THERE HAS been a lot of discussion about AI in our house recently. My partner uses it for everything from help with Excel spreadsheets, to building customer profiles, or even researching the latest cycling gadgets.
Our 12-year-old son chats to it about how to use video editing software, and his older brother even asked it for advice on how to handle a tricky flatmate (with great success, I might add).
The advances in the user experience and abilities of AI just in the last couple of years have been phenomenal – it is no longer the sole domain of “tech types” – it is open to all.

WHEN CHEF Luis Cabrera started bottling his restaurant’s signature margarita during the COVID lockdowns he never dreamed it would one day be the go-to for some of New Zealand’s top hotels and bars and have the endorsement of industry heavyweights like chef Michael Meredith and Master Sommelier Cameron Douglas.
But his Besos Margarita has quickly set the benchmark for premium, authentic ready-to-serve margaritas since its launch onto the New Zealand market.
Its rise comes as agave spirits grow in popularity in New Zealand, and premium margaritas are increasingly in demand from discerning consumers.
Luis is passionate about sharing the best of his homeland by creating an authentic margarita in a way that makes it easy for people to serve and enjoy. “I’m from Mexico. I grew up in Jalisco and I
think people deserve to be drinking a proper margarita,” he says.
The path to Besos Margarita
Luis and his wife Cecilia moved from Mexico to New Zealand in 2008, opening Besos Latinos restaurant and Besos Latinos Ceviche bar in Auckland, where Luis built a reputation for his outstanding Mexican food and margaritas.
Regulars loved it and Luis also counted the Mexican ambassador, former US President Barack Obama, Pearl Jam, and the Commodore of the New York Yacht Club among his customers over the years.
When the COVID lockdowns started, Luis and his staff quickly adapted to preparing takeaway meals and then, after several requests from customers, he found himself bottling his signature margarita for the local liquor store.
Demand grew so fast that the store sold out as quickly as Luis could supply them and then online orders from around the country started as well.
While COVID’s impact meant Luis and his wife had to close both their restaurants permanently in 2022, it had revealed a clear thirst for his Besos Margarita, and a new journey began.
A premium authentic margarita
The brand’s name speaks to Mexico’s love affair with tequila, as “besos” means “kisses” in Spanish. “When you have a premium tequila or a premium mezcal in Mexico you don’t do shots, you kiss it,” says Luis. “That’s the word we use in Mexico. Because it means you’re going to appreciate every sip.”
He says he wants to honour the hard work that has gone into creating the tequila he uses. “This is a product that is being made by generations; people who wake up at 3am to get into the fields with their families and make this product happen. I want to make sure it’s not just appreciated, but respected. It makes me proud and it’s a pride I want to share.

Luis’ ready-to-serve margarita uses only premium 100% blue agave double distilled tequila blanco. And as you’d expect from a chef, his recipe is meticulously crafted, down to the temperature of individual ingredients and the order in which he blends them.
“It’s not just one spoon of this and one spoon of that,” says Luis. “I was working with milliliters or two individual grams of variation until I achieved a recipe that I was blown away by.”
Besos Margarita Clásica – a fullstrength version of the signature margarita that Luis served at his restaurants – debuted in October 2022 and went on to win Triple Gold at the MLSA Competition and Gold at the prestigious European Spirits Challenge in London.
A new Besos Margarita Habanero version made with fresh habanero chilli for a spicy margarita launched in November 2024, while Besos Ligera is a canned RTD version at just 7% alc/vol.

Scapegrace unveils NZ’s largest distillery
SCAPEGRACE DISTILLING Co. has revealed its new state-of-the-art distillery in Central Otago – a NZD$30-milliondollar project that opens as the brand marks a decade.
The distillery, which is New Zealand’s largest, sits on a 36-hectare property on the shores of Lake Dunstan with views to Mt Pisa and was designed by Nat Cheshire, Ascinda Stark and Emily Doll of Cheshire Architects.
The 3,000-square metre project comprises a head office, bottling facility, warehousing, barrel hall and distillery for production of single malt whisky, gin and vodka.
“Throughout our distillery design, there has been no corner cut and no stone unturned to ensure that we are following authentic and traditional methods, while also showcasing the very best of our distinct Scapegrace portfolio,” said Scapegrace co-founder Daniel McLaughlin.
He says the new distillery will allow it to produce 160,000 cases of single malt whisky per annum and enough gin and vodka to meet its long-term forecasts.
McLaughlin notes that Scapegrace’s single malt whisky alone is projected to generate an annual wholesale value of $33 million when running at full capacity.
“Our aim is to elevate New Zealand’s global profile as a producer of world-class spirits. Over the past 40 years we’ve seen New Zealand’s wine industry experience
huge growth and that’s what we’re working to create for our spirits industry.”
Whisky production facilities at the new distillery include a purpose designed 5,000L wash still and a 3,500L spirits still from Scotland’s Speyside Copperworks. The production will follow the full traditional method from grain to glass.
The white spirits still is a 3,500L John Dore Copper Pot Still from London that was built in 1959 and has been fully restored.
McLaughlin says sustainability has been at the forefront of the distillery’s
construction. Over 7,000 native bushes have been planted on-site and the distillery will be one of the few in the world to use hydro electricity to power its boiler instead of diesel.
Scapegrace celebrates a decade of being in business in 2024, and McLaughlin says opening the distillery is the perfect way to celebrate 10 years of achievements.
A hospitality offering is the next step and Scapegrace says the distillery will open for public tours from late 2025.

