ore than 150 million citizens cast their vote at the polls on November 3, in a historic participation day for the American people. In Washington, Congress met on January 6 in a solemn joint session between the House of Representatives and the Senate to certify the election. It was a formal procedure, since under the federalist system of the United States, the states have the full authority to hold and validate the presidential elections. But a handful of Republicans, led by Texas Senator Ted Cruz, starred in a sad spectacle contesting the validity of the results in various states of the country, in an effort to please the president and wink at the most Conservatives of the electorate, with a view to the presidential elections of 2024. Worse still: Hundreds of Trump supporters invaded the Capitol building. It is not only an unacceptable act of intimidation, but possibly an act of sedition. It is sad and unfortunate that a group of Americans has sought to delegitimize the triumph of Joe Biden and his vice president Kamala Harris, the first woman of color to hold that important position, for the simplest personal political interests.

The president and his followers had the opportunity to present their case in court to prove the existence of a robbery and they lost. His failed strategy to disregard the majority will of American voters can only be described as a national embarrassment. Fortunately, many Republicans refused to join the charade.

At noon on January 20, Joe Biden and Kamala Harris will be sworn in as President and Vice President of the United States of America and Trump will be remembered as a loser who tried to sabotage the longest-standing democracy on the planet.

ENGLISH Consider these top Mexican food trends for 2021 according to Sánchez, Lopez and Gomez along with findings from a survey conducted by OnePoll on behalf of Cacique:

• The bread baking craze of 2020 will now include homemade corn and flour tortillas with 55% of Americans reaching for masa harina, flour and tortilla presses to make their own.

To find more trend-inspired recipes, visit caciqueinc. com. Chorizo Ragu with Cheesy Toast Recipe courtesy of chef Aarón Sánchez • 3 bolillo-style rolls or 1 long baguette • 2 tablespoons olive oil • 1 yellow or white onion, chopped • 2-3 carrots, chopped • 1/2 teaspoon salt • 6 cloves garlic, divided • 8 ounces white or cremini mushrooms, chopped • 2 tablespoons tomato paste • 1 tablespoon dried oregano • 1 teaspoon ground cumin • 1 1/4 pounds ground beef • 1 package (9 ounces) Cacique Pork Chorizo • 1 can (28 ounces) crushed or pureed tomatoes • 6 tablespoons unsalted butter, softened • 9 tablespoons Cacique Crema Mexicana, plus additional for serving • 1 1/2 cups crumbled Cacique Ranchero Queso Fresco • Preheat oven to 400 F. Halve bread lengthwise. In heavy-bottomed pot, warm olive oil over medium heat. Add onions, carrots and salt then cook, stirring occasionally, until vegetables just start to soften, 3-4 minutes. Mince 2 garlic cloves and add to pot with mushrooms; cook about 3 minutes. Use spoon to push vegetables to edges of pan then add tomato paste, oregano, and cumin to center of pan; sauté until fragrant, 1-2 minutes. Increase heat to high and add beef and pork chorizo. Break meat up with spoon but don't over-stir. When beef is no longer pink, pour in tomatoes and bring to simmer. Decrease heat to medium-high and let simmer, stirring occasionally. While ragu simmers, use fork to mash or whip butter with crema until smooth. Mince or finely grate remaining garlic cloves then stir into crema mixture. Spread crema mixture evenly over bread, trying to cover as much area as possible. Sprinkle crumbled queso fresco all over and place bread on rimmed baking sheet, cheese side up. Toast 4-5 minutes until cheese is melted and bubbling. Finish under broiler 30-60 seconds for deeper browning, if desired. Cut bread into individual portions. After about 20 minutes of simmering, ragu should thicken and flavors meld. Swirl in additional crema then serve ragu in bowls with cheesy toast or ladle over pieces of toast.

anuary is Glaucoma Awareness Month, a great opportunity to spread the word about a disease that affects more than 3 million people in the United States. Since glaucoma often strikes without symptoms and can cause significant vision loss before a person notices changes in their eyesight, it's critical to learn what you can do to protect your eyes. Taking steps to protect your vision is more challenging this year because of the continued impact of the COVID-19 pandemic on our daily lives. January is also typically a time of flux in health insurance coverage with plan changes, deductible and co-pay resets, and prescription plan updates. However, despite these challenges, protecting your vision should remain a priority. Here are three things you can do to take control of your eye health this month. 1. Schedule an annual eye exam Early detection and treatment are paramount to managing glaucoma and other vision-threatening conditions. That's why it's critical to have an annual eye exam, particularly if you're over the age of 40. Since some forms of glaucoma are inherited, it's also important to talk with family members to see if there is any history of the disease within your family. It may not be something your family members have talked about before! This will be valuable information to share with your eye doctor during your exam. "Glaucoma Awareness Month is a great time for a candid conversation about glaucoma within your family," says Tom Brunner, president and CEO of the Glaucoma Research Foundation. "If you have a family history of glaucoma you may be at higher risk for developing the condition. The earlier glaucoma is detected, the more manageable the disease may be to treat." 2. Maintain your current eye care plan While the pandemic has caused many people to consider delaying in-person medical appointments, it's very important to keep scheduled office visits if you have been diagnosed with glaucoma. Your eye doctor needs to see you periodically to ensure that your vision is stable and adjust your treatment plan if needed. If you are concerned about the safety of in-person office visits, you may be pleasantly surprised by the comprehensive steps your eye care pro-

