It happens for me every year at about this time. I begin missing the cheerful blooms that once greeted me along my drive. Thankfully, Kathy Huber, the beloved garden editor at the Houston Chronicle, shares photos of her yard – taken by her photographer husband John Everett -- to remind us of what’s around the corner. Huber likens this month to “beauty shop time” in the yard. It’s a time, she says, to mulch, plant fruit trees and begin taking stock of what you want to do – or not do – this spring. The roses I plant are hardy, tough, beautiful . . . AND easy. I’ve planted them for years. I don’t prepare the beds or spray – and rarely fertilize. Occasionally, I water them. And, I have dogs, who love to mark tall things, daily. There are hundreds of types of roses. I only plant those that do NOT need any help. Fussy plants are not for me. Finding the right type for drought, humidity, Houston summer sun, and the occasional super freeze that all occur here from time to time can be a challenge, as most gardeners know. Most roses don’t like our summers, leave ‘em be, they’ll flower again soon enough. Roses handle varied conditions far better than many other blooming plants, and they will do so nearly all year here, blooming in winter-time when little else does except annuals low to the ground. There is a profound array of colors, scents and needs associated with this magical flower. What to plant that will fulfill the promises found on the

labels? Houston‘s zones vary; what works in Tomball may not in League City. Buy only from known rose sources that have tried out the plants that they sell, or shop locally owned specialized nurseries. Ask questions. The chain nurseries often mislabel theirs IF labeled at all, and they do not have a staff that is informed. They force feed them too much, to keep them blooming, until you put them in your own yard. Basic Rose Types: floribunda, hybrid tea, grandiflora, climbers, and shrubs. They need good sunlight (4-5 hours), and know how big your rose will ultimately be and who he is next to! Two to 10 years down the road all perennials will be growing and thriving. Bougainvilleas, agaves and cacti, for example, require the gardner to have knowledge, since they have thorns that don’t play well with others.

TIP: One way to balance a red sofa in the room is to paint the back wall of a bookcase red—in this case “Sultan’s Palace” by Benjamin Moore. The couple had many choices but could not make final decisions on living room furniture and art placement. “It was obvious that our living room just did not feel ‘finished’ without art on the walls,” explains Marilyn. “I did not want the room overly ‘styled.’ I preferred a more collected and casual look, using pieces we already owned. “Obviously the flow of the room with the awkward fireplace walk-through and passages to the stairs had to work—I just could not visualize it.” She adds that being stymied made them both feel frustrated that the space was not “finished.”

AFTER: Painting the back wall of the bookcases with Benjamin Moore’s “Sultan’s Palace” and rearranging accessories gave the space a visual boost.

• Think “green”—recycling existing furnishing repurposes them, keeps them out of the landfill and saves thousands, too. • Paint consistently gives the most bang for your buck. • Sometimes the most effective strategy is not to gut your living room, but to first rethink the items that are already paid for.

TIP: Moving in an armoire from another room and flanking it with artwork balanced the room and did not interfere with walkways. “I was very pleased and surprised that you and your assistant, Dorenda Longoria, could rearrange the furniture at that first meeting -and accessorize our new built in bookcase, too,” says Marilyn. “Your attention to detail was very helpful,” she adds. The hardest suggestion for her to visualize? “I was a little dismayed that a blue chair I had just reupholstered for the room did not work but when you suggested we move it to the bedroom beside a new Era C end table from Crate & Barrel, I was greatly relieved—it works perfectly there.” TIP: Sometimes a decorator sees a space and colors in a rug differently. That does not mean it is wrong. The floating floral art over the red Pearson Quatrine slipcovered sofa is by Heidi Coutu and purchased from a discontinued gallery, while the seascape over the mantel (and the coffee table) came from Marilyn’s inlaws. The other artwork came from various antique stores, Ebay and the Round Top Antiques Fair. The Benjamin Moore paint in the living room is “Blonde Wood” on walls, “Barely Beige” on the ceiling, “Squire Hill Buff ”on ceiling beams and trim, and “Twilight Gold” on the mantel. I recommended she paint “Sultan’s Palace” on the back wall of the bookcase. The Pearson tufted armchair fabric is Neisha by Fabricut bought at Sunny Roads; the oval side table and small round metal table the owners bought at Accessory Place. The bronze pharmacy floor lamp came from M&M Lighting, while the tall lamp on the round game table was purchased from Bellacor. The couple purchased the rooster lamp at Bering’s Hardware. “It’s the little things that make such a difference and seeking help from knowledgeable and experienced professionals is well worth the expense,” Marilyn says. What have friends and family said about the changes? “They love it. Our youngest daughter, whose style is much more clean and modern than ours, says she likes the rooms just the way they are!”

