Kathryn Grant is our Editor in Chief and official craft beer lover. With a passion for craft beer blossoming in Eugene, Oregon, Kathryn has combined her love of fine beer and Chinese culture to represent what HOPS is, today. As editor, writer, and events coordinator, Kathryn is well tuned into the craft beer scene in China and continues to work closely with brewers, importers, homebrewers, and members of the industry as a network builder in the emerging Chinese craft beer world.

Chase Williams is a constant beer talker, frequent beer drinker, and occasional beer brewer. Writing the Brew of the Season article for Hops Magazine since Fall 2012, Chase hails from sunny South Florida in the southeastern United States. Living in China for 3 years, he enjoys the finest craft beer the city has to offer and the cheapest most authentic eats. When not working, you can find him enjoying a brew on Yong Kang Lu with his pup or at one of the Boxing Cats drinking his favorite Shanghai microbrew, King Louie Imperial Stout.

Devin Busam is a beer aficionado from Los Angeles, California. As a regular contributor to our Shanghai “Around Town” section, Devin is one of the first to pin point the best our city has to offer in terms of new imports, bar openings, or stand-up microbrews. Devin’s favorite beer spot in town is Cheers In where he can mostly be found enjoying a fine bottle of San Diego’s Karl Strauss Tower Ten IPA.

Drew Lietzow I enjoy serving as Hops unofficial Beijing correspondent. I argue The Capital is home to the tastiest craft beers in all of China and also have the most pleasant bars in which one can sip on an import. Beer has been the social lubricant we humans have preferred for millennia and if the quality of options being produced is any gauge on how we as a species are fairing, we’re going to be alright. Before coming to Beijing I lived in Dalian for more than 6 years. At dinner you can often find this tall American threatening to descend to the floor during ganbei in order to make my glass the lowest of ‘em all.

My name is Hector Flores and I am an Oregonian living and working in Shanghai. The following is to the beat from the intro to Fresh Prince of Bel-Air Native Oregonian, born and raised, on the mountain tops is where I spend most of my days. Camp’n out, maxin’ relaxin and all cool and homebrew’n some ales outside by the pool. When a couple of brewers, their beer was so good, started collab’ing in my neighborhood, I penned one lil article and my bro got glad and said “you gotta get with Hops magazine out there in Shanghai!” I’ve had Chinese beer far and near, claim to be fresh, but the next morning you gotta look in the mirror. If anything I could say this beer is rare, but I thought “nah, homes to Cheers In!” I pulled up to Boxing Cat about 7 or 8 dropped my Suntory and yelled “yohomes drink you later!” Looked at the taps, I was finally there, to down pint after pint in my comfy armchair


It’s that time again. The summer furnace bakes our streets and pulls us indoors as we long for air conditioned comforts. Better than any air conditioning (and arguable better for you), is the choice of a cold , summer beer. The sun may be here in full force, however so is an ever-increasing selection of seasonal imports, fresh microbrews, and lovingly crafted homebrews just in time for the heat. In our latest edition of HOPS, we focus primarily on perhaps summer’s greatest beer- the all mighty IPA. Our Quarterly Homebrew Recipe will give you some good ideas for brewing that special hop infused bitter creation, or perhaps scroll through our “Around Town” sections to find the latest in events and bar openings in Shanghai and Beijing. Whatever you’re interested in, pull up a chair at your favorite beer spot and enjoy another edition of HOPS.

henever there is a new microbrew to be tasted in Shanghai, HOPS takes notice and the opening of Shanghai Beer Factory was no exception. Shanghai’s newest addition to the growing microbrew scene opened on April 11th and offers a range of German style brews, including classic Pilsner, Hefeweizen, Amberweizen, Dunkel, and a seasonal Fruit Beer. These brews are classic examples of their style, however leave a bit to be imagined in terms of creativity and overall punch of flavor and IBU. Fortunately, if you finish your pint and are still craving a strong beer for the road, take a look at their in-house beer shop of over 50 Belgian

beers. These prices are better than the regular international food shops, with a pint of Delirium going for 40rmb and 30rmb for take-away. Although just starting, this growing establishment also takes great pride in their standard Western dishes that pair nicely with a German beer. Some of our favorite dishes were the sausage platter and thin crust pepperoni pizza. here is a new member of the Yong Kang Lu family of bars, and this one is worth making a “Pit Stop” for. Yes, a corny intro to a great new bar on the infamous strip of late night beer guzzling that we all know and love. It can be difficult to stand out amongst these side-to-side bars, however “Pit Stop” delivers a unique theme with welcoming, casual ambiance and an upscale selection of craft beer. Perhaps what makes this joint stand out the most is their unique selection of Brew Dog on tap. Jack Hammer IPA, Dead Pony Club, and Punk IPA can all be found for 60rmb, and these beers pack fantastic, hoppy flavor perfect for a hot summer day of boozing on Yong Kang. For the non hop-heads out there, “Pit Stop” also offers an impressive selection of the new import, Brewers and Union on tap. The two on tap at the moment are “Unfiltered Heffe”, and “Black Lager”, and are also excellent choices for the season. Clearly, another beer lovers bar has made it to Yong Kang, and we at Hops couldn’t be happier as the selection of craft beer just gets better and better. Move over, cocktails! DOGTOWN Allen David The worlds of craft beer enthusiast and fine coffee are not too far apart- just ask the folks behind Sumerian Coffee and their newest addition to the Shanghai nightlife scene, Dogtown. Dogtown is located right next to Sumerian, summoning those who are leaving the coffee shop to stay longer for a pint. It’s quite tempting, as the weather heats up and the strategic cooling mist jets out right above the bar stools outside on quaint, shady Shanxi Lu. Although quite bare-bones looking upon first site, this small bar and eatery pack quite a selection. Although their selection will change with the seasons, at the time of writing the draft selection included San Miguel, Stella, Brooklyn, and their signature kegged cocktail- Dog Town Tea. This black tea with citrus notes and a vodka punch to finish is a take on the classic recipe from the American South and holds up to its reputation. Refreshing, tasty, and not overly consuming make this a fine choice for sipping outside on a hot summer’s night. Also available are a fine selection of craft bottles, including selections from Saranac, Kentucky Bourbon Barrel Ale, Magners, Brooklyn, North Coast, and Brewers and Union. CONTAINER Bar features bevy of imports straight off the docks