Asahi Super Dry extends Rugby World Cup sponsorship to 2029
ASAHI SUPER DRY is continuing its partnership with Rugby World Cup by becoming Official Beer and Principal Partner of all tournaments until 2029.
This includes Women’s Rugby World Cup England 2025 and Australia 2029 as well as Men’s Rugby World Cup Australia 2027. The announcement follows the brand’s sponsorship of Rugby World Cup 2023 in France, where Asahi Super Dry delivered five million pints to rugby fans.

RTDs on the rise in NZ and Australia
ON PREMISE consumer intelligence research company CGA by NIQ has released a range of findings around the popularity of ready to drink (RTD) beverages in New Zealand and Australia.
It says there has been a noticeable annual increase in how frequently consumers are choosing RTDs during On Premise visits. In Australia, almost half (49%) of RTD drinkers are enjoying RTDs every time or almost every time they go out, a jump from 39% yearon-year (YOY). In New Zealand, 41% of RTD drinkers now drink RTDs every time or almost every time they visit the On Premise, up from 34% last year.
CGA by NIQ says this shift is largely driven by the presence of much-loved brands in the RTD format, enabling consumers to enjoy familiar flavours in convenient, ready-to-drink options.
It says this is an especially strong motivator in New Zealand, with almost a third (30%) of consumers saying that the presence of their favourite brands as an RTD is their primary reason for choosing the category, (+7pp compared to the previous year). In contrast, this influence is slightly declining in Australia, (-1pp to 21%).
The survey also shows that RTDs on tap is an area with compelling growth potential, with consumers in both markets particularly interested in tap/draught RTDs for high-energy social occasions, such as nights out with friends. However, only 39% of consumers report seeing tap RTDs in the venues they regularly visit in New Zealand, -15pp versus Australia’s higher penetration rates.
The analysis also shows RTDs gaining ground in venues where spirits have traditionally dominated, such as nightclubs and bars, with ease of service highlighted as a key factor for this surge.

The annual programme matches an experienced and knowledgeable mentor with a mentee
who is wanting to progress themselves in the wine industry. It is open to everyone in the New Zealand wine industry working in all roles including viticulture, winemaking, operations, laboratory, sales, marketing, cellar door and general management.

New vit research to boost vineyard productivity
BRAGATO RESEARCH Institute is to lead a new viticulture research programme designed to help New Zealand producers adapt and innovate to increase profitability.
The programme, called ‘Next Generation Viticulture’, focuses on vineyard profitability being key to ensuring a thriving New Zealand wine industry amid rising costs and will explore ways to grow vines more efficiently.
It follows the signing of a new partnership between the Ministry for Primary Industries, New Zealand Winegrowers, and seven wine business co-investors contributing cash and in-kind.
Bragato Research Institute is contracted to manage and deliver the programme. Next Generation Viticulture will run over seven years, building on research developed and applied in New Zealand premium horticultural crops. The programme will trial several innovative planting and canopy configurations to maximise light interception by both buds and leaves to increase the number and distribution of high-quality fruiting sites on each vine. These trials will be built across a network of commercial vineyard properties in the greater Marlborough region.

New leaders at NZ Winegrowers
THE NEW Zealand Winegrowers board has appointed two new leaders with Fabian Yukich as Chair and Emma Taylor as Deputy Chair.
Fabian Yukich has served on the Board of New Zealand Winegrowers since being elected in 2012 and more recently has held the role of Deputy Chair since 2020. He has a rich wine family legacy, having grown up in the pioneering family that established the original Montana Wines winery in West Auckland. His father Frank also planted the first largescale vineyards in Marlborough. Fabian’s professional career has spanned winemaking, sales, project management and executive leadership positions. Emma Taylor rose to prominence in the industry in 2007 after winning Young Viticulturist of the Year and Young Horticulturist of the Year. Over the past 17 years she has held various viticulture roles at Villa Maria and later Vineyard Plants Ltd. In 2020 Emma launched a viticulture consultancy business and is Viticulture Business Manager for Craigmore Sustainables. She is also a Director of Bragato Research Institute (BRI).

