This Issue. Welcome to the December issue of the magazine which is unashamedly full of the Christmas spirit; if you are currently in a ‘Bah Humbug!’ frame of mind, I hope that it helps inspire you to a merrier mood. If you’re looking for a Christmas theme for your decorations and table this year, then look no further than pages 025 - 029. Metallics are a strong current trend and here we have combined them with greenery and glass for a beautifully fresh look, as well as mixed them with black for a richly dramatic vibe. Also in the issue are ideas for lovely decorations to make with children and stunning DIY wreaths. Of course, Christmas is also about feasting and as well as recipes for a fabulous three-course meal - with a wine recommendation to match each dish - we also have cocktails to take you from Christmas morning to night. The magazine is also filled with plenty of Christmas gift inspiration too – everything you need for a stylish - and delicious - Christmas. Debbie Caruana Dingli comes from a well-known artistic family and is herself now one of Malta’s foremost contemporary artists. Mostly self-taught, her work encompasses portraits as well paintings that focus on political and social events
I live in… a townhouse by the church in Siggiewi. Red door, windows and balcony. I love Siggiewi. It is quiet and has no high-rise buildings. Life is slower here. I could happily remain in my little neck of the woods. The most useful item in my house is: definitely...Me! I live with sons, dogs and a cat here. I do virtually everything in the house, so I am the most useful item in the house. My broom is a close runner up. I make coffee with... Nescafe Gold Blend and milk. No coffee machine for me. I need 3 or 4 mugs a day to function, to walk straight and to think with some logic. I could not live without... My partner, my family, my dogs, close friends, the sea and my painting. Quite a wealth of precious things, there! I am inspired by... current events and very much by the way people treat each other. I had an exhibition called ‘Games People Play.’ It was all about relationships between various characters. I seem to people watch a lot. I had also tried to bring a human element into the immigrant saga when they began to arrive in boatloads and people had no idea how to react. When something is very much on my mind, as Daphne’s murder was recently....I will paint my feelings. My working day entails.... painting only after lunch. Everyday from 2pm till 5pm ...after coffee, of course. And chocolate filled mints for good luck., I often go on painting way past five if caught up but my dogs, Elsa, Tottie and Pepper, know that it is time for their second walk. In between walks they are very good and sit on the sofa patiently. Art can have an impact by... its bluntness, its spelling things out as they are; its ‘in-your-face’ effect. John Singer Sargent Artists are there to open up the eyes of the public, to make them stop, look and think. Artists that I admire most are... John Singer Sargent for his immense talent with a
brush – the mastery and freshness of his brushwork - and also Chaim Soutine, whose portraits I should see in London this December. I can’t wait! The public building I most love to visit... is the National Portrait Gallery in London, but also the [Musée d’]Orsay, the Prado, The National Scottish Art Museum, MOMA, The Peggy Guggenheim in Venice and many other art museums. A building that literally took my breath away was the ongoing Gaudi Cathedral in Barcelona. I will never feel that same awe as the first time I stepped into it. Nature all around!

My favourite interior design classic... could be an individually upholstered flowered armchair. Though I do not own one and though I do not have an inkling about classic interior design. The work I would like to be remembered for... Fat Bastard is ‘FAT BASTARD’. I am doing one in a similar vein called ‘ There are Crooks Everywhere’. And there are SO many crooks that I have ordered two side panels to fit in more crooks.

