The outdoor living special features the latest in furniture, lighting and barbecues, and the homes all have outdoor spaces that are stylish but also relaxing. There are also planting ideas to take your garden beyond just a hard landscape and make it somewhere full of colour and texture. Whether you would want it to resemble a quarry is questionable but this year’s winning garden at the Chelsea Flower Show was inspired by a Maltese quarry and the story behind its making is fascinating – I hope you enjoy it, and the rest of the issue too!

Formerly an architect, today Norbert Francis Attard is a self-taught artist working across a number of disciplines including sculpture, photography, video and installation, using them to explore places and their memories. His work has been shown around the world. A founding member of Start, a group of Maltese contemporary artists, he is currently director of GOZOcontemporary, an art space offering self-directed residencies to international and local artists on the island of Gozo.
I live..
in Gharb, Gozo, which has been my home since around 1980. I spent over two decades developing and designing the house where I also have my studio and gallery. I also live in Valletta which has been part of my entire life as I was brought up by my grandparents in the same apartment, in Strait Street, that I live in today. Since 2010, I have also been based in Berlin, Germany, which I now regard to be my second home away from Malta. As I constantly move from one place to another, I consider myself to be a nomad at heart. I certainly am when it comes to my work because constant change and development throughout my career as an artist is the norm. After several years I tend to need a change of direction - I hate the idea of long-term repetition; I need to provoke myself with new challenges, new knowledge, and the thought of reinventing myself is something I look forward to.

the chair I sit in when I am in front of my computer at home. The computer and the comfortable chair on castors become one when I am working on a computer. I am fond of the ribbed chair I have in Berlin because it looks like a Ray & Charles Eames style high back executive office chair they designed in 1958. The beauty of this chair is that it looks both classic and contemporary at the same time. It’s clean and curvilinear lines are so appealing to the senses.
I make my coffee with…
a typical coffee percolating machine but mostly drink instant coffee because I am always in a hurry. However, I prefer
waking up early, as early as 6am, even earlier if I need to catch the 6am ferry from Gozo. My recent years have been occupied by a personal project, the contemporary art gallery, Valletta Contemporary, together with its café and gallery shop. I work on this project daily, spending a lot of time on site supervising the works. Also important is the META Foundation which will run the gallery - developing the organisation, especially applying for funds, occupies a lot of my time. My present challenge is not so much the venue but the ambitious events program, and its funding, which needs to be organised at this stage. After a long day of different commitments, I usually go back home to rest before facing all my correspondence which normally takes place in the evening before and after dinner. If I am lucky, I watch a film, the only activity that makes me unwind.

My favourite artists include Lucio Fontana, Jean Michel Basquait, Yayoi Kusama, Ed Ruscha, John Baldassari, Anish Kapoor, Louise Bourgeois, Christo, Bruce Nauman, Bill Viola, Mona Hatoum, Bridget Riley, Sol Lewitt, and a hundred and one others; and A canvas from Joe Fontana’s those artists who ‘Concetti spaziali’ series had a direct impact on my work such as Joseph Beuys, Ai WeiWei and Ólafur Elíasson. I particularly love conceptual and minimal artists (Marcel Duchamp, Sol Lewitt, James Turell, Robert Irwin, Donald Judd, Ellsworth Kelly, Agnes Martin, Pedro Cabrita Reis, Michael Sailsdorfer and many more) and Michael Heizer’s Levitated Mass hence their early modernist inspirations such as the Russian Constructivists (Vladamir Tatlin, El Lissitzsky), the German Bauhaus (Walter Gropius, Mies van der Rohe) and the Dutch De Stijl ( Piet Mondrian, Theo Van Doesburg, Gerrit Rietweld). I also admire the first artists of Land Art such as Michael Heizer, Robert Smithson, Richard Long and Walter de Maria.

Some of these are the Great Pyramid of Giza; the Great Wall of China; Petra, Jordan; Borubudur, Indonesia; Teotihuacan, Mexico; and the Parthenon. I also have an affinity towards high rise buildings and some I have visited include The Empire State Building, New York; The Petronas Towers, Kuala Lumpur; Burji Khalifa, Dubai; Taipei 101, Taipei; and the Oriental Pearl Tower, Shanghai. Contemporary art museums are always on my list, a must when I am travelling. One I still enjoy visiting is Tate Modern in London, designed
mostly proud of the cultural project, ‘Valletta Contemporary’, which I am hoping to open next year. Apart from being the founder of this project, I am also the architect, designer and project manager, and this has given me the opportunity not only to come up with the overall master plan but also to go into greater detail with every part of its design. Integrating and maximising the three separate warehouses has been the greatest challenge. This project is especially dear to me because it will be my legacy to Malta.

