DIRECTIONS Line the bottom and sides of an 8 x 5-inch loaf pan with parchment paper.

Using a serrated knife, chop the chocolate into small pieces and place in a small heatproof bowl. Heat the cream in a small saucepan over medium heat until almost, but not quite, boiling. Pour the cream over the chocolate and leave to melt for 3 minutes; stir until smooth; set aside.

Place the egg whites, sugar and cream of tartar in a heatproof bowl over a saucepan of gently simmering water (be sure that the bottom of the bowl does not touch the water). Stir constantly with a rubber spatula until the sugar dissolves and the egg is warm to the touch, about 4 minutes.

Remove the bowl from the saucepan and, using a hand-held or stand mixer, beat the egg white mixture until fluffy and stiff peaks form, about 7 minutes; stir in the vanilla. Place about 1 cup of the meringue in a small bowl, cover with plastic wrap and set aside in the refrigerator.

Arrange some of the graham crackers in the bottom of the pan, trimming the crackers to get a tight fit. Scoop about ⅔ cup of the meringue into the pan and gently spread to fully cover the crackers. Place another layer of graham crackers over the meringue. Using a small offset spatula, spread about one-third of the chocolate

mixture over the graham cracker layer so the crackers are fully covered.

Repeat until you have eight layers of graham crackers and four layers of meringue alternating with three layers of chocolate. The top and bottom of the cake should be graham crackers, and the top should extend just a little above the rim of the loaf pan. Wrap the pan with plastic wrap and refrigerate for at least 24 hours and up to 48 hours, until ready to serve.

Just before serving, turn the cake out onto a long platter or cutting board. Peel away the parchment paper. Using a handheld or stand mixer, whip the reserved meringue for 5 minutes to thicken, if needed. Spread over the top and sides of the cake. Lightly brown the meringue with a kitchen torch to give it the classic roasted marshmallow flavour. Use a serrated knife to cut the cake into ¾-inch slices; serve cold.

Next, take a five-minute walk over to Tai Kwun. Tai Kwun is a former police station and jail that has been turned into a centre for heritage and arts. Stroll or sit around the square to peoplewatch and explore the highend shops. Expect to find local artisans who specialize in fashion, ceramics, art and decor.

Return to North Point to grab dinner at Tung Po (make

a reservation in advance), the wild Anthony Bourdainapproved dining experience unlike any other. While the atmosphere – more fluorescentlit market than intimate fivestar experience – might make you skeptical at first, you will not leave disappointed. From the frosty beer served in little blue and white bowls to the high-energy singalongs, this place was made for a banging travel story re-tell. Oh, and did we mention the food is outstanding? If you’re brave, you might be able to persuade restaurant owner Robby Cheung (who dances around the space in white rubber boots) to share a list of his favourite dishes, but barring that, I recommend the wasabi mayo cucumbers, the juicy roast chicken and the fried noodles.

DAY 2 When in Hong Kong, dim sum is a must, so make your way to Lin Heung in Central, one of the oldest tea houses in the area (dating back to 1889). Be sure to sample the siu mai, shrimp dumplings and steamed rice rolls if you want to eat like the locals do. Next, board the ferry to Lamma Island (3) at the Central Ferry Piers. The island is a great place to explore the authentic fishing community as well as take in stunning views from the green hillside. Wander over to Sampan Seafood Restaurant to experience a feast of outstanding locally caught seafood, such as salt and pepper calamari and spicy crab (both pair beautifully with the Singapore noodles).

Ferry back to Central and stop in at PMQ, an outside-the-box shopping destination with a focus on artisanal wares.

The space, which dates back to the late 1880s – and has served as everything from police quarters to a school – now houses shops like Goods of Desire (a great spot for picking up souvenirs) and Waka Artisans (a ceramics shop).

