Crafting Sushi with Expertise and Passion for Community

Chef Jeff Roberto is known as one of San Diego’s most respected sushi chefs. His culinary resume is built upon solid experience initially learning from top sushi chefs leading to his journey to become a master chef with a solid expertise in creating exceptional sushi. When asked what motivates him as a top chef, he shared insight into his humanitarian spirit. His zest for embracing sushi making stems from experiences that reflect his connection to food, culture, the local community, and his desire to inspire special moments for people dining in the round. For Chef Jeff, it’s all about pleasing his customers with their favorite sushi made to order based on each patron’s request and preferences. The goal for him is to create delightful dining experiences while encouraging people to take time to enjoy each moment of the dining experience.

In an exclusive interview with Hollywood Weekly Magazine, Chef Jeff shared about his culinary journey that led him to becoming a master chef of the art of sushi making. After graduating from high school, his natural social abilities and zest for education led him to securing work as a sushi trainee with some of the top sushi chefs in San Diego. He soon found himself standing behind a sushi counter, preparing intricate sushi rolls and serving gourmet Japanese sushi cuisine.

Prior to his journey as a chef, he originally set his sights on a career in aviation taking classes to complete that goal. Yet, life had other plans for him. He was soon led toward a culinary path that would change his life as well as the sushi scene in San Diego and beyond. Today, Chef Jeff Roberto’s Sushi on a Roll (SOAR) and his success as the owner of the iconic KIOTO Japanese grocery store in National City have established him as an innovator, cultural ambassador, and beloved community figure. His journey from aspiring pilot to sushi chef is a story of passion, insight, and a deep respect for culinary arts.

It all began when Chef Jeff was recruited by a friend to work at a sushi restaurant in San Diego. After learning the basics of sushi making, he found himself pulling friends together to build a team of top sushi chefs. He had this to share about his journey, “Eight of us from our high school started working together. We had no idea what we were doing. We were just trying to keep up, learning every day,” he recalls, but amidst the fun and camaraderie, something clicked for him. The mastery of culinary techniques, the artistry of handling sushi ingredients, and the sense of precision that sushi demanded all appealed to Chef Jeff. Mentorship from experienced Japanese chefs honed his skills, encouraging him to dive deeper into the art of sushi.

At the time, sushi was a niche delicacy in the U.S., limited to small, traditional Japanese eateries. Jeff’s natural aptitude led to offers from other master chefs, and he began to see a potential career in sushi that he hadn’t considered. He soon decided to pursue his craft seriously, even as the sushi scene was shifting and beginning to capture a broader American audience.

With growing confidence, Jeff launched Sushi on a Roll--or SOAR, a fitting acronym for a man once destined for the skies. His vision wasn’t a traditional sushi bar but a unique, flexible restaurant business. Through SOAR, he would soon bring the sushi experience directly to events, adapting his menu to suit his clients’ tastes. The concept was innovative for its time, and SOAR quickly became a name in high-demand for weddings, parties, and corporate gatherings. Instead of patrons coming to him, Jeff now brings sushi to them, delivering a customized experience.

“We bring something new, a different kind of energy and vibe,” Jeff explains. SOAR allows him to experiment and expand, becoming a mainstay at elite events like the Breeders’ Cup, where he prepares as many as 20,000 pieces of sushi for sophisticated, high-profile crowds. This scalability, combined with his attention to detail, sets SOAR apart. Today, he serves thousands of pieces in

one weekend, yet each piece maintains the quality and care he learned from his mentors.

When Chef Jeff began, sushi in the U.S. was still minimalist: simple rolls with cucumber or tuna, delicate portions, and not much variation. There were no California or Rainbow Rolls; rice wasn’t even on the outside. As Americans developed a taste for sushi, requests for bigger rolls and more diverse ingredients started pouring in. The classic California Roll became a bridge, introducing Americans to sushi with its familiar ingredients, such as avocado and imitation crab. Chef Jeff was part of this revolution, adopting new techniques while respecting sushi’s traditional roots.

