Millers Bistro, A One Of A Kind Concept Restaurant In Hua Hin Millers Bistro is an extremely unique restaurant that opened in Hua Hin in early October. All housed in one restaurant is a Butcher, a Baker and a Candlestick Maker. No, not really. The candlestick maker is replaced by a wellknown Hua Hin chef. The restaurant is located on Soi 91, just off Petchakasem and a few minutes south by car of the Vana Nava Water Park. Millers is housed in the building formerly occupied by the Pom Pom restaurant, however after a walk through it looks like the building was purpose built for them. The concept is the brainchild of Hua Hin resident Ken Moore. Ken is the Butcher at Millers and will not only provide all the meats for the restaurant but will also sell meats such as sausages, hams and aged steaks in the retail portion of the restaurant. Further, Ken will wholesale meats to Hua Hin and Bangkok restaurants and hotels. As a butcher, Ken has full control over the quality and aging of the meats he provides via the 3 outlets. Fred Paris, a former Hua Hin Resident, is heading up the bakery operation supported by French trained Chef de Patisserie Paul Thanakorn and his team. They will provide a range of European and French classic breads. This is in addition to pastries and cakes, all of which can be had while dining or purchased in the retail section of the restaurant. Fred will also wholesale his baked goods to Hua

Hin restaurants and hotels and will bake custom cakes for birthdays, weddings or special occasions to order. Well known Hua Hin Chef Gary Bond oversees all the food preparation of the restaurant. Gary was formerly the Chef at Mucky Duck and quickly gained a strong following and a reputation for quality, delicious food coming out of his kitchen. His kitchen is much larger and fitted with a full range of cooking equipment so Gary will really show his flair as the head chef at Millers. The restaurant is spacious with inside dining for 60 and outside for 50. Inside will be a wine & cocktail bar, with an outside bar for the weekends. If you feel like watching some sports, Millers features a 3 meter projector screen to show live sporting events with stereo surround sound. Every Sunday is special at Millers as they serve their afternoon Carvery. A selection of rotating meats including Beef, Lamb, Pork, Ham & Chicken will be available with a help yourself vegetable station complimented with homemade Yorkshire puddings. Millers will also be the perfect place to enjoy a relaxing afternoon English high tea with a choice of sandwich, cake, pastry and of course scones with jam and homemade clotted cream served with tea or coffee. A special children’s menu is available using the same natural and fresh ingredients hand made in their kitchen, no packed meals for our child visitors,
just freshly cooked quality food. Millers will also be the ideal place for hosting your special events such as business events, golf society functions, birthday parties and wedding celebrations. Their indoor & outdoor area can accommodate a buffet meal for 150 and they can easily customize any menu to your desire. Millers will host a weekly theme night which will feature an international food buffet such as Indian, Mexican and Thai cuisine. Millers is open Tuesday thru Sunday. The Bakery opens at 8 AM for retail take away and also serves Pastries, Cakes & Croissants with Coffee or Tea. The Bistro is open from 12 noon to 11PM in the evening serving lunch and dinner. Their Sunday Carvery starts at 12 noon. Parking will never be a problem as they have parking for cars and motorbikes outside and additional parking adjacent. t will surprise no-one familiar with the 5-Star, Intercontinental Hua Hin Resort, that its Pirom authentic Thai restaurant excels in every aspect – for its quiet elegance, unsurpassed ambiance, and ease of locating & ready access – quite in addition to its unsurpassed Thai cuisine featuring delicacies from the Gulf. And Pirom’s sunken cabanas - set low, spaced 6 meter apart and separated by water with its sound-absorbing properties – cancels out intrusive noise whilst retaining confidence of one’s own conversation. This is a perfect venue for tête-à-tête; a romantic proposal or a business discussion. Hua Hin’s Intercontinental occupies prime, beachfront (think beach polo), about mid-point along Hua Hin’s famed 5 kilometers strand. The spacious resort complex extends all the way back to Hua Hin’s main Petchkasem thoroughfare, where it is connected by pedestrian overbridge to the classy new InterContinental Blúport wing and Shopping Mall. Our à la carte experience featured six exquisite Thai dishes, each fastidiously prepared by superbly trained Chef’s in Pirom’s open kitchen – allowing aspiring gourmands to observe and pick up a few tips if they wish. An aperitif of the locally produced, Monsoon Valley Colombard, 2016 (an excellent complement to seafood), with Prawn Chips and spicy dip appetizer set high expectations. These were amply met by six dishes, brought to the table concurrently in the traditional Thai style: As delectable as it is visually appealing, ‘Poo Nim Kra Tieam Prik Thai’ is Pirom’s proprietary rendition of the local soft-shell crab; deep fried and served with garlic and black pepper – an absolute ‘must’ for

