead, so we are able to divide all of our proceeds between these two outstanding area non-profits.” Bring your whole family to A Food Pantries Christmas, after the Highlands Christmas Parade, Saturday, December 2 at the Episcopal Church of The Incarnation and bring a little “Joy to the World.”

Highlands United Methodist Church raises bells and voices in joyful revelry for a series of December performances.
T
he Hand Bell Choir at Highlands United Methodist Church (a.k.a. The Mountain Top Ringers) will be featured during the church’s traditional worship service on Sunday, December 10. The worship begins at 10:50 A.M. when the ringers will play key selections of their holiday concert. The full concert will take place on Wednesday, December 13, at 6:00 P.M. in the church’s sanctuary. The audience will enjoy familiar and beloved Christmas songs both sacred and secular. There’ll also be a special set of Christmas pop songs especially for children. This popular set includes “White Christmas,” two songs from Victor Herbert’s classic “Babes in Toyland,” and two songs about well-loved Christmas toys (hint: toy soldiers and music boxes). Enjoy the performance of the HUMC Chancel Choir as they perform Joseph Martin’s “Tapestry of Light,” a cantata for choir and chamber ensemble of piano, violin, cello, flute, and percussion. This performance will take place on Sunday, December 17, during the traditional service at 10:50 A.M. in the church sanctuary. Les Scott, Director of Music says, “This is an extremely joyful piece with a decidedly Celtic feel, combining familiar carols, original music, and Celtic tunes.”

GO FIGURE BY JENNY KING | PHOTOS BY SUSAN RENFRO
A bit of ice skating at Kelsey-Hutchinson Founders Park is the perfect tonic for bodies and souls feeling the stress and strain of the holiday season.
W
hile the idea of ice skating at the Kelsey-Hutchinson Founders Park in downtown Highlands sounds idyllic, let’s not forget one important fact: ice skating is good exercise. Did you know you can burn up to 500 calories an hour on the ice? Of course, that’s assuming you’re vertical most of that time. Food and holidays seem to go hand in hand. How do you deal with it? Do you expect an extra five pounds and know it will come off? Do you worry about those five pounds and spend the holidays stressing over it? Do you plan to spend an extra hour working out? Hey! No judgment. We’ve all been there. If you’ve decided to hit the gym but dread facing another hour indoors on the treadmill, consider changing up your routine. The rink is open now until March 4. Think of all the benefits: it’s wholesome, it makes a great photo op, it’s a great way to justify another cookie, and it’s just plain fun. This year’s rink schedule is filled with special events and is open for group bookings and parties. It only costs $5 per person to skate, whether you bring your own skates or rent them, and you may also purchase hot chocolate, coffee, and water. The newly constructed Founders’ Monument fireplace will be lit, providing a cozy place to watch the activity on the ice or just to sit and contemplate the beauty of the park. The rink is open Thursdays through Sundays at 1:00 P.M. and will have a special holiday schedule for Christmas. Mondays and Tuesdays are reserved for group bookings and parties. If you’re one to make New Year’s resolutions, keep this in mind: on December 31 they will be open until 1:00 A.M. so you can hail the coming of the new year and embark on your bright and shiny fitness program all at the same time. For more information on the ice skating rink’s schedule check with the Highlands Recreation Department at (828) 526-3556.

WREATHIN’ SEASON BY JENNY KING
A national movement is aiming to honor the sacrifices made by local veterans with a unique holiday memorial.
H
ighlands Scoutmaster Phil Potts is raising the flag for a new way to memorialize local veterans, Wreaths Across America. This volunteer organization, which was started in 1992, lays Christmas wreaths on the graves of American service men and women. While several local scouts and supporters have participated before by attending the ceremony at Arlington National Cemetery, this will be the first year local veterans will be honored at Highlands Memorial Park. On December 16 local dignitaries, members of the American Legion Post 370, scouts, and fellow veterans will take part in this nation-
wide ceremony. Potts encourages everyone to attend. “We need to hear from friends and family members to make sure they are on our list of veterans,” Potts said. If you want to sponsor a wreath, it only costs $15 and organizers will need to know if you wish to lay the wreath yourself, or if you’d like to have them do it. As of last year, Wreaths Across America has placed 1.2 million remembrance wreaths across the country and this is the first year Highlands Memorial Park will be part of the celebration. More than 400 truckloads of
22 | December 2017 | thelaurelmagazine.com
wreaths were delivered across the country by hundreds of volunteer professional truck drivers last year. The ceremony begins at noon on Saturday, December 16, and shuttles will be running at regular intervals from the Highlands Community Building (next to the Town Ballfield) to Highlands Memorial Park. The public is invited to attend and there are many ways to get involved locally, so contact Phil Potts at (828) 200-9753 or by email at philjpot@frontier.com. CHRISTMAS EVE AT HUMC BY WILEY SLOAN
Highlands United Methodist Church embraces the joy of the season with a quartet of Christmas Eve services.
C
hristmas is a time of excitement and celebration– especially when children are involved. Enjoy the merriment of children’s voices as they sing traditional Christmas carols during the 5:0 0 P.M. service on Christmas eve at Highlands United Methodist Church. Elementary school youngsters lift their voices in song while the older Middle Schoolers read the Christmas story. Come hum quietly along as a traditional Christmas pag-
eant unfolds –handmade costumes and all. The Christmas spirit will enfold you. If you can’t make this early worship service you will have 3 more opportunities to worship on Christmas eve. The 7:0 0 P.M. and the 11:45 P.M. services will both celebrate the Eucharist (Holy Communion). The 9:0 0 P.M. service will include the familiar choral work of Lessons and Carols which was first performed at King’s College in 1918. This music explores the fall
of humanity, the promise of the Messiah and the coming of Christ intertwined with traditional carols. THE IDEA OF THE MULTIPLE BY DONNA RHODES
For Grant Benoit, the vistas of printmaking are a dazzling array of shapes, colors and textures.
W
hen Grant Benoit, The Bascom’s current Artist-in-Residence, was in high school he covered 2-D surfaces with graphite, markers, paint, etc. But it wasn’t until he gouged linoleum…and himself, drawing blood …that he truly connected with the medium that would define his future career: printmaking. There was something about the physicality of digging into a surface as opposed to laying color atop it that felt primal and important. And it was the first time, romantically speaking, that he bled for his art. Today Grant uses his printmaking to create sculpture, installations and artist books. His work is based on narrative, place, and memory. He says, “I’m interested in ex-
plaining memory mechanics in a way that acknowledges human experience. I’m using the domestic space, home, as a metaphor for specific functions and mechanics of memory. Closets are an example of how we separate and store belongings but also how images are broken down and stored.” While his work is abstract, he tries to keep something that brings the viewer back to the domestic space, such as molding or electrical switches. But he rarely repurposes. “I start with fresh construction grade materials and build the patina. Sometimes I’ll sand a roll of commercial wallpaper down with a fine grit and print on top of it so the two patterns intermingle, but mostly it’s fresh material. I’ll silkscreen directly on

drywall and build up layers of colored plaster and patterns and sand through exposing the strata and then break that up and recombine it through stitching or gold leafed liquid nail.” After receiving his Masters in Printmaking from Southern Illinois University Grant stepped into a residency at Arrowmont then another at The Bascom. Both facilities currently exhibit his work. What’s next? He hopes to move to a professorship in Fine Art. Visit his website at grantbenoit.com. Inquire about commissions. His current work can be seen at The Bascom. Call William Love for more information at (828) 526 -4949.