o matter keg, can or bottle, Container is happy to sell beer in all its forms. Empties are repurposed into decoration. It’s not these empty brown bottles, however, which provided inspiration for the bar’s moniker. Container’s got its own section of steel shipping container acting as part wall, part decoration. A sort of homage to the long voyage the beers have endured before finally settling down in Beijing. Located immediately west of Wangjing SOHO and inside the main courtyard of Kirin Place, Container hopes to serve as a respite for the overwhelmed office type in need of a few after-work beers. It certainly has got the goods to help one forget about the unfinished projects and undrafted emails, or the office intern who owes a few rounds. Patrons can choose to sip their beers on the small patio under a canopy of umbrellas capable of warding off the sun, or venture inside for cooler temperatures. Container offers a

few selections on tap and a handful of large refrigerators which showcase a myriad of frosty brews ripe for the choosing. Rock, R&B and in-da-club tunes easily fill the small space. Serving only peanuts, Container is all too happy to oblige customers who want to sip beers and enjoy fare from any of the restaurants found in Kirin Place. Recent visits on humid summer days have been accompanied by Franziskaner White. When the fall arrives, it would be a treat to once again see Brooklyn Brewery’s Post Road Pumpkin Ale in stock. Globalization has done wonders for beer lovers across the world. Several visits confirm a bevy of European (including several from Belgium) and American brands on hand. Container, with dozens and dozens of selections from around the world, is globalization at its finest. Enjoying another continent’s best beer are just a ship (err, sip) away Container Ground Floor of Wangjing Kirin Place. Access Kirin Place from Futong W St, Fu’an W St, or Wangjing St and walk to the middle of the courtyard. Open daily from about 6PM and close late

A

dd Beer Keg Brewpub to the growing list of establishments in Beijing’s Beixinqiao area serving fresh brew in its hutong hideaway. Upon stepping into the pub – not much larger than an apartment bedroom – it would be easy to think the founders behind the space with Spartan decorations are living off nothing more than a dream and a prayer. But despite the modest furnishings and small venue, the reputation of their tasty brews are slowly earning credibility. Never mind its generic name or the fact that the name Beer Keg Brewpub is a complete misnomer (seeing as it doesn’t brew on-site or serve any pub fare). Don’t let the name get in your way of wandering in, though, as they have a few beers worth remembering. The group is committed to maintaining at least 6 varieties on tap. Some types exit the tap at a snail’s pace and as the glass slowly fills up, warm summer temps can warm up the beer easily during the wait. The slowest mover of them all, Chocolate Stout, had large beads of condensation on the glass before the pour was finally complete. A stout is meant

to be consumed a bit warmer than say, a pilsner. But no beer drinker wants the source of the warmth to be traced to a frustratingly slow pour. Nearly all beers are in the ¥35-range (although served in glassware measuring just 330 ml). Found year-round are H-Lager (the ‘h’ from the Mandarin word for yellow, huang), Hoppy Amber and Catbird Ass IPA. Of particular note is the lager, a flavorful yet refreshing brew with a defining yellow hue and at just ¥20, easily one of the better microbrew bargains in town. Amongst the rotation on my particular visit was the aforementioned stout, accompanied by Honey and Mint Ales. The stout is a solid choice while the Mint Ale proved refreshing for a warm summer’s night, but for some perhaps a tad strong on the ol’ green leaf. In a refrigerator near the door are a handful of Belgian and American imports. Don’t be fooled by the tranquility which may seep out of the walls of nearby Confucius Temple and Yongehegong Lama Temple: Beer Keg has set up shop in a highly competitive area, with a handful of competing microbrews all within a 10 minutes’ walk. BEIJING PICNIC SPOTS 6 beer and food combos to make for a perfect afternoon

T

he nation’s capital has plenty of great places to enjoy an outdoor picnic. Whether your getaway is only a stone’s throw from the sleek, modern buildings found within the CBD, or any number of dozens of parks with old style temples, Beijing’s late-summer climate is ideal for an afternoon spread out on the lawn. Beer lovers are in luck in that arguably nothing pairs better than beer (not even wine) with the vast array of homeprepared foods carried in a picnic basket or cooler.

The following are some of the best places around town to have a picnic. In honor of Beijing’s six ring roads, six beer styles capable of refreshing urban dwellers in the autumn sun have been paired with a matching dish. FRAGRANT HILLS PARK Lakes, temples, cable cars hovering over the trees – the massive park has it all. The park is home to so many trees, in fact, it’s wildly popular in the autumn to enjoy colorful foliage. Beer style: Munich dunkle or Oktoberfest Food: Over charcoal, grill onion, bell peppers and chicken (kebabs) you’ve prepared beforehand. Pack plenty of hot sauce and salsa and shells to wrap your fajitas in. A dunkle (such as NegraModelo) or Oktoberfest beers stand up well to the heat. How to get there: Best to take a car as the park is huge and located west of 5th Ring Road. It’s not too convenient to be hauling a grill on public transport – bring out the private car!

OLYMPIC FOREST PARK Enjoy views of the Bird’s Nest as you sit on top of one of the hills and enjoy a cool breeze, or catch some rays sitting near the lake. With a plenty of trees to shade from the sun and take a snooze, packing a higher ABV beer isn’t a bad choice. Beer style: Dubbel

Food: Lamb or mutton kebabs. The red meat’s flavor is heightened with spices made near-addictive by our Xinjiang comrades. Trappist Achel 8 Bruin is up for the challenge while still letting the subtleties of the spice poke thru. How to get there: Line 8’s South Gate of Forest Park Station was made for visiting this park!

LIANGMA RIVER The banks of this manmade river are lined with benches and trees, perfect for those workdays when it’s simply too beautiful outside to return after lunch. Beer style: Wheat beer/weissbier/hefeweizen Food: If you’re playing hooky the rest of the day, the salad sitting in the fridge at work can go well with a few types of beer. Unless you normally packa beer for your workday lunch, you’re in need of one readily available. You’re in luck, as a lighter, crisp beer such as Erdinger Weissbrau can be found without too much hassle. Didn’t bring a lunch? On the north side of the river sits Paulaner Bräuhausin the Kempinski Hotel. Have lunch in the Bavarian-style beer hall and sip brews made on premises in the leafy biergarten. How to get there: Line 10’s Liangmaqiao Station is 100 meters north of the river and serves as a good starting point to access.Pedicabs and taxis are commonly found near the river.

