Dear Reader Welcome to issue 9, Volume 4 of HOT Magazine. True Arena Hua Hin has become Ground Zero for tennis in Thailand hosting well over 40 tennis tournaments this year. The biggest names in Tennis play annually in December at the World Tennis Thailand Championship. Players such as Venus and Serena Williams, Maria Sharapova, Angelique Kerber & Victoria Azarenka have all graced the court in Hua Hin. Currently it’s the International Tennis Federation, “ITF” that has taken over True Arena with a total of 13 tournaments happening from now until the end of the year. We take you there on page 22. MahaNakon is Thailand’s tallest building. At 77 floors, this pixelated beauty is an architectural landmark equal to those found in other great Capital’s of the world. On August 29th PACE Development, the developer of the project, threw a dazzling thank you concert for all parties who supported the project from the beginning. The exclusive event was named ‘MAHANAKHON: BANGKOK RISING, THE NIGHT OF LIGHTS” We give you a firsthand account of the evening on page 36. Bourbon Whisky is a type of American Whiskey which is made primarily from corn and by U.S. law has to be barrel aged for a minimum of two years. On August 16th at the W Hotel in Bangkok, acclaimed mixologist and Jim Beam Ambassador for Southeast Asia, Ricky Paiva, put on a class for 120 Bangkok Bartenders educating them on the history of Bourbon and Jim Beam, the world’s largest selling Bourbon brand. Later there was a celebrity filled after party at the W’s Woo Bar. Never one to miss a party, we give you a front row seat on page 44. Just a little over 3 hours from Bangkok’s international airport is the city of Manila, the capital of the Philippines. Manila is regarded as the most densely populated city in the world with 41,515 people per square kilometer. On page 52 check out or “Let’s Go” feature where we take you to this capital city with a most interesting historical background. RUN FOR HUA HIN The biggest marathon event to ever happen in Hua Hin will take place on October 9th and is being hosted by True Arena Hua Hin, one of Southeast Asia’s premier multi-sports and recreational centers, in co-operation with Prachuap Khiri Khan Provincial Authority, the Tourism Authority of Thailand Prachuap Khiri Khan, Hua Hin Municipality and the soon-to-open lifestyle and shopping hub, BluPort Hua Hin Resort Mall. HOT AROUND HUA HIN SAVE WATER, SAVE FOREST FOR THE KING'S 70-YEAR REIGN On Monday September 6th the BluPort's management, Khun Kritsana Umpuch, Khun Pasu Liptapanlop together with their staffs led an event to reforest and bring back food and water resources to the Kuiburi National Park At 1pm on the 6th media and management departed from Hua Hin's InterContinental Resort and headed to the Kuiburi National Park. Their, they were met by the Deputy Governor of Prachuapkhirikhan (President, Foundation of the King’s wild elephant) and WWF Executive's where they were welcomed by the management and staffs and presented the history of the Kuiburi National Park. While there, the BluPort's management and staff planted trees and seeded an area of the park. A tour of the National Park took place and then it was back to Hua Hin where all enjoyed a fine dinner at the InterContinental Hua Hin Resort.

On August 25th, more than 40 guests including Prachuap Khirikhan Governor Mr. Tawee Narissirkul and Mayor of Hua Hin Mr. Nopporn Wutthikul attended the 2016 Hua Hin Women’s Club Project Presentation Night at Anantara Hua Hin Resort. Guest were treated to a special 4 course Italian set dinner designed by Chef Peter while the emcees of the night, Mr. Jerry Mosselman and Khun Pooky shared details of the plans that are targeted to support the overall Hua Hin town projects. The Dog Care Centre was opened in 2003 under a royal initiative of His Majesty the King to take care of stray dogs in Hua Hin.

