PRESIDENT’S MESSAGE “Welcome back! A new school year has kicked off and so has a new season of activities and initiatives at the Hollandse Club..”
Dear Fellow Members, Welcome back! A new school year has kicked off and so has a new season of activities and initiatives at the Hollandse Club. Allow me to highlight just a few in this column, that I hope will both rouse your interest and wet your appetite. On 9 September, the poolside will be the setting for the second Welcome Back BBQ. After last year’s successful launch we felt a repeat was in order and this time around we have more in store in terms of culinary diversity and ambiance. The event will be laced with live Latin music; in keeping with the first of our monthly country themes; Brazil. The evening will be preceded by welcome drinks for new members who joined the Club in the last year. So attending the BBQ is not only a great opportunity to catch up with old friends, but a great opportunity to welcome new ones. I hope many of you will sign up! New and exciting extracurricular activities have been launched for both kids and adults. Among others, the Club is now hosting guitar, keyboard and art classes. Kids-only music and movement classes are now also available, conducted on the Club premises by eZoo School of Music & Fine Arts. New dance and ballet classes also feature, instructed by Zuri Kumaly and Lilian Broekhuizen. We are delighted that we can host this diverse array of activities for both the young and the (little) older.

As well as our regular features such as the popular Comedy Night in the coming months, on 23 September the Club will play host to crime novelist Patricia Snel who will afford us a rare peek into the mind of a crime writer and talk about the latest book she is working on, which is set in Singapore. In keeping with our desire to cater to a diverse palate and incorporating some requests from you, changes will be made to the Club menu in September that we hope will meet with your approval. Traditional fare will still be featured, alongside healthy options for members of all ages. Our country themes will feature too; following Brazil is Germany in October. For the first time, The Lounge will take part in the highly successful Singapore Dining City Restaurant Week, offering a choice of set menus at an attractive price. Preceding this, our next Open House will be held on 17 September. Both events, we hope, will entice newcomers to become members. After the traditionally slow months of July and August, the coming months will see renewed buzz and activity at the Club. Dear Members, It is good to see everybody back from their holidays and we hope you all had a great and relaxing time. Don’t forget the grand Welcome Back Pool BBQ on 9 September, where we will also welcome the latest members who joined the Club this year. Unlike last year, when we were very busy right up to the middle of July, thanks to the World Cup, we had a very LOW season this year and the club looked deserted. In a way that was convenient because it allowed us to move into our planned renovation programs with full force. On the other hand, we suffered due to very poor revenues. The first thing you will notice when coming into the Club will be the new look of the reception. It may have been a daring move but we decided to get rid of the dated ‘wooden panel look’ and move into the 21st century with a refreshing approach. It took our designer a while to convince all parties involved that this would suit the club but looking at all the young families with many kids, we felt that it was the right time to make a change. MEMBERSHIP Traditionally a lot of people repatriate in the months of June and July and this year was no exception. Unfortunately, we had to bid farewell to a lot of nice members relocating to their Motherland or elsewhere because of professional transfers. We would like to thank them all for their support of the Hollandse Club and hope they leave Singapore with fond memories.
This sets us back quite a bit in terms of memberships and we are looking for your help to bring back the numbers to the previous level. The club is offering great referral awards for any new prospective members that you pass on to us. We have already opened up for reservations through our website and to no surprise started receiving bookings almost immediately. We are obviously counting on full support from our members and all those international companies that are linked to the club through our members and who are looking to put up their visiting executives from overseas, short or long term. We will also continue to provide some spa services in the Garden spa that will be adjusted for this purpose. Massages, sport massage, manicure, pedicure and some beauty treatments will be available by appointment only. Please contact reception for more information. NEW POOL TOWELS Just to clarify, once you sign in and collect your towel from reception, you will have to return your towel to the reception and not leave them in a basket or in the changing rooms. The new towels can be used around the pool and changing rooms. We are kindly requesting all members to take only one per person. This will help us to keep the cost of washing down and also helps the environment.
TENNIS COURTS RENEWAL The tennis courts 1 and 2 are now completely resurfaced and the nets have been replaced with new ones as well. As mentioned before, we need to increase the rent for the courts slightly in order to recover a bit of the investment and also to stay in line with general cost increases. Moreover, we are changing the definition of the Peak Hours because currently it doesn’t reflect the reality of the situation. Therefore, as from 12th of September 2011 the following tennis court rental charges will apply: Off Peak: Mon to Fri 7am – 6pm, (excluding public holidays): $6.50 per hour Peak: (Mon to Fri after 6pm, weekends & public holidays, whole day): $9.50 p.h. These rates are exclusive of GST. MEMBER BENEFITS Our marketing and membership department is working very hard to obtain all sorts of discounts and special features for our members around Singapore. More information will be published in our Magazine and on our website. September and October will be busy months with a lot of exciting events. EVENTS & ACTIVITIES Ladies only Fashion Show supporting the WWF On Friday, 1 October 2011, the Hollandse Club will hold an evening of fashion and glamour at the annual ladies only Fashion Show, which starts at 7 pm. This year, this salon style fashion event will raise funds and awareness on behalf of the World Wildlife Fund and its efforts to save the world’s most valuable and threatened nature and wildlife. The main hall of the Hollandse Club will be decked out in luxurious animal prints to remind guests that the night is not just about fashion, but also compassion for the world’s natural resources. Guests will be welcomed with a complimentary drink, after which the fashionista guests will sit down to enjoy an exquisite 3 course meal. Each delightful course is accompanied by the perfect glass of California Freemark Abbey and Matanza Creek Sonoma and Napa valley wine, courtesy of a sponsor for this exclusive night. Between each course, some of Singapore’s foremost designers or boutiques will show their hottest styles for stunning lingerie, chic resort wear, funky footwear, beautiful casual and business day looks and elegant evening wear. Danish owned Change, located in Holland Village, will show the latest trends in lingerie and swimwear, with something for every body type. Tanglin Mall boutique, Ziegler will dress the models in their latest collection of smart casual/business day outfits, with gorgeous footwear for every occasion. That’s a Wrap by Anna Rainn will show their colourful, patterned wraparound dresses designed for real women of any shape. The finale of the show will be gorgeous evening wear from Avana, a boutique in Pacific Plaza on Scotts Road. Style consultant Sharon Connolly will host the fashion show and use her expertise to explain which style best suits each body type. All the models are ‘real’ women, showing the clothes as they will really look and not just on ultra-thin models. The models will come down the runway and walk around the tables. Guests can look at and touch the garments and the different materials used. All the proceeds from a charity auction and a lucky draw will go to the WWF, with prizes donated by the designers and boutiques that are showing their latest looks for autumn 2011, as well as the evening’s sponsors. A special prize will be awarded to the Best-dressed guest. Even if the ladies don’t take home one of the fabulous prizes to be won, everyone will receive a fabulous goody bag to take home.

