Prep 5 mins | Cook 15 mins | Serves 6 1-2 tbs olive oil 1 small onion, diced 600g beef mince Old El Paso Stand ‘N Stuff Soft Taco Kit 1 large carrot, coarsely grated ½ cup water quartered cherry tomatoes chopped coriander avocado, mashed grated cheese baby cos lettuce, to serve
1 Heat oil in a frying pan over medium heat. Add onion and cook until soft. Add mince and cook for 5 minutes, stirring to break up lumps. Add spice mix, carrot and water. Bring to the boil and simmer for 2 minutes or until sauce thickens. 2 Prepare tacos following packet directions. Divide mince mixture among tacos. Top with tomato, coriander, avocado, cheese and lettuce. Serve.
