reimagining home

Even though I know I should get out early and beat the heat to walk, I don’t. (I have a coveted ritual with morning coffee.) So, I often find myself walking a few miles or more in some rather exhausting heat. And, sometimes, I return home seeking anything cold. Since I gave up refined sugars, there goes most store-bought options. The other day, I accidentally made some very heathy ice-cream. I got out my Ninja (1500 watts) blender to make a smoothie. Then out came some fresh fruits, chopped and frozen. Pineapple, banana, strawberries. I filled the Ninja container with the fruit, poured in just a little soymilk (or use plain, or almond) so this beast of a blender could do its thing. When I saw it looking a lot like ice-cream, I added only a tad more milk for desired thickness — along with a little honey I got at the Galveston Sunday Farmer’s Market. I added a market vendor’s “Paleo Crunch” (www.bellaskitchen.com) on top. (I’m not a food photographer, but I’m still sharing my bowl full -with zinnias from the yard.) A great market in Houston: Eastside Market (www.urbanharvest.org). Every month we run an Editor’s Picks — see page 16. AFTER: Painting over the busy wallpaper and brass with inexpensive paint uplifted the bath – as did replacing the dated tile. Reviving the bathroom were Rudy Lopez, the contractor at A1 Southern Construction, and John, Joan's husband, who built the louvered doors . BEFORE: Dated and busy wallpaper, green blinds, mirrored closet doors, the dated mirror with clips, lighting and all the brass –including the short brass shower all worked to make this master bathroom old and tired.

When I first saw this bathroom space, I was taken aback at the visually busy wallpaper. And, then my client, “Joan,” shared her thoughts with me. “The bathroom was very out dated; the wallpaper was awful, and I wanted to update the shower,” she says. “I found you (Joetta) through the Before and After articles you write for Houston House and Home. I always enjoy the Before and After pictures; they show the potential of a space and how it can be achieved,” Joan says. Joan says, “I just love how my bathroom turned out.” A new gathered skirt fills in the makeup knee space hole and adds color and softness too. New white subway tile in the new shower and matching “cool metal” accessories almost magically helped tie the room together. The bathroom was much more peaceful just by changing out the wallpaper for a softer Sherwin Williams paint color. “The first visit was very informative. Joetta gave lots of suggestions and gave me a copy of all her notes,” Joan says. “Those notes were very helpful to refer back to when it was time to work on the bathroom. Homework assignments were all given to me in writing, which was very helpful,” Joan explains. It was hard for the couple to visualize painting the shower tile, but it turned out well. 23

AFTER: : New lighting, an array of pretty accessories the couple had. along with gleaming mirrors, changed the personality of the room. The striped tile next to the shower was painted by the owners. A new gathered skirt fills in the makeup knee space hole and adds color and softness too.

“We ended up putting in a frameless shower from one of your suggested vendors – Shower Doors of Houston.” John rebuilt the mirrored doors by gluing two sets of traditional louvered doors together. He then cut the doors to fit at the top and bottom. He mortised the cool metal stainless hinges and attached the brushed nickel doorknobs in their correct place. “I now have a open feeling to the closet opening,” John explains. The new Home Depot slate floors “remind us of our New Orleans roots, and the chandelier from Baby & Kid's/Restoration Hardware adds a touch of elegance to the bathroom. Our friends just cannot believe the difference,” Joan says.

Due in part to better insulation and green building practices, the air inside most homes is more polluted than the air outside.

WHAT’S AFFECTING OUR INDOOR AIR QUALITY? AND TIPS TO HELP OVERCOME PRODUCT GAS EMISSIONS How often do you listen to the radio and hear that the pollen count or pollution levels are terrible outside and think, “I really shouldn’t go out today?” Most people don’t realize that, according to the Environmental Protection Agency (EPA), the indoor air quality of most homes is often two to five times – and up to 100 times – more polluted that the air outside. Use natural air fresheners, such as coffee grounds, and lemon peels and baking soda. 5. Open all the windows and doors in your home as often as you can and let the sunshine and the good outdoor air inside, which allows the contaminated indoor air get out.

