Now you’re cooking. With gas . . . or electric? Joshua Bate Trading provides advice on which you should choose
A
great deal of variables can influence your choice between an electric or gas range, or cooktop — from your location and family type, to your culinary ambitions. Neither gas or electric should be considered superior to the other. Quite often, homeowners make their choice based on the model on which they learned to cook, or that they have traditionally had in their kitchen. Whether you fancy yourself a chef or not, don’t let your lack of knowledge be the reason for your allegiance as these days, it is not
just gas vs electric. You can also throw induction into the mix. The main difference between gas, electric and induction stoves lies in how they respond to temperature setting changes — and temperature control is always a priority for chefs. Gas stoves respond almost instantly as the flames spread around the bottom of a pan, and knobs adjust the size of the flames to give you more of the precise control needed to be successful with certain dishes. Electric stoves do not respond quite as
quickly, particularly when you’re adjusting the temperature down or turning the heat off. Besides that, there are also a few things that an electric stove simply cannot do that a gas stove can, such as charring, toasting, and flambéing. If you’re a committed home chef, the superior performance of gas ranges may sway you toward their services. Similar to gas, induction has a much more immediate response to temperature setting changes and can give you more extreme highs and lower lows than both gas and electric models. Whether you wish to do a power boil or low simmer, induction technology is superior by far to both gas and electric models. Safety is another variable to consider. Whenever cooking on an adjustable open flame, there is always the chance of a flammable item catching fire should it come close enough. Furthermore, there is always the possibility of a gas leak for several reasons. While electric models still pose the ability to burn you, the safety concerns of running an electric model is significantly less than that of a gas. Lastly, induction is considered the safest unit since the cooking surface itself does not get hot in the absence of magnetic cookware, making it the most family friendly unit for those with young children.

Cool your space green Wayne Clapham of HVAC Shack explains why a SEER rating is important
A
n average of 35% of electricity consumption in homes goes to airconditioning. So how can you save money and help the planet? One way is to invest in a high SEER-rated air-conditioner, but what is a SEER rating? SEER is the abbreviation for Seasonal Energy Efficiency Ratio, and it is calculated from the cooling output during a typical cooling-season divided by the total electric energy input during the same period. It is important to distinguish that it is the average calculated over a season and is figured out under laboratory-simulated conditions. It is likened to the mpg (miles per gallon) ratings on cars, and, although mpg can
vary depending on how you drive, it does offer a clear indication of the fuel efficiency possible. You can have the highest SEER-rated air-conditioner on the island, but, if it has dirty filters, blades, or coil surfaces, it will not achieve those energy savings. Regular maintenance is critical for continued high
efficiencies. You will find that higher SEER-rated systems come with a higher price tag. Open Space Sleek, modern accents transform this Hamptons home
A
dated and cluttered master bathroom and dark, enclosed kitchen have been transformed into light, spacious, stylish but still practical rooms that have brightened up the whole of this Hamptons home in Southampton. “The original kitchen was dark,” says the owner. “There was a wall here that blocked out the beautiful view.”

There was a problem though. The wall blocking the view was load bearing, but architects CTX Design Group found a solution in the form of a 20-foot steel beam sitting on a nib at the edges. Now, from her new kitchen island, the owner looks through her sitting room, across her patio and out over Southdown Farm and the ocean beyond. Hasco Designer, Blakeni Walls, took
care of the interiors. All the kitchen cabinetry is custom made and the perimeter is finished in an oxford pastel grey colour, but for the island they chose an espresso brown. “We knew we wanted something different for the island, something that stood out,” explains the owner. She also wanted to be able to sit six people around it, which proved a challenge for Ms. Walls 11

who didn’t want to obstruct the work space. She therefore designed for two seats to look directly out at the view, and an area under the countertop where those stools can be hidden. There is space for four stools on the other side. “We had a time figuring out how to put six people on without any obstruction but she likes the fact she can slide her chairs underneath,” explains the designer. By taking out the wall, the owner was losing a lot of storage space, but

