TOWER WHISKEY DISTILLERY

Tower Whiskey Distillery opened its doors in early December 2023, celebrated as the first whiskey-tasting distillery in the Hunter Valley of New South Wales. Located just a short stroll through the Shiraz vineyards from the luxurious Tower Lodge, Tower Whiskey Distillery is the latest addition to the dining, wine, craft beer, and high-end accommodation offerings owned and operated by the Hope family.

As the distillery approaches its one-year anniversary on December 8th, Tower Whiskey continues to welcome guests 7 days a week from 11AM till 5 PM. The team is dedicated to providing a memorable experience for both seasoned connoisseurs and newcomers eager to explore the nuanced flavours of their first four small-batch malt whiskeys.

The Tower range includes four distinct whiskeys, all distilled, aged, and bottled onsite. The initial release features No. B1 Bourbon Barrel American Oak, No. 7 Malbec French Oak, No. 3 Shiraz American Oak, and No. 9 Fortified French Oak.

Visitors can book a Whiskey Flight tasting experience for $40 per person in advance ($45 for walk-ins, subject to availability). The first four single-batch, single malt whiskeys are also available for purchase.

Hope Distillery Ultra Cut Gin is about as rare, wild and dangerous as gin can get. Only one batch of our Pokolbin Dry Gin was selected in 2020 to remain at the uncut distillery strength of 68% and spend 18 months in barrel. Featuring all of the fragrant layers of our Pokolbin Dry with juniper, coriander, angelica root, fennel, cardamom, pepper, lime and grapefruit, plus time spent ageing in French oak barrels develops the gin into something magical and exotic. In celebration of the first Hunter Valley Gin & Jazz Festival in 2021, Hope Distillery produced an experimental range of trial batches called Naked Gin. What is Naked Gin? We have used a single botanical (with juniper of course) in each gin to show off its characteristics and flavours. The series is made up of six gins featuring single fruit, spice & plant botanicals.

This single vineyard Chardonnay is grown on the Mountain Wash vineyard which lies directly under the Wollemi Range. Over millions of years, nutrients from the mountain’s vegetation have been washed into the soil where our vineyards now stand. This makes perfect conditions for our Chardonnay to thrive in the warm, dry climate of the Hunter Valley. White gold in colour, this Chardonnay is perfectly balanced between delicate peach, pear and ripe citrus fruit characters with subtle integrated oak.

Our West Australian fruit is trucked across the country for over three days before we start fermentation. This extended cold maceration produces dense colour and flavour with a fine tannin structure. The cool hills of Donnybrook gives us amazing elegance while retaining the classic spicy shiraz characters.

Vibrant colour and tannin structure exhibiting the classic Aussie Shiraz plum and spice characters, and perfect balance of oak and acidity. There is a deep elegance to the wine from the Western Australian climate. Truly a Ripper!

There is a feeling across Victoria region that 2013 may go down as the vintage of the decade. Low rainfall and plenty of heat from December onwards meant winemakers could obtain beautifully ripe fruit, which can be a challenge in parts of this very cool region.

2012 was an early budburst, fruit set and veraison season. The wines produced are above average and have good fruit flavour with higher natural acidity than usual. In general, yields were lower than the norm.

2017 MACEDON HILLS SHIRAZ MALBEC

2018 MACEDON HILLS CABERNET SAUVIGNON

Medium to full-bodied, with good intensity of colour, aromas of blackberry and dark chocolate. A powerful palate is balanced by soft, velvety tannins and subtle, intermingled French oak.

Clare Valley, SA

South Australia’s Clare Valley is regarded as one of the country’s premium regions for dry style Riesling. This wine has elegant floral and citrus aroma followed by a firm, refreshing palate and persistent length of melon, peach and citrus blending well with spicy notes.

2011 Hunter Valley Reserve Shiraz

Hunter Valley, NSW

A very complex Shiraz with aromas of balsamic, strawberries, leather and subtle cherries. The palate is lifted by bright acidity. Showing great potentialwill continue to develop its nuances. · TA Alc 13.0%· pH3.43 6.2

2013 Signature Chardonnay

Hunter Valley, NSW

A buttery, full mouth feel with bright fruit and complex crisp qualities. The flavour is developed by combining a wild yeast fermentation process with a partial malolactic fermentation and barrel maturing. A stunning chardonnay.

2010 VIRGIN HILLS

Quality for the 2010 vintage is expected to be the best in a few years. Macedon Ranges had issues with rain during flowering, rain that came and went through the growing season, although generally to the advantage of the vines.

2009 VIRGIN HILLS

Drought and rain during flowering and bird pressure. Yields were down 50% but what remained was good. A mild, indeed cool, growing season punctuated by between 4 - 10 days of extreme heat from the end of January into the first week of February.

2007 VIRGIN HILLS

The dramatic 2007 vintage recorded a 35% drop in red wine grapes across the nation. The red wine grape intake suffered the combined effects of drought, frost and bushfires during the growing and harvest seasons. Virgin Hills vines suffered through this diabolical season, yields were down 50% on average.

2006 VIRGIN HILLS

For 2006, vintage was 2-3 weeks ahead of normal because of the hot summer. Yields varied across the region and in some locations were below average due to heat stress at flowering and a return of the early 2000’s drought conditions reduced fruit quantity and increased intensity and flavours.

2005 VIRGIN HILLS

Good Winter rainfall with average temperatures through budburst and flowering. Dry conditions through fruitset and veraison. Heavy rainfall in January and February and a cooler ripening period led to slow ripening and a later harvest.

2004 VIRGIN HILLS

During spring, flowering and fruitset was excellent. March and April were practically perfect. Quality was very good and in some cases excellent. Winemakers describe wines with good acid, bright deep colour and very spicy Shiraz.

2003 VIRGIN HILLS

Following fairly good spring weather for budburst and flowering, summer came on hot and fast. The hot and dry weather caused some concern that the fruit would sweeten rapidly and result in a significantly early harvest. Harvesting of Shiraz occurred from late March through April. Sugar levels were generally high for most varieties, pH and aciditylevelswereexcellent.

Picked late April to early May, the season was warm with dry conditions prevailing throughout harvest. All blocks were hand-picked and sorted prior to crushing. An excellent year for Virgin Hills.

Picked April to early May. A warm season with ambient temperatures and blue skies ripening the fruit relatively early for Virgin Hills. Fruit was harvested in the early hours of the morning to optimise flavour and avoid the early autumn frosts that defoliate vines and expose the crop to unnecessary sunburn.

Picked late April to mid May. Severe frost (-7 deg) on 28th October reduced the crop severely and then two late frosts in April killed remaining leaves off. A warm and dry season with only 100mm of rainfall.

The Macedon Ranges region recorded a 50% increase in yield, as a result of good weather during the flowering period and lack of early frost damage. 1998 was the driest year in recorded history up to vintage and produced some of the best reds in history.

The 1997 vintage was described as ‘the best in 10 years’. Wines showed wonderful complexity and potential for great longevity. Yields were down by about 30% due to low fruitfulness from the cold 1996 vintage. Small bunches resulted in higher than normal sugars. Weather during the vintage was fine and mild.

NEW ENGLAND / HAZY IPA

A New England IPA (NEIPA) is a style of American IPA that features an intense, tropical fruit centric, hop aroma and flavour. New England IPA is a relatively new style originally brewed out of Vermont, New England in the United States. It’s heavily dry hopped to the point of being hazy and has a fuller body, smoother flavour and less perceived bitterness than typical IPA’s.