WHAT IS INDOOR AIR QUALITY? Indoor air quality (IAQ) is a term that refers to the nature of the air quality within and around a building, especially as it relates to the health and comfort of the occupants of that building. In the past, this was not such an issue. People didn’t seal their homes, so the indoor air exited and the outdoor air entered through leaks in the windows and doors. Products didn’t emit harmful VOCs or Volatile Organic Compounds, as they do today. Both furniture and flooring were made of natural solid wood. Chairs and sofas were upholstered with natural fibers, such as cotton and linen, and padded with horsehair or down which are all natural materials. People used woolen or silk Oriental rugs that were not glued down. And even the glues and adhesives used were made from animal parts rather than the formaldehyde used today. None of the natural materials emitted harmful VOCs or gases into our homes. But with the advent of mass production, companies wanted to make furniture more quickly and less expensively so that they could be sold to the average individual rather than only to the wealthy few. They began to use composite wood products, such as plywood, particleboard, pressed wood and fiberboard for case good furniture frames and panels, kitchen cabinet frames and chair frames – and all of those composite wood products contain formaldehyde and release harmful toxic VOCs and gases. Many furniture pieces today are coated with unhealthy polyurethane topical finishes. Even if carpets are made with natural fibers, such as wool, silk, sisal, sea grass or jute, the carpet backing and pads still emit harmful VOCs and formaldehyde into our homes’ atmospheres. Many people today use engineered wood flooring rather than solid wood flooring, and engineered wood is a layer of real wood fused to cross layers of plywood that is made with formaldehyde and perpetual off-gasses. All our paints, stains, sealers, paint thinners, pesticides and herbicides and many of our cleaning products and air fresheners offgas, too. Poor indoor air quality can result in both short-term and long-term health problems. Short-term problems, such as allergies, asthma symptoms, fatigue, headache and eye strain generally subside shortly after a person leaves that building or area. However, long-term effects of poor indoor air quality can be more significant, and can cause chronic bronchitis, respiratory diseases, cancer and even death. The hardest working fixture in any kitchen, bath or bar is the sink and the faucets that feed it. It’s not exactly the same as choosing a spouse but your kitchen sink will likely be with you a decade or more, so it’s worthy of serious consideration. “If you’re building a new kitchen or remodeling a bath, it’s important to select a sink that is durable, efficient, fits with your home and appeals to you,” says Mary Ambrose, vice president of Westheimer Plumbing and Hardware. Ambrose is a daily witness to the plumbing trends in Houston, so she knows her sinks and faucets. For example, Houstonians are most likely to choose contemporary fixtures when considering their plumbing options, followed by a transitional style, she says. If your dream kitchen is in the works, expect to choose more than one sink. What’s trending now is multiple stations with a prep sink and/or a bar sink along with a main sink, each with its own faucets and accessories. More sinks and deeper sinks are the current trend, and they can be 9-10 inches deep, according to Kenneth Ward, owner of U Plumb It in Montrose. Deep sinks are practical because they can accommodate large pots and pans or dishes that should be hand washed. More depth also helps to contain splashing. Ward prefers clean, simple lines and less clutter in the kitchen. He likes the white enameled cast iron sinks by Kohler.

HERE ARE SINK AND FAUCET TRENDS TO WATCH: 1. STAINLESS STEEL SINKS RANK THE HIGHEST. It’s the most popular material for sinks in Houston and throughout the nation. Now that stainless can be laser cut into any form, expect to see stainless sinks in lots of shapes such as the State of Texas or a martini glass. Stainless sinks also can be insulated to make them quieter. Traditional fireclay farmhouse sinks have a consistent following but the up-and-coming product for sinks is composite granite. It’s strong, contemporary and available in a variety of colors. Under-mount sinks are gaining popularity, because