AS THE festive break and summer holidays approach, licensed premises across the country are gearing up for the crowds. Here are some helpful tips for bar and restaurant owners to keep staff and customers happy and ensure their operations run smoothly .
Employee entitlements on public holidays
Understanding employee entitlements during public holidays is essential. Employees are entitled to be paid at least time and a half for working on a public holiday. If the holiday falls on a day they would normally work, they are also entitled to an alternative holiday, or a day in lieu. This applies to all employees, whether they are full-time, part-time, or casual. Managing these entitlements correctly not only keeps you compliant with the law but also ensures your staff feel valued and motivated during this busy period.
Compliance with licensing laws
Compliance with alcohol licensing laws is non-negotiable, especially during the festive season when scrutiny can be higher. If you plan to extend your operating hours, make sure you have the necessary approvals from your local council. For any special events or functions outside your usual operations, apply for special licences well in advance.
Maintaining high standards of host responsibility is also crucial. This includes providing food, non-alcoholic beverages, and safe transport options for patrons, ensuring everyone has a good time while staying safe.
Remember too, that Auckland’s new local alcohol policy comes into full
effect from 9 December with changes to maximum trading hours. From this date:
• bottle shops and supermarkets across Tāmaki Makaurau Auckland will not be able to sell alcohol after 9pm.
• bars, restaurants and other on-licences permitted by the District Licensing Committee will be able to sell alcohol until no later than 4am in the central city, and 3am outside of the central city.
• sports clubs and RSAs permitted by the District Licensing Committee will be able to sell alcohol until 1am.
For any special events or functions outside your usual operations, apply for special licences well in advance.
Staffing and training

Ensure they are trained in the responsible service of alcohol and are familiar with your establishment’s policies. Ensure a safe environment for both staff and customers. Implement effective crowd control measures to prevent overcrowding and ensure a pleasant experience for all

A DRIVE through the rolling green hills of the Wairarapa and the drier hills of central Hawke’s Bay took me to Napier for the 2024 Hawke’s Bay Wine Auction in September. It was a humbling experience.
The auction is now in its 33rd year and the last time I attended was about 20 years ago when it was a far smaller event at a far smaller location and with fewer wines, but the same unwavering focus on donating the proceeds to the Cranford Hospice. The hospice remains the sole charity to benefit from the auction every year and the generosity of winemakers has grown exceptionally, along with that of those who attend.
The most remarkable moment at this year’s auction was when the purchase of one lot of wine (Te Mata Coleraine) was gifted back to be re-auctioned straight away. This meant that four decades of Te Mata Estate Coleraine (1982 to 2021) was auctioned twice, raising $32,500 of the grand total of $335,697 given to the Cranford Hospice this year. The hospice receives this entire sum of money as all operating costs of the auction itself are met by its sponsors.
“There are no bargains. There’s a lot of love that goes into this. We as winemakers are gifting what we hope will represent outstanding wines from our region and give those who buy them a special experience,” says Peter Cowley, chairman of the Hawke’s Bay Wine Auction. “We’ve been building on our humbler beginnings to where we are now and we’re still working on building up the sum that we can raise each year for the hospice, which does an incredible job.”
It was a real privilege to be there this year, gaining a first-hand insight into
how excited people are to taste a range of wines that represent Hawke’s Bay, and then happily dig deep to give to the hospice.
The fact that the wines are commanding high prices is also positive for the wineries and the individual winemakers who gift them.
Winemaker Tony Bish sees the robust prices paid for the wines as a positive reflection of brand health and I love that, because it says everything about the vitality not just of individual brands but of Hawke’s Bay as a wine region.
Notwithstanding Cyclone Gabrielle and a previously challenging vintage, Hawke’s Bay remains incredibly strong and is growing even more so. The annual wine auction is a beautiful reflection of this, not to mention a great weekend away.

Balvonie releases Marlborough Prosecco
MARLBOROUGH WINE producer and grape grower, Balvonie New Zealand, has released Marlborough’s first Prosecco from Glera grapes planted in the Rapaura sub-region.
The 2023 Balvonie Prosecco has been a three-year project for owners Ben and Helen McLauchlan, who first fell in love with Prosecco while living in the UK.
“Global Prosecco sales have boomed in the last decade. Following a year of research, we were confident that the Glera vine would grow well
here in Marlborough. We wanted to try something different, so we gave it a nudge,” says Ben. “Glera has a loose architecture, and we have seen no disease. It has a long growing season, with an early bud burst and harvest around the same time as Sauvignon Blanc.”
The Glera grapes used in the Balvonie Prosecco come from vine cuttings imported from Italy, then propagated by Ormond Nurseries in Marlborough.

New cans for Alpha Domus Beatrix
HAWKE’S BAY winery Alpha Domus has launched its popular Beatrix Sparkling Rosé in a new canned format and at a lower ABV.
The new 250ml cans are available in 4-packs at 8.9% ABV.
Beatrix Sparkling Rosé was introduced eight years ago in a 750ml bottle under crown seal and is made from heritage Merlot vines on the winery’s Bridge Pa Triangle estate.
The new lower in alcohol canned release has been driven by third-generation Beatrix
Ham. “Our goal is to make Beatrix even more accessible with this new format,” she says. “We believe this will not only grow Beatrix’s fan base but also strengthen the Alpha Domus brand overall and relevance in the marketplace.”
Alpha Domus also became fully certified organic with BioGro NZ in 2023, capping a four-year process.

