EDITOR’S LETTER HW The idea of rebirth is such a romantic one; the notion that something goes from its prime to become disused and discarded, only to receive a second chance at becoming great again. The idea that this seemingly innate wistful longing for the past doesn’t necessarily have to be nostalgic is a thrilling one, which is why we have dedicated this issue to it. So much of the spirit of this HOMEWORKS edition is confirmed and coined by the article on Tom Van Malderen’s apartment (page 024). Tom says, “The idea to continue using some of [the homeowners’] previous belongings in the original place they were picked out for delighted me...It made sense to reclaim something existing that was made in the very same town, as opposed to buying something newly manufactured (on the other side of the world)… From a practical point of view, upcycling is an easy way to ‘fully’ furnish a flat and take your time later to change pieces. You don’t need to break your head by taking all these decisions in one go, without having lived in the place and really knowing what you’d like to do with it…” Apart from the three apartments featured this issue (all pertaining in one way or another to rebirth), the decoration feature on page 049 expresses the concept of retrofuturism visually, while ‘Influence’ on page 063 highlights the impact that television series, such as ‘Mad Men’ and ‘Game of Thrones’ has on our interior trends, as well as offers ideas on getting the looks locally. The Doors Guide on page 067 offers a myriad of different options for the (most often than not) necessary feature that can hugely affect the look of a space. Landscape Gardener Melina Scodanibbio is back with an extensive article on lovely lavender (page 083). DI DUM, DI DUM, DI DRUM Designer Henry Baumann has created an incredible series of sculptural lamps and chairs by recycling big wooden cable drums often found on building sites. He discovered that these drums were too big and heavy for one person to handle, so he experimented with cutting them in order to make them manageable. By approaching the big wooden round plates with a single spiral cut, he was able to make an interesting transformation, yet still respect the integrity of the original object. www.henrybaumann.de

This ‘eating away’ not only results in changing the quality of the solid object (like smoothness or exposing the internal quality of the element), but also leads to the formation of surfaces and pockets that then become suitable for a different kind of inhabitation. LIGHT RAIN Designer David Trubridge has been able to “fuse the spirit of the earth into something as utilitarian as a lamp” and “proves that design, when done right, can in fact bring you closer to the elements”. A
rchitect Tom Van Malderen’s top-floor apartment lies within a postwar corner block that was constructed on one of the many sites that were destroyed during WWII. The space had only been lived in by one family, so it was literally second-hand. Tom, “The apartment had a happy energy to it from the start, and although the rooms were overcrowded with (generally dark) furniture and heavy curtains, it was immediately clear to me that one of the great potentials of this corner flat was the possibility of pulling in an abundance of natural daylight.” Here: The motivation behind the up-cycled furniture throughout the apartment included the homeowner’s desire to get to know pieces that had lived in the apartment pre-him, avoid throwing away perfectly good furniture, and also to reclaim something existing that was made in the very same place as the apartment, as opposed to buying something newly manufactured from a different country Right: The homemade chandelier above the table was made of a collection of light shades found at church bazaars and car boot sales, ranging between 20 cents to three euros a piece. On their own they are easily overlooked, but as a collection of lamps from the 20’s till the 90’s they gain interest. They can be switched on and off in couples, allowing for a play in the intensity and warmth of colour, depending on the occasion. It’s not only interesting to know what an architect and CEO of one of Malta’s top architectural firms (Architecture Project) would do with a brief, but even more interesting to know what his brief might be to himself for his own apartment. “My brief for this apartment was to be a home! That may sound silly, but today’s real-estate investment craze often drives people to take decisions based on resale values rather than on what they really want out of a home. In my case, home meant first and foremost space; quality space. Working with a restricted budget in Valletta meant that a first big choice had to be made between the view and internal area. The choice for space was an obvious one. Living on a dense island makes us all crave for a bit of personal space. The fortunate weather allows us to spend ample time outside in any case, and there is an abundance of amazing views available within footsteps. 027