vider has taken to help keep you safe. When you make your appointment, the office staff will let you know about any new safety protocols and requirements. "Social distancing and other protective measures are changing the in-office patient experience," says Dr. Richard Lewis, a practicing glaucoma specialist and chief medical officer at Aerie Pharmaceuticals. "Among the steps we have taken at my practice are plastic shielding on the instruments, requiring staff and patients to wear masks, and minimizing waiting room and exam room 'chair' time." It's also important to continue taking prescribed medications as part of your ongoing glaucoma care. One common reason why people stop taking their medications is because of the cost. The key is to understand your prescription benefits, particularly what medicines are covered, as well as when annual deductible resets and co-pay adjustments occur. When filling your prescriptions, it may also help to shop around. The price for a medication can vary from one pharmacy to the next, with preferred pharmacies associated with your health plan usually offering the more competitive price. If you are on a Medicare Part D drug plan that doesn't cover your medication, your doctor may be able to submit a prior authorization to allow you to get it. In addition, if you have commercial insurance and are taking a brand medication, the pharmaceutical company may be able to assist you financially in the form of prescription savings programs. 3. Understand your treatment options Ongoing scientific research and clinical development in the field of glaucoma have brought forward an array of new medical interventions. In fact, today your eye doctor has more options to treat glaucoma and provide personalized care than ever before. Become your own advocate by learning about all the treatment options that are available and discussing your specific needs with your doctor. A valuable starting point is "Understanding and Living with Glaucoma," a free booklet published by the Glaucoma Research Foundation. It can be downloaded or ordered at www.glaucoma.org/ booklet. The foundation's website also offers a wealth of resources to help you take control of your eye health during Glaucoma Awareness Month and beyond.

illions of people nationwide face hunger. And the COVID-19 pandemic has thrust even more Americans into this vulnerable position. Before the COVID-19 crisis began, one in nine people, including 10 million children, already lived in a food insecure household. Communities of color are disproportionately affected by both poverty and hunger. For example, one in four Native American and Alaska Natives experience food insecurity. One in five Blacks and one in six Latinos experience food insecurity. As a result of the pandemic, unemployment has soared and the need for food assistance has increased. More families are accessing food banks than ever before, and many of them for the very first time, which is why it’s really important for everyone to come together to help fight hunger,” says Casey Marsh, chief development officer for Feeding America, the nation’s largest domestic hunger-relief organization. Fortunately, efforts are being made to meet the sharp rise in food insecurity. As part of its “Many Hearts, One Community.” campaign, Wells Fargo fulfilled its commitment to help provide 82 million meals to families in need through the Feeding America network of 200 food banks during the holidays. This was a continuation of a decade-long relationship with the Feeding America network which, since the start of the pandemic, has included efforts such as turning Wells Fargo corporate properties and branch locations into mobile food distribution centers. Additionally, the company made grants over the holiday season to food banks operating in Wells Fargo’s global footprint. “It was life-changing,” says Andrea Thomas, a single mother who received food assistance in Mesa, Ariz. “I didn’t have to figure out if I was going to pay for groceries or pay for rent to keep my household afloat.” So how can you get involved? There are 200 Feeding America member food banks across the country, many of which need volunteers to help pack food boxes, distribute food at drivethrough pantries and more. Feeding America

HICAGO -- Members of the Chicago Teachers Union are refusing to follow the Chicago Public School system's order for pre-kindergarten and certain special-education teachers to come into school in person this week, with their students to follow next week. Citing a new surge of COVID-19 cases and concerns that more are on the way following the New Year's holiday, many teachers stayed home or worked outside their schools in the cold Monday, and plan to continue teaching online until buildings are safe for them and their students. School music teacher Quentin Washington is one of them. "They're asking us to step into the buildings, unprepared, ill equipped, no testing mandates. And it's just not fair to our students. It's not fair to our school communities," Washington said. Union members say the fear of losing their jobs is real and many teachers in Chicago Public Schools are the sole or primary income earners in their households. But they say the fear of the coronavirus for their students and families is greater. School and city online learning tionately hurts Latino kids and

officials say disproporBlack and teens, who

make up 90% of the district's students. But Brentano Elementary preschool teacher Kirsten Roberts noted more Black and Latino families have been opting to stay online, while a higher proportion of white families want to return to school. "They're destroying remote for the many in order to force an unsafe reopening in-person learning plan for the few," Roberts said. The Teachers Union is clear this is not a strike - members plan to continue teaching virtually, and communicate with their students, families, and colleagues. More than 30 aldermen on the Chicago City Council signed a letter amplifying the safety and equity concerns.

