At last, the bifolds have been cracked open Chez Richmond, and daily life is spilling out onto the patio. I’ve taken to roasting my own coffee beans on the barbecue (it’s gas, which is cheating, I know, but who’s got the time to wait for charcoal?). Ma Richmond spends hours titivating the garden, which is her domain – I am only allowed to mow and lop occasionally. And the cat, who was badly injured last year and now has a bionic knee, likes to watch all the action from the bird table, with her stiff little peg leg dangling comfortably over the side. However you use your outside space, you’ll find loads of ideas in this issue. I’m hoping to get more time relaxing in mine this year – preferably with a Tanqueray Flor de Sevilla in hand (add a twist of orange and a basil sprig – yum!).

OK, so we’re still banging on about the loss of the lighting range from BHS (affordable and so stylish!), but the launch of Houseof may just fill the void. The founding duo, part of the former BHS team, decided to take their lighting expertise and go it alone. The range is modern but by no means run of the mill and beneath the designer good looks lie high street price tags. Many of the lights come in a spectrum of finishes, from on trend blush to classic gleaming brass. When friends come to visit, they tell me they never want to leave, which I love

sia and her husband Jorje moved into the house five years ago, when their daughter, Rose, was two, and baby Leo was just one week old. ‘We didn’t have a lot of money left from the purchase and we also had a young family,’ Asia says, ‘so we’ve had to renovate the property gradually – we bought a lot of white paint at first!’ The property had already been extended in 1990, but the upper floors were never connected and are accessed via different staircases. The couple decided not to fix this, but instead saw the benefit of having the kids’ rooms on one side of the house and their own on the other: ‘It gives us privacy and calm,’ says Asia. They did, however, knock down a wall to open up the ground floor (you can see the joist between the living and dining areas). The rest of their small budget went on repairing or replacing the essentials, including re-plastering walls and laying pale pine flooring throughout. Next on the list is the electrics: ‘I was more interested in sorting out the decor than the electrics and they’re a nightmare!’ she says. ‘When I turn on the stove, the TV goes off! I’ll need to get them fixed then redecorate.’ Other ideas will have to wait, too, like installing larger windows to create a better connection with the garden. Asia also plans to move the bathroom to a larger room, but meanwhile she’s used a few tricks to revamp the space. ‘We put down new lino flooring, repainted the fitted cabinets and painted over the tiles,’ she says. Asia has her own interior design business, so you’d expect her to take the lead when it comes to decorating. ‘Actually, my work impacts my home in an unexpected way. I look at colour, pattern and trends all day, so when I’m in my own space I want to rest my eyes and my mind,’ she admits. Find out more about Asia’s interior design work at studioloko.pl.

Kate Simon, 54, lives in a three-bedroom terraced townhouse in east London with her husband, Dean, and their son, Quincy, 19. She is a travel writer. ‘When I was younger, I thought people who expected me to take my shoes off in their homes were a bit fussy and posh. But that changed when Quincy was born. Dean and I didn’t want him crawling around on a dirty floor, so we introduced a “shoes-off” rule that’s stuck. Most visitors take off their shoes as soon as they step through our door, but occasionally we have to ask. We have wood floors everywhere, except the stairs, and our living room is on the first floor. Guests sometimes get as far as the stairs in their shoes, but the carpet tends to stop them in their tracks. Even when we have a party, the rule stands. We had 60 guests at Christmas – there was a huge pile of shoes by the door. At the end of the night, one of our friends realised his shoes were missing, but he preferred the pair that had been left behind! When we sold our last house, we asked the estate agent to ensure shoes were removed. But the first people who came to view it left theirs on – and promptly trod dog mess along the hallway. The agent was mortified, and had a real job getting rid of the smell. That’s what can happen if people wander in with their shoes on. It is simply good manners to leave them at the door.’

