Slow Cook A Turkey For A Thanksgiving Feast Turkey is a succulent staple of Thanksgiving. Though it can be enjoyed year-round, turkey is most popular on Thanksgiving, when families and friends gather for large feasts. Cooking a turkey can be daunting, especially for those people cooking their first bird. But slow cooking a turkey can make the process a lot easier and help to guarantee that each part of the bird is evenly cooked when it comes time to remove it from the oven. Those who want to try their hand at slowcooking this year’s Thanksgiving feast can try the following recipe for “Holiday Turkey” from Andrew Schloss’ “Cooking Slow” (Chronicle Books). Holiday Turkey Makes 15 servings 1 f resh turkey, about 15 pounds, preferably free-range 1 tablespoon olive oil 1 quart apple cider 2 teaspoons dried poultry seasoning Coarse sea salt and freshly ground black pepper Remove the giblets from the turkey and discard (or save for another use). Rinse the turkey inside and out and pat dry with paper towels. Rub it all over with salt and pepper. Refrigerate, uncovered, for at least 12 hours

and up to 24 hours. During that time, the surface of the turkey will become visibly dry and the skin will tighten; this encourages a nice crisp skin on the finished bird. Remove the turkey from the refrigerator 1 hour before you plan to start roasting. Preheat the oven to 450 F. Put the turkey on a rack set in a large, flameproof roasting pan. Drizzle the oil over the top. Roast for 1 hour. Reduce the oven temperature to 175 F. Pour the cider into the roasting pan and sprinkle the poultry seasoning in the liquid. Continue roasting until an instant-read thermometer inserted into the thickest part of a thigh (but not touching bone) registers to 170 F. Transfer the turkey to a carving board, tent loosely with aluminum foil, and let rest for about 15 minutes (see tip). Meanwhile, skim the fat from the surface of the liquid in the pan. Put the roasting pan over two burners and bring the pan drippings to a boil over high heat. Cook until the juices reduce and thicken slightly, enough to coat a spoon, about 10 minutes. Taste for seasoning. Carve the turkey and serve with cider pan juices. Resting tip: Slow-roasted meats need far less resting time (pretty much none) than those that are traditionally roasted. The reason for resting meat

that has been roasted at a high temperature is to allow juices that have collected in the cooler center time to migrate back into the dryer (hotter) exterior sections after it comes out of the oven. Because slow-roasted meats are cooked evenly and a temperature that keeps most of the juices in place, a resting period is largely unnecessary. A brief resting time does allow the meat to become a little firmer as it cools, making it easier to carve.

Gillette: More Prepared For 2017 Than You Might Think

Wall Street and Washington D.C. have gutted the country. But thankfully, with every valley, there’s a peak. From an economic low, Gillette, Wyoming is poised to see an increase in available jobs that may help repair damage economically wrought through half-baked political ideology based on masquerading and misdirection. Many voters don’t have the background to parse through underhanded political rhetoric, and end up voting for someone about whom they really know nothing. Yet actions speak louder than words; and that will be the case long after humankind has finished its season. A politician with 30 years in government has a lot of words behind them—but where is their action? Anyone can write an essay or spin a speech; not anyone can run a business, a city, a state, or a country. In that managerial realm, there have been some recent developments among Wyoming operations that should be cause for celebration; especially in and around the Campbell County area. Harry Kimbrough, a local Gillette businessman in real estate, has recently pointed out some positive trends in the energy industry around Campbell County. According to Kimbrough: “We’re seeing more Halliburton trucks in town, which is good; that means the oil has picked up some. And then, we get enquiries from other town businesses looking for locations—companies that service the mineral industries.” In other energy news, KotaTV.com recently broadcast a piece entitled “Wyoming OKs New Coal Mine Near Sheridan”, wherein a state regulatory board is shown to have approved the first major coal mine in years. Even should the operation be small, that’s going to mean many jobs. Between miners, oilers, engineers, mechanics, blasters, managerial personnel, support personnel, and contractors involved in the installation of new equipment, it’s likely there will be work for quite a few people around the state. Given this region’s proximity to Gillette, it’s possible there will be more than a few Campbell County locals who are willing to make the commute. According to the article, digging at the location north of Sheridan could begin as early as 2017. This indicates there are employment opportunities on the way. But it’s not just in the energy industry. Harry also pointed out some service industry jobs that are en route as well: “Starbucks has bought a tract of land. I’m not sure when they’ll be building it, but they’ll have

