How do you make a great first impression on your guests?
I always kick things off with a signature drink— it just feels like an instant party! I love serving something simple but refreshing. Depending on the time of day and the seasons, a citrus…. like a citrus spritz or a herb-infused mocktail, sets the mood right from the start. But the most important thing is to be relaxed and make them feel at home. Ensure you have a curated music playlist to set the vibe as soon as they come in.
What’s your approach to hosting large groups of family and friends?
I always recommend serving meals familystyle—it’s communal, relaxed, and perfect for creating those long, lingering dinners that feel like a celebration. For the main course, I go for something simple yet impressive, like a whole roasted or grilled fish. Let fresh citrus and fragrant herbs do the heavy lifting in terms of flavour—there’s no need to overcomplicate it. Pair it with seasonal sides, and you have an easy yet elegant spread that pleases everyone. I’m a fan of place cards, even for big groups. You know your guests and you know how to sit them together so they can have the best time. It’s time-consuming for you but well worth it.
What’s a quick hack to enhance an event?
I love creating themes for table decor. It’s easy and always surprises your guests. Think of play dates. The vibe is as important as the menu but don’t stress. Remember to have fun
planning. Keep in mind that if your friends want a Michelin star experience, they’ll go to a restaurant. They are coming to have fun with you.
For brunch or lunch, an infused water station is my go-to trick. It’s super easy to put together and looks great on the table. Just grab whatever you’ve got in the fridge—cucumber and fresh mint, or berries and fresh basil—and let the flavours do their magic.
What are some easy ways to make your table setting more festive?
I like to keep it simple but thoughtful. Seasonal flower arrangements always bring a touch of charm, and little details like bows on napkins or a few candles can really elevate the setting. It’s all about those small touches that make the table feel warm, inviting, and ready for a great time.

As diverse as Dubai’s food scene is, Balkan cuisine has been largely underrepresented, with a couple of exceptions. Merak, a newly opened restaurant featuring dishes from the seven countries that make up the Balkan region, leans heavily into tradition with live music and family recipes and has already become a hit with a nostalgic expat community longing for a taste of home.
We catch up with Macedonian national and Taj Holding CEO Gorjan Kandikj, who was tasked with bringing this personal project to life.
At what moment did you realise you wanted to work in hospitality?
I grew up in Skopje, Macedonia where I also started my career.
Inspired by the family restaurant that my father had then and the way that it gathered the family together when we were cooking and preparing traditional pickled items.
I decided that this is the industry I wanted to stay in, while working in Zakynthos, Greece. I worked for a beautiful family restaurant named Olympic Flame, where every single staff member was a family member. It was a beautiful experience. I worked there for two seasons, and it really changed the way that I looked at the industry.
How did you get your big break in the hospitality business?
My big break in the industry was my move from Dubai to Saudi Arabia. Leaving from Media One to work for TGP, for the expansion of many Kuwaiti Franchised restaurants to Riyadh.
Then came a move to Taj Holding and Noon United as an F&B Director and now I’m the CEO of the company. I am extremely proud to have created all the brands in the portfolio.
What makes Dubai an attractive market for restaurateurs?
What makes Dubai different than most places is the diversity of restaurant and consumers’ appetite to try and experience something new, as well as appreciation and showing real loyalty if they are happy with both, the offering and service.
What would you say are the main differences between operating in Dubai and in Saudi?
The difference in the operation is huge. Not only between Dubai and Saudi, but even between Riyadh and Jeddah for example.
Dubai has a lot more brand loyalty and go-to locations than Saudi. Saudi is very trend driven, where you constantly need to work on eye-catching products.
On another side is the staff. It’s very difficult to find good talent in Saudi, whereas in Dubai, it’s easy to attract good talent.
How would you describe Merak as a concept?
“Merak” is a unique Balkan restaurant. It’s a mix between a natural smoke house, premium butchery with a one-of-a-kind culinary offering that brings the best of the Balkan region to Dubai.
The name “Merak” means a wish and delight or curiosity to try or experience something new.
Our cuisine is a melting pot of the seven countries of the Balkan region and the menu also features some Mediterranean and Levantinspired dishes. Starting from the live music performances and smoked artisan products to the dishes that just make you feel as you have just travelled straight to the Balkans.
How does the culinary offering at Merak set itself apart from what is currently available in Dubai?
The offering that we have is very different from our competitors. We have focused on using the most authentic ingredients to produce all of our dishes, and we are currently the only restaurant in the market that is producing organic smoked deli products in the traditional way.
One of the main differentiators is the team experience. Starting from Toni our Head of Meat Production, who has been a meat technologist for the past 30 years in one of the best factories across the Balkans, and who owns his production line today in Macedonia, supplying over 150 restaurants.
Joe Matta, our group executive chef, who has been leading 7 Balkans Bistro in Jeddah, and has headed our global expansion. Finally we have Haris Ahmedovic, who is the master behind the grill.
How has the reception been so far?
The reception so far has been amazing, and we are proud of the feedback we received. We have hosted more than 10,000 people over the past two months and started to see regulars returning on weekly basis.
Do you have any upcoming developments or launches you can share?
At Merak, we are about to launch our Charcuterie and Wine night and elsewhere within the Group, our upcoming developments are the opening of It Caffe and Pronto in Dubai.

