This Issue. When the recce images of the Valletta apartment designed by Claire Carter arrived in my inbox, I was intrigued. It is rare to find a property in Malta that embraces a lack of light so boldly and with such assurance. This does, and the end result (see it on page 036) is inspiring for this reason, and also for the many other design ideas found within. The kitchen/dining room of this apartment, with its ornate mantelpiece, lends itself to festive finery, as does the gracious dining room in our opening house, an historic property that has been beautifully and thoughtfully brought back to life. Feasting, of course, is a major part of any Christmas celebration and in our Christmas special issue, food doyenne Pippa Mattei gives us her Christmas Day lunch menu - as a devotee of the mince pie, I am definitely going to try her family recipe for them. There is plenty more to help get you in the festive spirit; the DIY decorations made from leaves and berries are a particular favourite. MEET THE CREATIVES Chris Briffa Chris Briffa is one of Malta’s most exciting and original architects, his studio behind some of the most talked about projects on the island, and increasingly overseas. Chris completed his architecture degree at The University of Malta in 1999 before furthering his studies at Virginia Polytechnic Institute and State University (Virginia Tech) in the United States and Politechnico di Milano in Italy. He established his studio, Chris Briffa Architects, in 2004. He has just published his first book ‘Valletta Files’ which features a portfolio of projects completed over the past 15 years as well as ideas for the future. n i fi s in s in a i an si n Hand drawing has always been my obsession, and it slowly evolved into painting and sculpture, later into architecture. I think I was around 10 years old when I found myself drawing boats and buildings on a daily basis.

a a i s in i a Not many architecture students had access to overseas training at the time, and I jumped at the opportunity of an exchange in the US. Virginia Tech was a wonderful and unforgettable experience. I am still in touch with my design tutors there.

s i n I live, and work, in a 400-year-old building in Valletta; along with my wife and kids and co-workers. The studio is on the lower, original volumes; while we sleep and live in a newly built penthouse which hovers above the old structure. I am very lucky to live in a place which is both old and new, supporting both work and play; an authentic modern experience which is at the same time a traditional casa bottega.

Early in my studies I was an intern at Architecture Project in Valletta, which eventually became my second home for the next seven years. The Reef Guesthouse in Bahrain is perhaps the best example. The client needed me there to oversee all its detailing and documentation, so I did. In the meantime, followed up the Malta projects thanks to my collaborators. I could have stayed in Bahrain, but back then some new projects in Malta became the priority. s i i s si n Design is all about dialogue. Whether with a client, a collaborator or a contractor, a project’s potential lies in a harmonious interchange of ideas, concerns and desires. What happens in between that dialogue, is the stuff which stirs creativity. 020

The site, my clients, travel, art and text… sometimes something someone close to me might say or do… bad weather and dramatic skies. s i in a I typically go check sites and run errands in the morning, when I have more drive and energy; stop for lunch with my family, in the afternoon, a power nap, and later get down to designing and planning. Evenings are fun times; great for concepts, cooking and celebrating… a

Designing and building a home for oneself is one of the most challenging things an architect can do. Hospitality projects, such as hotels and restaurants, offer more experimentation. Artistic installations can be a lot of fun. Voluntary work is the most noble and rewarding.

How is architecture developing in Malta today? Interesting choice of words. I think that the second is undermining the first. ood architecture needs time and sensitivity. Development on the other hand, is often too hurried and indifferent. Malta needs to slow down a little, if it still wants to be home to good architecture. Tell us about your new book? alletta iles’ is our first book a visual diary of the most memorable projects we designed for the city ranging from artistic installations in old forts to proposals for re-orienting the town into a car-free pedestrian zone. I revisited each project with my stories, while a number of guests were invited to write about theirs. In this sense, it is also a dialogue – a design exercise in its own right – which we hope will inspire the younger generations. Why did you decide to self-publish it? think it is very im ortant for any creative to find the time to stop, look back and evaluate their own work from time to time. Life has a habit of moving pretty fast, and publishing a book is a good way to look around so we don’t miss it. Publishers can be a great help both for production and especially in distribution. But we decided to do it slowly and at our own pace, and I am very happy with the end results, with just over a hundred copies still available. What’s next... We are thinking of publishing another book… perhaps this time about our work on homes.