did not want cluttered countertops. When designing the cabinets therefore, Ms. Walls used concepts such as deep drawers for pots and pans, a tall slim drawer which is a custom spice rack, and a similar tall, but not so slim drawer for chopping boards and placemats. Tucked away in a corner is a ‘garage’ for hiding the toaster and kettle, and the microwave is discreetly built in under the island, so isn’t taking up counter space but is conveniently located close to the preparation and cooking areas.
On the seating side of the Island, she also added more cabinets for items not used on a daily basis. In keeping with the style of the new kitchen, they chose a large ‘farmers sink’, but instead of going for the more traditional white porcelain or fireclay, says Ms. Walls, the owner “loved the stainless steel. She wanted a more modern kitchen – that’s why we chose the stainless steel, which has a sleeker look.” The former master bathroom was, says the owner “old fashioned and had a huge, big jacuzzi in it, which took up a lot of space.” The “tiled in” former bath has been replaced with a smaller, stand-alone tub and a cumbersome corner shower has been replaced with a stylish walk-in shower complete with large cubby. The tiling is light and bright. The vanities are a striking dover shale grey colour and three vertical saber lights around the mirrors contrast with the square designs in much of the rest of the bathroom. Essentials such as a built-in laundry container under the vanity area, new medicine cabinet and heated towel rail complete the transformation. “The house is so much bigger and brighter,” says the owner. “It’s amazing how it’s changed.” HouseGardenKitchen&Bath 2021

Modern Conveniences Updated kitchen, bathrooms and laundry extension create the ideal home for sporty family
W
hat began as a plan for just a few home improvements – new floor, windows, and laundry – quickly morphed into a modern, stylish upgrade and redecoration of the kitchen, bathrooms and back entrance of this Southampton home, which overlooks the Great Sound. Having a stacked washer dryer in a bathroom, combined with the fact the owner didn’t like the “very tight and squeezed,” back entrance to her home, led Dawn Dunstan, Senior Interior

Designer at L&S Design Ltd., to solve two problems at once. “It was a pokey and dark space, so we blew this right open,” she says. “This is a whole new extension with the laundry and the entry.” Now, not only is the area wide and bright, but it has a state-of-the art laundry built in, with a large sink for rinsing off swim gear and considerable storage for everything you want to have in a laundry, but nothing you want to see. There is also ample, but stylish space
for sports gear, bags, helmets and even an area for the canine family members, who have their own “dog door and food storage”. “I wanted everything away behind doors. I didn’t want to have to see mess,” says the owner. To further accommodate the water sports enthusiasts in the family, an outdoor shower area has been added close to the entrance with space to rinse off salty people and equipment. The new entrance area leads into a light, 13
INTERIORS bright open-plan kitchen and dining room with a panoramic view of the Great Sound beyond their swimming pool. The original plan had just been to do the floors because, continues the owner, “the kitchen floor was wood, the dining room was white carpet and then the living room was cedar.” The mixed floors were replaced with wood throughout. The owner then decided to redo the kitchen “in steps” starting with repainting the cabinetry, then all new appliances, followed by the backsplash and finally new countertops. “The kitchen had been done in the 90s,” says Ms. Dunstan. “It was a pickled oak with coloured terracotta backsplash.” Now the kitchen is “so much lighter because of the white cabinetry and backsplash.” Other small details have made a huge difference to the appearance and functionality of the kitchen including a “coffee bar” instead of what was previously a “dumping spot”; the middle window above the sink now opens and doubles up as a “pass through” for when everyone is outside enjoying the pool and some of the cabinet interiors and shelves have been replaced. All the kitchen lighting is new, with recess lights in the ceiling and a “task light” above the sink. In similar style to the laundry and kitchen, two bathrooms have been updated in a light, but classic style with new tile, lighting, vanities for extra storage and, in one, which doubles up as the guest bathroom, Ms. Dunstan included a sliding shower rail to accommodate both small dogs and tall teenagers. The second bathroom, which previously doubled up as the laundry area, now has extra closet and storage space as well as new floating shelves. “It was all very beige tones and the owners don’t like beige,” says Ms. Dunstan. “We cleaned this up with just a pretty white. We gradually purged the house of beige.”