Gold For Delicata’s 2016 Gran Cavalier Merlot The outstanding 2016 vintage of Gran Cavalier Merlot, D.O.K. Malta, Superior, has been awarded a Gold medal as well as the Premio Della Stampa at the 2017 Emozioni dal Mondo Merlot e Cabernet Insieme international wine competition, which was recently held in Bergamo, Italy. The contest is organised by the Vignaioli Bergamaschi S.C.A. and only reviews wines made from the three red-skinned grape varieties - Merlot, Cabernet Sauvignon and Cabernet Franc. Seventy-six wine judges from around the world made up the judging panels of this year’s 13th edition of the competition and between them they evaluated 256 samples produced in 23 different countries. The tasting is governed by the Organisation Internationale de la Vigne et du Vin (OIV). Only 30% of the samples submitted can be awarded a medal and to win a Gold medal the wines must be awarded between 85 to 100 points. The Premio Della Stampa (Press Prize) is a special award commended by a special commission of wine journalists to a country’s highest scoring Gold medal winning wine. This red wine of distinction is skilfully created by Delicata. It tastes delicate and is reminiscent of the classic French style that made Bordeaux claret popular, but with that added pleasurable dusty and faintly savoury Maltese hallmark to it. This cask-aged Gran Cavalier varietal is poised to become an iconic example of Merlot of Malta. Previous vintages of Gran Cavalier merlot were awarded three gold and three bronze medals at competitions such as the Challenge International du Vin held in Bourg, the International Wine Challenge and the International Wine and Spirit Competition, in the United Kingdom. The impressive list of honours of this multiple medal-winning wine shows that Maltese Merlot can hold serious equity. When handled by a skilful winemaker, locally grown Merlot could very well be Malta’s most promising red variety for mind-blowing wines of pedigree. The latest medal and press prize bring Delicata’s total international wine award count up to 121 awards. A quarter of these awards were won in the last four years, all under the direct stewardship of Matthew Delicata, the winery’s chief winemaker.

Burlap Christmas Baubles YOU WILL NEED: Twine Burlap fabric Styrofoam balls Bells Ribbon HOW TO: • Cut burlap fabric into strips the length of the ball from top to bottom. • Cut a length of twine for each ball, about 20cm. • String a bell or two through and knot the ends together. • Poke a hole into the top centre of the Styrofoam ball and push the knot of the twine into it. • Take the first strip of burlap and put some hot glue at the top of the strip. • Place it right at the top and wait a few seconds for the glue to dry. • Stretch the strip over the ball and glue the end to the bottom of the ball. • Continue to place one strip after another, overlapping each one slightly until you cover the entire ball. • Tie a decorative ribbon at the top of the balls.

• Cut twine the length of the area that you need and add an extra half of your length to allow for tying and draping. • Trace the star shapes onto the glitter paper and cut. • Glue two sides of the stars together so the star has two glittery sides. • Poke a hole at the top of each larger star. • String this first star and tie a knot so it stays in place. • Continue to add the larger stars leaving a space between each. • Poke a hole through the bottom of each of the larger stars and thread a shorter length of twine and knot at the back so the twine stays in place. • Now take a small star and poke a hole at the top and thread the end of the hanging twine through that and knot at the back. • Continue for as many star lengths as you need. • Knot lengths of twine in the middle of each of the spaced stars and hang a star at the end of the twine. Poke a hole in the star, thread twine through and knot. • Hang in place
• Wrap twine over the top of the twig, create a loop and glue to secure. • Starting from one end of the twig, tie a variety of ribbons around the twig. • Continue until the twig is covered. • Trim the ribbons to shape the tree. • Iron the ribbons slightly to help them flatten.

nspired by the high-impact style of the show Miami Vice which he watched as a child, the brief from the owner of this super-stylish apartment to interior designer Vera Saint Fournier was to the point. ‘It was just a few words: black, white and Jimi Hendrix,’ laughs Vera. ‘I said to him, “Is that it? Are you happy to leave it all to us?” and he said “yes”. And so Vera and her team got to work. The apartment in the smart Tigné Point development is high-spec but otherwise was a blank canvas with stone floors and white walls. Today, it is a sleekly modern space where all the pieces are custommade in high quality materials and the vibe is elegant sophistication with an edge.