My interest in wine began many years ago in my family's cellar and deepened during my studies in hospitality. While interning at a fine dining restaurant with an exceptional wine collection, I had the privilege of assisting the sommelier with daily operations, organizing the cellar, and tasting various wines. I was also fortunate to have an inspiring teacher who introduced me to vineyards and passionate

Education
Wine knowledge is complex, and professional training will guide you through it in an organized, methodical way. Enrolling in a sommelier certification program is a must. There are several internationally recognized courses, such as the Court of Master Sommeliers (CMS) or the Wine & Spirit Education Trust (WSET), that offer structured learning and certification at different levels.

Taste, taste, and taste again
Attend as many wine tastings as possible. Becoming a skilled taster is crucial and the ability to recognise the subtle nuances between different wines will set you apart. Tasting is about more than just flavour—it's about appreciating balance, identifying aromas, and understanding texture. I recommend practising regularly and taking detailed notes on each wine. Compare different wines from the same region or of the same grape variety, and over time, your palate will sharpen.
Industry experience
One of the best ways to deepen your understanding of wine is by working in the hospitality industry. For me, starting in the restaurant business opened doors to endless opportunities for learning. Working alongside experienced sommeliers and interacting with guests can provide invaluable real-world insights.
I began my career as a waitress while balancing my studies, alternating two weeks of work with two weeks of school. The restaurant owner encouraged me to study wine, opening doors to greater career opportunities. After graduating, I pursued wine studies for three years through internships at Michelin-starred restaurants. In my final year, I had the privilege of joining Alain Ducasse’s restaurant, working closely with Gérard Margeon and some of France’s top sommeliers, and later continuing this experience in London.
This journey has led me to my current role in SHG’s Daylife division, where I have the privilege of working on a dynamic portfolio of brands in some exciting locations, and alongside some inspirational people. I owe much of my success to these incredible individuals whose passion and knowledge have inspired me to push beyond my limits, work hard, and remain persistent in my pursuit of excellence.
Staying on top of the trends
Like any craft, learning never stops. The diversity of my work not only keeps me actively engaged in the industry but also allows me to stay at the forefront of emerging trends in the world of hospitality and wine.
A sommelier’s education continues throughout their career. I encourage every aspiring sommelier to stay updated on the latest trends, regions, and emerging winemakers. Reading wine literature, joining tasting groups, and attending masterclasses will help keep your knowledge fresh and relevant.
Certification also doesn’t end with your first diploma. Many sommeliers go on to pursue advanced levels of certification, such as the Advanced Sommelier or Master Sommelier exams, which are among the most prestigious qualifications in the wine world. These designations reflect a sommelier’s commitment to excellence and expertise in their craft.
Understanding the business side
Being a sommelier is not just about tasting and recommending wine; it’s also about understanding the business behind it. Successful sommeliers often play a vital role in managing a restaurant’s wine program, which includes building wine lists, negotiating with suppliers, managing inventory, and staying within budget constraints. A solid grasp of the business side of wine ensures that you can balance quality with profitability, an essential skill for any sommelier working in a fine dining establishment.
Sharing wine with others
Finally, the joys of being a sommelier are about sharing your passion with others. It’s about creating memorable experiences for your guests by introducing them to new flavours, guiding them through wine pairings, and making each glass a journey of discovery.