Rosie Mullender, 41, lives with her boyfriend, Don, in a one-bedroom flat in Walthamstow, east London. She is a writer. ‘I would never expect guests to take off their shoes. Homes are to be lived in. Our flat is very clean, and Don in particular can be quite pernickety, but expecting visitors to pad around barefoot or in socks would be a step too far. It seems so undignified. We just assume people will wipe their feet before they come in. That’s what the doormat’s there for, after all. Just don’t put your dirty shoes on my sofa! Of course, I respect other people’s rules when I go to their homes. If a friend wants me to remove my shoes, then I do. But I hate walking around in socks or tights in winter. My feet get cold and I don’t feel properly dressed. In summer, I normally wear ballet pumps. The prospect of taking them off is even worse. We once went to a property viewing and were asked to take off our shoes before the estate agent would let us in. I was wearing pumps with no socks, and no way was I going to get my feet covered in dirt walking around a stranger’s home. We left without seeing it. I wonder if the “shoes off” brigade ever have parties. Surely the rule would become unenforceable if you have lots of guests coming and going? If you insist that people go barefoot in your home, you should be certain that your floor is immaculately clean. Why should I get your dust and dirt on the soles of my feet? I think that if you’re going to ask everyone to remove their shoes, you should be prepared to provide them with clean and comfortable hotelstyle slippers!’

We lived here for seven years, just enjoying it and taking our time deciding what we wanted to do

he Thompson family have lived in this house for 10 years, but transforming it has been a slow-burn process rather than a rush-in-andrip-out project. ‘When we first moved in, our son Frank was a baby,’ says Julia, ‘so we settled into living here and took our time choosing what to do. ‘Then, three years ago, we bit the bullet and reworked the house’s layout. We hired Robert Dye Associates to create a double-height extension at the back that added an office and a large, redesigned kitchen-diner at the garden level. A set of rooflights and subtle vertical openings between the levels allow a free flow of light, so the two floors feel joined up.’ Previously, an Eighties-style conservatory had occupied the rear of the house. ‘It wasn’t an inviting space,’ says Julia. ‘It was damp, cold and we avoided it, which in turn had made us less inclined to use the garden.’ Once the extension was completed, however, the couple had the garden landscaped. Inside, Julia and Paul have created a unique, eclectic look. ‘I’m drawn to objects with a past,’ says Julia, who has plenty of tales to tell about her vintage finds – such as the orange Seventies swivel chairs she haggled over in Provence and the amber glassware she rummaged for in Amsterdam’s flea markets. ‘The beauty of using vintage items is that it stirs you into being creative, as you’ve immediately got to give them a different character by adding your own twist.’ Choosing artwork has been a joint venture. ‘We’ve bought all the photography and artwork together,’ says Julia. ‘We look for pieces that capture a moment or mood – and make us look twice. I love the way that a poster can sum up the glamour of a previous era. Things like that tell a story, and who can resist that?’

With no central heating, a leaking roof and a very dysfunctional layout, we knew it would be a mammoth task!

hen career opportunities drew Sofie and Rob from Sheffield to London in 2014, they went on the hunt for a house big enough for their family to grow into. ‘We wanted something we could add value to by extending,’ says Sofie. ‘We had only ever lived in period properties, so liked the look of this red-brick house, close to the high street, even though it was in a state of total disrepair and hadn’t been updated for 40 years. But, its period features and character were too good to pass up. There were going to be no easy fixes: every room had to be taken back to the brick, rewired, replastered and have new windows fitted. We did a loft conversion first, mainly because of the hole in the roof, and this gained us an extra bedroom, en suite and dressing room. Once we had saved up enough, we started work on a kitchen extension, too. We lived on site during the eight months of work, with a camping stove in the living room and a sink in the garden for washing up. The dust got everywhere and we didn’t have anywhere to retreat to for peace and quiet. Not easy with a baby! When it was finished, a huge weight was lifted and the whole house felt different. I remember seeing Teddy drive his ride-on car around the kitchen island and thinking it was all worth it. Hosting Christmas in the new kitchen was a special moment! Renovating on such a large scale taught us how to handle big projects and we discovered more about our personal style, too. We still have some work to do on the garden, but the house really suits life with the boys and we’ve given an old property a new lease of life. As soon as we walk through the front door after a long day, the house makes us feel instantly calm and relaxed

