I

'm feeling a big, bold shift: to layered interiors that look well-dressed, groomed, cultivated, and even a little matured. ‘Juxtaposition’ is such an unhelpful term to describe a way of decorating because it conjures up factions of style skirmishes that need to become more and more extreme to make the point of difference. I feel there's less of that Guccification shock happening at the moment, and more considered interestingness to catch the eye. The new mood in decorating is not some radical aesthetic, but a desire for dimensions, narrative, character, and a bit of an edge to make it chic. Designer John Jacob gives great interviews, because he describes the practice of decorating and not the process. I couldn't wait to read about his latest project, Sunset Boulevard, with its peach melba walls and bamboo joinery. Coming from him, it seemed like an out-of-classical idea. But not really, because the colours are composed to echo those you experience in a day at the beach,

from seafoam to sunset. It's an organised and contained expression of place, finished off, oldschool style, with plasterwork ceilings. Similarly, American A-list designer Steven Gambrel took it to the max in Lines of Vision, confidently reclaiming the gravitas of a London apartment by adding surprising twists and luxe attitude. Lastly, and in total contrast to the zesty apartments just described, please consider the ballad to chalky beige and silky, snowy whites in Carte Blanche, a superbly-orchestrated interior that's a vision of contemporary luxe we're loving now. H

ow do you begin a painting? My work is intuitive. I embrace a visceral approach to making art that doesn’t conform to the normal rules. I’m a minimalist, and what I do might seem simple, but only in appearance. I strive to capture emotions and define a new type of aesthetic. The paintings are made up of a variety of materials, but mostly acrylic and charcoal. Material is my first reference for an emerging image or sculpture. What metals do you use for your sculptures? at the moment, I’m combining different metals, such as stainless-steel, solid-brass plates and aluminium. This makes it rather complicated, as different metals require different methods of welding. I do my industrial riveting by hand and work on all the sculptures myself – cutting, assembling and handling the finishes. Your canvases and sculptures seem to be in dialogue.... They’re all conscious dialogues based on the time spent producing them, being with them and the feelings I have while creating them. My work represents my emotions. For example, the current body of work I’m producing is titled ‘holding on to each other’, and communicates our lack of tolerance towards one another, while also realising the importance of being there for others. You’ve been quoted as saying that damage and decay are the inspiration for your work. What attracts you to these states? It’s about finding beauty in the imperfections in nature and life, accepting the natural cycle of growth, decay and death, and celebrating the cracks, crevices and marks that the passage of time leaves behind. You collaborated on a fashion project with David Tlale. How did that come about? I was introduced to david through a mutual friend who thought that we would get on and inspire one another. My artwork was printed onto fabric for his garments for the 2016 Mercedes Benz Fashion Week. after the show, a further body of work was produced, consisting of photos taken of the models wearing the garments. These images were then reprinted onto canvas and repainted again – it was almost like a construction and deconstruction process. a ‘ rt meets fashion’ or ‘fashion meets art’ was the thought process behind it. What’s your next big project? I’ll be holding my first solo exhibition in Porto, Portugal, in June, and then another show in Lisbon later in the year. I’ll also be setting up a studio in Porto, and I’ll travel between there and my Johannesburg studio. n 30

hen he launched his own interior-design company at the age of 23, Bruce Fyfe was young but ready. The durbanite had already worked for KZn heavyweights Cécile & Boyd, and Mario rodrigues. ‘Mario pretty much kicked me out the door after I’d been working for him for two years,’ laughs Bruce, recalling his mentor’s conviction that he was ready to go it alone. sixteen years later, Fyfe Boyce (named after his business-and-life partner, Kelsey Boyce, as well as himself ) is a soughtafter studio, with projects around the country and in Zimbabwe. ‘When Kelsey and I met in 2005, he had come from a corporate-marketing, systems-based background,’ says Bruce. ‘I started teaching him about design.’ The duo – which is known for its contemporary-classic approach, affinity for spatial groupings, and the creation of scale – also has experience in interior architecture and structural design.

at the moment, they are working on a project in sea Point, transforming a penthouse that Bruce describes as being ‘stuck in the 1960s’ into a balance between chic glamour and laid-back relaxation. ‘It’s got eastern and asian influences, but it still has our classic base, with panelling details and a lot of texture.’ In Zimbali, they’re transforming a family home by turning separate rooms into an open-plan environment. ‘We’re making it more friendly to its position overlooking the forest toward the sea,’ Bruce explains. ‘It’s a big house that needs soul poured into it.’ ‘soul’ is what they describe as the common thread running through their homes. ‘It’s an environment that lives,’ says Bruce. ‘It’s not about creating a formal sitting room with a locked door that people reserve for special occasions. resented recently in Milan during Fuorisalone 2019, each Objet Nomad is an imaginative interpretation of the idea of travel, by contemporary design names. The first year in four basic steps

Prune a dormant, thumb-thicksize sapling about knee-high or 45cm from the ground, when you plant in late winter. Pinch off all extraneous buds, or prune lower to a height where the configuration of leafing buds suits you. These will form the structure of your tree. In midsummer, prune to slow growth and begin to shape your tree. Remove any redundant branches. In winter, prune to open the interior of the tree and form a well-balanced shape. Remove dead or diseased material.

he first step to growing a small fruit tree is to lop off your standard, nurserybought fruit tree at a height of 45-50cm (at the point where the width of the stem is thumb-sized, lower if not). Make the first cut just above and away from a bud, at a 45-degree angle. several buds should remain between the cut and the base of the tree. Your new sapling will now be a knee-high stick. This might seem harsh, but the compact structure and strength of your impending mini tree depends on it. ‘heading’ your tree whilst still dormant (winter or autumn, depending on the fruit variety) means it will reap the benefit of nutrients stored over summer. come spring time, growth and branching will june 2019 houseandgarden.co.za