My favourite interior design classic is…
Le Corbusier’s LC4 chaise longue, and LC1 armchair, both designed in 1928 - they represent the total concept of form and function, creating a perfect balance between pure geometry and ergonomics. Le Corbusier still remains one of my all time favorite architect/designers.

are a number of art installations and public art projects I created over the past 20 years. A permanent piece I am still fond of is ±1.618034, designed and constructed in concrete, in Kamiyama, Japan, in 2004. However, I am

INTO THE NIGHT GARDEN One of the most magical times in the garden is as night falls. Make the most of it by creating an alfresco area that allows you to enjoy this time outside. Introduce soft lighting through candles and lanterns. Choose plants with luminous pale blue and white flowers as they will almost glow in the dark - white cosmos (1) (Cosmos bipinnatus) and Nicotiana (2) and the blue Agapanthus Africanus (4). Also plant for fragrance with flowers such as Zalusianskya ovata, a highly scented stock, as well as roses, lavender and honeysuckle. 021

and the WINNER IS…
The Chelsea Flower Show is arguably the most prestigious garden show in the world, and the accolade of Best Show Garden one of its highest awards. This year, the stunning recreation of an ancient Maltese quarry, by James Basson for M&G Investments, was the winner. HOMEWORKS speaks to the major players to discover how it came together… Photographs: Frank Muscat

wo imposing pillars of limestone tower over scattered stone blocks, wild plants growing up between and around them, along with gnarled old trees. Within 200m2 of space, 11 typically Maltese microclimates were recreated, from the scrubby garrigue to evergreen woodland and the coast. It was not pretty – but then it wasn’t meant to be. Instead James Basson from Scape Design wanted to recreate the look and feel of an ancient quarry he first saw when visiting Malta three years ago. ‘We are particularly obsessed with abandoned quarries for their excellent study of the play between extreme hard mineral spaces and the way nature comes back into them,’ explains Helen Basson who was part of the design team that is based in the south of France. ‘In Malta, the quarries are
particularly graphic - scored staggered grids are engraved on the walls and the array of blocks on the floor in a seemingly military fashion. They are cut in the same way over centuries creating cathedral-like spaces at once contemporary in nature but traditional in technique.’ Work on the garden began back in 2015 when the first plans were drawn up. To recreate the quarry’s hard landscape, 1200 different sized and textured pieces of stone were used. These were sourced and worked on by Halmann Vella and the entire project was incredibly challenging. ‘We had to prepare all the stone here in Malta to the specific size, deliver it to the UK safely without doing any damage and finally put it in the proper place of the puzzle with minimum cutting permitted on site,’ says Josef Zammit, contracts manager at Halman Vella.

‘We had to keep in mind that our factory was 3,500 kilometres away and that if something went wrong with any particular stone it could be very detrimental to the final result.’ An initial visit in autumn 2015 resulted in a brief that included drawings which showed the dimension and levels of the garden as well as the required look of the end result. Halmann Vella then developed these into very detailed structural and architectural drawings that also explained the textures and surface finishes to achieve the look required. Also necessary was a statement on how the garden would be installed in London so it could gain the various Health and Safety approvals. Once the go ahead was given all the stone was cut, finished and dry laid in the company’s recently commissioned stone processing facility in Hal Far. ‘Every stone was then given a unique reference and placed in custom-made timber boxes for the journey,’ says Hugh Vella, director of operations. ‘All boxes were referenced to make it easy during the installation in the UK. Boxes were loaded on four 12-metre long articulated lorries in Hal Far and delivered to Chelsea on different days related to the installation program set months before.’ In London, the work began with the excavation of the site, followed by the foundations which included six-metre deep piles that were required to take the stone towers. A team from Halmann – six installers and two stone finishers – travelled over to help construct the garden. ‘Our first challenge was the installation of the towers which took us a day each to fully erect,’ says Josef. ‘The other was that the cladding of the pool walls, deck and flooring had specific levels that had to be respected. The stone installed was of a significant dimension so every piece was put into place using proper lifting equipment.’ At the same time, the plants being used in the garden