Tom wanted to hold on to the organisational principle of the corridor because it was part of the apartment’s original DNA. In response to limited access to the roof, he created a hole just large enough to insert a steep staircase in the roof slab at the end of the corridor. He then built the staircase, pre-fabricating the frames on the floor and fixing them one after the other, starting with the highest, going to the lowest step. The first challenge was the functional organisation of the place. Originally, the bedrooms were situated alongside the busiest street with the most traffic, whilst the kitchen, living and dining rooms were located above the pedestrian alley, while the (relatively open/spacious) shaft was at the back. Tom’s first move was to swap this organisation around.

Alongside swapping these functions, Tom removed two dividing walls to organise the living room, dining room and kitchen within one space (the space that takes up the actual corner of the building). This very spacious room (created by grouping three previous rooms) would become the prime 029

The grouping also meant that this room now has two typical town house windows, a Maltese balcony, and a French balcony. It turns the space into a sundial with changing light intensities and shadow projections throughout the day (and the seasons). “In many contemporary Valletta conversions, walls between the corridor and living rooms are opened up as well and get fully integrated. I wanted to hold on to the organisational principle of the corridor. I realise that it is a classic element and possibly old-school to a certain extent, but it felt right to hold on to the corridor; this original DNA of the apartment. It felt familiar and I like the character of these transition spaces (apart from the strictly functional benefits of climate and sound control).” The old infrastructure was another major obstacle, with the plumbing and electricity in desperate need of an upgrade. “Nonetheless, I really wanted to hold on to the original and colourful tiles throughout the apartment as much as possible. Although they weren’t in the best of condition everywhere, the ‘patina’ they acquired during the 60 years of use is something I wanted to hold on to. I like the natural traces of time. It feels more alive when lived. Eventually, the flooring in the corridor and bathrooms was the only part changed, and the corridor was used as
our ‘highway’ of new infrastructure. From there, we worked within the walls of the adjacent rooms.” The motivation behind the up-cycled furniture throughout the apartment was multi-layered. Tom had the opportunity to keep as much furniture as he wanted from the previous owners. “The idea to continue using some of their previous belongings in the original place they were picked out for delighted me. To keep some around gave me the feeling that I could get to know them a bit.” Most of the furniture was produced by the carpenter-workshop N. Caruana in Valletta in the 50’s and 60’s. “I see too many of these pieces ending up in skips in Valletta and it simply breaks my heart.” There was also the sustainable element of re-using the furniture: “It made sense to reclaim something existing that was made in the very same town, as opposed to buying something newly manufactured (on the other side of the world).” “There is also the fact that I like to work with my hands in my spare time, balancing out the time I spend mostly behind a desk during the day. From a practical point of view, upcycling is an easy way to ‘fully’ furnish a flat and take your time later on to start changing some pieces. Apart from all of that – it also obviously relieves a lot of financial pressure, as it’s definitely much less expensive.” The kitchen/dining set was Tom’s first reclaimed project in the apartment. With an apartment of this size along with the style of the furniture (somewhat understated with a mix of styles and eras, but predominately Danish influenced mid-century modern), there is a need to balance the flow of the environment to achieve a warm feel, as opposed to a utilitarian one. Tom’s answer to this was to utilise and direct the changing light throughout the day and seasons (from the shaft and washroom in the corridor, and in the living/dining/kitchen room from both streets and the four windows). Beyond this, the fact that none of the areas are over-designed or overly preplanned makes them more relaxed and feel less scant.