anyone not familiar with this Thai delicacy. A Steamed Whole Sea Bass, served with a tantalizing combination of Ginger and Chinese celery in a soya sauce, and Pirom’s choice of traditional spices, will tempt even the non whole-fish lover. A tough choice but possibly the pièce de résistance, was ‘Phad Chaa Ta Lay’ – Pirom-style. Superbly wok-fried to retain flavor, Prawns, Squid and Scallops, complemented by Thai herbs and green peppercorn, in a proprietary sauce. This is a worthy tribute to this iconic, Hua Hin dish. A close contender and perennial favourite is, ‘Ghoong Thord Sauce Ma Kham’; Jumbo Prawns, deepfried and served with tamarind sauce. Just faultless.a perennial favorite. Rounding out this selection of the Gulf of Thailand’s bounty, was the ‘Pla Proud Duean’. A delectable, deep fried whole sea bass and mixed seafood, in traditional green curry sauce, and prepared with

the menu!
No, we have stepped into Millers Bistro & Bakery on Soi 91 on the southern edge of Hua Hin and what a fantastic first impression!
Breakfast, we discover, is available from 8:00 am to 12 noon with four choices; - Scottish, English Vegetarian or Eggs Benedict. The alternative is breakfast in a bun with three choices of fillings.
Attentive staff welcome us, asking if wish to be seated for a meal or a drink at the bar. Timber topped, highly polished and welcoming, the bar occupies one side of the room. Once seated, it’s time to interrogate
Miller’s owner, Ken Moore joins our table to explain that they butcher and cure their own meats onsite. From their dry aged steaks to the breakfast bacon, and make their
own sausages and black puddings to boot. Something unique and a characteristic Ken believes will set Millers apart from others in Hua Hin. We choose from the all-day menu, available from 12 noon. European flavours are dominant in the menu. Italian Panini, Sandwiches, Burgers, classic Salads and Platters for snacks or lunchtime fare. Or the traditional structure of Starters, Pasta, Grills and Mains.
Chef Gary Bond, recently of Mucky Duck, is in charge of the main kitchen. Owner and Chef have developed a menu that allows Gary to fully utilise his formal training and depth of experience. While Ken takes charge of the butchery, including curing and ageing of the meats both are passionate about what they produce. Our starters arrive. Salt & Pepper Soft Shell Crab – crispy coating
encasing soft, perfectly cooked crab meat. No need for any accompanying sauces. Delicious just as it is! Potted Duck – a generous serving of creamy full of flavour duck liver pate served with an apple and peach chutney and a generous piece of toasted bread – from Millers own in-house bakery of course! The pate and apple chutney a perfect match. The final starters, a well-balanced Cherry Tomato Bruschetta served on slices of Miller's own baguette.