Growing up in Hong Kong, tea was a central part of my life (Natalie). It was shared at family meals, steeped in rituals, and appreciated for its depth and variety. Years later, living in the UK, I found myself drawn to the culinary arts, particularly the intricate world of food and wine pairings. But as someone who cannot tolerate alcohol, I often felt excluded from the experience. While others enjoyed the storytelling and craftsmanship of wine, I was left with a glass of water. It was during one such dinner, watching Charlie pair exquisite wines with each course, that the idea struck: why couldn’t tea take its place as a refined, celebratory beverage?

THE START-UPS

Our industry is often said to not be very innovationfriendly and news of nontech hospitality start-ups is somewhat rare. It’s not that there is a complete absence of innovation – it’s more that it’s incremental rather than abrupt. In other words,
we’re more likely to make a hotel room more comfortable, than come up with an entirely new room altogether.
For some years, I’ve worn both a hospitality and a start-up head, but rarely do these two snuggly fit together. The end of November, though, was one of
these rare times, when they did and I had the pleasure of attending the second edition of a hospitality, travel, and luxury start-up battle in Switzerland.
Unlike the first edition earlier this year, this one featured more hospitality start-ups and it was great listening to the pitches. Technology was, of course, the centre of some of them, such as Du-bai-based Gourmet Hub’s pitch, which promoted a cutting-edge digital marketplace for meal plans. Think of it as a food delivery platform, but purely for meal plan subscriptions with plans to branch out into other subscription-based offerings such as juices and health supplements. It was a gutsy pitch but didn’t win.
What did win, though, was Poynto – a start-up that quite literally reinvents hotel rooms. Not super drastically –it’s hospitality after all – but enough to capture the interest of the judges. Poynto takes the concept of Japanese capsule hotels but makes them a little less claustrophobic and more social. Purpose-build capsules, complete with work areas and double beds, can be slotted into ex-isting structures – think office buildings, co-working spaces, or even an entire hotel floor. Digitally enabled, budget-friendly (but not cheap), and geared towards digital nomads, I can see this pop-ping up in the UAE before too long.
Another start-up with connections to and, indeed, roots in the Middle East, which created buzz, was Fil Foods – a group of London and Amsterdam-based Palestinian brothers and friends, who have set out to give Shatta, a traditional Palestinian chili condiment, a modern look & feel and in-troduce it to the world. With eye-catching design, a clean label, and in different spice levels, this is a product that I felt could well be the next siracha or breakfast must-have. I managed to get my hands on a jar and, a day later with Chef friends in Milan, we used it as a topping to a ramen dish – it worked a treat.
Personally, I particularly enjoy startups that set about solving “everyday” issues our industry en-counters. You
know, nothing outsiders might ever think about, but things that many of us look at and go “I wish there was a better way”. As such, I rooted for SuperJuices, a Geneva-based start-up, that has come up with a way to bottle fresh lemon and lime juice and give them a four-month shelf-life – all without pasteurising or otherwise chemically treating the ingredients. If you run a bar, you’ll see the innovation here. They also created a substitute for egg whites in cocktails and mocktails, which is plant-based and has an equally long shelf life. Yes, it’s nerdy, but these are solu-tions that help bars, hotels, and restaurants save time and money.
An idea which - while perhaps not suitable for the Middle Eastern market – might attract invest-ment from the Middle East, was the Italian start-up Monte Senior. By now, we’ve all heard of vil-lages and towns in Italy selling abandoned buildings for a couple of dollars – Monte Senior targets just such villages and plans to buy up enough structures at a bargain price to create Italy’s first inte-grated senior living community – it’s a straightforward idea, which makes a lot of sense and could help to revive villages and regions, that have been left sparsely populated by an outflow of young-er folks.
An idea that will certainly appeal to HNWs and UHNWIs (i.e. people with a lot of money) was Iden, a French start-up creating luxury retreats in spectacular locations. In the end, it wasn’t really about who won or even who took part in the event, but about the ex-istence of the event itself and the fact that most of the start-ups were driven by young, energetic, recent graduates. If we can create more think tanks and start-up accelerators for ideas in our in-dustry, we’ll benefit immensely in the long run and provide additional ways for younger folks to get involved in our world – not just as employees, but as entrepreneurs, founders, disruptors, and value creators.
Doing this requires that we start looking beyond the edge of our own plate, as we say in Germany, and embrace ideas and people that don’t neatly fit into the boxes of traditional company-employee or company-supplier relationships. I’m fairly certain that this could be a lucrative under-taking –profits all too often lie outside established boxes.