“People wanted something different, bigger, and the California roll helped popularize sushi in a way we hadn’t seen before,” Jeff shares. The California Roll trend brought a wave of creativity to his kitchens, pushing him to create new offerings that balanced authenticity with modern culinary trends. “Back then, putting rice on the outside of rolls was a novel idea, and now, it’s everywhere.”

Beyond SOAR, Chef Jeff’s commitment to community shines through KIOTO, a Japanese grocery store he now owns in National City. KIOTO has a long legacy, dating back more than 65 years, with “Mamasan” running the shop for over three decades before passing it to a friend in 2018, and eventually to Jeff. “The families who’ve shopped here for generations make it a special place,” he says. The store serves as a cultural hub for the local community, preserving a link to National City’s Japanese heritage while offering younger generations a window into Japanese cuisine and culture.

KIOTO isn’t just a store--it’s a piece of the community’s fabric. Local families, many of whom are regular customers, bring their children and grandchildren, passing down the tradition.

Today’s youth culture is now learning about sushi through Anime stories as they watch their favorite characters eat sushi. As a result, sushi is being introduced to younger customers who look to explore Japanese food, including sushi, for

themselves. “It’s incredible to see kids get excited about Japanese food because they see it in their favorite shows,” Jeff notes. KIOTO is a space where traditional and modern food trends meet, embracing all generations of sushi enthusiasts.

Chef Jeff’s creativity and expertise in food preparation expand beyond traditional sushi. Over the years, he has tailored his menus to fit each customer’s preferences, experimenting with unexpected ingredients and fusion dishes that reflect local tastes. One memorable event he shared involved a food preparation job that involved him traveling into the city of Savannah, Georgia. There he adapted sushi to Southern flavors, creating a specialty dish that layered shrimp tempura and crab with Southern traditional gumbo--a nod to local cuisine. “Local food traditions vary depending on what city you are in. You have to look at those trends and tie that into what you are creating for them as a dish,” he explains, demonstrating his dedication to crafting dishes that resonate with each audience.

His dedication to top customer service and the art of sushi making have made Chef Jeff a favorite at corporate and celebrity events, where he continues to innovate sushi presentations. Whether he’s serving 300 pieces at a corporate breakfast or hosting sushi-and-cigar nights with friends, Chef Jeff brings a sense of warmth and inclusivity to every gathering. Each event is an opportunity to learn and create, blending different cultural influences into something new in the full dining experience.

Over the years, Chef Jeff’s clientele has ranged from local sushi lovers to Hollywood celebrities. He has worked on private celebrity events and is a popular chef on film sets to cater for productions. In addition to his high-profile connections, he remains rooted in the community, dedicating time to teaching sushi classes and sharing his knowledge with a wide range of people. “It’s amazing to watch people learn how to make sushi from kids to adults. It’s rewarding for me to be a part of sharing the knowledge with people who want to learn,” Chef Jeff says

His classes are interactive, allowing people to roll up their sleeves and learn the art themselves. Even as sushi becomes more popular, Chef Jeff takes pride in preserving its traditional foundation of preparation while emphasizing focus and patience in each lesson.

The recent rise in popularity of poké has offered Chef Jeff yet another avenue for presentations. Unlike sushi, which requires meticulous preparation, poké allows for quicker assembly, making it a practical choice for high-volume events.

For Chef Jeff, poké and sushi bars are distinct experiences but complement each other in large gatherings. “Poké is easier in terms of setup,” he explains. “One person can cut fish while another plates it up.” He’s embraced the trend, offering poké options alongside sushi at large corporate gatherings, particularly for hotels like the Marriott.

His partnerships with hotels and corporations have grown a great deal, especially in San Diego, where he brings the sushi experience to high-volume settings with ease. “Poké can be a great alternative for people who want the flavors but don’t have the time or space for a traditional sushi bar,” he notes.

Chef Jeff’s philosophy revolves around patience, flexibility, and a deep respect for the culinary arts. “Sometimes people are in a hurry, but I tell customers to relax and be flexible in the moment. Then, you can truly enjoy the food prepared,” he says. His approach to sushi is not just about the food but the entire experience.

For Chef Jeff, being mindful and present while preparing each roll is essential to achieving quality.