“Within most of the spaces, furniture can easily be moved around and provide a little twist in the way there are used; the views you have when seated, the way light (and time) is going by, etcetera. As a matter of fact, I see the space very much as a work in progress, as in ‘good for now’. The way we ‘live in the place’ has changed already a couple of times.” Details and accents of colour, shape, scale and texture (not to mention the colours and patterns of the Maltese tiles) achieve a warmth to the space. This is balanced out with a good portion of less bespoke areas – white walls, ceilings, traditional windows – that make it appear nonetheless tidy and organised, staying on the “right side of clutter”. “The objects we have around all carry a story, a feeling or a meaning, and are definitely not only decoration. I am under the impression that people visiting our place pick this up as well, which is a large part of what makes the place feel genuine and warm.”

iolet immediately fell in love with this apartment’s clean and beautiful space with modern lines, originally designed by Architect Michael Pace. In the beginning, the only furniture was the fitted cupboards and units.

Violet: “This was quite an easy space to work with because it was open plan, and all the furniture around was fixed. The colours were also easy to work with because they were natural and plain.” There were structural changes made to the apartment before Violet moved in that she wasn’t involved with, such as the
opening of the back window to allow the sea view in, as well as the removal of structural walls between the kitchen and living area. The moment Violet moved in, she slowly began to collect objects, as well as to design and make her own furniture in order to transform the space into her own, personal home. Violet: “As a designer, the last thing I wanted to do was to “design” the environment I live in. I wanted to be surrounded by objects I love and things that have sentimental value to me, but also objects that have a meaning. I love collecting 035

The bar made by Violet is a moveable object, which allows her to shift furniture around. In summer, she moves it closer to the window to get a better view of the sea, while in winter, she moves it further inside the apartment to receive the warmth from the stove
old things, which allows me to decorate my home in a unique way. Furniture items can be created from sustainable materials that are natural and self-replenishing. I like contemporary furniture that represents quality, but also perfect aesthetics. Unfortunately those are the most expensive, which I simply cannot afford! This is why I found a replacement in up-cycled objects, which work perfectly in the apartment, as the shell of the space is modern. By combining two different elements, such as vintage and modern, I created the perfect balance and the right look for me.”
The first piece of furniture Violet began with was her customdesigned bar area. “I designed this piece especially for the apartment, and for my landlord who often visits Malta. The bar is a movable object, which allows me to shift the furniture around, and it works really well in the open space. In summer I like to sit near the window and look at the sea, while in winter I place the bar further inside of the apartment to view the sea with a ‘winter’ perspective, which is warmed up by the kitchen stove.”

I love all the objects I have collected over the years, and I always believe that they’re in my house for a reason. One of my favourite pieces is an Art Deco glass ashtray. It’s one of the most beautiful objects I have ever found in Malta.” Violet believes that every home has a spirit. “Houses are basically containers. n the beginning, this Pembroke house presented itself to Designer Nathan Martin with an interesting split-level at the entrance, dividing it from the rest of the house. Otherwise, it lacked character with a typical early 90’s semi-rustic finish, with details like mahogany doors and stained glass. It was also insufficient in natural light.

The homeowner’s only wish was to update the obsolete kitchen / living within a budget, but it quickly became evident that more was needed in order to unify the style throughout the house. Designer Nathan Martin: “It was only after several meetings and a healthy increase in budget that we could venture into the yard, hall, stairwell and upstairs too. Priority was given to comfortable family living spaces that could double as entertainment areas. It was agreed that the only way forward was to customise virtually everything. In fact, very few items where bought; all carpentry and even the sofa, chairs, and table were fully custom-made and done locally.”

The main obstacle was that there was a lack of space flow or visual cohesion. Further to this, there was also a lack of natural light due to a tiny door and two small windows leading to the backyard. The solution was to replace the back wall with floor-to-ceiling and wall-to-wall glass sliding doors. This also allowed the designer to enlarge the internal floor space to accommodate the dining table. In addition, an internal door and masonry placed before the entrance to the kitchen/living area were removed and replaced with a full-size frameless glass door with a custom made marble handle (to provide continuity with the marble wall cladding) that when shut, becomes virtually invisible. A part of the wall in the hall was removed and a horizontal sloth was left open to allow a visual connection to the seating area and a fireplace. A wall was also extended to hide the kitchen from the entrance. In terms of interior design, the brief from the homeowner was a timeless style, which could be enjoyed effortlessly during all seasons. Two main natural materials were used repeatedly: the travertino-noce marble (which was left raw except for the flooring) and walnut wood. The travertine offers a strong design identity immediately upon entrance of the house, which continues as a wall feature that conceals the kitchen. From here, the material wraps around to act as the splash back. In the yard, three backlit wall features in the same marble bring the outside in, and make the space appear much larger. 042

