editor’s letter HW
This time of year always promises a creative interiors buzz with September’s unleashing of new designs after London Design Week. To go into the trends found at the different shows would probably deem slightly repetitive and extensive to be precise. However, the one movement that doesn’t seem to want to go anywhere is the quest for that need to get back to basics. It’s largely due to this that most of the just-released furniture pieces are predominately made from basic materials in dead simple designs, not pretending to do or be anything more than they are. In the same fashion, a warm glow in lighting that takes us back to an era of candlelight keeps appearing. Lighting gurus, such as Tom Dixon, Bocci and the young, charismatic, Innermost are bringing us sated lights in chunky bare bulbs. What feels like randomly, bright yellow has demurely but definitely made an appearance. Placing the blithe colour in monochrome spaces is creating whimsical fun in otherwise toned-down settings. On a more specific note, since it’s the time of year when warmth is going to be wanted again soon, this issue is all about comfort and cosiness in the home. Our ‘Welcoming Winter’ feature beginning on page 064 offers obvious and not so obvious ways to add warmth – as well as the illusion of it – to the home. Don’t miss our autumn inspired decorating feature on page 058 to also put you in the mood to start welcoming those colder months. Here’s to the start of a warm and wonderful winter!

LONDON DESIGN WEEK BEAD LIGHTS, BENCHES AND BRIGHT YELLOW
>designjunction (36 brands exhibited
under the creative direction of celebrated British designer Michael Sodeau) and 100% Design were two exciting places to be at this year’s London Design Week. The exhibitions saw a lot of bare wood, loads of simplicity and a whole lot of stools. We like the pops of yellow that are slowly surfacing more and more, as well as the chunky bead lights and, taking the stool a step further – the appearance of benches

DOME Solaleya’s dome homes are insulated with cork and feature a 90% wood construction. The Domespace’s system and design allows for the entire structure to rotate, which enables homeowners to orient their home’s windows to either face or oppose the sun. Of course the system largely reduces energy consumption, since it passively balances the internal temperature, as well as natural light (not to mention a change of scenery any old time you wish). Add inclinable solar panels, which also provides maximised solar energy gains and additional shade when necessary. This is about as green as it gets. www.solaleya.com
The Cool Silicon Art Award, which is aligned in cooperation with the international festival for contemporary art - OSTRALE, is being tendered this year for the first time. The focus of Cool Silicon is set on the conflict between worldwide rapidly increasing energy consumption of Information and Telecommunication Technology (IKT) and the associated global-climatic consequences for a steadily growing world population. The Jury of the award chose 10 finalists to take part in the finalist exhibition, which opens on December 9th, 2011. Artist Norbert Francis Attard was chosen from Malta as one of the 10 finalists and will be exhibiting Wittgenstein’s Ladder. www.coolsilicon-art.com

The whole concept of having a restful home – “a place to hang your hat” – is entirely subjective to the homeowners that spend their time in it. The idea of comfort is undoubtedly synonymous with warmth, particularly in the winter months. This issue features spaces that expel warmth and comfort in their individual ways. The first home belongs to young homeowners Alexis and Sharon Borg Cesareo, who probably have the most classically warm home out of the three with their Mosta house of character, built from conventional materials, such as old stone and dark wood. Exceptionally self-renovated and hand painted pieces of old furniture create a charming space. On a very different note, the modern villa on page 038 illustrates how a contemporary space can still possess a warm and inviting feel through the use of truly superior materials and a spectrum of earthy colours. The warmth of the apartment on page 048 is created through a design that completely caters to its homeowners’ lifestyles. Apart from the easy and convenient layout, the use of dark, neutral colours make for a restful and soothing home that invites a quiet calm.

