Eldred Henry:

Truly an Inspiration following development meets which are put on by the BVI Athletic Association, Eldred continued his winning streaks in both disciplines. At his first development meet he threw 16.99metres in the shot put and 53.98metres in the discus. He proved himself to be unbeatable amongst other BVI athletes.

A story about a boy, a very big boy and a small track

and field club. It was a hot weekday in 2011, I was on my way home and I passed this big boy walking along the road. It was after school, so he was catching a ride to go home. Something made me stopped for him and when he got into my vehicle, I started to speak to him. Asked him if he was into any sports because of his size and he said no. I told him he should stop by the track or come to gym sessions, since he was so big in stature. Somehow, he agreed and he came the very next day - that was the beginning of Eldred's interest in throwing. I am Omar Jones who is the national record holder for the BVI in javelin, but during my college years I also threw shot put, discus, long jump and sprint. I am the coach of Eldred, who came to the track faithfully every day after his first day in my car! He was taught the shot put first and then started learning the discus.

Eldred has competed in the following meets below where he continues to grow rapidly. 2013 Leeward Island Championship/ BVI Twilight Invitational - finishing with 14.65metres in the shot put and 45.51metres in the discus. NACAC Under 23 - finishing with 16.98metres in the shot put and 52.6metres in the discus Commonwealth Games - finishing with 17.04metres in the shot and 51.8metres in the discus This is Eldred's 2nd year at Central Arizona College and we are pleased and proud of the work that he continues to put in and all the goals that he has set for himself. He could have been a statistic where we are seeing most of our males falling by the wayside, but thank God, he made a wise and positive choice. Top Notch Track Club salutes Eldred Henry - head and

Eldred's first competition came during his final year in high school when he threw the shot put for the inter-school house championships. He threw and won the shot put with a throw of 15.89metres. I think he also threw the discus and won with a throw of 50.65metres.During that same year, at the

shoulder above the rest, literally!!

UMI FASHION For the Management of UMI, 2014 represents the 20th Anniversary as one of the successful fashion businesses of the Virgin Islands and for Ms Deborah O'Neal, owner of UMI Fashions, it is a milestone worthy of recognition. The month of April 2014 marked 20 years of existence of the fashion establishment that one can safely say is 2nd to none in the British Virgin Islands, as UMI's trendsetting contribution to Virgin Islands has seen the community transcend to a place of levelling with the rest of the fashion conscious countries of the world. Describing the 20 years of existence with not one day dropping their standards, Ms O'Neal said it has been a very rough ride but one definitely they would trade for nothing. “We love it and we plan to continue doing it, doing more, believe me, we have a lot more in store.” Crediting the successes of her life, the management and upkeep of UMI Fashion to the Lord Jesus Christ “He sets the pace for everything. We have been fortunate to have a team of people that are one of the best. In addition, we have been blessed with some of the best customers ever, we are just grateful that our customers are a part of the UMI movement.” UMI's flagship store is located in the heart of Road Town, the capital city of the British Virgin Islands. The store offers a pleasant and spacious atmosphere for customers to shop or browse in absolute comfort, this, while being assisted by a team of professionals with a vast knowledge of the fashion industry. The quality service, excellent location and product variety are some of the elements credited to the extreme loyalty of residents, and the continued patronage of returning visitors and visitors in general.