A JOLLY GOOD READ BY JENNY KING
The Highlands Cashiers Players deliver a delicious taste of the Christmas season with a pair of free readings, December 14 at the Highlands Performing Arts Center and December 18 at the Albert Carlton-Cashiers Community Library.
T
he Highlands Cashiers Players’ annual free holiday program, co-sponsored by Highlands Performing Arts Center, and coordinated by Virginia Talbot, is scheduled for Thursday evening, December 14, beginning at 7:00 P.M. at Highlands PAC. A similar program has also been scheduled for Monday, December 18, at 7:00 P.M. at the Albert Carlton-Cashiers Community Library, co-sponsor of the free program at their facility. HCP actors and friends will be reading selections appropriate to the season, some humorous, some informative, some touching and inspiring. A special 12-voice ensemble from the Mountain Voices, a regional chorus based in Franklin, will perform a number of selections from their major Christmas program, which will be presented on December 7 at the First Baptist Church on Iotla Street in Franklin. After the Players’ program in Highlands, the audience is invited to join the performers downstairs for refreshments in the PAC reception room. The Players have a long tradition of presenting free productions during the Christmas season. It started in 1995 and has been canceled only once in 22 years, due to snow in 2005. Most of the programs have been planned and directed by Virginia Talbot, but Vangie Rich stepped in for a three-year commitment, bringing in programs of personal Christmas memories by local residents and descriptions of Christmas celebrations in other lands. Actors and friends of the Highlands Cashiers Players especially enjoy participating in the holiday programs because, as readers, they get to act but don’t have to learn lines. No six weeks of rehearsals and two weeks of performance that are required for a stage play. Also, it’s possible to invite non-actors to take part as readers. In fact, anyone who has a great holiday story, sings, or plays an instrument and would like to be considered for next year’s program is invited to send a note and contact information with your suggestion to the Highlands Cashiers Players, P.O. Box 1416, Highlands, NC 28741. In case of inclement weather, the programs may be canceled.

MARX YOUR CALENDAR BY MARY ADAIR TRUMBLY HIGHLANDS PAC
A sweet holiday reading and a peek at the zany (yes, zany) life of a young Karl Marx are served up this month at The Highlands Performing Arts Center.
T
he Highlands Performing Arts Center and the Highlands Cashiers Players will present a Holiday Reading on Thursday, December 14, at 7:30 P.M. It’s the PAC’s gift to the community (no charge) to thank everyone for their continued support throughout the year. It’ll be an evening of music and stories, some funny and some poignant. Also, holiday refreshments will be served after the show. The Live via Satellite continues in December with the National Theatre of London’s production of “The Young Marx,” Saturday, December 16, at 1:00 P.M. Rory Kinnear (“The Threepenny Opera,” “Penny Dreadful,” “Othello”) is Marx, and Oliver Chris (“Twelfth Night,” “Green Wing”) is Engels, in
this new comedy written by Richard Bean and Clive Colman. Broadcast live from The Bridge Theatre, London, the production is directed by Nicholas Hytner and reunites the creative team behind the Broadway and West End hit comedy “One Man, Two Guvnors.” The year is 1850, and Europe’s most feared terrorist is hiding in Dean Street, Soho. Broke, and restless, the 32-year-old revolutionary is a frothing combination of intellectual brilliance, invective, satiric wit, and child-like emotional illiteracy.
44 | December 2017 | thelaurelmagazine.com
“The Young Marx” Creditors, spies, rival revolutionary factions and prospective seducers of his beautiful wife all circle like vultures. His writing blocked, his marriage dying, his friend Engels in despair at his wasted genius, his only hope is a job on the railway. But there’s still no one in the capital who can show you a better night on the town than Karl Heinrich Marx. Tickets are available online at highlandspac.org, at the door or by calling (828) 5269047. The Highlands Performing Arts Center is located at 507 Chestnut Street in Highlands.

ON MY OWN TERMS BY DONNA RHODES PHOTO BY SUSAN RENFRO
A well-crafted country song spins a darn good yarn. Just ask Jay Drummonds.
R
esidents of the Cashiers area might think of Jay Drummonds as a primo family man or the concrete guy (he operates a thriving concrete business, Highlands Foundations Inc.) or a church musician (one of his treasured pastimes) or performer at The Ugly Pub and other local venues. But did you know he is one of Nashville’s best yarnspinning, story-tellin’ singer/songwriters? He can wind a universal theme around a captivating rhyme. His sweet baritone voice, steeped in Southern with a touch of twang, weaves lyric and melody together, knitting them indelibly into the listener’s memory. So why hasn’t he topped the charts? Two reasons pop to mind. Admirably, he chose to devote his life to family, to raise three kids and get them through college before resuming his career. He’s close. His youngest is approaching 15. The second reason? Nashville just doesn’t know him …yet. Music’s been part of Jay’s life since he was a kid. As a young adult, he made all the right Nashville connections, like Grammy Award winners Zac Brown and Shawn Mullins. He moved to Nashville and studied songwriting with the best. Karyn Rocelle, singer/songwriter who opened for Trisha Yearwood and Garth Brooks, co-wrote a song with him. He joined awardwinning producer Rodney Mills (Atlanta Rhythm Section, Doobie Brothers, Gregg Allman) to produce his second album, “Sweet.” Big-name talent contributed accompaniment. He had the tools, the talent, the product, and the respect of country music’s best. All he needed was good old-fashioned luck. Today, he’s happy with his choices. His daughter is on the road to being a performer herself. But until his nest is empty, he and his wife put family first. Maybe his concrete foundations are a metaphor for his life. One thing is for certain, Jay Drummonds is rock solid. The best way to hear his music is through iTunes or Spotify, but you can order a CD by e-mailing jaydrummonds@gmail.com or through his website, jaydrummonds.com.

DRAMA THAT MAKES A DIFFERENCE BY GINGER MOSELEY | HIGHLANDS PLAYHOUSE
The excitement of live theater is being kindled in the minds and imagination of local children.
I
n a small town, it can often be hard to find something to do, especially for children. In September 2016, Highlands Playhouse began offering theater classes to children in the after-school program at Highlands United Methodist Church. Thus far students have learned about such things as stage directions, body awareness, and vocal control – and they love it! On more than one occasion I’ve had parents stop me on the street to gush about how much their child has enjoyed the program. Yet many local Highlanders remain unaware of one of the mainstays of our mission at the Highlands Playhouse is theatrical education for children. We are working hard to change that. Drama is about much more than entertainment. It has great benefits to the individual as well as the community. As I pointed out last month, studies show that kids who can express themselves are less likely to resort to violence as adults. But did you know that studies show that those with training in dramatic arts often prove more employable? They are typically more confident, compassionate, disciplined, and fully aware of the benefits of cooperating with others. Add into the mix the fact that those
who spend time on stage are often more skilled communicators, and you have a level of preparedness for the future that is hard to come by nowadays. In addition to our afterschool program, we host a two-week camp each summer that allows children ages four-15 to experience even more aspects of live theater. Summer 2017 saw arguably our best camp yet. Under the direction of a professional actor and director, Bob Russell, campers were able to experience many aspects of theatre – including character development, script writing, and even costuming. Their two week crash course resulted in a performance of their very own making; a fractured fairy tale. They did an amazing job and everyone in attendance seemed to have caught the theatre bug. This is what we wish to tap into for our year-round kids and we need your help. There are a couple of current opportunities for volunteers to help expand the youth program. We would like to offer it to more groups and more often. Ideally we want something for all kids, not just ones interested in performing. One of the most beautiful aspects of theater is the feeling of inclusion. Theater is typically a safe
48 | December 2017 | thelaurelmagazine.com
place where everyone is accepted and valued for their particular talents. In addition to actors, theater needs writers, technicians, choreographers, and directors to name a few. When it comes to drama, it truly takes all kinds. If you have a background in the arts and the time to spare, please contact us at (828) 526-2695 or highlandsplayhouse@gmail.com. And even if you don’t have the time or a particularly dramatic skillset, our annual fundraising drive is officially under way. We are happy to designate donations as you see fit – so if you want to fund education in particular, just let us know. A quick reminder: don’t forget, come see the best pictures of the year as our annual Golden Globe and Oscar Award Series returns beginning in January. We hope you’ll join us as we feature as many nominated movies as possible. Also if you haven’t heard, our concession is now serving fresh, delicious coffee during the winter months to help warm your hands and heart. For further information about how drama can make a difference for future generations here on the Plateau or our entertainment offerings, just pop over to HighlandsPlayhouse.org.