Whether building a new sushi bar, like a 31-seat circular bar in San Diego, or hosting a corporate event, Chef Jeff evaluates each space, each ingredient, and every detail with a seasoned eye. Chef Jeff understands the business side of projecting profits and sales while knowing how each element impacts the customer experience and overall appeal.

Chef Jeff’s passion for implementing top quality ingredients while showing appreciation to patrons continues to organically influence people around him to become sushi enthusiasts. His passion is rooted in creating welcoming spaces where he delights patrons in his colorful and artistic sushi presentations.. As a master sushi chef, his work at events, private gatherings, and corporate functions carries the tradition forward. Through SOAR, KIOTO, and his various partnerships, he’s crafted a career that honors his knowledge of traditional sushi while embracing the unique food culture of cities where he travels to cook.

Chef Jeff has also added virtual sushi classes to his repertoire. At one point in our interview with him, he happily shared about a zoom presentation where he shipped sushi making ingredients to Hawaii where he set up a decorative visual setting to host Zoom sessions with professional video setups. This innovative approach has made his sushi classes accessible to even more people based on the demand at hand.

For Chef Jeff, sushi is all about the food experience of each customer, the human connection, and the approach to creativity in preparation of each dish. His passion has not only helped elevate sushi in the

U.S. but also brought joy and inspiration to customers who experience his joy of sushi making. As he continues to shape the culinary world, Chef Jeff Roberto plans to innovate new creative concepts for sushi, maintaining modern traditions, while expanding its outreach to capture the hearts and tastebuds of locals from all walks of life.

“Pennies from Heaven” draws its name and inspiration from the classic 1930s song made famous by Billie 
Holiday. Expanding on the narrative concept of last season, Spring/Summer ‘25 takes the story of an 
abandoned gilded age home and explores not the buildi

The narrative comes alive for Spring / Summer ‘25 as an

exploration of the fascinating, chimeric life of 
Consuelo Vanderbilt, America’s most famous “Dollar Princess.” Through this visual lens, Barshai refl

on the transition from Victorian elegance to Art Deco modernity, capturing the essence of the “new 
woman”, a 1920’s term to describe the shift in social conventions around female behavior from domestic to 
independent.

“For Spring / Summer 2025, I decided to embrace the concept of unexpected good fortune, but with the 
understanding that even when it rains good news, they are only pennies from heaven,” says Erik Barshai,

This story chronicles the journey of a designer who, after the shimmer of Miami Swim Week, shifts gears to the starkly different reality of feeding the homeless and fighting against human trafficking. Her mission is deeply personal, rooted in her mother’s traumatic past and a fierce determination to improve the lives of those around her. Our guest is not just a designer; she’s a storyteller, an advocate, and a humanitarian. In the high-stakes world of fashion, where superficiality can often overshadow substance, she stands out for her commitment to social causes. Her non-profit, Piece of Sunshine, has become a platform for change, taking small but intentional

Her personal story is one of triumph over adversity. As a child of a mother ensnared in the sex trade and bearing the scars of abuse, our guest rose to become Miss Asia USA, refusing to be defined by her past. HW: How did the start of your fashion show, Royal Kingdom begin?

Srey: “Royal Kingdom Fashion Show started about three years ago, and I did this because I believed there were a lot things that could done diffrently within fashion shows. For instance, people miss hospitality, they miss personal connection. In this world of business, nobody wants to be vulnerable. When you’re working at a fashion show and you’re spending so much money to be a part of it, I would like some kind of reassurance emotionally from the venue. I call it Royal Kingdom because I believe we are all royalty. We are the son and daughters of the almighty king that lives in heaven and that’s the way everyone should be treated.”

HW: How did your personal background influence your commitment to social causes?

Srey: “Learning about my mother’s traumatic past, including her experiences with rape and human trafficking, profoundly impacted me. It gave me a heavy heart and a drive to support others facing similar adversities.”

HW: What motivated you to feed the homeless and initiate beach cleanups?

Srey: “Observing the stark contrast in homelessness between Minnesota and California sparked my 13-year commitment to feeding the homeless and initiating beach cleanups. It started with just a few friends in Venice Beach and expanded from there.”

HW: Can you share more about your nonprofit, Peace and Sunshine?