BRITISH VIRGIN ISLANDS 60th EMA It was a celebration of our ancestors' freedom from colonialism and our cultural history. During time we showcase the culture and history of our people in grand style with extravaganzas of local and international music, pageants, Food Fairs, Rise and Shine (street jamming), Parades, Gospel celebrations and folklo. There is some strange connection between Destra, rain and festival when she performs in the Virgin Islands and July 28, all three elements played a part as entertainment opened in the Iris Freeman Festiville. The self-titled 'queen of bacchanal' has performed every year in recent times at the festival where the majority of the times it has rained and for the 60th festival celebration, that trend continued. Like all the previous times, Destra never missed a beat in the downpour and she had company at front stage as many patrons couldn't care to seek shelter. Whether it was moving to the right, left, back or front, the rain-soaked audience played right along. For about two hours, the Trinidadian singer distributed many of her popular hits including old classics like 'Bonnie and Clyde' and 'I Dare You'. She included her 2014 hits, 'First Time', 'Road Call' and 'Just A Little Bit'. Destra brought friends and they helped to navigate a number of top soca songs from other artistes. "Tortola loves me and I love Tortola...I am emotional. You don't know how good you make me feel," Destra told the audience. As she tried to exit the stage, the crowd broke into chants of "we want more". She gave in and ended her performance with a series of Bob Marley songs, 'Redemption Song', 'Man to Man' and 'Three Little Birds'.

singing along to most of his songs. Just past 1:30, the awesome Sizzla Kalonji entered the stage and took the crowd to even higher heights with a medley of songs…some more well known than others…including two of his biggest hits, “Thank U Mamma” and “Just One Of Those Days”. This was Sizzla's first ever performance in the British Virgin Islands and he absolutely delivered. He put on an outstanding show, performing for about an hour and a half, to a crowd that got even bigger than it was when Jah Cure first came on stage. CON’T ON PG 29

VIBE Lived Up To Name

The attendees at the opening of festival should be commended as they stayed following Destra's performance to support the Virgin Islands own V.I.B.E, who did not disappoint. Over the years, local bands have not enjoyed the best of support, especially when they take the stage following internationally recognized acts. However, V.I.B.E held their own with definite small tweaks to their music overall from their VI Showtime days. Energetic and playful with the audience for most of the performance, the band dropped several of their new songs from their self-titled album including, 'Marching', 'Right Angle', 'Waist Time', 'Bubble Vibe' and a definite crowd favorite, 'Ride Umm'. Reigning Miss BVI World, Kassandra Malone also made a cameo to perform with the band her groovy single, 'World To Me' and provided vocals for 'Dance Floor'. The band's vocals were led by Raul 'Jougo' Sprauve, Renrick 'Mac Daddy' Massac and TJ Henley. “International Reggae Night” was a crowd pleaser with both headliners, Jah Cure and Sizzla Kalonji, putting on awesome performances re presentations... As the midnight hour approached on Friday, August 1st, the massive crowd, in excess of 5000 people, swelled in the Iris Freeman Festiville. Jah Cure was about to take the stage. On this, his 3rd time performing in the BVI, Jah Cure put on a really great performance for just about an hour, singing many of his beloved and well known tunes including “Call On Me”, “Love Is”, “Longing For”, and “Unconditional Love”. His distinctive voice had both couples and singles alike rocking to his melodic rhythms while

A large crowd came out for the performance of Jamaican Reggae artiste and winner of The Voice Tessanne Chin. Thanking her fans particularly in the Caribbean, Tessanne oozed charisma as she reasoned with the crowd between covers as well as original songs from her 'Count On My Love' album. Among the songs that stood out was her rendition of Bob Marley's 'Redemption Song' as well as Whitney Houston's 'I Have Nothing'. The artiste also belted out wellreceived originals such 'Hideaway' which was the first song to shot her to prominence in the music industry. The beat was then changed by Soca artiste Iwer George out of Trinidad and Tobago, A-Team Band, as well as 2014 Road March champion – the VIBE Band. Machel Montano and the HD crew, which consisted of Farmer Nappy and Patrice Roberts, delivered a high-energy soca performance to a packed Carrot Bay festiville village, August 8. At 2:00 am, the veteran performer entered the stage with his hit single, 'Happiest Man Alive' which immediately charged the crowd of well over 2000 people. He then worked his way through some of his recent hits before delving into some of his older songs. Midway through the performance, he introduced Patrice Roberts and Framer Nappy. At various intervals of the 90-minute performance, Machel was accompanied on stage by the HD dancers, which provided added attraction. Prior to Machel, there were performances by Prime Time Band, Xtreme Band and the 2014 Road March champions, V.I.B.E. For V.I.B.E, it was the first title since dropping the name VI Showtime. To open the performance,

