EDITOR’S LETTER HW
The turn of the year always inspires a sort of retrospective prospective. In keeping with this thread, the first issue of HOMEWORKS 2013 is all about the synthesis of old and new. This edition highlights old backdrops with new furnishings and vice versa, illustrating the advantages Malta holds in terms of striking historical architecture and furniture variety. This, coupled with the accessibility of contemporary European design, means that the symbiosis can be explosive. Along the same vein, the interior trends this year are largely about the new being the old; renewed interpretations of established interiors and furnishings. The prediction this year that comfort is king implies a quest for that private relaxed lounge feeling. The simple seems to be moving towards simpler, while an emphasis on art in the home is encouraging individual expression. Timeless materials, such as brass and wood are being used to create fun and lively design. Consumers are being encouraged to buy furniture that makes them smile – we’re likely to see silly yet structured items and interiors. The Pantone colour of the year – Emerald – is the leader of accompanying colours inspired by HDTV and high-res computer screens, with our sense of vision influenced by these bright, saturated views. With the release of a few large films taking place in the 1920s era this year, we’re likely to see some Bahaus and Art Nouveau influences. In terms of design, there is a wonderful optimism to 2013. Here’s to a great start to the creative new year!

A SPOTLIGHT ON ENERGY-SAVING AND SUSTAINABLE INTERIORS, TRENDS AND PRODUCTS
CARDBOARD IN CHRISTCHURCH Japan based architectural firm Shigeru Ban Architects has unveiled their proposal ‘cardboard cathedral’ – a replacement structure for the earthquake-struck Christchurch Cathedral in New Zealand. Heavy damage to the existing church left the community in need of an interim structure to continue their daily activities. The design by Shigeru Ban consists of an A-frame quickly erected with cardboard tubes and polycarbonate, which will rest upon foundations fabricated from six metre long shipping containers. WOODEN POETRY French artist Marc Sparfel is quickly making a name for himself by creating quirky animals from abandoned wooden furniture. The transition space between the historic and modern is emphasised through the design elements found on the piano nobile, now the library, where reinterpreted and simplified classical elements harmoniously merge the existing historic and contemporary nature of the building. The height of the space is maximised through the introduction of full height fitted cabinets, with the upper level accessible from a new shallow mezzanine that overlooks the space

he property at 315/316, St. Paul Street in Valletta possesses features that clearly demonstrate its extremely precious architectural quality. It probably dates back to the first half of the 17th century, as its design somewhat recalls the Mannerist and early Baroque style. The plan and the design of the façade are both an example of the more restrained and sober style, characteristic of the early Maltese Baroque architecture. Architectural elements give the façade of this property an extremely elegant appearance.
The staircase is one of the key elements that contributes to the interplay between historic and modern. Here, the new arched moulded doorway connects the original stone stairwell to the double-height library
Now the grand residence of Mr. and Mrs. Tops, the palazzo originally served as a casa bottega, evident from a mezzanine with an independent entrance at street level. The concept of casa bottega has been re-implemented in its re-use. The mezzanine has been restored as office space, while the overlying spaces, which were originally a single residence, have been converted into two independent dwelling units. A duplex apartment and triplex penthouse were designed to accommodate the needs of the contemporary city dweller, hence contributing to the rehabilitation of Valletta. Mr. and Mrs. Tops have had a foothold in Malta since 1986 when they purchased a holiday home that would allow them to visit the island for spontaneous holidays. The couple chose Malta mainly due to its close proximity to their primary residence in London and the flexibility this allowed the family. When Mr. Tops retired from his career as a commodity trader, he sold the holiday apartment and purchased a Tigne seafront flat. Mr. Tops says, “This was wonderful for a while, but eventually I got a little bored sitting on the balcony or going to the beach, so I got the idea of converting something here the way I had done in the UK. I was up to that sort of challenge.” Mr. Tops had previously purchased the listed ‘White House’ in Hampton Court, London, opposite the royal palace and park. “Since it was a listed property, there were five different authoritative bodies that held an interest in the building. 029

SPACES HW However, they were extremely helpful and encouraged me to renovate the property with their ongoing assistance. It had been a wonderful experience and the prospect of doing it again was exciting. I was really quite keen on Valletta and when we found 315/316 St Paul’s Street, I enlisted ARCStudio and we embarked on the renovation.