CHAOYANG PARK A massive park with a multitude of options for lazy picnickers who want to do nothing more than fly a kite or fish, but also suits those looking for more intensive outdoor entertainment. Rent a boat to wallow away on the lake or get your thrills on an amusement park ride (ideally before eating!). Plenty of green along with tucked away spaces for those seeking an urban oasis. Beer style: Amber Ale or American Pale Ale Food: Before the summer slips away, get those limes and chilies rinsed off and head to the seafood market to get some fresh white fish to prepare ceviche. Try Redhook Brewing’s Audible Ale or Brooklyn Brewery’s East India Pale Ale – neither will disappoint! How to get there: Chaoyang Park Rd and Liangmaqiao Rd serve as south-north borders, with East 4th Ring Road bordering the park’s eastern edge. Pedicabs and taxis are plentiful. When Line 14 opens before the end of 2014, Chaoyang Park Station is your go-to

YUYUANTAN PARK Scenic spots overlooking lakes, boat rides, locals playing music with traditional instruments and green a plenty – this park is perhaps the most tranquil within city limits. Keep it on your radar for the spring when the cherry trees are in full bloom. Beer style: Pilsner

DITAN PARK This one is for the visitor to Beijing. Ditan Park serves as a good place to sit and relax after visiting nearby sites (such as Yonghegong Lama Temple). In addition to the small temple inside the park, it’s teeming with morning tai chi participants and plenty of ping pong tables to get the blood flowing again before lunch. Beer style: Fruit lambic

Food: MODO Urban Deli (10-6415 7207) can set you up with a picnic basket. Stop in and make your selections and after 15 minutes, you’re with tote bag in hand and ready for the great outdoors. About the only things not included are sunblock and blankets. A formidable pilsner can handle a wide variety of foods on the menu: Thai noodle salad, salmon sandwich, olive tapenade, quiche and more. Pilsner Urquell can be found in many of the bottle shops in Sanlitun. How to get there: Multiple stations on Lines 1 and 9 can get you a few hundred meters from park entrances (Line 16 will have a station named after this park on the east side, but is a few years away from completion). A taxi could be your best bet, especially if coming directly from MODO.

Food: Before you leave your hotel, stop by the lobby café and pick up a few chocolate croissants. The acidity of the lambic will cut through the butter in the croissant and the fruit flavor (perhaps cherry or raspberry) match perfectly with the chocolate. Since you’re traveling light, chilled Brouwerij Lindemans Framboise can be found in any 7-Eleven. How to get there: Taxis are a great option as the park’s just north of North 2nd Ring Road. Or consider Line 2 or 5’s Yonghegong Lama Temple Station. If coming from the south (from the temple) pedicabs are plentiful.

All named beers can be found in Beijing without too much searching. Some parks may charge nominal entry fee. Practice discretion when consuming alcohol and adhere to park rules. Grab a few beers and round up a few friends – the parks of Beijing await you!

The hot months in China require the kind of brew that packs enough flavor and refreshing ingredients to cool down the entire body. We at HOPS deemed the all-mighty IPA worthy of this category, and we scoped out China’s local and import scene to find the best of the best. Chase Williams, our Brew of The Season writer, searched wide and far and found Nogne O to be the IPA of choice for all those searching. We also took it upon ourselves to find five other fantastic IPA’s worthy to be in a magazine called HOPS. Look no further, IPA lovers!

T

he summer months in Shanghai and elsewhere around China are a transient period. A myriad of English teachers come and go along with an abundance of the study abroad and internship crowd. Rooted expatriate families enjoy long vacations with the kids, making the pilgrimage to various destinations around the globe to touch base with extended family. Fleeing the sweltering humid summers, no better time of year is there to escape this urban jungle and re-up on visas. Only fitting for a season when the population is on the move is a beer style whose origins evolved from needing to survive long journeys. Nogne O’s India Pale Ale, the 2014 Hops Magazine Summer beer of the season, is a beer which has travelled a long distance from its native Norway, but appears ready to become a China mainstay. Nogne O India Pale Ale, brewed by Nogne O – Det Kompromisslose Bryggeri A/S out of Grimstad, Norway, is a full-fledged American IPA coming from a not so obvious location. Poured into a Nogne O pint glass, the beer is orange colored with a couple fingers worth of thick off white head. Not looking quite creamy, the still impressive foam maintains a thin presence on top of the beer leaving behind a delicate lacing along the sides of the glass throughout the beer. First smell leaves no doubt as to the style; abundant citrus, orange and grapefruit engulf the nose as the American Chinook and Cascade hops make their presence known. Tasting moderately bitter for an IPA, with caramel and malty flavors noticeable, the British Maris Otter grain bill and American hop varieties juxtapose pleasantly. Full bodied, smooth, and 7.5%abv, this is an exceptional representation of an American IPA and represents how craft beer has gone global; American style, brewed in Norway, drunk in Shanghai.

What is an IPA? IPA’s, as India Pale Ales are known, were first developed by the British as hopped up Pale Ales. Using hops, and a slightly higher alcohol content, as a natural preservative to extend the shelf life of the beer and add consistency to the product over its long voyage to India, they are thought to have first gained popularity around the turn of the 18th and 19th century by George Hodgson of the Bow Brewery. Convenient location to where the East India Company docked and a generous credit line offered, played key roles in the transformation of name and style from the original October Beer exports. With the names’ first documented use in an Australian advertisement in 1829, India Pale Ale had increased in popularity and distribution.

Nogne O, a term coined by famous Norwegian poet and playwright Henrik Isben meaning “naked island,” was used to describe the prominent barren outcroppings off the Norwegian coast. Brewery founders Gunnar Wiig and Kjetil Jikiun, homebrewers in Grimstad where the famous poem was written in 1862, started the brewery in 2002 with the vision to bring diversity and innovation into commercial brewing. Stopping by Liquid Laundry in Shanghai for a meet the brewer event for Shanghai Beer Week, Kjetil spoke with other enthusiastic beer lovers, represented his beer at the Cheers In tent, and brewed the collaboration Norse Smackdown Saison with Boxing Cat Brewery. At one point during his tenure, Mao famously quipped, “women hold up half the sky.” Both men and women put down their Tsingtao to cheer. That message still resonates in our modern time as marketers seek to fine-tune their advertising for women. While the market for beer is decidedly geared towards men, there are groups who are working with conscious industry leaders to include a women’s perspective in their advertising. After all, if women can hold up half the sky, they can certainly hold up a pint of craft beer. Hector Flores Women Enjoying Beer is an organization based in the United States that encourages the art of beer appreciation, albeit for women. Started by Ginger Johnson, Women Enjoying Beer or WEB, has worked to let women know that they have all the right to enjoy the same beers as men and not just the light or fruity beers. We caught up recently with Ginger to talk beer, WEB’s influence and the growth of craft beer in China.

What inspired you to start Women Enjoying Beer (WEB)? Over 5 years ago I looked around and wondered why more women weren’t enjoying beer. Pursuing that question has become the crux of the company. That first question has lead to a solid vision of using the company to shift the culture in a myriad of ways.

What has been the reaction to WEB by the beer community? Female consumers have responded with enormous enthusiasm. Someone is asking them questions and truly listening to their input. The positive comments are steady and heartfelt. However, most of the beer industry is still not recognizing that this is a growing issue. The problem is that they are not addressing the primary buyer: women. To develop a sustainable business of any kind you must examine the interaction between product and consumer.