eorgie Jones and her husband Laurence were living in London, but dreamt of moving to the countryside to raise their children. ‘We had a small house, an expanding family and a dog!’ says Georgie. ‘We needed more space for everyone.’ Then, one day, they went for lunch with their friends, interior designer Annabelle Holland and her husband Anthony, at their home in Hampshire. ‘We were talking about moving to the countryside and they encouraged us to relocate to the area,’ says Georgie. ‘By chance, they knew of a house for sale, so Anthony suggested we went to view it.’ The couple loved the property at first sight, but the downside was that it needed so much work. It had previously been divided into two and over the years had alternated backwards and forwards between being one house and two. But in its current incarnation there were two lots of everything, including two kitchens. It also meant the house didn’t flow as the two halves were decorated in very different styles. One side of the house had a neutral palette and used lots of wallpaper and carpet, while the other side was painted in bright colours and had wooden floors throughout. Despite the work that would be involved, Georgie and Laurence could see the house’s potential as a family home and so decided to purchase it and make the move out to the country. ‘We wanted to make everything neutral so it flowed and had a calm feel, and knock through some of the walls to create larger, more open-plan spaces. We also had to work out which of the two kitchens we were going to keep!’ The couple enlisted Annabelle’s expertise for the interior – she organised the layout so that the floor plan flowed and gave advice on colour palettes and

decorating schemes. ‘I prefer large rooms and lots of light,’ says Georgie. ‘So Annabelle’s team of builders knocked walls through and changed the positions of some of the doors so that the house worked better.’ The family chose to keep the kitchen that was positioned in the heart of the house and gave the cabinets a simple update with a fresh coat of paint. ‘Annabelle designed two of the main rooms – the living room and the garden room. She was brilliant at putting together the colour palettes, finding the perfect furniture and adding texture and interest with soft furnishings,’ says Georgie. ‘She was great to work with and even though I knew the type of look I wanted, she really helped to make the vision a reality.’ The move also proved the perfect excuse to buy new furniture. ‘We were keen to invest in some jUnE 2019

We also used Nadia Waterfield Fine Art to source some key pieces that added depth to the rooms and helped make the house feel like a proper home.’ ‘As we were starting virtually from scratch, it was important that the house didn’t end up looking like a showhome,’ says Georgie. ‘We wanted to match the practical needs of having young children and a dog, while ensuring a stylish and sophisticated atmosphere throughout our home. We are fortunate enough to have the space to allow certain areas to be focused on the needs of the children – a playroom, for instance – while other spaces can be more formally designed

for entertaining.’ The family love to have friends and relatives to visit, so the extra space has proved a real bonus. ‘Having room to host is fabulous – whether we’re spending lazy winter Sundays by the fire, putting on an evening of entertainment in our garden room or enjoying long summer lunches in the walled garden – we have the space to do it. Every part of our living area provides a different atmosphere that our friends and family can share with us.’ The house has proved to be a resounding success. ‘We’re really pleased with it. The garden is enclosed and safe, so we’re able to open the doors and just let the kids run out. And it’s much easier having space – we have lots of storage, which is a treat, and there’s even some we don’t use. Things aren’t jammed under the bed anymore like they were in our London house!’

Know your fuels Pizza is traditionally cooked in a wood-fired oven for a smoky flavour. However, some ovens have gas burners to heat up much quicker. Pellet and charcoal burners are other options. Your oven temperature will peak somewhere between 400 and 500°C, and the better an oven maintains its temperature, the more pizzas you can produce from one firing. Note the cooking times A small oven will take between 10 and 20 minutes to heat up (around 10 with gas, and closer to 20 with pellets or charcoal). Larger ovens can take up to an hour. A typical pizza will cook in six minutes, but the smallest gas-powered ovens can do the job in as little as 60 seconds. Treasure the little extras A temperature gauge is handy, as you’ll always know when you’re ready to cook. A few ovens come with a pizza paddle designed to fit the cavity perfectly, though this is an exception rather than the rule. Look out for models with griddles, as then you’ll be able to use your oven as a barbecue.