Nathan: “It was really important to me to unify the design. Apart from using variations of the same marble, I also used it with a horizontal grain to further coalesce the design.”
The full-height kitchen was also made to match the same colour of the Corian® top and the wall colour; all left very neutral to maintain the minimal design of the architectural feel.
The yard floor was designed at the same level as the indoors, in order to remove any barriers and to maximise the flow of the space. This was further achieved by the creation of a water pit for runoff, as well as wood decking to fill up the gap.

Although the space is somewhat linear and clean, there is an extremely soft and warm feel to the space. This was achieved through materials and lighting. In the architectural arena this provided the impetus to explore the concept of sustainable practice with the scope of producing energy efficient buildings. Often, this term brings to mind a compromise in lifestyle, comfort and aesthetics. However, a ‘green’ home may be achieved by poetically weaving

ublic interest in energy efficiency has grown considerably in recent years, and there now exists a more proactive approach towards the conservation of water and electricity. In the pursuit of energy savings, strong emphasis has been placed on the use of renewable technologies, such as the exhaustively discussed PV panels; now an established trademark of local roofscapes. However, this constitutes only one of the many branches pertaining to the vast and wide ranging subject that is eco architecture.

A ‘good’ building must satisfy a number of criteria. It should be designed to provide aesthetic interest, functionality and, most importantly, a comfortable indoor environment. The concept of passive design is rooted in a desire and requisite to achieve the latter without necessitating excessive energy demand through – for example – the consistent use of air-conditioners in summer. The rationale of this strategy is based on an efficient response to climatic and environmental conditions, and to site characteristics, as an alternative to mechanical thermal control systems.

Not only does well-executed day-lighting produce remarkable spaces, but it also begets energy savings: a direct consequence of reduced artificial lighting requirements, as well as a result of reduced artificial cooling demands (natural lighting generates much less heat than its artificial counterpart). However, the correct balance between light and heat infiltration may only
be achieved through appropriate fenestration design. Shading forms an integral part of window treatment. A well-planned glazing and shading system, coupled with proper orientation, maximises daylight whilst mitigating the sun’s undesirable effects, thereby reducing both energy consumption and visual discomfort. 055

Similarly, insulation provides an excellent energy conservation mechanism. It packs a sustainable punch, keeping the home warmer in winter and cooler in summer, thus easing the load on powered systems. The advantages of this concept have been recognised for centuries. Our predecessors bolstered thick double-skinned masonry walls by packing the cavity with soil and rubble. This hidden content provides an additional layer of insulation and exemplifies an adopted means of resource conservation.
Enhancing energy efficiency does not generally form part of the clients’ brief, nor are such considerations factored into the decision-making process when buying, building or renovating a property. This is presumably a consequence of a lack of public awareness and an underestimation of the importance of addressing these issues. Simple modifications designed to incorporate useful passive environmental control systems, selected carefully to gel together synthesises building performance, may contribute significantly to the home’s energy conservation profile.
Although our forefathers wholly embraced it, the incorporation of passive design features has not been fully taken up as a contemporary strategy for the reduction of energy demand in buildings. In the past, available materials, techniques and resources were used in such a way as to maximise the occupant’s comfort, thus evolving a particular typology over time. The resultant building was one that greatly suited the lifestyle of the period, as well as the local climate. Traditional Maltese architecture was configured to respond to environmental awareness through suitable climate-specific features and construction principles. For example, the internal courtyard and south-facing loggia, so often present in vernacular typologies such as the farmhouse, provide natural light and excellent Cross-ventilation, and buffer heat gain/loss in adjoining rooms. Ironically, this indispensable feature is not 056
In those instances when energy-efficiency is flagged by the client, the incentive is often limited to a reduction in running costs. However, the advantages are not solely fiscal. Or the way in which a light breeze dances across the rooms flowing from one well-sited window to another. The general understanding of ‘green’ architecture must be redefined to highlight the technical, as well as aesthetic components, and to shed light on the true beauty of sustainability.