On August 9, persons gathered with their families in different locations throughout Road Town to view the mixture of colours which lit up the skies as the fireworks were fired off from a barge in the vicinity of the cruise ship pier. The fireworks, which lasted for nine minutes, was a display for 60 years of cultural display and appreciation. Meanwhile, prior to the fireworks, there was an official prize giving and and closing ceremony at the Iris Freeman Festiville. During that ceremony, Premier Hon. Dr. Orlando Smith said this year was the best festival. Later in the evening and into this morning, the crowd was entertained by Jamaican artiste Tessanne Chin, Iwer George, A-Team Band and the BVI's 2014 Road March Champion VIBE.

Waterfront Drive lit up with colourful costumes depicting some elements of the Virgin Islands culture, the 60th anniversary of emancipation festival and creativity during the 2014 August Monday Parade held August 4 in Road Town. Most of the entries sought to highlight aspects of the VI's culture in the form of music, food and dress. This year there were 65 entries. Additionally, the bands competed for the title of Road March Champion, with rival bands. To the delight of residents and visitors, the Virgin Islands Festivals and Fairs Committee were successful in its bid to wow with a grand fireworks display to signal the end of the 60th Emancipation Diamond Jubilee celebrations.

EAT WELL IT IS EASY Adapt eating habits that are healthier and allow you to add years to your life. 33

By: Tracie Petersen

High blood pressure or Hypertension can affect anyone if they live long enough. Just like your kitchen pipe, pressure is caused by the fluid on the walls of the pipe or in this case the arteries. Pressure that is too high on the arteries causes the heart to work harder and can also cause serious damage to the arteries. Over time, uncontrolled high blood pressure increases the risk of heart disease, stroke, and kidney disease. A person can have high blood pressure for years and not know it. There may be no symptoms. This is why it is sometimes called the “silent killer. This silent killer slowly damages the heart, lungs, blood vessels, kidney and brain when it goes untreated. As a result, having high blood pressure puts one at high risk for strokes and heart attacks.

Sooo...what causes high blood pressure? A person with normal blood pressure will have readings below 120/80. Higher results over time can indicate hypertension. In most cases, the underlying cause of hypertension is unknown. The top number (systolic) shows the pressure when the heart beats. The lower number (diastolic) measures pressure at rest between heartbeats, when the heart refills with

34

blood. Occasionally, kidney or adrenal gland disease can lead to hypertension.

Warning !! Many persons have pre-hypertension. This means their blood pressure is consistently just above the normal level -- falling anywhere between 120 and 139 for systolic pressure or 80 to 89 for the diastolic pressure. People in this range have a higher risk of developing heart disease than those with a lower reading. Lifestyle changes to help lower your blood pressure.

Danger Zone!! You are in the danger zone if you have high blood pressure of readings consistently at 140/90 or higher – even is you have no symptoms. At 180/110 and higher, you may be having a hypertensive crisis. Rest for a few minutes and take your blood pressure again. If it is still very high, call 911. A hypertensive crisis can lead to a stroke, heart attack, kidney damage, or loss of consciousness. Symptoms of a hypertensive crisis can include a severe headache, anxiety, nosebleeds, and feeling short of breath. Genetics play an important role in a person developing hypertension. Also, many persons, about 60% of people with hypertension also have diabetes. African-Americans are more likely to develop hypertension -- and to develop it at a younger age. Diet and excessive weight can play a role, as well as age.

Contributing Factors Hypertension and Sodium Sodium (salt), can raise blood pressure. Sodium causes the body to keep fluid and cause the heart to work harder. According to the American Heart Association we should eat less than 1500 mg of sodium per day.