Above, living space: A large corner sofa defines the main living room area and, as in the rest of the apartment, metallics inject glamour Left, bedroom: the wallcovering behind the bed is made of mother-of-pearl and silver. ‘Mother-of-pearl speaks to the seaside aspect and give a sense of serenity,’ explains Vera. ‘And the silver plays with the reflections of the light. The bed is upholstered in an eco-leatherette that also has a light shimmer effect. Behind the bed, the wall hides a walk-in wardrobe and bathroom
Black has been introduced subtly. Long dark walls would have felt incongruous in an apartment that looked out over the water; instead, part way down the apartment, a wide column has been done in black, the colour continuing across the ceiling and then down into the kitchen, where a black fridge continues the look of the column on the opposite wall. The colour has also been brought in through furniture and fittings, in particular the statement dining table in crocodileprint leather which was requested by the client, and sourced from Fendi Casa in Rome. The sheer, striped curtains keep the dark shade feeling light, but are layered. ‘This allows the client to play around with how much natural light comes into the apartment,’ says Vera. ‘Most people are taken aback by black,’ she continues. ‘We want to show people that it is not a colour to be scared of. In fact, it is elegant and regal and shows a sense of confidence in the person whose home it is.’ The apartment’s talking point is undoubtedly the largescale Jimi Hendrix installation which commands attention in the open-plan living space. Placed over a sideboard at one end of the main living space, but seen from the dining area as well, the work sets the rock n’ roll tone of the space. ‘At the time I was single and I wanted a rock-star bachelor pad,’ says the homeowner. ‘And that’s what I got!’ 041

here’s no more apt a description of Shelley Street’s home than a sanctuary for the senses. We’re talking the whole checklist: all white sun-drenched spaces anchored by a carefully composed monochrome palette, soaring ceilings, nubbly textures, a contented cat dozing on a daybed, large sash windows offering glimpses of a milkwood tree and other tangled greenery outside, an artful mix-and-match of furniture, artworks and family heirlooms and, from the kitchen, the pleasant aroma of coffee and lemons – the entire scene set against the hushed backing track of classical music. Shelley’s home may be in a hip and happening street in central Cape Town, but, she says, ‘once the door is closed, we feel so far away from the bustle of the city centre.’ Stylist Shelley, who runs Space Solutions, her own creative branding studio, lives in a 19th century house which features large, industrial-style windows through which light floods in. Key to her soothing aesthetic is the home’s soft monochrome palette. The walls may be white but to this blank canvas she has added warm neutrals. ‘My colours are beach-pebble shades - charcoals, greys and chalk - rather than slavish monochrome,’ she says.

Texture is also important and can be found in the many inherited and salvaged pieces, and those that reference nature. But to these are added original Mid-century Modern pieces by Panton, Eames and Bertoia, which ensure a contemporary feel. Artwork is a passion of Shelley’s and as well as many black and white photographs are old etchings and photographs. These are combined with beautiful African objects, from clay pots to stone sculptures, for an interesting eclectic look. ‘I gravitate towards things that have the mark of the person who made them,’ she says. In a home like this, a classic Christmas style would never work. ‘I love the monochrome look as well as Scandi design and its association with light wood, so decided to do a Scandi-Afri mix,’ she says. Which definitely works.
Bathroom: in all-white, it was fully renovated to incorporate a contemporary tub with an organic form and large window framing the view of an old tree. Shelley is strictly ‘anti-curtains’, so a high wall backing onto a neighbour’s property provides privacy. he story of this home revolves around light. ‘When we saw it we liked the character of the house and could see its potential,’ explains owner Amy Egger. ‘But it needed light. The ground level is the oldest part of the house and there weren’t many windows – they didn’t want them 600 years ago! But also, there was no overhead lighting anywhere; what artificial light there was came from pole lights. Our brief to the designer and project manager was to open the house up to the light as much as would be allowed by the planning authority.’
The layout of the house, a U-shape around a central courtyard, was not changed and unlike many modern homes where a large open-plan living space is created through the demolition of walls, here the old limestone walls were kept intact. However, the rooms are large and feel spacious despite the relatively low beamed ceilings so there is still a sense of living with space to move. Having consulted with the planning authority, the Eggers were allowed to put in more windows ‘as long as they were in line with the existing ones,’ says Amy. Another 053