NORBERT FRANCIS ATTARD’S MICRONATION SERIES
Norbert Francis Attard’s sculptural pieces placed atop the plinths of Pjazza Teatru Rjal were investigations into the theme of MICRONATION, and the context of the building. For Attard, a micronation demands newness and diversity, unavoidably creating a disharmony from the conventional. Atop these plinths, the artist constructed sculptures radically different in design to that of the theatre and of Valletta, with influences from Modernist architecture and design, engendering a stylistic rupture from prior architectural traditions. Here, Attard is challenging himself to create harmony within the disharmony, questioning whether beauty and order could emerge from fragmentation.

100 miniatures of classical seats conveyed the significance of design and the role it plays in the industrial production process. These classical chairs, exact 1:6 replicas of the originals, were presented on plinths in an elegant installation. The exhibition was accompanied by 40 wall-mounted panels comprising photographs, original drawings and time-lines.
Inspired by a strong sense of place and the objects which often define it, Designer Violet Kulewska created a unique, evocative environment that brought a touch of playful fantasy to St. Elmo. Combining her own designs for VKstudio with found objects from around Malta, Violet drew together product and interior design in an installation, which was tactile, and a thoughtful exploration of materials and colour using the old, the innovative and the new. Here, Gradient Object Candle Chandelier (found object, converted by Violet Kulewska).
ABSOLUTE RAW BY DAAA HAUS
‘Absolute Raw’ was all about design that lets raw materials that were once hidden or used in the initial building process to become the focus – a celebration of ‘Raw’ simplicity. Keith Pillow, DAAA Haus Design Director, described the event as “a fashion statement with a social and eco conscience – using inexpensive, understated and often underutilised materials”. This is the concept that is fully embodied in the DAAA Haus gallery/workshop, which hosts both the DAAA interior design and architecture studios, and a continuously changing gallery of materials and products.

HOMEWORKS EXPLORES THE ELEMENTS THAT HAVE CREATED A SURGE IN THE TWO VERY DIVERGENT STYLES – MID-CENTURY MODERN AND MEDIEVAL Words: Lisa Borain
robably one of the most influential television period drama series of all time, Mad Men focuses on the business of Madison Avenue advertising agencies from the 1960s moving through to 1969 by the final season.
The colour palette of the look is timeless: a multiple of muted teals, blues, burnt oranges, mustard yellows and olive greens set against walnut and teak browns, deep leathers and plaid wallpapers.
The series has brought mid-century design back into the mainstream, triggering a widespread enthusiasm for vintage design with its covetable stage sets.
The mid-century style is as much about the sultry mood as it is the visual style, which means that the lighting is paramount overhead lighting to a lower level of intensity and lamps dotted around a room to provide islands of light. This way, warmth and cosiness is brought to the atmosphere.

Cleverly, the show includes Scandinavian furniture to create a more authentic look, put together by set designer Amy Wells. The designer says, “I want to make Mad Men look real, as if the people really have those pieces. It’s important that they be imperfect, not iconic. A lot of people had Danish Modern at the time because it was reasonably priced, and much of it still exists because it was so well made”. The combination of designs on the sets works because of the contrasts in shapes and tones. For instance, curved teak chairs with sharp-angled or cube-shaped suites; warm, natural woods next to cold, metal cabinets.
Game of Thrones is a fantasy drama television series set on the fictional continents of Westeros and Essos at the end of a decade-long summer. Although Game of Thrones is a fantasy series, the settings are reminiscent of the Medieval era with some of its filming even taking place at Mdina City Gate and Valletta, amongst other local sites. With so many backdrops of Malta’s older homes having the ideal setting with high ceilings, stone and arches, 061