Patricia Snel It can’t be long before Patricia Snel’s best-selling thrillers are translated into English. Even if you don’t speak Dutch, meeting this attractive and intelligent Dutch novelist is still worth your while when she speaks at the Hollandse Club this month (8- 9pm, Wednesday, 28 September). Her name is now mentioned together with famous crime novelists such as Nicci French and fellow Dutch writer Saskia Noort. Of course, Patricia will read from and discuss her novels (in English), but she’ll also talk about novel writing in general and how living in Singapore since January 2011 has influenced her writing process. She explains, “I can take my discipline to write everywhere I go, just like my talent for fantasy. And yes, here I sweat more, literally.” Obviously, she is not sweating over writer’s block, with two Dutch hits in the bookstores and a third novel on the way, set in Singapore.
Crime Underworlds Patricia always aims to be original and writes about subjects that are in the news now. The sheer amount of research Patricia does helps the reader to enter the dark underworlds she conjures. Her latest best-seller ‘De Intrigant’ or ‘The Conspirator’ is her second dark journey into crime fiction after the success of her debut novel, ‘Verblind’ or ‘Blinded’, about the illegal drugs trade. ‘The Conspirator’ is based on true facts, about corruption in the countryside. Surprisingly, a small rural village is an ideal setting for suspense. When a young woman from the city inherits an old abandoned farmhouse, the intrigue starts when she gets involved in corrupt local politics. The setting is very different to her first crime novel ‘Blinded’, a journey into the underworld of the cannabis-industry in Holland. The female protagonist, who is married but falls in love with a man who turns out to be a drug-baron, accidentally gets involved in this business and all its consequences. Readers will identify with themes like love, temptation and loneliness.
Set in Singapore Currently, Patricia is working on a third novel, with the trade in women and money laundering as the themes. Singapore’s intriguing history, politics, economy and social structure make for an ideal setting for the thriller, tentatively titled “The Expat”. Patricia loves living and working in this inspiring multicultural city; with its mix of locals, expats, taxi drivers, prostitutes, helpers, etc. She says, “they all have their story to tell, as long as you observe and listen. I enjoy translating those into entertaining stories.” Inspiration is all around her here; she even takes pen and paper to her local hawker center so she can keep on writing while she eats. The idea for the new novel came as early as her first week in Singapore, “What triggered the idea, unfortunately, was a fight between a man and a woman in another block of the condominium right in front of ours. It was one of my first nights in Singapore and we were having a gin-tonic on our balcony. I couldn’t help spying on them. The binoculars that I use to spot birds in the countryside came in handy.” Perhaps coming down to hear Patricia speak is a good idea just to make sure it wasn’t you and your husband at the other end of those binoculars.

LET’S TANGO Just when you thought Singapore couldn’t get any steamier, we are warming things up with Tango teacher Moneir Bardai El Morisco for ten weeks this September to November. Dancer, singer and actor Moneir has been in Singapore for 1 year. His philosophy is that Tango is in all of us! Any rhythmically challenged pupil might doubt this, but this multicultural Dutch, Moroccan and Spanish world-traveling dancer knows how to infect you with his passion for this Latin American dance. He makes it sound easy when he describes how Tango is essentially just walking together with your partner and being together in harmony with music. Moneir points out that Tango is always considered a Latin dance, but actually it is an ever-evolving dance that takes some influences from North America Africa and Europe. A UNESCO Protected Dance Tango originally developed in Argentina and Uruguay, and was even added the UNESCO world heritage list in 2009. No other dance requires partners to be as up close and personal. However, the reason for this is less than sexy, as Tango was born in overcrowded dance halls, where space to move was limited and the fashion for tight dresses required a dance with limited movement. Every movement counts with Tango, as feet stay close to the floor and partner’s legs and ankles brush as one leg touches the other. As Moneir says, “A good dancer needs to make you see the music; tango is a living act in the moment as it happens.” No Rules Can anyone really learn to Tango? Moneir explains, “Argentine Tango started as a social dance and because of that everyone can learn to dance it. Of course there is other disciplines in Tango for stage and show for which you may need a special training.” There is no ‘basic step’ to learn. Usually, the man leads his partner to alternate feet and the woman rarely has her weight on both feet at the same time. Moneir, who originally danced Flamenco, only learnt Tango 11 years ago when he was taught by Argentinean masters. He describes how, “most dances have a rational-pattern which can be predicted. With Tango your previous perceptions about strict rules have to be thrown overboard and replaced by real partner communication and contact, creating a direct non-verbal dialogue.” Dance Yourself Healthy No matter how well you Tango, the exercise it offers has many health benefits. One study suggested Tango even improved balance in Parkinson suffers. It has also been shown that Tango makes people feel more relaxed and less depressed, sexier and even increases testosterone levels. All the more reason to give Moneir’s classes a try. Don’t have a partner? Don’t worry! Moneir will match you with the ideal dance partner. He thinks, “Argentine Tango helps students learn to improvise and discover new personal style with freedom for new creations.” Or you could take the class to have some graceful fun with your partner.