For your final night in Hong Kong, head to Alibi at Cordis Hotel (20 minutes away from Hotel VIC) for a refined and elegant meal. If you haven’t had your fill of fish, the seafood platter is a must, while the adventurous will want to try chef James Oakley’s Misty Forest, a dish of goat cheese mousse, forest mushrooms and parsley moss. Head back to Hotel VIC for a nightcap on the rooftop patio and toast to an unforgettable high-meets-low vacation.

Cotton from Portugal, Pakistan and Turkey also has an excellent reputation, as does Supima or Pima cotton, an American hybrid from Texas.

Temperature Tips Whether you like to keep it cool or kick up the heat, there are sheets that are suited to you. Breathable fabrics like cotton or linen are great if you prefer a cool sleep. If you like to stay toasty warm all night, your best bet for keeping the brrrs at bay is to choose flannel sheets.

Linen has its advantages: Organic, absorbent and durable, it’s perfect for use in any season. Look for linen from Belgium, Russia, Italy, Portugal and the Vosges region of France – all of which have an excellent reputation for high-quality linens. New fabric may feel a bit stiff, but after a few washes it becomes soft and supple, and a perennial favourite.

The terms percale, combed, brushed and sateen describe different types of fabric weaves. Percale is a cotton weave that’s matte, fine and tight, which lends it a crisp fresh texture.

A combed or brushed cotton has had all of its short fibres removed during manufacturing, resulting in a material that’s less likely to pill. When the word sateen is used alongside cotton, it means the cotton is woven using a unique pattern that gives it a luxurious sheen that looks like satin on one side, a matte effect on the other, and an overall soft feel.

The higher the thread count, the tighter the weave and the softer the fabric. That being said, thread count isn’t the only consideration when choosing sheets – it’s important to check the quality of the fibres, too.

Caring for your sheets Good sheets should age well. Follow the instructions on the care label, add a drop of your favourite fragrant essential oil (lavender works well) in the wash to lightly scent your sheets and use dryer balls to reduce drying time.

Victorian house as charming as this one is a rare architectural gem. And that’s exactly what designer Jacquelyn Clark of Lark & Linen Interior Design appreciated when she and her husband, Justin Gagne, found the 1898-built home in Toronto’s east end three years ago. “It was mostly the character that drew us to it,” says Jacquelyn. “The home had that attention to detail that you don’t often see in new buildings.”

Stunning elements that had been left intact over the years – including the high baseboards and cast iron heating vents – caught her discerning eye, but so did the things that weren’t to her taste. For example, the yellow-beige tone that covered all the walls felt a bit glum. And the bathroom featured all manner of brown tiles, giving it a dated feel. “I jokingly referred to it as Fifty Shades of Brown,” says Jacquelyn. Accordingly, even before the couple moved in, the bathroom was treated to a full gut job. “It was the only bathroom in the house, so we knew we needed to renovate that before moving in,” says Jacquelyn. (Another major renovation project included building a big closet for the bedroom by taking down a wall and annexing square footage from the office.)

Once the couple settled into the home with their Goldendoodle, Sage, they worked on the rest of the 1,300-square-foot space room by room, creating a light and airy look in keeping with both the house’s character and

the designer’s chic aesthetic. “I describe my style as classic and elegant, with a bit of an edge,” says Jacquelyn, whose goal with this project was to create a timeless look that is neither too modern nor too stuffy.

That meant beefing up the original character by introducing more architectural details, incorporating a juxtaposition of classically inspired clean-lined elements, and adhering to a bright neutral colour palette. The resulting look may be undeniably sophisticated, but the couple’s ultimate intent was to create an inviting and comfortable space that would suit their casual lifestyle. “Often when we have family over, we just order takeout and spend lots of time sitting around the coffee table chatting,” she says. “So it’s pretty informal – this house is perfect for hanging out.”

or a couple of years, Amanda and Brad Jewson grappled with a typical parent problem: how to co-exist with the diapered set and still have an adult-friendly space. The couple’s home in Toronto’s Corso Italia neighbourhood just wasn’t cutting it. After living in it for four years they considered moving, but since they loved the location they decided to stay and renovate. “The kitchen and the living area were separated,” says Brad, which made for poor sightlines. “The idea of keeping an eye on the kids in the living room while preparing dinner in the kitchen was very appealing to us. We were also desperate for more storage.” So Amanda and Brad enlisted Meghan Carter of Meghan Carter Design to turn their 900-square-foot main floor into a chic yet child-friendly space for their daughters, Winnie, 5, and Norah, 3, as well as a dogfriendly home for their golden retriever, Cece.

