EDITOR’S MESSAGE When I think about spring, the words that come to mind are fresh, new and exciting – and I truly cannot think of three words to better describe this issue of Homes & Living magazine.

Join us this issue as H&L takes a look at Ocean Park Estates, one of the newest communities in Parksville. A must read is our exclusive interview with Jason Priestley, noted actor turned down-to-earth Vancouver Island resort owner. Even with his achievements in Hollywood, Jason remains closely connected to the magic and simplicity of Ucluelet. As the owner of Terrace Beach Resort, H&L writer Lyndsey Franks talks candidly with Jason about his emotional and physical ties to Vancouver Island and how he came to fall in love with the alluring charm of the west coast.

From March 19 to 27, the 25th Annual Pacific Rim Whale Festival will welcome more than 20,000 grey whales to Vancouver Island. Each year, these magnificent mammals travel 20,000 kilometres from the Baja Peninsula to the Bering Sea in Alaska, and H&L will be there to experience it.

Every great room is not just a product of its layout or colour; its style rests in the furniture and how these pieces function daily. Living and family rooms really put their upholstered pieces to the test as they are always in heavy use. Sofas and chairs, especially, need to last when they are used constantly.

Up to approximately 25 years ago, fabriccovered sofas and chairs were still largely made in North America and it was assumed that the quality was good. But with globalization came pressure on local manufacturers to take furniture making off shore in search of cheaper labour and materials. Today, we have paid the price for this practice as consumers are less educated about what makes a quality sofa and why it’s important to purchase key pieces from Canadian manufacturers.

As it turns out, Canadian wood is excellent for producing not only goods like tables and bed frames, but it is also amazingly strong for building the interior structure of upholstered pieces. In addition, the craftsmanship and knowledge of furniture builders here is substantial. The use of corner blocks (added for strength), dovetail joints and hardwood frames is commonplace in the production of quality Canadian-made furniture. These are very important to the long-term stability of upholstered pieces that are used regularly.

So how do you know if a sofa is good quality? There are several key things to look for. A solid hardwood frame construction is paramount to the strength of a sofa or chair; particleboard is not hardwood.

High-grade foam is really important to the long-term shape and spring of seat cushions.

Padding added to the sides of the arms and to the back of the sofa to fill it out also helps with its look and overall comfort. A cheap sofa, on the other hand, doesn’t have this; it feels like cardboard when you knock the side of the sofa. Webbing and springs also make a difference to how well a sofa will wear.

When we purchase products made in Canada, we have more choice of sizes and materials and we often get better quality furniture than items imported at a lower cost. Although it may seem like you’re paying less money for a specific piece, the item has

incurred transportation and duty costs, and sometimes more money goes toward shipping the item than to the actual materials put into it. Also, furniture made here supports Canadians and keeps our economy running. We may pay more for goods produced here, but in the long run it comes back to us as workers in the forestry and timber businesses — largely in British Columbia, Ontario and Québec — see their materials sold to a local market rather than solely overseas. In addition, the practice of making furniture on home soil draws on the expertise of our craftspeople and involves the retail sector. While some furniture components may come from other parts of the world, assembling the finished products here keeps Canadians employed.

Turn on the television and you’ll see beautiful white smiles; the kind of smiles that are seemingly natural. What viewers don’t know is that these amazing smiles are manmade. It’s true that most Hollywood stars have porcelain veneers on their teeth, that’s what makes them look so ‘toothpaste commercial perfect’.

In all sincerity, the Hollywood crowd has it right! Porcelain veneers are a beautiful way to correct discoloured, chipped, worn or crooked teeth — on anyone, superstar or girl next door.

How it works Veneers instantly reshape and correct your teeth and smile. They are ultra-thin, custom made porcelain restorations that are bonded on the front surface of your teeth. Many cosmetic dental problems such as chipped, gapped, stained, discoloured, aged or misaligned teeth can be solved with porcelain veneers. They can be used to lengthen or shorten teeth, restore a more youthful smile and can be an excellent replacement for old white plastic fillings. Teeth that are crooked or misaligned can often be made to look straight, and veneers may also be a good alternative to traditional braces if you want immediate results.