It’s a win/win situation when you take part in the Hollandse Club F1 simulator tournament on Sunday, 18 September. The winner will take home two Walkabout tickets for the F1 weekend a week later. Play against your friends in groups of two or four in the first round and feel the thrill of the speed and the track on our two state-of-art F1 simulators, with extra movement to really feel the speed of the straights and the G-forces of the corners. Formula One race drivers are amongst the most physically fit athletes in the sporting world. It may seem that just driving a car is more about mental ability rather than physical prowess, however only the top fit can stand the G-forces and have the strength and stamina to make it through a race weekend. Standard fitness equipment is not enough to train driver’s muscles to take up to a massive 3.5 g while cornering. Special ‘rigs’ are used to develop the mass of muscle tissue in the neck, shoulders and arms needed to stand the strain and pain. Stamina is trained with cardiovascular exercise, as the heart strains with the high temperatures in the cockpit. A driver sweats up to 3 kilos of their body weight during a single race. Modern Formula 1 cars have almost in much in common with jet fighters as they do with automotive technology. Millions of dollars are spent on R & D research to counter the effects of drag slowing the car down and to create downforce to keep the tyres on the track. Race car wings were added in the 1960s to the opposite effect of wings on a plane. Planes use wings to create lift; F1 cars to create downforce. Technology has enhanced race car downforce enough that a F1 car could theoretically drive upside down at high enough speeds. The fuel you use is surprisingly similar to F1 cars, except the average team uses about 200,000 litres a season. You probably know that Singapore’s Grand Prix is the only night GP in the world, but did you know that the floodlights used to light the track are 4 times brighter than those to light others sports stadiums? The coloured flags used to communicate with drivers are not used because of lack of visibility, but digital coloured flags will replace them as they are easier for drivers to spot. Only two other GPs (Turkey and Brazil) are raced anti-clockwise, like the Singapore GP.

A Star is Born
A fun week ended with an original performance by all the kids at the Theatre camp in July. Everyone was involved with creating a storyline, which starred ninjas and princesses; not the most obvious cast of characters in one play. At least the boys as well as girls were happy. During a productive brainstorm session, the kids all got to add their ideas to the story. After a lot of practicing, the story was ready to go. The actors put a lot of thought into the costumes and they looked wild. There were scary, pretty and cool looks on stage. All the parents, sisters, brothers and friends in the audience enjoyed the show.
Jungle Drawing
Perhaps you’ve seen the colourful canvases hanging at the terrace, made by kids, aged 4-8, at the Jungle Drawing Camp this August. French artist, Isabelle Desjeux chose the Jungle as the theme for the camp to get the kids out into nature and away from the concrete jungle of the city. The jungle is a great theme because of all the layers, like trees, plants, vines, animals, etc. Isabelle starts by teaching the kids to really look at an object before you start to draw and focusing on how to draw a simple line or a curve step-by-step. The kids learnt that doing things your own way is important, but giving each other the space and time to do their thing is too. Each day the kids came back to their art with a new focus to add something fresh. This isn’t instantaneous gratification, but a process they really need to get into. They learnt patience and to trust their artistic instincts. The end results were bright and vibrant and as Giselle, aged 7, enthusiastically said,” we get to take everything home at the end of the week.” Isabelle Desjeux’s website (http://isadoraworkshop.wordpress.com) is great place to get inspiration for art with your kids (or yourself). Francisco Zoroastro Campos “You know, I knew the real girl from Ipanema, Heloisa Pinheiro. She used to visit us when my second daughter was born in Ipanema.” Francisco Campos may have lived in Singapore since 1984, but his warm personality certainly brings a flavour of Brazil to the Hollandse Club. Of course, everyone knows this famous sixties hit song about a young beauty who lives near Rio’s beautiful Ipanema beach. According to Campos, this is the only beach to go to when in Rio. The original girl in the song is not the only beauty there. Songwriters Antonio Carlos Jobim and Vinicius de Moraes wrote the song while drinking all night in a bar near the beach. This bar now is called Garota de Ipanema-Girl from Ipanema. Campos explains that early every morning the young girl who inspired the song passed them on her way to the beach in a tiny Brazilian bikini, before going to the school to learn to become a teacher. The song made her very famous in Brazil and later she became a singer.