Kitchen with a view
The concept of a kitchen has changed a great deal over time, transitioning from a functional space to store food and produce meals to the place where many families spend much of their quality time together.
S
o when tasked with putting a modern kitchen into a early 20th Century home the designers at Hamma Galleries had to bring two architectural eras together. “The style needed to blend with the existing 100-year-old home, which has lovely Bermuda cedar details,” says Interior Designer, Jennifer Dearing. “The clients also really wanted the kitchen to feel light and bright and celebrate the beautiful views of Harrington Sound.” As this was a new build extension, rather than an interior renovation, the designers

were able to “build to purpose”. The result is a 30’ by 15’ kitchen that was completed over approximately five months and includes an independent island, breakfast nook and small seating area, while being conveniently connected to a large covered porch. Ms. Dearing says the materials and finishes create a modern farmhouse kitchen with “the vast number of windows creating a bright and airy environment that is amplified by the bright white kitchen cabinets. KITCHENS backsplash help this modern-day kitchen blend with the existing architecture.� Meanwhile, LED recessed fixtures and under cabinet lighting allow for plenty of task lighting when needed. Additionally, antique brass sconces and pendant lights create accent lighting when setting the mood for social events or a more relaxed atmosphere. “This space was always intended to be a family room where the family can live comfortably and spend lots of time together. The kitchen island, breakfast nook and sitting area create spaces for almost every family activity,� says Ms. Dearing. “Being adjacent to the covered porch you can enjoy the view while inside or out, on a rainy or sunny day. This room really makes the most of the surrounding beauty.� While the style of the design fits neatly with a bygone era, the layout of the kitchen rests firmly in modern times. “Here we used the celebrated kitchen triangle to distribute the sink, refrigerator and range,� says Ms. Dearing. “This allows the chef to minimize their foot traffic when cooking. The dishware and serving items are located
at the end closest to the breakfast nook and sitting area yet also close to the dishwasher, which is very practical. “The glass wall unit, which sits on top of the base unit, creates a china cabinet effect to store those items close to the dining areas.� For Ms. Dearing, in addition to the stunning views, the range hood is an outstanding feature in the kitchen. “While I am happy with the overall outcome, the range hood definitely stands out as a notable feature,� she says. “It is significant in size and has beautiful curved lines which make it a focal point. “The homeowners are generally pleased with the entire space. They wanted an efficient kitchen which could act as the hub of the home and have said that they find themselves living between this room and the porch.�

Maybe navy A distinctive colour choice for the kitchen cabinets set the tone for a newly unified kitchen and dining room by Hamma Galleries.
“O
ur client has a wonderful and unique sense of style, which was really inspiring,” says Interior Designer, Jennifer Dearing. “The dark navy, almost black, cabinets were a bold choice, but the addition of warm sandcoloured countertops, off-white walls, touches of wood and antique bronze hardware tone down the strong cabinet colour perfectly. The iridescent mosaic backsplash in neutral tones really finishes off the palette.” The renovation took two months to complete and resulted in a combined room of 470 square feet, occupying a 23’ by 21’ space. Given the dark, light absorbing, colour of the cabinets, and that the room is northern facing, the designers were sure to include plenty of lighting in the form of recessed ceiling fixtures, under cabinet lighting and accent lighting in the glass upper cabinet units. All the lighting is LED, adding efficiency to the home, and the bulbs are 2700k, which generate a warm light, similar to that of a standard incandescent bulb. Ms. Dearing says the main challenge in connecting the rooms was finding a way to marry the two different ceiling styles. “The 18