Recent weather extremes have many Houston homeowners concerned about keeping their yards healthy. Healthy plants need healthy soil. But what makes a soil healthy? Increasing organic matter in the soil increases water retention and nutrient availability. Landscape plants and turf grasses grow deeper roots and become drought-tolerant, flood-tolerant, even disease and pest resistant. So, where do you get organic matter? Scrape through this layer with your foot and another layer of gray, less recognizable leaves presents itself. Use a stick to dig deeper and all you see are fragments of even older leaves. This multi-year process of layered decomposition is nature's way of recycling the nutrients stored in the leaves. This type of organic matter is called Leaf Mold Compost. The BROWNS include dead leaves, broken twigs and even shredded newspaper. All contain cellulose, a difficult to digest form of sugar. The BLACK ACTIVATORS are live bacteria found naturally in soil. A shovel of garden soil, bag of cow manure or a bucket of finished compost is all teaming with millions of these microbes. When combined in a balanced ratio, the GREENS provide the metabolic fuel necessary for bacteria found in the BLACK ACTIVATOR to grow quickly and break down the decay-resistant cellulose of the BROWNS. When completely decomposed, the resulting dark brown-black compost has the look, the feel and the smell of fresh soil. Outdoor furniture borrows design aspects from interior pieces but are built to outlast the elements with synthetic materials and outdoor fabrics. “People want to go outside to escape,” says Will Garant, design consultant at Modani in Houston. “Outdoor beds have a resort feel and provide a more intimate seating option.” If you’re looking to buy now, think durability. “Designers are using synthetic materials that look nice and expensive, but can also be hosed off at the end of the day,” says Elizabeth Munger, Munger Interiors. A Walk Through a Master’s Garden... AND A VISIT INSIDE KATHY HUBER’S HOME BY MARSHA CANRIGHT • PHOTOGRAPHY BY JOHN EVERETT Friends call her the queen of mulch but to local gardeners, Kathy Huber is the ruling royalty of Houston horticulture. As garden editor for the Houston Chronicle, Huber has written for twoand-a-half decades about area gardens, landscaping trends, garden design, plant varieties, and all things of interest to an enthusiastic gardening community. She is a Texas master gardener and the author of “The Texas Flower Garden.” A glimpse inside Huber’s own well-tended garden reveals a mix of evergreens, showy grasses, ornamental trees and antique roses, alongside the well-loved flowers of her Georgia childhood: gardenias, camellias and azaleas. “I like a little control and a lot of loosey-goosey,” Huber says. She is fond of woodland-type gardens and likens her personal style to an English garden with Texas plants. Tucked on a third of an acre in Garden Oaks, the grounds around her 1930s two-story cottage-style home, are a lush pallet of plants, colors, textures, fragrance and forms. Her goal: no matter the season, there is always something to look at in her garden. Huber purchased the property in 1985 with her husband, photographer John Everett, and she’s been putting in plants since their arrival. Her gardens evolved from shade, because she planted lots of trees, to a sunnier state when the floods of Hurricane Ike and the droughts decimated her upper canopy. Gradually, she is returning to a shady space. It is like a lovely park.