PAIRING PRICE The costs of a good bottle of wine seem to defy ordinary market logic.
A
s with any Culinary Weekend, I am focused intently on the opening wine tasting and the wine dinners I attend. I was lucky enough this year, during Highlands Food and Wine Festival, to attend two wine dinners displaying wines from three different continents. Every year I find myself impressed with the wine selections. The range in the price of wine poured during a typical dinner can be from the low teens to well over the century mark. The range in quality however, can be minimal. That is not to say that they cannot be vastly different in style, which can explain the difference in price. It seemed to me that the amount of energy put forth to produce low-end wines was not so different than that of high-end wines. Everything I tasted was, in its own style, a beautifully made wine. My favorite wines are having less relation to price and more to style. I have to think that this trend will continue as great wines are being produced all over the globe at all price ranges. It’s a great time to drink wine! Drink well, Curt

MMMOUTH OF THE SOUTH BY PAT ALLEN
L
ooking back to 1994, how could I have known that this simple recipe would change my life! When my sweet husband, the other “Pat,” and I decided to open a bed and breakfast, I realized I must come up with an original granola recipe. I had attended a two-year culinary school and after visiting so many inns over the years knew the importance of food to your guests. I bought many boxes of Quaker Oats and experimented for days as the house smelled of wonderful cinnamon! One morning I finally decided this was it. When we opened the Morning Star Inn in October 1994, this was the first dish I served. We started every morning with a small bowl of Morning Star Granola topped with yogurt and diced Granny Smith apples. Three years later the Professional Innkeepers Association had a conference and sponsored a contest for the best granola in the country, being judged by the National Baking Association. I was excited to enter but when we got on the plane I realized I forgot to take it! I went to the grocery store in Baltimore, bought the ingredients, and baked it in a toaster oven at the hotel. When my name was called as the winner, you can imagine my surprise! The recipe was used by Walnut Acre Farms in their catalog and I received many notes from happy granola connoisseurs. The other Pat used to get up early and make this recipe for guests, and since his sudden passing in May, every time I smell cinnamon I have warm thoughts of him and our happy guests at the inn. The recipe is included in my cookbook, “Mouth of the South.”

This simple recipe is nationally recognized and is presented with a healthy serving of warm memories. Morning Star Granola Ingredients: 1 1/2 cups Old Fashioned Oats 1/2 cup Shredded Coconut 1/2 tsp. Cinnamon 2 tbsp. Butter, melted 1/2 tsp. Vanilla 1/8 cup Honey 1/2 cup Chopped Nuts 1/2 cup Raisins or Dried Fruit Preparation: Mix oats, coconut, and cinnamon in an ungreased baking dish or sheet pan. Combine butter, vanilla, honey, and nuts. Pour over dry ingredients and mix. Bake at 350 degrees for 15-20 minutes, stirring every 5-10 minutes. Remove when brown and add raisins or dried fruit. May be doubled. Serve with diced apples and yogurt.

HELPING HANDS BY JENNY KING
Laura Huerta
The Highlands Christmas Day Dinner is a marvelous way to celebrate the Christmas Spirit and enjoy a sumptuous meal.
“
It came without ribbons. It came without tags. It came without packages, boxes, or bags. Maybe Christmas doesn’t come from a store. Maybe Christmas means a little bit more.” – “How the Grinch Stole Christmas,” by Dr. Seuss Everyone is bound to get just a tiny bit Grinchy every now and then. The pressure to buy, buy, buy can be, at best, overwhelming. Laura Huerta, organizer of the annual Highlands Christmas Day Dinner, sponsored by Highlands Area Non-profit Donation Sharing, understands. That’s part of the reason she has made the event her holiday tradition for the last 10 years. “Highlands Christmas Day dinner is fast approaching and I couldn’t think of a better group of people to spend my holiday with, while giving back to this beautiful community,” she says. “I
don’t like to shop unless I’m in the mood. The mood is often sparked when someone has helped or inspired me. I’m at my best when people have given me their best.”
60 | December 2017 | thelaurelmagazine.com
She feels one of those times is the annual Christmas dinner where familiar faces, both diners and volunteers, are welcomed back year after year. The dinner is held at Highlands Country Club from 11:0 0 A.M. to 5:0 0 P.M. on Christmas Day. Professional chefs prepare traditional holiday foods like turkey, ham, tenderloin, and side dishes, with a delectable assortment of desserts. The meal is served by community volunteers and all proceeds go to HANDS which distributes the funds to area non-profits. “One day soon, I’ll tell you about the amazing support and all the true friends that this event has,” Huerta says. “Until then, I look forward to taking your reservations and raising some big money. Merry Christmas!” Laura is the person to contact for reservations, to volunteer, and to offer contributions. She may be reached at (828) 526 -9419. Seating for the Christmas Day Dinner is by reservation only. Cost is $45 for adults and $15 for children.

STROLL TO THE NARROWS BY EMILY CROWELL | TOP PHOTO BY TERRY BARNES
The beguiling Chattooga River Narrows Trail offers an irresistible escape from the stresses of the season.
H
iking to the Chattooga River Narrows from the National Forest Service trailhead on Whiteside Cove Road is a rejuvenating way to spend a sunny morning or afternoon. The moss-covered tree stumps at the beginning of the trail seem to warmly glow, giving the green light to go ahead and leave your stresses behind and reconnect with nature, at least for a few hours. At a little over five miles round-trip, it’s a perfect half-day hike that takes three to four hours (not including time for lunch and a nap!). To reach the trailhead from Cashiers, drive 1.8 miles from the Crossroads, take a right onto Whiteside Cove Road, and drive 5.8 miles to the well-marked parking area on the left. From downtown Highlands, follow Horse Cove Road for 8.1 miles to the trailhead on the right (keeping left at the fork as it becomes Whiteside Cove Road). This section of the Chattooga River Trail doesn’t follow the river the entire way. It starts out uphill over roots and pine needles, and then begins a downhill meander that meets up with the river at around mile two. Mountain laurel, mosses, ferns, and galax provide a healthy dose of greenery, even in the so-called dead of winter. At certain points on the trail, the river can be seen in the winter months, but when the
trees have their leaves, its presence below can be noted by an ever-present distant roar. Close to a mile in, the trail forks – stay left to continue on to the river. At around mile two, after a few short but steep ups and downs, the trail finally reaches the Chattooga. From here there are several opportunities to get close to (or in) the river. Hikers will know that they have reached their destination when they come to a sturdy footbridge over Norton Mill Creek, which tumbles vivaciously into a large pool below. Walk down the rocks to the river, and the Narrows are on the left – so-called because the river constricts to flow through a chute only several feet wide. Be wary of walking up the river next to the Narrows, however – the rocks are quite slippery with moss. I myself almost fell in the river that way once. The rocks by the pool here are a friendly, relaxing place to have a picnic, take a nap, or just sit quietly by the river, and the pool itself makes a perfect swimming hole in the summer. The hike back to the trailhead is mostly uphill, as can be expected, but there are plenty of spots along the way to stop, take a breath, and appreciate one’s place in nature. This trip is a perfect showcase of the natural resources we enjoy in the Highlands/Cashiers area.

ANGLER GIFTS BY CHRIS WILKES HIGHLAND HIKER
There are plenty of practically perfect gifts for the anglers on your Christmas List.
F
ly fishing is a popular sport. Millions of people worldwide spend time catching every manner of fish in any type of water on the fly. However, if you aren’t one of those people and someone on your Christmas gift list is, it can be difficult to know what to get that person. At first it may seem daunting since a lot of items related to fly fishing are very specific. Do they fish mostly in saltwater or freshwater? Are they using dry flies or nymphs? And when it comes to gear, a novice will probably miss the bull’s-eye more often than not when trying to purchase something a fly fisherman will actually use. So here are some universal things you can get for fly fishing enthusiasts of all shapes or sizes, be they men or women. Waterproof pouches and Dry Bags: It
doesn’t matter whether someone fishes lakes, streams, saltwater or fresh, the one common denominator is that they are all in and around water. In this day and age, we all carry things that we don’t want to get wet and waterproof pouches and dry bags for phones, memory sticks, cameras, extra clothes, and electronic key fobs are a must for any fisherman, and we always need more of them. Lightweight Quick Dry pants and shirts: Again, no matter where you’re fish-
ing, the chances of getting wet are much greater than while on dry land, so quick drying – or wicking – shirts and pants are a must for anglers. Wading pole: A collapsible pole that fisherman use to test water depth. None of us ever think to get one for ourselves. But as a gift? Very cool. Or you could just give us a call at the Highland Hiker at (828) 526-5298 and let our staff help you make the perfect choice. Happy Holidays!