“The challenge was fitting the entire wish list into a relatively small space,” says Meghan, who worked with LB Construction & Design on the four-month-long revamp that entailed gutting the

main floor. “The new space had to function as a living/dining room/kitchen, as well as a great play area.” The house – boxy, detached and brick – was built in the ’80s. That meant it had good bones and no scary knob-and-tube wiring or asbestos to contend with. But honey-toned wood and mirrored closet doors made the interior feel stuck in the Flashdance years.

To modernize it, Meghan introduced gorgeous millwork, dynamic colour and smart solutions that make the house function better and improve the flow. “We used cabinetry to delineate all the zones,” says the designer. For instance, sleek storage-packed units in the entryway divide it from the living room. And beyond that, a bank of sophisticated grey cupboards by the dining room holds a surprise – open the bottom doors and you’ll find blocks and Lego. The surface is clad in vinyl, making it impervious to the mess little fingers leave behind. At the rear, a dramatic blue kitchen has replaced a drab one with dark built-ins.

It’s an incredible transformation that feels grown-up yet child-friendly.

“I'm thrilled with the results of this reno,” says Meghan. “It's functional and organized and there’s such a great sense of space.”

Built-in banquettes rule in small spaces. This cool set-up, enhanced with a tasselled pendant, is elegant for the adults yet totally relaxed. “The banquette is faux leather and the chairs are plastic, so they’re easy to wipe down,” says Meghan, who designed the corner cabinet as a hidden bar. She also included extra storage by adding drawers under the banquette seat.

If decor is a mood booster, then this space is positively ecstatic. Before this stylish suburban townhouse was redecorated by Tim Lam, the Torontobased style enthusiast behind the Design Maze blog, the feels here were baseline blah. “It was a cookie-cutter townhouse,” says Tim. “Think 2,500 square feet of beige.” The no-drama space was completely out of step with its new owner’s M.O. “She’s a young professional and first-time homebuyer with a modern aesthetic, but she also loves edgy hits of vintage,” says the decorator.

The jumping off point for the decor – the owner’s Murano glass wall sconces that now hang in her home office – ticked both boxes.

“They’re actual vintage pieces but still have a cool, contemporary feel,” says Tim. They set the tone for the rest of the office, which incorporates just the right amount of feminine charm. “I wanted that femininity – this is a young woman’s home – but I wanted it to look grown-up, not girly.” Enter the most gorgeous wallpaper and don’t be fooled by its “Ballroom Beige” moniker. “It’s actually a very delicate blush shade that adds beautiful colour, subtle texture and depth.”

Tim continued his transformative talents in the kitchen. “I can’t overstress the fact that you don’t need to spend a lot of money to redo a kitchen,” he says. Fixed elements and big-ticket expenses, such as the flooring, countertops and cabinetry, remained the same here, with the addition of a small floating credenza and one slight tweak. “I had the heavy-looking dark-brown cabinets sprayed white and added new brushed brass pulls.” Inexpensive subway tiles and Scandi pale wood accents amp up the new airiness, while soft accessories – patterned rugs and a Roman shade – weave in appealing texture.

The savvy combo of disparate elements means this new build now has nuance; a fact all the more impressive given that the rooms were part of a six-week online makeover challenge. Tim says, “It is possible to reimagine any space in a short amount of time – without renovating or spending a fortune.” And that’s something that makes the owner of these zingy new digs happy indeed.

Edgy colour and boho layers give an Edmonton condo a new lease on life.

