QUICHE \
Quiche is the perfect food. You can eat it for breakfast, brunch, lunch or dinner! It’s great with a side of fruit, green salad and even a light soup, champagne or orange juice! It looks sophisticated but it is truly one of the easiest dishes to make. The best part is that you can customize and create a quiche that is uniquely yours when you find your flavor combo.
My version was created using several different recipes until I got it the way I like it and you can tweak, my recipe. Add an egg to make it even more firm. Make it simple with just cheese or pump it up with other add-ins. Ideas for a few combos are below:
Some Possible Filling Combos: Cooked spinach (liquid removed), artichoke hearts and parmesan Cooked spinach (liquid removed) and Cheddar Cheese Smoked salmon and gruyere or brie Cheddar cheese and cubed ham or crumbled sausage Shredded chicken, sun dried tomatoes Bacon, sauteed leeks or onions and gruyere Any other combo or leftovers that might taste good with egg

QUICHE Directions Preheat oven to 425 F. Prick the pie crust all over the bottom with a fork, line it with tin foil and cover the edges. Weigh the bottom down with the pie weights to keep the bottom of the crust flat. Bake for 10-12 minutes. Remove the weights and foil carefully and set to the side. Reduce the oven temperature to 350. For the filling combine eggs, cream and seasonings and mix until well blended. Put the baked crust on a baking sheet. Evenly distribute your fillings in the bottom of the crust. Pour the mixture into the crust. Don’t overfill, be sure to leave some room for the egg mixture to expand. Place in the oven and cook for 45 minutes. I like mine a bit more firm so your first time cooking check the times as you may want to cook it a little less. Let it cool for about 15 minutes, preferably on a rack, before slicing! ENJOY!!