This simple procedure can be completed in as little as two to three visits. During the initial visit, your dentist will consult with you to determine the perfect colour, shape and size of the veneers to achieve the beautiful, bright smile you are looking for. To enhance a smile, some people need just one, while others may need upwards of eight veneers.

At the second visit, your teeth are prepared for the porcelain veneers by removing a surface layer of enamel. Unlike crowns or caps, veneers require very little removal of the natural tooth. Impressions or a digital scan is taken, and temporary veneers shaped similar to your final veneers are placed.

Using computerized technology, your new enhanced smile is designed using 3D computerized technology. The porcelain veneer is then customized to fit perfectly over each individual tooth.

Things to consider While porcelain veneers are minimally invasive, they do have their drawbacks.

Some tooth structure generally needs to be removed, which can contribute to tooth sensitivity. Also, as with any restoration near the gum line, you are more prone to gingivitis and periodontal disease around a veneer.

A commitment to regular oral hygiene is paramount to excellent gum health around even well-fitting veneers.

By placing glass-like ceramic porcelain on the surface of teeth, dentists can provide you with bright, straight, natural looking teeth and with a smile like that; you’ll be a star in your own right.

he McGorman’s have sand, sun and sea within a stone’s throw from their five bedroom family home.

Although, at the McGorman residence, they don’t permit the throwing of stones; this family abode is one that regularly hosts relaxed get-togethers in their huge outdoor living area.

Homeowner Rob McGorman is not only the head of the household; he also played a large part in the construction, vision and layout of the 4,800 square foot living space. As a lifelong local to Parksville and owner of Bayshore Construction, McGorman says that he and his family of four wanted the best of both worlds – close to town and near to the beach. With these simple stipulations and a city that can easily accommodate the demands, McGorman and his crew at Bayshore created what is now Ocean Park Estates, a subdivision consisting of 20 luxury homes.

Having lived in the space for nearly two years now, the McGormans have taken the time to customize the residence to reflect their family dynamic. With two children, aged seven and four, it had to be both functional and unique.

Jeff Matson, contact salesman with The Floor Store explains that in determining the lifestyle of the McGorman clan he was

able to cultivate the look, durability and characteristics of flooring choices throughout the home. “Through this process we will highlight what is practical and eliminate what will eventually fail with the test of time,” says Matson.

In the living area, the McGorman home is host to rich red oak floors that were sanded

and finished on site — a rare feature in today’s market. This type of finishing allows the homeowners to select from a large colour palette and focuses on attention to detail.

“The installers are able to lay the floor in more detail than a prefinished floor,” explains Matson. “Sanded and finished hardwood has a very elegant look and can be versatile with a lot of character.”

Perched on a hilltop, ‘SilverStone’ boasts expansive views of the Strait of Georgia, Mount Baker and the Olympic Mountains. Located on a 2,207-square-metre property, the three-storey home boasts 604 square metres of living space; all interior walls were removed in the renovation. The home features two 79-square-metre subterranean garages, each of which holds four vehicles. To accommodate the garages, Miller and his team lifted the house, supported it with beams and carved out the rock underneath.

At the front of the property, Duane Ensing Landscape Design manipulated the steep driveway in order to bring the grade down and create a more open space. (The driveway is now heated thanks to Gorge Electrical Services, which provided all electrical work on the property.) From here, a staircase meanders through a garden to the charming front porch; extensive West Coast-style rockwork provides continuity between the garden and exterior of the home.

Sandy Nygaard of Nygaard Interior Design echoes Miller’s statements. “We tried to pay homage to the era of the house with a contemporary take on it,” she says. “It’s nice to juxtapose the two styles.” The designer—who lent her expertise to Victoria Homes & Living’s fall feature home, the ‘Touchstone’—incorporated an earthy colour palette, elegant mouldings, traditional paneling, rich millwork and chic finishing materials, including tiles, handles, knobs and door hardware.