HAPPY ANNIVERSARY! DAAA Haus, one of Malta’s most dynamic design firms, is celebrating its 10th anniversary this year. Founded by creative director Keith Pillow in 2009, it now has a team of 30, and offices in Malta, Milan, Ragusa and soon Mumbai. Rocksalt, a nineteenth-century garage in Sliema that was transformed into a modern and chic café, was the first project to be known internationally; its most renowned projects include the Cugó Gran Macina Grand Harbour (left) which saw the firm carefully transform the historic building into a boutique luxury hotel, and Anthea Preziosi (far left) in which the multidisciplinary architecture and design studio reinterpreted a modern building in the heart of Ragusa’s commercial centre. Both are award-winning. ‘We believe that the way DAAA Haus works creates a new dimension,’ says Keith Pillow. ‘A dimension of distinct and well-defined spaces that do not save the world, but they will surely make it look better’.

BLINDINGLY BRILLIANT

Sustainability and energy conservation is pushing big brands to innovate with these issues in mind. Kvadrat, the Danish brand nown for its high- uality te tiles, has ust launched a roller blind that boasts thermal insulation as well as acoustic benefits, to help reduce a building s energy consumption. Working with French designers Ronan and Erwan Bouroullec, the company applied a metallised textile to the underside of the blind which allows it to function as a thermal insulator, preventing heat loss in the winter and gain in the summer. ‘We actually have a product that offers an alternative to an outside solar-shade product, which moves the options in architecture uite a lot, said vadrat managing director Christian Baum Blaakær at the launch. 023

We wanted to take the time to ensure we chose the right people, who would respect the house, its architecture and its history

ften, the best things in life are worth waiting for and that is certainly the case with this home. A historic property that had lain derelict for 30 years, the process of bringing it back to life took four years, but the end result is stunning, with modern additions seamlessly working with the original early 20th century building to create a warm and welcoming contemporary home. As is the story with many a restored property, when the homeowners, an older married couple, first saw this house they were able to look past its dilapidated state, including a garden that was so overgrown they could not at first reach the front door, and see what it could become. ‘We felt this house deserved to be restored and renovated,’ says the homeowner. ‘We always had a fantastic vision of the end result, although we sometimes wondered if we would get there due to the gravity of the house’s condition.’ The process of planning the renovation was two years long. ‘As well as having to wait for planning permission, we felt we wanted to take the time at this point to ensure we chose the right people, from the engineer and contractors to the interior designer, who would respect the house, its architecture and its history,’ explains the homeowner.

To oversee the entire project, the couple turned to the camilleriparismode Design Team who oversaw every last detail of the project, from the exterior and interior design, to the gaining of planning permissions to the day-to-day details when the work got started. ‘The wait was worth it – it was a good performance by all involved,’ says the homeowner. ‘The contractors never missed one day of work; they worked on the house as if it was their own.’ For the Design Team’s Paul Camilleri, rejuvenating this 110-year-old house was about balancing out the needs of modern living with the integrity of the original house. ‘We didn’t want to extend too much,’ he says. ‘Everything we did had a specific use in mind.’ Construction began in autumn 2017 and finished just a few weeks ago. Restoration of the original stone house meant

replacing the rusted metal beams of the roof, renovating the stonework and reviving the original doors. The floors were replaced with marble and underfloor heating installed, alleviating the need for radiators. Today the home has both formal and casual rooms. A gracious sitting room with its high ceiling and beautiful floor-to-ceiling doors and arched transoms leads into a spacious dining room with its eye-catching mantelpiece and seating for ten. More relaxed is the cinema room where one finds the television and bar and, in a stylish extension, a large conservatory with sofas and a table. ‘This is a very nice part of the house that allows the clients to enjoy the garden in the autumn and winter,’ says Paul. Adds the homeowner: ‘The house called for a room like this, 031

a place to have our everyday meals as the kitchen is not large enough to have a table - and the view of the garden is very important to us.’ Made with crittall glass, the conservatory fits elegantly into the property. ‘At first it was just clear glass but that looked too plain, and too modern,’ explains Paul. ‘So we decided to re-interpret the classic elements of the arch that can already be seen in the property. Following that decision, we used the arch at the front and the rear of the pool house too.’ The house was originally on a single, ground floor level but did have a ‘semi-basement’ which has been excavated to create a series of rooms including a music room along with service spaces such as a laundry. A lift was also installed, rising from garden level through the semi-basement to the ground floor above. The expansive garden is a mix of lawn, flower beds and mature trees. ‘The garden was a major challenge,’ says Paul. ‘There was 032