“Little did I know what we were getting into! I have to say, the local authorities have made the renovation of this palazzo as difficult as possible in every way. I invested quite heavily to ensure that the palazzo was renovated as true to its original self as possible, without cutting corners. However, due to the disagreement of different authoritative bodies, an obstructive neighbour and the overall apathy towards the importance of renovation, it took me twice as long to renovate with twice the budget. Sadly, I have to say that out of all the countries I have been to and all the properties I have owned, this experience has been the most difficult. I would have thought – and was actually made to believe when I began thinking of investing in Malta – that the government would be keen to find someone to invest in the renovation of dilapidated buildings. After all, it can only mean good for the value of the area, as well as the overall economy. I don’t understand why they make it so difficult. “I have to say that amidst the negativity, ARCStudio did a stellar job. I don’t know how we would have managed completion without them.” Conveniently situated next door to the palazzo, Architect Claude Busuttil, director of ARCStudio (who specialises in conservation) was the project manager of the renovation. Mr. Tops’ brief was that the building should be renovated so that every aspect was totally authentic, and in keeping with the period style. Claude Busuttil says, “The design and rehabilitation of this palazzo was based on the two fundamental conservation principles; minimal intervention and any additions to be clearly distinguishable from the historic parts.” Interconnectedness between spaces was emphasised, particularly those of the main staircase, courtyard and piano nobile, now a private library inspired by the local style found in the typical Maltese palazzo. The height of the space was maximised through the introduction of full height fitted cabinets, with the upper level accessible from a new shallow mezzanine that overlooks the space. Efforts were made not to negatively impinge on, but rather highlight, the cultural significance and historical fabric of the 17th century palazzo. This was achieved through the use of typical local materials and colours, more specifically within the original parts of the building at ground and first floor levels, and on the piano nobile. The third and fourth floors, newly constructed in globigerina limestone, were finished in a more contemporary manner to highlight a difference between old and new. The transition space between the historic and contemporary is emphasised through the design elements found on the piano nobile, now the library, where reinterpreted and simplified classical elements harmoniously merge the existing historic and contemporary nature of the building.

Quirky and eclectic – a casual sitting/dining room, complete with furniture brought over from the Hampton Court property, which works well against the old Maltese backdrop
A reproduction of a typical stone fireplace sits on one of the side walls of the library, further echoing traditional features. The solid parquet flooring, fitted timber cabinets and open steel railing are complemented by subtle tones of grey and yellow ochre stone surfaces, suiting the classic modern style. Three of the walls were rendered in macro-porous plaster, contrasting with the fourth restored, exposed limestone wall. The spiral stone staircase that links all the original floors of the palazzo was restored and embellished to act as a light well, allowing further natural light and ventilation to reach rooms at the back of the building. In addition to improving natural light levels, attention was given to artificial lighting of the spaces to enhance the innate characteristics of the building, with particular emphasis on the volumes of spaces and specific architectural elements. The approach adopted for the cleaning and restoration of the internal masonry walls follows the conservation principle that stonework should only be replaced where absolutely necessary and works should be completely reversible where possible. In the case of stone replacement, good quality globigerina limestone was used. The substituted stone masonry was chosen to have the exact dimensions and shape of the original stonework and to have the same intrinsic qualities as the original.

Claude Busuttil concludes, “From a conservation perspective it was important that the materials used were compatible and do not deteriorate the stone any further.� Very recently, this project was awarded the Architecture Prize of the 2013 Malta International Arts Biennnale.

challenging obstacle to overcome, this enormous open-plan seafront apartment is comfortable. When engaging in the interior design of such a large space, the peril is a disorderly outcome; the furniture lost in the midst of space abyss.