Gestational Hypertension. If this goes untreated the resulting condition called preeclampsia will put both mother and baby at risk. Blood and oxygen flow to the baby and the mother's kidneys and brain can be damaged. After the baby is born, the mother's blood pressure usually returns to its normal level.

To know how much sodium you are taking in, make a habit of reading food labels and menus carefully. High sodium can be hidden in processed foods such as lunchmeats and readymade soups. Hypertension and Stress Stress!!! Stress contributes to blood pressure spikes and can affect the heart. Stress can also lead to other unhealthy habits, such as a poor diet, alcohol use, or smoking, which can contribute to high blood pressure and heart disease.

Treatment:

Hypertension and Weight Too much weight puts strain on the heart and increases the risk of high blood pressure. That is why diets to lower blood pressure are often also designed to control calories. They typically call for cutting fatty foods and added sugars, while increasing fruits, vegetables, lean protein, and fiber. Even losing 10 pounds can make a difference. Hypertension and Medicine Many flu or cold medicines that contain decongestants are one of several classes of medication that can cause blood pressure to rise. Others include NSAID pain relievers, steroids, diet pills, birth control pills, and some antidepressants. If you have high blood pressure, talk to you doctor about what drugs and supplements you are taking that may affect blood pressure.

The DASH Diet You may be able to lower your blood pressure by switching to a better diet. The DASH Diet -Dietary Approaches to Stop Hypertension -involves eating more fruits, vegetables, wholegrain foods, low-fat dairy, fish, poultry, and nuts. You should eat less red meat, saturated fats, and sweets. Reducing sodium in the diet can also have a significant effect.

Exercise: Regular exercise is good for overall health and also helps to lower blood pressure. Adults should get about 30 minutes of moderate-intensity exercise at least three times every week. That could include gardening, walking briskly, bicycling, or other aerobic exercise. Don't forget your muscles. Special exercises to strengthen the muscles are recommended at least two days a week.

Hypertension and Pregnancy Some women experience hypertension in the second half of pregnancy. This is called

35

Medication After diet and exercise changes, diuretics are often the next choice. Water pills as they are often called shed excess sodium and water to lower blood pressure. They will send a person to urinate more often. Beta-blockers help to slow the heart rate and decrease the work the heart has to do. ACE inhibitors helps to keep blood vessels dilated and this lowers blood pressure and the heart works under less pressure. Calcium channel blockers slow the movement of calcium into the cells of the heart and blood vessels and help to ease the heart's contraction and relax the blood vessels

Living With High Blood Pressure Living with hypertension may be life long. It is important to take medication on time. Every person/family should have a blood pressure monitor to check their blood pressure. Remember hypertension is a silent killer. Persons without high blood pressure should check their pressure once a month. Those who are diagnosed already should check daily and

keep a log of the pressure reading. It is important to also keep a medication log of when medication was taken and the dose, which was taken. When you visit you doctor take both logs with you. It will help the doctor to see how well your blood pressure is being managed on a daily basis. If you keep it under control, you can reduce the risk of stroke, heart disease, and kidney failure.

Skin Color At Its Best! Guidelines to Keeping your Complexion pure!! What goes inside soon shows outside! Vitamins are a big booster for your skins health as they aid in absorption, repair and other cellular functions. Such main vitamins are A, C, D&E. Fruits and vegetables are a good and natural source of these, except for D which absorbed through the skin from the sun. So be sure to get your full servings of these everyday, because healthy cells produce healthy pigment and has a stronger defense system. Water I believe is one of the foundations upon which healthy skin is built. This is so because the body is made up of mostly water e.g. Blood, lymph, enzymes, mucous etc‌ The membranes of our cells are like sponges made and intended to absorb much water to carry out their functions.