Srey: “Peace and Sunshine focuses on creating positive change through small, intentional actions. Its mission extends to being mindful of children’s safety and providing dignity through clothing distribution at homeless outreach events.”

HW: How do you maintain spiritual grounding and organization in your life?

Srey: “I dedicate time to spiritual activities like gardening to stay present and grounded. I avoid being hard on myself for uncompleted tasks, celebrate accomplishments, and set boundaries to preserve mental well-being.”

HW: What’s the significance of the upcoming private fashion show on June 1st at Mission Bay Home Mall?

Srey: “The fashion show is a way to showcase my clothing line and engage with the community. It’s also an opportunity to support philanthropic efforts, like feeding children in Africa, and share my Cambodian heritage.”

HW: How does your creative process influence your work and personal projects?

Srey: “My creative process is a narrative journey where I turn every aspect of my life into a story. This approach includes designing dresses and everyday experiences, aiming to make a positive impact through community engagement.”

Veterans benefit from the program and find solace through the organization’s Wounded Warriors initiative.

Kimball’s passion for helping others extends to other noteworthy causes that she champions, such as Beauty Gives Back. When women experiencing homelessness come to the organization, they’re given support services, including professional clothing for job interviews, to provide assistance to rebuild their lives. “They’re given dignity and hope. You see the change immediately,” Kimball shares. “When they get to pick out clothes, they leave happier, more confident. It’s incredible to witness.”

Her efforts don’t stop there. Kimball also lends her philanthropic expertise to Broadway to the Rescue, an initiative raising funds for the Los Angeles homeless. Working alongside Broadway actor and film writer Michael Leon

Wooley, Kimball has helped transform the program into a beacon of hope for the community. “When you donate to Broadway to the Rescue, you can choose to provide bedding for a bunk bed, a welcome kit with essentials, or even just the sheets,” she explains. “Every bit makes a difference.”

NEW YORK, NY — Last night, Peacock celebrated the premiere of limited series FIGHT NIGHT: THE MILLION DOLLAR HEIST at Jazz at Lincoln Center, followed by an exclusive after party in The Appel Room overlooking Columbus Circle and Central Park.

Coinciding with the eve of NY Fashion Week, the red carpet kicked off with a surprise fashion show in partnership with GQ. Drawing inspiration from the series, models showcased high-fashion 70s-inspired looks, blending retro styles with modern sophistication. I grew up watching Indian musical films during the 70s/80s. In fact, I can still remember the lyrics to all the songs in “Yeh Vaada Raha” and I know the names of most of the famous Bollywood stars from back then to the 90s and beyond.

My love for Bollywood never waned and when I attained adulthood, I owned an entertainment blog, E4PR, where I dedicated a section to write about Bollywood film stars and cross-over Indian music and movie stars into the American and British Entertainment Industries.

It therefore came as no surprise when I was called upon to interview the lovely Maithili Raelle, an Indo-American talent in New York City.

Maithili is one of the very few cross-over Indo-US female artistes in New York and is working with a very talented team. She has collaborated with Epic, RCA and Republic record labels, respectively, as well as 41 rap group, the biggest rap group in the Metro NYC area right now.

My description of Maithili’s distinctive voice would be... a sweet blend of Norah Jones and Ciara, with a touch of Doja Cat; while she exudes an Eve kind of attitude. I listened to all her songs on Spotify and watched “Heavy On It”, “I Grow” and “Falling For You” on YouTube. Maithili’s undeniable music talents are glaringly obvious, as all her songs showcase her versatility.

The focal point of Maithili’s multiple talents, for me, are her singing and rapping skills, which are beautifully fluid, adding grace to her music. I particularly loved the Indian belly dance beats in “Heavy On It”. They reminded me of the 2013 song, Addictive, by Truth Hurts ft Rakim, Dr Dre and Pharrell, which had similar beats.

The world is now witnessing cross-over Indian rap and hip hop music talent finally being acknowledged and appreciated in the American Entertainment Industry. From not being visible during the whole American rap revolution to now successfully dominating the American scene.

It may have taken a while, but cross-over Indian music talent is finally getting the

recognition it deserves. They are finally at a stage where they can fund, market and show the world their art and culture.