Kitchen: the units were already in the house when the Eggers bought it. A pendant light, under-cabinet lighting and strip LEDs above high-level kitchen units and beams were also added
10 windows in all were added and this went a long way to creating a house that felt less gloomy and a lot more welcoming. Also key was installing the artificial lighting that would further lighten the house as well as show off its beautiful old features, in particular the limestone walls and arches. ‘We used uplighters to highlight the textured limestone walls and the arches,’ explains interior and lighting designer Maria Mercieca. The living room, despite the large fireplace, was a very dark room. Here the designers went for indirect lighting with LEDS fitting into a gypsum perimeter detail, the walls now softly washed with light, not only accentuating the texture but also brightening the room considerably. ‘This was such a cold room all the time but now it feels wonderful,’ says Amy. Another lighting challenge was the stairs. ‘We couldn’t pass
too many wires through for light above the steps so instead we created a gypsum wall over the existing plastered wall and hid the LED strips in it,’ says Maria. The result is plenty of light, but also a sculptural feel. The family lived in the house as the work was done. ‘At one point all four of us slept in the master bedroom,’ says Amy. It took a 14 months for the entire house and garden to be completed. ‘There were no big problems; it was just a long, slow process waiting for workers to come in and do each stage,’ says Amy. The family have lived happily in the house for six years but next summer will be leaving it to return to their life in Switzerland. ‘I have loved living in Malta,’ says Amy. ‘Everyone is so friendly and love that it is not cold in winter. And this house has given us the perfect lifestyle.’ 055

BROCCOLI AND STILTON SOUP WITH TOASTED ALMONDS INGREDIENTS
50gr unsalted butter 150gr finely sliced leeks 80gr finely sliced celery sticks 500gr broccoli florets 150gr Stilton cheese 250ml vegetable stock 50gr toasted whole almonds Salt & white pepper
METHOD
In a sautÊ pan, over a low heat, melt the butter, then add the sliced celery and leeks and cook till soft. Don’t let them colour. Then add the vegetable stock and bring to the boil. Prepare the broccoli florets by roughly chopping them into small pieces, keeping a few whole for garnishing. Add the florets to the boiling stock; bring it to the boil again, then simmer for 10 minutes. Using a blender, blend the stock and broccoli, along with 100 grams of the Stilton cheese until you have a fine puree. Season with salt and white pepper. Cook the reserved small broccoli florets in boiling salted water until soft. To serve, pour the soup into a warmed dish, garnish with the whole broccoli florets, some crumbled Stilton and the toasted almonds.

ROASTED CAPON with dried fruit & pancetta INGREDIENTS
METHOD
1pc whole capon (weighing 1.2kg-1.5kg) 70gr finely chopped onion 100gr unsalted butter, softened 5pc finely chopped garlic cloves 10 slices streaky bacon 1 sprig fresh thyme 130gr fresh white bread crumbs 70gr chopped dried cranberries 50gr chopped golden raisins Garam masala seasoning (to taste) 200gr roughly chopped mirepoix (carrots, celery, onion & leeks) 200ml brown chicken stock Salt & pepper
Preheat the oven to 165 degrees Celsius. Finely slice the streaky bacon and cook with the chopped onion & garlic in a sauté pan on a low heat until crispy. Then add half the butter, the thyme, the garam masala and sweat for another couple of minutes. Add the golden raisins, cranberries and breadcrumbs and mix well. Season with salt and pepper. Set aside to cool down. Lay the capon facing upwards on a chopping board. Season with salt and pepper inside and outside then spread the remaining butter on the breast side under the skin, using your fingers to reach all areas of the breasts. Lay the remaining streaky bacon on top of the skin, and tie the capon using twine so it keeps its shape. Spread the mirepoix in a roasting tray and lay the capon on it. Add half the chicken stock and place in the oven for 30 minutes. Take the capon out of the oven and remove the bacon (it should have gone crispy by now; set it aside for later). Add the remaining stock, increase oven temperature to 185 degrees Celsius and cook for a further 20 minutes until nicely golden brown. Remove from the oven and allow to rest for 15 minutes. Then debone the capon, starting from the breast - remove the wish bone, divide the two breasts between four plates. Remove the legs from the carcass, separate the drumsticks from the thighs and divide these between the 4 plates as well. Add some stuffing to each plate and serve with preferred vegetables such as root vegetables, pearl onions or Brussels sprouts. When cool, place the zucchini slices on one half of the focaccia. Sprinkle with the grated goat cheese and place the other half of the focaccia on top to make a sandwich. Cut into even size square (2cm x 2cm) and serve warm.
ROASTED ANGUS BEEF TOMAHAWK with horseradish & rosemary INGREDIENTS
METHOD
2pc angus beef tomahawk steaks (weighing 800gr-900gr each) 1tbls fresh grated horseradish 40gr butter knobs 2tbls virgin olive oil 1sprig fresh rosemary Salt and fresh ground pepper
Preheat the oven for 180 degrees Celsius. Season the tomahawks with salt, pepper and virgin olive oil. Heat a deep-bottomed skillet, and place the meat in it, sealing it on both sides until golden brown. Add the butter towards the end to achieve a lovely taste and colour. Once done, remove, brush with fresh grated horseradish on both sides and then wrap individually in foil. Place in a roasting tray and roast in a hot oven for 12 minutes. Then remove, allow to rest for 5-8 minutes before slicing across and serving.
ROASTED ROOT VEGETABLES with fresh pomegranate & sage INGREDIENTS