When My Baby Smiles at Me, I Go to Rio Even though Campos has been here for 26 years his heart still longs for Rio. If you have the opportunity to travel to Brazil, take Mr. Campos’ tips and visit the giant statue of Christ, the Corcovado, recently declared a new wonder of the world and the Pao de Acucar, or Sugarloaf mountain in Rio de Janeiro. “What I really miss about Rio, my home town, is the School of Samba Parade, a dancing and singing event.” 10 different Schools of Samba, with 3,500 dancers each, take part. It’s the biggest show in the world with 35.000 dancers and singers with fancy sequined costumes. The show lasts 12 hours from Sunday 6 pm to Monday noon, at a place called the Sambrodomo in Rio during carnival time. “It is a spectacular sight,” he says. Carnival at the Club Mr. Campos is full of interesting stories about Brazil and the Brazilian community in Singapore. Of course, many of those stories have to do with football, the national pastime and near religious experience in Brazil. He says with a sad voice, “Brazil is now only number three on the FIFA list after the last World Cup. In the final, I was for Holland to win because I love the Club and I wanted them to be the World Champions.” He’s been a member of the Hollandse Club since 2001, when the then President of the Club Ronald Lafeber asked Campos to organise a Brazilian carnival party. Later, for the World Cup finals in 2002, Campos was asked to invite all the Brazilians to watch all the games in the main hall on the big screen. There were Brazilian snacks and drinks, like Guarana, Chopp and Caipirinha. Francisco says, “In the final, Brazil won, and became Penta Champions and 500 Brazilians, all in yellow t-shirts, partied until late to Brazilian carnival music played by a band contracted by Ronald Lafeber. I have no idea where he found a band that played all our favourite songs. All the Brazilians were grateful to the President and we never forgot this very friendly act.”

The Boy from Ipanema “In Rio, I also knew the girl from Ipanema’s brother at the Economic University. He was a good-looking model and after he did an ad campaign for Brylcreem, a friend put up a poster of him with “The Boy from Ipanema” written underneath. The good looking brother was angry and wanted to fight everyone who made fun of him for that,” Campos laughs. He has had a long and auspicious career since then. He first served in the Brazilian Navy and retired as a frigate Captain, before going to work for Petrobras, the third largest energy company in the world. He came to Singapore to work for the Petrobras trading, Interbras, as the General Manager for Southeast Asia from 1984 to 1989.
Five Time Champions of the World Brazil is the only nation to have won the World Cup a staggering five times. Francisco Campos’ prize possession is his canary yellow Brazil football t-shirt, that has been signed by all the players who played and won the trophy five times. He doesn’t just watch from the sidelines, though. He has two hobbies: he has coached the Brazilian Football Association (BFA) in Singapore, the Brazilian amateur team, since 1991. He’s on the field every weekend. In the last 9 years, the BFA have won 13 trophies, including 3 time champions of the APEX league. His second hobby is to have the privilege to be nominated the President of the Embassy of the Nation Red and Black in Singapore of Flamengo: FLA-CINGAPURA. Flamengo is the most popular football club in Brazil with 35 million fans and 35 embassies: 32 in Brazil and 3 around the world in Singapore, Shanghai and New York. He brought Flamengo to Singapore for an International Tornament in June 2011. Flamengo became Champion of the Under 15s Canon Lion City Cup 2011. Flamengo is the club where Romario, Ronaldinho Gaucho and Zico play. Ronaldinho Gaucho, who is the Captain of the team, was recently named as the best striker in the Brazilian tournament or Brasileirao so far this year.
Campos’ Challenge to the Club Now it’s your chance to try your skills against that world famous Brazilian technical expertise. Francisco has a special challenge to the Hollandse Club during the Brazilian theme month of September: a friendly football match between a Club team and the BFA team at 9am on Sunday, 18 September, field to be announced. Perhaps, we could take the same advice as Campos has to help improve Singapore’s luck in world football. “They just need to fly over a good Brazilian coach and they will start to win.” Good tip!

The Club has been the home club for all Brazilians living in Singapore. Every World Cup Finals, we go there to watch the match and enjoy it. The Hollandse Club is a great club, beautifully set among the lush greenery. There is great food and the Brazilian snacks will make us feel very much at home. It is great that the Club is organizing a typically Brazilian evening on a Saturday 16 September. I hope the Chef prepares “feijoada�. An evening with Brazilian music and food would be good. A German friend bakes 10 different kinds of Christmas cookie every year, no matter how busy she is. German baking is the ultimate in comfort food, whether its apfelstrudel or Schwarzwälder Kirchtorte (Black Forest gateaux with chocolate cake, cherries and cream).

Germany seems a little dull when you’re racing through on the autobahn, but take the scenic route and be amazed by Germany’s millions of acres of thick forests, with scenic castles and hilltop towns poking through the pine trees. Not as widely consumed as German beer, German wine has a lot to offer. A visit to the German wine areas along the Rhine and Mosel, along the picturesque Weinstrasse route is a great road trip, with vineyards, wine festivals and tasting in every city. Since the Romans planted the first vineyards there, German wines (mostly whites) are known for their crisp and fruity bouquet, such as the Riesling, Liebfraumilch or Gruner Veltlinger.