alifornia Governor Gavin Newsom announced the $5 billion ‘Golden State Stimulus’ proposal Jan. 6, with $2.4 billion in direct payments to low-income families and an additional $2.6 billion to help renters facing eviction amid the COVID-19 pandemic. Newsom also announced a possible extension of the state’s eviction moratorium — AB 3088, authored by Assembly member David Chiu, a Democrat representing San Francisco — which is set to expire Jan. 31. At least 1 million families in the state face eviction if the moratorium is allowed to expire. “People are dealing with the anxiety and distress of being evicted. They are tired of fighting long lines at the local food bank. A sense of urgency is required at the moment,” said Newsom at a press briefing. More than 4 million people who currently use the state’s Earned Income Tax Credit will receive $600 direct payments; the funds will be distributed through the EITC architecture. Newsom said he is aiming to help both renters and small landlords with the stimulus proposal. The stimulus package will be tacked on to the state’s new budget, which is expected to be released Jan. 8. Assembly member Eloise Reyes, a Democrat who represents portions of the Inland Empire, said at the press briefing that California’s EITC program has a “proven track record of lifting people out of poverty.” “We are addressing the inequality in our state, and helping people pay past due rent,” she said. Jacqueline Martinez Garcel, CEO of the Latino Community Foundation, said: “This money is essential to people on the front lines who are working to feed us.” Sen. Mike McGuire, a Democrat representing Ukiah, noted that millions of California families are “on the ropes” amid the pandemic. “For some families, no matter how hard they work, it just isn’t enough.”

A recent study by German researchers calculated that global carbon dioxide emissions fell by about eight percent over the past year. While this is no doubt a good result from an otherwise bad situation, the researchers warn it represents nothing but a small drop in the bucket compared to what we still need to accomplish—even bigger annual emissions drops every year for decades to come—to avert cataclysmic climate change. According to study co-author Ralf Sussmann, we would need to achieve zero emissions around the world by 2055 to limit global warming at 1.5ºC. The declining rate of greenhouse gas emissions during the global pandemic would not only need to be upheld, it would need to be amplified to achieve zero emissions. Sussmann and other study authors stated that to achieve these reductions “political measures have to be taken to directly initiate fundamental technological changes in the energy and transport sectors.” Despite the drop in emissions over this past year, 2020 will likely go down in history as the year things started to really accelerate with regard to climate change’s effects. Recent increases in both the frequency and intensity of extreme weather events are consequences of global climate change. “Global warming can contribute to the intensity of heat waves… Increasing temperatures mean a longer wildfire season,” reports the National Academies of Sciences, Engineering, and Medicine. “Global warming also increases water vapor in the atmosphere, which can lead to more frequent heavy rain and snowstorms.” This means stronger hurricanes and flooding. In 2020, extreme weather events plagued people around the world amid the pan-

demic. In the U.S. alone, Americans witnessed orange skies clouded with smoke and a number of powerful hurricanes coming from the Atlantic. Globally, there have been record high average temperatures, double the activity of a normal hurricane season, the hottest temperature ever reliably recorded in human history (54ºC), the most costly damages from flooding to date in China, record low Arctic sea ice, and the strongest tropical cyclone to hit land that has ever been recorded (Super Typhoon Goni). These abnormally extreme weather events are all indicators of the accelerating effects of climate change on our planet. Even though climate change continues to worsen, in small ways all over the world nature has taken this economic slowdown as a chance to breathe. For example, the murky waters of Venice’s canals became clearer than they had been in decades— and sea life even returned to the city’s urban waterways. While global warming has not stopped because of the global pandemic, we have learned that Mother Nature responds positively to our improved behavior (even when not intended), which gives environmental advocates hope to keep on working. It’s now up to every one of us to make significant changes in our own orbits—perhaps by keeping up our slower and more stationary existences even after we have a grip on coronavirus—if we hope to mitigate and reverse the effects of climate change. a pandemia de coronavirus ciertamente ha provocado una disminución de la actividad industrial y las consiguientes emisiones de gases de efecto invernadero durante su reinado sobre el planeta en 2020.