During the festive period, Mimi Kakushi presents a selection of seasonal dishes alongside its à la carte menu, available from 9 December 2024 to 5 January 2025. Enhancing the celebratory spirit, the team has crafted a special cocktail, the “Kirameki,” perfectly paired with a matching vinyl, Ashita Ni Nareba by Hideo Shiraki, as a highlight of the Kikuchi cocktail menu. Seasonal dishes include premium options such as Grilled Japanese Sawara and Fried Lobster Maki. The popular Saturday and Sunday brunches will also feature special entertainment on 21 and 28 December, complemented by a festive cocktail from the Noguchi piano-bar fountain and holiday-inspired music.

Can you share your journey in the hospitality industry?
I began my career in Marrakesh, Morocco, working in the Front Office before transitioning to Public Relations and Marketing. The dynamic and fastpaced world of hospitality captivated me. My passion for making a positive impact, coupled with my multilingual skills and dedication, soon opened new doors. This led to an exciting opportunity to move to the UAE—a bold decision that involved leaving my family and relocating to a new country where I had no prior connections.
What led you to your current position as General Manager at Swissotel Al Ghurair and Swissotel Living Al Ghurair?
I have been part of Accor for almost 13 years. My first appointment as General Manager was at Novotel Sharjah Expo Centre, where I made a significant positive impact for both Accor and the hotel owners. Together with the team, we established a successful business with a clear structure and culture that reflected Accor’s values and reputation. Following this achievement, I was entrusted with managing the cluster properties of Swissotel Al Ghurair and Swissotel Living Al Ghurair.
What are some unique operational challenges you face managing both a hotel and a serviced apartment complex?
Managing a dual property like Swissotel Al Ghurair, which comprises 620 keys, presents unique challenges. As a niche premium brand of Accor, Swissotel has strong principles of Vitality, Sustainability, and Craftsmanship. The design, spaciousness, natural light, and premium amenities at Swissotel Al Ghurair align perfectly with these principles. However, operating in the Deira market—where price sensitivity is high—makes it challenging to attract clientele willing to pay a premium for the quality of services and products we offer. Additionally, sustainability efforts often face resistance, as some guests perceive a trade-off between sustainable practices and higher costs. Despite these challenges, we strive to maintain competitive rates while ensuring our premium offerings remain uncompromised.

