Slow Cooked Lamb Shanks in Red Wine Sauce
INGREDIENTS • 4 Lamb shanks • 2 Carrots, chopped • 1 Onion, chopped • 3 Garlic cloves, finely chopped • 2 Bay leaves & 2 Sprigs of Rosemary • 1 Bottle of full-bodied Red Wine • 480ml Beef stock • Salt and pepper, pinch • 1tbls Soft brown sugar • 1-2 tsp Cornflour • Olive oil
METHOD 1. Preheat oven to 325F degrees. 2. Season the lamb shanks with salt and pepper. 3. In a large frying pan brown the lamb shanks on all sides in the olive oil then transfer to a large casserole dish and keep warm. In the same frying pan put in the carrots, onions, garlic, bay leaves and rosemary and cook slowly for 3-4 minutes. Pour in the red wine, beef stock, and brown sugar into the frying pan and stir gently bringing it to a low boil. Pour the wine mixture over the lamb shanks; top up with water if needed. 4. Cover and place in the oven and cook for 2 1/2 – 3 hours until tender. 5. Remove the lamb shanks and keep warm and skim the fat off the top of the red wine juices. 6. Mix together the cornflour with just a bit of cold water and whisk the cornflour mixture into the red wine juices until desired consistency. Serve with mashed potato on individual plates and enjoy.

Beef Bourguignon
Beef Bourguignon with Mashed Potatoes
INGREDIENTS • 3 Tsp Oil • 600g Diced Beef • 100g Streaky Bacon • 350g of Shallots • 250g Mushrooms (button) • 2 Cloves of Garlic • 1 tbsp Tomato Puree • 750ml Bottle of Burgundy Red Wine • 3 large Carrots (chopped) • Mixed Herbs (Tie some rosemary, thyme and parsley sprigs together with 3 bay leaves. Remove from the pan at the end of cooking and discard.) • Mashed Potatoes
METHOD 1. Heat a large casserole pan and add 1 tbsp oil. Season the beef and fry until golden brown, ensure the meat is browned all over, adding more oil if necessary then transfer to a bowl when done. 2. In the same pan, fry the bacon, shallots, carrots, mushrooms, garlic and herbs until lightly browned. Mix in the tomato purée and cook for a few minutes, stirring into the mixture. Then return the beef along with the juices to the pan and stir. 3. Pour the wine over and about 100ml water. Bring to the boil ensuring you scrape any caramelised cooking juices from the bottom and sides of the pan, giving the stew extra flavour. 4. Heat oven to 150C/fan 130C/gas 2. Then cook for 3 hrs. If the sauce looks watery, remove the beef and veg with a slotted spoon, and set aside. Cook the sauce over a high heat for a few mins until the sauce has thickened a little, then return the beef and vegetables to the pan. 5. Spoon the Beef Bourguignon into serving bowls and serve with mashed potatoes. Serves: 4 Preparation time: 15 minutes Cooking time: 3hrs 30 minutes

Last year alone saw physical book sales across the UK boom and vinyl sales around the world surge to popularity not matched in the last three decades. Further to this, 12 million Brits bought second-hand in lockdown,with the average adult purchasing at least a dozen previously used products in the last year. Reflecting our changing perceptions on what’s important in life, the research, conducted over 2080 respondents, paints a picture of a nation rethinking mindless consumerism, holding memories as the most valuable of possessions. Key statistics : • 83% would rather be able to spend time with loved ones over purchasing any material items • Over half (53%) say that the pandemic has made them less materialistic and they now value experiences and relationships more than things and possessions • 77% value the memory of a possession - from physical photographs to family keepsakes - over its financial value • 54% of Brits would not sell a valuable inherited item even if they needed the money due to the sentimental value it holds for them or their family.