300gr Brussels sprouts, trimmed, boiled, chilled and cut in half

Cut the parsnips, carrots, celeriac and swede into even shapes and keep them separate since cooking times will vary. Season them all with the salt and pepper. Heat a sauté pan, add the virgin olive oil and then the sage. Add the swede and sweat over a low heat, tossing constantly, for about five minutes. Then add the carrots and keep sweating for another 5 minutes. Finally add the celeriac & parsnips and keep sweating for another 10 minutes. Deglaze with the pomegranate juice and reduce. Sprinkle with the chopped parsley & serve.
Heat a sauté pan over a low heat. Add the virgin olive oil, then add the sliced shallots, season with salt and pepper and toss over a low heat until soft. Add the Brussels sprouts and unsalted butter, increase the heat and sweat for another 5 minutes. Now add the honey and sweat for a couple more minutes before serving.

CHOCOLATE MOUSSE & BROWNIE served with caramel ice cream INGREDIENTS

For the chocolate mousse: 4pc egg yolks 120gr sugar 30gr water 120gr good quality bitter chocolate 100ml semi whipped cream 4pc cooked chocolate brownie bars Caramel ice cream Butterscotch sauce Fresh berries and mint for garnish Optional chocolate decoration: 200 gr bittersweet couverture chocolate, chopped
Melt the chocolate in a double boiler on a low heat. In a mixer with a whisk attachment, whisk the egg yolks on a high speed until they increase in volume and become pale white. In the meantime, in a small saucepan heat the sugar with the water over a low heat until it dissolves. Then increase the heat and cook until it reaches 118 degrees Celsius when measured with a sugar thermometer (if you do not have a thermometer, it will be ready when the bubbles begin to get very thick and the mixture is still clear). When the sugar is cooked, start pouring it on the beaten eggs yolks whilst still whisking. Continue mixing on a medium-low heat until the mixture cools down, then add the melted bitter chocolate. Very gently, fold in the semi-whipped cream until combined. Pour into the moulds and put in the refrigerator to set. Once set, trim the chocolate brownies to fit the mould and place them on top of each one. Allow them both to set again. Then turn the mould upside down and gently remove the chocolate mousse-brownie using a spatula. Drizzle a plate with butterscotch sauce; lay one chocolate mousse-brownie on one side with a scoop of caramel ice cream on the other. Garnish with fresh berries and mint. Repeat for all, and serve.