By its very nature, a pied-à-terre affords a unique opportunity to throw caution to the wind. As a second home, it doesn’t need to house off-season clothes or Grandmother’s treasured china. It isn’t expected to host 20 for Thanksgiving dinner. It’s the perfect place to experiment.

Functionally, this Edmonton condo ticked the necessary boxes for its owner, Roben Nurgitz: two bedrooms (one for her and her husband, another for visits from their grown children), two bathrooms and a central location near the shops and restaurants in the up-and-coming brewery district. “She lives full-time in the mountains in Jasper four hours away, but she travels for work, so the big-city location is fabulous,” explains Diana Tidswell, who redesigned the space with Kristina Eustace, her partner in Kresswell Interiors.

LEFT The designers removed one section of upper cabinets in favour of a stylish walnut floating shelf — “the perfect place for the owner to display some of her favourite treasures,” says Diana. Warm brass and organic walnut accents look effortlessly chic against the moody backdrop. Because the 1,000-square-foot condo’s original dining area was in a spot that didn’t make sense, the designers expan-ded the island and added three wide comfortable stools to replace it.

Style-wise, however, the home was uninspiring. “It was your average builder-grade condo,” Diana says. “The finishes were basic.

The kitchen had dated cabinets and countertops and a drab backsplash. The island did accommodate seating – but there was no formal dining area.”

Most importantly, it didn’t represent Roben at all. “She has fabulous taste,” Diana says, “and she was daring enough to take a risk and have a bit of fun here.” And not only that; she joked with Diana and Kristina that, while she’d collaborated with her husband on their main home, she’d be the one spending the most time here, so she really wanted the condo

to feel like her. “She’s a cool, well-travelled woman – full of life and zest,” Kristina says.

Working with Revive Developments, Diana and Kristina got the ball rolling with fresh engineered wood flooring throughout the condo, and overhauled the kitchen by replacing the cabinet doors, countertops and backsplash tile, as well as amping up the size of the island to comfortably fit three stools.

Then, they moved full-throttle into building the exciting new look. “We went bold in the front entry with a graphic tile that Roben fell in love with, and that set the tone for the whole condo,” Diana says. “She wanted high drama. Going with all the black definitely

translated that!” “I’m a retailer, so I know that starting with a black backdrop makes everything else pop,” says Roben, who owns a gift and clothing boutique. Tired light fixtures were swapped out for chic but budget-friendly pieces, and layers of organic textiles and handwoven baskets soften the look and introduce an innate livability.

Roben’s edgy aesthetic fostered a rich creative environment. “Our job was taking her ideas and finding the right mix – blending in her world travels and injecting that little bit of bohemian spirit in her trajectory,” Kristina says, “but also keeping things clean and classic with the black wall and Mid-Century Modern pieces for balance, so the look would be transitional and long-lasting.”

For the designers, the project was a double win. “We couldn’t have been happier with how this space turned out,” Diana says. “It was really fun to have a client bring so much drama into a small space.” It was also the inaugural renovation for their newly minted firm – their own experiment of sorts. The pair joined forces in 2017 after working in the industry individually for several years. “It was the first renovation Diana and I did as a team, so we look back on it with a lot of fondness,” Kristina says. “And luckily, we had the perfect client right out of the gate!”

The relaxed look of this downtown Toronto condo was the result of a not-so-relaxing event. Designer Ryan Martin and his partner, Rodney Chong, had been contemplating updating their 800-square-foot, two-level space when disaster struck. “The condo suffered a flood,” says Ryan, co-founder of Croma Design. “Our washing machine broke and completely flooded the lower floor of the suite.

We got a call and when we arrived there was three inches of standing water. So of course that ruined the flooring, the furniture, the baseboards, the doors, the drywall and so on.”

While the situation wasn’t ideal, to say the least, it forced the couple into a renovation they had wanted for a while. When they purchased the newly built condo 15 years ago, there was a lot to love. “We loved the way the space felt spread over two levels, its location, the view and the ceiling height,” says Ryan. But they weren’t too keen about some of the builder details and frustrating construction quirks. Also, by the time the flood came along in 2016, it was clear the condo’s aesthetic hadn’t kept up with the design-savvy couple. “It was starting to feel dark and it wasn’t feeling very much like our place,” says Ryan.