CHRISTMAS WREATHS BY JEANNIE CHAMBERS THE ACCIDENTAL GARDENER
The simple beauty of natural wreaths has made them a perennial holiday favorite and the perfect complement to Christmas in the mountains.
L
ucia of Syracuse (283-304 A.D.) was a young martyred Christian of noble parents. She became a legend through the centuries and was later known as Saint Lucy, also known as the Saint of Light. She was in the process of spreading her family’s wealth to the poor, an act that eventually caused her persecution and death. St. Lucy Day is December 13, and that particular time of Advent is sometimes called the Festival of Light. The old time celebrations included a young girl wearing a candle lit wreath leading a procession of young girls in white dresses with arms full of bread, cookies, and fruit for the poor. I’ll back up just a bit. Long before St. Lucy and Advent, wreaths were worn as a head ornament, usually symbolizing pride, victory and achievement. You will still see them today as a symbol of the Olympics. Advent wreaths have been used for
centuries. In homes, they were used mainly in dining areas, and later in churches holding the advent candles to help tell the story of Christmas. Later on, people began hanging wreaths on their front doors known as Christmas wreaths. In today’s world, people may absentmindedly stick a wreath on their front door more or less out of habit. Some are fresh, others artificial, but each time the wreath is placed, it has the possibility of stirring some kind of memory. In Tudor Hall’s family, a tradition was started of making handmade balsam wreaths to place on the graves of relatives. Isabel Hall Chambers remembers her father forming the wreaths with moss and mud using his hands in freezing temperatures, while the family finished them with fresh balsam and a red bow. Whether you use artificial or real, you
66 | December 2017 | thelaurelmagazine.com
can always go out in the yard or garden to find things to add to your wreath. Holly symbolizes immortality and life everlasting, cedar stands for strength and healing. Evergreens are for strength and most often used because they can withstand harsh winters. You can also add pine cones, lichen for a color contrast, pieces of small curvy vines and how about an abandoned bird’s nest? One often overlooked, yet inexpensive green is boxwoods – you can weave them in the wreath, or a few branches as a spray on one side. Your wreath-your creation. It’s hard to imagine going through December without wreaths and candles, and for that, I think I love Lucy.

WINTER’S QUIET BIRD PRESENCE BY WILLIAM MCREYNOLDS | HIGHLANDS PLATEAU AUDUBON SOCIETY
Even though the winter woods are hushed, they’re still teeming with our feathered neighbors.
A
lthough our spring and summer migrants have left for warmer climes and our woods contain fewer birds and fewer species of birds, our winter avian population remains large and diverse. Winter residents include songbirds, of course, but also waterfowl and raptors. Flocks are more diverse in the winter, challenging the dictum that “birds of a feather flock together.” One of the most frequently seen species in winter months is the Dark-eyed Junco. This smallish, slate-colored bird has a characteristic gray belly and feeds on the ground, on our decks, and on our bird feeders. They tolerate the human presence well, often scurrying around our feet, and have been likened to small pigeons. Less common than the Dark-eyed Junco but still fairly abundant are Carolina Chickadees, Pine Siskin, Song Sparrows, Blue Jays, and Northern Cardinals. American Goldfinch are still abundant in December, the males’ winter plumage muted com-
pared to their spring and summer black and canary yellow. Tufted Titmice and American Crow are common winter birds, as well as American Robins and both Red-breasted and White-breasted Nuthatch, depending on your elevation and locale. Expect also to see Mourning Dove, Eastern Towhee, Golden-crowned Kinglets, and the occasional Purple Finch. Winter woodpeckers include the Downy, Hairy, and majestic Pileated species as well as Yellow-bellied Sapsuckers and Northern Flickers. Waterfowl are represented by Mallards, Bufflehead, and Hooded Merganser. Expect to see Canada Geese, one of the most populous birds in North Carolina. Winter hawks include both the Red-shouldered and Red-tailed varieties, and the Sharp-shinned Hawk. Occasional and infrequent winter sightings are made of the Fox Sparrow, Brown Thrasher, Hermit Thrush, House Finch, Field

Sparrow, Winter Wren, Belted Kingfisher, Brown Creeper, and Ruby-crowned Kinglet. If this incomplete list of winter birds seems a bit tedious or exhausting, we can all be thankful that our winter aviary is still large and diverse. Winter birding can be highly successful as leafless trees make bird spotting easy. Don’t expect to hear them; songbirds are mostly silent during the winter months, not looking for mates or defending territory. With all this, the Highlands Plateau Audubon Society wishes you happy and successful winter birding. The mission of the Highlands Plateau Audubon Society is to provide opportunities to enjoy and learn about birds and other wildlife and to promote conservation and restoration of the habitats that support them. HPAS is a 501 (c) (3) organization, a Chapter of the National Audubon Society. Visit www.highlandsaudubonsociety.org for information on membership and all activities.

he Highlands Biological Station is currently hosting 12 students enrolled in the UNCChapel Hill Institute for the Environment. With the guidance of Dr. Sarah Workman, HBS Associate Director, who serves as the Field Coordinator for the Highlands Field Site, and HBS Executive Director Dr. Jim Costa, IE students benefit from a full semester of academic and fieldwork focused on conservation science based in Highlands. Students in the IE semester in Highlands live and study at the Biological Station from late August through mid-December. The emphasis is on fieldwork and experiential learning, from the Spruce-Fir forest of the highest peaks to the river basins of the western region of North Carolina. This year, focus is on the “Health of the Headwaters” initiative, in which students examine issues
through their coursework in relation to Blue Ridge Escarpment headwater streams and groundwater dynamics. Students in the IE program are also required to complete an internship with a local organization or an independent study with a faculty member. This mentored Research Internship provides students with a real world look at how what they are learning applies to projects undertaken by our partner organizations, such as at the Kanuga Conferences Inc. in their bog restoration and engagement in the Bog Learning Network, or with the Green Energy Park in Dillsboro on anaerobic digester technology. Other students this year are tracking rattlesnakes with the Orianne Society, investigating old growth forest habitats with the Chattooga Conservancy, looking at the effects of last year’s forest fires with col-
leagues at Western Carolina University, and conducting a herpetological survey on the Big Ridge Preserve with the North American Land Trust. The Highlands Biological Station, a facility for biological field research and education, serves as a research facility for top biologists and ecologists from around the nation and the world. The UNC Chapel Hill Institute for the Environment (IE), in partnership with the Curriculum for the Environment and Ecology, established this network of field sites, like HBS, with locations in North Carolina and abroad. The Institute at UNC is praised for its network of field sites, where students can venture for a semester to undertake coursework, take field trips, hold internships, and perform group research projects.

RAMBLE TO FOXFIRE BY JANE NARDY | HISTORIAN, CASHIERS HISTORICAL SOCIETY
The storied grounds of Foxfire provide a unique window into Appalachia’s vanished past.
I
n mid-October, a group of history buffs boarded a van at the Zachary-Tolbert House grounds at the Cashiers Historical Society office and traveled down to Rabun County, Georgia, for a two-and-ahalf hour guided tour of Foxfire, which is now 50 years old. The curator of Foxfire, Barry Stiles, led us from building to building, explaining the origins of Foxfire and its remarkable success through the years. It began in 1966 when a new English teacher at Rabun Gap-Nacoochee School, along with his students, decided to interview older residents of the area, many who remembered mountain life prior to electricity, and record their personal stories of the pioneer era of Southern Appalachia and then publish those stories in a magazine, which they named simply The FOXFIRE Magazine. It was an immediate hit with the local community and the greater public at large. In fact, the magazines were so popular that in 1972, the first of several books con-
taining collections of the magazine pioneer stories was published under the title of “The FOXFIRE Book.” The money generated by the sale of these books initially funded the purchase of property in Mountain City, Georgia, and the first of today’s 20 -plus log cabins were located in North Carolina and Georgia, purchased (sometimes donated), taken apart board by board, then moved and carefully reassembled to create a home place for the Foxfire Museum & Heritage Center. Curator Barry Stiles led our group through the woodsy complex and told us the details of where the buildings came from and how the Appalachian culture is represented and preserved for future generations. The word “Foxfire,” which is the name of a glowing fungus found on rotting wood in the area, was chosen by the original group of students and 50 years later is a word known throughout our nation. Thousands of serious scholars and even more casual visitors take guided or self-guided tours through the