a five metre difference in level and we didn’t want the clients to be climbing a hill so we had to find a way to connect the different areas gradually - we put in a few steps to the pool house and after that we started shifting earth to even the ground up but without affecting the way the water flows when it rains.’ The pool house is substantial and well-equipped with a kitchen along with sofas, television, music system and wood-burning fireplace inside, and dining tables under a canopy outside. ‘We used to have a house in Gozo that we went to in summer,’ says the homeowner. ‘This has eliminated that need as we have Malta and Gozo in one! The house is more formal so this provides us with an ideal entertaining space, especially when the family are visiting.’ The home’s colour palette consists of greys and off-whites, lifted by accents of sage and teal. ‘Because of the size of the house and the way the rooms are close to each other, we felt a neutral palette worked best, and these are classic colours that do

not date,’ says Paul. ‘We used them as a constant throughout the house, including the pool house.’ The furniture and fittings are mostly pieces that were custommade; the dining table, for example, was made in Paris. ‘But we also used local carpenters for some work, such as the internal doors,’ says Paul. The house is situated in a quiet area and its large garden is surrounded by high walls, accentuating the sense of being in an oasis. ‘We wanted somewhere where we could relax and enjoy all the space and feel like we can get away from what happens beyond our four walls,’ says the homeowner. ‘And we have achieved that.’ Bedroom wing: with just one main bedroom, camilleriparismode turned this part of the house into the equivalent of a wing. I

t is fair to say that most Maltese homes follow the light. Walls are pulled down, floor-to-ceiling apertures are installed and a neutral palette is chosen, all aimed at creating a space that is light and bright. But not this home. Here, instead of carving up the property to make it brighter, the lack of light has been embraced to create a moody elegance that is both cosy and cocooning with deep rich colour and jewel tones beautifully playing off against modern and traditional elements. ‘It wasn’t naturally well lit so the decision was taken to create a den-type feeling,’ says Perit Claire Carter of Carter Architectural Studio, responsible for renovating the property. ‘Day or night, you are enveloped by a feeling of richness and warmth; when we were designing the property we intentionally carried similar elements through all the rooms, in order to strengthen these feelings and treat the interiors in a holistic manner.’ Claire renovated the entire building, a historic house in Valletta, creating three apartments and a triplex penthouse suite. The owners, Roberto and Clifford, bought it three years ago, putting in an offer within 15 minutes of seeing it. ‘We love Valletta and the house is very, very beautiful,’ says Roberto. This was their fifth renovation project. ‘We live in a place for a few years and then feel we need another project,’ laughs Roberto. This was their first historic building, however, and their brief to Claire was to work with the traditional features to create 21st century apartments. For Claire, the challenge was to find a way to ‘maintain the original fabric of the house without having to do away with the modern comforts that the clients needed,’ she says. Roberto and Clifford live in this, the penthouse apartment which takes up the top three floors, reaching their home via a smart glass elevator from the communal entrance courtyard. The apartment’s high sense of style is apparent as soon as one enters. Instead of plain walls, the hallway is decorated with panelled wallpaper, the landscape pattern drawing the eye in and beyond the small hallway. ‘Panelled wallpaper makes the hallway visually interesting and gives a more spacious feel to it than it actually is,’ says Claire. The largest room in the apartment is the open-plan kitchen and dining room but here, it is not the kitchen but the table that holds court, the kitchen contained to a long island. ‘The clients don’t have children but entertain a lot so instead of a regular kitchen I designed an island so guests can mill around and talk to each other,’ says Claire. In fact, continues the architect, the entire apartment has been designed with entertaining in mind (it will be very busy this Christmas). ‘There is one bedroom, the rest of the area is for lounging, with places to meet and chat,’ says Claire. The apartment beautifully blends the historic with the modern, Claire at times adding new elements that appear original to ensure the rooms have a balance between the two styles. ‘For example, in the kitchen,’ she explains, ‘the tiles and doors are original but the kitchen is contemporary so I added panelled mouldings to one wall to reinforce the effect of a modern kitchen in a traditional building and help bring to light the building’s style.’ Kitchen: The long island contains the hob and sink and is made of high-pressure laminate in black from Poliform. At the far end, a wooden ‘column’ conceals the refrigerator and freezer along with the air-conditioning unit that Claire wanted hidden 041