You Will Need

occur – the perfect combination of conditions to get a small fruit tree off to a good start. The resulting tree will be shorter, stronger and easier to care for, but it will produce the same amount of fruit as its larger counterpart. Where multiple sprouts grow on a single node, gently pinch off, leaving one bud per node, which will ensure a single branch – this is what you want at each node point. The idea is for the tree to be pushing energy into side branches, so if by mid-summer your main stem is reaching for the skies in height, reprune it back to your original winter cut. Pruning height in mid-summer reduces root growth and becomes a perfectly tactical move to slow tree growth – a desirable result for a compact, mini fruit tree. In subsequent years, keep pruning, as above, making architectural decisions in winter and taking down height around mid-summer if necessary. n

I

recently went on a moss-garden building course at Babylonstoren, which was fascinating – it involved the careful and intended placement of rocks in relationship with one another, before the final planting of the glorious mosses. The day really distilled all my experiences of working with rock in gardens. rock in a garden requires careful handling. It can be sublime, whether naturally occurring or purposefully placed, but can very easily slip over into shapeless misunderstanding or fearful kitsch. With the move towards more natural, less manicured gardens, rock is a wonderful addition. It can be used to great effect for steps, pathways, walls, changes in levels or focal points.

Placement of rock is a great skill, which some very observant people have an instinct for, but which can also be learned with time and experience. here are my views and tips: Don’t mix different kinds of rocks together. rather use various sizes and shapes of a similar rock type. If you’re after creating the effect of rock having occurred naturally, use the biggest sizes you can manage or afford. Very large rock will probably require placement by machine. Most large rocks in nature are partially submerged. This is because they have been there a long time, often with soil and plants gathered around their base. You can use the submerging process to hide the placement of smaller ‘chock rocks’, which may have been

necessary to achieve the desired angle of the main rock. Inspect your rocks carefully and turn the best looking sides towards the viewer, and the broken or ugly sides away. If the rocks have fissures, streaks or other natural markings, in nature these would usually all flow the same way. so when placing two or more near each other, make sure the patterning is angled similarly. Take particular care not to damage and scrape the rocks during transport and placement. If you have naturally occurring rock formations in your garden it’s best not to disturb them. rather plant to complement their character and that of the garden. Plants such as aloes and succulents give a typically african or dry look when combined with rock. alternatively, green grasses and watsonias will create a more meadow-like look. pon entering this apartment, on the 85th floor of a 300m-high building nicknamed ‘The Billionaire Building’, one is struck by a majestic view of central Park, which appears like a green carpet framed by a forest of sky scrapers. In new York's real-estate race to the summit, this is one of the most coveted addresses, bought off a building plan, and promptly reviewed by architects to maximise the enjoyment of the incredible 360-degree view. The decor obviously had to match the exceptional standard of the apartment. ‘The owner gave me carte blanche to express my vision and my savoir-faire,’ said chahan Minassian. he called artists and artisans with whom he regularly collaborated and asked a ceramicist Peter Lane to build a 17m-long wall of terra-cotta glazed slabs (the longest ever made) to separate the living room from the entrance. The walls were covered with braided suede or parchment. The carpets and furniture that were not bought at an antique shop were custom-designed. True to his taste for ‘monochromatism’, chahan added shades of white, from the

chalkiest to the creamiest, enhanced here and there with a touch of black and bronze. ‘It's a tone overdose!’ he said jokingly. This magnificent partition plays on contrasts between raw and precious, smooth and textured, soft and rough: with travertine opposing cashmere, the dullness of stone and the transparency of rock crystal. ‘With regards to the choice of works of art, we worked with the owner,’ he added. This museum-like collection, a roll call of greats including Fontana, Twombly, dubuffet, Miró, Matisse, Picasso and a very rare Warhol, were chosen because they are white. The selection of furniture and objects from the 20th century, predominantly French, reflect the taste and vision of chahan ‘It's a place that conveys my vision of luxury, for the comfort and pleasure of its occupants. It's very discreet, refined and nothing is ostentatious. even more than in my own Parisian apartment, I was able to express the essence of my art and style here,’ concluded the interior designer. s a designer who doesn't like doing the same thing twice but whose style identity is well-developed, John Jacob, of John Jacob Interiors, was the ideal candidate to create an atypical beach house that offered high-end elegance and a fresh take on a tried-and-tested recipe, without being outlandish. ‘When I first met with the client, I sensed he had a well-developed sense of style. he also wanted something fun and vibrant, and I wanted to avoid stereotypes,’ explains John. The designer's upbeat opulence and fearless use of colour was a far cry from the low-key road many designers take with coastal briefs. ‘My approach was to be unapologetically maximalist. and then, when I felt I'd done too much, I'd stop,’ he explains. despite its unmistakably breezy air, the house is a million miles from the south african coastal cliche. ‘I didn't want to express that casual-coastal-meets-bushlodge recipe with this space,’ he says. That aesthetic can slide into ‘schlumpfy’, so it was to be avoided at all costs. ‘It's a nice idea but it's hard to make ‘schlumpfy’ chic.’ and chic this home is courtesy 68

below and opposite page rather than the typical ‘schlumpfy’ beach house aesthetic, hollywood regency dominates with a materials toolbox of lacquer,chrome and antique mirrors. however, the profusion of bamboo and fun effervescent colours still situates you firmly beside the seaside

of a heavy dose of hollywood regency hedonism. Lacquer, chrome, antique mirror and bamboo all feature abundantly and are typical of the hollywood regency style, which came into being in the 1930s, as directors wanted to bring star power to films, and so decorated accordingly, with opulence in mind. This then trickled down in home decor, made accessible by designers like dorothy draper. ‘I'm crazy about the cheeky eclecticism of the style,’ says John. Its extravagant but sleek-andplayful attitude was a fitting starting point for a stylish, seaside home that doesn't take itself too seriously. The tropical vibe you see is a happy accident resulting from this style influence, as opposed to the house's location, and the profusion of bamboo motifs, palm print and fun effervescent colours keeps you situated by the sea. The palette, especially, couldn't be more

