Savory Sweet Potatoes 2 lbs. Sweet Potatoes, peeled and cut into wedges 1 Tbsp. Olive Oil 2 Tbsp. Maple Syrup 1 Tbsp. Butter 1 Tbsp. Lemon Juice 1/2 Tsp. Cinnamon 1/4 Tsp. Sea Salt 1 Tbsp. Parsley Preheat oven to 400 degrees. Toss sweet potatoes with olive oil and spread in roasting pan. Roast until just tender, about 40 minutes, turning once with a spatula after 20 minutes. Melt together remaining ingredients and pour over potatoes in pan. Return to oven for an additional 5-10 minutes, until nicely glazed

Walk or drive through a Winter Wonderland for free during the Kiwanis Holiday Lights in Mankato’s Sibley Park from November 28 to December 31, 2014. The Kiwanis Holiday Lights will use one million LED lights in an animated and choreographed display. We’ll keep you comfortable with concessions, heated restrooms and warming houses. Sibley Park is one of Mankato’s most beautiful parks and it is attached to Mankato’s thriving City Center full of opportunities for shopping, dining and entertainment. Come to town before the lights and enjoy what Mankato has to offer in the way of events and activities for all ages. There is no charge to visit the event, but non-perishable food items are accepted by area food shelves each night, and cash donations are also accepted to help support area nonprofits.

Opening Day Parade presented by the Greater Mankato Growth Young Professionals Friday, November 28th – Parade at 6 pm with a brief Lighting Ceremony to follow! (estimated time 7 p.m.) The lights display will open to driving traffic starting at 8 p.m. on opening night in order to ensure the safety of the large number of pedestrians in the area following the parade. People attending the parade are encouraged to bring lawn chairs and blankets for along the parade route. There will be extremely limited seating in the warming house near the end of the parade.
Entering Kiwanis Holiday Lights: Vehicles: Vehicles will enter the park on Sibley Parkway, following it all the way around the sledding hill into Sibley Park. Directional signage will help guide you. *Note: Vehicles will be prohibited from entering Woodland Ave., Park Lane and Mound Ave. entrances. Buses: Buses are encouraged to call 507-385-9129 in advance and leave a message with your information or email info@kiwanisholidaylights.com Pedestrians: Walking traffic will be able to enter off Mound Ave and Park Lane. Parking is available in the CHS parking lots (located off Woodland Ave), near the Ball Fields (off Sibley Parkway), inside Sibley Park (limited availability), and on street parking near the entrances.