LEFT The living room’s gas fireplace was given an easy update – out with the tiled surround, in with grey marble. Light wood elements throughout the space work with the light oak floors and create a beachy feel. The shelving unit was a miracle find.

“We were happy to find a piece that fit perfectly in that little space,” says designer and homeowner Ryan Martin.

Hanging it required some creativity, though. “Originally there was only track lighting in here,” says Ryan. “So because the ceilings are concrete, we just swagged that over from the preexisting track lighting junction box to hang the fixture over the table.”

The grey and white colour scheme works with the original granite countertop. “We thought it might look strange to have all-white cabinetry with a dark band of countertop,” says Ryan. “But painting the bottom cabinets grey gave a little more cohesion and eliminated the visual clash.”

OPPOSITE Elements like the floor-to-ceiling linen drapes (hung on a ripple-fold track system), luxurious bamboo silk rug and tailored upholstered bed frame create a look that’s both cozy and sophisticated in the newly redone bedroom. “The amount of times that I hit my shins on the old wood bed frame,” says Ryan with a laugh. “It was definitely time for an upholstered version!” The DIY artwork adds a personalized touch. “There are pressed flowers and leaves in the glass frames. And then it’s a simple bit of blue and whitewashed canvas above the bed,” he says.

BELOW The metal nightstands suit the bedroom’s size. “It’s not a huge room, so we really searched for a nice option that was a good scale,” says Ryan. Installing sconces beside the bed stopped the small-sized nightstands from being taken over by table lamps.

In a renovation that took two months, the dark and slightly dated space was overhauled to look both modern and timeless. (To keep the look cohesive throughout, they revamped both floors.) Ryan and Rodney wanted to create a bright fresh look that enhanced the condo’s lofty vibe.

“The suite gets a lot of western sunlight, and we wanted to play that up,” says Ryan. “Plus, we wanted it to be comfortable at the same time, not too stark or sterile.” Dark taupe walls were painted a crisp white and light oak floors were installed, creating a light neutral envelope. New high baseboards give the space some traditional sophistication, hits of brass add warmth and charcoal-toned elements offer contrast. Tailored furnishings, such as the bedroom’s upholstered bed frame and the living room’s sectional, are both inviting and clean-lined.

Since, due to the flood, they had to essentially start from scratch, the couple also took advantage of the situation to make a few small structural changes. For example, their bedroom closet was too deep and featured a strange bulkhead with awkward sliding doors, so they ripped it out and STYLEATHOME.COM JUNE 2019

RIGHT The couple gave the terrace, which leads off from the upper level, a more inviting vibe by placing prefinished decking over the buildergrade concrete pavers and installing PVC boards over the glass partition wall. The pieces of driftwood, found during a visit to Ryan’s business partner’s cottage, offer a sculptural quality, along with the plants, and lend a natural feel.

BELOW With a vessel sink and gooseneck faucet placed on the side, the previous vanity drove the couple crazy. They replaced it with a simple IKEA vanity upgraded with beautiful brass hardware. A new medicine cabinet offers extra storage, while a wall sconce works with the brass throughout the space. “We also installed more lights in the ceiling,” says Ryan. “It was pretty dim in there before.” In the hallway, a glass-front cabinet offers display for accessories and books, as well as closed storage below. “So it can serve as a linen closet,” he says.

replaced it with a properly sized closet with an organizing system and efficient swing doors. “Now the whole thing offers a lot more storage and takes up less space,” says Ryan. Upstairs, a partial wall separating the kitchen and dining areas stuck out too far, making furniture placement difficult. Luckily, it wasn’t load-bearing so reducing it by six inches was easy and allowed more space to incorporate a larger dining table. A built-in desk and cabinet area, with a busy zebrawood veneer, was also removed and replaced with a more streamlined cabinet made of stacked Bestå units from IKEA. “It’s great for just storing so much of the stuff that all homes seem to accumulate,” says Ryan.