perfect for the proximity to the coastline, and yet it's purely a product of the period – the colours most in vogue during hollywood regency's reign offer a sense of opulent escapism that's on point here. The designer has been clever about how he's used colour to energise and uplift. With the interconnecting communal spaces as you enter, all in varying shades of blue – navy, seafoam, turquoise – and shots of unexpected colour only in the rooms that are self-contained (from chineselacquer red, to dreamy coral and elegant grey), you experience the full spectrum, from sea spray to sunset, punctuated by the owner's impressive art collection, which adds an extra dash of oomph. ‘It's the contrast within the spaces and inbetween spaces that injects vibrancy,’ notes John. Pattern, however, is restrained, with only one or two motifs per space (in keeping with the style), so the scales never tip over into stuffy and serious, and the scheme feels light instead. ‘The house is quite maximalist overall, so the way to tone it down was through repeating elements,’ says John. This consistency of detail is a thread that runs throughout, and is, in fact, a signature of the designer's. ‘I like the idea of repetition – it offers harmony and simplicity, which you don't get by trying to express too many ideas.’ This is most crucial when it comes to the architectural detailing, however (here, it's antiqued mirror doors, for example). ‘Then you can colour it in in mad ways and it all still holds together beautifully,’ he says. over-designed.’ When arne first arrived, this house had been engulfed by planting. ‘The garden had been crammed with conifers and shrubs, so we couldn’t even see how big the space was – there was no sense of proportion,’ he remembers. arne and his team removed countless laurels and hollies, allowing the house to breathe. The first step was to get the walled kitchen garden up and running. With low, box hedges and lovely gnarled apple trees, the framework was still in place, albeit overgrown, so they set about clearing and redefining the garden here too. at that point, the owners had young children and knew little about gardening, so growing vegetables and herbs seemed like the right introduction. ‘I always feel it’s a good thing to start people off in the kitchen garden, because you can involve the children,’ says arne. ‘It got them out into the garden as a family.’ however, the beds were too large for them to cope with all at once so, for the first year, they sowed some of them with an annuals seed mix that looked wonderful and required little effort. Today, the kitchen garden comes to life in the spring, with a frothy mix of apple blossom, tulips and hellebores, followed by the large, yellow,

bowl-shaped blooms of Paeonia mlokosewitschii and tall blue camassias in spring and early summer. Tulips appear in profusion in what the owner calls ‘The secret garden’ – another smaller garden with a grid of timber-edged beds. Tulip varieties are chosen each year by the family, and are followed by annual flowers that can be cut for the house. The area at the front had previously been used as a car park, so arne made a new space for cars to one side of the house, creating an entrance courtyard partially enclosed by a line of pleached red sentinel crab apples. The main feature is a delightful contemporary knot garden with hummocky box snaking through the place in an irregular pattern, and taller yew topiary forms in contrasting shapes. ‘The lines are broken up unconventionally, so it isn’t too formal,’ explains arne. Tulipa turkestanica and pulsatillas emerge from gravel in spring, followed in summer by a soft, flowery cloud of lavender and other self-seeders. Beyond this is a new area of the garden, still under development. ‘The idea is that, from the back of the house, you look onto a lush, green expanse, as though into a park,’ says arne. There’s a ribbon of wildflowers in front of a hornbeam hedge, but all the cultivated flowers are in the borders next to the house or hidden in the walled gardens. ‘It’s a bit like the house,’ explains arne. ‘From the outside, you see the historic façade, but when you go inside, there is the contemporary interior – it’s a lovely contrast.’ This is just one example of the garden’s organic evolution over time. ‘I think we’ve all grown into the space in a natural way,’ says arne. ‘all my gardens evolve from a passion for gardening rather than from design itself – it’s all about the art of horticulture, about creating spaces that can be gardened.’

dig in Introducing children to gardening is a meaningful and fun way to increase their awareness of where food comes from and the importance of the environment in everyday life. Select an area in the garden that receives maximum sunlight. Pep up the soil with lots of compost and organic matter. Vegetables root in the top 20cm of the soil so you won’t need more than that. Remember the healthier your soil, the healthier your vegetables are going to be. For balcony gardeners, a collection of pots in all shapes and sizes work just as well as a garden. Make sure your pots have adequate drainage to avoid root rot. Grow potted vegetables in a mix of compost and potting soil, and water frequently. Keep children’s interest piqued by turning your allocated space into a place of adventure. Add a teepee or treehouse and cover it 82

with flowers, edible granadilla or climbing beans. When selecting what to grow, remember those that grow quickly, smell good and can be snacked on are sure winners. Start with garden peas, bright-red and yellow cherry tomatoes, colourful radishes and a variety of interesting salad leaves. Incorporating ‘touchy-feely’ unique sensory fruit, flowers and leaves with a range of textures can be great for children to experiment with. Good ones to try are the smooth, round Tonda di Parigi carrots; crinkly-leafed, giant Japanese mustard greens; Romanesco cauliflower with lime-coloured, beaded and pointed florets; rubbery swiss chard (available in a variety of striking colours); spiky artichokes; and cucumbers. t's fair to say the name steven gambrel won't ring as many bells in south africa as it does in the us, where the new York-based interior designer has long been celebrated as a rare talent. Perhaps that's set to change, as steven has recently undertaken a handful of projects overseas. he's currently working on a house in holland Park, england, where he finished one in Maida Vale last winter. he also recently completed this flat in Mayfair. It's a pied-à-terre for an existing client, whose house in chicago steven also decorated. ‘Its interior had been gutted by a developer,’ steven explains. ‘But none of the new surfaces or floor plans held any appeal for us.’ The entrance hall immediately establishes how he decided to rectify this, as a tinted, rough-coat plaster now covers the walls and ceiling. ‘I liked the idea of dry, textured plaster and I wanted

