Beef, Beer & Mushroom Stew WITH CHIVE DUMPLINGS

Ingredients 2 tbsp olive oil 1kg Coles Australian Beef Chuck Casserole Steak trimmed cut into 4cm pieces 2 carrots peeled cut into 3cm pieces 2 celery sticks chopped 1 large brown onion chopped 2 garlic cloves crushed ¼ cup (35g) plain flour 1 cup (250ml) dark ale 1 cup (250ml) beef stock 2 tbsp Worcestershire sauce 3 sprigs rosemary 2 dried bay leaves 100g button or cup mushrooms halved 100g brown mushrooms halved Chopped chives for dumplings

1 ½ cups (225g) self-raising flour 2 tbsp chopped chives ½ cup (60g) grated tasty cheddar 50g butter melted ½ cup (140g) natural yoghurt ¼ cup (60ml) milk

Add stock, Worcestershire sauce, rosemary and bay leaves. Season. Stir to combine. Bring to the boil. Return beef to pan. Reduce heat to low. Cover and simmer for 2 hours. Add mushrooms to pan and cook for a further 15 mins.

METHOD 1

PREP TIME

Heat oil in a large saucepan over medium-high heat. Cook beef in batches for 5 mins or until browned all over. Transfer to a plate.

To make chive dumplings preheat oven to 200°C. Combine flour, chives and cheese in a bowl. Season. Make a well in the centre. Add butter, yoghurt and milk. Mix well to combine. Roll level tablespoons of mixture into balls.

Remove and discard rosemary and bay leaves from stew. Arrange dumplings over the top of beef mixture. Bake uncovered for 20 mins or until dumplings have doubled in size and are cooked through. Serve the stew sprinkled with chives.

Heat remaining oil in the pan over high heat. Add carrot, celery and onion and cook stirring occasionally for 5 mins or until softened. Add garlic and cook for 1 min. Add flour and cook for 1 min.

Add ale and simmer for 2 mins.