THE STAID SALVAGE When everyone else was out partying and exploring their young adulthood, Alexis and Sharon Borg Cesareo bought a house. The couple were 17 when they met and 19 when they purchased this Mosta property Photography: MAS Photography Assistant: Sophie Spiteri Words: Elisabeth Cardona
hen the couple made the purchase, the Mosta house was not in a good state. The hall was a long room split into three. A little room used for animals was where the kitchen would go. The toilet was in the courtyard and there was no top floor at all. The downstairs floor was all soil. They started renovation one year after they bought it.
W
Sharon: “I was immediately drawn to the window upon entrance, the top griddled one – I loved (and still love) the drama of it – and the high ceilings throughout. Despite the fact that the house was in ruins when I first laid eyes on it, I wanted it.”

The wall to the left of the dining table is shared with the next-door bakery’s oven, which causes it to heat up the wall, which in turn heats up the whole room. All the furniture has been found and renovated – either painted or re-upholstered

Striking bright ceramic sinks were brought by the couple on one of their trips to Sicily. Hand-painted words on the drawers create a little whimsical fun
Sharon’s profession as an interior designer helped immensely. In fact, she used the house as part of her course final assignment. Renovation had become a passion for her, which meant that she didn’t want to buy anything new. “Just as well really, because every cent we had went into the house. I really enjoy collecting things and I was forever looking out for skips filled with discarded furniture. I would take the pieces into my parents’ garage, strip them down and then paint them.
I did so many pieces like this – for instance, the headboard in our master bedroom, the yellow Welch dresser in the kitchen, the chest of drawers in the dining room and my parents’ first piece of furniture – the chest in the foyer. I’ll always keep these pieces. When you paint something for yourself, it’s very hard to part with it – it’s not like painting a commission for other people.”

The solid Red Deal wood staircase was one of the couple’s biggest expenses and the largest obstacle. The architect struggled with getting the height of the steps correct, as well as the headroom
When viewing the house for the first time, Sharon was immediately drawn to the top griddled window and the exceptionally high ceilings
Ensuite basin made out of one of the reclaimed beams
Apart from going to Taormina every year to bring back things in the boot of their car (for instance, the striking yellow and blue kitchen sinks), the couple were constantly on the lookout for old stones, which was an unusual aspect to insist on because they were so expensive (about Lm250 per stone). “I just didn’t want the new stone. For me, it was so important that we retained the character of the old house… and I am so glad that we made that decision now.”
The beautifully restored old wooden beams throughout the house also help retain the character. Like the stones, the couple would collect the beams when they came across them. They would go to scrap yards, measuring and marking the beams they wanted. They would rent a truck and lift them together, without help. “I don’t know how we did it by ourselves, but we managed. We did all of it alone – the retrieving, the sanding and then the treating. 033

Daughter Mattea’s room with all furniture painted pink
And the thing is, as hard as the work was, I enjoyed every minute of it! I loved the smell of the wood and seeing them come to life – it was an amazing experience. “That’s what’s so great about this whole house – that it literally has our blood and sweat in it and it’s exactly the way we wanted it. Everything worked out, and since we weren’t in a hurry, it all fell into place. Things like MEPA permits and finance weren’t stressful because we could move at our own pace.” To avoid humidity and the uneven level of the tiles, the couple lowered the level of the floor by about ten centimetres, concreted it, and then tiled. “I think we must have had about 18 skips full of soil and rubble.” The couple were always passionate about the house. There was only one time during the entire renovation process that Sharon felt that the work was too difficult. “When I was pregnant with my daughter Mattea, I was raging with hormones and it all got to me. I put a ‘for sale’ sign up for a day and then took it down the same evening after my nerves had calmed down.” The couple reckons that the stairs were the biggest problem. They didn’t want to opt for wrought iron because it was so common at the time. Since the staircase goes all the way to the roof and was made out of solid Red Deal wood, it was one of the couple’s biggest expenses and ended up costing a whopping Lm5,000. The architect struggled with getting the height of the steps correct, as well as the headroom.