RESCUE PAWS BENEFACTOR OF BANYAN’S GENEROSITY Rescue Paws is a non-profit organization based in Hua Hin. Their aim is to reduce the ever-growing population of stray dogs in the Pranburi, Hua Hin, and Cha-Am area. In the last two years, Rescue Paws has sterilized over 550 dogs, facilitated over 50 adoptions, both locally and internationally, treated 23 dogs for cancer with a 100% survival rate, treated over 3,800 dogs for parasites, vaccinated over 1,200 dogs and they currently feed close to 600 dogs regularly. Thankfully they were selected by the Banyan Resort Hua Hin as the benefactors of 3 Banyan CRS Charity 20

Fairs hosted in August & September, as well as receiving a portion of the profits from several Banyan ‘Meating & Fishing’ dinner evenings. At an event held on Tuesday September 6th at Rescue Paws Kho Tao location, The Banyan staff came to play with and bathe the dogs as well as present donations. According to Hanli Engelbrecht, Rescue Paws Operations Manager, “We, and all of our furry little residents, would like to thank Banyan for their contribution of 10,000 baht, as well as numerous medical supplies, sanitary supplies, collars, leashes, dog food, and linen. These gifts will help us do so very much more!”

WHY FUNCTIONAL TRAINING

Functional Training was originally employed by physical therapists and rehabilitation staff in order to restore strength and response to the body after injuries. However functional training has found a new lease on life in assisting with a variety of different day to day activities through increasing the range of motion, strength and ability for the individual through a variety of different tasks.

Functional training therefore is a great way of warding against injury now and into the future, as well as providing a host of benefits to your fitness level, such as better muscular balance, joint stability and as a result, decreasing your risk of injury. Focusing on the body’s natural ability to move in multiple directions, functional training uses your own body motion to train with, improve on and extend. Functional training also shows substantial gain in strength and balance in those who use it on a regular basis and has also proven as a type of exercise which improves joint motion, making it ideal for people in various states of recovery from injury, age or fitness level.

Pay attention to the signals you get from your body so you can continue to move forward at a good pace. Be sure to change your routine on a regular basis.

One of the best ways to get the most out of functional training is with a coach or a personal trainer. As professionals who understand both your level of fitness and what areas for improvement you may have, working with a coach or trainer can really help you understand where your focus should lie and when it is time to transition to different exercises and what is right for you.

For those who like variety, there are plenty of types of exercises you can take part in for functional training. The goal is to offer resistance, and seek slow but steady progress during your workouts.

TENNIS FOR LIFE HUA HIN THE POWER OF VISUALIZATION Learning by watching is a very powerful tool for any sport and tennis is not an exception to the rule. The most common learning styles are visual, verbal and kinesthetic. Each person has their own preferred style, but can also use some techniques from other styles. One of the first questions I ask a new student is “How do you think you learn best? By watching, listening or by doing?” It is our job as teachers to teach according to the way our students learn. If you are a visual learner, here are some tips to improve your game: • Watch professional matches live. It is much more fun than to watch them in Television.

• Watch slow motion videos of professionals hitting a specific shot.

The event, was held at the Central World shopping mall from July 19-24, 2016, and included a World Food Market and Charity Masterclass. The masterclass element saw eight renowned chefs including Chef Michael, come together with representatives from the embassies of the participating countries to create a series of exquisite dishes for charity. angkok’s PACE Development never does anything “half way.” After all, they are the developers of the ambitious MahaSamutr Country Club & Luxury Villas development in Hua Hin, a project where they are building out 80 freehold villas, that start at 48MB each. Thaitanium performed a new song they wrote especially for the event and all were backed up by the MahaNakhan Philharmonic Orchestra.

Bangkok’s sky lit up when PACE organized the exclusive event ‘MAHANAKHON: BANGKOK RISING, THE NIGHT OF LIGHTS. The stunning lightshow and gala evening was enjoyed by not only those in attendance but by tens of thousands of Bangkok-ian’s who viewed the light show spectacle. Utilizing cutting edge lighting technology from Korea, this one of a kind light show shot beams of lights and lasers racing up the building and shooting out from the high rise floors onto adjacent buildings to create a magnificent visual spectacle the likes of which have never been seen in the