How Jenny and RHys did it ‘The loft space was huge and I was determined to go for a luxurious look and make it a calm, peaceful space for relaxing. We found some excellent builders and agreed how the room should be divided. It was obvious that the bathroom should be to the right, on the other side of the stairs, which left us with a big rectangle. Although we needed wardrobes and storage, I didn’t want anything blocking the light or sticking into the room. The solution was the false wall unit in the middle, which provides storage behind, gives us a headboard and doesn’t block light from the roof windows. The whole thing took four months to finish and cost £50,000 for the build, but it was worth it. I’m absolutely thrilled with the way it has turned out. It feels light and spacious, and reflects our personal taste well.’

wning a piece of contemporary and affordable art has never been easier, thanks to the online Runway Gallery, which currently showcases 14 contemporary artists. Artist and founder SYRETT tells us about his vision for the gallery. Why is fashion so important? My background in the fashion industry is essential to understanding the concept behind Runway Gallery. There’s been much discussion in the art world as to whether fashion belongs in the arts. That sounds ridiculous, as it absolutely does. How do you find new artists? The gallery launched with 14 artists, but continues to grow. Instagram has been instrumental in my search for new artists. Some don’t use fashion in their work, but come from the industry. One newcomer to the site is Martha Haversham, whose witty Found Fashion collection uses scraps of rubbish to make mini fashion pieces, such as cigarette butts attached to a sculpted pair of legs in high heels. It appeals to my love of the extraordinary. What do you look for in a piece of art? Beauty has become a dirty word in the

how Corrina and toM did it ‘We moved into the house nine years ago, but didn’t do anything to the kitchen. The space needed a complete rethink. It was so cold and dark, unlike the rest of the house, which is lovely and bright, and the back door wasn’t in the right place to see the kids out in the garden. We needed something more family-friendly and decided to extend into the side return. Ruth Campbell from

architectural firm Campbell Cadey drew up five options for us and, although we liked different bits from all of them, we realised that it was better to choose one plan rather than mix them up, as each design was considerate of the sight lines and ceiling heights. The entire extension took five months to build and cost £160,000, with the kitchen fitting only taking around two weeks.’

Getting a designer-style kitchen like Corrina’s needn’t cost the earth if you fit new doors and fascias to existing carcasses Replacing doors and fascias can provide a quick, affordable refresh, to achieve a seriously impressive kitchen that punches above its price tag.

Q

Are all kitchens suitable? Check that cupboards are in good condition. Anything under eight years old should be fine but look for structural damage, particularly near the sink.

Q

How do I get the right size? Doors come in standard and made-to-measure sizes. You’ll pay more for made-to-measure, and delivery will take longer, too. Measure the doors in situ. ‘Measure from the back, as this is the squarest part,’ says Steve Larkin, director, Lark & Larks. ‘Measure height, then width, in millimetres. Generally a door is 5mm shorter than a cabinet and 4mm narrower, so if a cabinet is H720xW500mm the door would be H715xW496mm.’

Will the hinges line up? Whether you’re drilling the holes or ordering pre-drilled doors, measure carefully. With

doors still on, measure from the top edge to centre of the top hinge hole for the top hinge position. Repeat from bottom edge to bottom hinge hole. Measure each door, and note which side the hinges are on!

What about all the extras? Plinths, cornices, fillers and end panels are usually available in the same finish as the doors. Measure as before, but go bigger if anything needs to be scribed to fit a wonky wall or floor.

HOW MARY AND SIMON DID IT ‘The kitchen was dark and the peninsula unit carved up the space. Knocking through and extending to the side, as well as moving the staircase, allowed us to reconfigure the layout by positioning an island lengthways. I thought a bespoke kitchen would be beyond our budget, but our architect recommended Pluck’s plywood kitchens and we were impressed by the quality and price. I was uncertain about the run of blue units at first, but now I like how they stand out. We added a trio of “domino” hobs: one with two gas burners, one with a wok burner, and an induction hob. They’re spaced apart so the pans don’t clash and we use them all the time, because we like to buy and cook food, fresh, every day. Our builders fitted the kitchen for us, which took around three weeks and cost £8,000 including the larder cupboard.’

How Kate and andrew did it ‘We only had one bathroom, which Andrew and I shared with our young children, but I wanted a grown-up space where we could relax at the end of each day. Sacrificing a bedroom gave us the space we needed for a luxurious, boutique-hotel-style en suite. Andrew bought planning software called RoomSketcher and we spent months devising our layout. We took it to a designer at a local bathroom

company and she persuaded us to make some tweaks to it – such as making the dividing wall between the bath and wardrobes half-height rather than full – and suggested products and colours. The installation cost around £5,000, with the structural work coming in at about £30,000. It took eight weeks, then Hammonds came to fit the wardrobes. It’s the perfect antidote to busy family life!’