KITCHENS ceilings were a bit of a challenge. In the end we decided to have a suspended flat ceiling in the kitchen area while keeping the tray ceiling in the dining area. A small bulkhead separates the two.” Another challenge was storage space, which Ms. Dearing says is a common theme with kitchens. In this case the creative solutions included a “storage” wall with wall units sitting atop base units, creating an “attractive elevation”. For the layout of the kitchen Ms. Dearing says they moved away from the “famous kitchen triangle”, instead working with a line design that put all the essential functions on the same elevation. “Commercial kitchens work a lot like this and are as efficient as the coveted triangle,” she says. “The refrigerator is off to one side, easily accessible to the chef, but far enough away from the sink and range so that guests can serve themselves drinks without getting in the way of the chef. A few feet to the right is the range and the sink is next in line. “The chef does not need to move more than three feet each way to move between these vital areas, making it a very efficient way of cooking.” The functionality of the kitchen extends beyond cooking and serves the homeowners desire of having the space be the social hub of the home. “The various seating areas, dining options and efficiency of the kitchen create a space that you never have to leave,” Ms. Dearing says. “You can have formal or informal dinners, do homework, take a nap, curl up and read a book and entertain a good number of people comfortably. While the aesthetic is stunning, opening up of the space for all their daily activities is hands down the biggest game changer for the family. “I think the whole kitchen is smashing. It’s original in the choice of finishes, which really makes it a stunning, yet non-ostentatious room to live in. It is the first thing you see when you enter the home, and the new open layout draws you in right away.”

Contemporary Cohesive Style An update to this traditional, legacy family home enhances space, flow and natural light
W
hen the owner and her family moved into her grandmother’s old house, it was falling into disrepair and “the kitchen was half the size” it is now, says Emily Hopkin, Senior Interior Designer at L&S Design. “It was quite pokey; it was quite dark.” She immediately set to work opening up the kitchen space by removing a disabled bathroom, raising a lintel and
cutting back walls through to the eating area. By replacing one small door through to the TV room with large, glass sliding doors not only can the cook keep an eye on the children, but they can also benefit from the huge window at the far end, which lets in plenty of natural light. Three Chimneys sits on the edge of the historic Town of St. George, and in keeping with the owner’s heritage and taste, light and dark blue contrasts
throughout the new kitchen. “She always wanted this aqua, which is a nice Bermudian nod to the ocean and St. George’s,” explains Ms. Hopkin, “but you always need a contrast or complementary colour, so the dark blue was great.” There is also an eye-catching blue patterned, ethnic-style, tile behind the cooking and preparation area, which adds to the bright and contemporary feel and is a striking contrast to the antique brass hardware. “Everything was about bringing in the light and the outdoors, keeping it bright,” says Ms. Hopkin. The countertop on the kitchen island differs slightly from the countertop around the rest of the kitchen, a feature which she describes as “nice in the bigger spaces.” The owner also likes it for its “interesting finish called a leather finish, 20

two pivot doors that swung into this tiny space, so we managed to beef up the walls and do the pocket doors so you gain that floor space,” explains Ms. Hopkin. To make best use of the space and flow in the master bathroom, there is a walk-in shower with the same floor finish throughout, and vessel sinks which allow for “full depth” storage drawers underneath. The first thing you notice when you walk in, however is the dramatic teal and turquoise coloured tile wall behind the shower and sinks which goes all the way up to the ceiling and looks, she adds, “like durable wallpaper.” which really shows the texture. It’s a little more weathered and has an aged look.” Because the house had been updated along the way, with different tiles in the different rooms, it felt very “piecemeal and compartmentalised,” continues Ms. Hopkin. To rectify this, they replaced the downstairs floor with a limestone tile throughout to bring the rooms together. Three Chimneys has three full bathrooms upstairs and a powder room downstairs, all of which have been redone to maximise light, space and style as well as include useful practicalities such as heated towel rails and medicine cabinets. The powder room by the front door has a wall hung sink to take up less space and an attractive printed pattern tile on the floor. An ensuite bathroom upstairs was reconfigured so guests needing to use it, didn’t have to go all the way through HouseGardenKitchen&Bath 2021
a bedroom, and features such as pocket doors, glass rails instead of shower curtains, and pot lights with vents instead of additional extractor fans, add to the bright spacious feeling. The pocket doors worked particularly well for the ‘Jack and Jill’ style bathroom between two further bedrooms. “This had

