How the time has flown! 2024 is off to a flying start with a myriad of plans taking shape. I’d like to thank you all for your continued support and share some of the exciting developments that we have in store.
To celebrate our 10th anniversary of Hope Brewery, our brewers have been working on some special seasonal releases that will be unveiled throughout the year. In vineyard news, we harvested our 2024 vintage in late January through to early February and we think it may be one of our best seasons yet.
Our pop-up, Hope Estate at The Landing, has now wrapped up as we begin renovations in preparation for the opening of Nioka Steakhouse in Newcastle in late 2024. Our award-winning Group Executive Chef, Anthony Fullerton, is excited to showcase his dry-ageing practice and bring a unique and refined dining experience to our patrons.
The much-anticipated Hope at Honeysuckle is also on track to open at the end of this year and we are looking forward to bringing our Cellar Door experience into the heart of the city.
We opened the Hunter Valley’s first-ever dedicated whiskey tasting distillery just before Christmas last year, and it has been encouraging to receive so much support and positive feedback from our patrons. Thanks to the overwhelming excitement and demand, we have extended our trading to 11am – 5pm, seven days a week at Tower Whiskey Distillery. Club members can enjoy their club discounts on whiskey, and all Tower Lodge guests receive a complimentary whiskey tasting during their stay.
At Tower Lodge, our team is putting together a not-to-be-missed programme of indulgent weekend events as well as daily masterclasses across wine, beer, spirits and beef.

TOWER WHISKEY DISTILLERY OPENS IN THE HUNTER VALLEY
Tower Whiskey Distillery opened its doors in early December 2023, celebrated as the first whiskey tasting distillery in the New South Wales Hunter Valley.
A short stroll alongside the Shiraz vineyards from the luxurious Tower Lodge, Tower Whiskey Distillery is the latest addition to the dining, wine, craft beer and high-end accommodation offering owned and operated by the Hope family.
Due to overwhelming popular demand, Tower Whiskey Distillery is excited to announce they will now be open 7 days, 11am – 5pm. The extended hours are a testament to the incredible support from dedicated patrons, and the team are beyond excited to provide extra days of indulgence for both seasoned connoisseurs and those eager to explore the nuanced flavours of their first four single cask, single malt whiskeys.
The Tower range of four whiskeys is distilled, aged and bottled onsite at the distillery. Included in the initial release are No. B1 Bourbon Barrel American Oak, No. 7 Malbec French Oak, No. 3 Shiraz American Oak, and No. 9 Fortified French Oak.
A Whiskey Flight tasting experience is available to book now for $40 per person for advance bookings ($45 for walk-ins, pending availability), and the first four single cask, single malt whiskeys are also available for purchase.
Guests at Tower Lodge can enjoy a complimentary Whiskey Flight tasting experience included as part of their stay (booking in advance required) and can soon look forward to guided distillery tours for a behind-the-scenes insight to the process of whiskey distilling, as well as private whiskey tastings.
Michael Hope said the Tower Whiskey Distillery was an opportunity to bring a unique taste of the Hunter Valley to site-distilled, small batch whiskeys that neatly tied together all aspects of the multifaceted hospitality business.
“To make whiskey wash (the base of whiskey) we use the Hope Estate Brewery, and the spent grain is then used to feed our Angus cattle that we are breeding here onsite. We also need used wine casks to age our whiskey, which is something we have plenty of, so I have used a combination of casks to age the whiskey,” Mr Hope said.
“So to me, bringing whiskey distilling onboard ties the whole business together in a very ecologically sustainable way; it’s an essential piece of the puzzle,” he said.
“We are lucky to have access to many types of casks here at Hope Estate; fortified casks, casks that have held Shiraz, Malbec and Cabernet, French oak, American oak, tight grain, medium grain, heavily and lightly charred, and different ages. It allows us to create some pleasing combinations and we’re thrilled with the variations in the end product.”

The dramatic 2007 vintage recorded a 35% drop in red wine grapes across the nation. The red wine grape intake suffered the combined effects of drought, frost and bushfires during the growing and harvest seasons. Virgin Hills vines suffered through this diabolical season, yields were down 50% on average.

For 2006, vintage was 2-3 weeks ahead of normal because of the hot summer. Yields varied across the region and in some locations were below average due to heat stress at flowering and a return of the early 2000’s drought conditions reduced fruit quantity and increased intensity and flavours.

Following fairly good spring weather for budburst and flowering, summer came on hot and fast. The hot and dry weather caused some concern that the fruit would sweeten rapidly and result in a significantly early harvest. Harvesting of Shiraz occurred from late March through April. Sugar levels were generally high for most varieties, pH and acidity levels were excellent.

Over the past 150 years Lager beer emerged out of central Europe and has conquered with amazing speed. The primary definition of a Lager is that it is a bottom fermented beer. Porter, a type of dark beer, introduced in the 1700’s, that is well balanced and aromatic, with predominant notes of rich chocolate as well as hints of coffee, caramel, nuts, and sometimes a faint smokiness, combined with an often dry finish.
Stouts, as we know them, evolved from the Stout Porter, which was a very popular style in London in the 1800s. Stouts are a category of warm-fermented ale styles that are distinguished by their dark colour, generally an opaque deep brown or black, as well as a distinct roasted character that is often perceived as dark chocolate or coffee.

BARREL AGED EXTRA STOUT

Foreign Extra Stout is a specialty style of Stout; this style can be anything from sweet to dry. Our Extra Stout sits perfectly in the middle of the spectrum, a multi trophy-winning beer and brewery specialty. This stylish stout is a harmony of hops and malts, and aged with reclaimed French oak barrels to add complexity without any oaky dominance. IMPERIAL RUSSIAN STOUT

Imperial Russian Stout is intense, bold and dark in colour. The beer features a malt bill of Marris Otter, Dark Crystal, Chocolate Malt, Midnight Wheat, Roast Barley, Cara Munich III and Malted Oats, balanced out with four bittering hops.

Cider is simply apple juice with the natural sugars allowed to ferment and produce its own alcohol content. Ciders come in a variety of flavours and styles; from tart and dry through to sweet and rich, clear or cloudy, still, fizzy or anywhere in between.

PUCKER
Pucker are the sour treats in the Hope Brewery line up, discover three levels of sourness. Berliner Weisse is a beer style originating from the region around Berlin, Germany, in the 17th Century. This long forgotten style has been revived in recent years through modern craft brewing. Its main characteristic is a mild sourness and tartness with a light and fruity character. Hope Brewery uses kettle souring of the wort to produce their Berliner Weisse inspired beers.
