Our 3rd Anniversary!

Rhubarb Cake

July 2021

• 2-1/2 c flour • 1-1/2 tsp baking powder • ½ tsp baking soda • ¼ tsp salt • ½ c butter • 1-1/3 c sugar • 2 eggs • 1 tsp vanilla • 1 c Greek yogurt • 4 c chopped rhubarb

• Preheat oven to 350 deg • Whisk together first 4 ingredients. Set aside • With mixer, cream together butter and sugar until creamy • Add eggs, one at a time • Add vanilla and fold in rhubarb • To creamy mixture, add 1/3 of flour mix, then ½ of yogurt. • Repeat until all combined • Line 9 x 9 pan w/parchment paper • Spread cake batter evenly into pan • Bake for 60-70 min, or until inserted toothpick comes out clean