Graham Norton announces NZ tour during vintage ’25
GRAHAM NORTON has announced his first-ever live tour of New Zealand in March/April 2025, meaning he will be in the country for the 12th harvest of the Sauvignon Blanc bearing his name.
In ‘An Evening with Graham Norton’, the ninetime BAFTA TV Award winner will appear in shows in Christchurch, Wellington, and Auckland.
Norton has a long-term partnership with New Zealand winery Invivo and his visit will coincide with the 12th harvest of the GN New Zealand Sauvignon Blanc, which is currently the UK’s fastest-
growing brand in its category.

Escarpment unveils its first Sauvignon Blanc
MARTINBOROUGH VINEYARD Escarpment has released its first Sauvignon Blanc as part of its 2024 vintage portfolio. Escarpment says it has decided to add Sauvignon Blanc from this vintage onwards to showcase New Zealand’s flagship grape through its own lens, noting that Sauvignon Blanc is a variety that is very well suited to Martinborough.
Created by winemaker Tim Bourne and viticulturist Rowan Hoskins, the Escarpment 2024 Sauvignon Blanc, is described as: “an expression of Martinborough’s terroir, made with an understanding and an articulation to the mineral-laden soils…It is varietally expressive and due to the alluvial gravels on the Martinborough terrace, it displays a limey acid line, that gives our Sauvignon Blanc drive and intensity. The resulting wine is layered and complex, with some of the classic characteristics (think tropical fruit/gooseberry) but in a more sophisticated package.”

RAPAURA SPRINGS have extended and re-branded their ROHE range with striking new gold labels and the addition of two new Chardonnays.
Meaning “territory” in Māori, the “ROHE” wines are a journey of discovering the unique flavours found in each of Marlborough’s sub-regions, where the influence of climate, proximity to the sea and soil type can create vastly different tastes in wines made from the same grape variety.
Brendan Neylon, GM of Rapaura Springs and one of the founders of the Appellation Marlborough Wine Map (AMW), said “We believe that subregional wines are the future of the

Appellation Marlborough Wine releases Annual Collection 2024
THE 2024 Appellation Marlborough Wine (AMW) Annual Collection, designed to showcase the pinnacle of Marlborough Sauvignon Blanc, has been announced.
Now in its third year, the AMW Collection aims to highlight a diverse array of styles, each shaped by the unique sub-regions and winemaking expertise of Marlborough.
“AMW’s Annual Collection continues to recognise and celebrate world-class Marlborough Sauvignon Blanc,” says Michael Wentworth, CEO of AMW. “The 2024 Collection highlights our members’ dedication to quality, expression of our region’s unparalleled terroir, and to winemaking craft.”
AMW was founded in 2018 to protect the integrity and reputation of Marlborough wines and has over 55 members. Only wines that meet AMW’s certification process carry the AMW mark, guaranteeing 100% Marlborough origin, certified sustainable vineyards, and exclusive bottling in New Zealand.

The panel evaluated more than 75 current vintage Sauvignon Blancs and selected a top 12 to reflect the region’s unique vineyard sites and winemaking styles.
Chair of the judging panel, Stephen Wong MW, remarked: “2024 was a solar vintage with very expressive but also beautifully balanced fruit. The wines have breezy ease and effortless drinkability, even this early on. When making the selection, the judges found it hard to ignore the charming 2024 expression even if the standard of many 2023 wines in the ‘alternative’ category were impressive. From what we tasted, producers should be proud of how complex and sensitively handled many wines were.”

Air New Zealand to launch wine label
AIR NEW ZEALAND IS working with wine producer Villa Maria to create its own wine label for the airline’s customers on-board and in its lounges.
The airline says that the label, Thirteen Forty Five, will pay tribute to the airline’s inaugural flight from Auckland to Sydney in 1940, which spanned 1,345 miles and was operated by Air New Zealand’s predecessor, TEAL (Tasman Empire Airways Limited).
Thirteen Forty Five will launch with a signature Sauvignon Blanc and a Pinot Noir, available exclusively to Air New Zealand customers.
Air New Zealand has worked with winemakers in Marlborough to create the bespoke blends and Air New Zealand General Manager Customer Experience, Kylie McGillivray-Brown, says each wine has been crafted with special attention to how flavours are experienced at altitude.
“This wasn’t about simply putting our label on a bottle – we’ve collaborated with Indevin’s world-class winemakers to craft these unique blends, creating an exclusive experience for our customers, whether they’re savouring it at 30,000 feet alongside our thoughtfully-curated menu, or in our lounges.”
Thirteen Forty Five will be available from March 2025 in Premium Economy, Air New Zealand lounges, and exclusively on the Airpoints Store. For a limited time, customers will also be able to enjoy it during Koru Hour on select domestic flights.