RAISIN’ THE LAUGH BY DONNA RHODES
Throughout his life, Highlander Bill Dwyer was a tireless fount of ideas and gentle humor.
I
’m convinced America needs to laugh more. Paraphrasing Steve Martin, “all world leaders should play banjo.” You simply can’t play a troublesome tune on a banjo. If Kim Jong-Un got off a plane playing “Cotton-eyed Joe” and met Trump on the tarmac rockin’ “Foggy Mountain Breakdown,” imagine the lead line on Fox. Over the decades Highlands created its own formula for raising the laugh bar, namely, make the town so inviting it will attract the greatest of minds and funniest of people. Bill Dwyer, a nationally syndicated comic strip artist who retired to Horse Cove was among those drawn to the light. Dwyer’s career began at age 12 when he sold his first cartoon to a national publication. From his teens through Yale graduation his work appeared in Colliers, Judge, Life, Saturday Evening Post, Cosmopolitan, and the New Yorker. He was a conduit of inventiveness. His comic strips, “When Mother Was a Girl,” “Dumb Dora,” and “Sandy Hill” were successful syndications, spanning the 1930s through the 1950s, ap-
pearing in over 400 newspapers. He worked for “The Mouse” several years, helping direct blockbusters like “Bambi,” “Pinocchio,” and “Fantasia.” Paramount Pictures hired him to interview actors and actresses in New York to write their personality profiles. Actors and writers cooed over his personal portraits, among them Will Rogers, Rudy Vallee, John Ringling, Sinclair Lewis, Leopold Stokowski, Babe Ruth, Dizzy Dean, and scores more. When it came time to retire, he settled in Horse Cove, replacing the rat race for cattle and hogs. Retirement didn’t last long. He created an Asian arts correspondence course. Later he and his wife authored and illustrated books on speaking and cooking “Southern:” Dictionary of Yankees and Other Uneducated People;” “Things Yankees Don’t Know;” “Southern Sayings for Yankees and Other Immigrants;” and “Southern Appalachian Mountain Cookin’.” He even found time to invent kitchen appliances and run a business.

uring this time of holiday cheer, celebration and love, Jackie Medland, PhD, RN, the president and chief nursing officer of Highlands-Cashiers Hospital, is counting her many blessings. She, like so many others who have moved to the Plateau, is thrilled to wake up each morning and bask in the idyllic beauty of the mountains. Medland arrived from the Chicago metropolitan area nine months ago, and said she feels extremely fortunate to live and work here, every single day. She counts the care team across the hospital, Eckerd Living Center and clinics, as one of her greatest gifts. Medland, having spent most of her professional career in much larger hospital settings, sees the staff’s commitment to the community on a daily basis. “Their intentions are so pure and they

This allows small community hospitals to access high quality, comprehensive resources that would otherwise be cost prohibitive, which is vital for a Critical Access Hospital like ours. care on the Plateau. “I’m personally willing to work hard to see that we continue to engage the hearts and minds of, not only the staff, but the community, as well,” said Medland. She encourages everyone to bring their concerns to her. There will be forums scheduled in Highlands and Cashiers during the upcoming year, and she hopes to use these to share the excitement and rekindled joy she feels when looking toward the future. Medland extended her best wishes, “On behalf of the entire team at Highlands-Cashiers Hospital, the Eckerd Living Center and the affiliated practices, I want to wish everyone a joy-filled holiday. I hope the spirit of the season will bring everyone closer to those they love. And don’t forget, we will always have our doors open should you need us.”

THE MAGNIFICENT YOU BY DR. SUE AERY AERY CHIROPRACTIC & ACUPUNCTURE
The abilities of the human body are truly miraculous, but you need to do your part.
H
ave you ever watched a wound heal and wondered, how does that happen? We take so much for granted inside and outside of the body, but do we really appreciate the magnificence of the human body? Well, I have to say that I am constantly amazed at the innate capability of the body with its nervous system, gut, organs, blood vessels, miles of capillaries and so much more! We are designed to last! We are designed to heal and improve over time whether we are faced with setbacks, injury, trauma, virus, disease, or just living on
a daily basis, gently aging through time. The body has trillions and trillions of cells, organs that are meant to be fail safe and bones and muscles to support us against gravity. How we treat our body changes the story. Eating too much or eating poorly will put more strain on the body’s natural abilities. Alcohol and drugs (even Rx) challenge the natural course of function. Too much or too little exercise can also create a burden on the heart and circulatory system. As you can see, even if we are not perfect or don’t truly understand the magnifi-
cence of what we are born with, we still rely on these beautifully designed systems to work like a symphony every minute of every day. Every day, I recommend that my patients understand and respect the amazing capability of the body to heal and stay healthy. Just think of it this way – performance is how we function every day, no matter what our age. Prevention comes from how well we understand and treat our body on the inside and the outside. How much do you want to thrive in life? Perhaps the answer begins with understanding the gift of life.

olfing. This peculiar word has reverberated through the alternative and holistic health field for nearly a hundred years. Although many people have experienced the benefits of Rolfing, many more are curious because they have heard about it since the 60’s. More than an unusual word, it’s a person’s last name – a woman – Dr. Ida Pauline Rolf (1896 -1979). Influenced by Einstein’s 1915 Theory of Relativity that defined gravity for the modern era, Dr. Rolf instinctively went to work incorporating this preeminent idea of physics into elevating the human condition. She is credited with the initial research of gravity having an impact on human health. According to Einstein, gravity curves the fabric of time and space. Gravity determines our shape; our physical shape often determines how we feel about ourselves. Dr. Rolf created Structural Integration and refined how we can use our hands to reshape another person’s body into better alignment with gravity. Dr. Rolf was the first woman to receive a
Ph.d in Biochemistry from Columbia University in 1918 (three years before suffrage) and then a degree in Atomic Physics and Mathematics from the University of Zurich in 1923. A thought leader of her time, her philosophy pioneered this concept: Balance of the human form and resulting integrated movement will support a balanced outer life and new positive patterns. Storytelling about Dr. Rolf is alive in our Rolfing trainings. She would be excited about women’s role in society today. Aside from being stereotyped as the more caregiving and nurturing of the sexes, women are on the rise throughout all facets of modern life. Today women fly A-10 Warthog Tank Killers in Afghanistan, command and fight in Marine tank brigades in Iraq, and lead Fortune 500 Companies. In my opinion Dr. Rolf is one of the reasons that “modern woman” exists. After studying her alignment principles with hundreds of clients in the scope of bodywork and self-development, the Rolf Method has proven to empower positive healthy change.

FINANCIAL FOCUS BY MARY BETH BRODY | EDWARD JONES FINANCIAL ADVISOR
During the Holidays, be extra vigilant about protecting financial data.
T
he bustle of the holiday season offers plenty of opportunities for hucksters and financial fraudsters. There are some simple steps you can take to protect yourself and your precious assets. To help achieve your long-term goals, such as a comfortable retirement, you should save and invest regularly. But that’s only part of the picture. You also need to protect your financial assets in various ways. One such method is guarding your personal information – especially any information that could be linked to your financial accounts. It’s obviously important to be vigilant at any time, but you need to be even more on your toes during the holiday season, when fraudsters are particularly active. So, to help keep your important data under wraps during the holidays, consider these suggestions: • Extend your protection to all mobile devices. Identity thieves can now compromise your mobile devices by installing spyware that steals usernames, passwords, and credit card information. Fortunately, you can fight back. By doing a little research online, you can find the best mobile security software for your needs. • Use multiple passwords. Online security
specialists recommend that you use different passwords for each new online shopping site you visit during the holiday season. Although this might seem like a hassle, it can be helpful, because even if identity thieves were to grab one of your new passwords, they still couldn’t use it for other sites you may visit. And you can even find a free online program that can help you keep track of all your passwords. • Be suspicious of “huge savings.” It happens every holiday season–identity thieves develop fake sites with attractive graphics and stunningly low prices on a variety of items, especially digital devices. If you fall for these pitches, you won’t get any merchandise, but you might get a handful of headaches once the bad guys have your credit card number and other personal information. To prevent this, be wary of any deal that sounds too good to be true, and do some digging on the websites that offer these mega-savings. • Watch for fake shipping notices. During the holidays, when you may do a lot of online shopping, you will probably receive some legitimate shipping notices. But the bad guys have gotten pretty good at generating fake notices designed to resemble those from UPS, FedEx, and even the U.S.
86 | December 2017 | thelaurelmagazine.com
Postal Service. If you were to click on the link provided by one of these bogus notices, you could either take on some malware or get taken to a “phishing” website created by the shipping notice forgers. Your best defense: Only shop with legitimate merchants and only use the tracking numbers given to you in the email you received immediately after making your purchases. • Keep your Social Security number to yourself. As a general rule, don’t give out your Social Security number online – to anyone. No legitimate retailer needs this number. Finally, be aware that not all attempts at stealing your personal information will come online. When you’re out shopping at oldfashioned, brick-and-mortar stores, consider bringing just one credit card with you – and protect that card from prying eyes. By following these precautions, you should be able to greatly reduce the risk of being victimized by identity thieves and other miscreants. And the more comfortable you are in doing your holiday shopping, the more you can enjoy the season. This article was written by Edward Jones for use by your local Edward Jones Financial Advisor.