How to… plan a small bathroom With a bit of creativity even the tiniest of spaces can be reinvented with style and practicality

How do I get started? Kitting out a tiny bathroom might seem a challenge, but there’s no need to compromise on style. he couple always intended to extend, but when Rebecca became pregnant for the fourth time, they had to speed up their plans. ‘There was no space to enjoy being together or for the kids to run around,’ says Thomas.

Finding the space ‘There was an odd side-return area where leaves and rubbish collected. IT’S VERY VERSATILE Cladding can be used for numerous applications, from a central external feature to a small internal panel. It has the adaptability to cover all areas. IT LookS SmART Wood coverings work well together with other exterior materials. They can also be used to make an internal feature. THERE IS A cHoIcE of fINISHES Timber cladding can be left untreated so that it weathers to a silver-grey, or can be stained with UV oil. The latter route will require more maintenance though. ‘I’m raffling my home instead of selling it’ Eschewing estate agents and offering property as a raffle prize is growing in popularity, but the Gambling Commission is cracking down. Benno Spencer explains why he’s giving it a go…

enno Spencer, 33, lives in a one-bedroom, first-floor flat in south London, valued at £650,000, with his dog Peanut. Benno is the founder and CEO of property competition website Raffle House (rafflehouse.com) ‘Over the past 12 years, I’ve lived in all four corners of London. But I’ve never found an area where I felt truly at home until I moved to my current flat, halfway between Clapham Common and Brixton. I love the place and fully intended to live here forever – unless I got married and had children, that is. So it will be a really sad day when I finally have to move out. When the competition to win my home was first launched in April last year, the end seemed such a long way off. But now it’s creeping closer and reality is starting to kick in. So, why am I doing it? I’m basically the guinea pig for my own business. I set up Raffle House to create a sustainable platform where people can raffle off their properties in a legal, effective way. Having spent a year researching the business thoroughly – talking to experts and focus groups – I knew I’d found a way to make it work. The trouble was, I struggled to find any willingness among my friends to let me raffle off their homes on my untested website! That’s when I realised I had to put my own bricks and mortar behind the business. I like to think of it as a short-term sacrifice that will reap rewards for the future.

I think more and more vendors are considering these kinds of competitions as an alternative to estate agents, because of the slump in the property market, and also because it’s potentially a better way to ensure your home achieves its true value. Despite the growing interest, however, many raffles have been shut down by the Gambling Commission as they’ve been deemed to be an illegal lottery. A genuine prize competition is required to involve a test of skill or knowledge – in layman’s terms, that means you have to set a sufficiently difficult question that not everybody will be able to answer correctly.

Other property raffles have failed simply because the vendors haven’t made enough ticket sales to meet their reserve price. They’ve relied on word-ofmouth and the occasional piece of press coverage, rather than marketing the competition more effectively. With that in mind, we managed to crowdfund £250,000 from 270 individual investors to spend on advertising. The response that’s generated means I’m very confident we’ll sell enough tickets to award the property at the end of June. We’re certainly on track. If we didn’t make enough ticket sales, there would be a cash prize based on how many had been sold instead. But that won’t happen! The draw will be live-streamed, and take place on 30 June, in front of two independent adjudicators. After that, the winner could potentially move in – or start renting the flat out – within

weeks. The prize also includes up to £1,500 to spend on fees and a lump sum of £3,000 to cover ground rent, council tax and utilities for a year. To make things even easier, the flat is offered fully furnished and refurbished throughout. Mind you, the bathroom needs work, as Peanut decided to bite chunks out of the bath panel! We already have our next prize lined up – another beautiful little London flat. Our focus is on real homes that people can afford to live in. I was lucky to get on the property ladder when prices were far more reasonable than they are now. I paid £230,000 for my first house and it’s now worth around £750,000. I wish I still owned it! Nowadays, owning a home is beyond a dream for many people, particularly those under 40. A property raffle gives everyone a seriously good chance of owning their own home outright – and the odds are 1,000 times better than winning the EuroMillions. Aside from not wanting to raffle off their own homes – well, not yet, at least – my friends and family have been hugely supportive. Nobody advised me against doing it – they know I have the drive and determination to make it a success. Some of them even invested through the crowdfunding scheme, which has given me a real vote of confidence. And everyone is keen to know exactly how it all works. Where will I move to next? I realise the clock is ticking, but I still have no idea. I’ll probably rent somewhere initially. I love London but I’m originally from Dorset and, as I grow older, I’ve come to realise I’m probably just a country boy at heart. So I like the idea of moving to the countryside, and taking Peanut for long walks through woods and fields instead of her daily trip to the park. I think she’d prefer that, too! Ultimately, I’ve put my heart and soul into my current home. But when the time finally comes to leave, I know I’ll have a huge sense of achievement and be filled with excitement about the future.’