Could you discuss any specific sustainable practices implemented under your leadership?
Sustainability is a cornerstone of daily operations at Swissotel Al Ghurair and Swissotel Living Al Ghurair. Notable initiatives under my leadership include:
1. Eliminating single-use plastics for guests and colleagues, including replacing cling film in kitchen operations.
2. Installing an in-house water filtration system to provide clean drinking water for guests and reduce plastic waste.
3. Implementing "Orbisk" waste collection technology to monitor and reduce food waste, with the results displayed on digital screens in restaurants and staff cafeterias.
4. Recycling organic waste into compost through Waste-Lab, used in the hotel's herb and vegetable garden, the “Swiss Garden.”
5. Reusing wastewater from the filtration system for irrigation in the Swiss Garden.
6. Reducing buffet portion sizes to minimise food wastage.
7. Digital transformation to replace printed materials with digital solutions, including online check-ins, digital screens, and streamlined workflows.
8. Securing Green Globe certification by adhering to strict energy and water-saving measures.
How does Swissotel Al Ghurair engage with the local community and tourism initiatives to enhance the visibility and attractiveness of Dubai as a destination?
We maintain a strong partnership with the Dubai Department of Economy and Tourism (DET), participating in trade shows, exhibitions, and campaigns to promote Dubai as a destination. Additionally, we engage in Accor and Swissotel-led initiatives that highlight destinations across the Middle East and Africa.
Recognising the importance of digital marketing, we continuously enhance our online presence to attract awareness and business from global feeder markets. Flexible pricing strategies and competitive stay packages further support our efforts to remain visible and attractive to diverse audiences.
What key lessons have you learned about leading a diverse team in a dynamic city like Dubai?

Champagne comes in many styles and price points, so how do you choose the right bottle for the occasion? Are you looking for something to pair with your showstopper roast? A special bottle for a romantic festive dinner? Or maybe you're preparing to treat your friends to an unforgettable New Year's Eve party?
In this guide to choosing champagne, I’ll share my top tips to help you pick the perfect bottle and get the festive cheer flowing.
The Santa Clause - Best champagne to gift
Brut NV (non-vintage) is the go-to champagne for gifting. The "flagship" of each champagne house, Brut NV is the classic champagne that each producer makes consistently well year after year and can be served at any gathering. The dry, crisp flavour appeals to a wide range of palates and is more affordable than vintage champagne. A timeless gift that will always be stylish and appreciated.
Perrier-Jouët Grand Brut is a beautifully balanced champagne with a smooth and refreshing vibe. It’s got this crisp, lively character with hints of green apple and citrus, making each sip feel light and bright. The subtle touch of floral notes adds elegance, and the finish is clean and classy.
White Christmas – Blanc de Blancs
Blanc de Blancs Champagne is a great choice, offering a refined and elegant experience for festive celebrations. Made exclusively from
white grapes (mostly Chardonnay), Blanc de Blancs is known for its crisp, fresh character, with delicate aromas of citrus, green apple, and white flowers. It’s the kind of bubbly that makes you feel like royalty – if royalty had a penchant for fresh, crisp fruit and refined, elegant bubbles. Indulge as though you own the yacht!
It’s A Wonderful Life – Vintage Champagne
The majority of champagne produced is non-vintage (NV) or Multivintage (MV) – most are blends of several vintages to counteract the tricky weather of the champagne region. Vintage champagne, however, is made from the grapes collected from a single harvest and will show the year of that harvest on the label. It’s not made every year, so you can be confident of a very special bottle made in a very good year if you opt for Vintage. There are also stricter rules around maturing Vintage Champagne, a vintage must be aged in the producer’s cellars for at least three years, but usually, it's left for at least six years to reach its peak before being released for sale.
Vintage champagnes ooze luxury and celebration, they have more intense and richer, rounder flavours due to extended ageing, a fuller body and more complexity and depth than NV bottlings, making them the perfect choice to go with your special festive meals and celebrations. Moët & Chandon Grand Vintage 2015 is a stunning expression of craftsmanship and finesse. This champagne showcases a perfect balance of richness and elegance, with layers of ripe fruit, toasted brioche, and delicate spices. It’s complex and rich enough to complement your festive feast perfectly. Love Actually – Rosé Champagne
Rosé champagne is the perfect drink for a romantic festive-season dinner, offering a blend of elegance, flavour and visual appeal. The vibrant pink hues look exquisite in a candle-lit glass…the taste combines the crisp, refreshing qualities of traditional champagne with subtle, fruity and delicious aromas and flavours of berries – think strawberries, raspberries – and soft fruits like cherries. Rosé champagne is wonderfully versatile and can complement a wide range of dishes from delicate seafood and sushi to richer options like roasted meats and creamy pasta. Take, for example, Drappier Rosé de Saignée. The colour of this champagne comes from leaving the red grape skins in contact with the juice for just a few hours. With its vibrant pink hue and fresh berry flavours, it feels like a celebration in every glass. You’ll notice hints of red summer berries, balanced by a touch of spice and a smooth finish. It’s bold yet approachable, making it great for your special moments.
Home (Not) Alone - New Year's Eve
New Year's Eve is the perfect time to elevate the festivities. If you’re partying at home, I recommend you impress your guests by serving champagne from magnums. A magnum is equivalent to two 75cl bottles and adds drama and flair to any occasion. Not only does it look great, but the larger bottle also tends to improve the wine’s ageing potential, which can result in a fresher, more vibrant taste. An elegant, classic choice would be a brut (dry) champagne that will pair well with just about anything. Best to have an extra magnum in the fridge in case more guests than expected show up!
Veuve Clicquot Yellow Label is a true icon of champagne, known for its signature yellow label and bold, complex flavour. Founded in 1772 by Philippe Clicquot, the brand was later taken to new heights by Madame Clicquot, a trailblazing widow who revolutionized champagne produc-