The central courtyard allows for air and light to flow throughout the house
The end result made it worth all the effort though, as the striking staircase is now the focal point of the house. The overall inspiration of the home’s décor is French, with its painted furniture and details. A lot of Mediterranean accents have been brought in, particularly through the colours – greys, blues and mustards, which all work brilliantly well together. Four years on and the couple have finally stopped renovating and now it’s more about keeping the maintenance up.
Although it helps that the house is slightly elevated and there is the courtyard that boosts air circulation, every year the walls receive a wax treatment, which keeps them clean. The couple’s advice to those who are renovating an old house? “If you’ve got a budget, double it! In these old houses, everything leads to something else.”

ombined into a single, large gathering space, the living, dining and kitchen areas of this villa were created to promote communication between one another. The furniture is as unpretentious as the layout with the striking Minotti and Porro pieces illustrating how a balance between the architecture and the simplicity of the best quality modern Italian furniture can create a living stage to accommodate any contemporary interior.

Outdoor terraces on all sides of the house provide a seamless extension to the interior spaces, ideal for the homeowner’s contemporary lifestyle. The use of large floor to ceiling glazing enhances the indooroutdoor continuity, allowing the external vistas to penetrate the interior. The integration of the external areas into the very conception of the house was a rewarding part of the architectural team’s tasks. The interiors follow and embrace the simple, clean lines set out by the architecture. The use of wallpaper and colour on the walls introduces texture and mood to create spaces with soul. Architect Nicola Muscat, “A home should be a simple, calm place without falling into the trap of being sterile. There is a need for colour, texture, sense of space and above all, comfort.” This comfort was brought in through the mixture of warm and light colours on the walls, floors and ceiling, which created a natural backdrop for subtle modern furniture. The contemporary space is made more unique through the successful fusion of vintage carpets and objects. With the installation of sheer curtains and dimmable lights, the internal day and night scene lighting is fully controlled. The mix of architectural and decorative lighting allows the homeowner to set the tone for any function, be it cooking, eating or lounging. Taking on the role as the heart of the home, the fully equipped Arclinea kitchen is much more than a mere cooking zone. Finished with recessed architectural fittings and marble kitchen tops, the lacquered and wooden cabinetry is integrated with appliances.
The bedrooms each have direct access to an external courtyard, which offers a view, as well as natural light. The master bedroom maintains fluidity and openness while providing a large amount of privacy 040

MJMDA took the homeowner’s brief requirement of a music room and study space as the generator and spark of this design journey Architects: MJMDA Photography: Tonio Lombardi Words: Guy Laguens
A glass showcase box is the first indication that this apartment is an interesting one. It’s the settling place of prized musical instruments – almost as artefacts frozen in time. Further to this, the glass wall delivers a warm light and connects the strategically placed music room and study to the hall and living spaces. Although the room is almost hidden away, it’s still part of the space through the glass wall. A mobile custom-designed light fitting/coat hanger/mobile storage in the hall makes reconfiguring the hallway easy.
A
Not only is the glazed box an epitomised representation of the palette of materials and tonalities found in the rest of the apartment, but it’s also “a way of avoiding hanging the 14 bass guitars all around the apartment”. Light – natural and artificial – is refracted throughout the home to provide a soft realisation of colours in sympathy with the milder tonalities and warmer feeling, which was also requested in the brief. 049

Warm simplicity: Natural materials and a toned down earthy colour scheme
“We are often times relegated to a visually dominated world in our present day environment. And images attempt to define the way we feel. In reality however, there are other senses, which we can tap into to create a sensory loop to create an ultimate living space. Can sound generate light? Can sound become a prism for light to create multitonality? We think it can.” – Architect Matthew J. Mercieca 050

Warm simplicity: Natural materials and a toned down earthy colour scheme
Virtually everything in the apartment was custom designed by MJMDA, which is why there is a total harmony amongst the spaces and furniture. Warm simplicity is the design theme of the open plan dining / living / kitchen area, with its natural materials and toned down earthy colour scheme of charcoals, greys and black. The result is calming – precisely what the homeowners were after, due to their stressful lifestyles: “It’s of utmost importance for us to relax when we’re at home…”

The views of Valletta were opened up through the release of the apartment’s main axis towards the views by setting back the rear elevation to create a terrace from the previously disused balcony. A spacious walk-in wardrobe was another must, so the couple opted to eliminate a third bedroom to replace it with an integrated walk-in with their main bedroom. Another comfort element in the apartment is that it’s now extremely IT orientated; all movies are downloaded on a central media storage device, which in turn allows the couple to begin a downloaded movie in the living room for instance, and then continue it in the bedroom, minus any hassle.