HUSTLE DOWN TO THE HUDSON BY EMILY CROWELL
Highlands may slow down a bit during the Off Season, but Hudson Library doesn’t hibernate – not by a long shot.
W
ell, winter is upon us. Highlands’ population has noticeably shrunk, with some businesses closing for the season and our warm-weather friends migrating to the South. Luckily, Hudson Library is still open five days a week and is offering more services than ever to patrons of all ages. Public school students in Highlands now have library accounts through Fontana Regional Library’s StudentAccess program. All the kids need to know in order to use their new account is their student ID number. Through this partnership with public schools in Macon, Jackson, and Swain counties, students can check out up to 10 books and/or e-books at a time and will accrue no overdue fees for anything returned late. What an incentive to
read! Hudson Library is always looking for new ways to welcome the community’s youth through the doors and into the stacks, and StudentAccess is already proving to be a big help toward achieving that goal. Another new service being offered by Fontana Regional Library, of which Hudson is a part, is access to the Kanopy Streaming Movie Library. Your library card number allows you to access over 30,0 0 0 movies and documentaries, including classics, independent movies, and foreign films that you won’t find for free with ease anywhere else. All you need is a library account and access to the internet to stream films on your computer or mobile device. I’m not much of a moviewatcher myself, but I have already
watched a couple of Kanopy videos at home when I’ve needed a diversion, and I can attest that it’s pretty cool to be able to have access to such a diverse collection on a whim. It’ll also come in handy if we end up getting snowed in for a few days this winter! Kanopy can be accessed at fontanalib.kanopystreaming. com and if you have any trouble, call or visit the library for help, as always. Hudson Library is located at 554 Main Street and can be reached by phone at (828) 526-3150. If there’s snow or ice on the road, it may be a good idea to call ahead or check for updates on their Facebook page (facebook.com/HighlandsLib) to confirm that the staff were able to make it to work before you plan a trip to town just to visit the library.

THE BOAR’S HEAD BY DONNA RHODES
Who invited those boars? Feral swine have earned a nasty reputation in our local woods.
I
f you’ve ever attended a Madrigal Dinner, no doubt you heard the traditional “Boar’s Head Carol.” In Medieval times a boar was sacrificed and roasted on a spit. The head was placed on a silver platter to be paraded at the Yuletide Feast while carolers sang the following: “The Boar’s Head in hand bring I Bedeck’d with bays and rosemary And I pray you my masters, be merry Quot estis in convivio (as many there are in the feast).” Descendants of that 16th century wild boar have found their way to about 40 states, among them North Carolina. We aren’t singing their praises anymore, for they have become a nuisance, plowing through farmer’s fields destroying crops. Even worse, equipped with razor-
sharp tusks and a nasty disposition, they could play havoc with any man or beast they happen upon. Just ask Bruce Florence, a hunter who came nose to tusk with a galloping 701-pound boar in the woods of Jackson/ Transylvania Counties. He chuckled and said, “I thought I done filled one of my boots up. It scared the fool out of me.” Luckily the boar veered away from him in the last few yards of his charge, giving Florence a clean shot. North Carolina’s wild boar population was introduced in the early 190 0s when European boar were released in Graham County for hunting sport. Some escaped and bred with domestic hogs. Feral swine and domestic pigs are the same species. The feral swine problem is now so wide-
spread hunting them is open season. The Wildlife Commission states, “As the range and destructive nature of feral swine has expanded, management efforts have changed from managing a game species to attempting to contain and control the spread of a destructive species across the landscape.” Of all the animals in North Carolina, few have such a deplorable reputation. We’re reminded of an age-old lesson: Don’t introduce non-native plants and animals into our environment. We can’t save its bacon and it may thrash ours. If you’re having problems with destructive feral swine, call USDA Wildlife Services. They will trap and remove them for free. For more info about North Carolina wildlife, visit ncwildlife.org.

SAVED BY A DONUT DUDE
BY DONNA RHODES ILLUSTRATION BY NORMA JEAN ZAHNER
A random donut shop encounter reveals the state of the Universe. We’re all in trouble.
Y
esterday was my buddy Bobbo’s birthday. I stopped at a donut shop to get him a fancy coffee and fritter. A young attendant nervously approached the counter, eyes as glazed as the donuts shelved behind her. She mumbled, “What can I get you?” I asked if she had any fritters. “Whut?” she asked, finger twisting her hair, her other hand fumbling around the register. “A fritter, preferably apple,” I replied. It was clear she didn’t know a Boston Creme from a Long John, though I suspect she was remotely familiar with the latter. “Jah-osh, do we have any …fritters?” she asked. Josh walked over to the racks, pointed to the fritter tray, and said, “You mean these?” “Oh, yuh, I guess so,” she replied.
Having established she was fritter-challenged. I shifted from an elaborate latte order to a large coffee with cream/sugar on the side. She went to the register to ring up the fritter and coffee. After successive failures, the light dawned. “Omigod! I forgot to sign-in on this register!” Shock. “Jah-osh!” she yelled. “I’m totally not signed-in!” Once again, Josh ran to the rescue, pressed a couple of keys, then rushed back to his drive-thru duties. She punched another key then yelled, “Jah-osh, where is the fritter button-thingy?” “Hit other,” he yelled. “It’s a specialty item.” “Rully?” she said, then hit other, studied it,
90 | December 2017 | thelaurelmagazine.com
shrugged her shoulders, and hit total. Luckily the register did most of the thinking for her. I told Bobbo the harrowing tale when I got to his house. He said, “You know my conspiracy theory, don’t you? The one about 9/11? While the terrorists were busy crashing into buildings, all our attention was directed to New York and D.C. When we weren’t looking, other terrorists released vats of stupid into our drinking water, thus numbing and dumbing America.” That’s a chilling thought, but it does explain the incomprehensible array of donut diner ding-dongs and Capitol Hill ho-hos. Josh, if you are reading this, you may be the last one in America who knows how to work stuff. Make a beeline to Washington and start pushing buttons. Please.

TIRELESS WIRELESS BY LUKE OSTEEN
Albert Carlton-Cashiers Community Library will take a little time off for Christmas, but patrons and guests will enjoy the same level of service throughout the month.
A
lbert Carlton-Cashiers Community Library will be closed for the Christmas holiday, December 23-26. That gives the staff a little time to be with their families, but they’ll be back and ready to serve the public on Wednesday, December 27. But, if you’re a local resident or someone who spends a good deal of time in the neighborhood, here’s the thing to keep in mind – the library always maintains a strong, reliable wireless signal. That means that if you’re at home and you don’t have access to the internet (because that’s just
what happens around here), you can come to the ACCCL and get online, even when it’s closed. You can sit in your car in the parking lot or (if the weather isn’t too cold for you) in the library’s covered garden, and do your internet thing. It’s easy, free, and there’s never a password needed. That last bit of information means that even if you’re not a library patron or local resident, even if you’re just a Laurel reader who’s passing through, this service is open for you, around the clock. Of course, when the library is open, you can come in and use its desktop comput-
ers or laptops. The library can help you with your printing and copying needs, and there’s a free notary public on hand for legal issues you may have. The Friends of the Library maintain a remarkably complete used Book Store (within the library) loaded with fiction and nonfiction hardbacks and paperbacks, CD books, DVDs, music CDs and, always, unexpected odds and ends. It makes for a fun and easy browse. It’s a perfect stop for your holiday gift-giving plans. Just don’t come when the library is closed. Or December 23-26.