For mains, our party enjoyed somewhat of a meat feast. Braised Beef. Melt in your mouth beef, red wine sauce sitting atop a horseradish flavoured potato mash and accompanied with lightly braised vegetables. The mash and deliciously moreish beef – a perfect marriage. Rump steak. 10 ounces of dry-aged, grain fed Australian beef served simply with grilled portobello mushroom, tomato and triple cooked chips. Heaven on a plate for any steak lover. And finally, Gammon Loin Steak. Cured in-house in brine, the ham steak is served grilled and topped with thin slices of pineapple off the same hot grill. A lightly fried egg and triple cooked chips finish off the plate. Millers also wants to be known for its artisan bread, pastries, sweets slices, cakes, desserts and pies. And these are all available now thanks to the craft and artistry of Chef’s Fred and Paul. Respectively from Belgium and France, these Chefs de Patisserie and Master Bakers, along with their team, are now baking up a storm. To make our Millers experience more special, Chef Paul had prepared three desserts to sample. How could we say no? Creme Catalina – think Spanish custard dessert very similar to Crème Brulee. Luscious custard with hints of cinnamon and orange and a light crystalised sugar top. Chef Paul’s own take on the classic Mille-feuille and meringue topped. And finally his own creation – three-tiered in a glass – a dark crumb base, Mango Mousse, a delicate Caramel Tuile, and topped with ice cream. The challenge was to dig your spoon through all three layer to taste the full combination. What decadence! Millers Bakery & Bistro opens daily at 8:00 am for bakery, coffee, or breakfast. Lunch from 12 noon till 5:00pm. Late October or early November, owner Ken is hoping to start dinner service. Sundays, following breakfast, is dedicated to the Lunch Carvery - 12 noon to 5:00 pm. INVESTING IN MOBILITY (PART 2) TAKE ACTION Whatever mobility concerns you have, it is time to take action if you desire the aspects discussed above. Self myofascial release (foam rolling) and other common mobility practices are fantastic and should be done often. But the most obvious empirically supported answer is to stretch more. This is difficult for most of us because unlike strength training or conditioning, stretching is boring. I frequently bore myself to tears stretching in the gym, but the results and benefits keep me going. Plus it presents discomfort first. Results, being increased flexibility or range of motion, tend to occur slower than in strength training and conditioning which means that we don’t experience as profound immediate gratification and are not motivated to stretch more – only immediate discomfort. So, how do you start?
GIVE YOUR BODY ADEQUATE TIME TO WARM UP Rushing into your strength work or conditioning is very hard on the body for several reasons. Your muscles and joints are figuratively and literally not warmed
movements that begin to elevate your heart rate, that activate important muscle groups such as your hip and shoulder stabilizers that need to be fired before strenuous exercise, and movements that loosen up your muscles from chronic activities like sitting.

Neurologically your body is also not ready to absorb stress from heavy lifting and conditioning and so the physical pressure you place on yourself is actually a shock to your nervous system. here are cities in the world which just have the right mix of ingredients to make of them authentic bastions of cultural diversity, coalescing history with heterogeneity and a chaos with a scrupulous architecture. While there are a handful of these the world around, few are as rich in history as the one which features in this month’s Let’s Go. Mixing rich Burmese heritage along with colonial traits as well as a very extensive mix of cultural diversity, this September, we travel to Mandalay, the economic and historic hub of upper Myanmar.
Those familiar with Asian terms will have already noticed the curious term embedded in the city’s name. Mandalay, which is named after the nearby Mandalay Hill, bears the term “mandala” in it. Mandalas are spiritual and symbols of religions such as Buddhism, but also Hinduism, which represent the world around us. Often symmetrical and very meticulously crafted, they represent soundness and balance, in masterpieces often mesmerizing due to their sober complexity. It’s this that we could compare this former ancient capital too, as many
of its ancient maps display a neatly ordered city, in carefully crafted square blocks and central districts which outstretch in synch. Founded and commissioned as the new capital of Burma during the mid 19th century, Mandalay became king Mindon’s wish to mark the auspicious anniversary celebrating the 2,400th jubilee of Buddhism. Carefully crafted and surrounded by the flows of three different rivers, Mandalay became one of the economic hubs of the region amid flows of beautifully engineered infrastructure and architecture.