to reference London masonry,’ he says. The designer was also influenced by the style of Villa empain, an art deco-style house, built in Brussels in the thirties, which is now a centre for the arts. This can be seen in the insert-plaster door frames and over the doors. here in the hall, a veined-marble floor and a ‘Travertine’ console, designed by steven, lend a monumental quality. The icy tones of the entrance extend to the dining room, which is centred around a Maison Jansen brass and gun-metal table, with an original Lucite top, from the fifties. These materials appear again in the ‘sputnik’ chandelier by Bakalowits & sohne, which steven found in Paris. The oversized, Italian, flush-mount wall lights were another Parisian find. Two tons of plaster delineate the sitting-room walls, including a waxy black Venetian plaster that extends from the floor to the chair rail. ‘It makes the ceilings feel taller and everything above that line sort of floats,’ he enthuses. originally, the developer dropped the ceilings to allow for recessed lighting, which he subsequently raised, resulting in an increase of approximately 20cm in height. It was important to steven that this space should feel like a collection, not ‘just a decorated room’. as he explains, ‘I like that masculine, english but decidedly twentieth-century feel.’ as such, the designer has furnished the room with some of the greats of this period. While the armaturestyle chandeliers are Italian from the forties – the glass design attributed to giò Ponti for Fontanaarte and the brass by guglielmo ulrich – the elegant button-back sofa is a custom order from William haines, based on an original design by the american from 1951. Like a vivid hung tableau, the adjacent snug carries the pale, plaster serenity of the flat, with its walls covered in créations Métaphores velvet, in a colourway known as absinthe. The bespoke Bronzes de France doors were covered in tooled leather by atelier Mériguet-carrère. It is, as the designer notes, like opening a jewellery box. With its sumptuous upholstery in rich, mossy greens, it's an eye-catching contrast to the plain walls of the sitting room. colour has been used to similarly arresting effect in the study, thanks to the ‘Travertine’ silk wall covering, from Fromental, and a geometric Tibetan rug, from stark carpet, in oxblood and chocolate, on a pale background. In the main bedroom, the wall coverings are ‘slub silk’ by de gournay, in three shades, which steven's team used to create the illusion of architectural detail. The same colours are visible in

the custom border of the Leontine bed linen. The chimneypiece is a three-dimensional tour de force of stones mounted in resin. ‘We commissioned it from an artisan in India – it has a wonderfully organic, flowing feel,’ says steven. In the kitchen and main bathroom, the designer’s dramatic use of stone is off-set by finishes and metals that convey a sense of warmth, and fixtures that invite you to touch them. It’s these details that steven relishes – in the main bathroom, stylish, octagonal, bronze legs are half buried in the bank of cabinets they support. ‘They're really elegant when you open them,’ he says. similarly, unexpected elements in the kitchen – including a narrow 1880s satinwood and brass, drop-leaf table (originally from a yacht) and cube-shaped pendants from Fuse – punctuate the seriousness of the room. steven cites the mingled refinement and roughness of Venice as a touchstone, as well as the elegant yet eccentric nature of Mayfair. as he says, ‘It's the contrast that makes things sharp and exciting.’ S.R. space both livable and eclectic was the brief from the owners, a professional couple who recently moved to south africa with their children. The challenge to infuse the fivebedroom house with a lighter energy – originally, the walls were all a shade of oppressive grey – went to head Interiors, a renowned hyde Park interior design consultancy. co-founder Michael harrison had originally been speaking to the owners about another project and, impressed with the firm’s eclectic yet sophisticated design signature, they enlisted his expertise on this project, too. ‘not only was there an immediate rapport, but they were also drawn to our process, which is less prescriptive, and more intuitive to

interpreting a client’s lifestyle and needs,’ recalls Michael. sarah hume, senior designer at head Interiors, took the lead on the project. ‘often clients are unsure, but they were very clear about their likes and dislikes. Their decisiveness was really refreshing, so we were able to learn and understand the sort of mix that they were aiming to achieve,’ explains sarah. The house is tucked away on a leafy street in sandton. The entrance is dramatic, unexpected and glamorous, dominated by a three-tiered, 14-arm, matte-gold, oak-leaf chandelier, and its reflection on a bank of gilt-framed mirrors behind it. a marble-topped console, ottoman and two arched-back chairs, upholstered in purple and grey, make up the scene, which sets a punchy but elegant tone for the rest of the house.

The home is a riot of colour in some areas and restraint in others. Take the drawing room, to the left of the entrance hallway, as an example. a wall of topaz, origami-inspired wallpaper, and an elliptical-shaped mirror mounted above the fireplace, are the focal points. In a house where unusual shapes, colours, prints and textures clash and commune, it's surprising that the subtle black-and-white monochrome weave of the armchairs was the starting point, and is a design theme that also features in the wood carvings of the bureau's doors and the stylised zebra print of the rug. ‘The owners wanted this to be a special place where you could have cocktails – quite a grown-up room with a slight african flavour, but also quirky and eccentric,’ explains sarah. This space is poles apart from the minimalist main bedroom and bathroom, with its floor-to-ceiling marble walls and white enamel cabinetry. This is june 2019 houseandgarden.co.za

different again to the family room upstairs, with subtle african flourishes, such as West african masks, shields, and a photograph of an arbore woman, taken by photographer david Ballam in the Lower omo Valley, ethiopia. other richly-layered but natural-toned rooms are the upstairs guest rooms, in tones of cocoa, tan and pale grey, brought to life by furnishings and quilted linens that add texture and dimension. biza’s reputation as a party island goes back to the 1960s, when hippie culture flourished here, and the island became a de facto place of creative inspiration for an international set of intellectuals, artists and hedonists, all attracted by its permissive culture and liberal freedoms of course, the island’s history is far richer than just the last 50 years. It was founded by the Phoenicians in 654Bc, who are thought to have dedicated it to Bes, an egyptian deity and god of protection. Bes used music, merriment and dancing to ward off evil, and his spirit clearly remains, if the droves of partygoers that descend upon the island every summer are anything to go by. There’s a tangibility to the island’s history, too, for in Ibiza’s old Town the ramparts of the coastal fortress walls are considered the best-preserved in the Mediterranean, while the existence of some 4 000 sacred tombs, carved underground into the hillside, make it the largest necropolis in the world. Ibiza has its fair share of mysticism, too. Just off its shores is an uninhabited island called es Vedrà, where ulysses was believed to have been lured from his ship by the sirens in homer’s Odyssey. not to mention nostradamus, who predicted in the 15th century that june 2019 houseandgarden.co.za