What have been the hardest misconceptions to break? Women don’t like beer. At a base level, everyone likes flavor!

What have been some of your most successful events? Why? Success is a moving target. A small group who hires me into their home to lead a recreational tasting is equally as successful as being invited to address the Congreso Cerveza de Mexico professional crowd or leading flavor tours at the Toronto’s Festival of Beer. Goals of each event are different per the client and their goals, the expertise we can provide for them and educational services customized for them. Everything we do is based in the qualitative research we do; we’re a research based education and marketing company.

The craft beer industry in China is growing and mimicking the scene in the United States, what would you recommend to brewers in order to reach out to women drinkers from the onset? This is where a business can hire me to advise them. There are different success points for different businesses. One size never fits all. Brewery’s recipes, avant-garde labels shaking up Belgians on offer in China

E

arlier this past spring, I stumbled upon a beer which I found to be richly satisfying. It was La Bella Mère, a Belgian blonde produced by Brasserie Artisanale MilleVertus. Upon catching a glimpse of the beer bottle, I was further intrigued at the cartoon of an elderly woman featured on the label, a curmudgeon of a being. She was pointing at a poured beer, seemingly dissatisfied I had yet to consume it. A granny nudging me I could relate to. But one egging me on to finish my beer? I couldn’t bear to break her heart; I had to indulge. As a bit more time passed and I continued to explore the brewery’s lineup – which only entered the China market in early 2014 –

I noticed La Safranaise, made with real saffron. “Who’s behind these awesome beers?” I began to wonder. “Belgian beers with cartoons and multiple colors on the labels? Saffron, jasmine!?” I had questions that needed answering. It was soon thereafter I became acquainted with Daniel Lessire, who gave up his job of 25 years working as a banker to found MilleVertus (roughly “a thousand virtues”) in 2004. A man who left the Luxembourg banking industry to become a brewmaster without formal brewing training was certainly a man I wanted to learn more about.

How would you describe your brewing philosophy? My brewing research is a quest for taste. Just like a knight in the Middle Ages, I am looking for my Graal [Holy Grail] beer: Millevertus. This one I haven’t found yet but I am on the way to it. In fact the journey to find this graal is very interesting. It has put me in contact with many people who have helped me in my beer approach, my philosophy. First I created “village beers” which I wanted to be for any type of people. Then I realized a medium, no real character-tasting beer was not the thing to brew in Belgium. From that point I started to explore character beer with every kind of mix of ingredients. All these experiments have given birth to my 2014 beers range: 14 different tastes. From this basis, I will now develop every little detail of each brand in quality. Then, in a few years, I will take the best of each to create the first “Millevertus.”

What’s your favorite part about owning a brewery? I have an addiction: brewing. Once you enter this world you have to brew... I like to meet people / customers to hear what they think of what I do so that my recipes can evolve quite quickly.

It sounds like you’re the Indiana Jones of brewing! I noticed your beers have very distinct labels and are unique compared to many beers from Belgium. Did you find it challenging to be “accepted” by traditional Belgium-based beer connoisseurs? Things are evolving. A few years ago, my labels were a bit shocking for some connoisseurs. Now they say it’s original and enjoyable thanks to the quality in taste!

Some of your beer labels have a grandmother figure prominently displayed. What’s the story behind this granny? La Mère Vertus, our best-selling beer in and outside of Belgium, is a typical French play on words. Amère [similar to mère, or “mother”] means “bitter,” which is a typical default of a mother-in-law. Most of the time, every man has a story about a mother in law…Then La Mère Vertus (previously La Mère Supérieure) is the same play of words with amère.

How would you describe China’s beer market? It’s a huge market with a huge potential for my beers. We feel Chinese people are willing to experiment new tastes and willing to learn about the brewing process.

Black pepper, saffron, jasmine…these are not ingredients one sees too often in beer. How did the idea of putting these spices find its way into using them in select varieties of your beer? Every “strange” beer is the result of a valuable encounter with another passionate encounter of taste. I met a specialist of wines and spices who passionately spoke to me about peppers and the result was a year of tests with different peppers and beers. The saffron producer was an original and fruitful meeting too!

How are you like a typical Belgian brewery, and how do you differ? I brew typical Abbey style Belgian beers but I like to explore new paths of taste with spices, but my philosophy is clear: I want to stick to a beer with something plus. Not have an explosive, spicy taste with a bit of foam on it!

Ceviche at El Bodegón Excellence in Simplicity

A

s the inevitable stifling heat encompasses the streets of Shanghai, we at Hops scoped out a specific dish that is both light and refreshing- yet doesn’t sacrifice taste for either. Our unanimous consensus was ceviche- a mouth-watering Peruvian dish with heavy Japanese influences. This classic South American dish can be found at a few Latin restaurants around town, however our top choice was found at El Bodegón. This new establishment focuses on ceviche as their signature dish, and Corporate Chef, Hugo Rodriguez has mastered the recipe. “For me, the most important part of cooking is ingredients. It doesn’t need to be overly complicated- this is how it would taste in Peru,” commented Rodriguez. Simply speaking, ceviche consists of raw fish (there are many different varieties), and is naturally cold cooked in vinegar and lemon juice with spicy chilis and cilantro mixed in. Yes, it is delicious. Always looking to pair an excellent seasonal dish with the perfect pint, naturally we asked Rodriguez which beer complimented the citrusy, spicy, raw seafood that is ceviche. El Bodegón is one of the only restaurants in town that sells Argentina’s “finest” standard brew- Quilmes. Anyone with a bit more of a palette will appreciate the clearly superior option- Estrella Damn Daura Lager. This refreshing, malt-forward lager packs a surprising amount of flavor while at the same time does not dominate the intense citrusy and spicy flavors of ceviche. For those of you on the gluten free band wagon, this is a good choice as it’s completely without. So, as the summer heats up and you consider dining options, take a gander to El Bodegón and experience a true Peruvian experience with an icy cold beer. We know it’s not on a South American beach, however sitting in an air conditioned restaurant overlooking Huashan Lu is a pretty good second choice

CHOCOLATE STOUT CAKE This is for all those who love chocolate. This recipe makes lots of cake batter (three 8 inch layers), so make sure you have deep pans and make enough layers. Or, better yet, make both a cake and some cupcakes at the same time with the extra batter that is beyond what is needed for your cake pans. Just cook the cupcakes a little shorter time (15 to 20 min) to keep them moist. The recipe makes about 11 to 12 cups of batter. This should be enough to share, so remember me and your friends, when your masterpiece comes out of the oven. Or, consider reducing the recipe by half for a standard double layer cake.