Master bedroom: In order not to detract from the spaciousness of the room, when fitting in an ensuite bathroom Claire had installed, behind the bed, a three metre long wall which does not reach the ceiling ensuring the room does not feel cut into a smaller size. She has kept it simple with niches that contain the lighting

Dining: the original fireplace had to be kept for budget reasons so Sean created a visually interesting frame to cover it. The table is cantilevered which allows the mid-century modern style chairs to sit cleanly beneath it. The concrete block at the end, hides niches for ice etc, and the inbuilt shelf gives added storage

The mouldings are one trick Claire has used to balance the height of the rooms with the disproportionately smaller floor space. Another is found in the living room where Claire installed panelling that was then painted. ‘The volume of the room is vertical rather than horizontal - the panelling helps the eye to focus on the wall and not travel upwards, and at the same time helps give dimension and interest to the room,’ she says. The walls in the room have been rendered but left uneven. ‘This way we’ve maintained the original look of the fabric as walls were never absolutely straight in the past,’ says Claire. ‘Making things look too perfect beats the purpose of having a historic building.’ The bedroom is reached via the original marble staircase. Unusually it is downstairs but this positioning allows the living area to connect directly to the roof terrace. Situated directly below the kitchen/dining room, the bedroom is also large, and in adding a bathroom, Claire did not want to lose this sense of spaciousness. ‘The solution was a three metre panel which delineates the space between the bedroom and bathroom but also allows you to see the ceiling ensuring the room still feels large,’ she says. T

his penthouse started with a view. It determined everything about the apartment, from the orientation of the building to the design of the interior and the materials used within. This singularity of purpose is quite understandable as it is a quite wonderful vista - the ever-changing sea and in the distance St Paul’s Island. The apartment was designed by architect Alan Galea from MODEL, who, together with Andrea Vassallo Cesareo from CVC Architecture, built the entire building. ‘The view is breath-taking and it keeps changing because of the sea,’ says Alan. ‘In summer it was flat, like a lake, but with lots of boats crossing. At this time of year, it’s often stormy, with waves breaking against the rocks.’ The view takes centre stage as soon as one enters the apartment, the eye immediately drawn across the open-plan living area that includes the kitchen and dining area to the expansive terrace that is framed by a steel balustrade which fades into the surrounds. ‘The steel mesh railing is very strong but so slim you can barely see it when looking out and it gives a nautical feel,’ says Alan.

At 280 square metres, the interior of the apartment is very spacious. ‘As we had the luxury of space, we didn’t have to maximise every last centimetre which gave us the edge when designing and allowed us to make the most of the view,’ says Alan. ‘The sofa has been placed so it faces out, and in the kitchen, the sink and hob are on an island so that when cooking, the homeowners can still look out.’ Neutral shades make up most of the colour palette but this has been given depth with contrasting black stained oak. ‘The apartment is extremely bright so when we were deciding on the colours we opted for darker colours in the areas where you wouldn’t spend much time such as the hall and the corridors,’ says Alan. ‘The kitchen units are also black stained oak and this is where the transition happens between light and dark as anyone spending time in the kitchen will have their back towards the dark and their face towards the light. This really reflects the energy of the space and the experience of living in it.’

The brightness of the apartment is largely down to the floor-to-ceiling glass that takes up two walls of the room ‘and because there is so much glass, there was little space for the personal touch; it was a challenge to create it,’ continues Alan. The solution is a long stretch of shelving that sits neatly within one entire wall of storage and which gives space for artwork and table lamps which introduce warming pops of colour, as well as breaking a flat expanse of units. Most of the materials used in the interior are natural with marble on the floor along with the black-stained oak in the kitchen. ‘Using natural materials fits with my philosophy,’ explains Alan. ‘But as well, with a view that does not include buildings and below a large green enclave, it feels as though the apartmnt is in nature and I wanted to continue this mood by using materials such as stone, marble and wood. Plus natural materials age with the building making them more timeless.’ The property took three years to build and had a difficult 049

beginning. ‘The building sits on rock which moves independently in three areas so it was challenging to find a way to build on it,’ says Alan. ‘Without getting too complicated, the solution was a large platform which absorbs the movements.’ It was definitely worth the energy invested, though. ‘The homeowners have been here for three months and they tell me it still feels like a dream,’ says Alan. ‘It is everything they hoped for.’