Ibiza would be earth’s final refuge after armageddon. he could well have been referring to Los Patios, an organic hideaway that is set to become the destination of choice for in-the-know locals and sophisticated travellers seeking exquisite organic food and great company amid inspiring, beautiful surroundings. due to open later this year, Los Patios will focus on wellness and culture, with ample facilities including an outdoor gym, spa and massage cabins, plus two restaurants open to the public that will serve organic food only. The location is idyllic, set as it is on an ancient Phoenician farm dating back some 2 500 years with 1.3 hectares of gardens. It’s a place beloved by the islanders who remember it as La Masia d’en sort, a popular restaurant in the 1970s that was frequented by everyone from the King of spain to Julio Iglesias, Mikhail Baryshnikov and The rolling stones. When south african entrepreneur and philanthropist david acquired it four years ago, he wanted to recreate the oasis he had discovered as a child. ‘I first went for dinner at La Masia d’en sort with my father, who lived on the island in the 1970s,’ he recalls. ‘I remember it as a magical place and very much a place of fragrance, with a lemon grove that was constantly either in flower or heavy with fruit.’ although david’s association with Ibiza began with his father, he spent a lot of time on the island in his early twenties and has owned roman Polanski’s former home in Ibiza for more than a decade. ‘Ibiza is a home away from home away from home for me,’ laughs david, who is now London-based. ‘It reminds me of south africa in that it's equidistant to the equator, and the light, the seasons and even the landscape are

very similar.’ That david spends a lot of time here with his three children is down to the balance it offers his family. ‘There’s a deep sense of tolerance here and it’s a happy place for children to grow up and a safe haven for those who are more open-minded.’ of course, Ibiza has changed over the years, most noticeably on the coast, where the arrival of mass tourism led to the rapid construction of hotels. ‘I often hear people reminisce about the good old days on the island,’ says david, who is mindful that Ibiza went from being a place of abject poverty to one that today supports 150 000 residents with tarred roads and better infrastructure. a ‘ nd I just have to laugh when the eighties jet-setters complain about the island having lost its magic for I’m sure the hippies said the same thing

about them.’ and yet, Ibiza’s hippie vibe is alive and well in that the vast majority of the island remains untouched by mass tourism. ‘The island is full of smaller coves that are hidden from the masses and restaurants that don’t draw the cash-spending mega-wealthy – it’s this Ibiza to which we withdraw,’ he says. To this end, Los Patios was created to give those who call the island home a place to escape from the summer madness and a place in which to meet during winter. and for those who visit from afar, the prospect of a delicious, organic meal with produce from the garden awaits. david’s vision to restore Los Patios to its former glory and authenticity as a working farm, organic oasis and meeting place is, in many ways, continuing on from Ibiza’s early days as a creative Mecca. ‘I want it to be a hub for creative and inspirational people. given its location, just outside of Ibiza town, and therefore on the school run, I hope it will be a place filled with the laughter of children after school and on the weekends, too.’ n 8 lospatiosibiza.com june 2019 houseandgarden.co.za

Lexus reveals its new genre of luxury vehicle: a flagship crossover combining high performance with unrestrained luxury. The Lexus LF-1 Limitless is a showcase of technology, innovation and the latest evolution of dazzling design he design language of the Lexus LF-1 Limitless is rooted in the simple yet elegant design concept dubbed ‘molten katana’. This design visualisation fuses the organic shapes of liquid metal with the sharp edges of a traditional Japanese sword. Imagining that shift from a smooth, flowing mass into a solid, chiselled shape formed the basis for the fluid, yet aggressive, design of the LF-1 Limitless concept. ‘This is our vision for a new kind of flagship vehicle that embraces crossover capability without giving up the performance and luxury delivered by today’s top sedans,’ says Kevin Hunter, President of Calty, the Toyota-owned Design Research Centre in California where the LF1 was crafted. ‘The LF-1 Limitless concept incorporates imaginative technology while creating a strong emotional connection by improving the human experience for the driver and passengers.’ Maximum comfort for every passenger was the goal for the cabin. The Lexus LF-1 Limitless concept adheres to the Japanese tradition of omotenashi, or hospitality, welcoming all who enter with equal enthusiasm. The front passenger space is far more open, with even fewer controls and a wide unobstructed

dashboard. Those in the back get the same seats as those in front, with expansive legroom and individual display screens for adjusting the climate control or entertainment options. Lighting plays a key role, too: engaging the ‘start’ button initiates a dramatic, ambient lighting sequence based on which of the several available driving modes is engaged. The cockpit is designed to let the driver concentrate on the task at hand; analogue knobs and buttons have been replaced with motion-activated controls and a minimalist display directly ahead of the driver. There is also a four-dimensional navigation system that builds on traditional systems by adding time into the equation. It acts as a concierge, anticipating the needs of the driver and passengers based on the progress made, traffic and road conditions along the programmed route, and then suggesting fuel stops, rest breaks and restaurants. It will even make hotel reservations. Navigation and route information is presented on the in-dash monitor and the rear-seat entertainment screens, or wirelessly transmitted to passengers’ tablets and smartphones. The vehicle even adapts to your driving style. Shaved Carrots with Charred Dates If you like, after carving the roast, separate the bones into individual ribs and pop them back in the oven to crisp up. Serves 8 680g carrots, trimmed, scrubbed, shaved on a mandoline or very thinly sliced into rounds Kosher salt 3 large blood oranges or 2 small grapefruits ¼ cup extra-virgin olive oil 2T fresh lime juice 2T unseasoned rice vinegar 10 Medjool dates Tarragon leaves (for serving) 1. Place carrots in a large bowl, season generously with salt, and toss to coat. Let sit at least 10 minutes and up to 1 hour to soften slightly. Pour off any liquid that collects in the bowl. 2. Meanwhile, cut peel and white pith from oranges. Working your way around, cut citrus flesh off cores in lobes. Cut each lobe into large pieces and place in a medium bowl. Squeeze cores over a small bowl to extract any juice (you want 2T; discard or drink any extra). Discard cores. Whisk oil, lime juice, and vinegar into orange juice; season with salt. 3. Pour half of dressing over carrots and let sit, tossing occasionally, until ready to serve. Set remaining dressing aside. 4. Heat a small skillet, preferably

cast iron, over medium-high heat. Cook dates, turning occasionally, until blackened in spots, about 3 minutes. Let cool; remove pits. 5. Just before serving, pour off excess liquid from carrots and discard (carrots will have softened by now). Drizzle reserved dressing over carrots and toss to coat. Tear dates into bite-size pieces and toss into carrots. Taste and season with more salt if needed. Top with tarragon. Do ahead: Carrots can be tossed with dressing 1 day ahead. Cover and chill carrots and remaining dressing separately.