Majid Al Futtaim’s hospitality division features a diverse collection of high-profile properties that emphasise luxury, convenience, and prime locations. Sheraton Mall of the Emirates stands out as a flagship hotel, recently renovated to elevate the guest experience. Across the portfolio, our properties are designed to seamlessly integrate with their iconic surroundings, creating dynamic lifestyle hubs that cater to both leisure and business travellers.
As CEO, what is your strategic vision for the growth and development of Majid Al Futtaim’s hospitality division?
My vision for growth continues to centre on the customer experience. Our success relies on our ability to put the guest at the heart of everything we do. It’s not just our spaces that are evolving but also the way we interact with and engage our customers. With an abundance of options available, it’s essential to foster meaningful connections and deliver positive experiences that encourage loyalty and repeat visits.
The Sheraton Mall of the Emirates is a key property in your portfolio. What were the motivations and goals behind its relaunch?
The relaunch of Sheraton Mall of the Emirates was driven by a commitment to modernise the property while maintaining its status as one
of Dubai’s most iconic hotels. The renovation aligns with Sheraton’s brand vision, “The World’s Gathering Place,” by offering a luxurious and engaging environment for all visitors. Our goal was to create more than just a hotel – we envisioned a complete lifestyle hub, integrated with Mall of the Emirates to deliver an immersive blend of shopping, entertainment, dining, and wellness.
Can you share details of the investments made in the renovation and highlight some standout features?
The extensive renovation encompassed major areas including the lobby, guest rooms, suites, club lounge, and business spaces. Standout features include an expanded, reimagined lobby, redesigned guest rooms with a residential aesthetic, and a vibrant, modern club lounge. This investment ensures a seamless blend of luxury and comfort, setting new standards for hospitality in the region.
What impact do you anticipate the relaunched Sheraton Mall of the Emirates will have on the local economy and tourism sector?
The renovation is expected to boost tourism by attracting both international travellers and regional visitors seeking a premium experience. Its direct connection to Mall of the Emirates enhances its appeal,
driving increased footfall and contributing to local economic activity. With the holiday season and events like the Dubai Shopping Festival approaching, we anticipate significant interest from travellers looking to celebrate, enjoy Dubai’s weather, and experience this revitalised landmark.
Having led various initiatives within Majid Al Futtaim, what has been your most rewarding experience in the hospitality sector?
Overseeing the transformation of legacy properties like Sheraton Mall of the Emirates has been particularly rewarding. The renovation is a career milestone for me, made even more meaningful by the positive feedback from guests who have experienced the hotel’s fresh new look and feel.