WINTER
Luckily we don’t live in a terribly cold climate, but Malta’s high humidity does mean that it can get pretty chilly inside the home during those winter months. There are a lot of obvious ways to prepare and keep the home warm for winter, which we don’t necessarily think of straight away. HOMEWORKS brings you the obvious and not so obvious ways of keeping your home nice and toasty this season
The Radium Flueless Gas LPG incorporates the latest in gas fire technology and doesn’t need a chimney or flue to operate. The flueless gas fires converts 100% of the gas to heat (unlike open coal effect fires) and runs at a third of the running cost of a conventional gas fire. For complete safety, all gas fires are fitted with an Oxygen Depletion Sensor, and have a Flame Supervision Device. > require little maintenance and are relatively inexpensive to run. Oil-filled column heaters: provide radiant heat, and are generally favoured over other portable electric heaters for reasons of efficiency and safety, but they use a substantial amount of electricity. Reverse cycle air conditioners: are effectively heat pump heaters. They’re an efficient heating option but use a lot of electricity.
There’s no need for a chimney or flue to operate the EKO 5050 Flueless Gas LPG, as the flueless gas fires converts 100% of the gas to heat (unlike open coal effect fires). Extremely eco friendly, the Eko 5050 converts carbon monoxide into harmless carbon dioxide and water vapour. Featuring a compact landscape design (designed to fit in a minimum room size of 23m3) with a stretched ultra-clean burner, the Eko 5050 ensures that the impact is even more dramatic than its portrait equivalent. Edilkamin pellet stoves are designed with advanced technology for ecological heating and energy saving, which are easily installed in houses, as well as apartments using a small flue. The coverings in steel, ceramics and soapstone guarantee great aesthetics and adaptability in both traditional and modern rooms. Details, such as long heating autonomy and automated weekly programming make them much more than just stoves. Prices start at €2,300. Find them at Il Camino
HEATERS AND FIRE PLACES: The most obvious way to heat a home is of course, with a heater or fireplace. However, due to the high electricity costs in Malta, an efficient heater is not necessarily an electric one. Find out exactly what your requirements are in order to get the right heater for your needs. You may need less than you think. Fireplaces are great if the space can accommodate one because they heat quickly and can also become a striking focal point in the room. Consider the different types of heaters: Wood heaters: give out a radiant heat but require a steady supply of wood, which is expensive in Malta. Great for small rooms that you don’t use that often, but which you like to feel cosy in. Electric fan heaters: are portable with instant heat but fan heaters are fairly inefficient and are best suited for short-term use in small rooms, such as the bathroom. Electric or solar under-floor heating: is the ideal way to keep floors totally toasty and to keep a constant and comfortable warmth level throughout the home at all times. However, this is somewhat expensive to install and needs planning, so it’s not a quick way to bring the warmth level up. Gas heaters: are reasonably efficient, environmentally friendly,
Solar heaters: have very few operating costs and are ideal for our sunny climate. However, they can’t be relied on solely, since no hot water is produced on days when the sun is not out. Consider the different types of fireplaces: Electric fireplaces: are a convenient solution for zone heating and are more energy efficient nowadays with forced air heaters and thermostat heat control. technology, the savings have increased and made the electric fire more authentic. They have a thermostat to control the intensity of the heat; they’re portable, have no pollutants and there is no clean up. Wood burning fireplaces: are great for that real fireplace experience, complete with the real wood smell, which makes for cosy days in winter. However, they do need constant attention and wood logs are not inexpensive in Malta. They also need a good airflow so they’re better for bigger spaces.