FOOD & BEVERAGE Brazilian Party Food Recently, a Brazilian friend invited me to her birthday brunch bash. It turned out to be a wonderful morning and an excellent opportunity to learn more about Brazilian party food that – surprisingly enough or maybe just by chance- did not contain a single black bean! Together with her very international group of friends, the party girl treated us to various Brazilian delicacies. There were coxinhas de frango (deep fried chicken rolls), bolinhos de bacalhau (salty fish cakes) and pão de queijo (little cheese bread rolls), accompanied by Brazilian cocktails. Kiwi caipirinhas and strawberry caipiroskas cocktails were served. The caipirinha is, of course, Brazil’s national cocktail, a fragrant mix of rum, sugar and lime. Caipiroskas use vodka instead of rum. These fresh, fruity drinks got everybody in a festive mood for the buffet. As well as succulent, world famous Brazilian beef, fresh from the barbeque, there were colourful salads and bobo de camarao, a wonderful stew of shrimps in a coconut milk-tomato-coriander gravy. That dish was my personal favourite; the gravy was to die for! At the party, I found out that there are 600-700 Brazilians in Singapore. Their community is one of the largest South American communities here. Most Brazilians who live and work here are connected to the oil and gas industry. After the lunch party, I seemed to notice more Brazilian entrepreneurs in Singapore. I found a Brazilian butcher with at Great World City and noticed Brazilian restaurant Brazil Churrasco along Sixth Avenue. Brazil suddenly seemed to be everywhere! With both the 2014 FIFA World Cup and the 2016 Summer Olympic games coming to Brazil, no one can deny it is time for Brazil. By Francine Linssen, www.meaningfulmessages.info
Coxinha de frango (Golden Chicken Savouries) Filling 1 tablespoon of oil 1 small chopped onion 1 chicken breast, cooked and chopped 1 chopped tomato salt and pepper to taste
Dough 2 cups of chicken broth 2 tablespoons of oil 1 teaspoon of salt 1 dash of black pepper 2 cups of all-purpose flour For coating and deep-frying:
For coating & deep-frying 1 egg 1 tablespoon of milk 1 dash of salt and pepper Breadcrumbs Oil
For Filling: Remove the skin and the bones from the cooked chicken and cut it into small pieces. Heat a tablespoon of oil in a pan. Add the onion and stir-fry until golden brown. Add the tomato, the chicken, salt and pepper to taste and let it cook for about 5-10 minutes or until the liquid has evaporated. Put the filling on a plate and let it cool down. For Dough: Put two cups of chicken broth in a pan. Add two tablespoons of oil, a teaspoon of salt, pepper to taste and bring it to boil. Add two cups of flour and mix well with a wooden spoon until the dough is smooth and loosens from the bottom of the pan. Put the dough on a plate and let it cool down for 5-10 minutes. Take a tablespoon of dough and flatten it in your palm. Put a teaspoon of filling in the middle of the dough and roll it into a chicken drumstick shape. For coating and deep-frying: Beat an egg in a bowl and add a tablespoon of milk, a dash of salt and pepper. Put the breadcrumbs in another bowl. Dip the drumsticks in the egg and then coat them in the breadcrumbs. Deep-fry the drumsticks in hot oil until golden brown all over. Put the drumsticks on a paper towel. Serve the drumsticks immediately. This recipe makes about 45 small savories/ rolls. Coxinha can be served as an appetizer or snack and should be served warm. The same dough can be used to make other typical Brazilian snacks like bolinhas de queijo (cheese balls) and salsicha empanada (coated sausage).
Pão de queijo (Small Cheese Bread Rolls)
Bacalao Cakes (Salty Fish Cakes)
Ingredients 1 cup of water 1 cup of milk 1/2 cup of oil 1 teaspoon of salt 1 pack of tapioca starch (450 g) 2 to 3 eggs 200 g of grated parmesan cheese
Ingredients 6 ounces bacalao 2 potatoes ¼ cup chopped parsley 4 shallots, chopped 2 large eggs 1 cup of bread crumbs Egg white Panko (breadcrumbs) Canola oil, for deep fryer
Bring the water, the milk, the oil and the salt.to the boil in a big pan. Remove the pan from the heat and add the tapioca starch. Mix well with a wooden spoon and let it cool down. Put the mixture in a bowl, add the eggs and knead well. Add the grated cheese and keep kneading until the dough is smooth. Roll 1 tablespoon of mixture into small balls. Tip: Grease your hands with oil before making the balls. Wash your hands once in a while if necessary. Place the balls on a baking tray greased with oil or lined with baking paper. Bake the cheese rolls in hot oven (200˚C) for about 20 minutes or until golden brown. Put the cheese rolls in a basket and serve them warm. This recipe makes about 70 small cheese rolls. Soak the bacalao in cold water for about 8 hours, changing water 3 times. Cook whole potatoes in boiling water until soft. Set aside until cool enough to handle and peel. Use a food mill or ricer to puree potatoes into a bowl. Preheat oil in deep fryer to 200˚C. Shred the bacalao with fingers and add to potatoes along with parsley, shallots, eggs, bread crumbs, and cracked black pepper. Stir until well incorporated. Shape into patties. Dip in egg whites and coat with panko (breadcrumbs). Just before serving, deep fry until golden brown. Drain on paper towels. From www.starchefs.com

Judo for Kids Whether your goals are self-confidence, self-defense, personal development, fitness, and flexibility or just to have fun, our judo programme is designed to bring out the best in each child. Judo is not a team sport because the primary emphasis is on developing the individual’s self-esteem. Children who are actively involved in judo, demonstrate a lower level of anxiety, an increased sense of responsibility, a higher sense of self-esteem and are less likely to be withdrawn. Judo has also been reported to be helpful for children with disabilities, such as ADD. ABOUT THE COACHES Judo classes are conducted by instructors from JL Sports Consultation Services. Gerard and his team have been with the Club since 1997, also manage their own training facility and overseeing classes at a number of clubs and educational institutions. Trainers are specially selected for their life skills and ability to relate to the children. All instructors regularly undergo fitness and coaching courses, locally and abroad, to ensure quality instructions in a safe environment. OUR CLASSES To maintain a consistent level of instruction and supervision, classes are kept small (maximum 20 participants). No more than 6 students are assigned to 1 trainer. More class options and adult classes for personal protection, submission grappling, judo, kick boxing & sambo can be arranged upon request. Classes are ongoing throughout the year, with scheduled breaks during term and public holidays and you may enroll at any time. Short programmes are also available during term breaks. Newcomers are required to sign up for a two (2) session trial package at $90.00 to assist us in recommending the most appropriate class / level. Children should be comfortably attired in T-shirt and shorts. Confirmed participants will be required to purchase a judo uniform for training. Rowing in Singapore By Martijn Versteeg - Head Coach, Singapore Rowing Team