they make clean up easier. In bathrooms, rectangular sinks are now the consumer’s choice over a standard oval, and chrome and polished nickel faucets are top sellers. 2. HIP TO BE SQUARE. There’s a new shape emerging for kitchen and bath sinks and it’s definitely rectangular. “As consumers grow more adventurous in their home designs, manufacturers are responding by offering square details in everything from fixtures and furniture to accessories and wallpaper,” says Steven Ward, Moen’s international design director. He says a variety of square shapes can fit into contemporary, transitional or traditional styles. 3. ADDED ACCESSORIES. More kitchen sinks now do double duty, coming equipped with basin racks, a fitted colander, a cutting board, and pullout spray heads. These features are available from most top brands, including Kohler, Franke, Blanco, Moer, Elkay, Kraus, and American Standard, among others. Another accessory to try is the non-messy sink side soap dispensers. 4. FRESH, FILTERED WATER. Technology can bring the clearest and cleanest water right into your sink, and more consumers are opting to have water filtration systems in the kitchen. The best systems remove many contaminants, have a maintenance free, long life and do not take up a lot of space. Aquasana, Waterchef, Kenmore, Pelican have top quality options. You can also choose a faucet with water filters built into the spout, like Moen's Pure-Touch or Price Pfister's faucet. For those who want a separate system, Elkay offers the EX H20, a bottle-filling station with its own filtration system. 5. SMART FAUCETS. The simple faucet has gotten smarter. American Standard offers Select Flo faucets with multiple spray patterns to align the water flow with the task, and Kohler has improved its spray faucet with sweep spray technology that uses an angled nozzle to form a wide spray. Delta has perfected nine models of their Touch Technology, which makes it possible to turn on the flow of water with a touch on the faucet spout, hub or handle, and Kohler’s new group of faucets turn on with a wave of the hand beneath the arc. Retro “bridge” faucets with separate handles for cold and hot water, now updated, are making a comeback. While the kitchen faucet does not contribute greatly to overall water use in the home, it can be made more efficient with new faucets designed to save water. Pot fillers are not a new trend but one that is sustained by owners who like to cook. These are essentially cold-water taps on long swing-out arms installed near the range or cooktop.

6. SOME LIKE IT HOT. Instant hot water dispensers that provide hot, cold, or near boiling water are a new trend for kitchens nationwide. 7. THE DRAIN GAIN. Placing the drain in the sink’s rear center creates more sink space, so expect to see some repositioning in new sink models. Edgeless drains are also an innovation, such as Elkay’s new Perfect Drain with a contemporary strainer design with no flange, which keeps dirt from collecting around the drain. 8. MAKE IT MATCH. Never before has it been so easy to coordinate the color and style of your appliances, cabinets and sink. Blanco offers an interactive color tool that helps you create a tasteful combination of counter and sink. Elkay has a new line of glass sink tops to complement kitchens with glass cooktops. 9. SINK STORAGE. For those who want more hooks and storage inside their sink, Elkay has created an E-Dock to contain sponges, dishcloths, and drain covers. t housed generations of the Wagner clan from 1885 through World War II and beyond, which is why the locals still call it “Wagner Homestead.” It was to this tiny house that Joseph Wagner brought Liane, his German war bride, and where they began their life together. It was passed along from one generation to another. By the time Houstonians Lisa and John Walker acquired the little cottage — as part of a larger land purchase in 2008, it was more than 140 years old and a wreck. “The property included a stunning Mexican-style house, which we call the Main House, and that’s where we stay during visits. The little cottage was falling down,” she says. A massive hole in the patchy roof had left the interior open

to years of rainstorms, bird habitation, and insect infestation. Still, Lisa was drawn to certain charming attributes of the cottage, like the bedroom’s hand-stenciled panels: ripe strawberries on a deep blue field. “I've heard that stencils like these were considered a gift of love, like a Valentine for your sweetheart.” “I like to think about the couple who might have stenciled this Valentine. Was it Joseph and Liane or some other couple? I don’t know. How could you not want to salvage and preserve all this history?” asks Walker. Though restoration proved impossible, the couple decided to do the next best thing: keep what they could. With their friends, Ciarinn Higgins of Higgins, Inc., and

builder Barry Brown of Brown Ridge Builders, they took all the pieces – the wood, the windows, the doors, the hardware, the beautiful beams that supported the house, and they put them back together in a new, reclaimed cottage. “At first I wanted to build an exact replica of the house but we veered away from that idea,” Walker says. “We used the old post and beams as structure, which, viewed from outside of the master bedroom, creates lovely architectural interest.” It was John's idea to make the bedroom window larger than the original cottage window, and it works well to highlight the post and beams outside. “We left the small kitchen area and the family room connected without the wall between them. The result is a much more open area that feels spacious,” adds Walker. “Our neighbors, Burnie and Nellie Wolff, ages 88 and 92, run cattle on the place, and I just love the cows. So, we have a major cow theme in the cottage,” she says.