Mastermind Mitch Scoffings, owner of Set in Stone Tile has a presumably steady hand as he provided the handcrafted custom tile work above the stove. “He traced a maple leaf and cut it out by hand,” explains McGorman of the perfectly shaped leaf tile and scattered it across the wall.

“I take most pride in the kitchen,” says McGorman of the open and airy room that is illuminated by both natural and artificial light by means of strategically placed pot lighting and an expansive skylight. The lighting was both designed and installed

by McLaren Lighting, and fits the bill of providing both a functional and unique space for the busy hub of this family home.

With proper lighting, the maple cabinets are intensified, providing an inspiring cooking area for even the most seasoned chef. “It’s where we spend most of our time, here, and in the outdoor living area.”

The exterior timber frame is a focal point of the front and back yards. In conjunction with the stamped concrete, McGorman says these are favourite attributes to the home and not to mention — in keeping with a true West Coast lifestyle, it’s low maintenance.

For what may seem like an effortless design, it comes with a lot of experience and help from their friends. “I’ve been in the building industry since I graduated from high school in ’91, and Bayshore Construction was formed in 2002.”

Having been in the industry for 20 years, McGorman says that the years of being entrenched in building have exposed him to a whole spectrum of ideas, taking note over the years what works and what decidedly does not. “I took the things I liked and made it my own,” he says of the home’s design, offering credit to both his wife and numerous suppliers. “It’s people like suppliers that I rely on for their expertise to round out the whole

In his years working with the organization, Osoba says that he has seen a shift in its primary focus. “It used to be quite focused on personal development, but now there is much emphasis on social change and creating a better world.”

The non-dogmatic centre was founded by a group of six visionary environmentalists, of which included Rex Weyler (one of the founders of Greenpeace International and renowned author) and Shivon Robinsong, who is currently uplifting the community choir scene in Victoria.

Some of the masterminds behind the creation of Hollyhock have since moved on, but their legacy and continual contributions to the centre helps it to flourish and expand its influence.

“We have over 100 programs to offer,” says Osoba. “The bulk of the programs are held here on Cortes Island, but there are a dozen programs in Vancouver as well.”

Programs cover a vast spectrum and fit into four main categories: arts and culture, wisdom teachings, well-being as well as leadership and professional development.

Programs include meditation, personal development, relationships, communications and mediation to name a few.

“We are so eclectic,” says Osoba of the centre’s celebration of diversity. Every season, board members introduce new programs and fresh faces. “We have different teachers for every program. They come from all over the world and are often renowned in their fields,” says Osoba, estimating that Hollyhock is host to roughly 140 accomplished teachers.

Open from March through November, Hollyhock sees visitors of all ages, though the majority of guests fall within the ages of 35 and 60. “We’ve had people at the centre in their 20s, all the way up to those in their 80s,” he says. The expansive beach, oceanfront property and beautifully forested escape cares not of the visitors’ age – all are welcome to experience Hollyhock. Whether guests come for a vacation, a mental cleanse or to learn something new, the hope is that they will depart with a true sense of wellness and rejuvenation.

“Bioluminescence paddles have been lifealtering for a lot of people,” says co-owner Mike Moore of Misty Isles Adventures.

“You put someone in a kayak at twilight, and head off into the setting sun. As you look down and wave your hand in the water, it’s a three-dimensional universe as the light given off by the agitated plankton is truly spectacular,” he says.

No matter the activity or program of choice, Osoba says that the hope for Hollyhock guests is that — “Number one, they are going to relax; secondly learn something new and ultimately connect with other likeminded people.

We want them to reconnect with nature, eat fabulous local and organic foods and potentially get a glimpse into how they could transform and share their experience to their communities” — what Osoba calls “the ripple effect.”

ost women my age know Jason Priestley as clean-cut good guy Brandon Walsh from Beverly Hills, 90210. While his megawatt smile hasn’t faded, the tapered jeans and voluminous tresses made famous by his character in the 1990’s are a distant memory.