were also being sourced. As well as Halmann Vella, in Malta James Basson also got in contact with local botanist Stephen Mifsud to help choose plants that would represent the Maltese landscape, and more than 150 feature in the garden. ‘We were fascinated by the number of microecologies found within a small geographical area, and through the quarry garden we could demonstrate them all in one space. Ferula communis for its brilliant display in May on such a magnificent scale and its place in Maltese history. Ancient carob and pistacia trees to show the suggested age of the garden and the climatic conditions that these trees are exposed to - wind, low rainfall etc - to give them a real Mediterranean feel. As well, the carob is a symbol of ecological protection as we understand they are protected as no urban development is allowed on a plot of land that has a carob tree on it so preserving the natural land. Finally, we chose a host of endemic plants such as Euphorbia melitence, Limonium melitense, Helichrysum melitense and Matthiola incana melitense to highlight the extraordinary natural biodiversity of Malta.’ The plants needed permission from the government to be exported – some have never been seen outside of Malta – and they have now been gifted to the Chelsea Physic garden and Kew Gardens. ‘Some of the plants were posted over in seed form to be grown in Italy and southern France,’ says Stephen. ‘Others, such as the perennials and trees, were from nurseries such as the Gaia Centre.’ The quarry garden not only won but was also one of the most talked about, its bold look a challenge to the more conventional gardens around it. Says Helen Basson: ‘ ‘Man, by working with nature and encouraging native species that thrive in certain conditions can create a garden that is a harmonious, sustainable and ecological solution that will stand the test of time and is sympathetic to the natural climatic conditions,’ says Helen Basson. ‘All the while creating a space that one can feel at peace in.’

hen Danny Scanlon agreed to buy a home in Malta, he had just one condition – he wanted a view. ‘I wanted to be able to sit in the shade and look out,’ he says. And that he certainly has. The house he and his wife, Eve, have in Gozo has a wonderful view to Ta’ Pinu, the shrine’s walls and towers looming out in the flatness of the surrounding countryside. This vista can be spied from the moment one enters the house and from almost all of the rooms, the house orientated to make the most of it. But it wasn’t always like this. The house, parts of which date back to the 1500s, had been split in two a century or so ago and the couple owned just half of it, what is now the master bedroom and the area beneath, plus a little land outside. Still, it was a house they could afford and it came with a portion of a view. The couple, from England, bought the house in 1987, not long after Eve’s father died, and in memory of him. He, and she, had fallen for Gozo many years earlier when he bought a house there, and Eve has many happy holiday memories. A primary school teacher, she and Danny, an architect, planned to retire here and over the years spent increasing amount of time in their Gozitan home.

Then, five years ago, the couple was able to buy the other half of the property and return it to one large house, along the way creating the kind of home they once could only dream of. However, it meant many months of major work. ‘We had to start all over again,’ says Eve. ‘Everything we had done before, from the plumbing to the layout, did not work when it became one house again.’ The couple lived in one room while the 18-month renovation went on and as Danny is an architect, and one experienced in working on historic buildings, they were able to design and manage the project themselves. The layout was re-configured with walls knocked through to create spacious and airy rooms, and original arches, beautiful in their symmetry, restored. ‘Instead of one, we now have three arches that lead into courtyard; and off the kitchen, large arched windows that allow a lot of light in,’ says Eve. ‘We exposed all the walls again and
in so doing discovered that one wall was unsupported,’ says Danny. ‘We re-pointed the walls with lime mortar which is more suitable for buildings of this age.’ Underfloor heating was installed downstairs to ensure that in the colder months the house feels ‘cosy’. Outside, the original pool was demolished, replaced by an infinity pool set within a smart terrace that makes the most of the views. To ensure the house is energy efficient, air-source heat pumps are used to heat the water and there are photovoltaic panels on the roof. Inside the furniture is classic but with numerous design twists that give the house its own distinctive style. ‘We like the warmth of older furniture and adding colour through fabrics, wall hangings and paintings, as well as the things we have collected over the years,’ says Danny. Adds Eve: ‘I like bling which is why there’s a lot of sequins and beads, as well as lots of fabric!’ Much of the furniture and accessories is

what they had when the lived in the UK, transporting it all over in a 40ft container. To this they have added local pieces and materials such as traditional Maltese tiles. In acquiring the other half of the house, they also gained a substantial amount of outdoor space and as well as the courtyard with its old-style steps and balustrades, there is now
an expansive modern terrace and pool area which is where the couple spend most of their time. Now retired and living in Gozo permanently, on summer mornings it is where they take their first coffee of the day, and come the evening, they retire here, a cool drink in hand, all the while soaking up the view – just as Danny imagined, all those years ago.