To admire the rambling fields and wide Texas sky, the Walkers added wrap around porches perfect for relaxing. However, the best view is from the attic, which Brown transformed into a bunkroom for children. The original gingerbread trim was moved into the living area where it provides warmth and history to the space. “I wanted to put the trim on the outside but our builder said it would only last a year,” she says. Now it is well protected. Leslie Sinclair of Segreto Finishes Inc. offered her expertise on preserving the original doors. “She had us sand them lightly to preserve the cool, old paint colors, and then we applied numerous coats of no-gloss polyurethane for a safe finish that keeps the doors looking completely original,” she explains. The Walkers kept all the original hardware including the doorknobs, which were repaired and re-installed. “When we took down the Sheetrock from the cottage 45

walls, we found another prize,” she adds. It was wooden boards signed by some of the Wagner family and dated October 6, 1912, possibly when the kitchen was added. “I used a few of the boards to frame our kitchen window, again to honor the history of the home, and gave the rest to the descendants,” she says. Other original items repurposed for the new cottage include: an old tin chimney found in the field that became a floor lamp; reclaimed boards that were used to make a shed next to Lisa Walker with her colorful Round Top ride, a birthday present from her husband. 46 house& home | August 2015 | www.houseandhomeonline.com

the new structure; and an antique windmill blade now mounted on the side of the shed. The cement steps were relocated at the fire pit so you can sit and roast marshmallows. “At first my husband was not convinced about a house of reclaimed materials,” Walker says. “But now he agrees it was the right thing to do, and he loves the result.” What happened to the beautiful blue wood with the strawberry stencils? “It now lines the sleeping porch which is my favorite room,” says Walker. When they bought the property, the Walkers’ children were small, but now each child is married and there are grandchildren. A brother, and sister-in-law and parents live nearby, and the cottage provides more space for visitors. It took time and trouble to incorporate the old with the new but the Walkers now feel settled. The spirit of the homestead offers a happy haven to a new generation of Texas children.

EAST SHORE CLASSIC WOODLANDS COUPLE CREATE A PLEASING BALANCE WITH NEW AND OLD BY SUSAN FOX • PHOTOGRAPHY BY BEN HILL

It was a family affair right from the get-go. This coveted three-story corner house — built in traditional style with faded antique brick, paneled shutters, with an elegant dentil trimmed entry — received very personalized attention from its first owners. Second and current owners Kerry and Regan Wood followed suit. As it was being built, the first owners chose to upgrade the millwork, devoted to achieving painstaking detail. Their son, an interior designer, stepped in to help with additional customizations. At a family-owned antique store, a pair of early 20th century peacock-etched glass doors coming in from an estate in France proved the perfect addition to two partial walls that separate the living room from the dining space. They were immediately sized to fit. Owner number one and son also had found a large piece of French stained glass (circa 1860) and had it installed in the bathroom as a privacy wall. Exquisite reproduction brass hardware was placed on every single door, and the kitchen received a nod toward perfection with the same type of attention to its cabinet and door pulls. When the Woods bought the house, they presented a family oriented directive to their interior designer, Nancy Charbonneau, also owner of Woodland Fabrics & Interiors. “Three things inspired our direction to help them decorate their home,” says Charbonneau. First, since there was antique hardware and lighting fixtures, they wanted to honor and complement what was already in place. And that also included keeping the “Peacock Blue” color (Sherwin Williams) that graced the ceiling and building around it a color palette for fabrics. The third and most important directive was that the chair Regan Wood had inherited from his grandparents find a prominent spot in the living room. The living room marries family pieces with new club chairs and sofa. The Euro-pleated drapes hang from a custom iron topper on a traverse track. The topper is part of Woodland Fabrics & Interiors’ own hardware designer line.