PACE also held a photo contest for video and images of the MahaNakhon lightshow enabling all Bangkok residents to take part in welcoming Bangkok’s new landmark. A total of more than 10 million baht of prizes including 10,000 passes to visit the ‘MahaNakhon Observatory’ and a top prize worth 100,000 baht will be up for grabs, with winners selected on October 1, 2016. MahaNakhon is the new landmark of Bangkok with more than 135,000 square meters of space. The 77 storey tower comprises the ultra-luxurious Ritz Carlton Residences Bangkok. he success story of Jim Beam began when founder, Jacob Beam, son of a German immigrant, started selling the corn-whiskey recipe created by his father. He sold his first barrel of Old Jake Beam in 1795. Jim Beam continued to grow and expand developing rigorous standards for its production and quality, until Prohibition brought all alcohol distilleries to a screeching halt in 1918. For over a decade, bourbon production was effectively out of business. Fast forward to the end of prohibition and at the age of 69, the man known as “The Colonel and The Legend” brought the brand back to life by rebuilding the distillery in Clermont in 120 days. He

History of Bourban

B

ourbon, the drink, not the state or the palace, but “America’s Native Spirit”, is a barrel-aged distilled spirit made out of predominately corn. By U.S. Law, Bourbon must contain at least 51% corn. The practice of distilling this drink has been going on since the 18th century. Although it is made almost everywhere in the United States, it is mostly linked to the South, particularly with Kentucky.

In the late 1700s, German, Scotch and Irish settlers in Western Pennsylvania were making rye whiskey. But when the U.S. government promised incentives for moving to the wild frontier of Kentucky to grow corn, old Jacob Beam jumped at the opportunity. Back then, it was entirely common for 48

farmers to supplement their farming incomes by distilling whiskey for trade. So it wasn’t long before these farmers began experimenting with their surplus corn crop to create a new kind of sweet and flavorful corn whiskey By the 1800s, 2,000 distillers operated in Kentucky. Dr. James Crow is credited with creating the “Sour Mash Process” still used today. A “setback” portion of an earlier distilled mash is used as the starting point for the next to ensure consistency. In 1830 corn-whiskey distillers shipped their whiskey in used fish or vinegar barrels up and down the river—not the taste you want in your whiskey. But they found that by charring the insides of the barrels it removed the unpleasant

smell and prepared them for whiskey storage. This was the birth of the charred oak barrel and the unique taste of real Kentucky bourbon. The charred wood produced sugars that added a spectacular caramel taste and a golden color to their whiskey during the long journey from Kentucky to New Orleans. Known for a high level of quality and flavor, this new whiskey became amazingly popular—and was considered to be more valuable than currency in many trading instances. When folks would ask for it, they would ask for it by the name of where it was made: “old Bourbon County whiskey." The history behind this drink, has unfortunately not been documented properly, however, the legends and


claims that surround it, make the drink an exquisite conversation starter. Across the county line in Bourbon County, one of the oldest distillers, Jacob Spears is given credit for being the first one to label the product as “Bourbon whiskey”. Some say Elijah Craig, a Baptist minister was the first one to age bourbon in charred oak casks, which is what gives it that intense distinctive red colour and that unique taste we all crave after a hard day’s work. In 1783, The Samuels family claimed the title of oldest bourbon family, even though it was only after 1840 that they produced bourbon for commercial purposes. Like the above, exist many other stories of the origins of the exquisite liquor we today know as Bourbon. However, what is clear is that one single inventor of the drink does not exist. Distilling is said to have probably been brought to present-day Kentucky in the late 18th century by the Scottish, the Scottish-Irish and other settlers including the English, the Irish, the Welsh, the German and even the French, who were the first to start farming the area in earnest. The spirit they made evolved, and became known as bourbon in the early 19th century due to its historical association with the geographic area known as Old Bourbon. It was exactly in 1821 that advertising for bourbon began, it was printed in the Wester Citizen Newspaper in a town called Paris in Kentucky. It was not until 1840 that “Bourbon” officially became known as Bourbon. Prior to this it was often labelled "Bourbon County Whiskey" or "Old Bourbon County Whiskey." From 1861-1865 the American Civil War caused an extreme shortage of liquor, in particular whiskey. Not only were many men drawn from their day jobs to fight in the war, but many battles were fought in the major American whiskey distilling regions. In 1870, the shipping revolution began. The first jugs of bourbon were shipped from the Ohio River ports. It was then that the decision to bottle the drink was made as a pure matter of convenience since the portability while shipping was much easier than with barrels. From 1920-1933 during the Prohibition, whereby alcohol was banned completely, the government issued only 10 licenses to produce whiskey for medicinal purposes. During the time, only six were ever activated. One of those fortunate companies was BrownForman, which now produces Woodford Reserve Bourbon on the site of the Prohibition era distillery. In August, 2007 the United States Senate declared September as National Bourbon Heritage Month. Although this may not have much impact on the average consumer, it is a true honour for all the distillers in the bourbon industry who commemorate their unified efforts to create this great drink, and celebrate its existence.