Wreath This pared back wreath makes a pretty wall decoration, simply hung with brown string. Materials: Long twigs that are long enough to be bent into a ring, eucalyptus leaves, belladonna leaves, bay leaves, acacia leaves, pine leaves, cones and pistachio leaves with berries (tiny red berries). Large red berries bought from a florist (or use lingonberries). Assembly: Soak the twigs in water for a day to soften, then pat dry and tie them together using tie wraps or thin pieces of wire (you can also use a hot glue gun). Bend the twig bundle into a circle and secure with a tie wrap or wire. When the base is set, start attaching the leaves to the base, taking the greenery half-way up each side, adding berries and flowers as you wish. Fasten them using green garden tie wrap or wire. When done, hang using brown string.

he Christmas season is one of magic, ritual and even a little innovation. Until I took over the task of hosting Christmas in my home, it was my mother Clare, together with her housekeeper Faustina, who would prepare lunch for our extended family and friends, with tables spilling out of the dining room into the ample hallway to accommodate, uncles, aunts, cousins, and anyone who didn’t have a luncheon of their own to attend. We joked that my mother would lay the table in November, and preparations for the meal were underway a good month before, as many of the sweets, such as the mince ie filling and traditional hristmas cake, re uire time to ac uire their full avour. ot much has changed in the way re are hristmas lunch, which re ects the combination of the different cultures that have in uenced the Maltese kitchen. Some years the number of guests swell, and other years they dwindle, but I always enjoy the tradition of getting ready for the big day and hosting family and friends in my home. Although it is traditional to eat a slice of homemade timpana before the main course, a dish much cherished by my husband’s family which requires three days of preparation, I also like to prepare a winter soup for starters, and this year I am preparing a pumpkin, orange and chestnut soup which I will serve with butter, chives and orange zest, as I think it’s always fun to introduce a novel element into the menu. I’ve also decided to prepare a couple of capons instead of a turkey they’re free range and local, and so will have the same gamey avour ’ll cook it in exactly the same way as I do the turkey, using a recipe handed down to me by my mother. And to change things up a little, I am serving Hassleback potatoes along with the usual side dishes of brussel sprouts, broccoli gratin and glazed carrots. Finally, I bring out the traditional Christmas pudding which not everyone is keen on, and so I also serve warmed mince ies with the coffee. have erfected the reci e for the ies and the filling over the years, and I prepare dozens which I give as gifts, and serve to anyone who shows up at my house for a cup of tea! INGREDIENTS Ideally the filling should be prepared a few weeks before Christmas.

PUMPKIN AND CHESTNUT SOUP

LEMON AND THYME ROASTED CAPON

INGREDIENTS 900g pumpkin flesh (weigh after taking off thick skin), chop roughly 1 large red onion, also roughly chopped 4 large cloves garlic, peeled 200g cooked and peeled unsweetened chestnuts 1 litre hot vegetable stock Zest and juice of one small Maltese orange 50g butter, softened 1 teaspoon red chilli, deseeded and finely chopped 1 tablespoon chopped fresh chives, plus extra to garnish

INGREDIENTS 1 capon (3kg) 150g butter softened 8 slices streaky bacon Salt and pepper Drizzle of olive oil 2 lemons 1 onion Few Sprigs fresh thyme

METHOD Preheat the oven to 150oC/Gas mark 2. Put the chopped pumpkin, onion and garlic in a large ovenproof pan, with all but 25g of the chestnuts. Pour in the hot stock. Cover and bring to the boil, then cook in the oven for 2 hours until the vegetables are meltingly tender. Cool. Purée the soup with just the orange juice and adjust the seasoning to taste. Dry fry the reserved chestnuts in a pan until golden, then leave to cool. Finely chop the chestnuts, then beat together in a bowl with the butter, orange zest, chilli and chopped chives. Cover and chill until firm. Reheat the soup. Divide among eight bowls and serve topped with a teaspoon of the chestnut butter and extra chives.

HASSELBACK ROASTED POTATOES INGREDIENTS: 2.5 kilos medium sized floury potatoes 5 tablespoons rapeseed oil or duck fat. METHOD: Peel the potatoes, and thinly slice them two thirds down; place them in salted water for 30 minutes to two hours, drain well. Meanwhile, heat the oven to 180oC and when hot, put in a baking tray which will take the potatoes in as single layer, and into which you have put the oil/fat. Heat up for 10 minutes. Then carefully place the prepared potatoes onto the oven tray, turning them to coat in the oil, but leaving the cut side facing upwards. Roast the potatoes for a good 1 ½ – 2 hours, turning in the oil/fat occasionally ( but always keeping the cut side up.) When tender and golden brown, serve with the capon.