About the chair . . . Kerry Wood laughs, saying that family members of her husband’s actually vied for what she affectionately calls the “Archie Bunker” chair and ottoman. It meant that much to all of them — plus, it apparently has the reputation of being super comfortable. Unflinching, Charbonneau accepted her assignment with the goal of personalizing the Woods’ home — one that is filled with other must-stay family pieces, such as the marbletiled coffee table, Chippendale chairs sitting around the dining table, and Kerry Wood’s large cuckoo clock — a treasured momento purchased during a trip to Germany. The couple moved to The Woodlands from Liberty, Texas, reducing her husband’s commute time to Greenspoint, and giving them the community life they wanted. Located a block or so from The Woodlands Lake, the couple also enjoys walking to both Town Center and the Cynthia Mitchell Pavillion. “It’s a great place to live, here on Ellipse Park, where there is a nightly parade of dog walkers. one really does a good job of getting us altogether for occasional pot-luck dinners. My husband makes a great pot of gumbo.” Wood says her Liberty home was decorated in reds and golds; colors that she always seems to gravitate toward. With the ceiling in her new home being “Peacock Blue,” however, she realized Charbonneau would be bringing in a new color palette — so that furniture could be reupholstered and curtains could be constructed. “I told Nancy not to overwhelm me with choices, because I would probably like them all. So, I asked her to only bring in four or five samples,” says Wood.

With the west sun coming through the dining room windows, Wood appreciates having three layers of window treatments in the room. She normally keeps the Hunter Douglas “Silhouettes” down during the day with the linen sheers — with their quiet design — exposed, and the traditional pinch-pleated curtains drawn to each side. In the living room, Charbonneau chose to make the curtains with a less formal Euro pleat. They hang, as do the dining room drapes, from an custom iron topper on a traverse track. Charbonneau points out that the iron topper is from her shop’s designer hardware line, which they design and produce. “I’m appreciative of Nancy’s help; she helped us achieve a clean and classic look while also staying on budget,” says Kerry Wood.

The design element interior architect Jessica Brown judiciously added to turn an old, closed up kitchen into an inviting gathering spot, and restore cottage charm to a 100-year-old house was continuity. Suggesting masonry work for select areas, in particular — coupled with the dark traditional cabinet stains and bronze hardware — not only discreetly unites very separate living areas but also implies authenticity. “When the house was purchased, the original brick chimney was Sheetrocked,” says Brown. masonry work. She and her clients wanted the mortar and cobblestone look, but they knew if they took it too far, it would look contrived. They decided to reface the old chimney in the kitchen with the stone, along with the breakfast and bathroom walls — just enough to suggest to visitors that it has always been there. “People are always asking if the stonework is original to the house,” she says, with satisfaction. Brown says she likes to include a nice mix of elements — steel, wood, glass, stone, metal — whenever possible to create

For added visual interest as well as continuity, interior architect Jessica Brown opted to take the Ann Sacks-tiled backsplash to the floor on the left side of the window. a natural balance and to ensure visual interest. The cottage, she says, is more like an English-Spanish hybrid. It has the English country charm along with certain Spanish flair, such as the arched doorways, stucco walls and clay roof tiles. Brown’s design objective was to restore and enhance the quaintness and character of the house. “I like the juxtaposition between modern and antiquity,” Brown explains, sharing her thought process of choosing what to re-purpose and what to replace. “Over time, the cottage had lost its charm . . . it had dropped ceilings, strong yellow stained oak cabinets, shiny gold hardware, dirty Linoleum. There was a double door separating the breakfast room from the kitchen. “It needed to open up, to feel like an inviting gathering area,” she says. She says they took the interiors to the studs, but kept the

footprint of the kitchen and only removed some walls and doors. “It’s now more conducive to entertaining and having people in there to help or visit,” says Brown. They did keep the oak cabinets. “The cabinets were sanded, distressed and hand-painted to convey Old-World character. We added rain glass in the upper cabinet doors. We also put in modern appliances, added cleanlined faucets, bronze fixtures, and antique pin-punched light fixtures that we brought up to code,” she says. To continue building on the European feel of the house, Brown chose for the kitchen backsplash hand-painted Spanish tiles sold through Ann Sacks. The floors in the kitchen are Saltillo (from Mexico) with a French picket ceramic tile that looks like wood, set as a type of border. “The French picket looks and feels just like wood, and it’s better suited for areas where houses might shift or in