Today, Manila is the centre of education of the country, is hosts headquarters to the World Health Organization Regional Office for the entire Western Pacific, and attracts an incredible sum of roughly one million tourists every year. Manila has two international airports and a Light Rail Transit System of 11 different train stations situated on ground level. There are several modes of transport in the city, there are taxis, motorcycles with sidecars known as


tricycles, and the most popular form of transportation, which is known as ‘jeepneys”, which are jeep-like public utility vehicles. This method of transportation has its roots from World War II with the surplus jeeps that were sold to the Philippines who cleverly painted them in bright native colours and began using them and producing them for family and tourist transportation. One of the most popular activities to carry out in Manila is an international all-time favourite- Shopping. Shopping is extremely popular in Manila. The

city’s largest and most popular mall is Robinson’s Place Manila, a shopping mall with seven levels that contains over 330 trendy and well equipped shops, mouth-watering restaurants and fun entertainment facilities to keep one busy all day. Other attractions include Rizal Park also known as Luneta, which is the most important shrine in the country, as well a great place to watch the locals spend their weekend. And it is conveniently within just a one to two hours’ drive from other cities such as Cavite City, Tagaytay, Botangas, and even Angeles City. The richness in history and culture does not end there. When the Spaniards arrived in the 1500’s, they built a walled city in place of the kuta (fort) of Rajah Soliman. This city is now known as Intramuros, one of the best models of an incredibly astounding medieval fort outside Europe. Intramuros contains the UNESCO World Heritage Site of the San Agustin Church and the San Agustin Museum. The compound contains fine religious artifacts and relics from the Galleon Trade. One can find everything, from treasure chests to ivory saints to beautifully embroidered gold vestments. In addition, Juan Luna, one of the greatest Filipino painters in history, is buried here. Casa Manila, a lifestyle museum replicated from an 1800’s home, is also in the area. The guards and the owners of the horse-drawn carriages are dressed in period costumes for keep tourists to take selfies and candids with them. The Philippines’ very first hotel established all the way back in 1912 is also located in Intramuros. If any, Thailand might be, from the hand of Chef Carlos Bravo, an exception to the erroneous and narrow

concept many seem to have of Mexican food. Tucked away up in first floor of the Rembrandt Hotel Bangkok in Sukhumvit Soi 18, it inspires passions. We were warmly greeted to the sound of a live band playing Mexican baladas setting a beautiful mood to our evening. Chef Carlos explained to us the restaurant’s 80 percent Mexican to 20 percent Tex Mex dish repertoire, and from there began the party. Right up came two fantastic frozen

margaritas, greatly balanced, with a deep soothing taste, slushy, fresh and a perfect companion for the rest of our evening. Along with it, adhering to the restaurant’s finesse, a bottle of Spanish Solán de Cabras water Subsequently the first treat: a serving table came rolling in, on top of which sat a large mortar with which a smiling sous-chef made us an absolutely fabulous guacamole: using the imported Morelos Avocado (known for its softness), it bore a very subtle but distinguished


taste, creamy, slightly spicy, and well balanced. With a characteristic touch of coriander, it complemented with a brand of outstanding tortilla chips made with spinach and to be dipped in two delicious sauces, which provided a great contrast of textures. Next was a dish of true beauty, brought in a platter with ice and scattered sesame seeds: a Tuna & Sea Bass Ceviche from Baja California, comprising a combination of avocado, mango, coriander, Mexican chilli crispy tortillas, lemon juice, orange juice and olive oil, it rendered us lost for words. This is a