For cake:

• 2 cups stout (such as Guinness) or a Double Chocolate Stout • 2 cups (4 sticks) unsalted butter • 1 1/2 cups unsweetened cocoa powder (preferably Dutch-process) • 4 cups all-purpose flour • 4 cups sugar • 1 tablespoon baking soda • 1 1/2 teaspoons salt • 4 large eggs • 1 1/3 cups sour cream

Preheat oven to 350°F (175°C). Butter three 8-inch round cake pans with 2-inch-high sides. Line with parchment paper. Butter the paper. Bring 2 cups of stout and 2 cups of butter to a simmer in a heavy large saucepan over medium heat. Add the cocoa powder and whisk until the mixture is smooth (reduce the heat and do not scorch it). Then, cool slightly so the eggs won’t cook when added to them.

Icing • 2 cups whipping cream • 1 pound bittersweet (not unsweetened) or semisweet chocolate, chopped or use the chips. The magic ingredient...

Whisk flour, sugar, baking soda, and 1 1/2 teaspoons of salt in a large bowl to blend. In another bowl, using an electric mixer, beat the eggs and sour cream enough to blend. Now, add the warm stout-chocolate mixture to the egg mixture and beat just enough to combine. Then add the flour mixture and beat briefly on slow speed. Finally, using a rubber spatula, fold batter until completely combined and divide it equally among prepared pans (and cupcakes). Bake the cakes until a toothpick inserted into the center of the pans or cupcakes comes out clean, about 35 minutes (15-20 min for cupcakes). Transfer to a rack; cool 10 minutes. Turn cakes out onto rack and cool completely. For Icing Bring cream to a simmer in a heavy medium saucepan. Remove from heat. Add chopped chocolate and whisk until melted and smooth. Refrigerate until icing is spreadable, stirring frequently, about 2 hours. Place 1 cake layer on a plate. Spread 2/3 cup icing over. Top with the second cake layer. Spread 2/3 cup icing over. Top with third cake layer. Spread the remaining icing over top and sides of the cake.

Nanjing Craft Beer Festival

T

his last June saw Nanjing’s second annual Craft Beer Fest, spearheaded by brewmaster, writer, and overall- beer and life enthusiast, Mast Gao. For those of us who attended in 2013, it was quite clear that the scale and attendance was more than doubled. Beijing and Shanghai both have two or three years of solid, large scale beer festivals, and Nanjing is not far behind. What makes a beer festival arguably more interesting in a second tier city like Nanjing, however is the obvious grass roots vibe and atmosphere of the entire event. Small scale microbreweries from Nanjing, Hefei, and Henan made their debut in a festival that was half beer focused and half Chinese rock music focused. This was not your ordinary beer festival. Hops sat down with Master Gao after the festival to talk pints and rock music (both his specialty). “We had 20 different craft breweries from China and 32 beer brands from 13 other countries. In total we had 209 different types of beer and our sponsor, China Union Pay, estimated that about 20,000 people showed up,” commented Gao. As is the trend in China from any growing industry, craft beer festivals are only on their way up, and Nanjing is no exception

Two of Beijing Microbrews Show Off Beer’s Pairing Prowess

B

eer enthusiasts and foodies alike know the immense satisfaction when what’s on their plate matches perfectly with the contents of their beer glass. This can happen when the right style of beer is expertly paired with the varying flavors, textures or umami of a cuisine. Two Beijing breweries have recently teamed up with a pair of capital city institutions, taking much beloved dishes up a notch and revealing how beer unique beer is in connecting with food, even more so than wine. Jing-A Brewing Co. (also known as Capital Brewing Co.) combined with Beijing stalwart Hatsune, who for more than a decade have been entertaining diners with its California take on Japanese cuisine. (In the competitive capital, the number of restaurants serving foreign food for that span are few and far between.) Hatsune founder Alan Wong takes pride in keeping his restaurants ahead of the curve and running in top gear, the same way he rides his motorcycles. His energy is perhaps only matched by Jing-A co-founders Alex Acker and Kristian Li. Teamed up, the creative forces were up for the challenge of making a beer capable of heightening the delicate, fresh flavors

of Hatsune’s fusion cuisine. Japanese brewers – of both beer and sake – have long had a corner on the restaurant’s drink offerings. On deciding to offer a craft beer at Hatsune, Wong commented, “You have to keep up with the market and how it’s changing, and deliver what people are expecting – and then a little bit more.” He went on, “The market is such that there’s appreciation for handcrafted, thought out products.” Playing off the elements inherent to koji rice (which is used to brew sake), the collaborative effort incorporates fresh ginger and wasabi root into the final recipe for what became Blushing Geisha Koji Red Ale. Said Jing-A co-found Alex Acker, “We toned down the bitterness because we wanted more of those subtle flavors to come through. Part of it, with a brew that experimental, it’s a bit of a leap of faith to be honest. I think the flavors came together really well.” “Very well,” added Wong. He continued, “It does have that complexity. The wasabi and ginger open up the palate a little bit. For delicate Japanese food, it

goes very, very well but also with the oily fish and roast fish we have.” And that bright red color? Acker says it is attributed to the koji rice, not like most red ales where the color comes from the malts. Unlike the swift chops and dizzying knife action found at Hatsune, Home Plate BBQ smokes its meats for hour upon slowly-passing hour. Spice rubs and smoke from apple and cherry wood weave its way into the restaurant’s Southern U.S.-style fare. The smoked meat is slightly spicy and savory and has complex flavors in need of a respectful beer, not a palate cleanser. Having already been serving Slow Boat Brewery’s craft beers, Home Plate’s pit master extraordinaire Adam Murray pitched the idea of brewing a rauchbier (German for “smoked beer”). When the restaurant opened its second location with a larger sized smoker, Slow Boat’s concern of how much time would be required to smoke the malts in such small batches was alleviated and with it, the idea came closer to fruition. “We also had hesitations about it because most people do a rauchbier with pre-smoked specialty malt from Germany,” said Slow Boat co-founder Chandler Jurinka. Instead, they select the grains, send them to Home Plate for smoking, and finally the smoked malts are returned to the brewery to make

Cannon Smoked Porter. “This really allowed us a great way to put our own fingerprint on it,” he added. “It’s way different from other rauchbiers.” Said Jurinka of Slow Boat co-founder and brewmaster, Daniel Hebert, “For him it’s all about finding a balance. The greatest thing that happened was this unexpected, beyond the barbeque taste, but almost like a bacon taste we had never foreseen. The way he described it was it was like having a seasoned wok. When you first start using an unseasoned one, it has a certain emptiness. But after you use it for a while, it takes on a flavor of its own.” Added Murray with a smile, “It’s all that pulled pork and brisket we’ve smoked in there. It just kind of mellowed inside the smoker.” In particular, he recommends pairing the porter with the ribs. Jurinka notes although a porter and dark, the beer is unassumingly light and would go well with the restaurant’s hearty beet salad. In both instances, the collaboration between the two microbreweries and two restaurants resulted in unique, original beers. Chefs were made happy, brewers made happy. You too can get happy the next time you find yourself at either Hatsune or Home Plate BBQ. Raise a glass and be glad some of Beijing’s better microbreweries and chefs are putting their heads together in collaborative fashion