hen Sean Cassar of Design Hub Malta was called in, this 1970s Maltese villa was in need of some serious work. ‘It was tired and dated and the spaces didn’t work in the way that the clients needed it to,’ he says. ‘Everything needed to be re-done.’ And so he set to work to make the house fit for purpose. ‘Using gypsum and soffits I was able to sculpt something interesting that allowed classic and modern furniture to work harmoniously together,’ he says. He reconfigured the lighting too. ‘I played with different functional and ambient lighting, placing them in a schematic layout that made them more interesting to look at.’ He used materials creatively. The flooring was inspired by the original staircase which is made of beautifully cut marble. ‘It took me about two months to match it as marble quarried 30 years ago is different to the stained marble we have now,’ says Sean. ‘But I managed to get that link right and from that point used marble that was similar; a white with a grey vein, and grey with a slightly mottled white.’ The marble is teamed with engineered parquet in a warm shade of brown, this combination emphasised by an elegant rectangular column that’s wrapped in alternating marble and parquet for a beautifully stylish look. The home’s main living area is a large open-plan space that has now been zoned into three areas. A large relaxing lounge is dominated by an expansive corner sofa that creates a comfortable and relaxing vibe. Just behind it is an impressive kitchen which shows Sean’s flair with lighting - a lit frame hangs over the stove for a creative take on task lighting, and is teamed with downlighters over the breakfast

Living room: linked but out of sight is a more formal living room, the combination of textured wallpaper, subtle lighting and rich fabrics giving it a creating a space that feels calm and private. The pairing of engineered parquet and marble continues in here with the marble top coffee table
bar along with recessed lighting. On a slightly raised platform is the more formal dining area, the space given further autonomy by parquet flooring and by the large pendant circular lampshades which add a dramatic touch. Upstairs too, Sean recalibrated the way the rooms worked and today there’s a luxurious feeling of space with a large bedroom and ensuite bathroom complemented by his and hers dressing rooms. The expansive exterior is as important to the home’s upscale vibe as the interior. Here, the garden and pool have been redone with travertine, the stone treated in many different ways to create a palette of different looks
that are pleasing to the eye, but also safeguard against slipping when wet from the swimming pool. ‘The stone has been heavily brushed, combed and hammered, to combine functionality with aesthetics,’ says Sean. Completing the outside is a striking outdoor fireplace that breaks up an expanse of wall and creates an outside living room that’s perfect for alfresco entertaining when the nights start to turn chilly. ‘The homeowners weren’t sure about it, and at the start the concept was a bit of a joke,’ says Sean. ‘But now that it is done, it works.’ As does the rest of the house – stylishly.

ntil they settled in Malta, the expat homeowners of this property were nomads, roaming the world. Over time the couple had tried to settle down – bought houses and sold them again, rented others. They had seen, says one half of the couple, literally hundreds of homes but rarely had they seen one that they loved straightaway. Which is what makes this place so special. ‘As soon as we walked it we knew,’ says the homeowner. ‘It felt right.’ This is despite the fact that the four-storey house was little more than a concrete box with no doors or windows, let alone plumbing or electricity. ‘We bought it in shell form and although there was nothing there, it felt right,’ he explains. ‘The layout worked and it was able to fit in everything we wanted. We knew it would work for us.’ And it does, both in the configuration and the look, thanks to a collaboration between the couple, architects MJMDA, interior designer Nathan Martin and Alan Debattista from Chillis Chilli. It started with Nathan. ‘We were at the house
just after we bought it and he knocked on the door, well not the door because there wasn’t one – the concrete, and told us he could help us turn the place into a home,’ says the homeowner. Nathan introduced the couple to MJMDA, a multi disciplinary firm of professionals, and together over some weeks a detailed plan was drawn up to transform the shell into a stylish home. ‘We wanted a modern, minimal look that’s clutter-free but not cold,’ says the homeowner. The design opened up the house, creating a line of sight from the front door right down to the end of the garden. Another created an axis that links the kitchen with the deck, the pool steps and finishing with the overhanging pool deck. ‘Both give the house a harmonious feeling,’ says the homeowner, who took time away from his job to project manage the final six months of the project. A key part of the look of the house is the use of wood and this is where the third part of the team comes in, Alan Debattista of Chillis Chilli.