Chicory Salad with Sour Cream Ranch Chicory is usually tender and mild. Serves 8 ⅓ cup sour cream ⅓ cup plain whole-milk Greek yoghurt 1T plus 11/2t sherry vinegar or apple cider vinegar 5 garlic cloves, 1 finely grated, 4 crushed 1t honey 8T extra-virgin olive oil, divided Kosher salt 2 spring onions, thinly sliced ½ cup panko (Japanese breadcrumbs) ½ lemon 2 medium chicory, leaves separated

1. Mix sour cream, yoghurt, vinegar, grated garlic, honey and 5T oil in a small bowl; season dressing with salt. 2. Heat remaining 3T oil in a medium skillet over medium. Add crushed garlic and spring onions and cook, stirring often, until golden brown around the edges, about 4 minutes. Add panko and season with salt. Cook, stirring often, until golden brown, about 3 minutes. Finely grate lemon zest directly into pan and toss a few times to incorporate. Transfer breadcrumbs to paper towels to drain; let cool. Taste and season with more salt if needed. 3. Place chicory in a large bowl. Drizzle with dressing; toss gently to coat. Season with salt and scatter breadcrumbs over. Do ahead: Dressing and breadcrumbs can be made 2 days ahead. Cover and chill dressing. Store breadcrumbs airtight at room temperature.

Broccoli Caesar Broccoli stems are tender and delicious, but it’s important to cut away the dried-out base and peel the tough skin of thicker ones. Serves 8 2 oil-packed anchovy fillets (optional) 1 garlic clove, thinly sliced ¼ cup fresh lemon juice 2t Dijon mustard Kosher salt 1 large egg yolk or 2T mayonnaise

½ cup extra-virgin olive oil 3T grated Parmesan, plus more shaved for serving 2 medium heads of broccoli (about 680g) ¼ head of savoy cabbage Finely grated lemon zest (for serving) Freshly cracked black pepper 1. Using the side of a chef’s knife, mash anchovies, if using, and garlic on a cutting board until a smooth paste forms. Transfer paste to a large bowl and whisk in lemon juice, mustard and a big pinch of salt. Add egg yolk (or mayonnaise) and whisk until smooth. Gradually add oil, whisking constantly until emulsified. Whisk in 3T grated Parmesan. 2. Trim woody ends from broccoli stems, preserving as much stem as possible. Peel any thick stems to expose tender inner cores. Cut off florets as close to the dark green flowers as possible and break into bitesize pieces. Add to bowl with dressing. Starting at the floret ends of the stems, slice very thinly crosswise and add to bowl. Thinly slice cabbage crosswise (you should have about 2 cups) and add to bowl with broccoli. Toss until broccoli and cabbage are combined and evenly coated with dressing; season with salt. Let sit 10 minutes. 3. Top salad with shaved Parmesan, some lemon zest, and a few healthy grinds of pepper. Do ahead: Dressing can be made 2 days ahead. Cover and chill. n

fter seven years at Bon Appétit, most of them spent in the test kitchen, I knew my way around a recipe. But it wasn't until I wrote my first cookbook, Where Cooking Begins, that I realised exactly what kind of a cook I'd become. Firstly, I rarely use recipes at home, which is just one admission in a series of personal contradictions. I shop at the farmers' market and I'm loyal to my nose-to-tail butcher, but I also love buying groceries online. I'm a mother of two, but I'm anti big-batch cooking and have never made a weekly meal plan in my life. I'll happily spend an entire day prepping for a party, but I'm too lazy to go to the corner shop if I'm missing a spice. And even though I know the value of a good recipe – it's literally my livelihood – I'd rather improvise. Of course, my book has actual recipes and so does this story, but the best dishes happen when you stop reading and focus on the food. If you shop for ingredients that make you hungry and stock your kitchen with basics, you can cook with confidence and eat the best meals of your life.

Shop First, Choose Recipes Second There’s no bigger disappointment than going to the supermarket with a specific dish in mind, only to discover the ingredient you need isn’t there; or even worse, looks like it’s seen better days. You stand in the aisle, frantically trying to come up with a plan B, searching for recipes on your phone while people bump into you with their trolleys. don’t do that. shop in person for the things that only you can judge: the sparkliest fish fillets, squeakiest bunches of greens, heaviest melons and most marbled steaks. Talk to the supermarket employees as you go (for example, ‘When did those scallops come in?’). Choose what inspires you and decide what’s for dinner based on what ends up in your cart, even if you plan to cook it in

the simplest way. In person, I shop small with a focus on proteins and produce, and use online shopping to keep my kitchen stocked with basics, so I can build the rest of the meal when I get home.

Steaming Is Actually Pretty Cool I used to think that steaming was only for lobsters, dumplings and dieters. not so. The elegant method offers extreme speed and high hydration, which means that whatever you cook – from seasonal vegetables to proteins (see left for ideas) – will be done quickly and always moist. sweet potatoes, in particular, benefit from this treatment, which makes their flesh pudding-like and fluffy.