My focus is on maximising the potential of our newly renovated spaces to enhance guest satisfaction and drive occupancy rates. By leverag-

What key strategies are you implementing to ensure the success of the relaunch and strengthen the hotel’s market position?
Our strategies include implementing Marriott’s global standards, optimising service quality, and ensuring a seamless guest experience. This approach is designed to attract both new visitors and loyal guests who appreciate consistent excellence.
How do you plan to align operations and standards between Sheraton Mall of the Emirates and Aloft Dubai Creek?
I align operations by capitalising on shared systems and core values to ensure both properties deliver consistent, high-quality experiences. Sheraton Mall of the Emirates focuses on luxury and premium services, while Aloft offers a modern, budget-friendly option. This synergy allows us to reach a broader market while optimising resources.
How are you planning to drive innovation and modernisation at the Sheraton Mall of the Emirates?
We are incorporating technology to enhance service efficiency and improve guest experiences, such as streamlined booking processes and personalised services. The hotel’s new design also reflects a modern aesthetic, appealing to today’s contemporary travellers and digital nomads.
How would you describe your leadership style, and how do you foster a collaborative work environment?
My leadership style is collaborative, with a strong focus on empowering teams to deliver excellence. I prioritise open communication, teamwork, and creating a supportive environment where team members feel valued and motivated.
What enhancements can guests expect that will elevate their experience at the Sheraton Mall of the Emirates?
Guests can look forward to refreshed interiors with elegant designs and enhanced amenities. The expanded lobby, redesigned guest rooms, and vibrant club lounge offer a luxurious yet comfortable environment. Additionally, the enhanced business areas cater perfectly to corporate guests.
What sustainable practices are you planning to introduce or enhance at your properties?
Sustainability is a key focus. We are implementing eco-friendly practices, including energy-efficient systems and sustainable sourcing for amenities. This aligns with Marriott’s broader environmental goals. Notably, the Sheraton Mall of the Emirates already holds a LEED Platinum certification, the highest level of sustainability recognition.
What long-term initiatives are you excited about implementing as Multi-Property General Manager?
I am focused on increasing direct bookings through loyalty programmes and reducing dependency on third-party platforms. Additionally, I aim to expand unique offerings at both properties and tailor services to a wider demographic, fostering guest loyalty and ensuring sustained growth.

ubai’s food and beverage (F&B) industry is famous for its innovation, luxury, and diversity. Over the past decade, the city has emerged as a top 10 global dining destination, blending traditional flavours with modern dining experiences. As 2025 approaches, the industry is set for continued evolution, driven by changing consumer preferences, technological advancements, and a growing emphasis on sustainability. Here’s a look at what trends we can expect in Dubai’s F&B scene in the coming year.
1. The push for sustainability practices
Sustainability is no longer a niche concern; it has become a mainstream expectation among consumers within the recent years. L.E.K. Consulting reported that 50% of global consumers say that they are willing to pay the premium for sustainable food and drink. In the UAE, Visa's report revealed surprising data when 61% of residents are ready to pay for the sustainable option which is much higher than the global average. It clearly shows that the residents of UAE have increased their awareness about sustainability, mainly because of the extreme weather conditions in recent years.
On the other hand, the government also takes strong actions related to the sustainability agenda in the F&B sector. Starting with the single-use plastic ban across Dubai in July 2024, announced by HH Sheikh Hamdan bin Mohammed bin Rashid Al Maktoum, Crown Prince of Dubai. With this strong push from both consumers and government, it’s no surprise that sustainability will become the major trend in the F&B industry. Therefore, F&B brand prioritising local sourcing and sustainability practices can build trust and loyalty with customers. Highlighting the commitment to sustainability can enhance brand reputation and image to the public.
2. The new era of plant-based and vegan menu
The demand for plant-based and vegan options is a trend that shows no signs of slowing down. In fact, according to a Euromonitor International report, the plant-based food market in the UAE is projected to increase by 8.6% annually through 2025. This surge is driven by a desire to improve their quality