Awash in greens and purple with splashes of red, the garden is like a lovely park. Spilling onto the path is a trailing purple lantana and to its right, a lofty althea with pinkish purple flowers. Near the center is a formal garden with a series of concentric circles and alternating plant beds with granite pathways. It is anchored by a low-arching arbor covered in deep pink Peggy Martin roses. These are the roses that survived Katrina, and hers was propagated from the original plant. The outer circles host salvia, Japanese maple and heirloom bulbs. A multi-petal crimson rose, Maggie, is probably Huber’s favorite fragrance but “the Erlicheer narcissus is right up there,” she says. Another rose in her garden, the Caldwell Pink, blooms prolifically from spring to frost. Ornamental trees sweep the right side of her garden, including a 20-foot Mexican Clethra with its glossy, elegant foliage, and a Mexican Plum that Huber says has wonderful white flowers in the spring. Outside the rear French doors, there is another ornamental shrub, the lovely Duranta Golden Dew Drop plant. “I like incorporating as many natives as possible into the mix, especially those that provide shelter and food for birds and butterflies,” she adds. Huber grows a number of large root-hardy plants such as duranta and hamellia and lespedeza. But she also has many smaller perennials like catmint, coneflowers, rudbeckias, salvias and daylilies. There are also gingers, irises, narcissus and leucojum – and plenty of space for the herbs that Huber grows for cooking. “I grow bay, cilantro, dill, fennel, thyme, sage, chives, parsley, oregano, lots of rosemary and basil during the long stretch of warm months,” she says. “Rosemary is a great perennial that works with ornamental grasses. Because John is now the cook, the herbs are planted in pots just outside the kitchen door.” Creating a nice green screen across the wood fence to the west is a planting of Viburnum and gingers. Along the east fence line there are Bauhinia orchid trees, leucothoe and bamboo.

In an extended kitchen window, she has planted an old wooden herb box with a dozen or so crisp Paperwhite bulbs with a moss cover for texture. Standing on either side like bookends are two perfectly shaped Eugenia topiaries. In another, she fills a 20-inch wooden dough bowl with four-inch pots of ferns, interspersed with green hydrangea blossoms and variegated ivy. “I love greens and blues and gold, the colors you find outside,” she says. Huber is a working journalist and a one-person gardener, although her husband helps with cleanup, tying the clippings in bundles. “Over the years I’ve been adding medium and large, goodlooking plants that take up space and require minimal care.

Once or twice a year, she employs someone to help her with heavy pruning and mulching. Gardening is a physical pleasure with some frustrations, Huber says. “From July to September I’m wishing this hell would go away.” Huber’s slight, soft southern drawl exposes her Georgia origins. Growing up in Moultrie, she became a gardener by osmosis. Her mother and grandmother were always ardent gardeners. “I wasn’t Martha Stewart, but I had an early appreciation of nature and I always was around plants. In time it rubbed off,” she says. Her mother, now 86, enjoys coming to Houston and making the rounds of plant nurseries. “She has a little bit of Texas in her Georgia garden,” Huber says. April is her favorite time in the garden, but the busiest month is probably February.

Tips for new Gulf Coast gardeners Gardening on the upper Gulf Coast is not for the faint of heart. Here are Kathy Huber’s top three tips for gardeners new to the Gulf Coast. 1. You've got to know your place. Look at your garden and see how the sun falls on it during different times of the day. This will keep you from sticking a shade-loving plant in the sun. The simplest thing is watching the water drain after it rains, does it sit there or disappear? 2. Learn as much about your soil as you can. Take a big handful of your dirt. Look at the color and texture. Mold it into a big ball and if it crumbles, you’ve got sand. Look at the color and texture. If it’s a heavy clay gumbo, it will stay in the ball. There are some simple, basic soil tests that will determine how acid or alkaline your soil is. That’s important too. One big fix is compost. It’s the best soil amendment. Work in compost and it works wonders. 3. Prepare to fail. You are going to fail. Everyone does. Gardening is ongoing. Nothing is ever finished. We don’t really have control. So, we have to be flexible and make changes. Gardening teaches us patience. -Marsha Canright