Gel or propane fireplaces: use alcohol gel fuel, which is a non-toxic alcohol based fuel. They provide the ambiance of a real fireplace without the maintenance, which is ideal for apartments or homes where there is no option of having a chimney – and they’re portable. However, they won’t heat an entire home and the gel fuel needs to be replaced regularly. Gas fireplaces: use artificial logs with gas to produce a yellow flame that looks just like a wood burning fire. They require a glass door to keep the heat in the home while the soot and smoke go up the chimney. They are converted from wood burning fireplaces because they need a damper that can be opened to allow smoke to escape up. CONSIDER SOME NOT SO OBVIOUS WAYS TO ADD WARMTH TO THE HOME INSULATION: Close all of your windows properly by placing removable window-caulk or plastic at the base of doors and seal the joints around window frames while still leaving enough air for ventilation. Heavy curtains not only look cosy, but they also keep more heat in the room. If budget is a factor, you can always line your existing curtains or sew two coordinating pairs back to back. A good way to alter the look of pale curtains is to fabric dye them a darker colour.

Humidity is the Maltese home’s biggest enemy. Some may consider a dehumidifier as a luxury, but apart from keeping the home uncomfortably cold, the other long-term effects of excess humidity are disadvantageous. Dehumidifiers remove the moisture from the air by reheating the air to further dry it after it releases its moisture. The way that they operate is that they produce an excess of water, which has been removed from the conditioned air. The job of the dehumidifier is to collect and dispose this condensation in its liquid form. Some dehumidifier designs dispose of excess water in a vapour, rather than liquid form. Lino Pollacco at Oxford House Ltd. offers a good tip when choosing the right dehumidifier: “Know the size of your room. Dehumidifiers tend to be rated according to how many litres of water they can remove from the air per day and how many square feet they can keep dry. Unfortunately, most consumers really have no idea how much moisture needs to be removed. Knowing the square footage of the room can provide a close estimate of what you need.” Buying an energy efficient dehumidifier is also very important; however to date there is no energy rating on dehumidifiers in Europe, so it’s really important to compare the consumptions from one brand to another. Using smaller rooms means that there’s less to heat so it may be worth altering a room’s uses for different seasons. SUN: We have the luck of having relatively strong sun here in Malta, even during the winter months. Open the window blinds or curtains on those south-facing windows during the day. A really good way to keep the humidity down is to open all the doors and windows on sunny days until one o’clock to circulate and dry out the interior, and then close them so that the heat from the sunshine remains inside for the rest of the day. Check for obstructions, such as plants, that may be acting as a

barrier from as much sun as possible hitting the home. Remove items leaning against walls on the sunny side of the building and then return them for extra insulation at night. LOGISTICS: The kitchen is always going to be the warmest room in the house (provided it’s cooked in!) so it’s worth thinking about situating areas that you use often in winter as close to the kitchen as you can get, particularly if the space is open plan. However, steam raises the moisture level in the home, making the air more dense, thus using more energy to heat. The oven on the other hand, helps dry the air and as a result, heat the kitchen. RUGS: Fitted carpets are not popular in Malta, due to their inconvenience in summer when they make the home even warmer. However, large rugs that can be stored away in the summer months are ideal for those areas where it’s particularly important to keep warm, such as the living room and bedrooms. THE ILLUSION OF WARMTH: While candles won’t actually heat up a space, they do create an illusion of warmth. Colours are also a big factor for warmth. Colours such as dark blue, grey, black and deep browns create a warmer feel. 069

Wallpaper generally has a warmer look than paint but in order to avoid overdoing it, cover one wall in paper and paint the rest in a matching or contrasting colour. Cushions and throws make a difference to the feel of a room – textures, such as velvet, fur and fluffy fabrics feel warmer. Using shades on lamps also instantly makes a room seem warmer. Emma Armstrong at Stem Interiors custom-makes lampshades in any wallpaper or fabric chosen, which is a great way to immediately change the tone of the room. SAFETY: With all this heat going on, it’s important to take precautions and at least install a smoke detector. The most common causes of domestic fires in Malta are kitchen fires, electric blankets and electric heaters, especially if they’re surrounded by or placed close to combustible materials, such as soft furnishings and wooden furniture. They offer a quick, safe and reliable method of detecting the presence of a fire in high-risk areas of the home. The detector’s main objective is to raise the alarm at a very early stage before a fire has time to develop into an uncontrollable blaze, which could destroy the room, contents or even the building. According to Donald Pace at Firetech (which carries brands CSD, Hochiki and Jewel Saffire), “A good detector will raise an alarm within seconds of detecting any smoke particles at its level within the room. It will remain effective for years if properly maintained and not contaminated by other particles. A low quality detector may react slower and allow the fire to take firm hold before raising the alarm. Detectors may