JUST A year after launching, Čuvar Winery has won three coveted trophies, including Champion Wine of the Show, at the Bayley’s Hawke’s Bay Wine Awards.
Čuvar Guardians Chardonnay 2021 was named Best Chardonnay, Best Single Vineyard Wine, and received the ultimate title of Champion Wine.
Wine entrepreneur Sir George Fistonich launched Čuvar Winery in late 2023, aiming to “help preserve and nurture the essence of New Zealand fine wine”.
Guardians Chardonnay 2021 was crafted from fruit grown on the Rivermere Vineyard along the Ngaruroro River, and the winery says it captures the warmth and stability of Hawke’s Bay’s outstanding 2021 vintage.
“My father and I are so proud to celebrate such early success with our new family winery. This award-winning wine is an early indication of more fine chardonnays to come,” says Karen Fistonich, Čuvar Winery, Executive Director.

THE VARIETY that put Marlborough on the map as one of the world’s top wine regions has been crowned the wine of the 2024 Marlborough Wine Show.
Yealands Estate Single Block L5 Sauvignon Blanc 2024 picked up the top award, with Chief Judge Stu Marfell noting that Sauvignon Blanc was a standout in the show, both for the new 2024 vintage wines, but also the legacy category.
International Guest Judge Elaine Chukan Brown, from the United States, said this year’s tasting had an impressive level of wines. “What I found especially satisfying was how clear the expression of Marlborough’s various subregions has become,” said Chukan Brown. “Tasting by subregions really helped amplify the sense of distinction and balance the wines have developed even more. The top Sauvignon Blancs in the tasting were honestly thrilling.”
Lifetime Achievement awards were presented to scientist Rob Agnew, winemakers Daniel and Adele Le Brun, and Ormond Nursery founders Ben and Frances Wickham. The 2024 Workplace Wellbeing Award was won by Hunter’s Wines, while Forrest Wines took away the Workplace Wellbeing Leadership Award for 2024.

HAWKE’S BAY winery Church Road topped the results table in this year’s New World Wine Awards Top 50.
Church Road won two varietal Champion titles for its Church Road Chardonnay 2023 and Church Road Syrah 2021. Both wines then went on to win White Wine of the Show and Red Wine of the Show, respectively.
An independent panel of expert judges assessed more than 1,280 entries through a blind tasting process. The Top 50 list is made up of the top-ranked Gold medal wines under $25.

NY Times’ critic to speak at Pinot Noir NZ 2025

A visit from Champagne Pommery
NATHALIE VRANKEN, the co-owner of renowned champagne house Champagne Pommery, made her first visit to New Zealand in October ahead of the brand releasing its 2006 vintage here.
It is famed for its former owner, Madame Pommery, who oversaw the creation of the first Brut style of champagne in 1874.
Today, the house is owned by French group Vranken-Pommery Monopole and the historic estate has become synonymous with luxury and innovation, thanks to Madame Vranken’s love of modern art.
As part of her visit, Madame Vranken hosted a High Tea paired with Champagne Pommery wines at Auckland’s Hilton Hotel and spent time with retailers and on-premise trade.
She says that for her, champagne is about emotion, not just something delicious to drink, and she is keen for New Zealand consumers to discover the experience of Champagne Pommery. “Champagne is not something that you need, it is something that you deserve. It’s something that you will have the pleasure to drink with friends. Michael Donaldson has some tips on trends to watch in 2025 for New Zealand’s brewing industry…
TRYING TO work out where the craft beer world will turn next is always a fraught exercise. Craft beer drinkers, being naturally curious, are always willing to explore new avenues of taste – and that demand for the ever-new has driven craft culture over the past 15 years.
But as that audience matures, it becomes more set in its ways. And in a contracting beer market the trick is to find new ways to talk to the alreadyconverted and refreshing ways to connect to newer consumers.
IPA is king
It’s got to the point now where brewers, bless them, can slap “IPA” on any hoppy beer and get away with it. The beer’s ABV has nothing to do with it, as non-alcoholic and session IPAs prove.
IPA is now a marketing term as much as a style guideline. It’s a way of sending a message to the customer that “this is a hoppy beer”. In an era where the beer market is condensing, there were two areas of growth in the past year: zeroes and IPA.
Part of the IPA growth comes from beers that once might have been labelled as Pale Ales or American Pale Ales now being branded as IPAs. The most obvious example of this costume change is Behemoth Brewing renaming their
flagship Chur Pale Ale as Chur IPA. The ABV on that beer changed by 0.1% – I’m sure they’ll sell more now that’s an IPA!
So expect more and diverse additions to the IPA family.
The road is forked
The growth areas of non-alc and IPA talk to another trend: the bifurcation of the beer market along ABV lines. At one end, people are buying way more non-alcoholic beer. Part of the reason is the novelty of it – just four years ago there were no non-alcs made by Kiwi craft breweries and now there are dozens of them.
Another reason non-alcs are popular is that they taste amazing these days, as good as any low alcohol beer. The fact that Good George Virtual Reality NonAlcoholic Pale Ale won the trophy at the New Zealand Beer Awards in the “No and Low” class (which included 2.5% beers) says everything.
There’s the lifestyle choice too: nonalcs fit into a modern societal focus on wellbeing and health.
But beer drinkers still crave experience, so at the other end of the spectrum we’re seeing a lot of high ABV (8% and higher) 440ml cans. Double IPAs, imperial stouts, dessert sours… these are experiential beers that people can enjoy on the odd night at home.
The trick is to find new ways to talk to the already-converted and refreshing ways to connect to newer consumers.
The trend of a split between low and high ABV drinking looks set to continue.
Clarity is back
If there was one ‘style’ of beer that swam against the tide in 2024 it was Bright IPA.
Now, Bright IPA is not really a style (hence the inverted commas above), it’s more an adjective used to describe a beer that is not hazy.
After six years of hazy IPAs ruling the tastebuds, a raft of breweries have made a conscious effort to win back lovers of clear beer.
Bright IPA is more than just brilliant clarity though, it’s about judicious use of modern hops to create a juicy yet crisp IPA with low bitterness, sweet tropical flavours and serious drinkability.
But Bright IPA also talks to another coming trend…
Post-modern beer
When all is said and done, there’s only so much you can say about beer in terms of broad style descriptors: IPA, Lager, Dark, and Sour just about cover it for 98% of beer sold in New Zealand.
This is a broad analogy, but just as car models are slowly moving away from numbers, letters and made-up names, towards aspirational adjectives instead –Escape, Adventure, Rush, Swift etc – we might soon see the same with beer.
In some ways it’s already started with the much-hyped launch of Royalburn Station’s (by way of Garage Project) Swifty and the tagline: “refreshing beer”. Nothing else. Just “refreshing” and “beer”.
Expect more breweries to start moving in this direction, with beer names reflecting occasions, experiences and moods.
Toasting success at the NZ Fruit Wine & Cider Awards