another standalone building eventually. There’s another auto dealer coming to town. There will be two new businesses going up this Summer along Lakeway Road.” Between those four businesses, it’s easy to imagine that between 50 and 100 jobs could be created. Also, some $41 million dollars in “Economic Development Large Project” loan requests have been granted. Apparently the state treasurer’s office is going to work directly with businesses in these developments. Additionally, $4.2 million have been approved in a BRC (Business Ready Community) grant pertaining to several new projects partially funded back in April. In the $41 million territory, Standard Alcohol will be creating 32 new jobs whose average hourly pay will be $43.57 near Cheyenne. For Campbell County residents, Atlas Carbon is the business to keep an eye on. They’re looking to expand the already-activated carbon plant in Gillette. Plans for expansion involve doubling activated carbon production from 16,000 to 32,000 pounds annually. Lastly, Cody Laboratories is expanding pharmaceutical development in Cody, Wyoming, and will be adding 39 new jobs averaging $21.57 an hour. Wyoming is still an energy juggernaut, despite the insanity of politics over the last eight years. Development projects are in the works statewide, and the energy capital of the nation, Campbell

County, is yet-observing a regular influx of residents. According to Harry Kimbrough, “We’re still seeing people moving to Gillette either for employment opportunities, or just to be closer to family. The real estate values have evened out; the values are only down about 2-3% across the board from last year. It seems to have stabilized.” That really is good news; especially considering the market fluctuations over the last decade. That values should only be down 2-3% is a testament to the resiliency of this region. In fact, it’s so resilient that it has attracted out-of-state investors. Kimbrough elaborated briefly: “We’re...seeing out-of-town investors eyeballing our multi-family and commercial properties for picking out some good investments. This trend is a little bit new. We always have some, but we’re seeing more enquiries from out of town investors looking for good investments—a place to put their markets because they’re not satisfied with their returns for their IRAs and 401ks.” The last eight years may have been bleak, but there’s sunshine on the horizon for Campbell County and Wyoming.

Remembering Our Veterans The men and women who defend the liberties and freedoms of the countries they represent hold a special place in people’s hearts and an eternal spot in their countries’ histories. Any opportunity is a good time to commemorate the bravery and selfless deeds of military personnel, but certain prominent holidays in November make this an especially important time to thank veterans for their service. November 11 is Veterans Day in the United States and Remembrance Day in Canada. It’s also known as Armistice Day in other parts of the world. These holidays honor all military veterans who have provided service to their countries, and that each falls on November 11 is no coincidence, as the day commemorates the anniversary of the end of World War I on the 11th hour of the 11th day of the 11th month of 1918. Many places around the world pause and remember fallen veterans on November 11, but a good majority of Veterans Day and Remembrance Day commemorative events focus on past and current veterans who are still alive. There are many ways to honor the military at home and abroad in time for the November festivities. The following are just a handful of ways to show appreciation for military men and women. • When dining out, ask your server if you can pay the tab for a soldier or veteran you see in the restaurant. • Attend a military parade with your family and explain the significance of the day to children in attendance. • Draft letters and send care packages to soldiers currently

in service far away from home. • Ask your company if Veterans Day or Remembrance Day can be an observed holiday at your place of business each year to pay homage to servicemen and women. • Visit a military memorial in a city near you. Your town also may have its own memorial. • Petition town officials to erect a memorial if your town does not already have one. Such memorials can be a source of inspiration for your community. • Support a military family in your town who may be missing a loved one stationed elsewhere. Make meals, mow the lawn, help with grocery shopping, or simply provide emotional support. • Volunteer time at a veterans’ hospital. You may be able to read with veterans or engage in other activities. • Get involved with a military support charity that can provide much-needed funds to struggling families or disabled veterans. • Have children speak with

veterans in your family, including grandparents, uncles and aunts or even their own parents. It can help them gain perspective on the important roles the military plays. • Ask a veteran to give a commencement speech at a school or to be the guest of honor at a special function. • Drive disabled veterans to doctors’ appointments or to run any errands. • Support a local VFW organization. • Create a scrapbook for a veteran in your life. • Cheer for or thank military personnel each time you see them. • Visit the veterans’ portion of a nearby cemetery and place poppies or other flowers on the graves. • Always keep the military on your mind and never forget those who have served and didn’t return home. Armistice Day, Remembrance Day and Veterans Day are great ways to honor past and current military for their service and sacrifice.