be addressable or non addressable. Addressable types will indicate the exact location of the alarm within the protected area on the control panel. Non-addressable types will simply indicate a state of alarm, but not the location. “Stand-alone detectors are simply attached to the ceiling, within a high-risk area, at its highest point and are powered by an internal battery, requiring minimal installation. Wired detectors are installed as part of a system covering a specific area and are connected to both a control panel and an integral power supply.”

MIX IT
TEXTURE IN THE GARDEN Plants, just like many other materials, are a medium for design; a living, growing, changing, interactive and three-dimensional medium. When it comes to combining plants or plant groups, their visual characteristics of form, line, texture and colour play a primary role. The way we combine them will determine how successful a planting composition is, whether it works as an effective whole and whether it is aesthetically pleasing and balanced Words: Melina Scodanibbio

Like texture, colour can also be used to create striking effects in the garden and has properties that can affect emotions, spatial perception and balance
Mix it up with complimentary colours, such as the violet of Lavender and the yellow of Santolina
lants can be used for a whole range of functional purposes, but also purely as ornament and decoration, making the most of the aesthetic features of their flowers, fruit, leaves and bark. The less tangible qualities of scent and sound, the rustling of wind or pattering of rain through leaves, will then complete the atmosphere and set the mood for an outdoor space.
P
Texture is the visual roughness or smoothness of a plant or any of its parts, and can be defined as coarse, fine or medium. Fine-textured plants are those with the smallest leaves, twigs and flowers, and are often used to unify compositions. They are light, airy and soft and tend to be easy to look at, relaxing more than stimulating. They give the illusion of being further away and are receding rather than advancing. Using a high proportion of fine textured plants in a confined space will make it seem larger and more open. Grasses, ferns, many climbers and conifers fall within this category.
Effective colour schemes can also be achieved with seasonals
At the opposite extreme are the large, bold leaves and forms of the coarse-textured plants, such as palms, Fatsia, Schefflera, Phormium and Agave. These attention grabbers create an accent within a planting scheme, becoming a focal point and stabilising the wispier, fine-textured plants. Placing a coarse texture in the foreground increases the sense of depth, as these plants seem to advance in the field of vision, making a space feel larger, especially if fine-textured plants are placed in the background. In a small space however, too many large leaved plants can create a claustrophobic effect. 093

HW GARDEN
The clipped shapes of Buxus stand out among the soft textures of grasses
A monochromatic scheme uses just one colour, aside from the greens of the foliage of course, and beautiful effects can be created by carrying the chosen colour through to the hardscape and decorative elements. The most common example is a white garden, but any one colour can be used with stunning results. Analogous schemes rely on colours, which are adjacent on the colour wheel, such as blue, blue-violet and violet, while complementary schemes use opposite colours. These are high in contrast and common sets are violet and yellow, red and green, and blue and orange.
The light and airy character of Pennisetum
Somewhere in between and used as a link between the two, lie the medium-textured plants, such as Agapanthus, Pittosporum, Viburnum and a vast range of other shrubs. These are very useful to bridge the gap and to avoid too strong a contrast between the textural extremes. Like texture, colour can also be used to create striking effects in the garden and has properties that can affect emotions, spatial perception and balance. Cool colours for example have a calming and relaxing effect and like fine textures tend to recede, giving the impression of a larger space. They provide good backgrounds. Warm colours on the other hand, are exciting and have a high visual energy; they tend to dominate a composition and appear to be closer, making a space feel smaller. Warm, bright colours create focal points and highlights but again, excessive use creates a composition that can be chaotic and tiring. They are best balanced with areas of quieter, more subdued planting to be fully appreciated. Although fruit and flower colour in the garden tends to be temporary, lasting a season at most, it is still the most noticeable element in the landscape and planting can also be designed according to a certain colour scheme.
The function of the space helps to determine the choice of plants and their relative characteristics to create the most appropriate effect. In areas for entertaining for instance, or in a dull and dreary setting, plant textures and colours can be combined in order to achieve a dynamic, stimulating and striking effect. Where a lower visual energy is required - in a relaxing, meditative space for example - the more recessive properties of fine textures and pale, cool colours would be given preference.