dish, which according to Chef Carlos, is consumed on Saturday morning, with a nice cold beer on a sunny day. Tangy, with a sweet fruity touch from the mango, prolonged onto a whole-bodied spicy flavour of the sea bass, ending in a deep flavour from the avocado and the coriander. To go with it, the crispy tortillas added a fabulous texture to the body. A true explosion of flavour. Then came a typical dish of Shrimps Al Ajillo (dry chilli). With its apple cider, array of spices, red wine, olive oil and other secrets, it granted a fantastic bang of tastes. The impressive freshness of

the shrimp combined amazingly with the spice of the ajillo, which gave it a signature strength. With a soft and meaty aftertaste, it made for an astonishing experience. We then turned our attention to a classic Taco de Carnitas with sweet milk. Made of incredibly soft pulled pork, crispy pork skin, golden in colour with a sauce that granted a contrasting spicy touch, it was capped off with the aromatic essence given by the splash of tequila. Truly vibrant.

We were then treated to a dish of fantastic beauty: Enchiladas made in the most elaborate of ways, with roasted tomatoes, garlic, jalapeños, coriander, boiled and blended made into a marvellous sauce. Below it was, nicely wrapped up, a combination of chicken tinga, chipotle sauce, a fifty-fifty cheddar-mozzarella mix and fabulous accessory of refried beans. Smoky, spicy, tangy, wholesome and filled with character, this was a truly special one. It’s not as if we weren’t full by this point, but dishes were so delicious that we could not force ourselves to stop. Surely enough, dessert made it into us – and how impressed we were. First up an absolutely baffling concept: Tres Leches, which translates to Three Milks, is a dish with a portion of vanilla biscuit which has been infused with condensed, evaporated and normal

milk, to then be subsequently boiled with vanilla and sugar before being left to gather flavours for three days. The softness of this dish was awe-inducing, as infused with the palate upon every bite and seamlessly melted in the mouth upon the slightest of touches. Aromatic, rich in flavour and beautifully crafted, it was a spectacular experience for the lovers of texture. Served next to it was the strawberry ice cream. Homemade, incredibly balanced, with fantastic feel and a touch of chocolate, it concluded an evening of wonders. Mexicano truly is one to visit. Be it to be surprised by their pragmatic daily Chef Recommends innovations ranging from homemade chorizo to the ceviche itself, Mexicano redefines Mexican food entirely. Thailand Property Awards Announces Their 2016 Finalists

n Thursday August 25th, Thailand Property Awards judges from around the country met in Bangkok for their final meeting to decide who would win the coveted awards. Four days later at a press conference held at Bangkok’s Plaza Athenee Hotel the shortlisted winners were announced. Making the shortlist means competitors are assured a “Highly Commended” if not winning the top prize. This year, a strong mix of boutique and large-scale luxury projects made the cut. Pace Development, MQDC Magnolia Quality Development Corporation, Minor International and boutique firm Lucky Living Properties are just a few of the top contenders in the biggest real estate awards programme in the Kingdom, the 11th Thailand Property Awards 2016, presented by Hansgrohe and organised by PropertyGuru Group, Asia’s leading online property group. More than 200 developments entered this year – up 32 percent from 2015 – and after a 7 hour marathon meeting, the independent panel of judges whittled down the list to 36 companies who will compete in 33 award categories. Leading with nine nominations is MQDC, which was Highly Commended in the Best Developer category in 2015, the landmark 10th anniversary of the Awards. This year, MQDC is competing in the expanded luxury condominium categories, including Best Ultra Luxury Condo Development (Bangkok) for The Residences at Mandarin Oriental, Bangkok and Best Luxury Condo Development (Bangkok) for Magnolias Waterfront Residences at ICONSIAM. According to Russ Downing, Hua Hin head judge, “After a lengthy debate the judges came to the conclusion that a new category should be added that was a better fit for Maha Samutr. The Ultra-Luxe development deserves to compete with other Ultra luxurious projects in South East Asia, as opposed to locally in Hua Hin.”

Winners will be revealed during the exclusive, black-tie gala dinner on Thursday, 22 September, at the prestigious Plaza Athenee Bangkok, a Royal Meridien hotel. An estimated 600 industry-leading figures and top real estate executives are expected to join the event which will be graced by this year’s VIP guest, Khun Suwat Liptapanlop, former Deputy Prime Minister of Thailand.