A little more than two months ago, I was not at all familiar with Singapore, let alone the level of rowing here. On an ordinary afternoon of studying in the Netherlands, I suddenly got an email asking me if I’d like to become head coach of the national rowing team in Singapore. Two and a half weeks later, I found myself sitting on an airplane about to take off to the other side of the world. Since then everything has been one big adventure. Not a day goes by that wouldn’t be a whole story on its own. Next to coaching, the head coach here is also involved in talent development, sponsor acquisition, strategy planning, counseling and a lot more. I learned a lot about Singaporean (over)organization and management, Singaporean culture, and most of all the opportunities and chances you can take up in this interesting city-state. Well that’s more than enough about me. Let’s talk about you. What I am planning to do is the following: The current situation is that there are more boats than people at the Singapore Rowing Association. Because I personally think that rowing is one of the most beautiful and healthy sports one can participate in, I want to give you a chance to row in Singapore. Rowing in Singapore is momentarily based at the Marina Barrage, and you can row in front of the Singapore Flyer, Marina Bay Sands and Esplanade Theaters. On the other side of the Barrage, we have a 4,5km course available. There are two ways I can offer you a chance to row in Singapore. The first way is for everyone. You can join a crew consisting of only other Hollandse Club members, and train for 6-8 weeks to prepare for a regatta against the other expat-clubs and associations (British Association, American Associaton, etc.).
Depending on how many people sign up, we will row in either fours or eights. You will be assigned a coach from within the Rowing Association. There will be different categories: Men and Women, as well as Senior and open age class. If you think you might be interested, you can send an email to martijn@rowing.org.sg . The other option is for people with rowing experience. I am quite sure that among the people reading this will be some rowers. To them I would like to say: send an email to barrage@rowing.org.sg and we will introduce you to our club. I hope you take a chance so we see you all out on the water soon. TENNIS TENNIS Update on Tennis Courts Resurfacing • NEW TURF ON COURT 1 & 2: The new surfaces have been done on courts 1 & 2. Members can enjoy the new turf, that will be regularly maintained for the next few years by the vendor. • COURT ROLLERS: Together with the new turf, there will be a new roller placed on every court (To prolong the lifespan of the court roller, members are reminded NOT to step on it during usage) • TENNIS NETS: In the past few months, all 5 nets on the courts have been replaced • NET POSTS: We have replaced the net posts on courts 1, 2, and 3. The current set of posts on courts 4 & 5 have withstood years of rain and sunshine. We will be monitoring their condition and act accordingly when required. • For those who noticed (or complained) about the brown stain on court 4, we are happy to inform you that it has been replaced with a cleaned portion of old turf from court 1, so as to avoid a difference in turf height. • New Floor Mats: There are new floor mats placed outside the courts for players to brush off excessive sand on their shoes. Although it may not be 100% effective, we appreciate every little effort to reduce the amount of sand brought into the changing rooms. • From 12th September onwards, the tennis court rental charges will apply. These rates are exclusive of GST. Off Peaks – Monday to Friday 7am – 6pm (excluding public holidays): $6.50 per hour. Peak – Monday to Friday after 6pm, weekends & public holidays, whole day: $9.50 per hour.
Friday Night Tennis Social of 17 June This time we had a different setup for the 30 participants. In order to make the playing more exciting and challenging, we tried a new concept. If one played and lost, they would move one court down and if they won, he/she would go up one court. As a result, each player end up playing at his/her own level while playing with different partners and opponents. It sounds a little confusing but the players had a lot of fun. After playing, some prizes were handed out and social side of the evening started. After a few drinks, people headed home and had an enjoyable evening. The next Friday social will be held Friday 2 September. Would you like to sign up? Keep an eye on the next bi-weekly mailing of the club. With one click on the link you can register. KLM Junior Team Tennis League The KLM Junior Team Tennis League begins on September 17th and we would like to encourage Hollandse Club junior tennis players to participate. The league provides valuable singles and doubles match play opportunities, while playing as part of a team. The league is an excellent way to challenge and motivate juniors to play competitive tennis in a fun and supervised environment. Practical Poaching for Doubles An effective poacher at the net has the ability to put pressure on the returner of serve. Many players lose confidence in poaching due to mistakes made or simply not being able to put the poach away. The common problem is that the poacher is positioned too far away from the net to be effective. Many poachers worry about the possible lob, however in this position the lob can be handled by their partner. If the poacher positions themselves closer to the net, (about a racket length away ) they will immediately apply more pressure on the returner and it will be much easier to hit effective volleys. So next time you’re on the tennis court, experiment with your distance from the net. When you tuck in closer you will find crossing to poach a volley will become easier and more effective to put the ball away and win more points. Over my coaching career, I’m always surprised at the number of doubles players who comment about how tough it is playing the aggressive net player. Try this tip and it will be time for you to become one! Good Luck! Junior Tennis Coaching Program The tennis coaching team would like to welcome all members back from the summer break. Any parents wishing to enroll their children in one of our specialized tennis programs or private lessons can contact the Tennis Director, Scott Johnston on 9038 9348. Savitar’s Junior Tennis Program’s goal is to provide a pathway for participation and development, whilst creating a fun environment in which to learn. Savitar will cover the entire development cycle from Tiny Tots to Advanced Squad coaching. Players can proceed through each structured program, building their skills and enthusiasm for the game at each level. All programs are conducted by Savitar’s team of certified professionals in a positive and safe environment. In addition, Savitar’s successful Tennis Camps are an excellent way to make use of holiday periods to develop your game further. We will also be implementing a Savitar Star System for all the Junior programs very soon as a fun incentive for the juniors.