For continuity, the Saltillo — but without the French picket — is found in the bathroom, too. Brown selected a Corian for the kitchen countertop and built up the ledges so that it looks like concrete — minus the weight and expense of such. In the bathroom, Brown added a linen closet — space stolen from a very long hall closet. Especially long closets only serve to help you forget what you have, according to Brown. The hall bathroom serves dual purposes. It is the one the couple’s young sons use, and it is also the one designated for company. So, the design objective was to make it very kid friendly while also making it aesthetically pleasing for company. Brown says she chose a big new clawfoot tub from Kohler and paired it with an old-style toilet, which the boys find fascinating, and a custom vanity that imparts a more simple rustic style. “The masonry wall is great around the tub, especially during the boys’ splash time,” she says. With strong motivation to stay healthy while satisfying a sweet tooth, Houstonian Tanuja found her way to the kitchen and began baking. Through experimentation, using high quality, nutrient-dense products — not to mention the support received from family and a vast number of friends — she came up with a delicious product line that she calls Love Bites by Tanuja (www.lovebitesbytanuja.com)

Where are you from? I was born and raised in Houston. After high school, I moved to Austin to attend school at The University of Texas at Austin, where I graduated with a BBA in Marketing. After graduation, I moved to southern California for my first job and lived there for about a year and a half. In 2007, I decided to move to Washington, D.C. for no particular reason at all, but I’m glad I did. I ended up living there for about five years before deciding to move back to Texas to be closer to my family. I moved back to Houston in 2013, and I couldn’t be happier. What prompted you to begin your own business? I always dreamt about being my own boss. Over the years, I realized I was a natural leader, but I never had any ideas of starting a business. My family is generally pretty risk-averse, so I didn’t grow up with the idea of starting a business; it just kind of happened. When I was living in D.C., I got the inspiration to go to a Weight Watchers meeting that was held at my workplace. I went, and paid for a series of meetings, but I really just went for the support and ended up following my own healthy eating plan. The points system didn’t really make sense to me, plus, I’m horrible at tracking what I eat. Over six months, I lost 40 pounds – all without counting points, calories, fat or even tracking what I ate. I essentially just stuck to good, whole foods and cut out all the processed junk. Because I was so used to eating out all the time, I was forced to learn how to cook. Turns out, I actually have a bit of a talent for it. I started to miss cookies and brownies and ice cream. Because I was on a diet of healthy foods only and by this time had cut out white sugar, dairy nd gluten, I was having a hard time finding good desserts that fit all my needs in a grocery store. I had found a way to put highly nutrientdense ingredients together to make cookies, brownies, muffins, cupcakes, icecreams and other desserts. By September 2014, after years of self-study and experimentation, Love Bites by Tanuja was born. Where did you get the name for your business? Honestly, I just did a “brain dump” one day. I sat down with a few sheets of paper and listed out all the words and potential names that were swirling around in my head without thinking too hard. Finally, I narrowed it down to two I liked. Friends helped make the final choice. Tell us about your business — the challenges, the successes. There are a few reasons I wanted to go into business for myself. I spend way more hours working on my business than I’ve ever spent on a full-time job. I have to admit, there are lots of challenges. For one, I was able to get my business up and running within six weeks, with excellent branding and marketing to boot. For a physical product, that was really fast. I’ve been steadily growing my business and increasing my market share. I’ve been featured at Williams-Sonoma, ShiftCon (Los Angeles), MYTRA US (Austin), Pop Shop Houston, Paramount Lifting Club, LLC, CrossFit H-Town, TrainLifeFit (Austin), NetIP National Conference (Atlanta), Valerus, Chinmaya Mission Houston, and Chocolate Wasted Ice Cream retails my Paleo, vegan ice creams in their shop in the East End. I now plan to launch a line of baking mixes in September so people can have a healthy option to bake fresh for the holidays and with their kids. Are your Love Bites made from your own recipes? All of Love Bites by Tanuja’s recipes are original, but I can’t say I didn’t derive inspiration from various cookbooks and blogs online. There’s definitely a science to baking and cooking in general and a lot of times ingredients you want to use don’t work the way you want them to, so a lot of experimentation and substitution goes on. Do you sell only through the Web site or at other local places? If the latter is true, where? I sell mostly retail through my Web site right now. However, we have also partnered with Chocolate Wasted Ice Cream in the East End where we sell vegan, Paleo ice creams. Most recently, the featured flavors were chocolate, raspberry and peanut butter (almost Paleo). Chocolate Wasted Ice Cream is located at 724 Telephone Road in Houston, TX, right off of Cullen Blvd. What is your background related to what you do now? In addition to my marketing degree, I am a certified holistic health Coach through the Institute for Integrative Nutrition and the American Association of Drugless Practitioners.