When Interior Designer Sandy Bonnici was initially presented with the existing site, it was a large blank canvas. One of the homeowner’s main requests was to enjoy the open plan and the views from his desk, as opposed to being cut off in a closed room. Sandy’s aim was to diffuse the overall space in order to create a warm cosy feel. Her key considerations were to section it beneficially in order to create a functional space, sticking to a neutral palette and adding accents of colour and texture. The large open plan in the front part of the apartment made creating a cosy feeling something of a challenge. The solution to the homeowner’s request to enjoy the internal space and external views simultaneously was to create a split level with alternative flooring in order to offer definition to the living area, while also creating a cosier space for everyday use. Sandy says, “This way, it stands alone without being entirely closed off, allowing the apartment views to be enjoyed. Simply placing furniture in this area wouldn’t have been a solution, as the space would have swallowed it up. “I had the luxury of building all internal walls from scratch, putting me in the fortunate position of being able to make every design choice right down to the size of the rooms or the positioning of the doors. This was given its time and undivided attention. Starting with such a blank canvas also allowed me to design bold bespoke carpentry statements, such as the library. It made an impact in a very large space.” 036

“Any special pieces – whether they’re antique furniture, paintings or ornaments – have to be taken into consideration. There’s no point creating a design and then trying to fit these pieces in at a later stage. The design has to work around them.” The front area of the apartment was sectioned off from the back bedroom area via a change of flooring and internally sliding glass doors. “The aim was to keep the bedroom areas a bit more private, yet still allowing lots of light to filter through. For heating and cooling purposes, this is also a lot more practical.” Once the layout was established, Sandy began the detail in the design. She started with fabrics, creating a colour palette to work by. This then enabled her to start playing around with pattern and texture. “At the beginning of the design stage, it’s generally the form and the texture that mostly appeal to me. “The floors and walls were considered next, as this is the canvas on which everything else plays. Diverse flooring really helped divide the different zones within the large open plan. We went with a very neutral tile throughout the kitchen, dining and living area, and then went with a warm parquet on the split level television area. The bedroom flooring is also parquet with a large area rug for comfort. “After this, we began with the furniture detailing; doors, panelling, cushions, and other finishings. Since the space is so large, a lot of soffit lighting was included, backed up by lighting from within recesses. The various artworks are illuminated by accent lighting, which creates a mood in what could otherwise be flatly lit. In the bedroom, an enormous chandelier makes a statement, while the ambient lighting is warm and strategic. “An essential element to any design, lighting was of utmost importance to create the right mood and ambiance of this living space. It really emphasised the design to its highest potential.” The homeowners are now extremely comfortable in their open-plan apartment, easily able to enjoy the entire space, while enjoying the spectacular outside views. Sandy says, “A home is a lifestyle so I wanted to create a bespoke design, providing the homeowner with a tailored, experienced and thorough service.”

“
Peter is meticulous.” “Peter is very tidy.” “Peter likes to be precise.” This is coming from Peter’s friend and interior designer over a glass of red wine around the flawless kitchen table. Peter the Perfectionist in question is Peter Gluckman, a Swede who has just sold his business in Sweden and moved to Birgu. His fastidiousness derives from the previous nature of his business – printing and engineering – which was all about detail. “It’s just the way I am,” he says, “if I don’t know about something, I’ll do my homework until I do know it. I like things to be right.” Peter’s location preference was always Birgu, and in particular St. Angelo Mansions block, as a number of his friends live there. This, and of course the spacious layouts and spectacular apartment views. Peter, “I like this area very much. I’ve been coming and going for almost three years, since most of my friends live here. It was natural for me to get an apartment here. This apartment was originally owned by a friend of mine who rented it out, so the interiors were all very standard. I wanted to gut it entirely and start with a blank canvas.” Peter went about engaging an interior designer from Sweden, and when he came across the Gemini Design Studios website, he saw that Aldo Cutajar’s designs were similar to his style. Peter’s previous house in Sweden was large (over 400 square metres), full of bold and modern furniture. Since relocating was an opportunity to create the space he wanted, he began with a clean slate, bringing very little with him; the iconic Artichoke Light by the Danish designer Poul Henningsen, a few paintings that he couldn’t forego, and the renowned Swedish-made Hastens bed. As pointed out, Peter was very specific about what he wanted; a neutral colour palette, warmth, as much of the sea view as possible, an integration of technology, and a large, open plan kitchen where visiting guests could mingle. “I also wanted a personal style; not something you could buy in any furniture shop. I wanted something original.” Aldo, “To ensure that everything was accurate, we made bespoke furniture pieces for the most part – in particular, the required madeto-measure pieces for the technology in order to conceal wires and unsightly pieces.” Peter, “When it came to colours, I knew I wanted different shades of grey and stainless steel throughout. I wanted browns to break this up. I also wanted to combine all this with sand colours. I don’t like yellow at all, which is rather un-Swedish of me. In fact, the roof room was painted magnolia and I had to repaint it because I just couldn’t stand it. I like the warm neutrals because they’re not boring, yet they can be used for so much as a backdrop. The colours can come in through the art and accessories.” 043