He was responsible for the extensive amount of stained oak cladding that gives the home its warm look and feel. The work also included wooden soffits as well as lighting that was incorporated into the woodwork along with the creation of hidden storage that ensured the sleek look of the house was maintained. Outside was also a blank canvas but today is an outdoor space that looks chic. ‘It works really well too – there are lots of different places to sit and eat and if we feel a bit hot, we just jump in the pool for 10 minutes,’ says the homeowner. In buying the house the couple who have three children, wanted some stability and this they certainly have. ‘The house lives really well,’ says the homeowner. ‘Just as we knew it would.’ 052

Beneath the stairs is the entrance to the old storage cellar beneath the house, and the stairs themselves still have their original stone treads and risers clad in traditional patterned Mallorcan tiles. The rustic wooden dining table created by a local artisan is surrounded on two sides by built-in seating along with wood and cane chairs. Bedroom: one of many bedrooms, this poolside room located in an old outbuilding close to the house, features a sculptural built-in bed and a private en suite bathroom. The rustic floor finish has been handmade by laying small pebbles in concrete. The metal light fitting adds a decorative touch.

‘Our first choice is always to work with local resources and available materials’
discreet entrance gate provides access to Ca’n Busquera, a renovated traditional stone townhouse in Sóller, a picturesque village on the Spanish island of Mallorca. Inside, Oro del Negro and Manuel Villanueva of More Design, a local design and architecture practice based in the nearby village of Deià, worked with natural materials to create a wonderfully relaxing look and feel. Traditional existing materials have been left in situ wherever possible and have been combined with natural, local materials whenever elements are added to a space. ‘Our first choice is always to work with local resources and available materials,’ says says Del Negro. This can be seen in the rustic wooden floating shelves in the kitchen/dining area, distressed wooden cupboard doors and beautiful poured microcement floors.
Up a short flight of stairs – with original stone treads and with risers and wall edges clad in traditional Mallorcan patterned tiles – is the living area where the furniture, classic in style, has been given a casual feel by being covered in textured white linen. Further up the staircase are the private spaces which have gorgeous vistas of the garden below. Outside the expansive garden, swimming pool and outdoor living area sweep the eye out towards the towering Tramuntana mountains beyond. The design process here began with careful attention being given to the hard landscaping in the garden, with the intention of carefully organising and ‘breaking up’ the large area. Across the space immediately in front of the house, rough cobbles have been used, and have mostly been left without full grouting so small, hardy groundcover plants can ‘invade’ the area, anchoring

The outside: the garden has been broken up into different zones, each of which offers a different experience. This is a view back towards the house through the archway that leads to the small citrus orchard at the bottom of the garden.The inviting rectangular swimming pool is wonderfully deep and it has a pale grey mosaic interior. The pool is edged with large, very slightly raised slabs of natural stone Alfresco dining: the outdoor dining area features a built-in table with a natural stone base and cast concrete top; the table is flanked on two sides by built-in benches topped with canvas seating pads, and on a third by a simple wooden bench The garden: the view from the first floor of the house takes in the naturally inspired lines of the hard landscaping in the outdoor area, as well as the sweep of the Tramuntana mountains beyond. The focal point of the garden is the inviting swimming pool, while the poured concrete and hand-laid pebbled areas, as well as the planting and decorative pieces such as the fountain, work together to create a harmonious and welcoming exterior space

Old stone pillars have had beams placed atop and between them, and creepers are already speeding the way up and onto these supports The large rectangular salt-water swimming pool is the focal point of the landscaping. Edged with wide textured stone slabs, it is contained at one end by a low stone boundary wall, beyond which is a small citrus orchard that can be accessed through an archway at the end of the garden. On one side, a small patch of lawn softens and greens the outlook, while behind it a tall hedge of oleander
and bamboo provides privacy. The area around the pool has been alternately finished with smooth poured concrete paving and hand-laid river pebbles. Softly textured underfoot – they almost massage bare feet when walked on – the pebbles add visual depth and interest. And a lovely texture and a touch of almost marble-like shine (especially when it’s wet) have been created in the concrete finish too. Together, both the inside and the outside create an allround mood of stylish serenity.