WITH DECISIVE SENATE WINS IN GEORGIA, DEMOCRATS GAIN CONTROL OF THE US SENATE.

ate. Perdue, whose term in the Senate expired last Sunday, thanked the participation of, "everyone who voted, everyone who has put their faith and trust in our democracy to obtain the representation we deserve, whether voting for me or against me."

ashington-The Democrats won control of the United States Senate on Wednesday thanks to the victories of their two candidates in the second round of the elections in Georgia, which President Donald Trump had proposed as a referendum on his management.

Before Ossoff's victory was confirmed, Presidentelect Joe Biden congratulated Warnock and expressed his optimism about the possible victory of the other candidate.

These victories for the blue party were confirmed the same day that supporters of Republican Trump stormed the Capitol in Washington while the joint session was being held to ratify the Electoral College votes in the last presidential election. After the victory of the Reverend Raphael Warnock was confirmed on Tuesday night, thus becoming the first African-American senator from Georgia, media projections on Wednesday declared fellow Democrat Jon Ossoff the winner over his Republican rival, David Perdue.

Biden, 77, who will take office on January 20, also congratulated, "the people of Georgia, who came out to vote again in unprecedented numbers, just as they did in November, to elect two new senators, demand action and demand that elected leaders come out of the gridlock." The president-elect stated that he is, "as determined today as he was yesterday to make the effort to work with people from both parties, at the federal, state and local levels, to accomplish great things for our nation."

CON DOS VICTORIAS DECISIVAS DEL SENADO EN GEORGIA, LOS DEMÓCRATAS SE ALZAN CON EL CONTROL DEL SENADO DE EE. UU.

EW HAMPTON, Iowa -- In the wake of Wednesday's riots at the U.S. Capitol, an Iowa pastor said the country needs to fully address its past so it can move on from tensions he feels are tied to white privilege. From social media to political commentators, observations were made about how the mostly-white rioters supporting President Donald Trump were able to access Congressional offices without much pushback. Rev. Dr. Willy Mafuta, senior pastor at First United Methodist Church of New Hampton and member of the Iowa Annual Conference's Anti-Racism Leadership Team, said it's clear a double-standard was at play, noting Black Lives Matter demonstrators recently saw a stronger authoritative presence at their peaceful protest in Washington. "We cannot continue to live in a country where one segment of the population claimed their right by simply ignoring the rule of law," Mafuta insisted. It's unclear if any of the rioters had ties to white supremacist groups. However, a number of videos and photos showed rioters carrying Confederate flags. Mafuta thinks events from the past four years, including Charlottesville, and the failure to stem the tide of white nationalism contributed to rioters violently challenging the results of the election.

He said America's history with racism has never been properly dealt with, and not doing so could result in more events like this. He describes the current environment as a country with recycled "Jim Crow" laws.

Many critics of Trump say he has played a key role in stoking racial tensions by not forcefully condemning these extremist groups. But Mafuta said America as a whole needs to fully accept that white privilege still exists, creating different rules and standards for different races. "As long as they cannot accept that, we will not be able to move forward," Mafuta contended. To engage more Americans on this topic, Mafuta suggested it will take a variety of leaders, including political and religious, to create more conversations about equality.

He added people in power can have a tremendous effect in getting everyday people to listen.10.5” "No podemos seguir viviendo en un país donde un segmento de la población reclamó su derecho

ENVER -- As President-elect Joe Biden considers his pick for labor secretary, unions in Colorado and across the U.S. are eager to leave the Trump administration in the past. Dan Mauer, legislative director with the Communications Workers of America, said President Donald Trump's National Labor Relation Board used every tool at its disposal to stop workers from organizing, by making it easier for companies to delay elections and, in some cases, taking workers' right to organize away altogether. "That's why it's all the more important that President-elect Biden take a lot of steps to reverse some of those trends, because otherwise, workers are going to continue to lose power, and that means losing wages and losing benefits," Mauer said. Biden has committed to passing the Protecting the Right to Organize Act, along with measures to incentivize workers classified as independent contractors to gain union protections. But Mauer said Tuesday's runoff election in Georgia which will determine which party controls the U.S. Senate - is critical, because the new administration will not be able to reverse all of Trump's policies through executive orders. President Donald Trump maintained strong support from blue-collar voters in November, largely because of his rejection of trade deals. Mauer acknowledged the Trump administration pulled off a bandage exposing decades-long setbacks suffered by workers, including jobs shipped overseas and the outsized role Wall Street has gained over the economy. "Major Wall Street banks, but also private equities and hedge funds, squeeze every

dollar they can out of companies, and really make it hard for companies -- even the companies that want to do the right thing -- to pay their workers fairly and to respect their rights and benefits," he said. Union membership in the U.S. has declined by nearly 20% since 1980, which Mauer pointed out also coincides with the decline of the nation's middle class. In Colorado, union members account for just 9% of wage and salaried workers.