Complexion-flattering halogen lights were used throughout, and a concentration on accent lighting with dimmers offers a sensual effect.
“I was really most concerned with the kitchen from the beginning. I wanted it to look and be clean, so I wanted white, high gloss with stainless steel features. The wine fridges were also very important to me. I was worried that everything wouldn’t come together like I wanted them to. When things don’t make sense to me, I can’t just let them go. For instance, we had designed an extraction fan, which looked really cool on the drawing. However, when the contractor started talking about building it, I could see that it wasn’t going to work. There were if course a lot of bumps – but Aldo was there to ensure that we got to them on time so that we could fix them.”
The master bedroom is the epitome of comfort with its tremendously luxurious walk-in wardrobe (which was converted from a bedroom) and soothing fireplace – a duplicate of the one in the living room – underneath the wall clad television. What was previously the entrance to the bedroom is now used as a box room, behind the television. The frosted glass wall of the en suite bathroom also serves as a light box, creating a comforting bedroom ambience. A separate toilet, which ensures privacy, is positioned behind the television/fireplace wall and leads on to the box room.
The solutions to opening up space and light were such as the strategic reflective mirrors, as well as the sliding glass door to the balcony, which opens up completely. Apart from the striking fireplaces, warmth is accentuated through the lighting.

When asked what he would have done differently in twenty-twenty vision hindsight, Peter has to think for quite a while before responding that he would have installed underfloor heating throughout the apartment. The bathrooms are equipped with the heating and Peter found that it was a great comfort. “Apart from that,” he says, “I wouldn’t change anything. This apartment has turned out exactly as I wanted it and is ideal for me at this point in time.” Aldo concludes, “Although Peter is meticulous, he likes comfort. A description of him would be this apartment – a sanctuary with its music, flowers, candles, wine and warmth against a perfectly finished backdrop.”

Socio-economic factors, as well as media have an integral role in setting the tone of design trends for interiors. HOMEWORKS takes a look at the ‘‘Great Gatsby effect” heading our way this year
s the hype builds towards the May 2013 launch of Baz Luhrmann’s film, The Great Gatsby, it’s likely that fashion, as well as interior accessories will be influenced by the very dominant Roaring Twenties. A decade referred to as ‘roaring’ due to its artistic and cultural dynamism, the period was heavily influenced by modernism and the art deco style. As a result, interior design during this era was aimed to be chic and glamorous, while also being simplistic and functional.