Do More With Fewer Spices spices aren’t doing you any favours hidden away in your kitchen cupboard. Whether you’re roasting or grilling meat, sautéing garlic and onions for a sauce, baking or making a pot of beans, introduce a dry spice to add aroma and flavour. A great rub is Dried origanum Granulated garlic Smoked paprika MSG

Spice-Drawer Chicken Wings This dry rub is great on any cut of chicken, including whole birds for roasting (make a double batch). Serves 4 to 6 1t dried origanum 1t granulated garlic

1t smoked paprika 1t sugar 4t kosher salt, plus more ½t MSG, plus more for serving 1.8kg chicken wings 2T vegetable oil 1 cup mint and/or basil leaves Limes and small Persian cucumbers, cut into wedges (for serving) 1. Mix origanum, granulated garlic, paprika, sugar, 4t salt and ½t MSG in a small bowl. Arrange chicken wings on a foil-lined, rimmed baking sheet. Season all over with spice mix. Allow to sit at room temperature for 30 minutes, or cover and chill up to 2 days. 2. Place racks in centre and upper third of oven; pre-heat to 190°. Drizzle wings with oil and toss to coat. Bake on centre rack, turning with tongs halfway through, until cooked through and skin is golden brown, 30–35 minutes. 3. Remove from oven. Heat broiler. Broil wings on upper rack, turning every 2 to 3 minutes, until skin is deeply browned and starting to char at the edges, 5 to 7 minutes (watch them closely). house

Don’t Overthink Dessert I prefer sweets that don’t require fancy tools, expert skills or baking-exclusive ingredients, for example, this crème caramel: milk, coffee, sugar, eggs, lemon and a vanilla bean. 24

The lemon juice will help prevent your caramel from crystallising. Serves 8 2 ½ cups full-cream milk ¼ cup coffee beans, coarsely chopped 1 wide strip of lemon zest ½ cup plus ⅔ cup sugar 1 vanilla bean, split lengthwise 1t fresh lemon juice 6 large eggs 1. Combine milk, coffee, lemon zest and ½ cup sugar in a small saucepan. Scrape in vanilla seeds; add pod. Bring to a gentle simmer over medium heat. Remove from heat, cover and allow to rest 30 minutes. 2. Preheat oven to 160°. Place a 22cm pie dish or 5l loaf pan next to the stove. Cook lemon juice, remaining ⅔ cup sugar and ¼ cup water in a small saucepan over medium-low heat, stirring constantly, until sugar dissolves, about 5 minutes. Don’t rush this

step; if liquid boils before sugar dissolves, the caramel will never darken. Once syrup turns clear, stop stirring and increase heat to medium. Cook, swirling pan every few minutes, until caramel is deep mahogany and wisps of smoke appear. Immediately pour into pie dish. Quickly tilt pan to coat bottom and a bit of the way up the sides with caramel. Set inside a roasting pan or other ovenproof dish with high sides. 3. Whisk eggs in a medium bowl to break them up a bit. Reheat coffee mixture until steaming, then pour into eggs, whisking constantly to combine. Pour through a fine-mesh sieve into caramel-lined dish. Transfer to oven and pour enough boiling water into roasting pan to come halfway up sides of dish. Bake until custard is set but still jiggles a bit at the very centre, about 1 ½ hours. Allow to cool in the water bath 30 minutes. Remove dish, cover with plastic wrap and chill crème caramel until set, at least 4 hours and up to two days.

4. To unmold, run a thin-bladed knife around edges of dish, making sure tip of knife stays flush against bottom of dish. Invert a large plate over dish, then quickly flip. Slowly lift off dish; crème caramel should slide out. If not, tap plate against kitchen counter until it does. Serve in slices with caramel spooned over. n

Sometimes the best cooking happens when you’re not in the kitchen. These three showstoppers slowly cook all day while you go out and live your life. Come back to dinner (and a fragrant home). It’s that easy

It wouldn’t be right to cook a herby, Parmesan-stuffed pork shoulder roast without making a Sunday gravy in the same pot to soak up every stray bit of flavour. Serves 4 1.8kg skinless, boneless pork shoulder Kosher salt 2 large eggs, beaten to blend 1 head of garlic, cloves separated, half finely chopped, half thinly sliced 1 /2 cup panko (Japanese breadcrumbs) 1 /3 cup chopped parsley 1T chopped rosemary 1t freshly ground black pepper 1 /2t crushed red pepper flakes 100g Parmesan, coarsely grated, plus extra, finely grated, for serving 2T extra-virgin olive oil

2 (800g) cans whole peeled tomatoes 500g pasta (any shape) 1. Preheat oven to 105°C. Place pork shoulder, fat side down, on a cutting board, short end facing you. Using a long, sharp knife, make a shallow cut along the entire length of a long side of roast. Continue cutting deeper into the roast, lifting and unfurling meat with your free hand, until it lies flat (be careful not to cut all the way through). Season generously on both sides with salt. 2. Mix eggs, chopped garlic, panko, parsley, rosemary, black pepper, red pepper flakes, and 100g Parmesan in a medium bowl. Keeping fattier side of pork shoulder facing downward, smear filling all over top side. Roll up roast and tie closed in 3 or 4 places with kitchen twine. 3. Heat oil in a large heavy pot over medium-high heat. Sear pork roast until browned all over, 10 to 12 minutes total. Arrange

tomatoes and their juices and sliced garlic all around roast and bring to a simmer. Make sure roast is turned fat side up, cover pot, and transfer to oven. Roast until a skewer easily passes through meat, 4 to 5 hours (a thermometer inserted into the centre should register 94 to 96°C). Keep covered and allow to rest in pot for 30 minutes. 4. Transfer pork roast to a cutting board and remove kitchen twine. Gently mash sauce in pot with a spoon or a potato masher (simmer it gently to thicken, if desired). Taste ragù and season with salt if needed. Slice pork 2.5cm thick. 5. Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain. 6. Spoon pasta into a serving dish and top with some ragù. Toss to coat. Sprinkle with finely grated Parmesan. Transfer pork to a platter. spoon remaining ragù over. Do ahead: Pork can be stuffed and rolled 2 days before roasting; cover and chill. Pork

can be roasted 3 days ahead; let cool, then cover and chill. Reheat gently in sauce before serving.