THE DICKENS YOU SAY BY WILEY SLOAN | PHOTOS BY MARJORIE CHRISTIANSEN
Stewart Manning’s Christmas Village is an eye-popping testament to patience, ingenuity, and a healthy dose of imagination.
T
he twinkling lights of houses illuminate the gently falling snow of the alpine village. The whistle of the train pierces the air as it traverses the rugged hillside. The sounds of Christmas carols float above the holiday shoppers. Can there be anything more heart-warming than this Dickens-inspired scene? You’re not in New York or Zurich. You are in a home in Highlands Falls Country Club looking at the creative genius of Stewart Manning – a man of many talents. A child’s coloring book or a set of paints weren’t enough for Stewart. As a youngster he recalls turning the sandbox in his grandparent’s yard into a major battlefield with breastworks and barricades created from whatever lay near. The armies were bottlecaps – different brands represented each side. In the eye of a young man, this creation was as good as those of any of Hollywood’s best production designers. As Stewart grew, so did his talents. Even while raising a family and running a successful business, Stewart found time to put his creative talents to work. He fondly recalls the hours spent with his young children, building small neighborhoods to fulfill the children’s fantasies. A piece of plywood, a shoebox house, construction paper trees – crude yet meaningful in the eyes of the youngsters. As the owner of a food service company Stewart’s talents generated detailed kitchen designs complete with a full line of equipment to support his client’s needs. A
few years ago, after he had retired, the seven Dickens Village shops that had sat mostly unnoticed on his mother-in-law’s bookcase beckoned him to explore his love of Christmas. That simple city neighborhood has now grown to fill an entire room. As your eyes scan the room you see the Empire State Building piercing the sky, a trolley ambles down the street between the Majestic Theatre and the dress shop with a mannequin turning slowly in the display window. Radio City Music Hall and a multitude of houses and shops are intertwined among trees strung with twinkling lights. Snow sits gingerly on the mountain tops far in the distance. Houses climb the hillsides. Stewart feeds his creative genius by searching the internet and by visiting various hobby shops in the area to see what is available. It’s amazing what an artist can do with styrofoam, a little paint and glue and a huge amount of talent. You really must see this artistic endeavor to fully appreciate the magnificence of this creation. Hundreds of plugs are hidden beneath hills and dales, behind closed doors and under train tunnels. Stewart’s wife Brenda laughs when we ask how much time and energy he has invested here. “It keeps him occupied” is all she can say. When Stewart is not playing bridge, not visiting children and grandchildren or visiting the hobby shops, you can generally find Stewart “in his room,” finishing an update to The Christmas Village.

VOLUNTEER SPOTLIGHT ANN CAMPBELL
STEPPING OUTDOORS WITH ANN BY JENNY KING
Ann Campbell’s passion for the natural world helps to fuel the Highlands Plateau Audubon Society’s vital mission.
A
nn Campbell is a lifelong learner and is passionate about encouraging everyone to learn more about the world around us. This is why she is a volunteer with the Highlands Plateau Audubon Society, celebrating it’s 20th Anniversary this year. Before retirement, Campbell was a science educator and feels it is vital for people of all ages to step out of doors and experience the natural world. That is why she is the Education Chairperson for our local chapter of the international Audubon Society. She was deeply moved by the book “Last Child in the Woods” by Richard Louv, after having lived in Atlanta and witnessed how infrequently children in large metropolitan areas get to simply walk in the woods. There are many local Audubon programs available to children that stimulate curiosity about nature. As a matter of fact, they were able to see 653 students during this year alone. In April the local Audubon Society chapter, along with Mountain Wildlife Outreach, co-sponsored the Wings to Soar program on April 20, in celebration of Earth Day. In May Campbell and Michelle Styring went to Cullowhee to participate in the International Migratory Bird Day Festival,
sponsored by Balsam Mountain Trust, and members of the local chapter participated in Mountain Wildlife Days, this past July. They also work closely with Cashiers and Highlands Rec Camps, the Boys & Girls Club of the Plateau, and various international student programs as well as Blue Ridge School, Highlands School, and Summit Charter School. Ann’s enthusiasm for our local chapter is contagious. “When I retired, I wanted to learn more about birds,” she said. “I’m not an expert, but Nesting site of a Yellow-Bellied Sapsucker Woodpecker. there are many experts in our The woodpecker nests in a large cavity of a deciduous chapter. A MOST WONDERFUL TIME BY SUE BLAIR CARPE DIEM FARMS
The Christmas Season is a a time of reflection and gratitude at Carpe Diem Farms.
I
t’s been a blessed year at Carpe Diem Farms. Christmas has come early in several ways. Nearly five years have passed since we added to our farm family. Our newest resident, Ellie Mae, is a five-pound bundle of energy who brings lots of joy to our daily life. The three-year-old Yorkshire Terrier rescue has made herself right at home with the other two dogs, two cats, and nine horses. She’s been busy making lots of friends as she travels about. For those of you following the horses and the journey of Easy’s Slipper, we have lots to share. For 35 years, David Compton has been the owner/operator of the
Old South Carriage Company in Charleston, South Carolina. His desire to provide the best for his herd of 30 Percheron and Belgium Drafts led him to invite us to put slippers on his horses. We traveled to Sugah Cain Plantation on John’s Island, where the horses reside when not in the historic district, to work with their farrier on how to install the slippers. The goal is to have slippers on all 30 of the working herd after the road test on the first five. The slippers will provide the horses with protection for their hooves, shock absorption, and shock vibration dissipation, as well as joint, back and hip support. We’ll keep you posted.
Our attendance at regional and national veterinarian conferences has enabled us to share the story of the horses of Carpe Diem and the development of the slippers, expanding usage across the U.S. and Canada. Three new patents have been filed and accepted, launching the “Performance Line.” The University of Florida slipper study is in the third and final stage, with completion and publication in February. We hope that your December is most wonderful too! Merry Christmas and a very Happy New Year from all of us at Carpe Diem Farms, a 501c3 experiential educational foundation.

Both of these branches have committed mentors who decided to “start something” special and join our efforts to positively impact a child’s life. When a mentor is matched with their Little, they are provided with ongoing activities, training, and support services to help build a strong and enduring connection. Bigs (mentors) and Littles (mentees) both gain a lot from the experience in terms of their friendship. Tony is a sweet old beagle that somehow ended up at our local county shelter a number of years ago, but was lucky enough to move from there to the Forever Farm. He loves that he can live in a “pack,” yet has all the comforts of a family pet. His favorite pastime is running around in the yard with one of his many toys. His new buddy, Jack, a terrier pug mix, arrived just a few months ago when his “mom” had to move to a senior’s apartment which could not accommodate her dog. That situation is usually very sad for a pet, but Jack adapted quite well. He had always lived in an apartment and had to be walked on a leash. Now, his