Hollandse Club Mini Tennis Tournament. Mini tennis is a great introduction to the sport for children age 5 - 8 years old. It’s just like the real thing but with smaller courts, racquets, nets and lower bouncing tennis balls. The tournament is a great way for junior players to participate in a number of matches and enjoy tennis. SWIMMING THE BENEFITS OF AQUA AEROBICS Aqua aerobics is simply the performance of aerobic exercises in a swimming pool. It is a low-impact exercise, suitable for all individuals of any age or gender. This article will share with you the myriad of benefits of aqua aerobics. Aqua aerobics offers the same benefits as regular aerobic workouts but has further advantages that normal aerobics do not offer. It can be tailored to your individual body’s needs and ability, by moderating your physical movements while in the water. One unique aspect of aqua aerobics, especially in a tropical and humid climate like Singapore, is that as it is performed in water you will still remain cool and comfortable because the liquid cools you off as you exercise. Another benefit is that aqua aerobics, unlike other more physical sports, is an activity for individuals of all ages. It is a lowintensity and low-impact exercise with low injury risk, suitable for the young and the old. As you exercise, the water buoys your body and almost makes you weightless, therefore causing less stress on your body’s joints and muscles. Thus, it is the water that supports your weight instead of the lower parts of your body. In addition, the water acts as a form of resistance in all directions. This environment of resistance provides a low-impact way of toning your body’s muscles as well as an excellent way to rehabilitate injuries. For individuals who have not exercised for some time, joining an aqua aerobics class is an easy and pain-free way to resume your fitness regimen and get on the way to a toned body. Even if you have never swum in your life you can still do aqua aerobics and benefit from it. For non-swimmers, there are floating devices available that will enable you to stay afloat and perform the exercises without any fear or worry of any mishap happening. Aqua aerobics routines are usually conducted at differing depths of water, depending on the exercise. For example, jogging is usually done in deeper water so that an individual’s body remains immersed. Beginners will usually start in a lower depth of water before moving to water that is chest deep.
Aqua aerobics also enables you to burn up calories much more efficiently. Compare the following estimates of calorie consumption for a 30-minute workout: • Land Walking: 135 calories • Deep Water Walking: 264 calories • Jogging on Land: 240 calories • Deep Water Jogging: 340 calories It is also important to find a qualified instructor who will be able to guide your exercise regimen and advise you accordingly. Youngest female Singaporean Ultramarathoner and swimming instructor at Aqua Ducks – Michelle Verma 18th position Women’s Open Category - 16 hours The best and most beautiful things in the world cannot be seen or even touched. They must be felt with the heart. Statistics show that less than 0.01% of runners in the world could complete a full 100km marathon. No matter how you train, you’ll never really be ready. I had to give this unforgettable experience a try. My mission was to be the youngest female Singaporean to complete the Sundown 100km Ultramarathon 2011. Finishing in 16hours and coming in 18th in the Women’s Open category was just the cherry on top of the cake! It was definitely the most torturous night of my life, running through exhaustion, pain and humidity. The race broke me down mentally and physically. I never wanted to give up so many times in a single race. It was 2 years since I hung up my racing shoes after completing an Ironman race at the age of 22, when I broke the record of being the youngest female Singaporean to complete Ironman. After coming 4th in Langkawi and 3rd in Singapore, I thought I had reached the pinnacle of my sporting career. My body was battered. I certainly never saw myself racing an Ultramarathon in this lifetime. Breaking the Pain Barrier During the race, I ran the first 21 km in 1hour 50 mins, doing 50 km in 6 hrs 20 mins. Then came the longest and most mind blowing race back to the finish line began. Perhaps you are wondering what goes on in a runner’s mind during a race like this. What you learn about yourself when you are pushing yourself to the limit is unbelievable. My reactions to people overtaking me, pacing myself with realistic goals, my psychotically high tolerance for pain, communication and composure under strain were all tested. There were many breaking points. First, my little toe suddenly swelled up to 3 times its size at 21km, when I was still in the top 3 positions. I crashed to the side of Changi coastal road in tears, all set to give up. However, I couldn’t let my race end after just 21 km, my regular weekend run. I got myself together, popped 3 blisters and set off again. As Lance Armstrong puts it, “Pain is temporary. It may last a minute, or an hour, or a day, or a year, but eventually it will subside and something else will take its place. If I quit, however, it lasts forever.” Finish Line in Sight Then past the 50km mark, my knees started to act up, even though the rest of my body was alright. At the 66km mark, my knees were so bad that I curled up on the on the floor wanting to quit, in tears yet again. Luckily, 2 angelic supporters kept me going and gave me a massage. At the 96km mark, the sun was beating down hard, the piercing knee pains were unbearable and thoughts of stopping returned again. Quitting just 4 km from the finish was unthinkable. Thoughts of 3 months of disciplined training sessions and seeing my family and friends waiting at the finish line was enough to keep me going. Surprisingly, I found the last 300 m uphill sprint a breeze. At the finish line, the feeling of achievement was overwhelming. Scientists estimate that our bodies contain anywhere from 75 to 100 trillion cells, but the cells in the brain are the most powerful. Finally, I would love to thank God, my family, support crew, besties, friends, sponsors, colleagues and everyone who helped me accomplish this amazing feat. Thank you for all the touching and motivational calls, wishes, congratulations. WE did it!