When you have a husband, five kids, six dogs and two cats, your decorating style tends to dictate itself. Helen Stroud can attest to that. (It helps that she does have “an eye,” as they say. As owner of Olivine, a Rice Village boutique filled with homey French classics, it is also required.) With a large easy crew like Stroud’s – not to mention a multitude of friends who always feel welcomed to stop by – she says “comfort and practicality” best describe the backdrop of her Galveston home-away-from-home. Layered on top of such serenity are well-thought-out signature Stroud details. child in Louisiana munching countless bologna sandwiches. It is obvious family is important and sparks undeniable inspiration. Throughout her house, the metal table and other select pieces conjure up fond family memories. Additionally, Stroud’s instinctive decorating formula is to pair up opposites – in most pleasing ways. She mixes up the art, marrying together whimsical pieces created by daughter Catherine with Ebay-found oils. In the foyer, she casually slides a tall wicker island chair up to her grandfather’s more traditional secretary. But it is back in the kitchen area, where her remodeling took place. The rest of the 19th century Victorian is as it was. The giant playful bamboo light fixture from Design Within Reach (DWR), which, to her delight, she remembers finding on sale, now hangs above grandmother’s table situated alongside the kitchen. In the living room, she has lived-in sofas and chairs (translation: some of her “rescues” did some chewing) slipcovered in linens made by Hien Lam Upholstery. The slips evoke an update romantic look thanks to the flouncy skirts. One of her favorite decorating books is “Romantic Country,” by Mary Emmerling. The book showcases open shelving with sweet curved brackets that she had her friend and carpenter, Bill Kiper, copy and place in her kitchen. The stacked tea pot belonged to her grandmother.

Stroud’s kitchen is well used, so she likes everything to be displayed and ready for use.

“I wanted it to have that vintage feel,” she says of her kitchen. Yet, to avoid copycat predictability and to squash any serious overtones, Stroud found a modern polished pendant light from Renovation Hardware to hang for “a little zing.” The kitchen, she says, is very economical. She bought the butcher-block countertops and cabinetry from IKEA. When she pulled everything out, she remembered Kathryn Ireland, 68 house& home | February 2014 | www.houseandhomeonline. com

the famed author and designer, saying kitchen storage only promotes a state of “out of sight, out of mind.” So, she opted for open shelves and minimal cabinetry to keep it light and user friendly. For a homey touch, she placed an old dropleaf table, which “comes in handy,” into the kitchen rather than adding lower cabinets. A splurge in the kitchen was the Perrin Rowe faucet. “When you turn the corner into the kitchen, it becomes a natural and obvious focal point. I had to have it,” she says. The Strouds Petey, one of the Stroud dogs, comes around a vintage metal table in the kitchen area. often gather – including nieces and nephews, sisters and brothers, and granddogs, too. Barefoot Contessa’s Chicken Stew with Biscuits STEW INGREDIENTS 3-1/2 cups cooked, cubed chicken 8 tablespoons (1 stick) unsalted butter 2 cups medium-diced carrots 2 cups chopped yellow onions 2/3 cup flour 4 cups chicken stock 2 teaspoons salt 1/2 teaspoon black pepper 1/2 cup whole milk 1 (10-ounce) package frozen peas (2 cups) 1/2 cup minced fresh parsley

Stroud’s 83-year-old aunt who “can run circles around us all” kept talking about whipped-cream biscuits. So she found this recipe: 1/2 cup butter 2 cups flour (she uses Pamela’s gluten-free artisan blend) 3/4 to 1 cup whipped cream Directions: Cut butter into flour until crumbly. Add cream. Knead on floured board, roll out to 3/8inch thick and cut out with a wine glass (or other cutter). DIRECTIONS Preheat the oven to 375 degrees F. • In a large pot or Dutch oven, melt the butter and sauté the carrots and onions over mediumlow heat for 10 to 15 minutes, until onions are translucent.

• Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and the milk. Add the cubed chicken, peas, and parsley. Mix well. • If you’re using a Dutch oven to bake, then bring to a simmer on the stovetop while you make the biscuits. If you are not using a Dutch oven, place the stew in a 10 x 13 x 2-inch oval or rectangular baking dish and bake until hot (10-15 minutes).

• Meanwhile, make the biscuits. Once the stew is hot, arrange the biscuits on top of the filling. Brush them with egg wash, and return the dish to the oven. Bake for another 20 to 30 minutes, until the biscuits are brown and the stew is bubbly.

To make in advance, refrigerate the chicken stew and biscuits separately. Bake the stew for 25 minutes, then place the biscuits on top, and bake for another 30 minutes, until done.