Red rice with feta Takes 35min serves 6 IngredIenTs ● 2tbsp mild light olive oil ● 2 cloves ● ½tsp ground allspice ● 1 bay leaf ● 300g basmati rice ● 400g tin chopped tomatoes ● 500ml vegetable stock ● 1tbsp chopped coriander, plus a few leaves to garnish ● 100g feta cheese, crumbled

1 Heat the oil with the spices and bay leaf.

Fish tacos Takes 30min serves 2 IngredIenTs ● 1½tsp smoked paprika ● 1½tsp garlic powder ● ½tsp chipotle powder ● 300g grilled fish fillets ● 250g cooked, shelled prawns ● 6 soft corn tacos ● ¼ red cabbage, sliced ● 2 limes, juiced FOR THE CORN SALSA ● 2 corn cobs, kernels sliced off ● 1 avocado, sliced ● 1 banana shallot, finely chopped ● 1 bunch coriander, leaves only ● 3tbsp olive oil, plus extra for frying ● 1tbsp red wine vinegar ● 1tbsp honey ● Lime wedges, to serve ● Sour cream, to serve

1 Mix together the paprika, garlic powder and chipotle powder. Toss the fish and prawns in the spices and leave to marinate for 10min.

2 Preheat the oven to 200°C/Fan 180°C/

Gas 6. Wrap the tacos in foil and place in the oven. Toss the cabbage in the lime juice and set aside.

3 To make the salsa, mix together the

corn, avocado, shallot and coriander leaves and stir in the olive oil, red wine vinegar and honey. Season well to taste.

4 Heat a glug of oil in a frying pan, and

fry the fish and prawns over a high heat for 2-3min, until slightly charred and heated through. Serve the tacos with the fish, red cabbage, salsa, lime wedges and sour cream.

1 Heat the oven to 180°C/Fan 160°C/

Gas 4. Grease a 2-litre bundt tin (or use a 23cm round tin with a ramekin in the middle). Put a quarter of the pineapple in a food processor and whizz until smooth.

whisk, cream together the light brown soft sugar and 200g of the butter (reserving 25g) until very light and airy. Add the eggs, whisking well after each addition. Fold in the processed pineapple, flours, baking powder, spices, lime zest and a pinch of salt. Don’t worry if the mixture curdles.

3 Pour the cake mix into the prepared

tin, smooth the surface. Bake for 35min or until a skewer comes out clean. Leave the cake in the tin to cool.

4 For the topping, melt the rest of

the butter in a frying pan and when it begins to bubble, add the pineapple

pieces and fry for 5min on each side, until golden and caramelised.

5 To make the syrup, melt the salted

butter and muscovado sugar in a saucepan over a gentle heat. Once dissolved, bring the mixture to the boil, stirring constantly. Boil for 2min until slightly thickened, then remove from the heat and stir through the lime juice and tequila.

6 Turn the cake out, make a few

holes over the surface and pour over some of the syrup. Top with the pineapple, grate over lime zest and pour over extra syrup. Serve with vanilla ice cream.

1 Preheat the oven to

180°C/Fan 160°C/Gas 4. Combine the tomato salsa and chipotle paste. Put the chicken into a casserole dish that has a tight-fitting lid.

2 Season the chicken

generously with salt and freshly ground black pepper, sprinkle over the garlic and combine with the salsa mixture. Add 150ml water, cover, and cook in the oven for 50min.

3 Heat the tortillas in the

microwave, according to pack instructions. Shred the chicken and serve on top of the tortillas with lime juice, a dollop of soured cream, and a sprinkling of spring onions, tomatoes and chilli pepper pearls, if you like.