It’s clear the dark cloud of the flood came with the proverbial silver lining, and the transformation was considerable. But there are still some projects to complete, both big and small, including hanging drapery in the living room and replacing the kitchen. “A project in a designer’s home never truly ends,” says Ryan.

The entryway, which was previously lined with bookcases, features a functional simple vignette including a coat rack, slim console table and handcrafted mirror. “The leather provides a little bit of texture, a little bit of interest,” says Ryan. “We were originally looking for a round mirror to hang above the table, but we found this and fell in love with it.”

With some careful planning and professional collaborators, a Vancouver couple gets the house of their dreams.

A

n unconventional wish list can spark the most innovative designs. Such was the case when Nicole and Chris

Carter hired Vancouver-based architectural firm Architrix to draw up plans for their new house and then recruited designer Rebecca Hepburn to work on the interior. The specific needs of the Carter family meant that the house would be divided into two separate living spaces: one 2,000-square-foot home for them, and another 1,500-square-foot suite for Nicole’s parents. With her parents occupying the front portion, Nicole and Chris, a nurse and firefighter, respectively, and their two kids, Charlie, 3, and Rosie, 18 months, live in the back half of the house.

The casual dining area feels like a patio when the doors to the deck are flung wide open. A variety of finishes and textures, such as the walnut table, black dining chairs and pale wood end chairs, bring warmth and interest to the all-white envelope.

“Scale is so important in an open-concept space,” says designer Rebecca Hepburn of the furniture choices she made. “The dining table was selected for its perfect size, and the sofa is just the right length at seven feet.”

The couple requested a contemporary white-toned Scandinavian-inspired look.

“The initial brief was something modern, clean and bright, with lots of natural light,” Rebecca says. “We really tried to maximize light as much as possible.”

The finished home, consisting of an openconcept kitchen, living- and dining area on the main level, and four bedrooms, a TV room and a combined laundry and mud room on the lower level, is exactly what the Carters need. Their half of the home is southfacing, so plenty of natural light from generous windows floods the main living space.

Expansive sliding doors open right up to create an indoor-outdoor living and entertaining experience in the warmer months, which is a real bonus as the couple regularly hosts up to 20 extended family members on special occasions and holidays.

The chic minimal kitchen is a study in streamlined sophistication and modern function. “Chris loves to cook and prep for parties here,” says Nicole. Despite the nearly pure

white palette, the kitchen’s finishes were selected for durability. “The countertops are solid white, but because they’re Corian they are pretty indestructible,” Rebecca says. The same can be said of many of the other finishes throughout the home – including the white oak flooring installed in the main living space – that will only improve with time and patina. “I’m a firm believer that you need to make your home aesthetically pleasing and ensure it looks the way you want it to, without worrying too much about wear and tear. You can wash just about anything in this house,” Rebecca says.

A lower-level mud room entry for everyday family use was a big wish-list item. The space also houses the washer and dryer, where muddy kids’ clothes get removed just inside the door and promptly laundered. Ditto the adults’ garb.

“I just toss my scrubs right into the wash when I get home from work,” says Nicole, a nurse. The black-painted ceiling contrasts the otherwise white room and complements the industrialstyle light fixture.

On the lower level, the bedrooms and bathrooms were in danger of feeling dark due to windows at ground level, so extra care was taken to maximize height and light in those spaces “We used tricks like extra large mirrors and a full-height glass shower enclosure to emphasize the airy feel,” says Rebecca.

A specific wish list and a design collaboration has resulted in a naturally bright, welcoming family home that serves the needs of all of its inhabitants without a single inch of wasted space.

“I

’ve been spending summers at the Jersey Shore since I was a kid,” recalls homeowner and interior designer Stephanie Kraus, adding, “I even met my husband here.” First came love, then came marriage, and three kids later, the cottage. “We had to continue the Jersey Shore tradition,” she says.