Exercise! Cardio-vascular!! No offence to the other forms of exercise but when it comes to cleaning out your skin, this method of working out proves to be the most effective. Why? Well it gives you a good sweat. Studies have shown that by the body sweating profusely it flushes out the dead cells, oil and bacteria to the surface that is lodged in the pores. Even better you get the constant urge to drink lots of water. Someone who drinks water and exercise over a period of time their sweat comprises mainly of water with small amounts of urea and salt, which ,if gets concentrated can cause irritation. Further more these

38

persons tend to usually have a clean clear complexion backed with a glow from much hydration.

Topical treatments! Moisture protects the PH of your skin (4.55.5) which is mildly acidic. A cream applied on the face serves to be a barrier from harmful external agents which can create free radicals (damaged cells) or bacterial infection. It also holds the skins natural moisture in , preventing excessive moisture loss, fighting dryness that holds blemishes longer. While at the same time targeting other problems faced by the skin with specific ingredients suited to counteract. Masks are great for repairing and purifying. This must not be left out in your emergency skin care kit. There are various types to suit your skins condition but when it comes to maintaining your color there are just a few that will do the trick. There is the cucumber and aloe mask, the alpha and beta hydroxyl masks or special masks with glycolic or salicylic acids in them that specifically target hyper-pigmented areas. Gentle micro-peels can be done once a year on skin that suffers from dullness due to epidermal thickening, Acne or hyperpigmentation but must be administered by a skin therapist or dermatologist. Such peels can be lactic acid, pumpkin enzymes, flower acid or glycolic acid and many more.

.

The type of peel used should be determined by a professional. Mild strength acids... Like glycolic & salicylic acid are helpful in your daily regimen. Once these are included in the products you use, you may experience slight dryness and peeling or some irritation on affected areas. However it combats hyper –keratosis or dull thick skin by speeding up cellular reproduction and so makes the skin brighter, more even in tone and less breakouts as they also have some anti-bacterial properties. Either one of these ingredients are best combined with benzyl peroxide which infuses oxygen to kill bacteria on a more effective scale. The use of enzyme is fast becoming the preferred way to exfoliate the skin, as it does not scar the skin unlike its apricot counterpart. These enzymes are usually derived from botanicals, fruits etc.. E.g. Paw-paw, pineapple etc.. They work by eating away only the dead cells on the surface of the skin also causing it to maintain and even tone. This too can be drying if left on the skin for longer than its recommended time. So be sure to follow all guidelines when using these treatments. Remember it does not take a scientist to maintain great skin with an even complexion it just takes a little care!!! But in regards to everything else without protection from the sun your pigment may still show signs of discoloration. This is why sun block is so important. For the indoors an spf 15 is just enough and when in direct sunlight choose an spf of 30 which is recommended. Shana Jawahir Precision Beauty Clinic Esthetician 1473 439 5633

blood sugar will typically experience polyuria (frequent urination), they will become increasingly thirsty (polydipsia) and hungry (polyphagia). 1) Type 1 Diabetes The body does not produce insulin. Some people may refer to this type as insulindependent diabetes, juvenile diabetes, or early-onset diabetes. People usually develop type 1 diabetes before their 40th year, often in early adulthood or teenage years. Type 1 diabetes is nowhere near as common as type 2 diabetes. Approximately 10% of all diabetes cases are type 1. In our last segment we highlighted “ High blood pressure and ways and means to handle this silent killer. Hopefully for many of you, you have taken the time out to think about the ways and means to prevent this disease from affecting you and to also share that valuable information with friends and family.. This time we are going to have a little discussion on anther preventable disease called diabetes and also touch base on other related topics such as exercise tips, injury prevention and creating the body you've always wanted. So welcome and let's dive right in...1....2....3..... goooo!!!! DIABETES Diabetes, often referred to by doctors as diabetes mellitus, describes a group of metabolic diseases in which the person has high blood glucose (blood sugar), either because insulin production is inadequate, or because the body's cells do not respond properly to insulin, or both. Patients with high

40

Patients with type 1 diabetes will need to take insulin injections for the rest of their life. They must also ensure proper blood-glucose levels by carrying out regular blood tests and following a special diet. 2) Type 2 Diabetes The body does not produce enough insulin for proper function, or the cells in the body do not react to insulin (insulin resistance). Approximately 90% of all cases of diabetes worldwide are of this type. Diabetes patient measuring glucose level in blood Measuring the glucose level in blood.

in their blood, and their bodies are unable to produce enough insulin to transport all of the glucose into their cells, resulting in progressively rising levels of glucose.

