72 Hours in the Lowcountry
‘‘ There’s water in the boat, help me get it out?
With no idea what that entails, we agree, following our guide—a man named Wilds—into the skiff boat he built with his brother. Seconds later, we learn we’re no help at all. Wilds’s method for getting the water out is to cut fast and sharp turns with the skiff—essentially doing donuts on the water and leaving us no job other than to hoot and holler. It’s clear that the boat-making business is more than a job to Wilds, it’s the fulfillment of his passion for life on the water. Over the course of our 72 hours in the Lowcountry of South Carolina, we cruised around Charleston to meet hometown hero Rodney Scott, the tireless entrepreneur Brooks Reitz, and badass watermanslash-walking encyclopedia Cyrus Buffum, plus countless others forging their own path in the Palmetto State. Along the way, we put all our newest gear through the wringer—push-starting a vintage Land Rover (pg. 32), plucking oysters from the mud of a Revolutionary War battlefield (pg. 22), and working up a sweat in a world-renowned BBQ pit (pg. 16). The hottest club in Charleston is also probably the most exclusive. There are usually only 2-3 people inside its matte black-painted walls at a time. The impressive sound system pours out a steady stream of Soul, New Jack Swing, Funk, and R&B. Then there’s the heat. The room is thick with smoke. And what’s that over there? Three whole hogs dripping over coals. Ok, maybe it’s technically not a club but for world-renowned Pit Master Rodney Scott, everything revolves around music. “All these years, what keeps me going? I look forward to listening to music every day. I’m having fun all day long, it doesn’t feel like work. It’s like getting paid to have fun.” Few people could make the tremendous amount of work that he pours into his namesake, Scott’s BBQ, feel so effortless. Not long before
we caught up with Rodney, he’d been named a James Beard winner—a distinction typically reserved for places with starchy tablecloths and a confusing number of forks, not BBQ joints. If the secret to worldwide acclaim was as simple as a playlist, there would be thousands of chefs out there trying to hack his Spotify account. Rodney’s technique cuts no corners. His apprenticeship in the craft of whole hog barbecue began at age 11 at his parents’ roadside joint a couple hours away in rural Hemingway, SC. Fastforward a couple decades and the old-school, slow, labor-intensive approach honed in his hometown has made for some ridiculously delicious food at his own outpost in Charleston. These days, big-name chefs like Sean Brock and Anthony Bourdain are counted among

He once flew a plane under a bridge on a dare. One time he repurposed a city bus as a houseboat. Add these heroics to the fact that the man knew his way around a cocktail shaker and it's easy to see why Brooks Reitz saw his grandfather Jack Rudy as an inspiring figure. Brooks's own rise in the food and beverage scene of Charleston is no less of a dazzling feat. Early on, he served as General Manager of local hotspot The Ordinary, where his painstaking attention to detail caught the attention and respect of industry insiders. All the while, Brooks was developing and tinkering with cocktail mixers under the moniker of Jack Rudy. First came a recipe for tonic water with such a rabid fanbase it ended up behind the bar at Sean Brock's Husk. More concoctions came next and as Jack Rudy became

a national sensation, Brooks parlayed that success into restaurants of his own—first Leon's Oyster Shop, then Little Jack's Tavern, and soon Melfi's. Looking around Leon's, you'd be forgiven for assuming the place had been in business for the better part of a century. It has the well-worn decor and lived-in feel that's characteristic of a neighborhood institution. With Brooks at the helm, that's no surprise. It's all by design. "I could tell you where every piece of every little thing comes from. It’s because we enjoy the process of telling a story through design, through the typefaces on the menu, what the servers are wearing, the glassware, it all tells a story." Turns out grandpa Jack Rudy wasn't the only one with a knack for spinning a yarn.

I used to work at a restaurant in college and all the servers working on the patio would make themselves these massive cups of vodka and sweet tea because our bosses couldn’t smell the alcohol. This cocktail’s an homage to that."

Provisions: Boil Recipe
Marty’s Lowcountry Boil Consider this the southeastern equivalent of a New England clam bake. The ingredients and technique may be simple, hell, downright primitive. But the end result is a feast of epic proportions best enjoyed with plenty of cocktail sauce, ice-cold beers, and good friends. Take it away, Marty… Ingredients
• 4-5 lbs of fresh shrimp • 2-3 lbs of potatoes, cut into bite size pieces • 2 smoked andouille sausages • 5-6 pieces of corn, broken in half • 2 yellow or white onions, roughly cut into 1/4s • 2-3 halved lemons • 2-3 Zatarain’s "boil in a bag" boxes • 1 or 2 boxes of Old Bay or Cajun seasoning • Plenty of hot sauce and cocktail sauce • Roughly chopped parsley for garnish • Plenty of newspaper (for serving) Cooktime: 35-40 min. Feeds 6-8 Directions “Bring pot of water to a boil with 2-3 lemons and couple packs of Zatarain’s. Now the fun part. Start a 20 min. countdown as soon as you drop in the potatoes. Cover the pot and bring back to a boil. After 10 min. add onion. After 15 min. add sausage and corn. In the last 3-5 min. add your shrimp. Make sure your table is prepared with a couple layers of newspaper then lift the basket to let the liquid drain back into the pot, and finally dump the boil onto the table. Dust it with Old Bay and don't be afraid to get messy!” 38

For our Lowcountry edition, we chatted with the drummer of one of our favorite bands, Creighton Barrett from Band of Horses. When he's not traveling the world, playing to thousands of adoring fans, he's stationed in Charleston with his wife and two young daughters. He was kind enough to fill us in on his favorite local haunts but he refused to tell us his favorite surf spot. We'd say that's a fair compromise. 48
Hometown food you crave on the road: I really love Xiao Bao Biscuit, they’re an incredible, modern Vietnamese lunch and dinner place. Get the Mapo Dou Fu. And don't skip the cocktails. Where to hide from mosquitoes: You can run but you can’t hide! Well, we do have Cinnebar, which is a rad movie theater with great food and drinks. But I don’t like to talk about it though because we currently don’t have a babysitter and my wife and I miss the movies more than anything. Local bands worth a listen: For starters: She Returns From War, Susto, Vanity Plates... Where to catch live music: Tie. Royal American and Tin Roof. I live right down the street from Tin Roof and it’s soooo
sick. Great touring bands, great atmosphere and you might get served by punk legend Johnny Puke, he’s basically a walking encyclopedia of everything rad —and a little frightening. A more family-friendly outing: Charlestown Landing, it’s the absolute best! There’s a zoo and a pirate boat for kids to climb around on with people dressed up in period garb. Yeah, go there! You might learn something too. But bring food. Best place for vinyl shopping: For records it would have to be Vinyl Countdown, yep, that’s really the name of the shop. Rad selection and they also sell hifi gear, which comes in handy when you absolutely must make it clear to your 2-year-old that Ride the Lightning has a way better guitar tone on said format.
Favorite surf spot: I can’t share that info. But, let’s just say it has plenty of lefts. Go-to order at Waffle House: Easy. Give me an egg and cheese sammy with extra pickles, and double hashbrowns "covered." Last time you saw Bill Murray: He dropped off Jenny Lewis at the North Charleston Performing Arts Center when we were playing a show together. He was driving a fantastic early '90s, blue Volvo wagon. That was probably 5 years ago, but still to this day, unreal and very, very cool.
