Unleashing Growth

As we reach the midpoint of 2023, I can't help but reflect on how eventful it has been. Self-reflection is important, but it's crucial to strike a balance and avoid being overly critical of ourselves and our current circumstances. One of my main goals for this year was to travel more, prioritize my leisure time as much as my work time, and explore new interests and hobbies. I'm pleased to say that I've made significant progress in each of these areas. Moving forward, I want to continue focusing on the things that bring me fulfillment and dedicate more time to learning and honing my skills. It's no secret, but it bears repeating: while staying busy and keeping things moving is necessary,

Red Sea Global (RSG), the multi-project developer behind the world’s most ambitious regenerative tourism destinations, The Red Sea and

Amaala, has agreed to a pilot project to lay Partanna’s carbon negative concrete pavers at its landscape nursery. Partanna is the pioneer of the world’s first carbon negative concrete, with technology that not only avoids carbon emissions, but naturally removes it from the atmosphere. RSG has agreed a pilot project for the manufacture, delivery, and installation of an initial 11,000 carbon negative pavers.

The pavers will be placed at RSG’s landscape nursery, the largest in the region at one million m2, which is set to grow more than 30 million plants by 2030 to landscape The Red Sea and Amaala destinations.

When I had the idea for this column, I was actually doing just that: Waiting for the train. A night train, to be precise, which would whisk me from one country to another and would see me embark in my destination city’s centre just in

the drinks trolley while a chap orders an entire minibar. You can walk to the restaurant car or the bar and have a meal or a drink you like. You don’t have to be there 2-3 hours before departure, and it doesn’t take you ages to get from an airport into the city. You arrive and you’re bang in the middle of whatever action it is your destination has to offer. One of the greatest things is to take the night train to Venice and embark just steps away from St. Marcus Square, leave the station, rub your eyes, and go “Ah! Venice!”.

where’s the connection to hotels and restaurants here? Having a hotel close to the airport was yesterday. Tomorrow’s hotel should be close to the central train station. Running a restaurant? You’ll want a branch in or just outside a major train station. A contact of mine, who runs an expanding fast-food franchise in Europe, has just completely changed strategy from expanding via malls to growing via train stations. It makes sense, because at least in Europe, there are more train stations than malls.

I like trains. I have always liked trains. Sure, I’ve flown hundreds of flights, but even the finest business class flight can’t compare to first class train travel. On a train, the seats are wider and so are the corridors. You can get up without the fear of getting stuck behind

Relatively soon, if recent media features are to be believed, you’ll be able to do that in Dubai, too. Hop on a train, enjoy, step out and go “Ah! Riyadh!”. Well, it doesn’t have the same ring to it as Venice, but the principle is the same. Train travel is coming to the GCC and both, the KSA and the UAE government, recently announced that, regular trains aside, there will be special luxurious trains for scenic routes and traveling in style. Think Dubai Metro Gold Class, but tons better.

Right, you might say, but

Additionally, we all know the hotel chains that have private jets and yachts. One of them rhymes with “Hive”, the other one doesn’t really rhyme with anything useful. Once we have a GCC-wide rail network, will we see hotel chains creating private trains?

Will the GCC rail network be connected to Interrail? If so, let’s prepare for an influx of backpackers.

Mostly, though, I think train travel will really boost tourism in many GCC countries. There’s currently

very little incentive for someone who spends a week in Dubai to fly to Doha for a day or even further to Riyadh. Once trains are an option, people will think about the scenic journeys that await and the luxury that abounds on such long-distance lines.

For others, it’ll mean a quicker connection to friends and families in other parts of the GCC. Standard train travel is often cheaper than flying and indefinitely more comfortable than taking a bus. It feels like the arrival of trains in the GCC is going to open the next chapter of tourism and that’s not even looking at it from a sustainability angle (which most regional governments increasingly do). It’s a matter of hassle-free traveling. Think taking the Eurostar from London to Paris. Sure,

boarding takes slightly longer now that the UK isn’t in the EU anymore, but it’s still only a fraction of an airport check-in.

The GCC is lucky in that the countries are building the most modern railroads currently possible, so highspeed connections will be the standard. I recently took a train from Munich to Berlin – a distance not too dissimilar to traveling from Dubai to Doha. It took 4 ½ hours. I had WIFI. I had legroom. I was able to order my favourite food right to my seat at a time of my choosing. And it was 3 hours faster than taking the car and about an hour faster than taking the plane.

Azar's hospitality journey started during his early years when a profound wanderlust for exploring the globe took hold. "With an eager spirit, I embarked on my expedition in the front office, eagerly delving into various facets of the hotel industry, eventually leading me to discover my distinctive niche within the expansive world of hospitality. This professional journey has moulded me into a seasoned hotelier, enriched by an array of experiences and an unwavering commitment to pursuing excellence. I consistently remind my team that, just as I started at the front office and ascended to the position of a General Manager, they too can achieve the extraordinary if they wholeheartedly dedicate themselves to the goal."

"Jumeirah felt like a natural fit. My journey started in 2008 as Director of Rooms at Jumeirah Beach Hotel. After succeeding in my first role, I was promoted to Executive Assistant Manager of Rooms before transitioning to Resident Manager.

I spent a year assisting the General Manager at the ultimate family destination. In 2010 I worked at Bab Al Shams Desert Resort and Spa. Then in 2011, I lent my expertise to Jumeirah Creekside Hotel during the pre-opening phase.

By 2012 I was appointed Hotel Manager of Jumeirah Mina A'Salam, the first hotel to open at Madinat Jumeirah in 2003, and a leader in the world of luxury travel. After successfully running the day-to-day management of Jumeirah Mina A'Salam, I joined sister hotels Jumeirah Al Qasr and Jumeirah Dar Al Masyaf as Hotel Manager in 2013. I was later promoted to General Manager in 2015. And I am privileged to be the General Manager of Jumeirah Al Naseem today, a property

that completed the Madinat Jumeirah tetralogy."

