Slow Cooked Lamb Shanks in Red Wine Sauce

INGREDIENTS

• 4 Lamb shanks • 2 Carrots, chopped • 1 Onion, chopped • 3 Garlic cloves, finely chopped • 2 Bay leaves & 2 Sprigs of Rosemary • 1 Bottle of full-bodied Red Wine • 480ml Beef stock

• 1-2 tsp Cornflour

Winter recipes need to offer both warmth and comfort...

• Olive oil

• Salt and pepper, pinch • 1tbls Soft brown sugar

METHOD

1. Preheat oven to 325F degrees. 2. Season the lamb shanks with salt and pepper. 3. In a large frying pan brown the lamb shanks on all sides in the olive oil then transfer to a large casserole dish and keep warm. In the same frying pan put in the carrots, onions, garlic, bay leaves and rosemary and cook slowly for 3-4 minutes. Pour in the red wine, beef stock, and brown sugar into the frying pan and stir gently bringing it to a low boil. Pour the wine mixture over the lamb shanks; top up with water if needed. 4. Cover and place in the oven and cook for 2 1/2 – 3 hours until tender. 5. Remove the lamb shanks and keep warm and skim the fat off the top of the red wine juices.

Serves: 4 Prep time: 20 minutes | Cook time: 3 hours

6. Mix together the cornflour with just a bit of cold water and whisk the cornflour mixture into the red wine juices until desired consistency. Serve with mashed potato on individual plates and enjoy.