ituated in an area famous for its orchards, the garden revamp respected and emphasised the spirit and formal structure of the existing garden. The design intent was to highlight this formal character while reinterpreting it in a modern manner. The structure of the garden is determined by the existing hard landscaping as well as a grid layout of citrus trees - only two trees had to be repositioned to fit in the grid. Working around these predefined elements, the main goal was to soften the rigid lines with a simple design and a rich planting palette. The client's only brief was the inclusion of some turf as an extension of the pool deck and a herb garden. Other components of the design are a rectangular flowering lawn set in an area of gravel and large bespoke square planters in lava stone. Three of these planters contain the herbs and another two are overflowing with soft textured plants behind the lawn. Since the evergreen structure is created by the trees, the planting focused mainly on shrubs, grasses and ground covers. The planting style is mainly informal using soft textures, loose

shapes and subtle colours. An exception to this are clipped forms of the 'cloud hedge' in one of the terraces - here the rounded shapes of Myrtus and Westringia are complemented by the pointed leaves of the Agave attenuata. By contrast, the higher terrace is filled with soft grasses, the occasional burst of purple blooms and silver leaved Artemisia. The new planting focuses on cool tones with white, silver and purple being predominant. Along the garden's main axis, white Iceberg roses, Agapanthus and Erigeron are planted as a border to the path. The end result is a balance between existing and new, formal and informal; a happy mix between a Tuscan and a contemporary Mediterranean garden. It is a space with different vistas and spaces within the garden for the whole family to enjoy. The homeowners revel in the discovery of the flowers and colours throughout the seasons, while the children play on the lawn or are entertained with interactive elements such as the water features and tactile plants or flowers with scents they can respond to.
The existing garden was untended and mostly arid with the exception of the citrus trees. The soil had to be regenerated in preparation for the new planting and the water channels and paving restored and repositioned

HW OUTDOOR FURNITURE Durable synthetics in the form of resin weave and marine-grade polymer offer the look of natural materials coupled with a greater resistance to weather and also tearing, fraying or breaking. Furniture with cushions make for a softer, more comfortable experience. When looking at fabric, aim for ones that are designed for outdoor use and resist to UV rays, moisture, mildew and staining. The best is solution-dyed acrylic; spun polyester with a UV-protective coating will dry faster but is less resistant to fading which is major consideration in the hot Maltese sun. While most modern outdoor furniture is weatherresistant, to extend its life, bring it inside as much as possible when not in constant use. This especially applies to fabric. If you don’t have a lot of room for storage, select furniture that folds away neatly.

TASK LIGHTING This is lighting that illuminates parts of the garden for practical reasons such as highlighting steps and changes in level and preparing and cooking food. LEDS commonly allow for recessed lighting in paving, decking and low-level walls. More design-centred ideas include LEDs set in decorative objects such as pots. Wall lights and spot lights that can be aimed at an area are effective ways of lighting a barbecue area. Low-level bollards are ideal for paths as they mark the edges of the path but also gently highlight the plants that border it.
ATMOSPHERIC LIGHTING Creating the right ambience is crucial to making a garden look and feel like an outdoor room and there are a variety of ways of doing it: Creating shadows: placing a spotlight or series of spotlights to light up a feature so that its shadow is highlighted adds interest and is a clever way of decorating a wall or fence. Illuminate statues as well as flowers and trees. Highlighting plants: uplighting architectural plants such as palms creates drama and style. The best way to do this is by using uplighters that are either ground-mounted, on a moveable spike or recessed into the ground so it diffuses light up through the plant to highlight it, but then fades as it goes into the night so you avoid any glaring halo effect. Glowing water: lighting water at night creates a magical effect. You can do this simply by floating tea lights in the water of a pond. If you have a fountain, use fully submersible lights that shine up from below and also cast a gentle light on the garden area immediately around it. If you have a large expanse of water, consider mirror lighting where a far object such as a tree or sculpture is illuminated by a spot-light so it is reflected in the adjacent pond or lake.

GOING PUBLIC The rise of Airbnb is challenging the traditional hotel industry with its informality and low room rates. New York hotelier Ian Schrager is hoping to challenge this concept with a new one of his own – no-frills luxury, what he calls ‘tough luxe’, combined with an emphasis on social activity. His new hotel, called Public and designed by Herzog & de Meuron, opens this month and features 367 guest rooms, two restaurants, three bars including a rooftop terrace, and a multimedia performance space that can be configured for film screenings
and theatre performances, talks and readings, art exhibitions and dance parties. ‘For some reason the hotel industry in general is in denial about Airbnb,’ says Schrager. ‘I think the only way is to come back with a stronger idea than Airbnb. LOBSTER & PEACH SALAD with Honey & Mango Serves 4 INGREDIENTS
METHOD
4 pc peaches
Pre-heat the oven to 175°C. Place the peaches on a greased tray and drizzle with honey. Roast for 8 minutes. Strain the juice and keep aside. Stone the peaches and cut into quarters and set aside also. Mix the peach cooking juice with the tarragon vinegar, chopped tarragon, salt, pepper & virgin olive oil to make dressing. Season the cooked lobster with the dressing and lay on the plates. Finish the plate with the diced mango, baby asparagus, mixed leaves and roasted peaches wedges. Drizzle the dressing over all the elements of the dish.