THE 2024 New Zealand Fruit Wine & Cider Awards, held in Nelson in early November, marked a new pinnacle in the quality, innovation, and distinctiveness that define New Zealand’s cider and fruit wine industry. With over 128 entries, it was a testament to the industry’s growing maturity and brought attention to quality craftsmanship, a broader range of experimental flavours, non-traditional fruits, and low-alcohol options.
Leading the awards was Paynter’s Cider from Hawke’s Bay, whose ‘Mon Cherry’ clinched the Champion Cider title with its robust blend of dark cherries and structured apple tannins. The win made history as the first time a fruit cider has taken the top spot. The victory is especially sweet given the cider’s origins in adversity: when Cyclone Gabrielle devastated the region in early 2023, the plum trees that went into Paynter’s fan favourite cider with plum were lost. “We were in a bit
of a bind, to say the least,” recalls Paul Paynter. In a stroke of resourcefulness, they managed to source some leftover cherry purée, and ‘Mon Cherry’ emerged.
Lothlorien Winery of Warkworth won Champion Fruit Wine with their delicious ‘Feijoa & Mānuka Honey Liqueur’. This award highlights a growing appreciation for native ingredients, with the combination of feijoa and mānuka honey offering a distinctive taste that embodies New Zealand’s unique terroir.
Peckham’s Cidery and Orchard, a consistent high performer, continued its streak of excellence by winning six gold medals and the prestigious Champion Producer Trophy. Known for their commitment to traditional cider apples and meticulous production standards, Peckham’s is a shining example of the

sophistication that New Zealand cider makers have achieved. Chair of Judges, Merophy Hyslop, echoed this sentiment, noting how the quality of New Zealand cider continues to “leap forward,” crediting the industry’s dedication to refining techniques and exploring bolder styles.
This year, two notable trends stood out. More producers are incorporating uniquely Kiwi ingredients like feijoa, boysenberry, pōhutukawa and mānuka, demonstrating the growing demand for authentic local flavours. Secondly, the top-ranking ciders were crafted from cider-specific apple varieties, a significant achievement given that most New Zealand cider is made from pasteurised apple juice or concentrate. Cider made from cider apples offers a playground for innovation and provides consumers with an authentic taste of New Zealand’s provenance as well as genuine, high-quality cider experiences.
On the fruit wine side, while mead entries have dwindled, a promising wave of berry-based wines has emerged, showcasing fresh ways to interpret traditional fruit wines. The awards also saw an uptick in alcoholic soft drinks (e.g. ginger beer) and kombuchas, reflecting a keen interest in innovative beverages that fit well within the modern wellness-focused market.
The Fruit Wine & Cider Makers Association of New Zealand, which supports and promotes the country’s diverse commercial non-grape wine producers, is justifiably proud of this year’s awards. Their efforts have helped foster a thriving sector that celebrates New Zealand’s unique fruit diversity and creative spirit. With increasing quality, adventurous flavours, and a commitment to local ingredients, Kiwi producers are setting a new benchmark in the market.
Brewing industry pays tribute to John Harrington
NEW ZEALAND’S brewing industry has paid tribute to one of the country’s most influential brewers, John Harrington of Harrington’s Breweries, who died in October aged 82.
In a statement released on behalf of the Harrington family, the Brewers Guild of New Zealand said: “John was not only a supporter of both the Brewers Guild of New Zealand and the wider industry, but he was a true brewing pioneer.
“In 1991 he founded Harrington’s Breweries in Christchurch, one of the country’s oldest independent breweries, and they quickly built a reputation for producing high-quality beers that captured the essence of the Kiwi brewing culture.
“Under John’s leadership, Harrington’s expanded their operations and
introduced a range of popular beers including Rogue Hop, Wobbly Boot and Ngahere Gold. John was dedicated to crafting beers true to style, while also exploring new flavours. Harrington’s earned numerous awards including Champion New Zealand Brewery in 2012.
“John’s innovative approach, commitment to excellence and his contribution to the New Zealand brewing industry earned him the prestigious Morton Coutts Trophy in 2016, the same year he was also made an Honorary Member of the Guild.
“John Harrington’s contributions to the brewing industry have left a lasting legacy. His vision and passion inspired a new generation of brewers and played a crucial role in the growth of independent breweries across the country.”