IngredIenTs ● 1tbsp olive oil ● 1 onion, finely chopped ● 1 garlic clove, finely chopped ● 1 red pepper, thinly sliced ● 1 red chilli, finely sliced ● 400g can chopped tomatoes ● 4 eggs ● 4 flour tortillas ● 1 avocado, sliced ● 100g Cheddar cheese, grated ● coriander leaves, to serve

IngredIenTs ● 500g butternut squash, finely chopped ● 1tbsp olive oil ● 1 red pepper, sliced ● 1 red chilli, sliced ● 4tbsp chopped olives ● 1tsp paprika ● 4 flour tortillas ● 6 spring onions, finely sliced ● ½ pack fresh coriander, roughly chopped ● 125g mozzarella, torn ● 100g Cheddar cheese, grated ● salad, to serve

1 Toss the butternut squash with the oil, red pepper, chilli, olives and paprika, then microwave for 5min on high, or until tender.

2 Heat a non-stick frying

pan over a medium heat. Put a tortilla in the pan and spoon over a half of the butternut squash mix. Sprinkle over some of the spring onion, coriander and cheeses.

3 Cover with another

tortilla, heat for 1-2min then flip over carefully and fry for a further 1½min. Chop into wedges. Repeat to make a second and serve with salad.

Takes 30min serves 4

1 Heat the oil over a medium

heat in a frying pan and add the onion, garlic, pepper and chilli. Cook for 5min until beginning to soften. Pour over the tomatoes and cook for a further 5min.

2 Make 4 holes in the

tomato mixture and crack an egg into each hole. Cover with a lid and cook for 5min until the eggs are set.

3 Meanwhile, heat the

flour tortillas in a frying pan for 1min until slightly crisp. For each tortilla, spoon over a quarter of the tomato mixture and one of the eggs. Top each with some avocado, cheese and coriander, and season with black pepper to serve.

She lives nearby in a four-bedroom detached house with her husband Barry. ‘As a little girl, I loved caravan holidays – the tiny space to sit, eat and sleep. Having a beach hut recreates that feeling. The fact that I bought it with my mum makes it even more special as it became a reminder of those childhood memories and also a place to make new ones. We got it for the family to enjoy. Now my son and daughter are grown up, it’s become my solitary space. Men have their sheds; I have my beach hut. I call her Betty because it’s an upbeat name. She’s positioned right near the water, with views of Blackwater from her doors. There are 450 beach huts here, one café and no amusement arcades. It’s simple and quiet and the light is beautiful. efore Gareth retrained as a builder, he was a landscaper and a brilliant one, at that. He’d long been planning his ideal garden – even before we bought this house – and watching it finally start to take shape gave us such a buzz. The house had only one previous owner, and although he’d maintained the garden, the crazy paving gave it an outdated look, and an apple tree right in the centre made for wasted, unused space. The patio was first to go, then we raised a portion of the ground closest to the house so the floor would be level with the kitchen, as we loved the idea of gatherings spilling out into the garden. We didn’t have the heart to remove the apple tree, as we’d heard the guy before us was particularly fond of it, so we designed the lower half of the space around it. Gareth was set on a having a rocky, almost cliff-like divide between the two halves, so brought in huge boulders to create the look he wanted. He also really loves water, so a pond was non-negotiable, and he made a fireplace with bricks we salvaged from inside the house. I love the smell of grass, but it just seemed impractical with a dog, so we chose artificial instead. It doesn’t have the charm of real grass, but it doesn’t need any care. We then created a slope from scaffolding boards to connect the two zones, and filled every corner with plants to create our very own oasis.’

E

xtending our house was always going to impact heavily on the garden, but we had plans in place for a makeover as soon as the builders left. The challenge was to create somewhere sheltered, where I could paint furniture for my job and still have space for a table to entertain. I love symmetry and in such a small space it was really important to make it work visually. I took measurements and drew up plans to give to the builder, paver and shed company. We settled on quite a formal looking design with raised beds framing the dining area. We put in new fencing and double gates to allow for rear access, and a concrete base for the shed to sit on. The flower beds are built from breeze blocks, which we rendered, then painted. Chris lined the sides with heavy duty membrane and put gravel in the bottom for drainage, before filling with compost. Chris’ company, Distinguished Gardens, did our planting, ensuring we’d have colour throughout the year. Gardens as small as this can be really tricky to design, but I really feel that we’ve achieved everything that we set out to do.’