Third Annual Beijing Craft Beer Festival Drew Lietzow

A

ttendees at this year’s Beijing Craft Beer Festival were treated to spectacular weather, a record number of craft brewery participants and myriad of food options from local vendors. All helped make for a packed crowd, a collection of beer lovers who consumed more product at this year’s festival than the previous two editions. Beijing’s own Great Leap Brewing, organizers of the annual event, estimated 8,000 attendees in total, or about 2,500 more people than last year. This year’s festival included: Arrow Factory Brewing, Bad Monkey Brewery, Le Blé d’Or, Boxing Cat Brewery, Chengdu Harvest Brewing Co., Great Leap Brewing, Jing-A Brewing Co., NB Brewing Co., Panda Brew, and Slow Boat Brewery. Also present was the Beijing Homebrewing Society, which saw a threefold increase in homebrewer submissions. The event kicked off on June 6 amidst an afternoon of rain showers. Optimism was rewarded, however, as the clouds scattered about one hour into the event and festival goers were treated to a star-filled night sky. The following day, the cooler-thannormal temperatures endured and overhead skies were bright blue. Revelers were busy snapping skyward selfies as they sipped alongside friends. Of the 10 craft beer vendors, four were from outside the capital city, including the first appearance from Dali’s Bad Monkey Brewery. “The festival went great for us. We were the new kids on the block but we were surprised how well we were received by the Beijing people. They seemed to like our beer, especially our Amber Ale, which sold out early,” said a representative from rom the Yunnan based brewery. Slow Boat Brewery released two all-new varieties (another two made their first appearance the week previous at the Shanghai Beer Festival).

Said a spokesperson with the company, “We liked seeing a good mix of local and non-local breweries involved. Our hope when we attend festivals such as this is to reach new audiences and seeing new breweries at the event is a good indication the craft beer market is growing in China.” Arrow Factory Brewing enjoyed a wildly successful festival. So much, in fact, they were one of several breweries to sell out of all its beer. The first of the brewery’s line-up to go was its Belgian Ale, Blonde on Blonde. Said the team, “I think we got the word out Arrow Factory is a brewery that takes its craft very seriously – but with a smile.” NB Brewing Co. also got in on the fun: “We had a big success and had lots of fun with other Beijing craft beer guys.” By 6PM on the festival’s second day, Chengdu’s Harvest Brewing Co. had sold out of two of four varieties it brought for the festival. Eventually they sold out of all remaining supplies. “The event was well organized and included the largest number of China craft breweries assembled,” said a representative with the company. Jing-A Brewing Co. teamed up with Shanghai’s Boxing Cat Brewery for a hopforward new release. “We premiered our collaboration beer, Emperor’s Horses Lychee Pilsner, at the festival. People were pretty excited to try it, not only because it was a new beer but because the collaboration element probably made it seem even more exotic,” said a Jing-A spokesperson. About the only hitch was when the event’s live music was put to a halt by local officials. The crowd remained unfazed when the acts were stopped early into the first night and even earlier on Saturday. No matter the threatening rain or long food lines or cancelled entertainment, nothing prevented a good time for the festival’s beer lovers. It all seems to suggest the star of the festival will continue to be the suds produced from many of China’s best craft breweries

Fallen for Brew Slow Boat to host inaugural Beijing Autumn Craft Beer Festival Drew Lietzow

Beijing-based Slow Boat Brewery announced in early July the firstever Beijing Autumn Craft Beer Festival to showcase the handiwork of some of the country’s finest craft breweries. In fact, the festival has won widespread appeal from those in the industry in what is slated to be the greatest number of domestic craft breweries assembled for any Beijing craft beer festival. While beer lovers have been able to enjoy warm weather festivals which often feature light and fruity varities, Slow Boat is betting craft beer lovers will welcome cooler weather and be excited to swill harvest time brews. Recently, Hops spoke with the team at Slow Boat. How is this beer festival similar to and different from other craft beer festivals in China? This is an Autumn festival that’s focused on the changing seasons and changing tastes while highlighting hand-crafted, local, seasonally inspired food and beverages. We’re trying to give the people of Beijing something a bit different by having the festival during the Fall and celebrating the unique, fresh flavours of Autumn Beers. This festival is going to be similar to other Beer Festivals in that the focus is on giving a fun event to attend, spreading the craft beer gospel, and supporting the growth of China’s craft beer scene.

Will this event mimic Oktoberfest celebrations in any way? We won’t be wearing dirndls if that’s what you’re asking! Some of us might wear them actually. I think we can safely say that one key difference between this festival and German Oktoberfest celebrations is that there will be less Germans attending.

At other beer festivals in China, it can be quite tough to find vendors specializing in Chinese cuisine. Will you have any food vendors showcasing local Beijing cuisine or regional Chinese food and how it pairs well with all styles of craft beer? We have already locked in a few local Chinese food vendors whose products are handmade using high quality ingredients. We also have some foreign food vendors who have proven to be very popular to local Beijingers. Beer can pair with just about anything, so as the deadline for participation approaches, we hope that a few more Chinese food vendors will join us.

Do you have any tips to share for someone who’s planning to spend a better part of a day at your festival, sipping on beers, some of which may be quite high in ABV? Any tips to keep craft beer lovers on their feet and not prone to the early evening nap? Good question. Drink lots of water. I’ve heard tell that eating yeast ahead of time will help beer drinkers avoid a hangover… but that might be hear-say. The only tried and true method to help beer drinkers spend all day drinking without crashing is to start practising early. Come to Slow Boat regularly and just keep drinking, regularly. Shanghai’s First

HOMEBREW COMPETITION

W

hen Hops first sat down with the Shanghai brewmasters to organize the city’s first official Homebrew Competition, we had anticipated about 50 entries. We underestimated you, China! Instead, deliveries were dropped off to our modest office nearly every day for over two months with a staggering total of 181 entries. Bottles were sent from 13 different provinces, clearly proving that craft beer appreciation in China is rising at a rate we can only try to keep up with. On the morning of May 31st, the brew masters and top homebrew experts in town were in for a treat as the tasting and judging began. Each category had one winner, including submissions for Wheat, Lager, Ale, Dark, and Experimental. An overall winner with the highest score was also chosen, and Hops is now proud to officially announce the winners. Prizes were donated from Yakima Chief, Barth Haas, Cool Brewing, and of course our main prize was provided from Speidal- a 20 liter Braumeister professional brewing machine.