Some people may be able to control their type 2 diabetes symptoms by losing weight, following a healthy diet, doing plenty of exercise, and monitoring their blood glucose levels. However, type 2 diabetes is typically a progressive disease - it gradually gets worse and the patient will probably end up have to take insulin, usually in tablet form.

Diagnosis of gestational diabetes is made during pregnancy. The majority of gestational diabetes patients can control their diabetes with exercise and diet.

Overweight and obese people have a much higher risk of developing type 2 diabetes compared to those with a healthy body weight. People with a lot of visceral fat, also known as central obesity, belly fat, or abdominal obesity, are especially at risk. Being overweight/obese causes the body to release chemicals that can destabilize the body's cardiovascular and metabolic systems.

Being overweight, physically inactive and eating the wrong foods all contribute to our risk of developing type 2 diabetes. Drinking just one can of (non-diet) soda per day can raise our risk of developing type 2 diabetes by 22%, researchers from Imperial College London reported in the journal Diabetologia. The scientists believe that the impact of sugary soft drinks on diabetes risk may be a direct one, rather than simply an influence on body weight.

Between 10% to 20% of them will need to take some kind of blood-glucose-controlling medications. Undiagnosed or uncontrolled gestational diabetes can raise the risk of complications during childbirth. The baby may be bigger than he/she should be. Diabetes Is A Metabolism Disorder Diabetes (diabetes mellitus) is classed as a metabolism disorder. Metabolism refers to the way our bodies use digested food for energy and growth. Most of what we eat is broken down into glucose. Glucose is a form of sugar in the blood - it is the principal source of fuel for our bodies.

The risk of developing type 2 diabetes is also greater as we get older. Experts are not completely sure why, but say that as we age we tend to put on weight and become less physically active. Those with a close relative who had/had type 2 diabetes, people of Middle Eastern, African, or South Asian descent also have a higher risk of developing the disease. Men whose testosterone levels are low have been found to have a higher risk of developing type 2 diabetes.

When our food is digested, the glucose makes its way into our bloodstream. Our cells use the glucose for energy and growth. However, glucose cannot enter our cells without insulin being present - insulin makes it possible for our cells to take in the glucose. Insulin is a hormone that is produced by the pancreas. After eating, the pancreas automatically releases an adequate quantity

3) Gestational Diabetes This type affects females during pregnancy. Some women have very high levels of glucose

exercise.

of insulin to move the glucose present in our blood into the cells, as soon as glucose enters the cells blood-glucose levels drop.

Patients with Type 2 diabetes are usually treated with tablets, exercise and a special diet, but sometimes insulin injections are also required.

A person with diabetes has a condition in which the quantity of glucose in the blood is too elevated (hyperglycemia). This is because the body either does not produce enough insulin, produces no insulin, or has cells that do not respond properly to the insulin the pancreas produces. This results in too much glucose building up in the blood. This excess blood glucose eventually passes out of the body in urine. So, even though the blood has plenty of glucose, the cells are not getting it for their essential energy and growth requirements.

If diabetes is not adequately controlled the patient has a significantly higher risk of developing complications... In conclusion I must say the best defence we have against diabetes is prevention: A good diet and regular daily exercise is what we all need.. So get up, put on you track pants and tshirts and lets all hit the gym...