STUFFING (optional)

500g beef and pork mince mixed 1 egg Some chopped parsley 1 small onion chopped Salt and pepper 2 tbl grated cheese Some thyme leaves Cup of fresh breadcrumbs Flavouring like a dash of Worcestershire sauce Simply mix all stuffing ingredients together and set aside METHOD To prepare the capon, wash well with cold water and pat dry. Squeeze lemon juice all over the flesh and put the lemon into the cavity with the peeled onion and a few sprigs of thyme. Place your finger under the skin at the back of the capon and slowly and carefully separate the skin from the flesh until you have a large ‘pocket’. This is where you push in the meat stuffing if used. Pat down from the top until the shape of the capon is ‘rounded’. Next, rub the softened butter all over the capon, season generously with salt and pepper, then drizzle some olive oil over the bird. Cover the whole capon with the slices of streaky bacon, ensuring most of it is covered. With kitchen string, tie together the two legs, and tie some string around the other side of the capon to tuck in the wings. The capon is now ready for roasting. Place in a large roasting tin. Pre-heat oven to 180oC then cover the capon loosely with tin foil and put into the hot oven. Cook for a good hour and then remove the foil and continue to cook the capon for another half an hour or more depending on the size. (If using a larger bird, calculate for total cooking time,15 minutes for every 400g of weight). Remove the bacon and give the bird a further ten minutes to brown the skin, being careful not to dry out your now moistly cooked bird! Allow to settle for a good hour then carve and serve with gravy, roast potatoes and vegetables of your choice.

To make this you need: 200g apples, peeled and grated 200g mixed candied peel finely chopped 200g currants 200g sultanas 100g raisins 100g dried cranberries 200g sugar 200g suet (Atora), vegetarian suet works just as well 25 g blanched almonds, chopped ¼ nutmeg grated Grated rind and juice of one orange, one lemon, one tangerine and lumicel (a sort of bergamot, which if you can’t find can be substituted with any other citrus of choice). 1 glassful of spiced/dark rum METHOD Put all ingredients in a large bowl starting with the dried fruit, mixed candied peel, apples, suet and sugar, add the almonds and mix all well. Add the nutmeg and rum. Mix again, and then, put into dry jars pressing down firmly. Store in a cool dry place until needed. To prepare the pastry for the mince pies, you will need: 400g plain flour 100g butter or margarine 100g lard 1 egg yolk 100ml very cold water Some lemon juice Pinch salt METHOD Firstly, put the egg yolk into a cup and add the cold water and lemon juice. Mix well and set aside. Put the flour and salt through a sieve into a large bowl. Cut up the fats and add them to the flour into the bowl. With your hands, rub the fats in to the flour until the mixture resembles bread crumbs. Now add the egg and water mixture to the flour and fat mixture, and mix with a knife, and then with your hands, until you have a ball of dough. Set aside wrapped in baking paper which you keep in the fridge until you need to make the mince pies. When ready, roll out the pastry until thin, and with a biscuit cutter cut out 24 rounds measuring 7.5cm and the same amount measuring 5.5cm. Put the larger circles into a patty baking pan (one pan usually has 12 cavities) which you have greased. Fill these with two teaspoons of your prepared filling. Brush the sides of the smaller pastry rounds with water and place each one on top of the pies. Press down well, then prick the top gently with a fork. Now you can either freeze the pies or cook them in the oven 200oC, Gas mark 7 for about 25 minutes, until golden. Keep an eye on them to make sure they don’t go too dark in the oven. Take out of oven, leave to cool slightly, then dust with icing sugar and serve warm. If frozen, cook straight from the freezer for five minutes longer. 063

Can you think of a more exciting local bottle of fizz to toast in Yuletide than Delicata’s Girgentina Frizzante? It is definitely a mouth-watering aperitif. Malta’s dry and semisparkling Girgentina Frizzante is a refreshing choice for its appley fruitiness, pearly froth and minerality. Frizzante from Malta, at least in my book, is the antithesis to boring bubbly and properly delicious.

Here is a lush bottle of gloriously layered pudding wine that is too good to leave for Santa only. Once you have tasted what Delicata can do with the Moscato grape, you will never turn to traditional sweet sherry with a minced pie again. On the nose, there are plenty of sweet floral scents of orange blossom followed by flavours of honeyed peach preserves and pear. A must-try, finish-up-lunch wine for Christmas.