The diminutive Kraus family cottage was built in the 1970s – a mere 1,200 square feet of living space with three tiny bedrooms and one-anda-half baths. None of this was a deterrent when the couple purchased it in 2015. “It’s one of the few remaining original bungalows left in the area,” says Stephanie. “We were drawn to that, and we loved its potential to become a small, easy-to-maintain vacation home where our family could summer together.”

Stephanie oversaw minor but important renovations: The wall separating the kitchen and family room came down, creating a larger open living space. The front window and French door were replaced with double sliding glass doors, bringing in natural light and connecting indoors and out via a newly expanded deck. “We closed off an unnecessary side door in the kitchen, giving us space for additional shelves and cupboards,” says Stephanie of the newly remodelled kitchen and its white recesspanelled cabinetry. painted in fresh white, a pleasing contrast to the new driftwood-look laminate floors.

With a crisp backdrop set, Stephanie turned her attention to furnishings. “For decorating, I wanted a clean and casual California beach cottage look,” she says. Translation: “white slipcovers and performance fabrics with a little fun pattern mixed in.” Of the palette, the designer says, “I favoured whites and blues – from navy to aqua – to keep it coastal but not overly nautical.” To balance all the cool tones, Stephanie worked in organic wooden pieces like the dining table and chairs and the oversized beaded chandelier.

“I also integrated lots of texture into my design – including rattan, grasscloth, raffia and jute to add both warmth and interest,” she says.

The three bedrooms (a girl’s, a boys’ and a master) don’t hold much more than bunk beds and dressers, but that’s of no concern to the Krauses. Most of their waking hours are spent at the beach or with the family anyway. “Our little cottage forces us to spend a lot of quality time together. It really inspires family closeness,” says Stephanie. “I think that’s how summers at the beach should be spent. We love it!”

Arrange the tofu and garlic on top of the noodles and bean sprouts; add the fish sauce, soy sauces and sugar and toss to combine. Sprinkle the crushed peanuts and dried chili flakes over of the noodle mixture. Top with the scallion and cilantro; serve with a squeeze of fresh lime juice and half a lime.

STIR-FRIED CHICKEN WITH CASHEWS

tbsp vegetable oil cloves garlic, minced tbsp roasted chili paste (available in Asian supermarkets) 1 lb skinless boneless chicken breast, thinly sliced 1 tbsp light soy sauce ½ tbsp Thai fish sauce (nam pla) 1 tsp oyster sauce ½ tsp dark soy sauce ½ tbsp granulated sugar 1 small onion, sliced ¼ sweet green pepper, chopped ¼ sweet red pepper, chopped 2 oz roasted salted cashews 3 dried spur chilies or red finger chilies, cut into 1" pieces and lightly fried 2 tbsp chicken broth (optional) 2 scallions, cut into 1" pieces Steamed rice for serving Heat the oil in a wok or large skillet over high heat; add the garlic and chili paste and stir-fry until fragrant, about 30 seconds. Add the chicken and stir-fry for 1 minute; stir in the soy, fish, oyster sauces and sugar. Continue to cook, stirring occasionally, until the chicken is fully cooked and no longer pink inside.

Add the onion, peppers, cashews and fried chilies to the wok, stirring to combine; stir-fry for 1 minute. If the mixture seems too dry, add a little chicken broth. Stir in the scallions and remove from the heat. Divide among bowls and serve with steamed rice.

Roughly mash together the garlic and two of the sliced chilies in a mortar and pestle or mini food processor.

Heat a wok or large skillet over high heat.

When the pan is hot, add the oil and the chili

mixture and stir-fry until fragrant, about 30 seconds. Add the ground beef and stir-fry for 30 seconds. Add the lime leaves, oyster sauce, soy sauces, fish sauce and sugar. Toss in the beans, onion and remaining chili slices and stir-fry until the beef is browned and fully cooked through. Stir in the basil leaves; remove the pan from the heat.

Meanwhile, warm the roti in the oven or on the grill. Divide beef mixture between bowls and serve with the warm roti.