Jumeirah Al Naseem upholds sustainable and inclusive practices across the hotel, including initiatives such as eliminating single-use plastics across their supply chain and implementing innovative food waste management systems, and incorporating smart building and guestroom management systems to reduce waste and energy consumption optimising energy usage across all properties. Jumeirah Al Naseem is also home to the Turtle Lagoon, which monitors the progress and condition of rescued sea turtles before releasing them back into UAE waters. Together with Dubai Turtle Rehabilitation Project (DTRP), the hotel plays a crucial role in wildlife preservation by hosting regular workshops educating communities and guests on marine biology and sea turtles' local and global plight. They have saved and rescued over 2,000 sea turtles and look forward to releasing more turtles on June 16th to celebrate World Sea Turtle Day (an event adored by the hotel's little guests).

What, in your opinion, is the most important role of a General Manager?

As the General Manager of a luxury hotel, my primary responsibility is to refine and oversee all aspects of the property's operations and management. This includes managing departments such as housekeeping, food and beverage, front desk, financial management, market-

Furthermore, I consistently monitor the competition to ensure that we stay ahead and provide our guests with the best possible experience. This requires keen attention to detail and a deep understanding of industry trends and demands. Our business is constantly evolving, and we must proactively stay ahead of the game.

In addition, understanding what is important to the younger generation is essential. The values and philosophy of the younger generation have significantly evolved, and as a manager, I must adapt my management style to accommodate these changes. Simultaneously, I am responsible for the wellbeing and happiness of my employees, ensuring they remain motivated to deliver exceptional service to our guests.

Hospitality is a 24-hour business that requires constant attention and care.

Each day brings unique challenges and opportunities, as I collaborate with people from diverse backgrounds and cultures, each with their own values and perspectives. However, at the core, respect and a shared goal unite us. As a dynamic individual, I find joy in exploring new opportunities and challenges that come my way, even if it means adjusting personal plans or working on holidays.

When did your career in hospitality start?

My career in hospitality began at a young age while growing up in Zermatt, Switzerland, where my family owned a hotel. As a thirdgeneration hotelier, I knew from the start that I wanted to follow in my family's footsteps. I was fortunate to have extensive travel experiences at a young age, which further fuelled my passion for the hospitality industry.

I completed my education in Switzerland, earning degrees in Culinary Arts as a Chef and Sommelier, with top grades in my state.

I continued my studies at the Australian International Hotel School in Canberra and later at Cornell University in the USA, where I

acquired valuable skills that have been instrumental in my career.

Throughout my professional journey, I have gained extensive experience working for various small luxury boutique hotel operators before joining Hyatt and

later Hilton. I embarked on my Hyatt journey in 1999 in Dubai and had subsequent opportunities in Muscat, Moscow, Doha, and Mumbai. Finally, I joined Hilton as the General Manager of the luxurious Waldorf Astoria in Lusail, Doha.

How did you get selected for this position?

I was selected for this position based on my extensive experience in the hospitality industry. Throughout my career, I have worked in luxury, upscale, and select service operations in both urban and resort environments. Additionally, I have been involved in pre-opening processes and have overseen the development and opening of several hotels in my capacity as an Area Vice President.

When did your chef career begin?

My interest in cooking and food started from a young age. I have always been in and around the kitchen as a kid. Memories, moments, and significant food events in my life began with a basic love of eating simple, nourishing food. This emotional attachment to cooking sparked my career over a decade ago in South Africa, the motherland. Shortly

after, I found myself making my way up and working at WD~50 in New York City, which I would say kicked off my culinary journey.

What was the inspiration behind Jailbird?

It all started with a craving. Our team came together during COVID, the peak of culinary experimentation, and

thought about great fried chicken coupled with a strong brand. We had tasted good fried chicken, but the market lacked great, flavourful, and well-executed fried chicken. I got in the kitchen to make some, and the rest is history.

How do you remain competitive in the quick-service restaurant business?

Remaining consistent is key. From quality, service, relationships, and work environment, the Jailbird team strives to maintain consistency in everything we do. Over the years, we have built a community that ranges from our dedicated staff to our loyal clientele. Nurturing and maintaining these relationships is what keeps us going.

Tell us about the menu at Jailbird?

The menu at Jailbird is a clear representation of the brand. It is daring, bold, and unapologetic, offering more than just the sum of its parts. The sheer simplicity of the menu adds to its complexity. While designing the menu, we never shy away from experimentation and breaking norms.

Food delivery is becoming an integral part of a customer’s daily habits due to the convenience, and with the younger generation becoming progressively tech-savvy, ordering food online is more preferrable. At Lavoya, I have seen first-hand the acceleration of cloud kitchens in the Middle East, to meet this demand. To further enhance our brand presence in the region we have launched our first venue in Dubai this June for our leading Lebanese street food concept, Barbar. The Barbar cloud kitchen will be our pilot location and depending on its success, we will expand the concept across the remainder of our portfolio in the coming months. The rationale behind adopting the initiative comes after already establishing flagships stores for each of our three brands. We recognised the ongo-

ing demand for delivery service and understood the benefits of expanding our brand operations without a physical dine-in location for customers. Overall, the future of cloud kitchens looks promising. The concept is highly cost-effective as it eliminates the need for expensive real estate, rent, and utilities associated with traditional brick-andmortar restaurants. They are also convenient ways for restaurants and businesses to expand their reach across the region.

Taking this into account, the format does come with certain challenges. Efficient management of operations, from preparing food to the correct handling of deliveries, is crucial and businesses must invest in the right technology and systems to successfully streamline these operations.