SPECIALTY GRAIN – 0.5 kg Caramel 10L

OTHERS – 1 Whirlfloc tablet (10 min)

FERMENTABLES – 1.0 kg Extra Pale DME – 1.5 kgWheat malt syrup (20 min) – 0.5 kg Honey (10 min)

YEAST Dry yeast (default): Safbrew Ale S-33 Ale Yeast. Optimum temperature: 64–70°F – 18-21°C.

HOPS & FLAVORINGS – 30 g Tettnang hops 6.1%AA (60 min) – 2 to 4 liters fresh Watermelon Juice

PRIMING SUGAR – 5 oz Priming Sugar (save for Bottling Day)

PROCEDURE

BEYOND BREWING DAY;

ON BREWING DAY 1. Collect and heat 1.25 gal (5 liters) of water.

WEEK 1 14. Active fermentation begins. Within approximately 48 hours of Brewing Day, active fermentation will begin – there will be a cap of foam on the surface of the beer, and you may see bubbles come through the fermentation lock.

2. Pour crushed grain into a mesh bag and tie the open end in a knot. Steep for 20 minutes or until water reaches 170°F (77°C). Remove bag and discard grains. Bag can be reused…. 3. After removing the grain bag, bring almost to a boil and add the Extra Pale DME. Remove the kettle from the burner and stir in the malt extractto avoid scorching on the bottom. Add water to reach 3 gallons (12 liters) of boil volume. 4. Return wort to boil. The mixture is now called “wort”, the brewer’s term for unfermented beer. • Add 60 minute hops and boil for 60 minutes. • Add the Wheat malt syrup after 40 minutes (20 min left in the boil) • Add 1 Whirlflocand the Honey with 10 min left in the boil. 5. Cool the wort. When the 60-minute boil is finished, cool the wort to approximately 35°C as rapidly as possible. Use a wort chiller, or put the kettle in an ice bath in your sink. 6. Sanitize fermenting equipment and yeast pack. While the wort cools, sanitize the fermenting equipment – fermenter, lid or stopper, fermentation lock, funnel, etc – along with the yeast pack and a pair of scissors. 7. Fill primary fermenter with 1 gallon of cold water, then pour in the cooled wort. Leave any thick sludge in the bottom of the kettle. 8. Add more cold water as needed to bring the volume to 4.5 gallons. 9. Aerate the wort. Stir the fermenter hard to splash for a few minutes, or use an aeration system and diffusion stone. 10. Optional: Measure the specific gravity of the wort with a hydrometer and record. 11. Add yeast once the temperature of the wort is 78°F (26°C) or lower (not warm to the touch). Use the sanitized scissors to cut off a corner of the yeast pack, and carefully pour the yeast into the primary fermenter.

15. Active fermentation ends. Approximately 4 days to 1 week after brewing day, active fermentation will end: the cap of foam falls back into the new beer, bubbling in the fermentation lock slows down or stops. Temperature determines the speed. 16. Transfer beer to secondary fermenter. Sanitize siphoning equipment and an airlock and carboy bung or stopper. Siphon the beer from the primary fermenter into the secondary. BEYOND BREWING DAY— SECONDARY FERMENTATION 17. Secondary fermentation. Allow the beer to condi¬tion in the secondary fermenter for 1 week before proceeding with the next step. Timing now is somewhat flexible. 18. Juice Addition. Add your fresh watermelon juice after transferring to the secondary fermenter. Add 1 liter at a time and taste to reach the flavor you want. Add less now and maybe more at bottling time if you like.

BOTTLING DAY ABOUT 2 to 2.5 WEEKS AFTER BREWING DAY 20. Sanitize siphoning and bottling equipment. Measure FG of the beer as in step 11 (optional). 21. Siphon beer into bottling bucket and mix with priming solution. Stir gently to mix—don’t splash. 22. Taste the beer and see if you wish to add additional juice at this time. 23. Mix a priming solution (a measured amount of sugar dissolved in water to carbonate the bottled beer) of 2/3 cup (150g -160g) priming sugar in 16 oz (1 liter) water. Bring the solution to a boil and pour into the bottling bucket. No need to cool it. 24. Fill and cap bottles.

12. Seal the fermenter. Add approximately 1 tablespoon of water to the sanitized fermentation lock. Insert the lock into rubber stopper or lid, and seal the fermenter.

13. Move the fermenter to a warm, dark, quiet spot until fermentation begins.

26. Chill and serve. Pour into a clean glass, being careful to leave the layer of sediment at the bottom of the bottle. Cheers

25. Condition bottles at room temperature for 2-3 weeks. After this point, the bottles can be stored cool or cold.

Philippine Scene: Cuervo Creates Crow’s Craft The craft-brewing scene in the Philippine has shown tremendous tenacity in the last several years with stalwarts’ Katipunan, Pivo Praha, and Fat Pauly’s leading the charge.

New additions to the brewing scene have focused their energies to create distinguished brews appealing more to the beer geek than weekend taste taster. Crows Craft Brewing is currently one such new comer whose limited batch beers have lead to a cult like following in Manila. Crows Craft started out has a home brewing hobby for founder Jose Cuervo and metamorphized into a serious all consuming passion for great beer. Jose was introduced to craft beer by a local friend and was instantly galvanized by the usual suspect in such cases, the infamous IPA. Jose started by home brewing clones but eventually sought out more control over his beers by immersing himself into the complexities of the process. Admittingly, Jose is a self-proclaimed, “hop head” and skews more towards bitter beers as evident by his immensely popular (and hoppy) Stoned Crow IPA, De Puta Madre XXIPA and Crows Simcoe Smash beers. Jose’s operation produces enough beer to supply local bottle shops in the Manila area with no current plans to upgrade his brewing capacity. However, each limited run batch brings out beer aficionados who are quick to praise Jose for his commitment to the reinheitsgebot using only the highest quality of malt, hops, yeast and water with no additional adjuncts or preservatives. While offers have been made by investors, Jose’s steadfast commitment to his beer and his own appreciation of the craft have lead him to put those offers on ice. Jose says that there is still a lot to learn from small batch production and increasing volume would only comprise the quality of his beer. Jose mentions that the camaraderie of the brewing community in Manila and the Philippines makes it seem like one large extended family. Jose says that he likes it this way because in the end, it’s really about getting together with a bunch of friends and enjoying some good craft beer. Cheers!