Do you supply nutritional info with the items you sell? Tell us about your choice for ingredients...why did you choose what you chose? At this time, it is not our standard practice to include nutritional information with our desserts. I feel that people get too hung up on numbers and counting and labels. To ensure you are eating good foods, there is only one label you need to look at – the ingredients. All of our ingredients are simple and easy to pronounce. They’ve all been chosen for a combination of nutrient density, how they play with each other and, of course, for taste. I am really picky about ingredients. Everything is non-GMO. Our main ingredients include blanched almond flour, organic coconut oil, organic coconut nectar, organic fairtrade vanilla extract, aluminum-free baking soda, and Himalayan pink salt. All of our items can be made vegan, but some of our items are made with eggs in their standard form. We are careful to use pastureraised, organic eggs, because happy chickens lay the best tasting eggs. The reason I chose to go with almond flour as the base for most of these recipes is that it’s high in protein and high in healthy fats. Almonds are beneficial for much more than just our brains though – they are great for heart health, diabetes prevention, skin, hair, and nails, and of course for weight management. The almonds combined with the low-glycemic organic coconut nectar, which we use to sweeten our products, makes for a delicious dessert and doesn’t spike blood sugar the way traditional desserts do. One question I get a lot is whether or not I use artificial sweeteners. The simple answer is a resounding no.

Getting Personal What can you not live without? In the kitchen, my favorite tool is my blender. By far, the Blendtec (and they are not paying me to say this) is my most favorite kitchen appliance. You can use it to make everything from flours to soups to ice creams! It’s powerful, beautiful, and functional all at the same time. What is the last book read or movie seen? Think and Grow Rich by Napoleon Hill. It’s excellent – all about living a rich life and persevering – not just about money. The last movie I saw was Jurassic World…I liked it, especially Chris Pratt (who doesn’t like that guy?).

Where are you from? I’m a native Houstonian. Even though I moved around Texas and the U.S. when growing up, my hometown lured me back. What is your educational and work background? What is your education/ work background? I studied design at SFA (Stephen F. Austin) and worked for a brief time doing institutional design. Then I moved back to

What was your last project? The last completed project was in the Texas Hill Country town of Concan. The project was a privately owned vacation home. The house was designed to not only be a vacation haven for the family but serve as a destination rental as well. Having a project four hours away in a smaller town always produces its own challenges. What types of projects do you like to work on? My favorite projects are the ones that are the most challenging. Whether it’s the house across the country or the remodel with the most unrealistic expectations — or fitting the champagne taste into the beer budget; I love the challenge! What paint colors are you personally favoring this year? While nearly every project we have going right now is calling for grays and taupes,

I’m personally loving the off-red tones that have come out this year, such as the blush, wine and peach tones. What would you say is your signature look or touch? Being a natural born artist, I love incorporating art, in some form, into a project. Typically you can find an elaborately painted ceiling, a wall mural or some other unique painted touch in my work. What can you not live without? Music, a good glass of wine and a paint brush. Do you have family, pets? I’ve been happily married for 10 years. We have two

wonderful children who love to work with us. My son wants to grow up to build houses like dad and my daughter already thinks she is a designer, critiquing all of my work at the ripe old age of 6. What do you like to do when not working? It’s rare that I’m not working. I live and breathe art and design so it’s not really ‘work’ for me. If I’m not working on interiors, I’m painting. If I’m not painting, I’m working on house plans. Otherwise, I’m just making something. On the few times that we do get away, I love to be on the water....looking at all the houses, of course.
