Preston High School’s valedictorian, Bethany Jensen, is the daughter of Eric and Ruth Jensen. Her father, Eric, is the director of the Testing Center at Utah State University. Bethany has hopes of being a biological engineer. She is the fourth of six children. Her older sister, Laura, was also a valedictorian. She graduated in 2009 and is now working in Montpelier in range management. “Bethany excels in a lot of things her,” Eric Jensen said. “When she was younger she liked to collect bugs and she is still interested in anything to do with plants and animals.” She raised a goat for her senior project because she is interest in the goats genetically engineered to produce spider silk in their milk. Scientist hope spider silk will have many medical applications.
Bethany attended USU summer workshops the Biological Engineering Department holds for high school students. She has watched as USU faculty members work in the Cache County sewer treatment pond where researchers tried to grow spider sells in e-coli. She is interested in genetically cloning animals. Bethany has been awarded a fellowship to work in the biological engineering lab her freshman year. She is also very musically talented; she plays several instruments, she sings in the a cappella and jazz choirs. For the past two years Bethany has won first in state honors at the Academic Decathlon. On the national AcaDeca level she took third in science and second in Art. Even with her busy academic pursuits this year she has served also the LDS seminary council president. “She is the one of mine that everyone wants to take home,” her mother said. “She will probably write her graduation speech the night before.”
During my years at West Side, I have grown so much both as a student and as a person. As I reflect on that growth, I think of all the people who donated their time and money to help me and my fellow classmates. The endowment given by the Dahle family to West Side students made it possible for me to acquire 48 college credits while in high school, a gift for which I will forever be grateful. Several teachers encouraged me to work my hardest and pursue my dreams. My cross-country coach, Stacey Olson, along with coach Joseph Grimm and coach Kerry Baird, helped me overcome my fears and weaknesses and become both a better athlete and person. Along the way I was always supported by a wonderful family, great friends and a close community. This fall, I will be attending Brigham Young
University. It will be a big step for me and I know that many changes await. But I will never forget the memories I created, the lessons I learned or the many people who influenced my life during my years at West Side. I hope that one day I can bring great honor to my hometown and to West Side High School. Thanks once again to all those who have encouraged, strengthened and guided me along the way. It hasn’t gone unnoticed. Since I was six, I have been playing the piano. In high school, I participated on the cross-country team and was the captain this year. I have also been a member of the National Honors Society, serving as the charter president this year. (Nielsen’s parents are Wynn and Bonnie Nielsen. She has three siblings, Kaylee, Kyle and Connor. She was born and raised in Franklin County and currently lives on her family’s dairy farm in Weston.)