Sawmill celebrates 20 years
SAWMILL BREWERY in Matakana, north of Auckland, is marking 20 years of beers. The original brewery was set up in 2004 by Peter and Decima Freckleton in a shed adjacent to the Leigh Sawmill Café, a repurposed timber mill that inspired the brewery name.
Five years later, Mike Sutherland and Kirsty McKay moved up to Matakana and found themselves looking for a new venture, just as the Sawmill owners decided to sell.
“In those early days there wasn’t much attention paid to marketing or to what anyone else was doing. Just hours in the brewery understanding everything,” says Kirsty. “The relative isolation we had from the craft beer community (14
years ago most breweries were in Nelson or Wellington) has played a big role in shaping Sawmill. Rather than looking at what other breweries were doing, we made our own decisions, and the more you do that the more confident you become.”
Since then, Sawmill has evolved into a leader in innovative manufacturing in New Zealand. In 2019 it became the first (and remains the only) brewery in New Zealand to be B-Corp certified. In 2024 it won the Brewers Guild Sustainability Award for the fifth year running.
The brewery’s commitment to innovation and sustainability includes systems for waste reduction and water management, carbon recapture, solar panels,
native planting and trapping programmes. Hop residue is filtered from wastewater and used as fertiliser by local farmers and in 2020 Sawmill installed grain silos in partnership with Gladfield Malt, so far saving on the use of 33,000 grain sacks.
Sawmill upgraded its brewhouse in 2024 to a more efficient model, which it says will help to reduce energy input by up to 20% and it is also working on New Zealand’s first wastewater treatment facility where biogas will be captured and used for process heat.

TEQUILA AND MEZCAL
Tequila
Takes its name from the city of Tequila in the Mexican state of Jalisco. Legally, tequila can only be produced in this state and in four other regions of Mexico and is recognised as a protected designation of origin product. To be a true tequila, it must be made from the blue agave plant (also known as Weber Blue Agave, after the German botanist who first classified it) and produced in one of those recognised areas.
Production: Agave plants are succulents that grow well in Mexico’s hot, arid conditions and produce thick, spiky leaves. Careful tending by the jimadores (agave harvesters) allows the plants to ripen fully –often taking up to 12 years. When ready to harvest, the jimadores cut away the spiky leaves to reach the core, known as the piña, which resembles a giant pineapple without its top. The piñas are baked over hours or days (depending on the producer) and then mashed under a large stone wheel. The extracted agave juice (wort) is then fermented and distilled twice to produce clear tequila.
Ageing: This initial clear tequila can be bottled as ‘silver’ tequila (also known as ‘plata’ or ‘blanco’), or further aged in barrel to create reposado (for minimum two to eight months), añejo (minimum 12 months) or extra añejo (minimum three years).
Mezcal
Mezcal is an agave-based liquor that can be made from any of up to 30 different varieties of the agave plant. It is made in nine different regions in Mexico. While the harvest of piñas is the same as for tequila, the more artisanal mezcal producers use underground earthen pits in which to slow bake their piñas, which imparts the distinctive smoky flavour of mezcal. These cooked agave may then be milled in several ways: using an electric mill, smashing with a wooden mallet, or using traditional Chilean Tahona horses to pull a heavy stone wheel that separates the agave fibres.