Priestley has since grown and diversified his career as an actor and director, and has settled into family life with his wife and two young children. These days, the native Vancouverite plays the role of shady car salesman Richard “Fitz” Fitzpatrick in the HBO series Call Me Fitz and spends some of his treasured spare time at Terrace Beach Resort, the Ucluelet property that he owns with his family.

Like many islanders, much of Priestley’s fondest memories are of time spent on Vancouver Island’s West Coast - a place where he is vested both emotionally and physically. Priestley acknowledges that this connection began at an early age. The area, he says, “gets in your blood and in your soul.

[It’s] a place that has so much charm and simplicity.” Today, he and his family go there to escape the hustle and bustle of everyday life whenever possible, no matter what time of year it is.

“I get out to Terrace Beach [Resort] as often as I can,” explains Priestley. “It’s quite an arduous journey with two little ones, but we make it out every year.”

The sound of crashing waves is inescapable from the accommodation, which is built on pilings only 15 metres back from the shoreline. Priestley remarks that this special place is an absolute getaway.

“I think that our place is an escape for everybody. That’s what it’s intended to be,” he says. “It’s a very rustic and simple resort, but it is designed to be a place where people can go, truly relax and shut off from the stresses and problems that chase them from day to day.”

The rustic fishing village of Ucluelet doesn’t reveal secrets, and when the Priestley family comes to town, their secret is safe within the quiet community, allowing them to unwind.

“I think exposing my kids to this way of life is beneficial,” Jason says. “Everything is so easily accessible for us and our children that I think it’s important to visit places like Ucluelet and reconnect with nature.”

Priestley speaks fondly of his 30-plus year love affair with the West Coast. “My father first brought me here when I was eight years old.

We went on a family fishing trip and my father took me to Long Beach. I was awestruck with the power and the beauty of that place.”

Located on the southern tip of Clayoquot Sound, Ucluelet attracts world class surfers, camping enthusiasts, whale watching tourists, experienced fishermen and anyone who just needs to get away. “To me, Ucluelet typifies what the West Coast was 100 years ago,” reflects Priestley. “It’s very much like a throw back. It has so much of that charm, simplicity and slowed down lifestyle that has been lost in today’s modern world.”

Today, he is doing the same for his children, taking them from their lives in Los Angeles to experience what he did as a child. He reminisces about feeling the cold Pacific water on his hands, looking into tide pools, counting starfish, touching sea cucumbers and learning about Anemones. “Those things are very important to us as parents,” he says.

“For me, doing those things with my children deepens my connection with them.”

When asked to look into the future, Priestley scoffs at the unfamiliar idea of retirement.

“I’m only 40 years old,” he says in jest. “I’ve never even thought about it, but it wouldn’t be a bad place to retire.”

According to Priestley, Ucluelet is a place that remains somewhat undiscovered; a trait that he says is what makes it magical.

“We will always [have] this quiet little beach that is just a beautiful little piece of solitude.

That’s what makes our place special. I love and relish my time there because I know I never get enough of it.”

Many homeowners are drawn to wide plank floorboards for their unique rustic look, believes Rob Chislett, sales manager at Parksville’s United Carpets. “Wide planks are quite attractive in homes here on the West coast,” he adds. What’s new in hardwood flooring is actually “old”, but improved. Much of that improvement comes from the finishes and oils applied onto the hardwood. Thanks to modern processes, oil and wax finished floors are easily repaired and maintained with natural oils and detergents.

Meanwhile, the industry is coming out with engineered hardwoods with a lock and fold system. “Rather than being glued or nailed down, the flooring clicks together and floats — a great alternative,” says Jason Mather, RONA divisional flooring manager for Duncan and Nanaimo.

