1. Clean windows or glass. Use with water & vinegar for a no streak shine. 2. Burn it up. Tightly rolled newspapers make great fire starters!

3. Make a weed barrier. Lay a thick layer down before your mulch or rocks to help stop weeds from appearing. 4. Wrap some gifts.

5. Pack it up. Instead of plastic bubble wrap, wrap valuables in newspaper for shipping or moving 6. As origami paper.

8. For ripening fruit. If you’ve picked up some under-ripe peaches, avocados, or other fruit, wrap them in newspaper to ripen them more quickly. 9. Shine on. The Kiwanis Holiday Lights will use 1.5 million LED lights in an animated and choreographed display. We’ll keep you comfortable with concessions, heated restrooms and warming houses. Sibley Park, 900 Mound Avenue, is one of Mankato’s most beautiful parks and it is attached to Mankato’s thriving City Center full of opportunities for shopping, dining and entertainment. Come to town before the lights and enjoy what Mankato has to offer in the way of events and activities for all ages. There is no charge to visit the event, but non-perishable food items are accepted by area food shelves each night, and cash donations are also accepted to help support area non-profits. People attending the parade are encouraged to arrive early, bring lawn chairs and blankets for along the parade route. There will be extremely limited seating in the warming house near the end of the parade. Visit Santa after the parade until 9 pm. Check our website for details. Horse Drawn Wagon Rides - Friday, Saturday, Sunday, 5 - 9 pm. $5 per person, ride 15-20 minutes and leave every 1/2 hour from concession warming house. Directional signage will help guide you. *Note: Vehicles will be prohibited from entering Woodland Ave., Park Lane and Mound Ave. entrances. Avoid long lines on weekends by arriving early or by parking outside of Sibley Park and walking through the displays. However, if you are in line by closing time, you will be allowed to continue through the displays. Pedestrians: Walking traffic will be able to enter off Mound Ave and Park Lane. • 1 (4- to 5-lb.) beef tenderloin, trimmed • 3 teaspoons kosher salt, divided • 3/4 cup panko (Japanese breadcrumbs) • 3 garlic cloves, pressed • 2 teaspoons coarsely ground pepper, divided • 3 tablespoons olive oil, divided $ • 1 1/4 cups crushed, plain kettle-cooked potato chips • 1/4 cup finely chopped fresh parsley • 1 tablespoon finely chopped fresh thyme • 1 bay leaf, crushed • 1 egg white, lightly beaten $ • 1 tablespoon Dijon mustard • Garnish: fresh sage

1. Preheat oven to 400°. Sprinkle tenderloin with 2 tsp. salt. Let stand 30 to 45 minutes. 2. Meanwhile, sauté panko, garlic, 1 tsp. pepper, and remaining 1 tsp. salt in 1 Tbsp. hot oil in a skillet over medium heat 2 to 3 minutes or until deep golden brown. Let cool completely (about 10 minutes). Stir in potato chips and next 4 ingredients. 3. Pat tenderloin dry with paper towels, and sprinkle with remaining 1 tsp. pepper. Brown beef in remaining 2 Tbsp. hot oil in a roasting pan over medium-high heat until browned on all sides (about 2 to 3 minutes per side). Transfer tenderloin to a wire rack in an aluminum foil-lined jelly-roll pan. Let stand 10 minutes. 4. Spread mustard over tenderloin. Press panko mixture onto top and sides. 5. Bake at 400° for 40 to 45 minutes or until coating is crisp and a meat thermometer inserted into thickest portion registers 130° (rare). Let stand 10 minutes. Garnish, if desired Note: For medium-rare, cook tenderloin to 135°; for medium, cook to 150°.

Buckeye Balls • 1 1/2 cups creamy peanut butter • 1/2 cup butter, softened • 1 teaspoon vanilla extract • 2 1/2 cups semisweet chocolate chips • 2 tablespoons shortening • 4 cups confectioners’ sugar

You’ll need wax paper, a double boiler, a cookie pan, and a medium bowl. In the medium size bowl, mix peanut butter, butter, vanilla, and confectioners’ sugar (mixture will be stiff). Shape into balls and place on a pan covered with wax paper. Place into the refrigerator. In double boiler, melt chocolate and shortening. Pour into bowl and dip balls with chocolate. Refrigerate for thirty minutes until chocolate is firm.