If using the chocolate decoration, first cut a plastic sheet into the winged rectangular shape. Next you need to temper the chocolate (temperature-controlled heating and cooling) so it looks glossy and doesn’t crumble. Melt 150gr of the chocolate over a low heat in a double boiler, stirring gently. Measure it with a thermometer and when the temperature reaches 55 degrees Celsius, remove it from the heat. Pour 50 grams of the melted chocolate into a small bowl and set aside. To the rest of the melted chocolate, add the remaining chopped chocolate and mix it until the temperature reaches 28 degrees Celsius. Then add the 50gr of melted chocolate and stir. This should raise the temperature to 31 degrees Celsius. Spread a thin layer of the tempered chocolate to form a smooth chocolate shape. Leave to set for 5 minutes, then carefully remove it from the plastic. Repeat until you have 8 shapes (2 for each brownie), then press onto either side of the chocolate mousse-brownie, and serve.

This rich, unctuous Chardonnay makes the rooster’s flesh melt. Its hint of caramel is superb with the crispy skin and mirrors the Siggiewi honey drizzle on the side veggies wonderfully. Plus it works as a palate refresher after the Stilton soup. The wine’s delicate toastiness, depth and brightness, coming from judicial upbringing in oak barrique, combined with tastes of apple and ripe pear will all echo the dried fruit. Addictive, beware.
There’s something mouth-wateringly decadent about this meal and Malta’s gold-medal winning Merlot is a terrific match for this juicy hunk of beef. This dark red and smooth, oaky wine is packed with flavours of outrageously good red forest fruits. It’s dashed with black pepper and has that typical pleasurable dusty and faintly savoury Maltese hallmark to it. Serve cellar cool in a big, big glass.
The sweetness combined with the weight of this heftier fruity white liqueur wine handles the rich dessert very well. This pudding wine tastes suavely viscous with a delicate treacly pleasantness and oodles of apricots and raisins. The finish is fresh thanks to a limey lift of acidity. I’ll unreservedly serve this complex, lush white whilst I’d hold off too much mint garnish which might clash. Serve cold in a festive flute.

BY PHILIPPE STARCK FOR ALESSI CHALLENGED TO TRANSFORM A HUMDRUM OBJECT INTO A PIECE OF MEMORABLE DESIGN RESULTED IN ONE OF THE WORLD’S MOST COVETABLE KITCHEN ACCESSORIES – AND A TRULY ICONIC EXAMPLE OF INDUSTRIAL DESIGN
T
he Juicy Salif is arguably one of the most recognised accessories in the world – with its long legs and curved top, the iconic juicer created by Philippe Starck 27 years ago for Italian brand Alessi can be found in stylish kitchens all over the world, and this festive season is bound to be found wrapped up under many a Christmas tree. The origins of the juicer are now design folklore. The French designer was commissioned by Alessi to create a juicer as part of its ‘designer’ series and, having visited the company offices in Italy, took a short break on the Amalfi coast. Dining in a pizzeria he ordered a plate of calamari. Having been served it without lemon, Starck was beckoning his waiter over when inspiration struck and with no paper to hand, began sketching on the paper placemat. Looking at the paper, it is possible to see his thought process he started with the shape of a squid, even trying to adapt it to a conventional lemon juicer shape, but swiftly jettisoned this; further inspired by his boyhood love of sci-fi comics, he transformed the squid into an alien-style shape with an elegant tapered body and long legs. Starck sent the placemat to the head of Alessi, Alberto Alessi. ‘On it, among some incomprehensible marks – tomato sauce, in all likelihood – there were some sketches,’ he says. ‘Sketches of squid. They started on the left and as they worked their way over to the right, they took on the unmistakable shape of what was to become the Juicy Salif lemon squeezer.’ This placemat is now in the Alessi Museum, and the juicer has gone on to become one of Alessi’s best-selling and best-known products. As well as the original aluminium, it has also been created in limited editions of gold, bronze, anthracite and white. It is not without controversy, though. Many have complained that it does not work well as a juicer, as the juice does not easily flow into the glass below (Starck is said to have commented that ‘‘it’s not meant to squeeze lemons, it is meant to start conversations.’) And Alessi has said that as well as being one of the most amusing projects he has ever worked on, the Juicy Saif was ‘deliberately poking fun at the idea that form should follow function’. Whatever one thinks of the efficiency of the Juicy Salif, it is very much a design icon, found in London’s Design Museum as well as the Museum of Modern Art (MOMA) in New York.