RICOTTA AND PEACH FILLED RAVIOLI with Viognier wine & Peach sauce Serves Serves 44
INGREDIENTS
METHOD
300gr pasta dough 500gr ricotta 1tbls chopped chives 1pc beaten egg 2pc peaches, stones 60gr each chopped white onion & celery 70ml Hautville Viognier wine 100ml vegetable broth 70ml fresh cream 100gr washed spinach Caviar for garnish Salt & pepper
To make the pasta, mix the ricotta with chopped chives and the salt & pepper. Roll out the pasta dough until it is 2mm thick, and cut into sixteen 10cm squares Place 1 small tablespoon of ricotta filling on one quarter of each pasta square. Brush the sides of the pasta square with beaten egg and close tightly to form and triangle. Repeat until all the filling is used. Store in the refrigerator on floured dish. To make the sauce, sauté the peaches with the celery and onion without colouring in a sauté pan. When soft, add the wine and reduce the liquid by half. Then add the vegetable broth and
this time, reduce by two-thirds. Add the cream and allow to simmer for 15 minutes. Then blend, pass through a fine sieve, season with salt & pepper and keep aside To serve, bring a pot of salted water to a gentle boil. Add the pasta parcels and simmer for 3 minutes Sauté the spinach in some olive oil till soft, then season with salt & pepper. To serve, place some spinach in the middle of the plate, followed by four pieces of ravioli per person. Finish with the Viognier-peach cream sauce and the caviar.

PEACH SORBET COUPE with Vanilla Roasted Peaches Serves 4
INGREDIENTS 1 tbls soft butter 1 vanilla bean 2 halves of a peach 250 ml water 150 gr sugar 1 tsp lemon juice 40 gr liquid glucose 300 gr white peach, stone and roughly chopped Mint for garnish
METHOD Split the vanilla seed and scrape out the seeds. Beat with the butter. Pre-heat the oven to 175°C and brush both peach halves with the vanilla butter. When the oven is hot, roast the peach halves for 12 minutes. Remove and allow to cool. Then cut into segments and set aside. To make the sorbet, place the water, sugar, lemon juice and liquid glucose into a saucepan and bring to the boil to create a syrup. Then add the chopped white peaches. Transfer the mix to the blender and blend for five minutes on high speed. Strain the mixture through a fine sieve into a bowl, and then place this bowl over a bowl filled with ice cubes, until the mixture has cooled. Once cool, churn it in an ice-cream maker until it becomes firm. Serve by placing two scoops of sorbet in a bowl, with a roasted peach segments and fresh mint.

‘‘ We had to take into account the climate and the light which is so bright - it was great fun working on the scheme as the colours are so vibrant and strong in Malta which look so good in the hotel’ Built in 1939, The Phoenicia was Malta’s first luxury hotel. It was lately acquired by London-based hotel group CampbellGray Hotels who undertook a complete refurbishment of the 136-room hotel to bring it up to the standard expected by today’s international travellers. This included not just the interior, but also replacing the existing swimming pool with a luxury hotel must-have, an infinity pool. Here, Peter Young of Peter Young Design describes the thought process behind the internal refurbishment and Konrad Buhagiar from Architecture Project explains how they created the new pool. Peter, how did you approach the refurbishment of such an iconic hotel? PY: The hotel is such a magnificent building we wanted to respect its heritage so we effectively gave it an extensive uplift to highlight the essence and spirit of the building. The designs draw inspiration from the building’s origins in the 1930s, a time of refined luxury and glamour whose distinctive style translates beautifully into the mix of classical/Art Deco architecture of the building today. We had to take into account the climate and the light which is so bright - it was great fun working on the scheme as the colours are so vibrant and strong in Malta which look so good in the hotel.
How would you describe the look and style of the hotel now? PY: The style stays true to the hotel’s early 20th-century origins, but nevertheless contrives to feel fresh. The Palm Court has changed quite dramatically as we removed the central bar which took up too much room. The new marble-topped bar is now positioned discreetly to the side as we wanted to open up the connection between the hotel's main entrance and the main terrace. There is now a clear visual link from the entrance through the Palm Court, restaurant and out on to the terrace with its fabulous views. The predominant colours here and in the restaurant are magenta and blue as we wanted the hotel to feel
modern but also elegant and chic. The fabrics sit perfectly with the furniture which in turn compliments the interior architecture in a classic contemporary way. The pink flower on the sofas was designed specifically for The Phoenicia and is completely unique to the hotel. The furniture is a mix of modern styles that all sit well together and within the building. They are all contemporary yet elegant and timeless so will not date. My particular favourites are the four ‘Push Me Pull Me’ chairs that sit at the entrance to the Palm Court. We have put them in all the CampbellGray Hotels as signature pieces and they always look fantastic, especially in the blue upholstery we have used here.