Family Kitchen Newly renovated kitchen provides flawless indoor outdoor entertaining

mall family meals or parties for many, the new kitchen at Bienvenue on Knapton Hill is stylishly designed for seamless entertaining, allowing the cook to still be part of the action, even when hard at work preparing food. Designed by OBMI Managing Director, Michelle Smith, in close collaboration with owners Jason and Laura Taylor, the priority was to create an open house with good flow, as well as a cooking enthusiasts dream. The result is a kitchen that is quite literally at the heart of this family home. From here you can seamlessly access the rest of the house as well as being able to appreciate the outdoor space and sea views even when you are inside. “It was originally a box house from 1957 with wings added on in the 1990s,” explains Mr. Taylor, who says that they wanted to sledge hammer the old kitchen, knock out walls and install big doors.”

The idea was to recreate a “1950s house into a modern, open plan home,” says Ms. Smith. “We raised the lintels with steel beams,” and were “able to make the openings wider, we wanted to be able to see the pool, the ocean, the deck and we added the side windows.” All along one side of the kitchen and dining room are floor to ceiling glass windows, doors and folding doors which, when open, bring the inside and outside together. “You want the entertainment experience to be collaborative,” continues Mr. Taylor. “I’ve had six people at the island and I’ve been cooking. When those doors are wide open, the kitchen, dining room, patio and seating area all become one area. I can be standing, cooking, and everyone can be drinking on the patio. I can see out to the pool and ocean from the oven.” The addition of storm screens on the edge of the patio also allows them to enjoy HouseGardenKitchen&Bath 2021

the outdoor space, even if they don’t enjoy the weather. The original kitchen was only nine years old so Ms. Smith explains that they tried to repurpose as much as possible. “We reused 90 per cent of the cabinets and had them sprayed,” she says. The palette consists of cool, neutral colours with striking light navy-blue accents and they used the same tile for the backsplash as the outdoor patio floor. “It was really big and the grey worked beautifully,” says Ms. Smith. The kitchen includes every modern convenience a busy household could need, but subtly built-in, giving a spacious and uncluttered feel.
Refrigeration drawers sit on one side of the large range and an in-counter microwave is built into the other side. The kitchen also has a dedicated coffee bar, a drinks area that includes a wine fridge and specially designed cupboard with pull out trays to maximise space and give easy access to bottles and glasses. Above the main oven is a steam oven and the sink has a time-saving boiling water tap. With the exception of an eye-catching fixture over the sink, the lighting is simple but flexible. There is undercounter lighting and there are a number of LED recess lights on dimmers in the ceiling, which are all on separate switches so you can have lights on in different areas and control the mood of the kitchen. “I expected amazing, and it’s amazing,” says Mr. Taylor. “I definitely enjoy cooking and having a good kitchen makes you want to cook more.”

his space was a complete redesign by Bydesign for a family who regularly entertain visitors, kids and grandkids. The previous owners of the home used the space as a craft room, and the current owners needed an area for everyone to gather informally, 24
whether for movie night with popcorn, Superbowl party, wine and cheese social, or for cocktails at the 19th hole after a day of golf. An efficient kitchen/server space was created, complete with wine storage and dishwasher, so entertaining possibilities would be easy and enjoyable. The contrasting colour scheme of cool white against the rich deep gray is striking yet calming, and helps the room feel uncluttered and larger than it really is. Cabinetry was designed to house the electronics and tech devices so necessary today, and to allow for personal books and memorabilia to be displayed.