SQUASH We are the Champions – An excellent first half When we get older- many years from now with grandchildren at our feet- we will tell the tale of the Oranje Duivels and their incredible victories. Yes, reader, your team brought home the bacon – not once, not twice, but a massive three times. So here is the tale of what happened. The Oranje Duivels D team wins the NSL It was an epic season. It started off sedately with narrow victories and as the season progressed, it became progressively more difficult as the opposing teams, understanding the quality of the team, selected their strongest starting four. Yes, there were losses (but only 2) and qualification to the play offs at the National Squash Centre in Kalang was achieved by a narrow 1 point. The play offs were a thing of beauty. Both the semi finals and finals were straight game victories, which left the Singapore Squash community stunned as they crowned a new champion – yes, readers, you very own Oranje Duivels D team. This was not a simple case of bringing home the bacon, but the whole pig. Hats off, guys, and well done to Kim Hine for captaining the side to victory. Kim Hine - Captain Marvel
The Hollandse Club tour Jakarta The magnificent seven went to Jakarta with the standard flying high and proud. We played two friendly matches against SODS (yes, that is what they are called) and ICS – a country club much like our own; a private oasis in the centre of Jakarta. This was a training camp for the match to follow. I put it down to jet lag, as we went down in a blaze of glory losing both our matches. However, our hosts were very generous and they welcomed us generously with warm hospitality, lovely food and cold beer. This seems like it might become an annual pilgrimage prior to matches to follow.

Yes, dear reader, Squash came home this year. Your team won the Orange Bowl which is the now annual exchange between us and the mighty Singapore Cricket Club. The team was restricted to a manageable 16 players from each side. It was an afternoon and evening of very competitive squash. No quarter was asked or given and sweat flowed like water. There were sounds of fury- from SCC- and shouts of victory- from the Hollandse Club. They were not happy, the SCC are use to winning and with 350 registered squash players they have the cream of the crop to pick from, but spirit is stronger than muscle. This reminds me of the story of the 300 Greeks defeating the mighty Persian army - no less an accomplishment. Next year the hordes from SCC visit us with only one thought on their minds and we shall see what happens. 48 The Hollandse Club WWw.hollandseclub.org.sg

Friendly vs the Tanglin Club
News of our victories spread far and wide, and the collective jaws of Singaporean squashies fell open. The challenger this time, the Goliath of Squash, the Tanglin Club invited us, the David, to a friendly. The Tanglin Club have 6 single courts and 2 doubles courts. Invite and friendly may be words misused here, but gentlemen as we are; our conduct is always full of grace and we are always friendly. So the result- yes, you guessed it- we won!!! Next year, they come to us and they will come fully prepared to win. Ross, the squash convener at the Tanglin Club, was generous in his praise and he remembered back in 1992, when he first played at the Hollandse Club – there is a lot of history and long memories.
The Hollandse Club Squash Open It has now become a yearly fixture and this year, unfortunately, it clashed with the NSL finals. Nevertheless, we had 60 participants and it was 2 days of competitive squash. Tim Yeo, a 15 year old, emerged as champion. We are really pleased to see him grace our courts and he has entered every year that we have held this tournament. For the foreseeable future, we cannot see who might challenge him for the crown, but you never know who, at this very moment, is practicing quietly with dreams of glory.
Individual Graded NSL competition As I write this I am actually also doing my warm up for the first match this evening. But I am not alone the Oranjie Duivels will be there beside me – yes Brothers in Arms. Next year we are planning on having some Sisters in Arms. We will report on this next time – bet you can wait to know what happened. The Second Half Squash is a game of 5 sets but the year two halves – ok 4 quarters, 12 months… but you know what I mean. As we move firmly into the latter part of the year dark clouds gather on the horizon but as always there is a silver lining. As we see it Some of the activities that we plan. Friendly Matches We have one confirmed Friendly against the Warren Country Club and one in the pipeline against the Swimming Club. Ladder/Boxes There will be a resurrection of the boxes and a new format ladder – currently under planning and to be launched by the end of the month of August – so watch the notice board and come on down if you want to play. Internal league This will be a team format evening of squash and bonding. Put your name down and you will have a lot of fun and your squash will improve. Ladies Novices There is no holding them back and they will start on Wednesday evenings. Junior Training Plans are afoot and a new format will be launched before 4Q this year. Sunday Afternoon Socials I have been approached by a number of members requesting that we start a Sunday afternoon social and I have to say there is merit in this idea. Prior to instituting this we have to make sure we have a critical mass of committed participants and once we reach this point we will put this into effect Novices I have also been approached by a number of members who feel that their standard of play is not as good as the players on show when they come and they are therefore reluctant to join in social and competitions. If you are reading this and fall into this category please do not hesitate to come down to our socials – we have every category of player from very good to novice and we all play together. You should know you will improve and you will enjoy the game. Just as in life there will be someone of your level of talent, someone better and someone worse; but all ready to play you.
