Laksa This spicy rich noodle soup from the Peranakan cuisine can be found in Indonesia, Malaysia and Singapore. Made of noodles, fish cake, cockles, prawns and chopped bean sprouts in a spicy coconut based soup, it is served with a spoonful of sambal and garnished with laksa leaves. Yum

Nasi Goreng If you have heard that Nasi Goreng is just an exotic name for fried rice, you have got it wrong. Also called the national dish of Indonesia, this hearty and gratifying dish has fried rice spiced and seasoned with shallots, tamarind, garlic, chilli and accompanied with an egg.

Vietnamese Pho Pho (pronounced “fuh”) is a light, fragrant soup eaten from the streets of Vietnam which has everyone slurping. Pad Thai Pad Thai is one of the most popular Thai dishes, perhaps second only to Tom Yum Goong. Also served as street food, this dried noodle is stir fried with tofu, eggs and flavoured with tamarind, shallots, garlic, red chilli flakes, fish sauce, palm sugar and served with lime wedges and peanuts. Whew! That’s a lot of ingredients. Sweet, salty, spicy and tangy, this dish is quite an addiction.

Prahok and Amok Amok is a Cambodian curry commonly made from fish. Cooked in banana leaves and sweetened with coconut milk, and seasoned with spices, this dish is usually served with rice. It is also seasoned with a blend of local and Indian spices including turmeric, nutmeg, cloves, chili, and others. Prahok is a crushed, salted and fermented fish paste (that is used in Cambodian cuisine as a seasoning or a condiment.

Laap Arguably the national dish of Laos, Laap is a meat base salad, flavoured with lime, garlic, fish sauce, mint leaves, spring onion and ground toasted rice, which adds a subtle nutty flavour. If you are a visitor please ask how the laap is cooked, as in some parts of the country locals like to eat it raw, particularly fish laap.

Hyderabadi Dum Aloo Biriyani Inspired from Mughal as well as Indian flavours, this biryani is made of either vegetable, chicken or mutton and can be a complete meal by itself. Cooked with caramelized onions, saffron milk and meat or veggies marinated in yogurt, it’s a delight to the taste buds. Drool.

Hoppers Made from a fermented batter of rice flour with a little bit coconut milk and a drop of palm toddy (alcoholic beverage), this Sri Lankan dish can remind you of sour dough pancakes.