Twenty-four dogs and puppies from hurricane-ravaged Puerto Rico have been given a new leash(!) on life.
O
n October 19, the Cashiers-Highlands Humane Society joined forces with three other animal welfare organizations creating a four-state response to help rescue dogs from Puerto Rico. Joining CHHS from North Carolina was the Atlanta Humane Society (Georgia), Nashville Humane Association (Tennessee), and the Charleston Animal Society (South Carolina). All four groups met in Atlanta to greet a very special plane arriving from Puerto Rico carrying precious cargo – 118 Hurricane Maria canine survivors. The CHHS Animal Rescue Team arrived back at the shelter in Sapphire at 1:00 A.M. on Friday, October 20, with 24 dogs and puppies. After full medical check-ups and spay/neuter, all the Hurricane Maria survivor dogs were ready for adoption into their new forever homes. Of the estimated 14,000 animal shelters and rescue groups nationwide, CHHS is one of only 350 in the United States who has been designated as an Emergency Placement Partner with the Humane Society of the United States. This is the latest rescue by CHHS to help save animals suffering in illegal puppy mills, cruelty and hoarding cases, and natural disasters. Previous deployments by the CHHS Animal Rescue Team helped save the lives of animals in need in Georgia, Tennessee, Alabama, Mississippi, and throughout the State of North Carolina. Kimberley Alboum, Shelter Outreach and Policy Engagement Director for the Humane Society of the United States, has
been in Puerto Rico since the first days after the hurricane David Stroud and had this to say about the animals being rescued by CHHS: “Amid the devastation to Puerto Rico, it is incredible to see our stateside coalition of shelter partners bring these wonderful animals into their programs. This flight would not have been possible without the Cashiers-Highlands Humane Society team and we are so grateful for their commitment to animals locally and nationally.” “The humanitarian crisis in Puerto Rico is unfathomable,” said CHHS Executive Director David Stroud. “And as humans suffer, so do the animals entrusted to their care. Hurricane Maria may not be the top story on the evening news anymore, but if anything, conditions there are worse than ever. We were honored to join forces any national animal organization. The holiday season is the perfect time to reflect upon the vital work undertaken by the Highlands-Cashiers Land Trust.
S
itting on Santa’s, lap you muster up all your courage and whisper what you hope to receive under the tree this year even though you’re kind of freaked out that his beard is so big and his elves are hovering over you like cheerful yet slightly intimidating bouncers at the gates of the North Pole. Ah, the giving season is here! If you’re like most people, you put a lot of thought into the gifts you will bestow to your children, your friends, and your favorite sales clerk, but have you really thought about the gifts that you receive on a daily basis? For those of us who are fortunate enough to call these mountains home, we may not
always take the time, especially during the hustle and bustle of the season, to recognize the gifts we receive all year long from the mountains themselves – critical things like clean air and water, healthy habitat, places for recreation and a source of economic sustainability. Thanks to those who support HighlandsCashiers Land Trust, we are able to protect the air and water quality these mountains provide as well as the healthy habitat which all who live here depend on. The mountains also provide abundant recreational opportunities for hikers and those who simply seek respite by way of a calming view. And all of these elements are key to one of our top in-
dustries that many of us who live here depend on – tourism. Your Land Trust works year-round to be good stewards of these precious, life-giving gifts our mountains provide. We depend on you and your tax-deductible contribution to help us fulfill our mission of protecting valuable land resources for all generations. And we don’t have any overbearing elves to contend with. To become a member and learn how you can help save mountains, visit www.hicashlt.org or contact us at info.hitrust@ earthlink.net or (828) 526-1111. From our Land Trust family to yours, “Happy Holidays and best wishes for the New Year!”

GIVING BACK
FEEDING THE NEEDS BY MARTY ROSENFIELD | THE FOOD PANTRY OF HIGHLANDS
Marty Rosenfield
Even as its needs increase, The Highlands Food Pantry is seeing a dramatic cut to its steady supply of food.
T
he Highlands Food Pantry is a partner agency with MANNA Food Bank of Western North Carolina, all being part of the federally funded Feed America Program. Unfortunately, with the current natural disasters that have affected various parts of the country, we are finding our once-steady supply of food being cut back at a time when our local needs are rising. We have seen a steady increase in the number of our weekly clients, as the country clubs and other seasonal employers are cutting their staffs back or closing for the winter. Our clients in the county are facing increased food scarcity on a daily basis and with winter approaching, things will only get more critical. We are in need of personal items, like soap, shaving cream, deodorant, shampoo, feminine hygiene items, besides the everyday food and necessities. We have been blessed by an outpouring of financial assistance from individuals, Family Foundations, and local aid organizations. Times are getting more critical and we’re reaching out as our needs have increased. I’d like to take this opportunity to thank everyone who has helped us during this year of transition. Thank you to the fantastic and devoted network of volunteers: those that help distribute food on Mondays, those that come in and bag rice and beans, those that stock the shelves, and those happy
free-spirited truck unloaders who come out rain or shine to unload the various truck deliveries. Thank you to our partners at the Highlands United Methodist Church for providing a fabulous new space, rent and utilities at no charge. Thank you to the church pastors, trustees, and congregants for being truly supportive of our common mission here in our community. Thanks to Mike Bryson for performing his magic and making the move happen as he had envisioned, and to all who arrived on our moving day and made a difficult day so much easier. Thank you to the Episcopal Church of the Incarnation for hosting A Food Pantries Christmas on December 2 and to the First Presbyterian Church of Highlands for hosting our Empty Bowls fundraiser. It is thanks to the their hardworking staff and the potters from The Bascom that the event was hugely successful. Thank you to Dr. Sue Airy and Deborah Berlin for our Tower Garden Community Garden and to both Rotary Clubs for their support over the holiday season. I want to give a huge thank you to Andrea Smith, our administrative assistant at The Friendship Center, who will say “yes” to whatever is needed, and to the Friendship Center Board for their support. Finally, I want to extend a personal thank you to each and every person who has reached out and helped The Highlands

A PARK FOR THE PEOPLE BY ANN SELF THE VILLAGE GREEN
The Village Green is a perfect reflection of the culture and the natural beauty of Cashiers and its surroundings.
F
or 25 years, The Village Green has been a park for the people. The founders set out to create a free, public space that would enhance the community’s mountain lifestyle. Since that time, residents, and visitors to the Cashiers area have benefited from this shared public green space. The Village Green is celebrating its Silver Jubilee Anniversary as a vibrant 13-acre park in the heart of Cashiers for everyone to enjoy. The Village Green attracts thousands of adults and children each year. People come from all over the region and across the country to play on the large lawns and garden areas, view amazing public art, traverse the lush woodland and wetland trails, and play in the large children’s playground,
the Village Play. Dogs and their owners especially love the meandering paths for walking in The Village Green. The Village Green endeavors to directly and positively have an impact on Cashiers’ image. Community events in The Village Green provide a window into the pleasurable pursuits and traditions that make Cashiers unique. Whether it’s an open-air concert, an educational program highlighting unique natural and cultural features of the area, celebrating the holidays, birthdays and other special occasions with family, sharing a picnic with friends, or simply sitting in the shade, everyone has a different reason why they love The Village Green. This landmark is a
treasure for the entire community. Despite its tremendous popularity, few people realize that The Village Green is not a government-funded park. The Village Green is a public park conserved and managed by a private non-profit 501c(3) organization that depends on the financial support of individuals to help fund all of the fun and interesting activities as well as maintain the park for everyone to enjoy. Please consider a generous year end, tax-deductible gift to The Village Green. Donations can be made online at www.villagegreencashiersnc.com or mailed to P.O. Box 2201, Cashiers, NC 28717. BIZ SPOTLIGHT
CRANK UP YOUR CAMERA BY DONNA RHODES | CYNTHIA STRAIN’S WINNING PHOTO ABOVE
If a picture is worth a thousand words, the Highlands Chamber of Commerce’s latest social media plan is elegant poetry.
I
n the past few months, Highlands Chamber of Commerce members have been bubbling with excitement over their new branding strategy. By hiring a specialized team to tweak their ideas, including adding a social media component, the members were able to expand and improve the chamber’s core concept. It’s one thing to know social media makes communication instantaneous. It’s another thing to determine how that benefits the town of Highlands. As an example, consider a rock star. They tweet their latest buzz. Fans respond in seconds, registering instant data to guide agents, promoters, record companies, etc. Social media is an immediate, universal litmus test. It’s also a phenomenal advertising tool. But will
it work here? Carolyn Higgins, Director of Marketing and Communications, has been hard at work implementing that social media building block. She says, “Photos help showcase the spirit of Highlands and all we offer in dining, lodging, shopping, music, festivals, and outdoor activities. It is just a small expression to inspire others to make the most of the life here and to come and experience it.” Telling potential visitors and clients about the town is good, but showing it is a hundred times better. Using social media, a photo contest was organized. At the end of August e-blasts were sent to chamber members. Facebook was employed. Two weeks in it caught fire. By September’s end, thousands of views
104 | December 2017 | thelaurelmagazine.com
were registered and over 10 0 likes. Of the three contestants, Cynthia Strain, Stan Cochran, and Pat Allen, Cynthia’s entry received the most votes. She received a $25 gift certificate redeemable for merchandise in the Visitor Center. The contest was so successful that it launched a series of competitions, some of which will extend to the public. Higgins is optimistic, saying, “We hope the chamber’s vamped up social media campaign will serve as a model for more local businesses to combine their passion for community and the power of social media.” To learn more about chamber activities, especially photo contests, crank up your camera and call (828) 526 -2112 or visit www.highlandschamber.org.