PRAISE THE
PUMPKIN (and Lampuki)
“By the end of the season we are sick and tired of the fish; yet in reality we do not eat enough fish on the island, which is a bit ironic since uh . . . we are an island surrounded by sea.”
Words: Chef Camilleri, Palazzo Santa Rosa Photography: Alan Carville Wine Recommendations: Bill Hermitage, Delicata Winery
I
don’t like soup. It’s not food. It’s a drink. And when it comes to drink, I prefer to drink wine than some liquid in which vegetables have been washed.
There are exceptions. Gazpacho is a glorious summer soup; refreshing, healthy and tasty. I like bean soups, all kinds. In general, I like soups that are thick and rich. I made this pumpkin soup once for a party at my house in Copenhagen and it was such a hit that I received emails from all the guests asking me for the recipe. When Lampuki are in season, they are cheap and abundant. By the end of the season we are sick and tired of the fish; yet in reality we do not eat enough fish on the island, which is a bit ironic since uh . . . we are an island surrounded by sea. My take on the Lampuki pie is one that allows us to take advantage of the seasonal abundance of certain ingredients – hence the inclusion of pumpkin. Since the success of this pie is the fast cooking of it, we have to cook some ingredients and leave some of the others raw. The menu below is perfect in that it can be prepared in its entirety the day before. The Lampuki pie can be prepared and put back in the fridge or the freezer and baked at the last minute. It can also be baked before and warmed up. You will be hard pressed to notice the difference, since all the ingredients are in their prime.
Lampuki and Pumpkin Pie Ingredients:
1/4 pumpkin, cut in slices, peeled, coated in olive oil and roasted in an oven until soft 2 leeks, cut lengthwise in half and washed thoroughly, then cut into juliennes 1 cupful capers 1 cupful black olives, pitted 2kg lampuki, filleted, bones removed (to do this, use a sharp knife to run two cuts down the middle of the fillet to make a v-shaped incision. Then with two fingers pull this off and all the residual bones will come off in one movement) and cut into chunks 1 cupful of long grain rice, half cooked 1kg pre-made puff pastry (unless you’re a purist and want to make your own) Method:
the leeks and a layer of pumpkin on top, followed by a layer of fish.
Boil the rice for about five minutes and drain it. Let it cool. Let the roasted pumpkin cool as well.
Repeat until all the ingredients are used.
Using a rolling pin, open the dough on a floured surface and line the entire dish. Line it in such a way that you have a generous overhang so that you can fold this over and use it as the top.
Fold the overhang over the dish to cover the top. Do not double layer the dough – otherwise it will never cook. You can over fill the dish and let the dough keep everything in place.
Line the bottom of the dish with the rice. We use the rice here to absorb excessive liquid that comes out of the mixture, especially the fish. On top of this, place half the olives, half the capers, half
Bake in a preheated oven at 200C. After the pie takes some colour, reduce the temperature to 180C and cook for about 20-30 minutes, depending on the oven.