There are two categories of wood – hardwood and softwood. Hardwood refers to mainly deciduous species such as white and red oak, maple, beech, hickory, ash and bamboo. These woods are more commonly used for wood flooring because of their durability. Softwood such as pine, cedar, hemlock, and fir are prized for their rustic charm, but are not recommended for high traffic areas.

“Hardwoods are more sought after than soft varieties.

However, there also seems to be trend towards style and good looks,” says Brodie Adshead, general manager of The Finishing Store Nanaimo. “It seems people are now willing to sacrifice hardness if the colour is perfect.”

Additionally, when the industry introduced hand scraped and wire brushed finishes, the popularity of oak floors soared. “The texture on the surface makes the floor

look worn,” adds Adshead. An added benefit, dents and scratches blend into the already textured surface making them almost undetectable — a bonus for households with children and pets.

For those who prefer soft wood, Mather says, there are issues to consider. “Generally softwoods, such as fir or our local birch, are not prefinished, so they have to be finished on site,” says Mather. Prefinished has been pretreated with a durable finish. However, unfinished wood flooring has advantages too — available in more widths and wood species than prefinished, and finishes can be matched to existing wood floors.

Over the last few decades, consumers began investing in exotic wood furniture and flooring because of the unique look. Species such as the Brazilian cherry (Jatoba), Santos mahogany, Brazilian teak, African rosewood (Bubinga), ebony, cork and bamboo varieties have exploded onto the marketplace. However, as prices stabilized and the world became more ecologically aware, the demand for these timbers began to wane. “Exotics are still selling, however, the popularity is not what it was three or four years ago,” says Adshead.

Chislett looks at it differently. He believes the main reason exotics aren’t as popular as they once were has more to do with overharvesting. “It’s really tough to find Brazilian cherry wood because there’s very little supply left … the industry there has cut it all down,” says Chislett, adding that Brazilian walnut, cherry and teak woods were sought after for their rich hues and denseness. “Many of the exotics have also been diminished by the many floods (South and Central America have both suffered heavy flooding in recent years).”

Softer woods, such as American cherry and walnut, are still trendy because of their distinctive shades. Mather adds: “Some exotic hardwood sold in B.C. are from sustainable forests, but not all, so people should ask if they are concerned about over-harvested exotic woods.”

ENGINEERED FLOORING:

Engineered hardwood is less expensive than solid hardwood because it is made of layers of plywood base with a layer of hardwood. The top layer is the chosen decorative hardwood. Engineered hardwood is also more environmentally friendly than solid hardwood because the sub-surface layers are made from recycled scrap wood. “Engineered floors can be used on pretty much any surface,” says Chislett. “You can’t lay traditional hardwood over concrete or in-floor heating because hardwood expands and contracts, and it will warp.”

Many British Columbians are demanding eco-design trends from renewable sources. For those who want hardwood floors, but with little impact to the earth, look for wood that has been grown and harvested in an earth-friendly way such as selective harvesting or farmed timber. Bamboo is considered one of the greenest flooring options because it grows incredibly fast and is highly sustainable.

Another is cork. Its beauty lies beyond its sustainability — it comes in a dozen different colours and textures. “Cork makes a gorgeous looking floor,” says Mather. “The cork is skinned off the tree and doesn’t harm the tree at all. In the industry, cork is referred to as a warm and quiet alternative to hard surface flooring.”

Sourcing out reclaimed floorboards from barns, churches and historical buildings is also an excellent choice for the eco conscious consumer, but does come at a price. Although you are purchasing old materials, often you are paying for a hundred years of history and worn-in character.

The whales are coming!

These magnificent 36-tonne creatures navigate the seas, cruising at a speed of two to five knots, travelling an average of 160 kilometres each day, stopping only to feed and rest.

From March 19 to 27, the coastal communities of Tofino, the Pacific Rim National Park Reserve and Ucluelet will once again becoming gracious host communities for the annual Pacific Rim Whale Festival; celebrating its 25th year of embracing the migration of these magnificent mammals. To commemorate this silver anniversary, there will be a theme of “Sea Change,” a foundation that will be prevalent throughout the many events and discussions.