Chicken with Honey-Glazed Carrots and Ginger Keep an eye on the vegetables as they glaze at the end – the honey may burn if given the chance. Serves 4 to 6 1.5 to 1.8kg whole chicken Kosher salt 1 head of garlic, halved crosswise, plus 4 cloves, thinly sliced 700g carrots, scrubbed and cut in half 8 small shallots, peeled 1 (5cm) piece ginger, unpeeled, thinly sliced 2T unsalted butter 1T honey 2T extra-virgin olive oil 1t crushed red pepper flakes 1 /4 cup fresh lime juice

Twice-Roasted Squash with Parmesan Butter and Grains

1. Preheat oven to 120°C. Season chicken generously with salt, inside and out. Place head of garlic inside cavity; tie legs together, if desired. Allow to sit at least 5 minutes or chill, uncovered, up to 2 days. 2. Combine carrots, shallots, ginger, butter and honey in a large Dutch oven or other heavy pot. Season lightly with salt. Place chicken on top, nestling into vegetables so lid will sit tight. Cover and bake until an instant-read thermometer inserted into the thickest part of breast registers 68°C, about 2 hours. Uncover and allow to rest 30 minutes. 3. Meanwhile, cook oil and sliced garlic in a small saucepan over medium heat until garlic is lightly browned, 6 to 8 minutes. Add red pepper flakes and allow to cool. Stir in lime juice; season dressing with salt. 4. Increase oven temperature to 230°C. Place chicken on a rimmed baking sheet and roast

until skin is browned and crisp, 10 to 14 minutes. 5. Meanwhile, place pot over medium-high heat; bring juices to a simmer. Cook, reducing heat as needed, until vegetables are glazed, 10 to 12 minutes. Keep warm over low heat until chicken is done. 6. Serve chicken on top of vegetables with dressing.

Twice-Roasted Squash with Parmesan Butter and Grains

While smaller squash, such as acorn, can be roasted whole, they are more starchy and liable to dry out. Stick with the big boys. Serves 4 to 6 1.3 – 1.8kg kabocha, buttercup or kuri squash 100g Parmesan, coarsely grated, plus more shaved for serving

/2 cup unsalted butter, at room temperature 1 /2t finely grated lemon zest Kosher salt Freshly ground pepper 3T fresh lemon juice 3T unseasoned rice vinegar 3T extra-virgin olive oil 1T honey 2 spring onions, thinly sliced 1 1/2 cups cooked whole grains (such as barley, farro and/or black or red quinoa) 1 /3 cup unsalted, roasted pumpkin seeds 3T golden raisins 1

1. Place a rack in middle of oven; preheat to 150°C. Prick squash all over with the point of a sharp paring knife and arrange on a foil-lined rimmed baking sheet. Roast until very tender (knife should slide easily through the flesh), about 3 hours. Tear or cut squash in half and allow to sit until cool enough to handle. 2. Remove seeds from

squash; discard. Scoop flesh into a medium bowl. Tear skin into 6 large pieces and set aside on same baking sheet to be refilled later. Add grated Parmesan, butter and lemon zest to bowl with flesh and mash together to combine; season with salt and pepper. 3. Carefully move rack to upper third of oven and increase oven temperature to 230°C. Divide mashed squash mixture among reserved pieces of skin and roast until top of flesh is beginning to brown, 10 to 12 minutes. 4. While the squash is roasting, whisk lemon juice, vinegar, oil and honey in a large bowl. Add spring onions, grains, pumpkin seeds and raisins to dressing and toss to coat. 6. Arrange squash on a platter and spoon grain mixture and dressing over. Top with shaved Parmesan. Do ahead: Whole squash can be roasted 4 days ahead. Keep intact and chill. ■

lives. ‘almost four years ago, we started planting a small bed in what used to be a dry paddock,’ explains Michelle, ‘and now it's the size of a rugby field.’ This fully-organic garden of broccoli, turnips, kale, marrows and more has become the heart of the couple's notfor-profit venture, gracie Love in a Bowl. Through it, they have turned a simple plan to grow food for their community into a project that last year supplied 60 000 meals, mostly to children and the aged living in Imizamo Yethu and the hangberg fishing community.

he fact Jason Lilley’s empire is modelled on baked goods means that his somewhat intimidating image is noteworthy, whether : this is a man baking, with tattoos! he calls his customers ‘mofos’! he rides a motorbike – no, a café racer. In the early days of Jason Bakery – back when it was a hatch in the wall on Cape Town’s then emergingly hip Bree street – he became Captain Bread. But if an apparently brash approach to baking was what set him apart initially, that’s no longer the case. The craftsmanship and consistent standard of the goods coming out of his stores speak for themselves (and it doesn’t hurt that they’re easy on the eye and wildly Instagrammable). Consider his doughssants. Fans order ahead, and the truly devoted arrive early on saturday to secure theirs in the flavour of the week: caramel sundae, sweetie Pie, falooda, blonde rocky road, chocolate fudge churros... The list goes on, as does the gobbling. Perhaps what works so well is that no one here is mentioning cheat days or trying to convince you to be ‘bad’, ‘naughty’ or ‘indulgent’. This is matter-offact feasting, and when the sweets are this gorgeous, the croissants are three days in the making, and the sourdough begins with a starter culture that’s precious to Jason as it’s been with him throughout his career, could there be any question about whether to eat up? Today Jason captains not one but two ships: the original Bree street spot, now significantly larger, and a green Point restaurant. so, sunday brunch is on the menu. House&Garden: Your Instagram page states that you’re much more than a chef. How did you used to host and entertain diners, before you made Epicure one of Joburg's most innovative culinary hotspots.Tell us about your first dinner party. Coco reinharz: It was a special, dinner for a friend of mine, who owns a company in Belgium.

How old were you? I was 21 years old. At what life stage did you host the dinner party? Where were you living and what were you doing at the time? I was studying at the ecole hotelière de namur in Belgium. Where was the dinner party hosted? at a château my student friends and I had hired.

Why did you decide to host the dinner party? Was it to experiment with cuisine, to entertain friends, to celebrate an occasion, get together with family, or impress a date? How many guests were there? It was an end-of-year dinner for staff who worked for my friend's company. We catered for 200 guests, so it was a great way to earn an extra income. What did you serve? I can't remember the exact menu, but it was based on cuisine from the early 1900s. Talk us through the process. Did the dinner take multiple days to prepare, or was it spontaneous? It took us three days and it was a fun experience. of course, I had to pay my friends! How do you think it turned out? Was it a win, a fail or somewhere in between? The turnout was fantastic, and because the function was a success, I got other business from it. What did you learn from your experience? I learned that if you want repeat business from a client, it's important to pull out all the stops when you put on your first event for them. Is there anything you would’ve done differently? I would’ve asked the client to pay in advance, because it was a while before I received the total amount owed to me after the function.