Konrad, what did you need to do before you could start work? KB: We had to obtain a permit! Since the pool area is situated in such a sensitive historical site, right in the middle of the 16th century landward fortifications of Valletta, we took great care to include the restoration of all the historical structures as part of the project. These included the placeof-arms, the spur and the caponier that flank the area. In addition to this, the geometry of the bastions and curtain walls determined the shape of the pool, as well as the form of the bar, changing rooms and showers and kitchen area so that the aerial view of the site today resembles as closely as possible the look of the area before the introduction of the deck and pool in the 1960s. What did you do? KB: Having taken the very sensitive historic nature of the site into consideration, the next step was to marry respect for the historic structures and environment with the commercial requirements of the hotel. In particular, great emphasis was placed on the need to connect

the pool with the view of the sea, the surrounding gardens and the very high bastion walls. This was achieved by building the pool with an infinity edge that blurs the edge between the pool and the sea with shallow steps running the whole length of the pool; this creates the effect of a beach that ennobles the horizontal surface at the foot of the bastions with reflections and linear shadows. What were the challenges in doing the work? The greatest challenge was to find a solution that combined the glamour normally associated with a hotel built in the 1930s, with all the Art Deco glitter and brilliance that adorns its façade and interiors, with the nobility and austerity that a 16th century war machine brings to mind. The overlap of these two atmospheres occupies a space that is aesthetically and visually very sensitive especially when considering all the paraphernalia, such as umbrellas and deckchairs, required in a pool resort. A neutral frame went a long way in achieving this marriage between the everyday and the mundane with gravitas and timelessness.

THE 1966 COLLECTION BY RICHARD SCHULTZ FOR KNOLL

IT MAY BE OVER 50 YEARS OLD, BUT THIS COLLECTION OF OUTDOOR FURNITURE, STILL FEELS AS FRESH AND AS MODERN AS IT DID WHEN IT WAS FIRST CREATED
esigner Richard Schultz is talking about how he came to create the iconic 1966 collection of outdoor furniture. ‘Florence had moved to Florida and she came up to a meeting and said that someone ought to design some decent outdoor furniture, something made out of materials that won’t rust and corrode. I held up my hand I said that I would do it, and that’s how it happened. There was no marketing research. It was a perfectly personal desire on her part to have some decent outdoor furniture.’ The Florence that Schulz is speaking of is Florence Knoll, the American architect and furniture designer who with her husband, Hans, founded Knoll Associates. Its roll-call of designers reads like a Who’s Who of modern furniture design with names such as Mies Van der Rohe, Isamu Noguchi and Harry Bertoia. Having been set the challenge, Schultz set to work but soon realised that what the industry considered to be ‘outdoor furniture’ was actually nothing of the sort—the iron and steel structures and protective coatings were prone to corrosion and their performance was not tested over a long enough period of time. It was also rather old-fashioned in look. ‘Most outdoor furniture in those days was designed to
look as if it was designed before the French Revolution with stamped-out metal, bunches of flowers and leaves,’ explained Schultz at the time. He worked with a small team, all of them working long hours. Schultz first created a frame - what he called a ‘mule’ – made of copper tubing. His team then improved upon this initial version with seamless aluminium castings which allowed the furniture to be put together quickly. The frames were then coated with multiple layers of plastic paint that was specifically designed to be both maintenance-free and rustproof. Finally, Schultz chose nylon-Dacron, a fabric which was cool-to-the-touch, quick-drying and porous. To accompany the seating, Schultz designed a series of tables, whose inset table tops were made of porcelain enamel and designed to drain pools of water that may accumulate. ‘We spent so much time refining it,’ Schultz recalled, ‘that’s why the furniture still looks fresh.’ The stream-lined style of the collection was greeted as a breath of fresh air by fans of modern design.