Curried Pumpkin Soup with ChickPeas Ingredients:
1 small pumpkin, deseeded, cut in slices, peeled, then cut in chunky cubes 4 leeks, cut lengthwise in half and washed thoroughly, then thinly sliced across 2 tins of ready cooked chickpeas, rinsed 8 large onions, finely chopped 1 celery stick, finely chopped 200g butter or extra virgin olive oil (or a mixture of both) 300g medium hot curry Seasoning (salt) to taste 3l stock (made by boiling together the celery leaves left over from the celery sticks used in the soup, a couple of onions (skin and all) cut in half, four carrots cut in chunks, some thyme and bay leaves) Method:
Melt the butter and heat the oil together, throw in the onions, celery and the leeks and let them cook until they become translucent, but not burnt at the edges. Add the pumpkin and stir. Lower the heat and add half a litre of the stock to ensure that the vegetables do not stick to the bottom of the pot. Once the stock starts boiling and is absorbed, add another litre. Stir vigorously so you break some of the pumpkin chunks down as they cook. Stir in the curry and then finish off by adding the chickpeas and the last of the stock.

BEST WINE ACCOMPANIMENT – Curried Pumpkin Soup with Chickpeas 2010 PJAZZA REGINA WHITE I.G.T. MALTESE ISLANDS
“Once again we are going to need a full flavoured white wine, although some light bodied reds would also probably work quite well. The strongest flavours for this wine to cope with are the black olives and the capers, and once again this is a fairly heavy dish, even though it’s fish based. My choice of wine for this full flavoured pie is an unoaked dry white wine made entirely from the grape variety Viognier. It’s a big round, hearty ripe wine that should go down a treat with this national dish.”
“For this dish we are going to need a white wine that is fairly substantial when it comes to its weight and body. This weight will help it cope with the strong flavours of the medium hot curry and the heaviness of the chickpeas and the pumpkin. But at the same time, I would opt for a young wine that is still refreshing and crisp enough to help cool down the palate. A wine that fits the bill would be a chilled bottle of Pjazza Regina white, which is made from a blend of four grape varieties, Chardonnay, Girgentina, Vermentino and Viognier and is full flavoured and fresh enough to accompany this thick soup really well.”

DUOMO HOTEL in Rimini, Italy by Ron Arad Words: Ray Demicoli
In 2003, Mr. Pierpaolo Bernardi, the owner of Duomo Hotel in Rimini, Italy was facing a dilemma. Although the Duomo was long established with a sound reservation book of return clientele, the competition coming from waterfront hotels was soaking up the business. In an attempt to enter into a new market with the rise of design appreciative travellers, Bernardi ventured on a bold journey of appointing celebrated architect Ron Arad - for the job

The façade of the Duomo Hotel is wrapped in clad skin of bronze, which makes its way inside and the entrance doors are similar to an arcade pinball machine. The reception desk is a stunning
feature – a highly polished chrome doughnut. The circular ring is inclined in a way that two front desk receptionists can stand in this hallowed hollowed space. Supported by a column at the back, the inner side of this ring is designed in a voluptuous red hue and houses all necessary front desk stationary and electronic equipment – it cost €160,330. It is accompanied by the clever lighting of David Atkinson Lighting Design, which really completes the effect.

The noMi club is another interesting space. Counters are carved to create an amorphous fjord-like space spreading outwards from the main structure to provide guests with surfaces as seating. The surface of the bar top is made of brushed steel and its sides are finished in mirrored polished steel, creating distorted reflections on and of the people and the surrounding environment. The lighting strategy renders it perfect for a trendy meeting place. Similarly the champagne room is also unique, set in stark white, decked in simple transparent furnishings giving the impression of neat crisp comfort, adorned with steel soft uplighters setting the tone.
design philosophy is reflected throughout the 34 rooms, which are roughly 270 square feet and sparsely furnished. Individually formed bathroom pods create a backdrop to the sleeping area. The bathrooms are wet rooms with teak slatted timber flooring and a large circular glazed window, which allows natural light into the space.
The design of Duomo Hotel is completely original and utilises bold colours and adventurous shapes throughout the hotel, which is particularly evident in the halls and rooms. Arad’s
Through innovative design, a back street property will compete with a seafront location. The question beckons, is the old real estate adage of location, location, location changing to design, design, design?
Arad maintains that hotels must not feel like home, but rather must be experiential. The Hotel Duomo was reborn and rebranded through ingenious and inventive ideas – today it delights travellers with its exuberant bouncy interior.