On a separate note, I would like to suggest an Afrobeats collaboration for Maithili with superstars like D’Banj, Burna Boy or Rema; This would add more spice and worldwide appeal to Maithili’s brand. Burna Boy and Indian singer and rapper, Sidhu Moose Wala (of blessed memory), have already blazed a trail for others, with their collaborative hit song, “Mera Na”. I would love to see Maithili explore this option as well. It may be new terrain for her, but it will be worth her while.

1). Where are you from and how does that affect or influence your work?

Maithili: I’m from New Jersey and I’ve pretty much just grown up here my entire life. Now, I go back and forth between NJ and New York City, since I go to college there. Being from the tri-state area really has broadened my overall general perspective on life. You come across many people from different walks of life with diverse ethnic backgrounds. There’s a heavy emphasis on having to hustle in order to achieve success for yourself, and this, in turn, has strongly encouraged me to work hard towards achieving my dreams. Meeting so many types of people has exposed me to different genres of music and how you can intertwine them with one another. As an artist, this can be seen reflected in my music. If you take a look at each song, it’s not boxed into one style. I’m constantly pulling inspiration from all types of music.

2). Who are your biggest artistic influences?

Maithili: My biggest influences are Whitney Houston, Ariana Grande and Tate McRae.

3). Tell me about your favorite medium.

Maithili: When it comes to being a singer, my favorite medium has to be live performances. I love tapping into that other part of me that people don’t see on a daily basis, this other character. The entire process of the transformation starts with makeup, hair and then, the outfit. There’s always that bit of anxiousness that kicks in before the performance, but that’s because I want itto be amazing and care about giving it my all. As soon as that music starts, it’s like I go on autopilot. Just being out on the stage everytime feels so surreal. After each performance, I feel like I’m on an energy high. It’s the best feeling in the world, seeing all the time and effort you took to work on your craft or a specific project materialize into a great end product. Along with live performances, though I love the process of getting ready for a music video, whatever it may require. The day of the music video shoot does get a little stressful, but I genuinely have so much fun putting everything together and performing in this different aspect. It’s such a thrill to see everybody’s reactions, whether it’s people from my team who’ve seen me working on it or even just my parents and friends at my shoot.

4). Where do you find inspiration?

Maithili: I find inspiration from my own personal experiences, other artists that I both listen to or look up to, as well as other types of art like movies and books.

5). When is your favorite time of day to create?

Maithili: Honestly, I don’t really have a favorite time to create. I love to create at all times. It’s kind of when I’m able to fit the time in because I’m a full-time student at NYU as well. I will say though, I definitely am more productive when I have earlier late morning/afternoon sessions.

6). What motivates you to create?

Maithili: What motivates me to create is my love for music. I live and breathe music everyday. Whether I’m actively creating music or not, I’m constantly surrounded by it. It’s like an open book for me with blank pages, waiting for the story to be written. It might be a story that’s already been written, reflecting my personal experiences, or it might be a narrative waiting to be written and told as a story. The same way in which other artists have created songs that have resonated with me is the same thing I aim to do as well for others in my own artistic way. I want to create songs for others to help them feel relatable or comforted knowing that someone else like myself has also gone through it.

7). How do you define success as an artiste?

Maithili: I define success as an artist in multiple ways. I think one of the most important ones is being able to constantly push the boundaries of your own ability. Not being a one trick pony. Trying new things musically, whether tapping into different vocal techniques or sounds. Always being creative and keeping an open mind to the process. Along with that would be having the ability to emotionally connect with your audience. I think the ultimate test is if you can make the audience feel the song as if they went through it and that you’ve provided them an escapism from their life for the 90 mins or however long they’ve come to see you.

8). How do you develop your art skills?

Maithili: I develop my skills by constantly creating more music. The only way to grow is to practice and learn. You’ll either find me in the recording studio working on music, dance practice, vocal lessons or in school. Ever since taking up this journey, there’s been nothing more important to me than working on my craft to become the best I possibly can.

9). Does art help you in other areas of your life?