As cinema became more popular in the 20s, the glamour of early Hollywood became an influence on interior design choices. Interiors reflected financial excess, which often resulted in extravagance, and flamboyancy, with an air of mischief. Great advances in technology took place during the 20s, which made tasteful interior design affordable to the common family. It was also a time of innovative and diverse design trends, which provided various new home ideas. Art Nouveau came into fashion in the late 19th century, but lasted well into the 1920s. The style was a concerted attempt to create an international style based on decoration. It was developed by a prolific generation of artists and designers, who sought to create an art form appropriate to the modern age. Old customs, habits, and artistic styles sat alongside new, combining a wide range of contradictory images and ideas. Many artists, designers, and architects were excited by new technologies and lifestyles, while others retreated into the past. As a response to the end of WWI, Art Deco is an eclectic style that combines traditional craft motifs with machine age imagery and materials. The style is often characterised by rich colours,
bold geometric shapes and lavish ornamentation. Art Deco represented luxury, glamour, exuberance, and faith in social and technological progress. The Bauhaus school was founded in 1918 and designed for mass production, using modern materials like tubular steel to create highly functional design. Spaces were left open, furniture was steel and leather and floors were wood, cement or cork. FURNITURE A mixture of furniture styles was found in the 20s, inclusive of rustic, Federal (North America), Regency (Britain), Empire (France), Elizabethan and Gothic. To create larger, less cluttered spaces integrated furniture was popular. Bookcases, breakfast nooks, china cases and window seats were among the various built-in furnishings that were designed to save space and help create simple living spaces. Furniture was often made of wood (as well as doors and window frames) with leather, glass and steel. COLOURS Since there was a mix of the three movements during this period, the colour palattes were diverse. Art Nouveau-inspired interiors were generally decorated in greys, white, off-white, beige and pale or muted tones of blue, orange, green and lavender. Art Deco inspired subtle pastels and classic neutrals as a background for striking accents of bold, exotic colours. Big on colour, Bahaus was about basing colour theories on emotions and auras. Johannes Itten was the Swiss expressionist artist and teacher who placed emphasis on spiritual openness and peace of mind as a means to free expression.

ACCESSORIES In line with the idea of simplicity, art and accessories were often kept to one or two signature pieces in the room. An example – an Art Deco vase containing ostrich feathers for an extra decorative touch, alongside one striking painting on the wall. Small accents, such as a fancy letter opener or an enamelled cigarette case, would add a touch of Hollywood glamour. It was the era of the Jazz Age, and as a result, musical instruments were a natural part of 20s interiors. The selfplaying piano was often found in homes, as well as the phonograph. This was usually concealed in a wooden cabinet, allowing it to double as a piece of furniture. Cabinets were often made of mahogany or oak and had elaborate inlaid sections and hand-carved details. Windows were covered with curtains ending at the sill, with a window shade underneath. Draperies that reached the baseboard were hung over the curtains and pulled to the sides. World travel had just become more accessible, which meant that exotic finishing touches from Africa and the Orient made their way into design.

WALLS Walls were either painted, panelled or mirrored. Panelling in the 20s was done by attaching moulding frames on the walls instead of being completely covered with wooden panels. The space inside the frames was either painted or covered with textured wallpaper. Covering the walls with a scenic pattern wallpaper was especially common in the dining room. A gloss finish on walls was preferred, so much so that a layer of varnish was often added on top of wall paint.

FLOORS Polished parquet flooring in Maple, Beech, Birch and Oak was a common choice in this decade, as were chequered black and white tiles or linoleum flooring with abstract art deco patterns printed on it. Floors in the living room and dining room were usually covered with Oriental-style area rugs in muted colours such as blues, greens and taupe. Sometimes floors were covered in linoleum, even in the living room. Lines were clean and straight, but edges were rounded. LIGHTING Rooms often had Art Deco-style fixtures, such as brass wall sconces with a frosted or clear-glass shade. Electric fixtures in hammered iron and copper that hung from a chain with shaded or unshaded bulbs were also used. Colourful stained-glass Tiffany table lamps with square oak frames and bases also define this era.

ixing things is what our parents used to do. Nowadays we replace things, or buy a more recent model. Marketers and the retail industry have persuaded us that it would be much cheaper to buy a new product. So much so that in the midst of our busy modern lives it is no longer our first instinct to repair. The idea of our fathers fumbling around with a bottle of wood glue and a roll of tape while trying to piece back together a broken stool or lamp has become a distant memory.
F
We need to pick up the habit of repairing and reusing objects. Through the process of fixing we gain an understanding of how they are put together in the first place. It is a learning process and a way to gain a little control over technology. This appreciation of the craftsmanship and engineering that goes into the making of objects helps us to value and acknowledge the skills and abilities of their makers as well as the object itself.