Exercise tips: 1. Be sure to warm up before any

exercise. This increases blood flow to the targeted muscle and also increases muscle elasticity and helps to prevent injury. 2. Be sure to give the muscles adequate

rest for growth and development. Your muscles grow during your rest period between workouts ( that is on the days you do not workout you achieve more growth and development)

TREATMENT

3. Do not lift too heavy too soon. The

muscles need time to adapt to the change.

All types of diabetes are treatable. Diabetes type 1 lasts a lifetime, there is no known cure. Type 2 usually lasts a lifetime, however, some people have managed to get rid of their symptoms without medication, through a combination of exercise, diet and body weight control.

4. Be sure to stretch before and after

exercise 5. Consistency is the key. Set your

training schedule and try your best to stick to it..

Patients with type 1 are treated with regular insulin injections, as well as a special diet and

the chef's grilling, smoking and BBQ expertise that includes grilling Caribbean style and hot and cold smoking techniques that can be done at home.

ChefChadJohnson Johnson began his career in the modern Mediterranean kitchen of Layla under Chef Frank Proto. At Layla, Johnson was introduced to and influenced by the fresh ingredients and cooking styles of the Eastern Mediterranean and North Africa. After a stint at Layla, Johnson worked in the popular kitchen of Montrachet where, as he assisted the pastry chefs and plated amuses nightly, he learned, from Chef Chris Gesualdi, how a high volume, fine dining kitchen could be organized for maximum efficiency. While at Savoy, under Chef Peter Hoffman, Johnson was exposed to premium products in their natural state. This was the essence and focus of Hoffman's cuisine; great ingredients prepared simply, allowing their natural flavors to shine.

Using fresh, local ingredients, guests are taught how to fillet a fresh fish, clean an Anegada lobster (in season) and prepare the perfect steak. They will also learn how to season raw ingredients using homemade rubs and mouthwatering marinades before grilling on oil drum grills right on the beach. Depending on what is being cooked, the chef may incorporate items such as mango pits or a fragrant wood with the charcoal to infuse the fish or meat with more flavor. The hot and cold smoking techniques include tabletop hot smoking for fish, cold smoking for fish, and creating a smoky flavor using paprika for seasoning. Students will enjoy their grilled and smoked creations with the chef at a family style meal on the beach with sides made from ingredients picked fresh from the chef's island garden. One of Peter Island's bartenders is on-hand to teach students how to make the resort's signature cocktails including the Peter Island Connection and Ginger Lemonade.

Growing up in Paducah, Kentucky, Johnson decided to pursue a culinary career after spending time at his best friend's family's restaurant. He attended the French Culinary Institute in New York where he was determined to learn all he could from the famed staff, which included modern culinary luminaries like Jacques Pepin, Andre Soltner and Alain Sailhac. He paid for his own tuition, came in early and stayed late - always pressing his instructors for more information. From these legends, Johnson learned the techniques and traditions that have made French chefs leaders in dining for hundreds of years.

Peter Island's Grilling & Smoking Class is held every Tuesday for up to 10 guests and is priced at USD 100 per person for guests on the FAP plan, and USD 200 per person for non-FAP guests; plus an additional 18% tax and service charge. Tasting Tuesday If you are interested in learning more about wines, or just want to taste, Peter Island Resort & Spa is pleased to invite you to Tasting Tuesday. Join Rimple, our resident wine expert, every Tuesday at 6:00 pm to taste at least four wines served with a variety of cheeses. Whether you are a novice or wine connoisseur, this fun, educational tasting is a great way to meet fellow wine lovers.

His natural passion for great food combined with his French Culinary Institute education and exposure to some of the country's best restaurants have all influenced Johnson's signature modern cuisine at Élevage “I want to take the great iconic dishes, the ones you've loved your entire life, and elevate them. I want it to be the best you've ever had.”

Tasting Tuesday is also the perfect prelude to our Vintner Dinners held every Thursday where we showcase a selection of fine wines paired with five delicious courses.