The advent of British colonialism merely a quarter of a century on, would significantly influence Mandalay’s role in the face of Burma’s hubs of trade. Yangon, which featured in our last issue, started to become the country’s main port of commerce and executive importance, thus relegating Mandalay to a role beyond that of the country’s economic hub. Instead, Mandalay was to become a centre for Buddhist teachings and cultural displays, making it the symbol of independent sovereignty for the Burmese people. Mandalay’s cultural heterogeneity was further powered by the large influx of Indian immigrants that resulted as a result of the British Raj’s dominion on India. Mandalay was to keep its symbolism of independence and its name as the bastion of Buddhism in Burma upon the gaining of independence in 1948, further cementing the cultural strength attributed to it. Moreover, most learning centres about Buddhism around the country were single handedly run by offshoots of Mandalay University.
Mandalay as a city decayed under the rule of Ne Win, who had all but forsaken the infrastructural maintenance of its architectonic beauty. With it came a number of fires that destroyed many buildings, the grounds of which were purchased by Chinse businessmen from Yunnan. It is this way that settlers upon settlers, Mandalay owes its unique ethnic make up to its rich past. The city’s urban sprawl today has continued to garner heavy investment on the part of the Chinese, who are considered the agents leading this change. Modern day Mandalay has therefore a rich demographic diversity, within its population of about a million people, it is not just home to the traditional Bamar majority but more and more, it is a home to a large array of Chinese people, which provide much needed activity in its commercial districts, especially Chinatown. There are too an important quantity of Burmese Indians, who established themselves during the colonial period and today have come to provide a rich diversity in the scene across the city. Mandalay is situated by the famous Irrawaddy River and has both a tropical wet and a dry season. It sees considerable heat increments toward the months of March, April and May before the downpours are almost daily.

But if there is one thing that distinguishes this city from the rest, it’s the amount of different historic sites one can visit. The most prominent one of these is the Kuthodaw Pagoda. Kind Mindon commissioned this structure to date contains the world’s largest book in the form of concrete slabs. Each tablet, which is embedded in the walls of the various stupas that comprise the structure, has its own jewel and decoration. The British rule hampered the beauty of this structure, as they looted many of the relics within, which would only later be restored as a petition was made to queen Victoria. Mandalay Palace is a symbol of the last Burmese monarchy, as the grounds where they last inhabited before the country became a republic. Surrounded by a moat and at the centre of the capital back when it was built, the Mandalay palace is one of the most prominent sites to visit in the city. As with the Kuthodaw Pagoda, a large array of the palace’s relics were looted by the British, some of which continue to be displayed at the Victoria and Albert Museum in the United Kingdom. Burned to the ground during the Second World War, it was later reconstructed in 1989, when a project to restore its previous beauty was started. This was a problem because of the lack of budget from the reforming committee, which later had to seek support from private funding in order to sustain itself.

Another place essential in the travel plans of anyone planning to visit Mandalay is the Mandalay Hill, after which the city is allegedly named. A towering natural structure which elevates almost 225 metres in height, Mandalay Hill provides a perfect viewpoint for the curious holiday maker who wishes to see the city below in all of its grandeur and splendour, as it affords the opportunity to take a full panoramic view of the ancient capital. A trek up the hill is a pastime some enjoy, as it allows them to gradually see and take in the nature while they continue to strive for the view from the top. During World War Two, Mandalay hill became the scene for important battles confronting the Japanese army and the British troops, as they fought it out to gain supremacy of the top, with the latter eventually forcing the Nippon army out of the grounds.
Getting to Mandalay is easy from Bangkok, it's less than a two hour flight. While the Mandalay International Airport is one of the most modern and well equipped in the country, it generally suffers from under-usage, as it only serves scant domestic flights and two destinations outside the country. Luckily, one of those destinations is Thailand, and visitors can make their way into the country both from Suvarnabhumi Airport and from Chiang Mai International Airport. The airport is considerably far from the main city, at about 45 kilometres from Mandalay. Mandalay is one of those cities that makes one fall for its charm, perhaps not immediately, but eventually. Laden with a luscious culture and an absolutely magnificent set-up, it is a perfect place for the adventurous holiday goer. It provides not only an element of traditional richness, but also has great structures and monuments to display, making it one of the most attractive cities to visit in the entire country. In definitive, there is a little point of interest for everyone in Mandalay, so if you have yet to visit this ancient city, you most definitely must.