There’s little chance of it but perhaps it would not be so bad to be snowed in if you had already stocked up on this deep ruby red. Rich and pure fruit trumps the notorious gaminess of the Syrah grape in this well-balanced Rizerva. The wine is velvety soft and round with a herbal and slightly smokey overlay: a vibrant bottle of structure and excitement that’s the result of 13 months barrel maturation and six months bottle ageing. Lay in some extra bottles for entertaining.

MILK AND HONEY

SALTY DOG

• 40ml Caperitif (or wine-based vermouth) • 20ml Mandarine Juice • 10ml Water • 20ml Soda

• 80 ml Milk & Honey Mix Pour chilled Milk & Honey mix into white ceramic cup. Garnish with milk snow and honey comb. (see below)

• 30 ml Salty Dog Sake (see below) • 20 ml House Vermouth • 5 ml Fresh Lime

Add all the ingredients over cubed ice. This drink has been garnished with buchu, a plant from South Africa; a sprig of mint will give a similar effect. Serve with a glass straw.

Milk & Honey Mix • 800 ml Full Cream Milk • 400 ml Brandy • 200 ml Honey • 15 g Fig Leaves • 1 x cinnamon quill • 1 x whole nutmeg (cracked)

HOW TO MAKE

Combine all the ingredients in a saucepan and heat until roughly 60°C (too hot for a finger at 3 seconds). Once heated, take off the heat and leave to cool. Then strain, bottle and refrigerate until needed.

Combine all the ingredients in a shaker and shake with blocks of ice. Double strain into a ceramic cup that’s sitting on a large clear block of ice. Garnish with lemon verbena. Salty Dog Sake 800 ml Sake 400 ml Sugar Syrup 50 g Seaweed 25 g Mandarine or Orange Peel

WATERMELON AND ROSEMARY (NON-ALCOHOLIC)

• 6 x Pieces Fresh Watermelon • 20 ml Lime • 15ml Agave Nectar • 20 ml Soda Water Muddle the watermelon in the bottom of a shaker before adding all the other ingredients (except soda). Shake with blocks of ice. Strain neat into a stemless Champagne flute, top with soda and garnish with a fresh sprig of rosemary.

Combine all the ingredients in a vac bag and leave to rest overnight at room temperature.

Milk Snow

Honey Comb

• 800 ml Full Cream Milk • 200 ml Honey • 15 g Fig Leaves Combine all the ingredients in a saucepan and heat until roughly 60°C (too hot for a finger at 3 seconds). Once heated, take off the heat and leave to cool. Then strain into a cream siphon, charge with 2c nitrous oxide bulbs and refrigerate until needed.

• 75 g Honey • 140 g Liquid Glucose • 400 g Caster Sugar • 90 ml Water • 25 g Baking Soda Place the honey, liquid glucose, water and sugar in a large heavy-based saucepan and heat gently, stirring occasionally until the sugar dissolves. Increase the heat and cook until the mixture starts to turn a light golden colour. Mix in the baking soda - the mixture will erupt into a foaming mass. Pour immediately into a baking tray lined with parchment paper. Leave to cool, then place in the fridge to set for approx 7-10 minutes. Store in an airtight jar until needed.

Its annual Design Week and Waves Music Festival attracts many cultural tourists, ditto its many museums such as MUMOK (www.mumok.at) and The Architecture Centre (azw.at/en). Then there are the buildings by Zaha Hadid and Otto Wagner, the transgressive art of Klimt and boutiques and neighbourhood markets that make the senses sing. Berlin is, of course, celebrating the Bauhaus Centenary year with various special events and Dessau, home of the new Bauhaus Museum (www.bauhaus-dessau.de/en), is just a short train ride away from the German capital. On the outskirts of Berlin the new E Werke gallery (ewerk.net/en/) has opened in the dormitory city of Luckenwalde. This former power station has been transformed, Tate Modern-style, into a brand new capacious art museum. Berlin's weirdest new piece of design is the resurrection of the former Berlin Palace – demolished in GDR days and replaced with the Peoples' Palace. A renovation of the building sees a copy of the original 18th century architecture fused with modern design to create a new home for the Humboldt University's art collections (humboldtforum.org/en). And of course there are plenty of Teutonic Christmas markets dishing up steaming gluhwein. Where to stay: Provocateur. Armenia's capital is where the cognoscenti are starting to head for a design fi in an u and coming city that s as e otic as it is intriguing. The Finnish capital makes the most of its almost complete darkness in winter by lighting up with an innovative light art festival, Lux (www.luxhelsinki.fi/en/) in January. It's a far cry from those terrible son et lumiere rip-off events that have spread worldwide. Instead, decent artists are given free rein to make video, sculpture, technologically-inspired work and projections that sprout around Finland's capital and bring light to the darkness. By day you might want to visit the Marimekko HQ (Mikonkatu in the Galleria Esplanad mall) to pick up a bargain in the factory shop and stop for a bargain lunch in their canteen. Or warm up in the architecturally inspiring Loyly spa and sauna – brave souls can take a dip on the Baltic after sweating in the sauna. (loylyhelsinki.fi) Where to stay: Replete with Ai Weiwei artworks and a scandalously minimalist aesthetic, the most noticeable trick about the St George is actually the pastel coloured rooms, a look that does not turn up every day. TIRANA