Every year, the grey whales are welcome visitors along Vancouver Island’s west coast. “They are headed towards the summer feeding ground in the Bering Sea,” explains Marny Saunders, co-chair of the Pacific Rim Whale Festival. “They will travel 20,000 kilometres (round-trip) between their summer breeding grounds and winter feeding grounds.” With their calves in tow, these whales are headed north for the rich plankton and krill blooms that flourish in the summer months. Said to be the longest marine mammal migration, Saunders says that the distance is also thought to be the largest migration of any mammal on the planet.

“The festival is nine days and nights,” explains Saunders. “It’s designed to inspire, educate and entertain by celebrating our coastal traditions, unique environment and the spring return of the grey whale.”

It started in the early 1980s when Ucluelet Chamber of Commerce and whale watching company owner Brian Congdon suggested a whale festival, similar to that of the Californian celebration of whales. Since that time, the whale festival has grown into a highly regarded and much anticipated annual affair. The society is run by more than 300 volunteers, is host to 90 different events, all to honour the thousands of majestic creatures.

Jamie’s Whaling Station owner Jamie Bray says, “In 1982, when Jamie’s first started the whale watching industry on the west coast there were only 11,000 grey whales. That [migratory] number has increased to about 22,000 since,” he says of the improvements that have occurred in 30 years.

“The festival coincides with the onset of spring,” explains Saunders. “There are activities for all ages - children, families, nature lovers, adventurers, young and old with a variety of cultural, culinary, musical and educational activities.”

A number of grey whales remain in the Clayoquot Sound area, explains Kati Martini, program coordinator with Remote Passages Marine Excursions. “Local residents such as Two-Dot Star and Black Jack remain here all through the summer and fall. Last year, Two-Dot Star arrived at Hot Springs Cove several weeks earlier than his usual schedule, almost on the opening day of the Whale Festival.”

During the northern migration, the whales travel close to the shoreline, allowing viewers to catch a glimpse from land over the period of roughly three months. Joined by countless underwater wonders, Saunders says that wildlife worshipers can also witness “acrobatic, fish-feeding humpbacks, resident grey whales, orcas and the occasional minke” during this same time of year.

When attempting sightings from land, Martini says to look for spouts from lookout points such as Radar Hill, Green Point Rock, Amphitrite Point, along the Wild Pacific Trail in Ucluelet and the height of land above South Beach in the National Park. At this time of year, Martini notes that guests can expect to see these travelling whales in pairs or even small groups of six or more animals.

Unlike the tireless grey whales, visitors will need a place to catch some shuteye. With much celebrating, many local accommodations are playing host as well as providing a retreat for guests. The Black Rock Oceanfront Resort in Ucluelet is situated along the Wild Pacific Trail, and is one of the best lookout points for whale watching. The Weigh West Marine Resort’s general manager Joseph Sopp says that the Whale Festival is one of the most exciting events in Tofino. “It is an amazing celebration of our coastal communities which highlights the respect and admiration the people in these communities have for all sea life,” says Sopp.

Guests can enjoy the beauty of the Browning Passage from the resort rooms, marina, Dockside Pub & Blue Heron Restaurant.

While the festival is important to locals, it’s also a valuable and educational experience for tourists and newcomers who may want to reconnect with nature. “The Whale Festival is an important part of our year,” explains Lorne Priestley of Terrace Beach Resort in Ucluelet and treasurer for the local tourism board. “It coincides with spring break so we can help many children get to see and experience whales in the wild.”

The Wild Pacific Trail is a 10-minute walk from Terrace Beach Resort, one of the best-known lookouts in all of Ucluelet. On occasion, Priestley says that the grey whales can be seen from Terrace Beach, “cruising across the mouth of the bay,” a locale that Priestley says is grand, but recommends binoculars for optimal viewing.