Those who dare to repair might take the practice further and apply their own creativity to reinvent and re-fashion objects. This process adds a personal aspect to it. The broken stool has now become your broken stool. This personalised solution has become an expression of ingenuity and skill, giving a sense of ownership. The re-using and refashioning of things is not only a sustainable practice but also an economical one, since used or damaged objects are normally undervalued by the seller. Yet with a little imagination and basic workshop skills their hidden value will come to light. Some take their creativity further than simply reusing old or broken items. They use items that they find around them and combine them with other objects in a new setting _ such as the refashioned pendant lamps made of discarded glass globes found at the Birgu market, some inexpensive fittings and hand cut metal plates. 057

Take a moment to adjust your perception of an object to see how you can re-craft or combine it with something else to give it a bit of a personal edge
The result is a decorative and eclectic pendant lamp at hardly any cost. Another example is the kitchen table, which was made by combining a discarded table base found at a local bring in site, together with a marble slab and a hob set into the surface. The timber floor and back splash on the same picture were made of recycled timber boards. Once used for the packaging of white goods, the boards were treated and reused to create a functional and striking result. If you are having a creative block, the Internet is awash with ideas, examples and inspiration for unexpected and often humorous solutions. You will find that a number of online communities and networks exist with their own specific focus. One of those is Up-Cycling, a term coined to define this type of creative reuse and refashioning of things rather than their recycling. These movements gained in popularity since the early nineties, reviving an age-old practice, which had been largely forgotten since the start of mass production and the quick availability of goods. We need to bear in mind that it is not about being cheap. It is about being resourceful, creative and different. If you go to the local markets, bazaars or bric-a-brac sales you often find items, which at first glance seem to have no real value. Take a moment to adjust your perception of one such object and see how you can re-craft or combine it with something else to give it a bit of a personal edge. So if you can pull yourself away from your smart phone or tablet, and are ready to get your hands a little dirty, you may find that with a little bit of creativity and initiative you can still surprise yourself.

he greening of walls has always been one of the basic elements of landscaping, with climbers and hanging plants softening facades as far back as the famous hanging Gardens of Babylon. With the advent of green walls the concept was, literally, taken to much higher levels. “Green walls” is the general term, which is divided into “Green Facades” and “Living walls”. Green facades generally consist of a 3D trellis structure, which supports climbing plants from the soil at the base, while living walls have the root system growing throughout the wall itself. The concept and benefits of living walls are similar to those of green roofs, and as these were being installed on ever steeper angles, experts were quick to realise that plants would have no problem adapting to a vertical situation. Living walls were the natural next step.

The credit for the first living wall, created in Paris in 1988, goes to French artist and botanist Patrick Blanc, who then went on to design some of the world’s most famous vertical gardens. With pressure to fulfil social and environmental demands rising, the technique quickly gained in popularity, placing itself at the leading edge of contemporary architecture. Green walls in fact make a lot of sense for many reasons, especially in crowded urban areas where concrete is dominant and space restricted. Vertical gardens provide architects, designers and planners with a tool to introduce some much needed greenery and beauty, improve air quality, cool the environment, and generally do wonders for human health and psychological wellbeing. The concept can be applied in almost any situation, indoors and outdoors, in residential and commercial sites, on any scale and in most climatic conditions. Measuring 1,263 square metres, the world’s largest living wall is currently in Milan. With over 44,000 plants, the wall reduces the shopping mall’s energy consumption, cooling it in summer and insulating it in winter. The plants also absorb noise, help to purify the air and neutralise some car emissions from the parking areas.