of life and address health issues by adopting plant-based or vegan diets. Studies from the American Heart Association highlight that reducing meat consumption will lower the risk of many severe heart disease, obesity, type 2 diabetes and certain cancers.
In 2024, with the advance of technology, the first fully planted-based meat processing plant operated under the “Thryve” brand located in Dubai Industrial City of TECOM Group. This development will distribute the plant-based food product for the UAE and the wider region. The entry of this new market player might lead to higher demand for plantbased meals in Dubai's F&B space. By adding the plant-based options into the menu and promoting its benefits, restaurants can tap into this growing market.
3. Artificial Intelligence, a new gamechanger
In recent years, technology has revolutionised the F&B industry, and this trend is set to accelerate in 2025. The restaurant industry, once driven by culinary talent only, is now transformed by Artificial Intelligence (AI). With the new advanced technology, the landscape of the food industry is changing with personalised customer experiences. For instance, many restaurants are now integrating multiple ordering channels and leveraging AI to analyse customer preferences and historical orders, allowing for tailored recommendations. Beyond enhancing customer experience, AI can significantly improve operational efficiency. By analysing sales data and predicting demand, the AI-powered system can track customer demand patterns with up to 98% accuracy, allowing restaurants to optimise inventory management, reducing waste and ensuring that popular items are always
available. Enhanced sales systems with AI capabilities will help restaurants to improve their customer satisfaction and optimise their inventory management.
4. Stay to the culture roots and go beyond Dubai is renowned for its cultural diversity, capturing cuisines around the world with more than 200 nationalities living and working in the city making up 88% of the total population. Moreover, Dubai was named as one of the top 10 destinations for food tourism in the world. With a city full of experienced travellers and residents who have tasted the real thing in its native country, offering an imitation version is not the optimal strategy.
On the other side of the coin, the diversity of Dubai's population also encourages culinary innovation, leading to unique fusion cuisine and innovative dining concepts from authentic Emirati restaurants to Micheline-starred dining. Fusion cuisines close cultural gaps, creating the same language that connects people together. It’s very easy to find some Emirati-fusion touches in the Asian restaurant or the unique Indian taste in an Italian concept. Some fusion touch can help to deliver a unique menu distinguishing the restaurant to its competitors, however, it also creates a new challenge for the restaurant to be creative but not stray so far from its roots.
5. When convenience meets traditional experience
The convenience of food delivery surged during the pandemic and has maintained a significant role in the industry. According to a report by Research and Markets, the online food delivery in the UAE is projected to grow up to $4.5 billion by 2026. Statista also reported that 52% of UAE residents use food delivery service at least once a week. However, although many diners enjoy having gourmet meals in their familiar space like homes or offices, others prefer to enjoy their food in a restaurant ambience. This phenomenon causes a new challenge for restaurants to balance between traditional dine-in and convenient delivery to ensure the customer can have the same experience, whatever option they choose.
In addition, this delivery trend also leads to the new question: How to be sustainable in your delivery packaging to reduce the plastic waste while being operational optimised? Restaurants will need to invest in packaging that is environmentally friendly but can preserve the food quality, ensuring that dishes arrive as fresh and appetising as they would be in the dining room. This emphasis on quality delivery will cater to Dubai’s fast-paced lifestyle and its residents’ desire for convenience without compromising on taste.