For a closer look, whale watching companies are always ready to take guests out to sea for the real deal, a considerably lucky phenomenon to witness firsthand. “Grey whales have, on two separate occasions, fought their way back from the brink of extinction,” explains Ocean Outfitter’s owner Ken Thompson. “They were commercially hunted and at one time, their numbers were reduced to a just a few hundred.”

All the more reason to celebrate these resilient mammals, owner of West Coast Aquatic Safaris Keith Phillips adds, “One of the most important elements of the festival is education.

Experts provide a number of activities and presentations of the past, present and future of the grey whale, as well as all coastal life in the area.” During the festival, visitors can learn more about grey whale behavior with the accompaniment of Parks Canada naturalists and biologists, the Raincoast Education Society and Ucluelet Aquarium members.

With us, we have Tracy Reis, Tourism Penticton’s media and marketing coordinator; here to answer any questions that may arise. And on board is Homes & Living magazine’s publisher, Robert Read who took in this summer city last August.

Located in the heart of wine country, there are over 100 wineries within a one hour drive of Penticton. While no one man can take in the wineries in a weekend — that remains an impressive statistic. So as not to get overwhelmed with the plentitude of options, Tracy Reis suggests doing your homework first.

“The BC Wine Information Centre is the perfect place to start and finish any wine country journey,” says Reis. “The centre features a massive selection of local VQA wines, as well as daily tastings and information on wine routes.”

During their stay in Penticton, Reis took Robert to a “Swirl and Sip”. Here, they learned much about the wine industry in the Okanagan — beyond the basics of colour, clarity, flavour and scent. Robert learned that the centre was the first VQA retail wine store in British Columbia which carries a selection of 400 VQA wines and is operated by a non-profit organization known as the BC Wine Information Society — all in a day’s work really.

But when in Penticton, it’s hard to resist the tantalizing cuisine that grows locally with such splendour. Because of its climate, Penticton provides optimal growing conditions for most any plant. “Guests should certainly make local orchards, farms and food producers a must-see stop on their journey,” says Reis. “Enjoy the delicious cheeses of Poplar Grove Cheese or taste wine vinegar at Summerland’s Vinegar Works,” she suggests of a select few places to check out.

After whetting your appetite with samplers, you may want to head downtown to Main Street where you can get a little Greek. At Theo’s Greek Restaurant, guests can dine on the secluded balcony or in a lovely courtyard brimming with flowering plants. This local gem has been open since 1974, offering dishes made with fresh ingredients picked from local fields, orchards and gardens. Another main street favourite is Almante run by owners Rose Amante and Chef Abul Adame, who has worked in some of BC’s finest kitchens before opening this little gem.

While we all like to feel a little culturally refined, it’s nice to kick back on the beach, especially while in a city that is historically famous for its beaches. “It’s one of only two cities in the world located between two lakes,” says Reis. While the scenery from the lake looks much different from land, Robert spent the afternoon swimming off a rented boat (from Pier Watersports) in the warm Okanagan waters and cruising scenic shorelines. After some fun in the sun a great place to eat is Salty’s Beach House. Salty’s offers patrons the best of all worlds: enjoy refreshing breezes drifting from the lake, moonlit dinners on a beachside patio, stunning lingering sunsets, fresh seafood sizzling to perfection, and Thai and Caribbean cuisines delicately prepared with seafood from around the world.

At the end of a wonderful day in Penticton, it’s always nice to have somewhere to turn in for the night. The Penticton Lakeside Resort, Convention Centre & Casino is a destination all its own. Spice-Roasted Chicken Ingredients

When it comes to cooking, nothing excites me more than being introduced to an ingredient that I’ve never used before. My friend Cory Parsons, author of Cooking with Cory, acquainted me with za’atar this past fall and it became a staple in my pantry overnight. Since then, I’ve been experimenting with this aromatic spice blend — a combination of salt, sumac, sesame seeds, thyme and oregano — on meats, vegetables and breads.

For this special recipe, I’ve kicked my beloved roasted chicken up a notch by marinating it in a mix of za’atar and sumac, a Middle Eastern spice that is also the primary ingredient in za’atar.