GAME OF THRONES: The backdrop, arches, and doorways take on a ‘pointy’ look, and symmetry is widely used in proportion to balance out the space. Walls and floors adorned with dramatic stone or rich wood accents are the basis to this look. the dramatic Medieval look is not difficult to achieve. The era stretches from the 12th century Gothic period, up to the beginning of the Tudor period in the late 15th century. Heavily influenced by religious themes and cathedral architecture, this style is largely about setting a moody and fairly dark atmosphere; its modern interpretation achieving a warm and comfortable feel. In terms of the backdrop, arches, and doorways take on a ‘pointy’ look, and symmetry is widely used in proportion to balance out the space. Walls and floors adorned with dramatic stone or rich wood accents are the basis to this look. Dark ranges of wallpaper with interesting patterns will help bring in the style, as well as squared dark wood panelling or chunky, vertical battens on walls above a waist-height moulding. The
ultimate Medieval room is actually all-stone, which can easily be achieved in old Maltese houses. A prominent stone fireplace and can go a long way to striking a castle vibe. PRE-HUNG AND SLAB DOORS
The difference between them is that pre-hung includes the jamb (the top and two sides of a door or window frame, which contact the door or sash) and frame, while slab doors just include the door itself. Pre-hung doors are easy to install and have a unified appearance. Slab doors are less expensive and also allow you to use the existing jamb and trim.
FLUSH DOORS
Flush doors (flat-faced with a variety of door facings) and panel doors (doors with square or rectangular patterns) are either constructed out of solid wood, hollow core or solid core. It’s clear what solid wood is, as it’s exactly as its name implies – while hollow core has a corrugated cardboard between the stiles and rails and is made up of an interior frame of stiles and rails, covered by a skin of veneer or hardboard, plastic, or metal. It’s lightweight and better for low-traffic areas. Solid core doors are constructed from particleboard or fibre core materials, giving them solid weight that insulates noise.
SOLID CORE
Solid core offers the appearance and durability of solid wood at a more affordable price. It’s available with smooth or textured finishes, including a wood-grain surface that imitates the appearance and feel of a solid wood door and it muffles sound better than hollow-core doors.

HOLLOW CORE
Hollow core doors are less expensive, lighter and easier to handle than real wood doors. To make sure the doors are being installed properly, first determine the required door swing and handle placement. If you’re facing a door that swings toward you and the handle is on the left side, it is a left-hand door and, if the handle is on the right, it’s a right-hand door. The opposite is true if the door swings away from you - the handle would be on the left side in a right-hand door and vice versa.

When you’re purchasing doors for a new area, measure the width of the doorway at the top, middle and bottom and use the smallest measurement. To figure a rough opening size, add 5cm to the width and 7.5cm to the height.
BIFOLD
Bifold doors are a good option for smaller rooms that lead off of the living or dining room. They can either fold back to one side of the opening, or fold back to both sides of the opening.

Mention the colour purple in nature, and lavender is sure to come to mind. This hardy and undemanding Mediterranean plant has one of the most striking hues in the plant kingdom, but colour is only the first of its many positive aspects. Melina Scodanibbio explores the plant that holds medicinal, culinary, cosmetic, healing, analgesic, antibacterial and antiseptic properties Words: Melina Scodanibbio
he potent herb lavender has been used traditionally for centuries: the earliest documented use of lavender dates back 2,500 years. The Egyptians and Phoenicians valued it as a perfume and for mummification, while for the Greeks and Romans it was a precious ingredient for herbal baths. The name lavender in fact derives from the Latin verb lavare, to wash. In medieval and Renaissance times its disinfectant, insecticidal and deodorant properties were well known, and it also became a popular aphrodisiac. In the 1600s lavender was introduced to England and it is said that it could be found in all its forms in the households and gardens of both Queen Elizabeth I and Queen Victoria. In his book The English Physician, Culpeper (1652) described lavender simply: “This is so well known, being an Inhabitant in almost every Garden, that it needeth no Description.�

Even with so many virtues, lavender is remarkably easy to grow, as long as a few basic requirements are met. A native of the Mediterranean, this drought, heat and wind-tolerant plant thrives in a sunny location in sandy, well-drained soils. It dislikes high humidity and damp soil, and is best kept away from thirsty lawns and other moisture-loving plants. Once established, it requires little or no water and a once-yearly application, in spring of slow-release fertiliser. Because of its fragrance, lavender is naturally pest-free and is often used as an under-plant to protect less-resistant species, such as roses. The correct shaping and pruning of lavender shrubs is essential to maintain the plants compact shape, and to promote re-flowering, as well as a longer life. The first pruning is carried out after flowering when the blossoms have faded, by shortening the branches by approximately 8 cm, and giving the whole plant the classic rounded shape. In the second pruning, due in March, branches are cut by about 10-15cm, which prevents the plant becoming leggy and woody, and promotes the growth of new lateral branches. Never cut lavender down to the ground.

Of compact habit, it is used as an informal hedge and at the front of the border - popular varieties include Hidcote and Munstead. English lavender produces the highest quality essential oil, used in aromatherapy and high-end perfumes, and its delicately sweet scent makes it perfect for culinary use. Lavandins, (Lavandula x intermedia) are hybrid cultivars of English lavender and Spike lavender (L. latifolia). They are typically taller and are suitable as specimens or hedges, or at the back of a border to give movement and height. This is the most widely grown species for oil extraction, higher yielding than English lavender, but producing a lower quality oil used mainly for soaps, detergents and room fragrances. Lavandula dentata, also known as French or toothed lavender, has a richly aromatic foliage, but less scented blooms. Extremely floriferous, this highly ornamental plant blooms continuously for long periods, as long as spent flowers are removed.

One of the most spectacular species is Spanish lavender (Lavandula stoechas), characterised by large, colourful bracts, which protrude from the flower heads and resemble ears. The blooms have a sweet honey fragrance and taste, which is easily masked by the pungent smell of the foliage, faintly reminiscent of camphor and Eucalyptus. This lavender looks best planted as a specimen or in small groups, and flowering is prolonged by frequent deadheading. With their silvery grey foliage and vibrant flowers, lavenders look great combined with all herbs, roses, grasses and plants such as Helichrysum, Spartium, Santolina. DIFFERENT FLOWER TYPES LAVANDULA ANGUSTIFOLIA, KNOWN AS ENGLISH LAVENDER This type produces the highest quality essential oil, used in aromatherapy and high-end perfumes, and its delicately sweet scent makes it perfect for culinary use. LAVANDULA X INTERMEDIA Hybrid cultivars of English lavender and Spike lavender, this type is typically taller and more suitable as specimens or hedges, or at the back of a border to give movement and height. This is the most widely grown species for oil extraction, higher yielding than English lavender, but producing a lower quality oil used mainly for soaps, detergents and room fragrances. LAVANDULA STOECHAS, KNOWN AS SPANISH LAVENDER Characterised by large, colourful bracts that protrude from the flower heads and resemble ears. Blooms have a sweet honey fragrance and taste, which is easily masked by the pungent smell of the foliage, faintly reminiscent of camphor and Eucalyptus. This lavender looks best planted as a specimen or in small groups, and flowering is prolonged by frequent deadheading.