tequila and mezcal are building a strong UK fan base, as Sarah Miller explains…
I’VE LIVED in London for most of my life, but 20 years ago I made the move from the salubrious west to the distinctly gritty east. Back then, I wasn’t deterred by the bright yellow police incident sign that welcomed me to my future home, but perhaps I should have been: that flat was little more than 600m from Hackney’s infamous “Murder Mile”.
As it turned out, I needn’t have worried. Twenty years and two children later I’m still happily living here, and Time Out has just hailed a stretch of Hackney a mile to the west of what was once deemed Britain’s deadliest road, as the “mighty Mezcal Mile”. That certainly tells us something about the borough’s vibrant bar scene and the wider gentrification of East London, but what can it tell us about mezcal and tequila in the UK?
Despite East London seemingly claiming a monopoly on all things mezcal, the last few years have seen a host of Mexican bars and restaurants open across the capital. This included Fonda (a more casual sibling to Michelin-starred modern Mexican KOL), which opened in Mayfair in October and has an entire section of its drinks menu dedicated to the tequilabased Paloma.
Yet the UK’s love affair with agave is not limited to London. According to CLASS magazine’s 2024 report, tequila is the second-highest-selling spirit in the UK’s best bars, while mezcal (a category that barely existed here 15 years ago) comes
in at an impressive sixth. Undoubtedly fuelled by the immense popularity of the margarita – the best-selling cocktail “by a distance” according to the CLASS Report – and the Paloma, which was proclaimed this year’s “drink of the summer” by The Financial Times’ Alice Lascelles. And it’s a trend we can see playing out beyond the UK’s best bars too.

The last few years have seen a host of Mexican bars and restaurants open across the capital.
recently launched a flavoured tequila range into more than 800 venues with an exclusive cocktail served in 1 litre pitchers and combining El Sueño’s Moda Pineapple Tequila with tequila blanco, a carbonated peach-flavoured energy drink and cranberry juice.
Meanwhile, ready-to-drink margaritas in all their guises – from Tommy’s to spicy, and cucumber to hot honey (and the odd Paloma too) – are flying off the shelves and sales of RTDs containing tequila have skyrocketed by 150.5% according to
NielsenIQ (NIQ). But is this cocktail craze translating to bottle sales in the off-trade?
While there is undoubtedly rapid growth in the agave spirits category –off-trade sales of tequila and mezcal grew 15% to £46.1m in the past year according to NIQ – it is important to recognise that this growth comes from a very small base, and sales still remain a tiny fraction of the total £5.6bn UK spirits category.
If that is going to change however, now appears to be the time: with demand slowing in the States, and agave prices plummeting, producers are able to shift extra stock (and advertising budgets) to burgeoning markets overseas.
Indeed we’re already starting to see evidence of this with the launch of countless new brands, the expansion of ranges in supermarkets and department stores, and the release of Pernod Ricard’s first UK ad campaign for premium tequila brand Altos. Meanwhile, Enemigo has been named the official tequila sponsor of West London’s Fulham Football Club in an industry-first move that will see exclusive cocktails served throughout the stadium on match days, as well as an Enemigo-branded bar open year-round from January 2025.
With such a significant increase in visibility and availability, as well as a wide variety of styles and a rich and authentic history to entice and engross consumers, the stage certainly appears set for agave spirits to soar.

Kiwis win The Reid Global Cocktail Competition
TEAM NEW Zealand has won The Reid Cup after competing against bartenders from the UK and USA in the inaugural The Reid Global Cocktail Competition held in Cardrona Valley.
Harry Findlay from Londo in Christchurch won Best Bartender with his cocktail ‘Figet About It’. Paul Minea of Sofitel in London placed second with his cocktail ‘Barley and Kiwi’ and Michael Jones of Wellington’s Pravda placed third with ‘Tea & Biscuits’.
The competitors were chosen after bartenders from New Zealand, the UK and USA were invited to share a signature cocktail made with The Reid Single Malt Vodka. Three competition rounds, including a live regional final, narrowed the field to 12 bartenders who earned a spot on their country team for the Grand Final.
These 12 travelled to Cardrona Valley to compete for the championship title while representing their country. They prepared their signature cocktails on stage and were evaluated by a panel of expert judges from the UK, USA and New Zealand.

Ross has won the inaugural Scapegrace: Uncharted Spirits cocktail competition with his uniquely New Zealand creation, ‘The Taniwha’.
The cocktail was one of more than 60 entries submitted from across the country in the Scapegrace event, which challenged bartenders across New Zealand to craft a cocktail that showcased an aspect of the country’s terroir and natural ingredients.
It aimed to inspire them to explore regional ingredients, with Scapegrace assigning specific areas of New Zealand for each participant to represent. Regional finalists were then flown to Central Otago to compete in the final event.

AN AUTHENTIC mezcal developed specifically for the New Zealand palate is helping Kiwis discover this unique agave spirit.
Amigos Aotearoa mezcal was conceived by Kiwi Hayden Bigelow and Mexican Adrian Martinez-Ruiz. They have made it their mission to introduce Kiwi consumers to the joys of this artisanal spirit with its centuries of history. Determined to create an authentic product, they travelled to Oaxaca in Mexico to meet with Maestro Mezcalero Juan Diego and his family, and Eliza and Jesus from Tequila, Spirits Mexico. Working together they developed the flavour profile that would become Amigos Aotearoa mezcal, which launched in February 2023.
This year, Amigos Aotearoa mezcal was named ‘Mezcal of the Year’ at the Melbourne International Spirits Competition and won Silver at the 2023 San Francisco International Spirits Competition and 2023 NZ Spirit Awards.