Look for both products at local specialty food shops.

Lemon and fresh mint imparts bright flavours, while cinnamon and allspice convey warmth; pistachio nuts provide sweetness and texture.

Earthy and exotic, the resulting chicken is perfect when accompanied by tangy plain yogurt and warm flatbread.

1 large chicken, quartered 3 garlic cloves, minced 2 red onions, thinly sliced 5 tbsp olive oil 2 tbsp za’atar 1 tbsp sumac 1 tsp allspice 1 tsp cinnamon 1 lemon, thinly sliced ¾ cup chicken stock 1 tsp salt 1 tsp pepper 2 tbsp butter ¼ cup fresh mint, roughly chopped ¼ cup shelled pistachio nuts, roughly chopped

Preparation Combine chicken with garlic, onions, stock, olive oil, lemon, all spices (except za’atar), salt and pepper. Marinate in the fridge for at least two hours or overnight.

Preheat oven to 400°F. Place chicken skin-side up on a large baking sheet. Ensure that all pieces are flat and spaced apart.

Top chicken with marinade and za’atar; roast until golden and thoroughly cooked, approximately 35-40 minutes.

Melt butter in a frying pan. Add pistachio nuts and toast over medium heat until golden.

Transfer chicken to a platter, then top with pistachios, mint and a drizzle of good olive oil.

Preparing Your Home Inventory Make a resolution this season to start an annual home inventory

Most homeowners rely on insurance to cover their possessions in the event of a loss. However, neglecting to keep track of what you own can make recovering your losses an arduous task.

Scenarios that necessitate filing a claim can be extremely stressful, without the added pressure of trying to remember the original cost of your winter coat or how many plates you owned.

Many people underestimate the value of their possessions. Even inexpensive items, gathered over a lifetime, can add up. Anyone who has ever lost their luggage knows that replacing even a small portion of your belongings, all at once, can be extremely costly. The best strategy is to be prepared by compiling and maintaining an inventory of your belongings.

Here are some strategies for creating a home inventory:

Pick a date: Set aside a time each year to revise and update your inventory. The start of a new year is a logical time for many people, especially those who have received gifts over the winter holidays. Revising your inventory once a year is sufficient for most households; however, make sure to add any particularly expensive acquisitions promptly throughout the year.

Digital inventory: “The quickest and simplest way to make a home inventory is using a digital or video camera,” advises Maurice Poulin, vice president of the Insurance Brokers Association of B.C. (IBABC) and an insurance broker in Nelson. “Simply walk through your house slowly, filming as you go, and making verbal notes on important items.” Make sure all rooms and storage areas are shown. Capture the details of the contents of shelves, closets, cupboards and drawers. Of course, for many people, making a written list is still preferred. Whichever method you choose, be sure to include the names of each item and, if possible, the purchase/acquisition date, model, original cost and serial number.

Make a copy: Make two copies of your inventory and store them separately. Keep one in a secure place away from your premises and one with your other critical items so that it’s easily accessible in case of an emergency. Consider keeping a copy at your workplace, with a friend or relative or locked in a safe deposit box.

Update your inventory: Keep your inventory current by storing receipts of new acquisitions with it. This will simplify the task of updating your inventory and will also serve as a reminder to make any changes the next time you renew your insurance policy.

Take note of special items: Make a special note of any particularly important or expensive items in your inventory for your insurance broker. Not all policies will cover the total replacement value of your items, only a percentage. Expensive items such as jewellery and art can easily exceed coverage limits.

Prepare a “critical items” kit: In the event that you are present during an emergency and need to evacuate your home, a “critical items” kit can save you having to replace important documents and irreplaceable items. Possible items to include: birth certificates, passports, social insurance cards, driver’s licenses, credit cards, address books or hard copies of your phone and email contacts, receipts for large items, insurance policies, important legal or financial documents, personal mementos and photographs. Place these items in a fireproof and watertight box, and store it somewhere that is easily accessible, but not obvious to thieves.