Design possibilities are endless and vertical gardens can be customised to any space. In a home or courtyard, even the smallest green wall installation will give character resembling a living artwork Modular systems consist of square or rectangular panels, cells or geotextile pockets, which hold a lightweight, moisture-retaining soil mix for the plants. These are then attached to mounting brackets on the vertical surface, leaving a gap, or breathing space, between the wall and the panels. Irrigation is provided at different levels along the wall, distributing water and fertilisers when necessary through gravity. In soil-less systems plants are inserted in felt panels containing a special growing medium, and then attached to a rigid waterproof backing and frame, which is connected to the wall. An irrigation system situated at the top of the panels distributes water with added nutrients to make up for the absence of soil through the felt layers. In modular systems the roots are confined to the cell or pocket, sometimes resulting in the cell frames still being visible, while in felt systems roots can continue growing freely through the medium, allowing for a more even effect. Many of these modular systems are available online for home use, although more complex installations would have to be professionally implemented. Design possibilities are endless and vertical gardens can be customised to any space. A vertical, edible garden makes the most of limited space, is easy to access thus facilitating maintenance, and provides many wonderful additions to salads. Plant lettuce, cherry tomatoes, celery, herbs and include some edible flowers, such as pansies and nasturtiums for added colour and taste. As in a normal garden, the choice of plants depends largely on the aspect of the wall. Sun or shade loving plants are selected accordingly, with succulents being a very popular option for hot, sunny areas. Colours and textures can be mixed and matched to create tapestry-like effects.

Method Sprinkle the duck breast’s fat side with salt and cook fat side down gently in a frying pan (serve pink).
Sprinkle the tomatoes with salt and fresh ground pepper, and roast for five minutes.
For the potatoes, peel and cut into small cubes and boil until soft. Add the fresh thyme, olive oil, salt and pepper, then crush with a fork. Clean the artichokes and boil with some lemon and season accordingly. For the pea puree, boil the peas for a few minutes and then blend with salt and pepper.
For the jus, reduce the wine with the star anise then add the stock and reduce.

JERUSALEM ARTICHOKE SOUP WITH THYME AND CRÈME FRECHE Ingredients (serves 2) 400g 50g knob 5g 4g 300ml 40ml

Method Peel and wash the artichokes, then cut into small cubes. Cut the onions and garlic into small cubes and fry them with the knob of butter until soft. Add the artichokes and cook for a few minutes. Then add the thyme and the stock; cook until the artichokes are soft. Blend well and pass through a fine sieve. Season with salt and ground white pepper. Plate the soup and garnish with the crème freche and thyme on top.

MALTA “Choosing a wine to accompany soup is never easy, as marrying up a liquid with a liquid can sometimes be problematic; and serving a separate wine with a soup dish can be quite extravagant as well, especially if it is served as an additional intermediate course. For this particular soup however, I would go for a very soft, fuller flavoured white wine with fairly low acidity and a nice clean (un-oaked) fruitiness to it. In reality, either a dry or a medium dry will probably go equally as well, but I have selected a dry version made from a grape variety with good weight, the Malta grown white grape Viognier. And if you are lucky enough to find a 2010 vintage bottle still out on the shop shelves it will probably be an even better match, as it would have softened nicely over the last year.”

Method For the base, blend the cookies with the melted butter and place flat in a mould, and leave to rest for half an hour. Whisk the cream cheese with the condensed milk, then add the lemon curd and whisk again. When it’s smooth, poor over the cookie mix and leave to set for four hours. Slice the kumquats in thin slices and boil for a few minutes. Remove the water and add fresh water together with a spoon of sugar and reduce until it becomes a thick syrup.Use fresh cherries and chocolate for garnish.

The combination of the sweetness of the wine, the tartness of the lemon, the richness of the chocolate and the tanginess of the kumquat syrup, leaves the palate with a delightful amalgamation of complementary flavours. My choice of dessert wine is made entirely from Malta-grown Moscato grapes that is very aromatic, but has sufficient weight and viscosity to complement the charm of this dish, without becoming cloying. As a result, it refreshes the palate, rather than adding to the dish’s overall sweetness.”