3) KATIPUNAN CRAFT ALES Katipunan Craft Ales is another young Manilabased company that aims to bring the craft brewing revolution to the Philippines. Try their flagship, Indio Pale Ale (4.8%) at Kanto, sa Podium. The brew has a nice, crisp, strong flavor with pleasant hints of sweetness. The amber colored beer is somewhat fruity and has hints of spice that Pinoys will appreciate. This is not a beer you guzzle down in buckets, but if you’re willing to pay more for quality brew, this is a good choice.

Monticello Ciders Guangzhou Offers More Than Just Beer Hector Flores

The brainchild of American expatriate Aaron Solenski, Monticello Ciders produces crisp ciders and exotic perrys for punters seeking an alternative to beer in Southern China. Note: for this article, we will refer to freshly pressed apples as apple juice, and to fermented apple juice as apple cider or simply cider.

However, Aaron notes “many of my most appreciative customers are local Chinese who like the sweet, refreshing sensation of a Western style cider.”

Long before establishing his burgeoning cider business in Guangzhou, Aaron Selonke learned the craft of cider making from his grandfather in the idyllic apple orchards of Michigan. Every spring, an abundance of apples would inevitably lead to an abundance of apple juice that Aarons grandfather was keen to preserve by making into cider.

Once dedicated to the endeavor, Aaron pleasantly discovered that the framework for cider making existed in China and even in his own backyard in Guangzhou. Unbeknownst to many, China is a world leader in apple production with the provinces of Xinjiang, Shandong and Henan producing the lions share. Aaron also discovered that a fruit & vegetable terminus station in northern Guangzhou was willing to press the apples for him, eliminating the need for Aaron to own pressing equipment and to dispose of the apple waste. This afforded him the opportunity to focus more on his ciders, which can take several months to mature.

Aaron reminisces of his childhood days spent helping his grandfather haul containers of freshly pressed apple juice. “We would quickly make it into cider” Aaron says, “as a way to prolong its self life, otherwise it turns vinegary rather quickly.” This yearly event seasoned Aaron and the experience stayed with him as he grew up and ventured to Asia as an adult. Fast-forward several decades to Southern China where Aaron has seized on an opportunity to supply thirsty expats with his small batch ciders. The idea to produce cider locally took root in the spring of 2014 with the intention of filling a void and continuing the skillset Aaron learned from his grandfather as a child. Aaron says “The British turn to cider as their drink of choice while Americans think of it as a way to mix it up.” The cider scene in China can be described as nascent at best with foreign brands such as Magners and Strong Bow available throughout the middle kingdom. Domestic manufactures of cider cater their products to the Chinese palate that favors a low alcohol and vinegary beverage.

With sourcing figured out, Aaron set forth to develop a line of ciders. His initial and now mainstay, is a sweet cider based on an apple varietal easily available in China, the Kingston Sharp. “It lends itself well to cidering because of its high juice content. There are not a lot of tannins though,” Aaron says, “but it’s easily available and good for ciders.” To achieve more balance, Aaron uses a blend of apples to get a better proportion of acids and tannins, which provide the cider with more body and complexity. In an effort to test his work with customers, Aaron turned to friend David Strand of Strand Beer Café in Guangzhou. David was willing to have him on as a guest tap at his bar and, wanting to keep a connection to his American roots, christened his endeavor Monticello Ciders. Aaron hopes that the name invokes the historical connections that the American founding fathers had with cider making, which before prohibition was a tremendously popular drink. A year removed from his debut at Strand Beer Café, Aaron’s operation has afforded him the opportunity to refine his beverage portfolio. While Monticello Ciders is known for its popular sweet cider, Aaron has also added a dry hopped cider for hopheads and IPA lovers. In addition, Aaron has developed two fantastic perrys based on locally sourced pears. He

The guest tap at Stand Beer Café gave Aaron a shot of confidence as his ciders have sold well and he has received positive customer feedback. Aaron describes the moment succinctly, “I was so happy, it was a big milestone for me, and people said it was the best cider they have had in China.” This success brought more requests for his ciders that can now be found not only in Guangzhou but also in the neighboring cities of Foshan and Zhuhai. The success Aaron has enjoyed with Monticello ciders has not fogged his memory to whom he owes a debt of gratitude, his grandfather. Even though Aaron is now busy running a growing business, he still turns to his grandfather for advice and suggestions thus reinforcing the connection between Guangzhou and Michigan. A long way from the wilds of Michigan, we can be rest assured that Aarons grandfather is feeling proud of the young lad who grew up and brought cider making to the Pearl River Delta of China

Brewery: Dubuisson Brewery The Cuvée des Trolls is a blond beer,either filtered or unfiltered. Fresh and scented, full and well-balanced and highly digestible, it has an alcohol volume of 7%. It is characterized by all of the unique Dubuisson Brewery qualities. Specifically, it is brewed in the traditional way, it is 100 % natural, it has no additives and it possesses unquestionable character. Strong Pale Ale | 7.0% ABV

Peche Mel’Bush Brewery: Dubuisson Brewery When the taste of peach meets the strongest beer in Belgium. Created many years ago by students as a cocktail, the Pêche Mel’Bush was originally a mix of equal parts BUSH Amber and peach gueuze. Brewed since 2009 by the Brasserie Dubuisson with the same rigor as the other Bush beers, made to an original recipe based on natural peach extracts, the Pêche Mel’Bush has what it takes to satisfy everyone who likes fruit-flavoured beers with character. The natural flavorings and extracts of the fruit complement the original bitterness of the Bush Amber to create a rounded and perfectly balanced beer. Fruit Beer | 8.5% ABV

Brewery: Dubuisson Brewery Created in 1933 at the Dubuisson Brewery, Bush Amber is the strongest and one of the oldest of all Belgian beers brewed by top fermentation. The use of caramel malt and noble hops gives it, besides its amber robe, a full bodied bitter sweet taste that is particularly dense, mellow and well balanced. With its bittersweet taste, it goes very well with chocolate desserts or sabayon. Amber | 12.0% ABV

Bush De Nuits Brewery: Dubuisson Brewery At the start of the process BUSH DE NUITS is Bush Noël which has been matured for more than 6 months in oak barrels previously used to hold the famous Nuits Saint Georges wine, instead of being traditionally kept in storage tanks at 0° C. This amazing process means that BUSH DE NUITS develops a very full palette of flavours with wine-like aromas of red fruits that gives an amazingly harmonious balance in the mouth. This is great art! Strong Dark Ale | 13.0% ABV

Curmi Brewery: 32 Via Dei Birrai Refreshing, slightly acidulous (due to the spices), in which malt and hops are delicately blended. Quaffable beer with a medium body, although with more texture than other products in the same category. Wheat Ale | 5.8% ABV