A Conversation With Cindy Bishop Cindy Bishop is a Thai-American beauty queen, business woman, model, host, actress and mom. At the age of 18 she represented Thailand in the Miss World pageant. Cindy is the owner and creator of "Mama's Secret," a maternal skin care line and she is an ambassador for Fin Free Thailand and the Camillian Home for Disabled Children. Cindy has been acting in films and on TV since 1997 and can currently be seen hosting “Asia’s Next Top Model” TV show. HOT Magazine recently had the delightful pleasure of sitting down with Cindy to discuss her very busy life, both professionally and personally.
Cindy, many people when they first meet you, don’t think you are Thai, they think you are Farang. Why is that? Well, for one I have blue eyes! That and the fact that I only have 1/8th Thai blood (My grandmother was half Thai) But since I was born and raised here, I only feel Thai. What was your childhood like and where did you grow up? I had a wonderful childhood in Pattaya. When I was growing up, it was a quiet but rapidly growing beach resort. I spent most of my childhood years playing on the beach or exploring under the water as my father owned one of the first diving operations in the region. At the age of 18 you won the Miss Thailand World competition and then went on to compete at the Miss World Pageant in India. As a little girl did you dream of representing

Thailand in the Miss World Beauty Pageant or did this goal come later in life to you? No, I never dreamed of being a beauty queen. I did love to model and perform though, so when the opportunity presented itself as soon as I graduated from high school, I went for it! To compete at that level requires huge determination and discipline. Where did that come from? Was it instilled at a young age? Yes, my father always instilled in me how important it was to have a good work ethic and self-discipline. My parents always told me that I could be anything I wanted to be, but that I would have to work hard to achieve my dreams. And that’s the same thing I tell my children now. You graduated from the Bangkok University, majoring in public relations. At

that time, did you see yourself moving into the corporate world or were your aspirations different? Not really. I don't think I'm cut out for the corporate world to be honest. I much prefer to have the freedom to create and be my own boss, hence my various entrepreneurial projects. The degree was more of an asset to have in my field of entertainment work. You have many accomplishments, one of them being a Supermodel. Did the modeling come after the Beauty Pageants or before? Modeling has always been my first love. I remember putting on my own one-girl fashion shows for my parents' guests at our house parties, so there was definitely a dream there, although I didn't know it at the time. Most people know you from your acting, both in Movies and on Television. Did acting come naturally to you or did you attend an

acting school or classes? Again, with most things in my life and career, I was pretty much thrown into acting and had to learn as I went. My first role on TV was a sitcom series for Channel 3 where I played a witch in disguise (think I Dream of Genie but instead of a bottle I had a broom) I've been very lucky to have had the chance to work with the A-listers in the industry, so it was a chance to learn from the best! Of all the parts you’ve played in film and on TV do you have a favorite role, one that you enjoyed playing the most and if so, why? My favorite role to date would have to be “Lily van der Woodsen in the Thai adaptation of Gossip Girl. It was so interesting for me to be able to portray such a well-known character, loved all over the world, but in a totally different language and culture. For the last two years you have hosted the

very popular TV show “Asia’s Next Top Model”. How does acting in a reality TV show differ from playing a character in a drama and which do you find more challenging? They are extremely different. For one, I'm not “acting” on ANTM. True, there are some scripts I have to follow, but that's mainly for me to describe the rules and details of the various challenges the girls will have to face that day, or when I have a message to deliver via “Cindy Mail”. Everything else is real and unscripted and happens on the spot. How I am ultimately portrayed, depends on the editors. I do play up my Tiger Mom persona at times when needed to get my point across but pretty much what you see is what you get on the show. I would say it is more challenging than playing a character in a drama, as the emotions are real and can be very strong for everyone involved. In addition to modeling and acting you are also the owner and creator of "Mama's Secret" maternal skin care line. Please tell us about that? It was a project I started after giving birth to my son, Aiden. I had a hard time finding a stretch mark lotion