Cold Weather Outdoor Entertaining Outdoor entertaining has never been more popular. As more and more homeowners turn their homes into their own personal oases, extending the party outdoors has become a bigger priority. According to the American Home Furnishings Alliance’s 2015 Outdoor Furniture Trend Report, outof-doors areas on a property are the favored venues for celebrations with family and friends. While outdoor entertaining was once relegated to the warm weather seasons, advancements in technology have now made it more comfortable and enjoyable to entertain outdoors for much of the year. But hosts who want to extend the outdoor party after summer has come and gone should consider a few important entertaining tips. · Start the party early. Summertime backyard barbecues and pool parties benefit from late-evening sunsets that illuminate patios and pool areas well into the evening. In addition, many hosts prefer to start such parties later in the day to avoid the sun during the early afternoon when it is at its most blazing. However, start the party earlier in the day when hosting in fall or early winter. Temperatures can drop considerably once the sun begins to set, so starting early can save hosts and their guests from cold air. · Heat things up. Summertime hosts might employ canopies to protect themselves and their guests from the heat, and it’s important for hosts to take similar steps when the weather is chillier. The AHFA report found that 38 percent of homeowners intended to purchase fire pits for their outdoor entertaining areas, and such fire pits can keep guests warm as the sun goes down and the night air gets chilly. Fire pits have become must-have items for outdoor entertaining areas, and hosts can surely find one that suits their needs. · Change the menu. Grilling hot

dogs and hamburgers might still work when entertaining outdoors in fall and winter, but hosts may want to stray from other summertime fare like watermelon or pasta salad. Embrace the cold weather by roasting some nuts and making s’mores over an open fire. In lieu of summertime beverages like lemonade and beer, serve hot chocolate or wine to keep guests warm. · Ensure there is adequate lighting. Mother Nature won’t offer much lighting when you host a

party outdoors in late fall and early winter, so make sure your patios and sidewalks are well lit. Guests will want to see one another and what they’re eating, and well-lit walkways will reduce the risk that guests take a tumble or turn their ankles when walking to and from the house. Outdoor entertaining need not end because summer has come and gone. But hosts must take a different approach to hosting when throwing outdoor gatherings in late fall and early winter.

Make Election Day Go Smoothly Election Day gives voters throughout the United States a chance to participate in their government. The right to vote is something to cherish, as many people across the globe do not get a chance to elect the officials who govern their countries. While Election Day is an exciting time, voters may find it frustrating if they do not take steps to ensure things go smoothly when they head to the polls. The following tips can help voters prepare for Election Day. • Confirm your polling location. Polling locations may have changed since last year, and voters who have moved in the past 12 months may now have to vote in a new location. Voters can contact their local board of elections or visit www.Vote411. org to confirm the correct polling locations. Voters should also learn the hours when the polls are open so they do not arrive too early or too late to vote. • Bring photo identification. Voter identification laws vary by state, but voters who want to avoid hassles or holdups may be able to do

so by bringing current photo identification with them to the polling place. While such identification is not necessarily a requirement,

voters who bring along a driver’s license or state identification card may get in and out of the polling place more quickly than those who do not. • Confirm registration. Voters can confirm that they have registered to vote by contacting their local board of elections in advance of

Election Day. Sometimes voters’ names may not appear on the registration list when they arrive to vote, even if they previously registered. Poll workers can help voters who find themselves in such situations. But voters who want to avoid such hassles on Election Day can confirm their registration beforehand. • Be familiar with the candidates and issues on the ballot. Voting is a privilege and a responsibility, so voters should familiarize themselves with the candidates and issues on the ballot in the weeks leading up to Election Day. In addition to national or statewide candidates and issues, voters should learn about local issues that may have a more direct impact on their daily lives. The more voters learn about the candidates and issues in advance, the more quickly they can cast their votes and get to work or return home. Voting on Election Day is a privilege that voters should not take lightly. Taking certain steps in the weeks ahead of Election Day can make it easier for voters to cast their ballots.