Behind the Iron Curtain until 1990, Albania's capital is an intriguing affair with Communist oddities rubbing shoulders with exotic architecture from Ottoman times. The derelict pyramid in the centre, a folly by the dictator Hoxha, is going to be resurrected as a new cultural centre. The city's main square has recently been remodelled and traffic reduced. ll over the city new design elements are coming in under a masterplan by Italian architect Stefano Boeri, to green and clean this sprawling and creaking metropolis. A city to wander around, rug up and stroll the streets, taking in the buildings painted in primary colours as well as the squares and gardens including Parku Rinia, home to the famous ‘I Love Tirana’ sign. For art and history head to Bunk Art and Bunk Art2, concrete bunkers that have been transformed into exhibition and event spaces (bunkart.al). The National History

Museum is the country’s largest museum, filled with archaeological treasures, some dating back to ancient Greek and Roman times, as well as those about the country’s more recent history. Where to stay: Standing out against the mountainous background that encircles Tirana, the heft of The Plaza – a true skyscraper in a city with few – is offset by a lightness of touch in the design by Brussels architects 51N4E, who have also left their mark with other modern buildings in the Albanian capital. Angles are played with as slabs twist off centre and the whole building has an asymmetric form. Its massing could have been badly handled like – sadly - much post-communist 'capitalist architecture', but here the trick is pulled off. Insulation makes a huge difference to the temperature inside the home. ‘Heat gain and heat loss through apertures is responsible for 25 per cent to 30 per cent of residential temperature control energy use,’ says Ben Vassallo of Servgroup. Continues Mario Camilleri from Adore & More. ‘In the summer months, insulated apertures ensure the heat remains outside, keeping your home cooler, and make your air conditioning more efficient. n winter, insulation does the opposite, keeping the heat inside and the cold outside. In both cases, it means less energy used. Insulated windows give better sound insulation as well, reducing noise from busy roads.’ There are a variety of products to choose from and they offer varying protection. ‘A hinged aperture provides increased insulation as it utilises a gasket closing mechanism,’ says Ben Vassallo. ‘This helps to maintain a tight seal via rubber. On the other hand, sliding apertures need to ensure a smooth motion when opening or closing so they cannot be sealed with rubber; instead felt is used. This results in a noticeable loss of insulation.’ ‘As these tilt and turn and swing doors and windows give complete closure, they eliminate noise and draughts too,’ says Mario Camilleri. Other options include accordion doors and glass to glass corners which are currently very popular in modern houses.’ The other issue to consider is the aluminium used. ‘Thermal break apertures are made of solid wood, uPVC as well as aluminium,’ says Mario. ‘Thermal break aluminium is very different from the old cold aluminium and offers a high level of insulation.’ Finally, there’s the glass used. ‘As glass makes up most of the aperture on doors and windows, the majority of gains or losses are transferred through this area,’ says Ben Vassallo. ‘To reduce this, there are a variety of glass coatings available, the type chosen according to the amount of sunlight the aperture will be exposed to. These options include double gla ing, tri le gla ing, argon filled double gla ing, lima uard and solar film.’

HW FEATURE ROOF MEMBRANES Given that about 25 per cent of the heat produced in a building escapes through the roof, materials that reduce this heat loss will make a big difference to the warmth of a home, and of course, energy bills. Until now, resin membranes have long been associated with keeping water out, but a new generation of membranes also help reduce heat loss.