that I really liked so I started looking at producing my own line of cream, oils and lotions for pregnancy and beyond. Our customers love the natural ingredients and our signature Lavender Oil scent. So far its been going very well and I'm quite proud of my brand :) You are an Ambassador for the Camillian Home in Lat Krabrang, and Fin Free Thailand, what can you tell us about these organizations and the work they do? Fin Free is a project that aims to help spread awareness about the dangers of eating shark fin soup in the hopes of saving these magnificent creatures from extinction and preserving our ocean ecosystems. The Camillian Home is a wonderful home for children living with disabilities and HIV providing them a good education and quality of life. My two new projects include Operation Smile, which provides dental and reconstructive surgery for children born with cleft lip & palette. The 7% Project aims to reduce the number of children dying from road accidents by increasing the number of kids wearing helmets from only 7% to 100%. Twelve years ago you married fellow actor Byron Bishop and from that union you have two adorable children, Leila Carmen & Aiden William. How do you balance such a busy life and do you have much of a social life outside of family and your professional pursuits? It takes a team! My husband and I are very hands on and involved with every aspect of the kids so between the two of us and some help from Grandma, we make them our priority. As for work, social, and personal life, I am very good at organizing and planning how to balance them all at the same time. It can get extremely crazy at times, but I wouldn't have it any other way! Thank you Cindy for taking time out of your busy schedule to be with us. To get to know more about Cindy you can follow her on IG: @cindysirinya and Facebook @CindySirinyaBishop. R
uss Downing, Managing Director of HOT Hua Hin Property, recently had the pleasure of meeting up with International property developer Michael Tan, Founder and CEO of Sanctuary Lakes Global Group. Michael and his company have developed housing projects in his native Malaysia as well as in China, America, Australia and now Thailand with his first project being built in Hua Hin which is called Sanctuary Lakes Hua Hin. RD: Michael, you have been a developer for over 40 years. What did you do professionally prior to Real Estate Development and what was the catalyst that led you into property development? MT: I obtained my degree in economics from Sydney University, Australia in the late 60’s. My
78
HOT Magazine
family business was in property development. That is where my career began. I have served as director of few publicly listed companies and have learned to look at "the forest rather than the trees" RD: You’re native Malaysian and still reside there. With many development projects in Malaysia what was the catalyst for branching out internationally? MT: While the business was growing in various states in Malaysia, we also began to look at opportunities outside Malaysia. We’ve had projects in Melbourne, San Francisco & Toronto. Currently outside of Malaysia, we are developing Sanctuary Lakes Hua Hin, and Sanctuary Peak in Sichuan China. RD: Throughout your development career you’ve built tens of thousands of residences worth over 1.5 billion
U.S. Dollars. Have you ever thought of developing commercial properties? MT: Over the years, we have become more focused in our business approach. We believe we should be sticking to our knitting and doing what we do best, developing "Resort Residential". This is where we can "create and deliver value assets" and creating an impact in the process. RD: Your Sanctuary Lake Development in Melbourne is a truly massive and impressive project which includes a Greg Norman designed golf course. What can you tell us about it? MT: Sanctuary Lakes, Melbourne, has a total of more than one thousand acres consisting of 3,000 homes plus a shopping center spread over 100 acres. The project was completed in 2010.
We have changed the image of the surrounding area and have lifted the standard of living there. We have added pride to home ownership and are proud that Sanctuary Lakes was awarded the best environmental design in Australia. It has been very satisfying for me in particular. A buyer did mention that staying home is like a holiday in a resort. Another had thanked me for providing the enjoyment in a home which he couldn't have had otherwise. RD: Before purchasing the land for a new housing estate, do you conduct a lot of market research, or, after 40 years of doing this, do you have a gut instinct telling you that a project will be successful? MT: We are developers. We "develop undeveloped land". We are pioneers in that direction. We achieve new frontiers. Our approach is a new concept. Market studies of
past projects are of no relevance to us. Bankers very often don't share our view. Consequently, our projects are very often self-funded. Our experience, our gut instincts are our guidance. RD: Your very first real estate project in Thailand is called Sanctuary Lakes Hua Hin. Why did you choose Hua Hin for your first foray into Thailand? MT: We did not choose Hua Hin, Hua Hin chose us. It came to us coincidentally. The chemistry was there from the beginning. The terms are conducive. The gut feel is good. In a simple terms, all are just fated. RD: If you were talking to a potential home buyer in Hua Hin, what would you say to convince them to purchase a house at Sanctuary Lakes Hua Hin?
2 biggest shopping centers of Hua Hin. The world-renowned Bangkok Hospital is located just next to these 2 shopping malls. Sanctuary Lakes Hua Hin is second to none.