Maithili: Music definitely helps me in other areas of my life. As much as it’s an escapism for listeners, it’s an escapism for me as an artist too. It helps me a lot emotionally. Music can really change my

mood and I really lean on it for support. Whether it’s getting that confidence or helping me relax or even just getting me through that little breakdown.

10). How can your work affect societal issues?

Maithili: My music can affect societal issues by bringing awareness and telling stories from different perspectives. Around a year ago, I released a song called “Unstoppable” in collaboration with the Be the Voice anti bullying campaign. This was a special song to me when creating it and I’m very proud to have been invited down to Selma, Alabama, to perform Unstoppable as part of the musical act of an anti-bullying assembly.

11). How do you navigate the professional art industry?

Maithili: It can definitely be challenging and confusing, but I’m very grateful to have an extremely talented and supportive team behind me, as well as very supportive parents. I wouldn’t be where I am today without all of these amazing people. As they say, it takes a village to raise a child.

12). Which art trends inspire your current work?

Maithili: Currently, genre-fusion and vocal experimentation is a huge thing that’s been inspiring my music. I don’t want to be confined to one lane. I want to create something new and surprising that the world hasn’t seen and can get excited about.

13). How has your style changed over time?

Maithili: My style has evolved and grown from putting out my first release, Falling For You. It’s really interesting because from the whole production and

recordings and different delivery methods and tones I bring out, to the visuals of the music videos, has changed in retrospect, to where I am as a person and who I’m growing into. The different themes and genres I’ve touched upon were much more specific, like pop and r&b or if I sang in a specific part of my vocal

register and was exploring different vocal techniques. Now fast forwarding to my latest song, Heavy On It, I’ve begun to experiment more and really taken myself out of my comfort zone. I never really thought I would throw rap into a song. It wasn’t the first thing on my mind, but at the end of the day, why not? Why not try new things and push the boundaries? With Heavy On It, it’s a completely different song, as it brings out aspects of my cultural identity of being Indian into my music, and is supported by the visuals for the very first time in my music. Something I want to lean more into and experiment with.

14). What are your favorite and least favorite parts of professional art?

Maithili: There’s definitely highs and lows to doing music professionally, but no matter, what I wouldn’t trade it for the world. I am beyond grateful for being given the opportunity to pursue it. One of my favorite things is the rush of excitement you get from performing live or after the end of a music video shoot that I’ve been working so hard to prepare for, or seeing others love your own creation as much as you do. It’s the most rewarding and fulfilling thing as an artist. I love being able to meet new people and other artists in the industry and learning their backstory and getting to know them. It’s such a wonderful experience to see others like yourself doing it as well. It can be very inspirational for your own music and could lead to collaborating on projects together. I think some of my least favorite parts are that no matter what, people will always have an opinion about you as a person or what you’re doing. Honestly, though, I’ve grown to not be bothered at all by it and to just keep focusing on making music and on my craft, because that’s what makes me happy. Another big thing that’s my least favorite part of pursuing professional music, is the uncertainty. There is no

timeline for the trajectory of your career, because everyone’s path is different. That really stresses me out sometimes because I’m in college too. It would just be really nice to know where my life is heading lol.

15). Do you have a network of other artistes, and if so, how do they support you?

Maithili: I don’t have a network of other artists, but I support all artists. Being a creative isn’t always easy.

16). Is there a specific environment or material that’s integral to your work?

Maithili: As an artist, I definitely love to be in collaborative spaces. Whether its acoustic spaces for working on vocals, the recording studio as a fun creative playground, or rehearsal spaces with mirrors, when doing dance lessons. Material wise, it’s very very important to be hydrated and have water or a drink with electrolytes; and quick snacks like pineapple and green apples are a go to, especially in the studio.

17). Who would you most like to create with?

Maithili: I would love to work with Tate Mcrae the most. Ever since I saw her in concert recently, I’ve been more obsessed with her as an artist and truly look up to her as one of my inspirations. She has a certain type of raw, relatable style of lyric writing. I think it’d be super cool to hear the contrast between our voices dancing together in a song.

18). If you could open a show for any artiste, who would that be?

Maithili: Definitely Ariana Grande. I’ve always looked up to her and it would be an absolute dream of mine.