BACKED HALF BLACK SHELL MUSSELS Ingredients ½ black shell mussels 1 plum tomato, seeded & diced ½ yellow onion, diced 6 basil leaves, chopped 1tbsp extra virgin olive oil 1small mozzarella buffola dash beetroot juice dash balsamic glaze baby red chard leaves salt & pepper

pork mince bacon, chopped peppers, onions, garlic, apple, raisins, finely chopped coriander seeds, crushed
Method Mix together the chopped tomato, onions, basil and olive oil. Season to taste. Lay the mussels on a baking tray. Spoon the tomato salsa over the mussels. Slice some fresh mozzarella over and bake in the oven for six minutes at 175C.
Method Chop the ingredients and then mix in a bowl, adding in the chicken last. Refrigerate for approximately three hours before cooking. Place on skewers and grill on a low flame until preferred intensity. Season with the chopped coriander and drizzle with some olive oil.

Marinade Ingredients 2 garlic cloves fresh coriander 10g 1 lemon grass 5g curry powder sugar 5g 30ml natural yoghurt 50ml coconut cream salt
Garnish the plate with some drops of beetroot juice, balsamic glaze and baby chard leaves.
Method Prepare the filling by putting all ingredients together in a bowl and mix well. Place the pork loin flat on a clean surface, season, and put a spoon of the filling in an end. Then roll and place in the refrigerator to set. When set, take a hot pan and sear it on all the sides, finishing off in a hot oven for approximately ten minutes or until cooked. When done, leave to rest and carve in half to serve. Add sour cream to taste, tomato salsa and some micro leaves to garnish.
BILL’S WINE RECOMMENDATIONS: “Choosing one wine to accompany the cornucopia of flavours you will find in this varied compilation of meze will be almost impossible, so your best option is to select easy drinking wines that will accompany a wide range of flavours. To keep everyone happy I’ve opted for a dry fruity white 2013 Classic Collection Landini Vermentinoan award winning medium 2013 Pjazza Regina Rosé, and a soft, silky, medium bodied red 2013 Classic Collection Marenzio Merlot. Chill the white and rosé down really well and don’t serve the red too warm.” 089

VEAL SKEWERS WITH SPECK
Ingredients 150g minced lamb shoulder garlic, crushed 5g 5g ginger, minced 10g coriander, chopped ground cumin and 5g curry powder 20ml natural yoghurt rosemary sprigs tomato salsa Method Place the lamb mince and fresh ingredients in a bowl. Toast the dried spices under a grill or in a hot pan until the aroma is released. Add with the mix, plus salt to taste. Mix well and form in approximately 60-gram patties. Place in the refrigerator to set.

After an hour, glaze with olive oil and grill on both sides for approximately two minutes on each side, or until cooked. Place some rosemary sprigs in the koftas and serve with tomato salsa.

Method Cut the veal loin length-wise into a thickness of five centimetres. Roll it in cling film and place in the fridge to set. Put the speck next to each other for the length of the loin; brush it with mustard and salt & pepper. Put the loin on the speck and roll. Place in refrigerator to set again. Remove the cling film and put skewers in between each other approximately one centimetre, then cut into individuals. Grill on both sides and serve.
Method Remove the stem from the cultivated mushrooms. In a frying pan cook the onions, garlic and porcini. Drain any liquids. In a food processor, blend the porcini mix with the egg, apple wood and ricotta cheese. Add the chives and season. Stuff the hollow mushroom caps with the porcini blend. Sprinkle the grated Parmesan over the top, and bake in the oven at 175C for eight minutes. Place the mushrooms on a plate and garnish with the marinated olives and fried celery leaves.
WILD BOAR & PINEAPPLE ON A STICK Ingredients wild boar fillets 300g cubes 300g fresh pineapple cubes Meat Marinade Ingredients 20g honey 20g maple syrup 6 juniper berries, crushed 20ml bourbon whiskey 5g wild thyme 20ml extra virgin olive oil Method Place the wild boar cubes in a bowl. Mix the marinade ingredients in a bowl and whisk well. Add the meat and mix further. Refrigerate for at least two hours. Then take 15-centimetre skewers and place neatly with the pineapple. Flame-grill on a low heat and serve when well done. Optional to serve with sweet sauce or a honey dip.
